Quick Bites H

ere’s the scenario: you’ve got friends coming over in an hour for a drink before tonight’s double date. You can’t possibly get out of the office early enough to whip up a Martha Stewart-worthy feast to nibble on during cocktail hour. What to do? Never fear. Remember to KISS: Keep It Simple, Sweetheart. A few pantry staples and a quick stop at a robust grocery or deli and you’re ready to host like you were born to it. Bread from a local bakery, interesting cheeses and good wine set the stage, while the addition of a few special touches takes it to the next level. Employees at Olive & Co. in Oklahoma City suggest pairings of artisan olive oils and vinegars with the ease of practiced barkeeps. An experienced cheesemonger will help you explore flavors to best accompany your wine offerings. Shortcuts such as jars of premixed bruschetta or tapenade make it appear you tried harder than you did, and if a crusty French baguette is wrong, you don’t want to be right. When you need to make a good impression quickly, focus on flavor and presentation, and you (and your guests) won’t be disappointed.

Tales from the Vine

JOHNDROW VINEYARDS’ OWNERS GROW GRAPES, GIVE BACK, LIVE WITH GRATITUDE

A

fter the tornado hit Moore last year, David and Maryann Johndrow used profits from Johndrow Vineyards, their Napa Valley wine company, to help the relief efforts. In fact, the Johndrows gave 94 percent of the company’s profits to charities last year, and they plan on continuing the trend. Johndrow Vineyards released their first wines for the 2005 vintage, so they are celebrating their 10th anniversary this year. The line is small, as is case production, focusing on Napa Valley Cabernet and Sauvignon Blanc. David Johndrow was making wine with David Duckhorn

By Greg Horton when he came up with the idea to make his own wines. “We were making wines for several casinos in [Las] Vegas when we were approached with an offer to sell,” Johndrow says. “After we sold the company, we still had all these grapes. I told David Duckhorn that I wanted to make my own wines.” The two were friends with Mark Beringer and Rob Lawson, so Johndrow ran the idea by Lawson, an outstanding winemaker who regularly achieves high scores from wine critics. Lawson agreed to come on board as winemaker, and Johndrow Vineyards was born.

talks about it, but it’s even more clear when he talks about helping wounded veterans. “We have had such great fortune in our lives,” he says. “We both just wanted to give back, and these soldiers have sacrificed so much. We have to do what we can for them.” The seriousness is atypical for Johndrow; Johndrow Vineyards’ tag line is “Find your happy place,” after all. “Wine is supposed to be fun,” he says. “We have been dialed into an approach since we started the company: affordable, approachable wines that are easy to drink.”

NO QUESTION: THE CAB IS CAB

“Stylistically, I knew what I wanted to do,” he says. “I liked Silver Oak’s Napa Valley wines when they first came out. They were big fruit and smooth finish. I wanted that same style, and that’s what we have been doing ever since.”

GIVING WITH GRATITUDE

The couple is able to donate the high percentage of profits to charity thanks to what David calls his retirement. In 2007, the Johndrows sold their company, HRLogix, and the proceeds from the sale made it possible for them to retire. Calling what they do “retirement” does not take seriously exactly how busy the couple is. They keep homes in California, Oklahoma and Utah, and have a frenetic travel schedule. In addition to their traveling – both for business and pleasure – the couple works with Olympic athletes, wounded veterans, filmmakers and entertainers, and David still sits on

the board of a few organizations in Oklahoma, all part of the American Fidelity family of companies. In other words, they are busy doing what they want, not what they must, and that life is both satisfying and surprising to David, a Norman native. “My dad did all kinds of jobs, like food broker, home builder and even the military,” Johndrow says. “My mom was a stay-home mom. My life growing up in Edmond was nothing like the life we have now. We are so fortunate.” That pervasive sense of gratitude is what fuels the desire to support various charities, and not in a detached, arm’s distance kind of way. For the Sochi Olympics, the Johndrows sponsored five members of the U.S. ski team, and they didn’t just support them financially; they spent time with them, got to know them and shared life with them. The sense of pride they derive from being able to help at that level is clear in Johndrow’s tone when he

