PUBLISHER’S NOTE

GIVING THANKS TO THE SIMPLYKC MAGAZINE FAMILY

It’s about this time of year when I begin to take stock of the things truly important in my life. Fam-

ily, friends ... These two groups are very dear to me and I can’t imagine life without them. But I’d like to offer my gratitude to another important group of people in my world: All those who have helped make SIMPLYkc Magazine so successful: To our advertisers, thank you. Without you, this magazine would not be possible. I encourage every reader to visit these local businesses that are breathing life into our great city. To our contributors, I am forever grateful. Whether you’ve been with us since the launch of this magazine, have come and gone, or are just starting out, I feel so fortunate to have had the opportunity to work with you. And, saving the best for last, we want to give special thanks to all our readers. The KC community has always been incredibly welcoming and inclusive. We strive to shine a light on the people and experiences that make this town so amazing, in addition to entertaining and inspiring you each month. I hope we have accomplished that. Thank you for picking up this copy of our magazine. This November, I hope you, too, can find the time to take stock of your life and identify the people and opportunities for which you’re most grateful. From all of us at SIMPLYkc Magazine, happy Thanksgiving.

WHAT, WHERE

Meet Julie Burton Who:

What:

JULIE BURTON, WRITER She’s one of the funniest moms in KC. The surprisingly quiet and introverted mom of two puts an end to the “perfect” highlight reel of parenting we all see on social media. Julie tells us how it really is raising two daughters with her husband in Overland Park. She gives comic relief to moms, wives, and women around the world with her blunt and often embarrassing real-life stories. Julie is a contributing author the humor books, “But Did You Die? Setting the Parenting Bar Low,” by a bunch of know-it-alls and “The Unofficial Guide to Surviving Pregnancy Without Losing Your Mind,” an anthology by Tiffany O’Connor. Julie is also named one of the funniest parents by NBC’s Today Show, Scary Mommy, Babble, and Huffington Post Parents. You can find her at julieburton.blog, and right here in SimplyKC Magazine’s column, “Because I Said So” on page 44.

Where:

FAVORITE PLACE TO DINE

The real question here should be: What's your favorite barbecue? And that would be Gates Bar-B-Q. It’s the sauce. I love the spiciness. The words, “Hi, may I help you?” has been making my mouth water since I could eat solids. Q39 is my husband’s favorite so I’ll throw a shoutout to those folks as well. Jack Stack’s onion rings are also good. And Joe’s Kansas City Bar-B-Q fries are winners. Bring me all the barbecue.

FAVORITE DRINK

I love coffee. My favorite shop is Monarch Coffee off of Broadway Boulevard. I have dreams about this place. I swear, they chiseled the ice by hand for my iced coffee right in front of me. They go out of their way to make the perfect cup of coffee for you. And if we’re talking booze, I am a whiskey lover. Two places come to mind: The Monarch Bar on the Plaza for cocktails. The menu is a book with so many choices that it makes me clap giddily while marveling at all the options. A little closer to where I live is The Ainsworth in Leawood. My husband and I always end up there for after-dinner cocktails. I’m never disappointed with the bartenders' creations. Hmmm ... It's kinda weird that two out of the three places I mentioned have Monarch in the name.

FAVORITE SHOPPING

My favorite boutique is Frankie and Jules in Overland Park. I'm not a big shopper. I like places where I can walk in, tell the employees what I need, and they tell me what looks good for my budget. Frankie and Jules also carries workout clothes. I tend to dress in neutrals because I like to blend in, like a Monarch butterfly. OK, bad joke. I also love browsing the antiques in the West Bottoms. KC's history intrigues me and I’m fascinated by the old buildings.

FAVORITE HIDDEN GEMS

Can I say Patrick Mahomes? At the time of press, the Chiefs’ quarterback, Patrick Mahomes, is KC’s hidden gem. Take us to the Super Bowl, Patrick!

FAVORITE PLACES TO TAKE OUT-OF-TOWN GUESTS

There are so many choices! To really impress visitors I take them to Union Station. My mouth still drops every time I walk inside that building. It's like traveling back in time. Science City is there for the kids. The museum exhibits are always good. But Christmas time is when it's truly magical. Plus, it's at the end of the streetcar's stop, so we can jump on that when we're ready for a change. I love impressing others with the urban options in KC.

