EDITOR’S NOTE

A FOND FAREWELL Writing has always been a passion of mine, which is why I’ve loved working with SIMPLYkc Magazine over the past five years — first as a writer and then as editor in chief this past year. I am sad to say, though, that September is my last month with this wonderful local magazine. As some of you may know, my husband and I own Health House, a boutique rowing and fitness studio located in

focus needs to be on helping my husband and expanding our brand. It’s bittersweet — I’ve loved the opportunity to work with an evolving publication over the past few years. My role as editor was a learning experience, one that I am proud to have on my resume. I also have so enjoyed working with the staff. It’s an all-women crew that somehow juggles mom and work life, tight deadlines, last-minute shoots, edits, and bumps along the way. To Suzanne, Julie Faerman, Ashley, Julie Burton, Brandy, and all our photographers and models: It has been a great ride! Thank you for this amazing opportunity and for a fun five years. Sincerely,

WHAT, WHERE Meet Christa Dubill

WHO: CHRISTA DUBILL WHAT: You might recognize Dubill as 41 Action News’ anchor for the 4 and 6 p.m. segments. She’s been on air in Kansas City for 10 years.

WHERE: FAVORITE PLACE TO EAT IN KC I have a lot of lunch meetings, so I eat out often during the week. Some of my favorites are: Classic Cup for the chicken pita, Blue Moose for the turkey burger, Urban Table for the chicken salad sandwich, and Artegos for the barbecue chicken flatbread. FAVORITE DRINK IN KC Decadent in Prairefire has an amazing chocolate frappuccino. I don’t drink alcohol very often, but when I do, there is no better drink in the city than the espresso martini at Bristol. (Oh my. Just the thought makes me happy.) My friends and I often stop there for a little break while shopping. FAVORITE PLACE TO SHOP IN KC This is a tough one. I don’t have a lot of time to seek out and shop at boutiques. So, I get a lot of my clothes at Nordstrom’s and Banana Republic. I also think Target can be fun for cute, inexpensive dresses or tops. If you know of a couple great boutiques, I’d love to know about them! I’m “Christa Dubill on TV” on Facebook. FAVORITE HIDDEN GEMS IN KC Oh, there are so many great places in our city. For those who go often, they won’t seem hidden, but if you haven’t been, they’re worth a visit! Here are just a few: •F amily Tree Nursery for Christmas decorations. They have good sales after Christmas, too. •R evival Home Furnishings for older and unique furniture pieces (some consignment, some new). • Sweet Caroline’s ice cream shop on 151st in Stanley. •J ’Adore in Brookside. Cute little home and garden store known for, among other things, its adorable miniature plants. •P ryde’s Old Westport. Make sure to head to the back end of the basement for pies from Ashleigh’s Bake Shop. FAVORITE PLACES TO TAKE OUT-OF-TOWN GUESTS The Nelson-Atkins Museum of Art, the Plaza, one of the escape rooms in town, and Kauffman (both the stadium and the performing arts center).

THE JUVO BOARD: A YEAR-ROUND, INDOOR STAND-UP PADDLEBOARDING WORKOUT … WITHOUT THE WATER

o you have a regular workout or fitness routine that seems to have gone stale, or have you told yourself you would begin some sort of physical activity but are worried it would be boring? Personal Best Pilates just might have the cure for what ails you. Carrie Cohn, owner and founder of Personal Best Pilates Studio, is known for providing some of the best Pilates classes in the metro area. She is now offering an exciting new fitness class. It’s similar to

16

what you might expect while doing stand-up paddleboarding (SUP), but without the water. “I did SUP while on vacation in Florida a few years ago and loved it,” Cohn says. “It was an amazing workout and great for the core, while also giving a good cardio workout.” Enthusiastic about the benefits obtained through SUP, Cohn wondered if there was a way to provide that same workout without the water in an indoor environment so it could be enjoyed year-round. She found it with a new workout device known as the Juvo Board, a total-body conditioning apparatus designed to simulate SUP. It incor-