Choosing Johndrow’s Howell Mountain Cabernet or Reserve Cabernet is easy for fans of Napa Cabernet. They taste like Napa: big fruit, round, balanced and ready to drink. The Howell Mountain and the Reserve, which comes from their Oakville plots, are 100 percent Cabernet. It is the approach both Johndrows prefer. The Sauvignon Blanc is blended with small amounts of Chardonnay and Semillon, but the Cab is Cab. “Maryann only drinks Napa Cabs,” Johndrow says. “She’s a bit spoiled, I suppose, since we make Napa Cabernet.” Maryann Johndrow is many things, but spoiled is not likely one of them, unless we are just talking about being used to good wine. The Boston native worked for a competing company when David was a division president for Staffmark in the early 2000s. Maryann’s name came up regularly at company meetings because she kept beating Johndrow’s sales staff on important business deals. “I told my people to go hire her,” Johndrow says. “One of my guys said

“We have been dialed into an approach since we started the company: affordable, approachable wines that are easy to drink.” it might be expensive to get her, and I asked him if he didn’t think the seven deals we had just lost to her weren’t also expensive. So we hired her, and I guess you could say we met at work.” Johndrow Vineyards wines are only distributed by retail in two states: Oklahoma and Utah. All other sales are via direct shipping, something that is illegal here in David’s home state. He works with distributors in Oklahoma and Utah so that the wines are available at their other two homes. They are widely available in Oklahoma, including the JV 6 SLICE // 2015 FOOD LOVER’S GUIDE

line, wines that are priced substantially lower than the Reserve and Howell Mountain Cabernets. The family has spent the last month putting finishing touches on their Orange County home, including making a room for Johndrow’s daughter, Carson. She just graduated from Stillwater High School and has been accepted at the Fashion Institute of Design & Merchandising in Los Angeles. Once they are fully settled in, they will go back to “being retired.”

WHEN YOU WANT TO FIND VINO THAT’S VERITABLY EXCELLENT, one of your prime sources should be Wine Spectator – the magazine is an authority on the industry and its delicious creations. This makes its annual Restaurant Awards a tremendous guide for diners around the world, and the inclusion of multiple Oklahoma restaurants on that list an especially high honor. Congratulations to Fleming’s, Polo Grill and Prhyme in Tulsa, and closer to home, the Boulevard Steakhouse in Edmond and the Museum Café in Oklahoma City – winners of the Wine Spectator Award of Excellence, along with more than 2,500 others at all points of the globe. And an especially robust “bravo!” to Oklahoma City’s Opus Prime Steakhouse, one of fewer than 1,000 restaurants worldwide to claim the publication’s even-more-elite Best of Award of Excellence. The complete list of winners is online at winespectator.com, and the inclusion of these local establishments would be best celebrated by raising a glass therein. Cheers!

WHERE STEAK REIGNS SUPREME IN THE METRO consin has cheese – in Oklahoma, we’re serious about steak. The metro is laden

with outstanding sources for this beloved entrée, so we’ve conducted a group roundup of local spots most likely to put a gleam in our eyes and a wistful note in our voices when describing them. As far as we’re con-

Broadway 10 Bar & Chophouse

Located in Automobile Alley and well worth a drive, this bustling restaurant does a large number of things well, and steak better than most. Even amid star sides like the tangy Gorgonzola mac and cheese and fiery sushi options, the aged-for-a-month Primal Cuts – including a ridiculously tender 7-oz. USDA Prime filet – are likely to make you wish you could circle the block and sit right back down for another round. 1101 N Broadway, OKC | broadway10okc.com

cerned, these restaurants are the chiefs among beef.

Boulevard Steakhouse

The beauty of Boulevard Steakhouse is that steak lovers can choose from the delectable Chef’s Selections or go rogue, with delicious results from any of the hand-cut and perfectly aged options. For the connoisseur who likes things his or her way, Boulevard offers five different steaks (go all out for the 22-oz. porterhouse) with unbeatable sauces and toppings – from lobster and cherry tomato to fromage. Or stick with the Chef’s Selections: one bite of the Steak Diablo Teriyaki and you’ll be glad you left it to the experts. 505 S Boulevard, Edmond | boulevardsteakhouse.com 8 SLICE // 2015 FOOD LOVER’S GUIDE

The George Prime Steakhouse

Great beef does not need much help, and that seems to be a philosophy at The George, where all the steaks on the menu – and also the short ribs – are prime beef, except for the Wagyu, which exceeds prime standards. 5900 Mosteller, Suite #200, OKC | thegeorgeprime.com

J. Bruner’s at the Haunted House

The newly re-opened Haunted House still believes in Prime Rib, and if the 12-oz. cut is not enough, they’ll custom cut it, or you can just pick the 18-oz. Cowboy Ribeye … bone in, of course. 7101 Miramar, OKC | jbruners.com

