NEW YEAR, NEW ... YOU? Here’s a secret: I never make New Year’s resolutions. The problem with a resolution is that it seems too judgy. Like I’m not good enough — that I will be happier when I get something newer, better, or change who I am. And if I don’t fully commit to the resolution, I’m a failure. That’s not the way to start off a new year! Instead, I prefer the term “setting an intention.” Yes, there is a difference between setting an intention and making a resolution. While I do still set goals, the difference lies in how I go about reaching them. With an intention, I resolve that I’m already “enough.” Instead of focusing on the result (losing 15 pounds, for example), it’s more about the journey. Maybe weight loss is still the goal, but I’m not focused on that. Instead, it’s caring enough about myself to eat good food and exercise. You’re more likely to create good habits that way instead of beating yourself up over every little slip-up. We’ve compiled a short list of simple “good intentions” you can make this year in our Be Well column on page 34. From getting enough sleep to drinking enough water to saving a penny a day, these are natural changes that you can make right now. Here’s to starting out 2018 with a positive outlook. And, from all of us at SIMPLYkc Magazine: Happy New Year! We hope this is your best

VANESSA ZAMBO Businesswoman, parent, and blogger, Vanessa Zambo is taking on Kansas City with a down-to-earth confidence and a mission to connect with as many people and businesses possible. By day, Zambo commands the room as senior vice president of marketing and communications at Terracon, a national engineering consulting firm. Her corporate experience has led to passion projects and the creation of a blog called STOMP (stompatwork.com), a daily preview of women at work in all aspects of fashion, leadership, family, and community. Through STOMP she’s joined the executive advisory board for Rightfully Sewn, been a guest speaker for numerous business women’s events, and took on SIMPLYkc Magazine’s The List, where she scouts the most stylish and trendy finds across the metro.

FAVORITE PLACE TO EAT IN KC When I want to reward myself, I indulge in the shrimp and grits at Rye. For an unassuming spot in the River Market, check out The Blue Line, where most everything is made from scratch. For those in Johnson County, try Grand Street Café. It’s modern decadence and contemporary food at a reasonable price. Finally, I love grabbing a coffee with new acquaintances at McClain’s Bakery. Good luck finding a seat, though!
FAVORITE DRINK IN KC The Monarch Bar for every lovely detail, from the exquisite butterfly chandelier to the precision of the drinks. My favorite drink there is a toss-up between the Kansas City Ice Water and the Carriage Club. The J Bar at the Embassy Suites in Olathe is the only place in the suburb where you’re transported to fancy from a cow field. Tom’s Town for vodka and a distillery backdrop for those Instagram selfies. My husband is impressed by the service and knowledgeable bartenders at The Flying Saucer. You’ll never have to ask them for a refill.
FAVORITE PLACE TO SHOP IN KC I really appreciate the integrity and well-curated, contemporary clothing that Finefolk brings to our city. For great vintage finds: Dear Society for the closet and Vintage and Vine for the home. For investment pieces and the ultimate designer boutique experience: Standard Style.
FAVORITE HIDDEN GEMS IN KC Our fashion community in Kansas City are the unsung heroes of entrepreneurship. THE WINTER OLYMPICS: KANSAS CITY The 2018 Winter Olympics begin Feb. 9, 2018, in PyeongChang, South Korea. But you don’t need to be an Olympic athlete to experience the Winter Olympic events. Gliding on ice or flying down a mountain — mountain-ish — can be found right here. Whether you made a resolution to live a healthier lifestyle, or you just want to get the family outdoors, Kansas City can give you a taste of the cold ... er, gold. We mean gold. There may not be any medals handed out, but it takes serious skill to brave the harsh KC winters. Bundle up. The entire world might not be watching, but your family will be. Hopefully, you bring home the “gold medal”: bragging rights.

THE EVENT: SKIING AND SNOWBOARDING SNOW CREEK WESTON, MISSOURI skisnowcreek.com Snow Creek is The Rocky Mountains’ little brother. Littlest brother. OK, Snow Creek is actually the baby of the family, sitting at 1,100 feet altitude with a 300-foot vertical drop. KC is, obviously, not a mountainous region. But Snow Creek in Weston is the perfect spot for beginners to visit before heading to the Colorado Rockies. Snow Creek owns more than 60 snowmaking machines. If the weather doesn’t provide enough snow, these
babies can produce 12 inches of snow in a 24-hour period. You can rent skis or give snowboards a try. Snow Creek offers skiing and snowboarding classes for kids and beginners. The base lodge has a bar lounge and cafeteria for visitors to enjoy between ski runs. The only thing you need to bring is your warm snow gear — and don’t forget the sunglasses and sunscreen. After all, you are 1,100 feet closer to the sun.

Members of a team use brooms to sweep the surface of the ice in the path of the stone to control its speed and direction. The object is to direct the stone to stop as close to the bullseye as possible. The Kansas City Curling Club meets at Line Creek Community Center and Ice Arena in Kansas City, Missouri. The club coordinates curling activities for people of all ages by offering instruction and practice. All the equipment — brooms, stones, and ice rental — is included. The only thing you need to bring is rubber-soled shoes and layered clothing, enough to be comfortable in 45 degrees. Curlers have the opportunity to become competitive athletes on the regional, national, and international stages. The Learn to Curl schedule is posted one to three weeks in advance on the KC Curling Club website. Experienced curlers can sign up to join a league as well.

