10 Questions for Your Wedding Caterer Family Features

A great caterer will do more than just make good food. He or she will pay great attention to details, making sure the presentation is just right, the food and wine are served at the right temperature, the servers are well-groomed and attentive and that clean-up is efficient and thorough. So how do you make sure the caterer you hire is a great one? By asking the right questions.

■ May I have references? Most caterers get their business from word of mouth. Ask for at least 10 former clients and call as many as you can. Ask questions such as: • Was the caterer easy to work with? • Was the service efficient and nonintrusive? • Was the food delicious, and did it arrive hot? • Were there any problems that came up and how did the caterer deal with them? ■ Do you have a business license and liability insurance? Caterers should be licensed by the state. Usually licenses are displayed in the office, but if you’re not positive, then ask to see it. Make sure you see proof of liability insurance as well. ■ Can we sample from a typical wedding menu? Catering can be a large part of your wedding budget. Make sure you know what it is you’ll be getting for your money. Take your spouse-to-be and a friend with you to the tasting so that you can get varied opinions. Some caterers will charge a tasting fee, but it’s worth it. ■ May I see photographs of your table displays? Some caterers who provide buffets or

food stations include floral arrangements and other decorations. It’s also a good idea to discuss your color theme so that decorations and floral arrangements coordinate

When you finally settle on a caterer, make sure you have a written contract to sign. This guarantees that they will provide the food, time lines and details you discussed.

■ What does the price per person include? Is the cost strictly for food, or does it cover tables, chairs, linens, tableware, punch service, table displays, etc.?

Asking these 10 questions will help you choose the right caterer to help make your wedding a truly special celebration.

■ What other fees do you charge? Are tips and taxes included in the price? Some caterers will charge a cake-cutting fee or corking fee for wines. Make sure you get all fees in writing up front. ■ Do you handle special menu requests? You may have guests with special menu needs, such as food allergies, vegan or kosher requirements. Make sure your caterer will accommodate these needs. Some couples want to have a special family recipe at the reception - grandma’s meatballs or foods from the family’s ethnic traditions. Find out if your caterer will personalize your menu with these kinds of items.

Wine Planning Checklist for Parties —Use 3L bottles for large groups, as each botle serves up to 20 guests, each guest with a standard five-ounce glass. —Guests at daytime parties usually drink less wine. Serve approximately one glass of wine per guest every 90 minutes. —For evening parties, serve approximately one glass of wine per guest every hour. —Chill white wine for at least three hours before guests arrive. —Open and decant red wines about 30 minutes before guests arrive to allow the flavors to open up and breathe. —Be a responsible host and offer special non-alcoholic beverages and plenty of water for thirsty guests.


Angel Hair Pasta With Shrimp & Rosemary

Serves 6 Prep time: 30 minutes 16 oz. dried angel hair pasta

Serves 4 Prep time: 30 minutes 1 tsp onion powder

1 Tbs. 3/4 C 4 tsp. 3 tsp. 2 tsp. 2C 3 Tbs 24 4 Tbs. 1/4 C

extra virgin olive oil chopped onion (about 1/2 onion) minced garlic seeded and minced serrano chile (about 1 chile) finely chopped fresh rosemary and sprigs for garnish Pinot Grigio fresh lemon juice, about 1 lemon large shrimp, peeled and deveined Butter pine nuts, toasted in a 350°F oven for 10 minutes until lightly browned Salt and freshly ground black pepper to taste

Cook pasta according to package directions. Set large saucepan over medium heat and add olive oil. SautĂŠ onions, garlic, chiles and rosemary about 4 minutes or until soft. Add wine and lemon juice, raise heat to high and boil until liquid is reduced by half. Add shrimp and cook until pink, about 2 minutes. Remove pan from heat, stir in butter and pine nuts, and toss with drained pasta. Add salt and freshly ground black pepper to taste. Pairing suggestion: Pinot Grigio

In medium bowl, combine onion powder, garlic, wine, beef, salt and pepper. Shape into twelve 1/2-in. thick patties. Grill until browned, 3 to 4 minutes per side. Grill dinner rolls until slightly toasted. On bottom of each roll, place caramelized onions, patty, watercress and radicchio. Top with roll top. Pairing suggestion: Red Wine

9 to 12 months out:  Breathe.  Announce your engagement for Pete’s sake!  S end your engagement announcement information and photo to the Skagit Valley Herald.  Pick a date for your wedding  Decide on the type of wedding you want – large or small, indoors or out, black tie or barefoot  Decide on a budget and how expenses will be shared.  Set up a folder to keep receipts and a ledger to help you stay on budget.  Make a spreadsheet list of everyone you, your groom and your families would like to invite. Break the list into must invites, should invites, and would-be-nice-to invites.  Tactfully remove the would- not-be-nice-to invites.  Reserve your ceremony site.  Book your officiant.  Reserve your reception site.  Book your photographer.  Choose your color scheme  Go shopping! Find and order your wedding gown and veil.  Choose your maid of honor, best man, bridesmaids, groomsmen and ushers. 16

 Apply for a passport and visa if you’ll need them for the honeymoon.  Consider getting premarital counseling. The wedding is just one day, but marriage is the rest of your lives.You may want to prepare for both.

The final week:  Breathe.  Pick up your wedding attire & make sure everything fits. T ell your caterer the final guest count. R eview the detailed time line with your vendors, and modify if needed.  Confirm your honeymoon reservations and accommodations.  Finish packing for your honeymoon.

General information about marriage licenses in Skagit County A marriage license can be obtained in Skagit County at the Skagit County Auditor’s Office. The cost for a marriage license is $60.00. Payment must be made in cash only, no exceptions. Neither a witness nor a blood test is required to obtain a marriage license. To obtain a marriage license: • Complete the marriage license application form (pdf) and affidavit (pdf). Both forms are also obtainable from the Auditor’s Office. • Both the bride-to-be and groom-to-be must sign the completed affidavit. The signing must be witnessed by a notary public or deputy auditor. • Pay the $60.00 fee. The license is not valid until the third full day after the application is filed at the Auditor’s Office. For example, if the

application is filed on Monday, the first day it can be used is Thursday. Marriage Licenses are void if not solemnized within 60 days of the valid date. If you file your application by mail, please mail it early enough to allow sufficient processing and return mail time. Please also include a contact name, address and phone number where you may be reached if necessary. PLEASE USE BLACK INK! Legal age for both bride and groom is 18 years old. If one of the applicants is 17 years old, that applicant must be accompanied by a parent or legal guardian. The parent or legal guardian must sign the marriage application form, granting consent to the marriage, and must have the authority to do so.