Mahogany Prime Steakhouse

Mahogany may be the new kid on the block in downtown OKC, but it’s an institution on Memorial that serves some of the metro’s best steaks. No detail is overlooked as the staff searches near and far for the best corn-fed Midwestern beef and top-shelf produce. Go for the Prime Cowboy Ribeye and taste some of the finest steak you’ll ever have, as each one is hand-selected and cut by Mahogany’s own butchers. With the second location downtown, those who don’t often venture north can finally share in the pleasure. 100 W Main, Suite #110, OKC | 3241 W Memorial Road, OKC | ehsrg.com

Mickey Mantle’s Steakhouse

The Bricktown steakhouse boasts a wide variety of delicious options, including a filet pressed in peppercorns or tenderloin medallions. Whichever you choose, be sure to get the crab or lobster Oscar. 7 Mickey Mantle, OKC | mickeymantlesteakhouse.com

Opus Prime Steakhouse

At Opus, you can pick the prime filet cut of your choice, from 7 to 20 ounces. They also serve American Wagyu, and boast one of the most extensive wine lists in the metro. 800 W Memorial, OKC | opusprimesteakhouse.com

Ranch Steakhouse

How can a place called Ranch Steakhouse not be great? The chefs at the Ranch take the finest offerings from Premium Natural Beef in Hobart and cook them to perfection. The rest is up to you. The mouth-watering list of toppings and sauces will make you want to keep coming back until you try each one. Let life’s worries slip away as you top your bone-in ribeye with truffle compound butter or melted fromage. When you’re ready to play in the big leagues, go all out with a 16 oz. tenderloin filet topped with Le Belle Farms foie gras or Baron’s lobster topping. 3000 W Britton Road, OKC | ranchsteakhouse.com

Red Prime Steak

Red places a high value on style via the sleek design and neon lighting that gives it its name (it’s an excellent date spot) – but the menu is packed with substance, as well. The prix fixe menu provides options in multiple courses at a tempting price point, and if you’re in the mood for something especially noteworthy, the bone-in strip that’s been dry-aged for 40 days is 18 ounces of incredible flavor. 504 N Broadway, OKC | redprimesteak.com

Roxy’s Ice Cream Social

ROXYSICECREAM.COM | 1732 NW 16 ST., OKC | 405.521.1300 Long an established presence on the metro food truck scene, Roxy’s Ice Cream Social now has a brick-and-mortar location available for those who can’t wait for the next street festival. The bright décor of the permanent location – a ceiling emblazoned with a sky motif, and bright yellow walls – almost serves as a visual representation of the vivid taste that is Roxy’s hallmark. The chocolate is super chocolatey. The coconut is cool and smooth, and the cherries in the cherry ice cream will make you pucker (in a good way). Sherbet is often available if that better suits your fancy, and it’s every bit as delicious as the ice cream. Also rounding out the menu are ice cream sandwiches, ice cream floats and sundaes, with special flavor rotation happening seasonally. Classic flavors include pistachio, coffee and cream, mango and pecan, along with the usual chocolate, vanilla and cookies and cream. The owners’ attention to detail – overseeing and fine-tuning things such as breaking up cookies into the perfect texture for the cookies and cream – is reflected in the intense quality of flavor. You can taste the care put into every batch. Seriously.

Katiebug’s Shaved Ice

FACEBOOK.COM/KATIEBUGSSHAVEDICE | @KATIEBUGSOKC

Melissa Morgan (with a Blackberry Cobbler) and daughter Katie Morgan (Hibiscus Lemonade) of Katiebug’s preparing for an outdoor event.

True confession time: I’ve never been big on sno-cones or shaved ice. When I stepped up to the Katiebug’s truck to see what has made Katie Morgan’s all-natural cups of shaved ice so wildly popular, I was prepared to not get it, and purposed in my heart to simply try tasting the samples with a mindset of someone who really does enjoy the stuff. I was blown away. Forget what you think you know about shaved ice; the texture and tastes of Katiebug’s are not your typical sno-cone. One of their most in-demand flavors, blackberry cobbler, has such a distinct sense of that baked good that you’ll probably experience a moment of cognitive dissonance similar to Violet Beauregarde’s multicourse-meal-flavored-chewing-gum experience in Charlie and the Chocolate Factory. And Katiebug’s take on the Dole Whip – a creamy pineapple confection – will have you in taste bud heaven. A wealth of other flavors await also, and the lack of artificial colors or ingredients (in addition to the use of organic sugar and real fruits and juices) gives them all a wholesome goodness. Give Katiebug’s a try, even if you aren’t a “shaved ice person.” You may well be afterward.