AROUND TOWN

Written by Julie Burton Elf the Musical photos courtesy of the Lied Center Arboretum Luminary Walk photos by Miranda Finnerty (kids in light tunnel) & Katharine Garrison (boy & Santa) The Hip Hop Nutcracker photos by Tim Norris

s ’ y t i C s a Kans Holiday Spirit Kansas City holds the crown for holiday traditions. The Mayor’s Christmas Tree in Crown Center serves as a symbol to the philanthropic spirit of Kansas City dating back 140 years. The lights at the Country Club Plaza have been switched on in breathtaking-awe every Thanksgiving for the past 93 years. And, we can thank The Hall Book Store in Kansas City for selling “Christmas letters” beginning in 1912. You might know this as sending a “Christmas card” from Hallmark. But let us introduce you to some different events in KC that might end up giving you a little extra holiday spirit.

ELF THE MUSICAL

7 p.m. Nov. 7 Lied Center, 1600 Stewart Drive, Lawrence “I just like to smile. Smiling’s my 20

favorite,” so says Buddy the Elf in the modern-day Christmas classic "Elf." Families have been watching the movie for 15 years. This year, take the family west to see a live adaptation of it at the Lied Center in Lawrence. Elf the Musical is the hilarious tale of Buddy, a young orphan who mistakenly crawls into Santa’s bag of gifts and is transported to the North Pole. Unaware that he is actually human, Buddy’s enormous size and poor toy-making abilities cause him to face the truth. With Santa’s permission, Buddy embarks on a journey

to New York City to find his birth father, discover his true identity, and help New York remember the true meaning of Christmas. Purchase tickets at lied.ku.edu.

GINA REARDON OF CATERING BY DESIGN

Gina Reardon moved to KC from Seattle when she was in junior high, and although she will always consider that part of the country home in her heart, she has spent most of her life right here in Kansas City. She is a self-taught chef, co-owns and operates her own catering company (Catering by Design) with her husband, John, and works tirelessly with the No Kid Hungry campaign — a nonprofit dedicated to ending childhood hunger. What would you say is your favorite thing about the city? The warmth, congeniality, and openness of the people who live here. If you open yourself up, I find everyone is very responsive and welcoming. You can live a solo life here if that’s what you want, and I see people who do, but I think if you believe in the best in people and you give them an opportunity, they will be there for you in every way you need them to be. What was your favorite dish growing up, and who cooked it? A lot of favorite dishes we all enjoyed together were just centered around family gatherings. My dad made a really amazing homemade spaghetti sauce with a lot of meat. It was a lot meatier than a bolognese but it was really good and spicy and that’s how I prefer it now. My stepmom made a beef stroganoff — which was a thing in the ’70s — and it was really good. She made that for my surprise 16th birthday and I thought it was the most elegant thing.

Where was your most recent, memorable meal out? At 1900 Parkway. Everything was beautiful. We had stuffed squash blossoms and a lobster pop tart. The food was exquisite. What indispensable tool must you always have in your kitchen? Besides the good knives, I like my micro-planer and I really like the two sizes of citrus presses, one for lemons, one for limes. What's your go-to culinary tip for home cooks? What’s really critical is to taste what you cook. No matter what it is, you need to trust yourself and trust the salt shaker. When the recipe says a pinch, that means you start with a pinch and you add more pinches until it tastes right. Home cooks often underuse salt. It’s a flavor enhancer and brings out the best of the materials you’re working with, including baked goods. What’s your favorite part of a busy day? I like getting in that groove where everything is clicking. The first thing I do in the morning is to think about what I need to accomplish. When I’m off to a good start, I’m hitting the mark in the first couple of hours in and I’m feeling really confident. Even if a problem arises, I know I can solve it because I have all this energy behind me. Where would you most like to escape to for a week? Italy. I haven’t been there yet, and I think I owe it to myself to go eat pasta every day.

KACIE HOW TO RELIEVE YOURSELF OF HOLIDAY HOSTING DUTIES Year after year, we have been the host house for my husband's extended family over Christmas because KC is a central location for the out-of-town families to stay. But I would like to take a break from the holidays this year and just have a simple Christmas with my partner and kids. How can I tell my in-laws and the families that we need a break?