porates elements of balanced barre and yoga workouts. A workout with the Juvo (from the Latin word “assist”) Board is not only fun, but highly effective when it comes to increasing strength, flexibility, balance, agility, and overall mobility. “Our clients love it,” says Cohn, who is a certified Juvo Board trainer. “It’s challenging without being brutal and is a great complement to Pilates. Plus, it’s fun!” Client Bert Benjamin, who has done Pilates at the studio for years, is a fan of this new workout. “Last month, my incredible instructor, Amanda, introduced the Juvo Board,” he explains. “Under her exceptional guidance, I have enjoyed new routines. I welcome the addition of achieving better balance and stability. The Juvo is a great addition to the already extensive tools on-site at Personal Best.” Other benefits of the Juvo Board include increased calorie and fat-burning potential, as more muscles are required for balance. Plus, your knees are safe with elevated squats and lunges; upper body strength can be built without pressure on wrists and shoulders in various yoga poses; push-ups can be done in an elevated

position, which builds strength using proper form for an easier transition to flat-level push-ups; and routine barre workouts are taken to the next level while training on the unstable and elevated surface of the Juvo Board.

“Juvo Board is challenging without being brutal and is a great complement to Pilates.” This board gives you a wide variety of options for changing up your workouts on a regular basis. Personal Best Juvo Board classes take place five days a week at the studio at $25 for a single class or $115 for a package of five classes. All instructors have been certified by the creators of the Juvo Board. For best results, Cohn recommends using the Juvo Board two to three

times a week, but clients don’t have to rely on just the studio classes to keep them in top form. “We give home exercises to get better results that don’t require you to always be in the studio,” she says. In addition to Juvo Board classes and Pilates (both mat- and equipment-based), Personal Best Pilates offers barre classes and massage therapy. Founded in 2000, the studio is recognized as the oldest and most established Pilates business in KC with a loyal base of clients, many of whom include professional golfers, tennis players, and other athletes. “I am excited about Juvo and that our studio is among the first in KC to offer this new fitness opportunity,” says client Kathy Fitzpatrick. “It’s a great addition to Pilates and should enhance my strengthening, toning, and my balance as well. It’s an all-around great workout!” If you are ready to join the fun while simultaneously getting in a great workout, call class 913.345.8787 or visit kcpilates.com. The studio is located at 6600 College Blvd., Suite 210, in Overland Park.

Amanda Iiams demonstrates various exercises you can do on the Juvo Board, which simulates stand-up paddleboarding.

KACIE HOW TO DEAL WITH CARETAKER CONFLICTS

I have a 12-month-old. My mom watches her several days a week.

This is a tough one. In my experience, grandparents simply want to spoil their grandchildren — and what makes kids happy? Sweets! I have a child as well, and I will admit that

That being said, you are the parent and your choices for your child should be honored by those taking care of her. Sit down with your mom or write her a note and tell her how important this is to you and that you are only wanting the best for your baby. Consider citing reputable medical professionals about children’s diets, or ask your doctor for help on what to say.

You might be able to come to a compromise with your mother on one small treat per week only after nutritious meals. If your mom still doesn’t listen, it may be time to find another caregiver. Good luck!

They always looked perfect.” It wasn’t long before Doherty began noticing the brows on all the biggest celebrities in Hollywood and all the top models on the runway. “I was obsessed with eyebrows,” the esthetician of 22 years says. “I noticed all the most beautiful people were beautiful in their own way, but had one thing in common: great brows.” In the mid-’90s, Doherty was 18 and wondering what she wanted to do with her life. FOR GORGEOUS SPRING BLOOMS, PLANT BULBS NOW We continued this routine, picking armful after armful of flowers, until our grandmother had to drag us away. I was sad to leave that beautiful field, straining to catch the final glimpse of color as we drove away. That field was where my love for bulbs bloomed. I know it’s hard to think of anything growing after the brutal 100-degree temperatures Kansas City has experienced this summer. However, as we are looking forward to cooler weather ahead, it’s time to think about planting your spring bulbs now. Make sure your yard is the envy of neighbors up and down your street come springtime!

O

ne of my favorite memories from when I was a little girl was going with my grandmother and sister to a field near her house to pick flowers. She’d gotten permission from the owner to pick as many as we wanted. Yellow and white daffodils blanketed the field. We filled our fists with as many flowers as we could, and when we could hold no more, we ran to the car, with its doors already open, and laid them carefully in the backseat.

30

| SIMPLYKCMAG.COM

Ideally, bulbs should be planted at least six weeks before hard, ground-freezing frost is expected in your area, according to The Grass Pad, a local sod, seed, and garden supplier. Bulbs need time to root and establish themselves. But planting them too early can lead to fungus or disease. A good rule of thumb is to plant bulbs when the average nighttime temperatures reach the 40- to 50-degree range. At that point, the soil temperature should be just right for tucking in bulbs for their long winter’s nap underground. The end of September to the end of November is the optimal time to plant fall bulbs in our region of the country.

