COUNCILLOR BROOKE PATTERSON

What is your role in Council?

I am the Chair of Governance and Finance, lead of the CBD transformation and the City Rep on the Gold Coast Waterways Authority. As Division 6 councillor, I represent Southport, Benowa, Bundall, Chirn Park and Ashmore.

What were you doing before becoming a Councillor?

Before moving back to the Gold Coast, I headed up Private Client advice for ANZ North Asia and later opened Ord Minnett Private Clients in Hong Kong. My background is finance and governance.

What is the best thing about being part of the Council?

Making vital decisions for our city, day in, day out. Gold Coast Council is the largest independent government in Australia and the second largest council. Fifteen of us, the Mayor and fourteen councillors, oversee an organisation with $27 billion in assets and determine the path for a city with a compelling future.

What do you think is the most pressing issue for the Gold Coast currently?

It is bursting at the seams with possibility, yet we know we have a tidal wave of population growth on the horizon. Whether we want it or not. Ensuring this city has the capacity to continue to deliver its way of life for all is a certain test. Delivery of the right infrastructure will be key.

Describe your perfect Gold Coast Sunday.

It is rare I have a day on the weekend without a work engagement, but when I do, it would start with an early coffee and chat with my hubby and then taking Monty to the dog beach at the Spit with the kids. Pick up some food treats at either HOTA markets or Ferry Road Brickworks and then immerse in a day of gardening and pottering. Our Southport home is two minutes to everything but feels a world away.

What has been your proudest achievement for Division 6 since you were elected?

I have three:

1. Completing the most extensive street tree planting initiative by a councillor in a term and securing a new green space in the heart of Southport.

2. Championing the City’s first ever Homelessness Action plan which is now fully funded and staffed. Its mission is for homelessness on the Gold Coast to be brief, rare and nonrecurring.

3. Being accessible to residents— hosting town halls whenever requested so I am directly accountable to people.

What is something interesting or surprising about Division 6 that most people wouldn’t know?

As the oldest part of the Gold Coast, it is home to more sporting clubs, community organisations and schools than any other area.

What do you think has been the biggest change to the Gold Coast over the last 10 or 20 years?

Its depth. It used to be ‘what you see is what you get’ –dependent on tourism and property development. Now we have a depth in arts, health, medical services, creative industries, marine industry, education, sports economy. In short, the Gold Coast has grown up.

What do you think the future holds for the Gold Coast?

Let’s just say, we ‘gotta wear shades’.

Brooke

Redefining Success from Housewife of Melbourne to Corporate Maven on the Gold Coast

16 GOLD COAST • PANACHE Magazine COVER STORY Photography: David Caird

Simone Elliott epitomises resilience, determination, and the power of reinvention. From her memorable stint on Foxtel’s Real Housewives of Melbourne to her current role as a corporate powerhouse on the Gold Coast, her journey is a testament of her commitment to success, both personally and professionally. A mother of two children, she embodies strength, grace, and the ability to balance the demands of parenthood with a high-powered corporate career as the Head of Sales at Norco.

In the fast-paced world of reality television, Simone first captured hearts as cast member on The Real Housewives of Melbourne. With her quick wit and larger-than-life personality, she became a fan favourite, known for her memorable one-liners and unapologetic authenticity. Yet, behind the glamour of the cameras, Simone faced her own set of challenges, including the demands of single motherhood and the pressures of balancing family life and a corporate career.

With a fierce dedication to providing for her children and pursuing her professional aspirations, she navigated the complexities of parenthood and career advancement with grace. As a single mother, she learned to juggle the responsibilities of raising her children while also excelling in her career, proving that with hard work and perseverance, anything is possible.

Today, her career has reached new heights as the Head of Sales at Norco, a position that allows her to showcase her exceptional leadership skills and business acumen on a national scale. In this role, she oversees high-level operations and strategic initiatives, driving growth and success for one of Australia’s leading dairy companies.

But Simone’s journey is about more than just climbing the corporate ladder – it’s about redefining success on her own terms and charting her own path to fulfilment. This spirit of independence and determination led her to make the bold decision to split her time between Melbourne and the Gold Coast, juggling business and family commitments and homes between her two favourite cities.

For Simone, the Gold Coast represents more than just a change of scenery – it’s a place of endless opportunity and boundless potential. Here, she has embarked on a new chapter in her life, channelling her entrepreneurial spirit into a thriving career that allows her to pursue her passions and showcase her talents. As a mother, she is setting an inspiring example for her children, demonstrating the importance of the pursuit of one’s dreams.

Simone has also found success as a role model and inspiration for women everywhere. From her journey on The Real Housewives of Melbourne to becoming a corporate maven on the Gold Coast, she has proven that anything is possible. Whether she’s navigating the challenges of motherhood, excelling in her corporate career, or pursuing her passion for entrepreneurship, she approaches each day with a fierce sense of purpose.

WINTER • 2024 17 COVER STORY
Photography: Foxtel Photography: Foxtel

As she continues to inspire others with her story of resilience and success, one thing is clear Simone Elliott is a force to be reckoned with, and her journey is far from over. Authentic and embodying boundless creativity with a relentless drive to succeed, she is a shining example of what it means to live life on your own terms and chase your dreams.

With a Bachelor of Business Marketing, a Graduate Certificate in Management and an MBA from the Australian Institute of Business, Simone Elliott is equally as comfortable on set as she is leading the boardroom.

In the quiet moments between shoots and interviews, Simone found herself grappling with the reality of raising two children while also nurturing her professional ambitions. Yet, through it all, she refused to compromise on her dreams or settle for anything less than she deserved.

As the years passed and her children grew, Simone’s career trajectory soared. Her ascent within the corporate world was not just a testament to her professional prowess but a reflection of her unyielding spirit. Simone has worked with international brands including PZ Cussons and L’Oréal in her twenty-year strong career.

Now, at Norco, Simone’s influence extends far beyond the confines of her corporate office. She’s become a beacon of hope for women everywhere, showing them that they too can rise above their circumstances and carve out their own path to success.

In today’s fast paced and competitive professional landscape, having a long and successful career requires more than just skill and experience. Simone believes it’s about differentiating yourself from others who do what you do, build a credible reputation and become known as a leader in your industry.

Simone is passionate about helping women develop their personal brand, so that they can increase their professional value and fast track their career.

Quickfire Questions

But perhaps Simone’s greatest achievement lies in the legacy she’s creating for her children and the community of career women she’s building. She is offering women to take charge of their career and build confidence and visibility with her signature coaching and mentor program launching later this year.

As Simone Elliott continues to redefine success on her own terms, her story serves as a powerful reminder that the journey to greatness is often paved with obstacles, but it’s those very challenges that make the destination all the more rewarding. And for a woman who’s dared to dream against all odds, the sky’s the limit for what she can achieve next.