Having families descend on you for the holidays can be pretty stressful — especially if you are the hostess. It also can be expensive. However, don’t forget it’s building memories for the kids and family. Have you considered taking a break during the holiday season when company is not there? That can be special too. You also could try delegating tasks to mitigate the work and stress. Ask others to bring dishes or designate some family members as cleaners. When others are involved, relax. Don’t worry about perfection. Awards are not given for your performance. Hopefully, you will get thank you's, kisses, and appreciation! If you absolutely cannot imagine hosting another get-together, though, make sure to discuss your issues with your partner before approaching the family. And, as I’m sure you know, there will always be someone who is disappointed or resistant to change. They may even view you as the holiday Grinch. But don’t let that convince you to back down. You deserve to have a holiday that you enjoy!

If you have any questions you’d like Kacie to answer, submit them to our managing editor at: ashley@simplykcmag.com.

LEE LAW PROMOTES HARMONY IN DIVORCE Written by T.E. Cunningham / Photo by Jami Marshall

Myndee Lee established Lee Law LLC in 2014 in Johnson County. She has grown her practice by not only providing exceptional legal services but by using her experiences and empathetic approach to be a calming influence in the lives of clients who find themselves facing a divorce.

Lee has been practicing law since 2001. During the course of her career, she assisted clients with general corporate and civil law matters. In addition, a great deal of her practice was built around representing families with their adoptions and other family matters such as divorce. As Lee became more active in divorce practice, it was clear to her that the adversarial court system is woefully ill-equipped to deal with hurting families. “Our court system, by design, is an adversarial one,” Lee says. “One of the problems with an adversary system is there are winners and losers. I have practiced in this system for almost 18 years. Often, divorces and other family-related matters are handled with no regard for the consequences of the conflict and the collateral damage that can result from encouraging hostile behavior.” This is because conflicts in personal relationships are so different than in other situations. “Conflict is inevitable, and damage will be done,” she explains. “When a family chooses divorce, it doesn’t need winners and losers. It needs resolutions that minimize the damage among children, friends, and other close relatives.” Lee set out to find a better way to help families. She believes working with couples through mediation is one way she can make a difference. In Kansas, attorneys provide an option to couples in which neither party is represented by the attorney/mediator.

32

| SIMPLYKCMAG.COM

Instead, the attorney’s role is to guide the process while the parties do the work of coming up with solutions. As the mediator, Lee can define the legal issues and provide a couple with an understanding of the law and local judicial traditions.

“When a family chooses divorce, it doesn’t need winners and losers.” “If the parties are invested in the solution to their conflict, they are more likely to take ownership and follow the agreement reached,” Lee says. “This makes post-decree litigation less likely. Anytime litigation is pursued, it not only is financially expensive, but emotionally draining.” Lee maintains a traditional divorce practice, but she also has founded Divorce in Harmony, which provides individuals and families with educational materials and coaching on conflict resolution. “It is empowering to know you have some control and get to make decisions when dealing with a difficult ex-spouse, family member, or even co-worker,” she says. “Something as simple as choosing to not use words such as ‘always’ and ‘never’ can change the way someone responds to you.”

Lee endeavors to coach clients on how to handle difficult people by diffusing complicated situations versus allowing them to escalate. While Lee also will serve as an attorney in a divorce proceeding, she much prefers the role of mediator. Although people are sometimes too angry to figure out a solution through mediation, she says many are relieved to have assistance in navigating the treacherous waters that divorce brings. The mediation practice model requires rigorous and ongoing study. In addition to her required continuing legal education classes, Lee attends seminars on mediation and conflict resolution. Also on the learning docket are core mediation training and domestic mediation training. In addition to formal training, Lee reads a great deal of literature on the subject matter. Lee’s husband, Charles, also is an attorney. In addition to their adult children, they have two children at home, a junior and a senior at Olathe East. When she is not helping clients through the process of divorce, Lee enjoys traveling, working in the yard, and dining at her favorite resaurant, Café Provence. She and her husband are also passionate Royals fans. You can find out more about Lee’s services on Facebook: @divorceinharmony and @leelawllc, or contact her at myndee@leelawlimited.com or 913.549.7039.

