Emile van der Staak is the inspired chef and owner of De Nieuwe Winkel** in Nijmegen. He developed the philosophy of ‘botanical gastronomy’ and firmly established it by continuously looking for new uses of edible plants. He cooks fully plant-based and gets his inspiration from what forest garden Ketelbroek has to offer. Today’s choices determine what tomorrow’s world will look like. And many of those choices are simply connected to our food. That is why Van der Staak uses plants to make unique dishes that amaze, overwhelm and inspire, and are, above all, very tasty.