Today, Huber and Whitton are friends and business partners. Whitton left her career in executive sales and joined Huber, who was a stay-athome mom until her kids were grown, to start Hudson Ward Estate Sales. “We met when Emma (Amy’s daughter) and Sam (my son) began dating during their freshman year; we were chaperoning at their homecoming dance and met for dinner before that,” Whitton says. “Then, only a few years later, we discovered our shared passion and hobby and, viola, a business partnership was born. It was just meant to be.” The majority of Hudson Ward’s upscale estate sales are a result of homeowners looking to downsize as empty-nesters or who want to liquidate to make a style change with their home decor and furnishings. Justin Voldan has been an executive chef in Kansas City since moving here in 2011 and is currently serving as the executive chef at Zocalo on the Plaza. He claims Wisconsin as home, having grown up north of Chicago in Lake County, right on the border of Illinois. We sat down just before the holidays to talk about comfort food, muscle cars, and life in KC. What do you think is the best thing about Kansas City? I think it’s the food. People don’t understand — the food and the art is very surprising. There are so many restaurants, almost too many at this point now. Also, the arts. It’s very cultured for being in the middle of nowhere. As you say, there are many restaurants in the area. What do you think sets your cuisine apart from that of similar restaurants? There are a lot of Mexican restaurants, and very good ones, that I’ve eaten at here. Mexican is my favorite cuisine. Where we will do a Chilean sea bass or have scallops on the menu, I don’t think you’ll get that down on Southwest Boulevard. We have a kind of niche here, being a little more upscale. Plus, Zocalo has a pretty solid brunch with bottomless mimosas. Growing up, what was your favorite meal and who cooked it? My mom always made this cold salad with tuna, macaroni, peas, mayonnaise, and celery. It was really simple but I liked it ’cause I could just go scoop it and eat it. She did the same thing with imitation crab salad. She didn’t really get deep
into cooking, but those things, if I taste them now, they bring back memories. During the holidays, it was always a broccoli casserole, which was just cheese, rice, and broccoli, and a potato salad in the summer. Very simple, very American stuff. Is there a dish you don’t know how to make but you’d like to learn? I’m sure there are so many of them. Anything Asian is kind of out there for me. I’ve rolled sushi maybe half a dozen times, but never good enough to be able to do it proudly. It’s something I think would be a nice weapon in the arsenal someday. What’s your guilty-pleasure food? That’s tough. Anything sweet, really. Ice cream — I usually never keep it in the house because I would just eat it all. Cookies. Mike & Ikes. What would you be doing if you weren’t in this business? I would love to do body work on cars. I’m really into hot rods. I just bought a car — a 1988 Monte Carlo — that I’m probably going to need to restore. Working on cars, engines in some sort of way, would be something I’d want to learn how to do.

Me: Scott, I think they nicknamed me “Gluten-free.” And we don’t have a toaster anymore. Scott: I gotta go. Goodbye. Send me a picture of the firefighters. I know you took one.
I touched the toaster. Still hot. I grabbed a pair of tongs and pulled the gluten-free bagel out of my toaster and took a bite. It was burnt but it had remnants of a good aftertaste. If only the firefighters hadn’t named me Gluten-free.

Vegetable Soup: Simplicity at Its Best Feeling like you’ve hit the wall after all the holiday indulgences? Looking for an excuse to dial it down a bit, simplify your diet, conserve your energy to stay warm, and settle in for a succession of days with the chilling cold? With the surprising addition of blackeyed peas (to signify good luck and prosperity for the New Year), this hearty vegetable soup will comfortably fit the bill. Personally, I always feel virtuous when I both make and consume this soul-satisfying version.

Minestrone With Black Eyed Peas & Kidney Beans Yield: 8-10 servings
INGREDIENTS 3 tablespoons extra-virgin olive oil 2 ounces pancetta, diced 3/8-inch pieces (about one or two slices, cut 1/4- to 3/8-inch thick) 1 large onion, chopped 2 celery ribs, chopped 4 garlic cloves, thinly sliced 1 leek, white and tender green parts sliced; reserve 1 dark top salt and freshly ground coarse pepper 1/2 pound Savoy or other green cabbage, coarsely shredded 1 28-ounce can diced tomatoes, or whole plum tomatoes, torn 1/2 cup dried black-eyed peas 2 quarts water 3 parsley sprigs 1 bay leaf 3 fresh thyme sprigs 1 15-ounce can red kidney beans, drained and rinsed 2 ounces penne pasta 1/2 shredded basil 1/4 cup plus 2 tablespoons grated Parmigiano-Reggiano cheese
DIRECTIONS In a pot, heat 2 tablespoons of olive oil. Add the pancetta, onion, celery, garlic, and sliced leek, and season with salt and pepper. Cook over moderate heat until the vegetables are softened, about 10 minutes. Add the cabbage and cook until slightly wilted, about 1 minute. Add the tomatoes and cook for about 5 minutes. Add the black-eyed peas and water, then bring the soup to a boil. Wrap the parsley, bay leaf, and thyme in the reserved leek top and secure it with kitchen twine. (This becomes your bouquet garnish!) Add it to the pot. Cover the pot and simmer over low heat until the black-eyed peas are tender, about 45 minutes. Discard the herbs. Add the kidney beans and simmer 10 minutes longer. After you’ve added the kidney beans, begin cooking the penne in a pot of boiling salted water until al dente. Drain and cool under running water. Slice the penne crosswise into 1/4-inch rings. In a nonstick skillet, heat the remaining 1 tablespoon of oil. Add the penne in single layers and cook them over moderately high heat, turning once, until golden, about 5 minutes. Drain the penne rings on paper towels. Stir the basil into the soup and ladle the soup into bowls. Sprinkle with some of the penne rings and 1 tablespoon of the cheese, and serve. Note: To keep, refrigerate the soup and penne rings separately.