BEAUTY

Written by Deborah Eakin Osborne

or she has been deprived of sleep in previous days. Over time, too little sleep creates a “sleep debt,” sort of like being overdrawn at the bank. Eventually, your body will demand repayment of that the debt. After several days of inadequate rest, you may begin to exhibit signs of sleep deprivation. If you feel drowsy during the day, even during boring activities, you probably haven’t had enough sleep. Other signs that you may be experiencing sleep deprivation include: • Inability to handle stress, getting upset over trivial matters • Inability to concentrate • Inability to learn and retain new information • Increased appetite • Vision problems • Diminished motor skills • Relationship troubles • A weakening of your immune system, increasing your chance of becoming sick • An increase in the perception of pain

ARE YOU GETTING ENOUGH 'VITAMIN ZZZZ'? Whether you love to sleep (as I do), or view it as something you do “when you’re dead,” sleep is a biological necessity. Unfortunately, in this day and age, few of us are able to get the sleep we need to function at our best. How much sleep does one really need, and what happens when you fall behind? Are there things you can do before turning in for the night, as well as activities to avoid, that will help you achieve a good night’s rest?

34

| SIMPLYKCMAG.COM

The amount of sleep a person needs depends on several factors, including age. In general, infants require about 16 hours a day, whereas teenagers need about 9 on average. Experts recommend adults get seven to eight hours of sleep each night. This may or may not be realistic every night, but it should be the goal. You may think losing a few hours of sleep now and then is no big deal. You might even get used to a sleepdepriving schedule. But your body never really adapts to getting less sleep than it needs. The amount of sleep a person needs increases if he

The rhythm and timing of your body clock change with age. For example, napping in preschool-aged children is normal and promotes healthy growth and development. Young children tend to sleep more in the early evening. Older adults tend to go to bed earlier and wake up earlier. Teens fall asleep later at night than younger children and adults. One reason for the teenage sleep cycle is because melatonin is released and peaks later in the 24-hour cycle for this age group. As a result, many teens naturally prefer later bedtimes at night and sleep later in the morning than adults. Although no one is known to have died as a result of sleep deprivation (the human record for staying awake is 11 days — or 264 hours!), sleep deprivation certainly can be dangerous.

According to the National Highway Traffic Safety Administration, driver fatigue is responsible for an estimated 56,000 motor vehicle accidents and 1,500 deaths each year. Drowsiness is the brain’s last step before falling asleep; driving while drowsy can — and often does — lead to disaster. In addition, sleep deprivation magnifies alcohol’s effects on the body. So a fatigued person who drinks will become much more impaired than someone who is well-rested. The National Sleep Foundation says that if you are having trouble keeping your eyes focused, can’t stop yawning, or can’t remember driving the last few miles, you are probably too drowsy to drive safely. The foundation says you can’t rely on caffeine or other stimulants to overcome the effects of severe sleep deprivation.

DO’S & DON’TS OF SLEEP DO go to sleep and wake up at the same time each day. DO finish eating two to three hours before going to bed and avoid caffeine, alcohol, and nicotine before going to sleep. DO maintain a healthy lifestyle including regular exercise, but DON’T exercise close to bedtime. You should allow at least three hours between exercise and turning in for the night. DO take time to unwind before going to sleep and avoid any activities that can cause tension. DON’T watch TV or use the computer in bed. Turn off the technology (including your laptop) an hour before you plan to go to sleep. DO take a warm bath, read a book, or drink some caffeine-free tea. DO create a pleasant sleeping environment: Make the room dark, cool, and comfortable. DON'T spend wakeful hours in your bed if you can’t get to sleep. DO use your bed for sleep and sex only.

HAND & LAND MAKES LIVING CLEAN EASY Written by Angela Yuriko Smith / Photos by Jami Marshall

Like most good things, Hand & Land was born out of necessity. Founder Jessica Moler had been living overseas and had fallen in love with the green lifestyle. Her cousin, Nicole Lobdell, also was dedicated to being eco-conscious. When Moler returned to the states in 2014, she knew she wanted to do something meaningful. “When I moved home I was like, ‘I don’t want to work for anybody,’” Moler says. “I wasn’t clear about what I wanted to do, but I was serious about starting a business.” Lobdell was enthusiastic about the idea as well. “We were toying with the idea of opening up a cafe or restaurant or even a cocktail bar where we would serve different herbal infusions,” Moler explains. In the end, the winning idea was a store that promoted their values and contributed something positive to their community. Hand & Land was born. “These were products we wanted for ourselves,” Moler says, “and there was nowhere in Kansas City to purchase them.” So Moler and Lobdell decided to offer their favorite products under one roof. “Right now, the chemical industry is so under-regulated and chemicals are in virtually everything we’re surrounded by,” she says. “We have our environmental toxins, our personal care toxins, and food toxins. Doing what we can to support ourselves to detox as often as possible is really important for our overall health — and for the health of the environment.” Hand & Land boasts a variety of products to help you make the transition to a healthier, chemical-free lifestyle. One of Moler’s favorite things in the store is the bulk refill station where you can buy cleaners. You can purchase reusable containers in the store or bring in your own. Dish, laundry, and hand soap are available as bulk refills along with laundry detergent and all-pur-