Attending

school and getting an education

is an all-important part of shaping us for life’s journey. We asked some prominent women for their memories during those formative years.

Where did you go to school for primary and senior? St Vincent’s Primary School and Emmanuel College for high school.

Favourite subject and why? Geography. I loved learning about different places around the world!

Favourite teacher and why? Mrs Hugo. She was a kind soul and would always want you to do your best and excel.

Best memory at school? Probably when I participated in the homeless sleepout with my bestie. That was a great memory and for a great cause.

Academic or sporting achievement? Definitely more sporty than academic! I was awarded age champion for the athletic carnival multiple years in a row.

What did you want to be when you grew up? I wanted to be a vet.

Is your life now what you expected it to be? If so how? Definitely not! Although I’m not a vet, I am lucky enough to have my own pet care company and help animals become the healthiest they can be!

Bianca Stradiotto

Retail Store Manager at Sonia Stradiotto Couture, Marina Mirage

Where did you go to school for primary and senior? My primary school was Trinity Lutheran College and high school was Benowa State High School (where I met my now Fiancé).

Favourite subject and why? My favourite subject in school was Drama, I loved expressing myself and performing with my friends.

Favourite teacher and why? My favourite teacher in school was Mrs Ballanger, I had her for three classes (two of which were drama) she taught differently to other teachers, she took interest in her students and cared about us and our futures.

Best memory at school? Meeting my now fiance in grade 10. He walked into math class half way through the year and as we made eye contact my heart stopped. We were friends for six years before we started dating and now we are coming up to our four year anniversary and getting ready to plan our wedding.

Academic or sporting achievement? My academic achievements in high school were in drama (I won best female lead at drama fest in 2015) and Coral awards for acting over the years! What did you want to be when you grew up? I wanted to be a beautician since I was 14-yearsold and ended up doing my diploma at French Beauty Academy and then working in the industry for five years and learnt a lot then realised I wanted a more creative career as I love connecting with people.

Is your life now what you expected it to be? If so how? My life right now is not at all what I expected it to be but greater than what I could have dreamt of. At home I am with my best friend the love of my life and at work I proudly work in my Family Business at Sonia Stradiotto Couture and am building on my mothers foundation to safeguard our iconic and unique Brand.

Favourite teacher and why? My favourite teacher was my bio teacher because he was structured and ensured I understood the rules and requirements of a student, but also allowed me to be myself (talked ALOT) at the times where structure was flexible. Favourite subject and why? Drama and English Literature.

Favourite teacher and why? Mrs Moreton - a History Teacher, she was a tiny lady who taught History, we all thought she was very strict but once we got to know her she was just passionate about her students succeeding and loved what she taught, she really worked hard to help her classes understand and be the best they could be, she passed away about 6 months after we left school unexpectedly and would have only been in her early 50s. I think of her often.

Best memory at school? We had some amazing school trips, regularly to historical sites in London but also to Prague, Spain and Belgium. We drove to Spain on a coach and they took us to the Eiffel Tower on the way back, we were stood under the tower at 1am in the morning, which was super exciting for a 13 year old! Unfortunately that was way before instagram so I have no photos! I realise now how lucky I was that my parents were able to provide me with such wonderful opportunities.

Is your life now what you expected it to be? If so how? My family always had plans to move to Australia when I was young - we have been coming here since the 80s. I always knew I would stay close to my family and I’m so lucky to have them close by and there to help me. I never thought I would be a mum to such an amazing daughter who blows me away with her funny, kind, smart self everyday, I’m very proud and grateful to have her. I never imagined working in media, I really love the culture of my workplace and feel so lucky to work for News Corp who are an amazing company who do so much for Australia, telling stories and helping get important messages across. I love my network here on the Coast, there really are some amazing people doing great things - especially women and I love working with the team on Gold Coast Bulletin Women of the year which we run every year to celebrate achievements of these women - I don’t think it would be the same in London, we are really lucky to live here!

You’re out and about. Suddenly you are in the presence of a superstar and you ask politely to get a selfie. These are the stories behind some of them.

Dr Melissa Routledge and husband Nick with Mark Webber

Taken at the Australian Grand Prix (Melbourne Formula 1) in the Red Bull Lounge (trackside). Mark Webber (Previous Australian F1 driver for Red Bull, Porsche Ambassador and manager of current F1 driver for Maclaren Oscar Piastri) was more than happy to stop and have a chat about the F1 race and take a photo with us. In between race commitments he did a talk about his time at Red Bull Racing and what the track is like in Melbourne.

Liz Clift with Cole Hauser

Cole Hauser held a charity event in Yellowstone Montana with cast and crew from “Yellowstone”. JT Foxx invited a few of us to attend this amazing event. It was an action packed weekend, horse riding, fly fishing, roping, performances of leading country music stars and a fun time spent with Cole in an ATV exploring the ranch in Montana. The weekend was capped with a personal invitation from Cole for my son Andrew Speirs and myself to join him for drinks at a Mexican restaurant. He is a lovely humble man, similar to his character RIP.

Olivia Scott with Brian Mannix

The photo was taken for “Hot Tomato’s $10K to Summer Vacay your way” promotion at ‘Cali Beach’ in Surfers. Brian Mannix, Australian rock music singer and actor. Best known as the lead singer of 80s band Uncanny X-Men. He was really nice and lives in Surfers these days.

Taken at the Gold Coast Film Festival

Launch night at HOTA. Linc is one of the nicest humans on the planet. He always has time for everyone and anyone for a photo or chat. He has that unique ability to make anyone he is with feel special. He loves to listen but is an amazing conversationalist, always making me laugh and think and feel seen. He’s a star and one of a kind!

Del Volp with Sam Armytage

It was at an Earlyrisers event many years ago. Sam was really lovely and opened up for anyone to ask questions. She was working on Weekend Morning Sunrise with Andrew O’Keefe at the time and was asked how did she deal with his ramblings? She politely said something along the lines of they would often have chatter in their ear pieces asking him to stay on subject. Everyone had a giggle at that response. She was very relaxed and open. Making herself available for photo opportunities.

Nathan Rose with Joe Davidson and Sydney Sweeney

Event Cinemas Pacific Fair had been in touch with Sydney Sweeney to organise for her to come down to the cinema to surprise 2 sold out sessions of Anyone But You and she was more than happy to pop in to make an appearance. She brought along her co-star, Gold Coast local, Joe Davidson with her and the crowd went wild for both of them. They were so lovely, we hung out for quite a while before and after the film and they were more than happy to stick around to take photos with fans at the cinema.

