The Spirit in Aromatherapy
Jennifer Peace Rhind is a Chartered Biologist with a Ph.D. in Mycotoxicology from the University of Strathclyde. Her long-standing interest in Complementary and Alternative Medicine has led to qualifications in massage, aromatherapy and reflexology, and for thirteen years she worked as a therapist and partner in a multidisciplinary complementary healthcare clinic. During this time she became involved in CAM education in the private sector and co-founded the first professionally accredited CAM school in Scotland. Jennifer is the author of Essential Oils, Fragrance and Wellbeing and A Sensory Journey, all published by Singing Dragon. She lives in Biggar near the Scottish Borders.

Recipe for Coconut Cinnamon Bread A simple gluten and grain free bread. The addition of coconut buttercream or ‘manna’ creates a delicious creamy texture. Add plenty of cinnamon, which can help with stabilising blood sugar. Grain free, gluten free, dairy free, suitable for vegetarians, no added sugar. Serves 10 6 eggs 1tsp vanilla extract 2tsp ground cinnamon 2tbsp coconut oil, softened 2tbsp coconut manna or use coconut oil
40g coconut flour 1tbsp ground flaxseed ½ tsp bicarbonate of soda 1 tsp baking powder 30g desiccated coconut
Preheat the oven to 180C, gas mark 4. Whisk the eggs, butter, coconut manna and vanilla and cinnamon in a blender. Add the coconut flour, bicarbonate and baking powder and blend until smooth then stir in the desiccated coconut. Pour into a 1lb loaf tin and sprinkle over a little more desiccated coconut. Bake for 3040 minutes until light brown and cooked through. Allow to cool then slice. Calories per slice 116kcal, Protein 4.9g, Carbohydrates 3.2g, sugars 0.4g, Total fat 9.3g, saturates 5.6g

Karin Kalbanter-Wernicke initially trained as a child physiotherapist and went on to study shiatsu in Japan for several years. In 1985, together with her husband Dr. Thomas Wernicke, she founded an institute for Complementary and Alternative Medicine just outside Frankfurt, Germany. Karin teaches baby and child shiatsu internationally and is a Founder of the German Shiatsu Society. She has written several books including Baby Shiatsu, published in English by Singing Dragon. Bettye Jo Wray-Fears is a Licensed Mental Health Counselor (LMHC) and licensed massage therapist. She trained in Shiatsu with Karin in 1985, founded the Shiatsu Massage Institute in 1997(Florida) and has taught the 5-Elements at Karin’s Institute since 1991. She is an integrative teacher and family-child therapist combining her background in traditional psychotherapy, human development, eastern bodywork and mindfulness Buddhist practices.