pose cleaner. “We have quite a few customers who are now giving our refillable hand soaps as hostess gifts instead of bringing a bottle of wine,” Moler says with a smile.

“Doing what we can to support ourselves to detox as often as possible is really important for our overall health and our environment.”

Hand & Land is successful because every product it sells goes through a rigorous selection process. Manufacturers must share the same core values as Moler and Lobdell. The manufacturers must be organic and as natural as possible. Each product undergoes an ingredient check to make sure it doesn’t contain what Moler refers to as “the toxic 10.” The list of toxic ingredients to avoid is posted on the website at handandland.com. “I love that I can trust Jessica and Nicole to carry some of the best products available as well as know what is going to work best for me,” says customer Andrea Martinkovic. “These gals really do their research

and look into every line and product they carry. They also have the sweetest gifts, crystals, and potent healing products.” Authenticity also is important to Moler and Lobdell. “You can really tell someone whose heart and soul is into this as opposed to someone just jumping on the bandwagon,” Moler says. Finally, each product is tested in their homes. “If it makes the cut, we’ll carry it,” she says. Workshops and classes are another way Hand & Land adds value and connects with patrons. Presented by experts, the classes enrich the Hand & Land experience with a focus on holistic principles. Sign up for classes on Hand & Land’s Facebook page. Moler and Lobdell’s diligence is rewarding. “Hand and Land has become our ‘happy place,’” customer Anne Billman says. “The first time my daughters and I walked through the doors, we felt like we had made some new friends. You couldn’t ask for a more welcoming, calming environment.” Hand & Land is a true success story about two women who have learned to make a living — and a life — from clean living. You’ll find Hand & Land at 11527 Ash St. in Leawood. Call 913.491.6950 or visit handandland.com for more info.

PARENTING

Written by Stacey Hatton

sweetened caffeinated drinks also damages your child’s teeth. The high amount of sugar in soda is shocking and incredibly acidic, which erodes tooth enamel. This can lead to dental cavities. • Caffeine acts as a diuretic by eliminating excess water from the body via the kidneys. If too much caffeine is consumed, dehydration can occur. • Normally, caffeine passes from the body within a couple of hours. But if a child is sensitive to it, she could feel the stimulant up to six hours.

SIGNS OF WITHDRAWAL

GIVING CHILDREN CAFFEINE? ARE YOU CRAZY?! Caffeine, which, unfortunately, is my middle name and comprises 58% of my bodily fluid, may not be the healthiest choice for adults. But you can bet your bottom dollar it certainly is not for your child! The bad news is that it lurks everywhere — not just in pickme-up beverages. Caffeine is a powerful stimulant often found in coffee, soda, chocolate, cold medicines, diet pills, and some pain relievers.

CAFFEINE IS A DRUG The Nemours Foundation reports caffeine may be fine for adults, but can have ill health effects on kids, especially younger children. Some of these symptoms may be a jumpy or twitchy feeling, anxiousness, or an increase in heart rate and blood pressure. Nausea, headaches, depression, and difficulty sleeping or concentrating in school also can be related to children

38

| SIMPLYKCMAG.COM

consuming caffeine. “The United States hasn’t developed guidelines for caffeine intake and kids, but Canadian guidelines recommend preschoolers get no more than 45 milligrams of caffeine a day,” according to the Nemours Foundation. “That’s equivalent to the average amount of caffeine found in a 12-ounce can of soda or four 1.5-ounce milk-chocolate bars.” Caffeine is labeled a stimulant, or drug, since it stimulates the central nervous system. The adrenaline rush for an adult is similar to what children experience. The problem is that it takes quite a bit less caffeine for a child to feel these effects than adults.