BULBS COMMON TO KC

Experts at The Grass Pad say today’s selection of bulbs extends far beyond the typical daffodils, hyacinth, iris, lily, and tulips. Crocus, alliums, snowdrops, and scilla all have seen an increase in popularity in the last few years. You will begin to see crocus, snowdrops, and grape hyacinths beginning to make their way through the earth as early as February. March will bring my favorite bright daffodils and purple, pink, and white hyacinths that fill the spring air with a sweet scent. Tulips will begin making their debut from March through mid-May in many colors and heights. Lilies follow in the summer months. Try purchasing a few different varieties that bloom at various times to maximize colors and bloom times for your garden or yard — all your hard work now will pay off in the months to come!

TIPS FOR PLANTING SUCCESS •C hoose healthy bulbs. Look for ones that are not too dry or moldy. Also, the larger the bulb, the more flowers it will produce. •C hoose an area in full sun to plant your bulbs. Some varieties, known as “woodland bulbs,” prefer a smidge of cool shade. Ask your local garden center about these.

• Plant bulbs in groups. This creates a more natural look. •O nce planted, cover the bulbs with soil and water them. Only if we are having an especially dry season should you continue to water them through the fall and winter. •M ark the area. Using a small rock or other item will help you remember where they are — especially helpful if you plan to add other plants near the area.

ARTS & CULTURE

WOMEN IN THE ARTS: MEET THE LADIES OF KCREP

N

ot unlike other industries, the theater community has experienced scrutiny for its advancement of women both on the creative and business sides. Kansas City Repertory Theatre passes that litmus test with flying colors, with a group of strong, creative women making a significant impact in the advancement of the organization. Operators of both the Helen F. Spencer Theatre in the renovated UMKC Performing Arts Center and Copaken Stage in the H&R Block building in the Power & Light District, KCRep has become a force to be reckoned with on the national landscape of region-

al theaters. From discovering new talent, developing projects, staging world premieres and highly regarded technical productions, and its stellar programming for new works and education, KCRep is a theatrical jewel in the Midwest. Through a mission that builds community by connecting people through productions and programming that educate, entertain, challenge, and inspire, KCRep focuses on positioning KC into a theater mecca. Several women are at the helm of this great organization — even from the beginning. Dr. Patricia McIlrath founded the

KCrep in 1964 to create a training program in which theater students could interface with all aspects of professional theater. Since 2013, Angela Gieras has served as the executive director, working with Artistic Director Eric Rosen to lead the team and fulfill the Rep’s vision and mission. (It’s important to note that Rosen has been lauded for his advancement of both women and minorities, which is certainly well-earned as it relates to KCRep.) Gieras has put her stamp on KCRep by successfully leading the $5.5 million campaign to renovate Spencer Theatre, steering the development of a plan that includes refreshing the mission, vision, and core values, and overseeing KCRep’s rebranding.

“KCRep is an important and influential force in Kansas City,” Gieras says. “Our national reputation for excellence is something we are all proud of, and our mission is to contribute to the cultural vibrancy of our great city, with a strong focus on growing the next generation of theatergoers for years to come.” With a professional start as a commercial banker, Gieras began her career in arts administration at the Warehouse Theatre in Greenville, S.C. She then developed her career at the Dallas Theater Center and Florida Theatre in Jacksonville before moving to KC with her husband and daughter. Since then, she has embedded herself in the KC cultural and business community and serves on several boards. Directly reporting to Rosen is another incredible force: Marissa Wolf, KCRep’s director of new works. In her first year at KCRep, Wolf launched