Jess Sharratt with Trent Richardson

Trent was in top 6 of this year’s Australian Idol. He came very close to making top 3. He was over at my home as he is now officially the 2024 Gold Coast Show Ambassador! His dad John brings the camels to the Show and Trent has been attending the Show since he was 3. One of the nicest guys you will meet. His new single is out now.

Toni Ferguson with Kylie Minogue

I met Kylie at an exclusive event held in Sydney for supporters of Kylie Minogue Wines, there were limited guests. Kylie is a legendary Aussie entertainer and now leading wine marketer, it was a pleasure to chat with her about her career and now tremendously successful wines and also her recent stay at Qualia Resort on Hamilton Island. She was so down to earth, genuine and humble.

Unlocking the Health Benefits of GLPIs: Beyond Weight-Loss

In the realm of weight management, a new frontier has emerged with GLPIs (Glucagon-Like Peptide-1 Receptor Agonists). While primarily recognised for their efficacy in aiding weight-loss, GLPIs offer a spectrum of medical benefits that extend far beyond shedding pounds. These drugs, originally developed to treat Type 2 diabetes, have sparked interest for their multifaceted impact on health and well-being.

Beyond their weight-reducing effects, GLPIs have shown promise in addressing metabolic disorders. By mimicking the action of glucagon-like peptide-1, these drugs regulate blood sugar levels, making them invaluable in managing diabetes. Studies have demonstrated their ability to improve insulin sensitivity and reduce the risk of cardiovascular complications, thus presenting a holistic approach to metabolic health.

Moreover, GLPIs exhibit profound cardiovascular benefits. They have been associated with decreased blood pressure and improved lipid profiles, mitigating the risk of heart disease. This cardiovascular protection extends beyond diabetes patients, offering hope to individuals with or at risk of cardiovascular conditions.

Another intriguing aspect of GLPIs is their impact on appetite regulation and satiety. By modulating hunger hormones and slowing gastric emptying, these drugs can help individuals

achieve sustainable weight-loss while minimising feelings of deprivation or hunger. This aspect is particularly significant in combating obesity, a complex condition often intertwined with metabolic dysfunction and psychological factors.

Furthermore, emerging research suggests potential neuroprotective effects of GLPIs. Studies in animal models have hinted at their ability to enhance cognitive function and protect against neurodegenerative diseases like Alzheimer’s. While further research is warranted, these findings underscore the diverse therapeutic potential of GLPIs beyond their conventional applications.

GLPIs represent a paradigm shift in the approach to weight management and metabolic health. While their efficacy in promoting weight-loss is well-established, their broader medical benefits encompassing metabolic, cardiovascular, and potentially neurological domains are increasingly recognised. As research continues to unveil the manifold advantages of GLPIs, they hold promise as a versatile therapeutic tool in the quest for optimal health and wellbeing.

The team at Lounge IV are experienced in managing weight, health and wellness. They work closely to support people to actively improve their health and well-being, effectively manage chronic conditions and provide a supportive pathway to their goals.

CANOBOLOS WINES

The Canobolas vineyard and winery was established by the Smith family in 1986, who were pioneers of the wine industry in historical Orange, NSW. After a lengthy search for a site with the ideal combination of climate, soil, and aspect to be able to create world-class wine, their search led them to the northern slopes of beautiful Mt Canobolas. The property has a long history of producing wines of great complexity, power and age-worthy characters. Today it is farmed organically by the Mattick family, who continue to build on the legacy of Canobolas-Smith, and produce unique wines with delicacy and finesse.

CANOBOLAS

WINES CABERNET FRANC

Very fragrant, violets drift over white pepper, crushed granite, brined black olives, red peppercorns and bay leaf. A dazzling display of spices and fruits with fine tannins contributing to a very good backbone and great length. A svelte, alluring and elegant expression of Syrah.

CANOBOLAS WINES CHARDONNAY

Aromas of star jasmine and pithy lemon curd jump from the glass. A pristine core of fruit, with elements of white nectarine, grapefruit and lemon all layered under a crystalline halo of delicate floral notes. It has both power and elegance. This is a beautifully balanced wine that finishes with a long flinty, saline edge.

CANOBOLAS WINES CABERNET SAUVIGNON

A poised and elegantly structured cabernet reflecting the vintage, with the powdery tannin and fine delicate florals. Bay leaf with an olive tapenade and dark chocolate combination. The palate has a smooth feel, with the chalky tannins working neatly through. It’s very tight now and needs cellaring time to achieve its potential.

SERVES 8

Japanese fruit sandwiches are a simple alternative to a cake, and they can look absolutely spectacular. If you are using whole cherries, lay them in a single line through the sandwich so that it looks like the photo opposite. It’s rich, so trust me: you only need half a sandwich each.

INGREDIENTS

• 8 thick slices soft white bread

• 155g chocolate hazelnut spread

• 160g cherry or raspberry jam

• 200g pitted morello cherries in syrup, drained (optional)

MASCARPONE CREAM

• 150ml thickened (whipping) cream

• 30g icing (confectioners’) sugar

• 125g mascarpone

7 Days of Dinner by Adam Liaw Published by Hardie Grant Books. Available in stores nationally. Photography by Steve Brown, $45.

1 To make the mascarpone cream, whisk the together cream and sugar to soft peaks. Gently fold through the mascarpone to combine.

2 Generously spread one piece of bread with the chocolate hazelnut spread. Cover with cherry jam, then cover the jam with a few tablespoons of the mascarpone cream.

3 Place the cherries in a row down the middle, to line up with where the bread will be sliced, then add another few tablespoons of cream on top.

4 Add another piece of bread to the top, then wrap in baking paper. Repeat to make four sandwiches.

5 Refrigerate for 20 minutes to set, then slice and serve.

MEYER LEMON AND ALMOND RICOTTA CAKE WITH MERINGUE ICING

A Plant-Based Farmhouse

64 GOLD COAST • PANACHE Magazine
RECIPES

MAKES A THREE-LAYERED 20CM ROUND CAKE

INGREDIENTS

• 400g almond ricotta

• 245ml soy or almond milk

• 300g rapadura sugar

• 140ml extra virgin olive oil

• Zest and juice of 4 Meyer lemons

• 450g plain (all-purpose) white spelt flour

• 9g bicarbonate of soda (baking soda)

• 4g baking powder

• 3g salt

MERINGUE ICING

• 240ml chickpea liquid (aquafaba), drained from a 400g tin of chickpeas

• 265g raw sugar (not rapadura, unless you’d like a caramel coloured meringue)

• 3g cream of tartar

1 Preheat your oven to 180°C.

2 Line the base of three 20cm springform cake tins with baking paper and grease the inside of the tins with olive oil.

3 Using a stand mixer or hand-held electric mixer, blend the almond ricotta with the milk until smooth.

4 Add the sugar, olive oil, lemon zest and lemon juice and mix again.

5 Now add the flour, bicarbonate of soda, baking powder and salt. Mix once more, until completely blended into a smooth batter.