FACTS TO KNOW

• Children are 60% more likely to be obese if they drink one or more 12-ounce sweetened soft drinks every day. • Children who drink caffeinated beverages do not get enough calcium from milk, which is necessary for healthy teeth and bones. (Sodas can even decrease bone mass density by interfering with the ability to absorb calcium correctly, eventually leading to osteoporosis.) • Caffeine may lead to fibrocystic breasts, or worsen lumpy and painful breasts. • Replacing water and milk with

Stopping caffeine abruptly, even in children or young adults, can cause the body to experience uncomfortable withdrawal symptoms. It is important to decrease the amount slowly so your child’s body doesn’t begin to “miss the drug” and have feelings of tiredness, irritability, severe headaches, nausea, and/or vomiting.

CAFFEINE ALTERNATIVES “Caffeine may have a negative effect on a child’s nutrition if caffeinated drinks replace healthy drinks such as milk,” reports the National Institute of Health. “A child who consumes caffeine also may eat less, because caffeine reduces the appetite.” Offering water, low-fat milk, and small quantities of 100% fruit juice are better substitutes for sugary, caffeinated drinks. Older children can have an occasional soda, but if sugary drinks were the only beverages available when they were younger, they probably will reach for it as a teen. Finally, just because chocolate has trace amounts of caffeine in it, it’s OK to indulge in a hot-fudge sundae every once in a while. Moderation is always key for everything you put in your body. Just don’t pour yourself a cup of Joe and then fill up your kids’ sippy cups to give them their morning preschool boost. Kids have enough battles to fight throughout their lives — please don’t get them started early on the caffeine rollercoaster!

VITALITY BOWLS BRINGS THE POWER OF EATING HEALTHY TO KANSAS CITY Written by Brennan Hallock / Photos by Jami Marshall

Health is defined by much more than how often we visit the doctor. We each have the power to feel better and live longer just by putting healthy foods into our bodies and getting regular exercise. As a society, we have begun to realize how important this fact is, which is why restaurants — a market that once seemed to only offer greasy, unhealthy products — are now beginning to provide great-tasting, healthy food. Vitality Bowls is one restaurant that has taken health into consideration from the very start, creating a menu based on health rather than simply adding a couple of healthy options. Vitality Bowls was founded in San Ramon, California, in 2011 by Roy and Tara Gilad. The Gilads were searching for an alternative eatery for their daughter, who has severe food allergies, but were not happy with the options available. This need turned into a thriving superfood cafe, made popular thanks to its açaí bowls. The Brazilian super-fruit açaí, which comes from the Amazon palm tree, contains several antioxidants and nutrients packed into the small, delicious berry. Added to the açaí bowls are everything from bananas to granola to Goji berries, honey, broccoli, pineapples, spirulina, ginger, and more, depending on which bowl you choose. Vitality Bowls also offers desserts, a breakfast bowl, smoothies, a detox bowl, and more. None of the products contain ice, frozen yogurt, added sugar, artificial preservatives, trans-fat, or any other fillers. All orders are made fresh and nearly all of the superfoods are organic. The Gilads began franchising their concept in 2014, and has since grown to more than 100 locations open or in development across the United States.

Two of those locations are now in Leawood and Overland Park.

were young, they started looking into opening a franchise of Vitality Bowls.

Chris Landes, co-owner of Vitality Bowls in the metro, says he has his wife Judy Deines (also a co-owner) to thank for discovering Vitality Bowls and getting him excited about bringing their products to the area.

“We kind of kicked that idea back and forth for a while, and ultimately decided this would be an exciting new chapter for us,” he explains. “We weren’t franchise shopping — it was the passion around Vitality Bowls itself and what they have to offer that we thought would be great in the Kansas City market,” explains Landes.