OriginKC, a program that supports the creation, development, and production of new work from a diverse body of playwrights. Now entering its third season, OriginKC has been lauded by the theater community and is gaining acclaim from coast to coast. Most recently, the production, “Fire in Dreamland” was added to the 2017–2018 season at The Public Theater in New York City with Wolf slated to direct. “In collaboration with Eric Rosen, I’m thrilled to champion vital, urgent, and nationally recognized plays and musicals, forwarding Kansas City as a major national center for new work,” Wolf explains. “‘Fire in Dreamland’ was among the very first new plays we produced here under the auspices of the Festival, and Kansas City has become a part of the play’s DNA.” Wolf’s résumé includes credits as artistic director of Crowded Fire Theater in San Francisco where she was nominated

best director by Broadway World San Francisco and the Bay Area Critics Circle Award. She also boasts a wide array of directing credits, including those at Berkeley Repertory Theatre, Marin Theatre Company, SF Playhouse, and Cutting Ball Theatre. With Molly Alexander, director of development who heads all fundraising activities; Melinda McCrary, director of education and community programs (putting her in charge of educating KC youth about the power of theater); and Melanie Coleman, director of finance who presides over annual budgeting efforts and all accounting functions, there is a strong contingent of women in senior director roles. KCRep’s newest hire is Amy Lebo, a native Philadelphian who joins the team as director of marketing and communications, overseeing a team dedicated to ensuring the future success of the theater through ticket sales, press coverage, and brand positioning.

SHAWNEE MISSION HEALTH: EMPOWERING WOMEN TO LIV

I

n 1997, Kansas City Public Television (KCPT) board member Bethany Derrough was asked to attend a meeting. Little did she know it would change the course of life for more than 40,000 area women, including her own. Derrough, along with KCPT’s vice president of content and communications Cynthia Smith, was invited to meet with a woman who had just moved to the Kansas City area. The woman described a women’s health event, “Speaking of Women’s Health,” that she had experienced in Cincinnati.

the area’s first Speaking of Women’s Health event, which was held in downtown Kansas City and attended by more than 600 women.

wellness events, activities, and more, LIV offers women an opportunity to commit themselves to health and wellness, now and in the future.

In 2015, SMH rebranded the program as Living in Vitality (LIV), to better reflect the active role women are taking in their health and wellness to live their best life. LIV remains focused on empowering KC women to lead healthier lives physically, mentally, and spiritually. Through the uplifting and educational annual conference,

Now in its 20th anniversary year, the event boasts a team of more than 100 volunteers and is held annually at the Overland Park Convention Center. This year’s LIV conference is taking place Friday, Sept. 29. To celebrate the anniversary year, SMH is asking attendees, “What’s Your Story?” to recognize the uniqueness of the women, from where

“It sounded fantastic. But no one was convinced the event could be that great,” Derrough recalls. “So Cynthia Smith undertook a field trip to Cincinnati to attend the next one.” After witnessing the event, Smith was convinced they should replicate it in KC. “I was utterly impressed and instantly recognized it was a tremendous idea,” she says. Planning began immediately. The program provided national sponsors, a format, and speakers supported by long-time local sponsors Sprint, Hunt Midwest, Blue Cross & Blue Shield of Kansas City, Commerce Bank, Garmin, and Shawnee Mission Health (SMH). A team of dedicated volunteers, led by Derrough and Smith, organized

they are in their wellness journey to how LIV has impacted their lives. Participants will write a message to themselves on postcards, which will be mailed to them a few months later, serving as an encouraging reminder of the commitment they made to themselves during the event. Charlene Wallace, manager of the Breast Center at SMH, has been on the event’s organizing committee for nearly 15 years. “The purity of the event is what makes it so special,” she says. “Everyone is involved for no other reason than to make it special for women. It’s our signature event because it truly impacts and changes people’s lives.” Wallace also notes that one of the event’s most important attributes is the integrity of the information that it offers. “So many people go to the internet today,” notes Wallace. “But there’s actually so much misinformation online that women need a credible source of information.” She adds that each year, the event programming includes a wealth of wellness and preventive health information. “We continually add topics that are fresh and relevant for today’s women.” To that end, the event committee meets monthly — year-round — with the focus on finding the best information and resources to help empower women to take better care of themselves and their families. Whether juggling responsibilities as a new mom, or a woman looking to remain energized well into retirement, LIV offers women the tools to succeed. Programming is wide-ranging, including topics such as stress-management, financial planning, reducing inflammation through nutrition, and much more. Tickets for the annual conference always sell out early. However, LIV offers a multitude of opportunities for health and wellness education across a variety of topics throughout the entire year. BECAUSE I SAID SO...