6 Divide the cake batter equally between the cake tins. Bake for 35–40 minutes, or until a skewer inserted into the centre of the cakes comes out clean.

7 Remove from the oven and leave to cool in the tins for 10 minutes, before turning out onto a wire rack.

8 Once the cakes have cooled, and just before assembling and serving the cake, make the meringue icing. Aquafaba is better used closest to the time of eating. Also make sure your bowl and beaters are very clean and dry.

9 Pour the chickpea liquid into the bowl. Add the sugar and cream of tartar.

10 Using the balloon whisk attachment, beat the mixture on low speed for exactly 2 minutes. This will give the sugar a chance to dissolve into the aquafaba. Turn the setting to medium speed and continue mixing for another 2 minutes.

11 Finally, turn the speed all the way to high and whisk for 6 minutes. You cannot over-beat aquafaba in the same way you can egg whites, so if you leave it mixing for longer, that’s fine — just don’t under-mix it. The timing is really important to the success of meringue.

12 To assemble the cake, place one cake on a cake plate, bottom side facing up, to give a nice flat surface.

13 Top with a generous amount of the meringue, then sandwich the next layer of cake on top, bottom side up.

14 Repeat the process, then dollop the remaining meringue on top of the cake, and around the side if you like. If you have a mini kitchen blowtorch, you can use it to toast the layers of meringue icing until golden. (Remember, this meringue contains no egg white, so it’s perfectly safe to eat raw.)

15 Decorate with fresh almond blossoms, or any unsprayed flowers from your garden. Any leftover cake will keep in an airtight container for 2–3 days.

Your little one is sure to love these nutritious and fun pancakes! They’re great for breakfast and also make the perfect snack. With the addition of spinach, you get an extra serve of greens in and a hit of iron (along with the oats). Pair the pancakes with a food rich in Vitamin C like our berry good jam or kiwi fruit to increase the absorption of the iron.

INGREDIENTS

• 1 large ripe banana, peeled and roughly chopped

• 1 cup fresh or frozen spinach

• ¾ cup rolled oats

• 2 eggs

• ¼ cup tinned coconut milk

• 1 teaspoon ground cinnamon

• 1 tablespoon coconut oil

Baby Food Bible by Julia Tellidis and Lauren Skora. Published by Hardie Grant Books. Photography by Julia Tellidis and Lauren Skora, $49.99.

1 Blitz the banana, spinach, oats, eggs, coconut milk and cinnamon in a blender until a smooth batter forms.

2 Melt the coconut oil in a frying pan over a medium heat. Smear the pan with paper towel to help evenly distribute the oil.

3 Once the oil has melted, pour 1 tablespoon amounts of the pancake batter evenly into the pan to make mini pancakes.

4 Flip over when the pancakes start to bubble and no longer look ‘gooey’. This will take about 2–3 minutes.

5 Repeat until all the batter is used up.

6 Transfer to a plate but don’t be surprised if they don’t all make it to the table!

7 Top with your yoghurt of choice, our berry good jam, nut butter and sprinkle with hemp seeds.

ONE-TRAY CHICKEN BREAST WITH GARLIC HERB BUTTER, POTATOES AND BEANS

68 GOLD COAST • PANACHE Magazine
RECIPES
Wholesome by Sarah

SERVES 4

Who doesn’t love a one-tray dish with its easy prep and very little washing up?

INGREDIENTS

• 500g baby potatoes, halved

• 4 x 150g chicken breast fillets

• Freshly ground black pepper

• 250g green beans, trimmed

• Extra-virgin olive oil, for drizzling

GARLIC HERB BUTTER

• 3 tablespoons unsalted butter, melted

• 3 tablespoons chicken stock

• 3 garlic cloves, finely chopped

• 3 tablespoons finely chopped flat-leaf parsley leaves, plus extra to serve

• 1 tablespoon lemon and herb seasoning

1 Preheat the oven to 200°C (fan-forced). Lightly grease a large, deep baking tray.

2 Place the potato in a microwave-safe bowl. Cover with water and microwave on high for 6 minutes. Drain and set aside. Alternatively, parboil the potato in a saucepan of boiling salted water for 10 minutes. Drain and set aside.

3 Now for the fun part! Place the chicken breasts between two sheets of baking paper and, using a rolling pin, pound each one several times to flatten slightly and even out the thickness – this helps to tenderise the chicken, too.

4 Make the garlic herb butter. Combine all the ingredients in a bowl and mix well. Drizzle half over the potato and gently toss to combine. Transfer the potato to the prepared tray and roast for 25 minutes.

5 Place the chicken in a large shallow bowl. Drizzle on the remaining garlic herb butter and turn to coat. Season well with pepper.

6 Roast to perfection. After 25 minutes, remove the tray from the oven and arrange the chicken on the tray. Return to the oven to roast for 15 minutes. If the chicken isn’t browning up enough, flash it under a hot grill for the final 5 minutes of cooking.

7 Finish with some greens. Remove the tray from the oven and place the green beans around the chicken. Drizzle on a little olive oil and return to the oven to roast for a further 10 minutes until the chicken is cooked through and the potato is golden. Scatter the extra parsley over the top and serve, making sure you drizzle on the pan juices.

Brooke Lee

Have you always lived on the Gold Coast?

I was born at Pindara Hospital and I’ve been here all through my schooling. I studied in Brisbane, but came back to the Gold Coast to film Mako Mermaids. I moved to LA for a couple months before COVID but COVID brought me back here. Now, I have purchased a home, I think I’ll be here for life!

Where on the Gold Coast did you grow up?

I lived in Carrara but went to school in Southport. Where did you go to school?

St. Hildas from pre-school to year 12 (13 years all up). How did you get your start in modelling/acting?

I was always interested in acting and pursued that from school. A couple years out of school is when I landed the Mako Mermaids role. I didn’t actually start modelling until much later, once I had changed my hair colour from blonde to red and surprisingly, put

on some weight. Then my modelling career really took off, which actually took me by surprise but it is now what I have been doing mostly full-time for the past 5 years.

What do you love most about modelling?

I love that I have so many women who contact me, thanking me, because they love to see their figure represented in so many huge fashion icon brands. To me, representing a more diverse body shape is so important.

Have you found the demand for curvier models has increased since you first started in the industry?

I think for the last 15 years there has been a place for a plus size model (16+) and a standard size model (6-8), but there has never been a market for the mid-size model (12-14). The model that represents the majority of Australian women. This is a newer market that has only taken off in the last 5 years and I am so proud to be at the forefront of that movement.