“The Brazilian super-fruit açaí, which comes from the Amazon palm tree, contains several antioxidants and nutrients packed into the small, delicious berry.” “Judy was very passionate about the food, which she discovered in her business travels,” Landes says. “We didn’t have anything like that in the area. She came back and told me all about açaí bowls, which I’d never heard of.” Landes had been working at Sprint for about 20 years, but was laid off a couple years ago. Because he and his wife actually had previous experience in the restaurant industry from when they

Landes has noticed the power of healthy eating in his own life since opening Vitality Bowls. “After we opened the store in Leawood, I was working open to close seven days a week for probably the first eight to 10 weeks, so I was eating only Vitality Bowls’ foods,” he explains. When Landes went to get his annual physical not long after that, he had his cholesterol checked. “In 20-some years of seeing this doctor, he’d never come back into the room after initially talking to me,” Landes says. “Well, he stepped back in and asked ‘What are you doing? Your cholesterol has finally gone down!’” Experiences like this have shown Landes what we put into our bodies can have a profound effect on our health and that bringing healthier restaurant options to Kansas City can pass along this positive impact to others in the area. Visit Vitality Bowls at either of its two locations in the Kansas City area: 11828 Roe Ave. in Leawood or 11721 College Blvd., near Johnson County Community College, in Overland Park. GOOD TASTES

Written by Gina Reardon / Photo by Melanie McDowell

y e k r u T k l a T Let ’s

I am one of many who enjoy roasted turkey at Thanksgiving and all the sides that go with it, but let’s be honest — it’s a LOT of work! So what do you do when you’re just not feeling up to providing a Thanksgiving feast? You plan a simple menu that echoes the flavors of Thanksgiving, but that lets you prep in advance. This lasagna will be the focal point of your menu. Serve it with a green vegetable such as blanched and sautéed haricot vert with crispy prosciutto or a simple salad with assorted crisp greens, dried cranberries, apples, nuts, and a white balsamic vinaigrette. Trust me — you won’t miss the turkey. Roasted Butternut Squash & Rosemary Lasagna Serves 8 to 10

INGREDIENTS 3 pounds butternut squash, quartered, seeded, peeled and cut into 1/2-inch dice (about 9-1/2 cups) 3 tablespoons vegetable oil 4 cups milk 2 tablespoons dried rosemary, crumbled 1 tablespoon minced garlic 1/4 cup unsalted butter 4 tablespoons flour 9 7x13-inch sheets of dry no-boil lasagna pasta 1-1/3 cups freshly grated Parmesan cheese (about 5 oz) 1 cup heavy cream 1/2 teaspoon salt Garnish with fresh rosemary sprigs

DIRECTIONS Preheat your oven to 450 degrees and oil 2 shallow baking sheets. In a large bowl, toss the squash with oil until it’s well-coated and spread a layer of the squash in each pan. Roast for 10 minutes, then season with the salt. Stir the squash and roast it for another 10 to 15 minutes or until it is tender and beginning to turn golden. While the squash is roasting, bring the milk and rosemary to a simmer in a saucepan. Heat the milk mixture over low heat for 10 minutes and pour it through a sieve into a large pitcher or measuring cup. In a large heavy saucepan, cook the garlic in butter over moderately low heat,

stirring, until softened. Stir in the flour and cook roux, stirring for 3 minutes. Remove the pan from the heat and whisk in the milk mixture in a stream until smooth. Return the pan to the heat and simmer the sauce, whisking occasionally, for about 10 minutes or until thick. Stir in the squash and salt and pepper to taste. Reduce the oven temperature to 375 degrees. Butter a baking dish 13x9x2 inches. Pour 1 cup of the sauce into the baking dish (the bottom will not be covered) and add 3 lasagna sheets. Make sure they do not touch each other. Spread half the remaining sauce over the pasta and sprinkle with a 1/2 cup of Parmesan. Make 1 more layer in the

same manner, beginning and ending with pasta. In a bowl with an electric mixer, beat the cream and salt until it holds soft peaks and spreads evenly over the top pasta layer. Completely cover the pasta. Sprinkle the remaining 1/3 cup of Parmesan over the cream. Cover tightly with foil, tenting slightly to prevent the foil from touching the top layer. Bake in the middle of the oven for 30 minutes. Remove the foil and bake the lasagna 10 more minutes or until the top is bubbling and golden. Let the lasagna stand for 5 minutes. Garnish each serving with rosemary. Note: The sauce may be made 3 days ahead and chilled, its surface covered with plastic wrap.

BECAUSE I SAID SO ...