SHIPLAP LOVER What makes something funny? I don’t have an answer for you — and I even consider myself a humor writer. I can tell you humor is an art. There are different styles of humor: parody, satire, slapstick, irony, sarcasm, puns, spoofs, dark humor, the unexpected. Any standup comedian will tell you timing plays a role in humor. My parents will tell you humor is genetic. But recognizing when you’re not-sosmart and telling SIMPLYkc Magazine’s audience takes a certain skill. I once told my husband, Scott, that people think I’m funny only because I’m good at making fun of myself. It’s called the “not-sosmart” humor. I was in the bathtub when I realized — I might be the dumbest person I know. And I know a lot of dumb people. The first weekend of the month, thousands of people head to the historic West Bottoms. You will find stores filled with antiques, one-of-a-kind vintage finds, thrifty picks, other people’s junk, whatever. I went to the West Bottoms with two friends. We wandered into store after store, each talking about our personal styles. Then I found the perfect piece: a small “shiplap lover” sign. Me: Oh! This is cute. I have a whole fishing theme going on in our bathroom.

38

Shiplap lover. Sounds sexy. Cody: Oh, you should get it then. Me: Yeah, I think I will. I’ll get it to decorate the shelf by our tub. It’s perfect. Kathy: Oh. Yeah. Get it. It was perfect — or so I thought. There’s something about the master bathroom, especially the bathtub, that can be intimate without mushy. If there’s one thing Scott and I love with a passion, it’s fishing. Scott: What did you buy with Cody and Kathy? Me: This. Isn’t this cute? Oh, and this too! For the tub. Scott: What’s a shiplap? Me: Oh, you know. Like lovers on a ship. It’s like us and fishing!

that overlap each other. No, not in the form of making a ship, but in the form of wood pieces being nailed up on a wall like a barn. Some woman named Joanna Gaines from a show called Fixer Upper made it popular. Shiplap has nothing to do with ships or fishing or getting drunk on the high seas with a lover. Nope. Any reference to fishing and shiplap makes zero sense to anyone who is not dumb. Not only did my girlfriends probably think to themselves, what was Julie talking about? But Scott called me out on it, too. The employee at the store in the West Bottoms probably thought, this woman is buying a turquoise starfish with a shiplap sign. What makes something funny? My “not-so-smart” humor.

Scott: I’ve never heard of that. Me: You’re not romantic. It’s a thing. It’s cute. Scott: Oh. I later sank into the tub and looked over at the words “shiplap lover.” What is a shiplap anyway? I’d better make sure it’s not like the bottom deck with the rats or something gross. Google search: shiplap. Um, what did I tell everyone I was buying? Shiplap refers to a style of building material made from wooden boards

BEAUTY

Botox 101 M

any of us have this moment when we wake up, look in the mirror, and are surprised to see the person looking back at us. Wrinkles have formed; areas of the face might not be as perky as they used to be. It becomes almost impossible to not try to think of ways to fix it. Because of these common aging symptoms, it’s no wonder Botox has become such a regular part of our society’s cosmetic industry. Today, it’s one of the easiest cosmetic procedures, with more than 6 million treatments done every year.

spasms all over your body. It is a reliable procedure. Although some people may see more drastic results, Botox almost always works. Botox itself has been around for more than 20 years, leaving a lot of time for study and improvement.

THE CONS It’s temporary. While this is an advantage, it also can be a disadvantage. You will need to get more injections every six months to keep the muscles paralyzed.

Here, we break down the advantages and disadvantages of this common procedure:

It’s temporary. You can receive the procedure and, if you don’t like the effects or the way it makes you look, your face will return to its prior condition in three to six months.

There are some side effects. Flu-like symptoms and nausea seem to be the most common, but there are more serious potential side effects: things like ptosis, the drooping of eyelids, or dysphasia, the minor loss of the ability to speak clearly or perform facial expressions. These are rare, but do happen — so it’s something you must consider.

It’s a quick way to reduce wrinkles. The actual injection process takes five to 10 minutes. You truly can get it done over your lunch break and return to work just an hour later. Results will begin to appear between two to seven days after the injections, and will most definitely provide a more youthful look. There aren’t many health risks involved. Aside from allergic reactions, Botox is pretty safe to use as long as it’s done by a professional.

40

| SIMPLYKCMAG.COM

Botox can be a little painful. Although it’s an outpatient procedure and you can return to work right after, you might experience soreness and bruising. In extreme cases, Botox can leave your face lacking certain expressions. Botox does paralyze certain muscles in your face, so start small before you decide to do several spots.

