GOAL: To make San Cristobal island a food secured and an economically selfsufficient island with its own cultural identity by introducing urban mushroom farming within its existing coffee agriculture infrastructure. Here the mushroom is introduced as a catalyst of change within the existing tourist based economy. In the bustling city of Puerto Baqueirzo Moreno, sprawling with cafes aimed for tourists, the city provides an entrepreneurial opportunity that utilises the underutilised spaces to the locals living in the city. Thus creating a symbiotic relationship between conservationists and local residents

POTENTIAL SPOTS TO SET UP MIUSHROOM HUB According to the National Coffee Association, an independent coffee shop can sell roughly 200-300 cups per day which will consume 1.4kg-5.4kg of coffee beans. And The coffee ground is 1/8 of the coffee bean, so there will be around 175g-675g of coffee grounds being produced per day.