RedPin Bowling Lounge

BOWLREDPIN.COM | 200 S OKLAHOMA AVE., OKC | 405.702.8880 If you’ve only visited Bricktown’s RedPin Bowling Lounge for bowling, you’re missing out. When the food and drink menus underwent an overhaul a few years ago, several improvements were made, with the result being that RedPin’s restaurant, The Basement Diner, has become a culinary force to be reckoned with. Some of the retooling’s biggest stars? The spiked milkshakes. Although a few standard, virgin versions are available, the liquor-laced options shine thanks to the expert handling of RedPin’s bar staff. The delicate task of pairing flavors with a corresponding alcohol has been executed with a scientific perfection: rum with vanilla bean; Frangelico and Godiva chocolate liqueur with chocolate hazelnut; strawberry and banana (with fresh strawberry puree) with 99 Bananas Schnapps. The minty Grasshopper is a frozen variation of the traditional drink, combining chocolate and vanilla ice cream with mint and chocolate syrup and Crème de Menthe. Even the whipped cream amazes; if you think that it’s all created equally, you have to try owner Erin Brewer’s special recipe. You’ll wonder what that other stuff that’s been passing as whipped cream all these years really is.

A spiked Grasshopper at RedPin cools the sweet tooth with Crème de Menthe and homemade whipped cream.

Roma’s Gelato

ROMASGELATO.COM | 301 S BRYANT AVE., EDMOND | 405.708.6111 Ice cream’s exotic Italian cousin, gelato, is significantly lower in fat, but because of the special process used to make it (very little air and slow mixing), the texture and semi-frozen state make it almost ridiculously creamy. There are several establishments where you can get gelato around Oklahoma City and its environs, but the distinction at Roma’s is not only that a real Italian is making it (owner Angelo Caprilli), but that the techniques go beyond the basics and include touches learned from an artisan gelato maker in Italy. Each small batch in the store is made by hand, and is at most 4 days old – freshness and quality ingredients are a priority. Note: Larger scale catering and supplying for restaurants are available, however; Roma’s is also commercially licensed. Flavors are frequently rotated, featuring standards such as stracciatella (vanilla with ribbons of chocolate), almond, panna cotta (with black cherries), and marscapone (with strawberries), and even a selection of sorbetto (sorbet), a good option for those who are avoiding dairy. The gelato is served in small, medium or large cups, with the ability to choose more than one flavor … and you will want to do so. Conspicuously absent are Americanized flavors, and this is no accident; Caprilli adamantly resists offering these – and doesn’t make substitutions in his delectable food offerings – on the principle that true Italian food is amazing because of its simplicity. One grudging exception; pumpkin gelato is offered occasionally during the fall. But one taste will tell you that you should trust Caprilli’s judgment … the man knows what he’s doing.

Creamy bright flavors of strawberry in Roma’s sorbetto will make your mouth water. This is a medium; plan on a large.

If you have fond childhood memories of summer days spent slurping slushy popsicles, then you’ll probably enjoy the adult-ified version of those icy treats developed by the guys behind Epic Pops. Modeled on the Latin American frozen goodie, the paleta, Epic Pops are handmade with real sugar – no corn syrup – and fresh fruit, with local ingredients used whenever possible. The pops are sold from a pushcart, just like paletas generally are – so you’ll have to track them on Facebook or Twitter to get your fix, but the challenge of the hunt will be worth it. Note: You can book Epic Pops to give extra panache to private events, such as birthdays or pool parties. Epic Pops makes a point of using no chemicals or unnatural additives, and they even have sugarfree options. Flavors can range from the fruity and simple (banana pudding, strawberry) to more intricate combinations such as hibiscus mint, but their biggest seller – pink watermelon with gummy bears – is a surefire indicator that popsicles do a great job of bringing out the kid in us.

The enthusiastic company website details support for initiatives both near and far, plus their health-conscious focus on the benefits of both yogurt and fruit toppings will get you excited about fro-yo in a way you might not have thought possible. Inspirational quotes are sprinkled around the store, as well, amping up the positive atmosphere even more. There are a bevy of choices available, ranging from twists on traditional favorites – Amazon Dark Chocolate and Rainforest Vanilla – to more intricate offerings such as Red Velvet Cupcake and Ooey Gooey Cinnamon Bun.