THE PROS

It’s useful for things besides wrinkles and lines. Botox helps reduce oil production on your face, which in turn reduces acne. It’s also used as a treatment for hyperhidrosis, which causes excessive sweating. It’s been used anywhere from armpits to hands to help keep sweating at bay by preventing the message from nerves to travel to the sweat glands. Finally, Botox can reduce headaches as well as muscle

Botox absolutely needs to be administered by a professional. Botox parties have become popular as well as people DIYing it at home. But Botox is a neurotoxin protein and must be used very carefully. Do your research on a reputable medical professional who can help you determine what course of treatment is best for you. Likely, if you’re finding a discount Botox treatment, it’s not the right place to go.

It is an expensive remedy. The average Botox treatments can cost $300 to $400 and can jump up to $2,000 if many you treat many places on your face. And, because it’s not a permanent remedy to wrinkles, you’ll be paying that fee several times a year.

At the end of the day, you must be totally comfortable with your choice to undergo a cosmetic procedure — even one as popular as Botox. Not only can it help give you a more youthful look, the possibilities of what Botox can do from a health standpoint seem to be never-ending. Whether you have chronic headaches, excessive sweating, or are simply in need of a freshened-up look, Botox might be the right choice. But, make sure to thoroughly consider money, time, and the impact on your life — and be sure to talk with a medical professional about your options before making a decision.

“But the bigger problem lies in alliances,” she continues. “When one parent aligns with his children instead of his new partner in regards to behavior expectations and discipline, a dynamic is set up in which the children can manipulate the biological parent to get what they want, leaving the stepparent without credibility or support. This common problem sets these families up for ongoing conflict.” Bradley advises stepparents to generally follow the lead of the biological parent. ! n r u Oh, B GOOD TASTES

Written by Gina Reardon | Photo by Adrienne Maples

This past spring, my husband and I made a road trip to Cincinnati to visit our middle child. We’ve always enjoyed visiting our children in their various cities of residence and looking for inspiration from local restaurants to enhance our own personal and professional cooking. On this last trip, Anna and her boyfriend treated us to dinner at Metropole, an edgy restaurant in Cincinnati’s vibrant downtown. Metropole offers a contemporary take on old-world fireplace cooking. The burnt carrot salad on the small-plates menu caught my eye, and this dish — with its unique combination of unexpected elements — did not disappoint. I recreated it at home immediately upon our return, serving to both friends and family, and have recommended the dish to catering clients with great success! It’s guaranteed to be a wonderful compliment to roasted or grilled meats, from barbecued chicken and slow-roasted beef brisket, to mustard-glazed pork chop and a produce- and grain-driven vegetarian menu. Enjoy!

Burnt Carrot Salad

Yield: 4 servings

INGREDIENTS

DIRECTIONS

1 pound carrots

Preheat your oven to 400 degrees. Peel and cut the carrots into batons, approximately 2 to 3 inches by 1/3 inch thick. Toss evenly with olive oil to coat, scatter them on a baking sheet, sprinkle with salt, and roast for 12 minutes, or until carrots can be pierced with a fork. Once done, let them cool. Turn the oven to broil and cook the carrots until they begin to blacken. Let them cool once more.

2 t ablespoons extra virgin olive oil + extra to coat the carrots kosher or sea salt to taste 1/2 cup pickled red onion* (see method on the right) 1a vocado, ripe but still slightly firm to the touch, cut into chunks 3 tablespoons toasted pumpkin seeds juice of 1/2 fresh lemon pepper to taste 1/3 cup cilantro, coarsely chopped 1 t o 2 handfuls of micro greens or mixed field greens Crumbled goat cheese or feta

Add pickled red onion, avocado, pumpkin seeds, and lemon juice. Drizzle with 2 tablespoons of olive oil, sprinkle with salt and pepper, and stir to combine. Taste for seasonings. Add cilantro and micro greens or salad greens. Sprinkle with crumbled goat cheese or feta. Serve! Pickled red onions: Slice 1 medium red onion as thin as possible and place it in a sieve. Bring 2 to 3 cups of water to a boil and pour it over the onions in the sieve. Drain. Combine 3/4 cup white wine vinegar or rice vinegar, 1/2 teaspoon sugar, 1/2 teaspoon salt, 5 peppercorns, and one crushed garlic clove. Add drained onions and marinate up to 2 hours. Refrigerate.