Why is it important to you that there is diversity in fashion?

I think the whole purpose of shopping online is to purchase clothes you think will look good on you. By showcasing a diverse range of body shapes, it is easier to shop, to see what those clothes might look like on you.

You have some great content on your social mediawhere do you draw inspiration from and what goes into creating your content?

I like to have fun with my social media and keep things light hearted and colourful. Social media can be a pretty toxic place so I try to keep it positive.

What are some of the labels/companies you have worked with?

Honestly, almost too many to list. But if I were to name some of the better known labels, here goes: Bra’s N Things, Lorna Jane, Just Jeans, Pretty Little Thing, Spell, Sportsgirl, Rockwear, Dotti, City Beach, Hi Smile, LSKD, Triumph, Muscle Nation and the list goes on!

If you could work with any label in the world, who would it be and why?

I have smashed my goals in terms of the Australian market, which I am super proud of. Internationally I would love the opportunity to be a part of the Victoria’s Secret fashion runway. They have come a long way in the past few years in their inclusiveness and I would love to be a part of that movement.

What is the best thing about living on the Gold Coast?

The beach and the hinterland. Within 30 minutes, I can be from the beach up to the mountains. It’s such a beautiful place to live.

If someone only had one day to spend on the Gold Coast what would you suggest they do?

That is HARD… Depends on the person. It would have to be an action packed day. Start with a sunrise jetski, there is no better time to be out on the water. Usually a lot of dolphins at that time. Breakfast at Hot Shott Cafe on Tedder Ave. Quick shop at Pacific Fair. Lunch at the revolving restaurant at Crowne Plaza for the views. Head up the mountain to Tamborine Gallery walk. Then either hit up a trail for a hike or go to a winery. Grab some cheese and a wine to go and watch the sunset up on the mountain.

Where would we find you on a lazy Sunday afternoon?

In the morning, at the HOTA farmers markets. Then, with a book and my dog, down at the park in Paradise Point watching the sunset and all the big boats come in from their day out.

knowledge assured us that we were in for a culinary journey unlike no other.

The evening commenced with Pixel Bakery sourdough paired with Coppertree cultured butter - an impeccable start that set the tone for what was to come.

Our entrée selection featured Fremantle octopus with harissa and celeriac pear, and Mooloolaba prawns with XO butter and capers. Each dish was a testament to the kitchen’s mastery, with the octopus perfectly tender and the prawns bursting with richness.

For the mains, we indulged in James Dalton’s Australian Bay Lobster, with a roasted Chinderah grapefruit beurre blanc, and Coral Trout with butter emulsion and chorizo. Both dishes were exquisite and showcased Head Chef Mark Ramos skill in elevating natural flavours.

Complementing these delectable dishes were the cauliflower heart, roasted in Scenic Rim coconut curry with almonds, and truffle fries with aioli, offering a delightful vegetarian option that did not compromise on taste.

The meal culminated with a pavlova, featuring Chantilly cream and summer fruits, a refreshing and light dessert that perfectly balanced sweetness and tartness, handcrafted by Akoya’s Executive Pastry Chef Johann Vanier.

Accompanying our meal was a bottle of Champagne Taittinger, its crisp and elegant bubbles enhancing the flavours of the seafood. Additionally, a specially crafted mocktail was provided for our pregnant guest, a thoughtful touch that demonstrated Akoya’s commitment for catering to all.

Akoya is not just a restaurant but a destination where the appreciation of flavour and the joy of sharing come together to create unforgettable memories. An open kitchen adds a touch of theatricality and allows guests to forge a deeper connection to the dining journey.

For those seeking the epitome of coastal elegance and gastronomic delight, Akoya is an unmissable experience.

2024 - The Year of Change in Family Law: What Do They Mean for You?

As we navigate the complexities of modern family life, the Australian Family Law system has undergone significant transformations to better support and protect individuals and families. 2024 marks a pivotal year of change, with reforms aimed at improving efficiency, flexibility, and accessibility. In this article, we’ll delve into the key changes and explore what they mean for you.

The Family Law Amendment Act 2023 implemented amendments in a lot of key areas of the Family Law Act 1975 (Cth) and most significantly around:

• What must be considered by the Court when determining what is in a child’s best interests.

• Who will be responsible for the decision making for children regarding their long term issues?

• What time arrangements can be implemented for a child to spend time with a parent with whom they do not live; and

• When and how a parenting case can be reopened

How does the Court decide what is in a child’s best interests

Under the previous iteration of the Family Law Act,

84 GOLD COAST • PANACHE Magazine LEGAL

there was a lengthy list of factors that the Court had to consider when determining what is in a child’s best interests. These have now been streamlined to six main factors:

1. The safety of the child and of each person who cares for the child.

2. The child’s own views.

3. The development, psychological, emotional and cultural needs of the child.

4. The capacity of each person who will be responsible for the child including their capacity to provide for the child’s development, psychological, emotional and cultural needs.

5. The benefit to the child of having a relationship with their parents and other people of significance in their life; and

6. Anything that is relevant to the circumstances of the child (including specific cultural considerations for Aboriginal and Torres Islander children).

Decision Making for Children

The presumption of equal shared decisionmaking responsibility has been removed from the Family Law Act. The Court can and often will make Orders about how parents will make decisions around long term matters (such as health issues, religion and education). The Court can allocate decision making responsibility to one or both parents in all respects or to one parent in relation to one specific issue.

If you are required to make decisions jointly you are required to make a “genuine effort” to consult with the co-parent.

Time arrangements for children and their parents

Under the previous provisions of the Family Law Act, many parents believed they were entitled to equal time with their children. This was never the case, rather the court was obligated to “consider” an equal time arrangement if certain circumstances arose. This requirement for consideration has now been removed and each case is to be decided on the merits of the matter and what is in the best interest of the children.

How can I re-open my parenting matter?

Existing parenting Orders must continue to be complied with unless and until there is an agreement to vary them or a Court makes Orders varying them.

When there is an existing Final Order in place, the Court must not reconsider those Orders unless:

• It has considered whether there has been a significant change of circumstances since the Final Order was made.

• The Court is satisfied that it is in the best interests of the child for the Order to be reconsidered.

This test was established in a case called Rice v Asplund and the amendments to the Family Law Act have ensured this test is now in the legislation, rather than just a “concept”.

What Do These Changes Mean for You?

As we embrace this new era in Family Law, remember that every family’s journey is unique. By understanding and adapting to these changes, we can work together towards a brighter, more supportive future for all.

Nourishing Pregnancy: The Benefits of IV Therapy for Expectant Mothers

As an expectant mother, you want the best for your growing baby. While a balanced diet and prenatal vitamins provide essential nutrients, sometimes they may not be enough. IV therapy offers a revolutionary approach to support your health and your baby’s development during pregnancy. Let’s explore the benefits of IV therapy for pregnant women.