THANKSGIVING STEALS MY BIRTHDAY THUNDER Jimi Hendrix. Caroline Kennedy. Bruce Lee. Bill Nye, the Science Guy. You know what they all have in common? Nov. 27. They all share a birthday with me. I know we can’t control our birthdays but is it really necessary to celebrate Valentine’s Day? I say no. There’s no need for that. It’s a Hallmark holiday. Wooing consists of a mass-produced “I love you” card and a dozen overpriced flowers. Do not cave for this, ladies. Not in February. But if you are a romantic and really love Cupid then you'd better double up on birth control. You risk conceiving a child with a Thanksgiving birthday. My mom and dad let Cupid take aim and fire. Any child born between Nov. 22 and Nov. 28 will eventually have a Thanksgiving birthday. If not on the day, the birthday will get gobbled up Thanksgiving week and forgotten. Thanksgiving birthdays are decided

for you. It doesn’t matter if you’re turning 37 or 97. Thanksgiving birthdays are always the same: Turkey and mashed potatoes. That’s your birthday dinner. You don’t get a choice where to eat because every restaurant is closed. You can’t celebrate how most people celebrate birthdays. Pedicures, brunch, and shopping? A round of golf with the guys? A nice family dinner at your favorite restaurant? Closed. They're all closed. Sure, you have Black Friday to shop but you risk getting trampled to death by crowds. And that would just suck to have a matching birth and death day on your headstone. Finally, even if your birthday isn’t on Thanksgiving Day, your friends are still with their own families. ’Tis the season for flu and stress. I mean, do you really want to be around people on your birthday if Uncle Mike’s kids have a fever and are hacking all over the green bean casserole? Hiding in your bedroom, alone, on your birthday can have advantages. A Facebook serenade of “happy birthday!” on your feed? Nope. It’s considered rude to look at your phone while at the dinner table. Your long-lost high school science partner will never know it’s your birthday. Everyone naps on Thanksgiving. WAKE UP! It’s my birthday! Fine, I’ll just close my eyes for a little bit, too.

Long-lost relatives get together for Thanksgiving. I cannot deny that it’s special to be able to see family from out of town. “Happy Thanksgiving” and hugs are given all around. It’s just a little awkward staring at each person, waiting to see if they have anything else to say. I mean, I’m right here. Thanksgiving is included in “the holidays.” Oh, that’s your Christmas present, too. When the pies are brought out for dessert, you pray one of them does not have candles on it. There is no substitute for birthday cake. I do exist. I know. I can’t complain about the day I was born. So, thank you, Mom and Dad, for making me. It’s just not my choice day to pop out of the womb. This is all Cupid’s fault. AIM FOR THE TURKEY, YOU FLYING BABY! Julie Burton is an Overland Park mom, wife, writer, outdoorswoman by marriage, K-State lover, and bacon-hater. e l BEHIND KC STREET NAMES p o pe

1 Antioch Road / KS

Originally named Chase Road after Elijah Cornell Chase, who established Chase Financial Institution and Cornell University. KC historians believe the road may have been renamed for the city in the Bible.

2 A ntioch Road / MO

The Missouri version of this road is named after the historic Antioch Christian Church, located at 4805 N.E. Antioch Road. The church was listed on the National Register of Historic Places in 1979.

3 A rmour Road

& Armour Boulevard / MO

Simeon B. Armour, head of a meatpacking plant, was appointed to the Kansas City park board in 1892. Armour helped develop plans for a

Celebrate

boulevard to run along 35th Street, but the Board of Parks Commissioners declined the plan. In 1900, the boulevard was constructed and named Armour Boulevard.

4 P ershing Road / MO

Pershing Road was named after John Joseph Pershing, a general in the Army during World War I. He led his men to victory over the Germans by working with the French and British armies as one single unit.

5 Quivira Road / KS

In 1541, explorer Francisco Vasquez de Coronado heard about a wealthy tribe named Quivira living in Kansas. Coronado’s expedition set out to find the Quivira. The tribe he found in Kansas did not possess wealth or gold but Coronado did discover fer-

tile land with a system of waterways and streams suitable for farming.

6 S trang Line Road / KS

William Strang Jr. was a railroad entrepreneur from New York who settled in Olathe in 1905. He created the Missouri and Kansas Interurban Railway, a trolley-like vehicle that ran on a 25-mile track from rural Olathe to downtown KCMO. The railway was nicknamed the “Strang Line.” Strang is considered the founder of Overland Park.

7 Ward Parkway / MO

Ward Parkway is named after Seth Edmund Ward, who traded oxen and supplies along the California-Oregon Trail at Fort Laramie in Wyoming. He eventually purchased land where the Country Club Plaza now sits.