Replenishing Essential Nutrients

Pregnancy increases your body’s demand for vital nutrients like vitamins, minerals, and amino acids. IV therapy ensures optimal levels of these essential nutrients, supporting your baby’s growth and development. This is especially crucial during critical periods like fetal development and brain growth.

Boosting Energy and Immunity

Pregnancy can leave you feeling exhausted and vulnerable to illness. IV therapy’s targeted nutrient infusion helps combat fatigue, supports immune function, and reduces the risk of pregnancy-related complications.

Hydrating and Nourishing

Adequate hydration is crucial during pregnancy, and IV therapy provides instant replenishment of fluids and electrolytes. This helps maintain healthy blood pressure,

supports fetal development, and reduces the risk of preterm labor.

Reducing Morning Sickness and Nausea

IV therapy’s anti-nausea and anti-inflammatory properties can alleviate morning sickness, allowing you to feel more comfortable and focused on your pregnancy journey.

Supporting Mental Well-being

Pregnancy can be emotionally challenging. IV therapy’s mood-boosting nutrients and amino acids help regulate mood swings, reduce anxiety, and promote a sense of calm and well-being.

IV therapy offers a safe and effective way to support your health and your baby’s development during pregnancy. By replenishing essential nutrients, boosting energy and immunity, hydrating and nourishing, reducing morning sickness, and supporting mental well-being, IV therapy empowers you to thrive throughout your pregnancy journey.

Please consult your healthcare provider before considering IV therapy. They will help determine the best course of treatment for your individual needs.

PASSIONATE PEOPLE SHANE JURGENS

Your new position means relocation to the GC. Have you ever lived on the GC before and if so, when and where?

I have never lived on the Gold Coast before but I loved to visit. Before I moved to the Goldie, I lived up in North Queensland for over 26 years, six years in Cairns and 20 years in Townsville. Since relocating to the GC as General Manager of 92.5 Triple M Gold and 90.9 Sea FM, it really does feel like home.

What excites you most about taking up this position on the GC?

So much excites me about my new role as General Manager of Triple M Gold and Sea FM. The Gold Coast has always been a very important market for SCA as it’s the fifth biggest city for our company. I’m thrilled to work with these amazing brands that hold so many memories and so much heritage to our listeners on the Goldie.

What opportunities does the GC hold for SCA in the future?

The Gold Coast is a city of opportunity as it continues to grow at rapid speed. 92.5 Triple M Gold and 90.9 Sea FM will play a pivotal role in the community, like it has done for all these years, as we see more local businesses and people settling on the GC.

What sets GC radio apart from other regions around Australia?

The Coast’s diversity sets this city apart from other regions around Australia. Not just its tourism but our liveability and love of community is something we should all be proud of. I’m always feeling so welcomed from everyone I meet.

How did you get your start in the radio business?

My radio beginnings started in 2002 when I was running the Playpen Nightclub in Cairns, a past colleague had made the transition into radio and encouraged me to apply for an Account Manager role in Townsville. 22 years later with stints across the state, my love for radio is still just as strong since my first ever role.

What is it you like best about the medium radio?

I just love it. Radio is so personable, immediate and accessible with the ability to connect with a community and drive trust and loyalty like no other platform such as supporting local events, businesses and charities. Radio also serves as a vital source of local news, weather updates and emergency broadcasts to our listeners and community. However, the best part of radio is the people, we have some amazing talent within this industry who love just making a difference in the community and people’s lives.

What qualities and direction do you think you will bring to your new role?

In my new role, I aim to bring a proactive “can-do” attitude, fostering open communication to open doors for innovation among our people. I drive collaboration across our teams, clients and community which challenges us to be better by thinking outside the square while promoting inclusivity, honesty, and transparency in all we do.

What is one of the best radio moments you have been a part of?

My greatest moment in radio isn’t a moment, it’s meeting and working with our people. I had the pleasure to work alongside Steve Price OAM for over 20 years in Townsville. Steve Price just hung up the radio headphones after 38 years, making him one of our state’s longest serving radio voices. Steve’s impact reaches far beyond the radio speakers and this is what makes me so proud to work in this industry. Steve, like many radio teams both on and off the air, work tirelessly to make a positive impact. They truly make a difference and devote their own time for their communities, whether its in the face of natural disasters or talking about the local matters, they make meaningful connections, and this is what I love.

What LiSTNR content has been playing on your devices recently?

LiSTNR is our curated and personalised free app offering radio podcasts, music and news with an audio destination for everyone. Apart from listening to our radio brands, I love listening to podcasts Hamish & Andy, The Howie Games and I have just started listening to Second Son which is an amazing series of crime thrillers – I highly recommend!

PASSIONATE PEOPLE MATT SHIRVINGTON

In the world of morning television, Matt Shirvington’s transition to Sunrise has been seamless. Stepping into the spotlight after long-time co-host David ‘Kochie’ Koch, Shirvington brings a wealth of experience from the athletics track to the television studio. He shares insights into the challenges and cherished moments, offering a glimpse into the show’s dynamics and team camaraderie. Shirvington also highlights his personal connection to the Gold Coast, describing it as a place that brings people together and offers an endless holiday vibe.

Have you settled into Sunrise life and has it been as you expected? It’s been a really good and smooth transition. I received a warm reception from the team, and the audience ratings have been good. From a work standpoint, there are still things I’m learning along the way, and with experience, these should become easier. Realistically, I have prepared well for this because I filled in for Kochie for so long.

You had some big shoes to fill, taking over from Kochie, how did you feel when you were offered the role? It definitely needed some thought as it is an all-in job. You’ve really got to balance the juggle at home, the preparation, the research, staying across news and current affairs. It’s a full life shift.

How have you been able to make the role your own?

Kochie said right at the beginning, ‘you’re going to love this job, you’re the right person for it, just be yourself.’ And it really made me feel comfortable that I had his endorsement and that I didn’t need to be him or someone else.

How much work goes into preparing for each Sunrise show?

We have an amazing team of producers on Sunrise. The amount of work that goes into the show prior to us going live at 5:30am is significant. Producers and contributors are literally working overnight building the show, and then all our segment producers will give us a briefing on what we need to do and the subject matter. There’s a lot of reading, and I think Nat (Barr) and I are similar in that we both do extra and delve into the subject or the person we’re interviewing a little more than what’s just on paper.

It’s a long way from the athletics track to the television studio - tell us about this journey?

Every day I seem to come across something where I think I’m glad I had that mindset to be able to get through it. Whether it’s a determination to win, trying to be the best at something or trying to win the ratings, as a team, we have that mindset and we’re all really driven, from the top down.

Do you feel the skills and attitudes you cultivated in sporting life have translated into media life?

We want to do this well, be well received and give respect to our guests and their stories. Often what happens as an athlete is you hit these patches of plateau where you feel like you’re not going anywhere. One thing I’ve learned is that if you rest during those periods for too long, you can start to decline. Once you’ve hit those plateaus you’ve got to find a different way to make it work. That’s something that I’ve been trying to tap into on Sunrise. Sometimes you think ‘this is cruisy now, but let’s work on that, amp it up a bit and add some energy.’ So, there’s definitely some synergies.

Did you always consider a role in media as an option after athletics?

I thought I was going to be some sort of high-performance coach at a footy team or maybe in athletics somewhere down the line. I started doing a bit of television towards the backend of my career, and I did a little show with Channel Seven ironically, called Beyond Tomorrow, which was a science and technology show. Then I got into the newsroom, and that’s where I learned everything I needed to know. Whenever an athlete wants to get into television, I tell them to go and spend time in a

newsroom. You learn everything from writing, editing, to the value of the story, the value of people. It’s a really good way to learn TV.

Is athletics and running still part of your life?

I hate long-distance running, but I keep a medicine ball in the back of the car, and I will go to a park and do a circuit where I will sprint in between throwing the medicine ball around. That’s a bit of a go-to for me.

88 GOLD COAST • PANACHE Magazine PEOPLE

How has your career in television impacted your kids’ ambitions, and what are their current interests?

The kids came and met Tom Cruise when I interviewed him, so they appreciate the opportunity that TV can offer them when you get to meet someone like that. My middle daughter Winter is an athlete, and she has done track and field for a while, but rowing is her thing. My eldest is arty and is focused on creating. Lincoln is finding his way at the moment. He has started playing soccer and is loving that.

Sunrise has visited the Gold Coast on numerous occasions, why is the Gold Coast important to Sunrise?

I think the Gold Coast attracts people from all over the country, and it has a sense of bringing people together, and that’s something that Sunrise also does, so there’s a definite synergy. On Sunrise, it’s all about being light and trying to give people energy and a light vibe in between the news, and that’s the Gold Coast too. There’s always this underlying holiday vibe that never disappears. One thing I do recall is that the fastest I ever ran in Australia over 100m was on the Gold Coast at Runaway Bay. It’s still my personal best time as an athlete. So there’s a special connection to the Gold Coast for me.

Have you spent much time holidaying on the Gold Coast? If so, what keeps bringing you back?

My first-ever holiday was here. In 1988, we came up and stayed on the Gold Coast for Expo 88 in Brisbane. I think I was 8-years-old, and I still feel that holiday vibe no matter how many times I come up here or how long I spend here, it always feels like a holiday.

Tell us about working with the Sunrise team - who has the most annoying habit and who would you share your last Tim Tam with?

There’s no point sharing with anyone because if there’s a Tim Tam anywhere, Berets (Mark Beretta) will sniff it out

and steal it anyway. They call him the Seagull, and they call him that for a reason. There is a real family vibe, and it’s lovely. Everyone chips in like a family does, and they all have their nuances and strengths, but we all get on really well.

If you could invite anyone for a chat on the Sunrise couch, who would it be and why?

I gravitate toward two. Leonardo da Vinci because during his time, he was a game-changer. He was an inventor, an artist, and one of the greatest of all time. I’d ask if there was a hidden meaning in some of his artworks like we’ve seen with Dan Brown novels. I am also a massive Star Wars fan and I’d love to get the original Star Wars cast together. Carrie Fisher obviously passed away, but I would love to conduct an interview with all of them. That, for me, would blow my mind.

What makes an ‘Australian’ Hamptons-Style Home?

Specialising in Hamptons and Coastal Style Builds

Hamptons and coastal-style homes seem to be popular topics when discussing house designs. But what makes a Hamptons or coastal-style home, and how has the Australian lifestyle influenced it?

Let’s start with the history of the Hamptons home. The term ‘Hamptons home’ originated in the US, specifically in the affluent East Coast area near New York. This style was influenced by coastal beachside holiday homes, known for their light, airy, and spacious feel. Glamour and elegance are often associated with a traditional Hamptons-style home. The interior and exterior craftsmanship of these homes have given them a timeless style that remains popular today.

Why does this style work so well in Australia, and how does it compare with the traditional US-style Hamptons home?

The bright and airy feel of a traditional Hamptons-style home complements the Australian lifestyle, particularly its emphasis on indoor-outdoor living. The exterior cladding not only looks good, but is also well-suited to the Australian climate, as are the high-pitched/ gable roofs. Australian-style Hamptons/coastal homes often feature corrugated steel roofs, in contrast to the traditional tiled or shingled roofs more commonly seen in the US.

These high-pitched gable roofs, paired with tall ceilings and large, detailed windows, are perfectly suited to the Australian lifestyle, allowing ample light and breeze into the home. Outdoor areas seamlessly extend the living space, inviting residents to enjoy days in the sun, enjoying a barbecue or swim in the pool. The Australian Hamptons style embodies a beachy coastal vibe, rather than the traditional whites, stripes, and blues of the US Hamptons style.

At Wycon Homes, we are passionate about the Hamptons style, believing it to be a perfect fit for any Australian lifestyle. We consider it classic and timeless, serving as an excellent foundation for personalisation, while maintaining its appeal for years to come. Whether it’s a renovation, new build, or extension, we enjoy collaborating with you to create your dream home. Our open floor plans ensure that each room complements the next, allowing a seamless flow from indoors to outdoors, and maximising natural light throughout.

How did you meet?

We have known each other for 10 years and connected 3 years ago through friends. Nick had asked me on a date and the same day I ran into some very close family friends who wanted to set me up with “someone” and that someone was Nick! It was crazy I was on the way to meet him and had no idea they would have known each other. It was meant to be.

How did he propose?

Nick proposed in the Hunter Valley as he knew that area was special to me as I grew up close by there and had a lot of nice memories there. It was so special.

Where did you get married and what was the most memorable moment of the day?

We got married at TSS where Nick went to school. I had always dreamt about getting married in a church and it was also very meaningful to Nick. The reception was then at my parents new property in Tallebudgera Valley.

Any unique or surprising details about your wedding?

Yes we had a night club set up for after dinner which was amazing! Regain performed along with two Sax players while we danced the night away. We also had a champagne dancer in a huge champagne glass. No one knew about the “Club” until after dinner which was cool!

Where

did you go for your

We are going to America

Honeymoon?

Would you do anything differently?

I don’t think so! It really was the best day and everyone had the most amazing time.

What was the standout moment of the day?

We have Peacocks that come to our property each day and there was two white peacocks there from 5am throughout the day while us girls got ready. I adore them and I felt like it was good luck!

Best advice for other couples?

Enjoy the day and have fun! Don’t be to serious about it, it goes by so fast and you want to enjoy it!

How did you meet?

We met on Australia Day 2018 at the Sydney institution, Golden Sheaf in Double Bay. We had both been out for the day with friends and we both were close to leaving and calling it a night. Our friends started chatting to each other, we then started chatting to each other and instantly had a connection. We laughed all night.

How did he propose?

We were scheduled to go to away for the weekend to Wolgan Valley for my birthday, which Stuart had planned to propose there. Unfortunately, COVID had other plans and Sydney went into lock-down so we were unable to go. The following weekend we were at home, Stuart dropped to his knee and proposed in our living room – I had no idea and was just perfect.

Where did you get married and what was the most memorable moment of the day?

We chose Mona Farm in Braidwood for our wedding and reception after struggling to find a location. It is such a stunning and unique venue. Hard to pick a memorable moment as there was so many. However, the most special moment was seeing each other for our first look prior to the ceremony. It was nice to have some time together in private before the day started as it went so fast.

Any unique or surprising details about your wedding?

We shied away from some wedding traditions, and these were some of my favourite moments.

• We woke up together on the wedding day and had breakfast with our children before starting the day.

• We didn’t do a traditional wedding dance together, but had a dance with all of our wedding guests on the dancefloor. Was amazing to be surrounded by so much love.

• We didn’t do a wedding cake, but the team at Mona Farm brought out trays of Espresso Martinis for guests with sparklers to really get the party started.

Where did you go for your Honeymoon?

We spent 8 nights at Qualia on Hamilton Island which was a great place to rest and unwind.

Would you do anything differently?

We wouldn’t change a thing – the day was perfect.

Best advice for other couples?

1. Surround yourself with good suppliers and people – it makes the planning process and on the day so much easier to have people you can rely on and trust. So important.

2. Do a first look – the day goes so quickly and its nice for the bride and groom to have some time together before it all starts!

3. Don’t feel the need to do all of the old wedding traditions that you don’t feel reflect you as a couple. Make the day your own and do it your own way.

How did you meet?

We met on the Gold Coast in 2014 via mutual friends.

How did he propose?

It was 7.20am in the morning on the 17th of December and I was taking our dog Gryff for our usual morning walk. Tom decided to come with us this morning and insisted on a specific dog park and dropped the knee there! He had a photographer waiting in the bushes and everything. I was honestly speechless and completely caught off guard. The best surprise ever! He then flew my parents down from the Gold Coast to surprise me and his parents came up from the Mornington Peninsula and we all went out for dinner and celebrated well into the night. Best day ever! Or second best day ever I should say.

Where did you get married and what was the most memorable moment of the day?

We got married at The Commons in Melbourne. It is a beautiful big bluestone dance hall built in the 1800s and there is a chapel out the back. It was perfection. The most memorable moment was walking down the aisle to Tom, feeling all the nervous butterflies fade away and just becoming overwhelmed with excitement. Another one was standing back at about 9pm and seeing all of our family and friends dancing together on the dance floor and realising we had pulled off the most amazing day and were surrounded by the people that make our world go round.

Any unique or surprising details about your wedding?

We share our wedding anniversary with my older sister who was my bridesmaid, and the weekend with Tom’s parents and my parents so we wanted to highlight that somehow and I came up with the idea of having a wedding newspaper. It had our parents love story, how they met and advice from them, details about the day, timings, our wedding playlist and favourite recipe among other things. It was a personal touch and also a fab photo moment!

Where did you go for your Honeymoon?

We snuck off to Queenstown for 5 nights, and it was phenomenal!

Would you do anything differently?

Absolutely nothing, it was perfect.

What was the standout moment of the day?

Walking down the aisle holding my dad’s arm and towards Tom. I became overwhelmed with excitement that the day had arrived and I was marrying the love of my life!

Best advice for other couples?

Don’t sweat the small stuff. People will remember the vibe, and the excitement of the day which comes from your energy. Not how the tables looked, how awkward your first dance feels or what colour the napkins were. Things will go wrong, but it all adds to the incredible story you’ll spend talking about and telling for the weeks and years to come.

How did you meet?

Luke and I met on Tinder. I wasn’t going to meet up with him but he convinced me, and took me out for ice cream. We ended up playing a prank on his best friend Aleks and tried to convince Luke that I had known Aleks for years and that he didn’t remember me. That prank lasted for two months. But after our first date we really got along well with each other and continued hanging out, six years later here we are.

How did he propose?

It was the day after my birthday and we were having a romantic dinner. Luke turned to me and asked “what would you like more than anything in the world?” I said, “a proposal would be nice.” He gets up and proposes to me, it was so unexpected. I didn’t think he was going to do it because I said it as a joke. He did propose and it was the best proposal ever. Our personalities are relaxed and we don’t need a big fancy proposal. I just want to spend the rest of my life with him, and we finally did that.

Where did you get married and what was the most memorable moment of the day?

We got married at our house in Carrara. We wanted to save some money. We had enough space for everyone to be around and we didn’t really want a traditional sit down wedding, because that’s just not how we are. We wanted to have a perfect backyard wedding.

Any unique or surprising details about your wedding?

Probably Elvis. We don’t think anyone was expecting him to be our celebrant so that was a unique and surprising detail of our wedding. With him singing some songs, everyone thought he was great and they keep saying the best wedding they’ve ever been too.

Where did you go for your Honeymoon?

Yes, we will be going to Phu Quoc in Vietnam. It is suppose to be a really romantic destination. It’s all brand new. It looks like Venice but you’re in Vietnam.

Did you have a Hens and Bucks party?

Hens: For my hens it was a surprise. I had no idea what we would be doing. My Maid of Honour planned it all. We went to Cali Beach for the day which was so fun. We got rained on but we just kept going. It was perfect and then we went to Asylum nightclub for the Magic Mike show, then we went to Elsewhere in Surfers and had a boogie.

Bucks: Luke’s bucks was a surprise as well. He went on a charter boat fishing in the early morning. Then they went go-karting at Slideways and then they went to the hotel room in Q1 and had a party. Then they went out in Surfers and had some fun.

What was the standout moment of the day?

We just loved the fact that everyone was mingling and having a good time. Families coming together and everyone enjoying the food and the Daiquiri machine.

Best advice for other couples?

Take the time to enjoy each other’s company and become friends. It’s all about not trying to change each other but enjoying the ride together.

108 GOLD COAST • PANACHE Magazine WEDDING

How did you meet?

We met at work after I moved to the Gold Coast from the Hunter Valley. It wasn’t your typical love at first sight like a lot of people might think given how smitten we are with one another. We only worked together for a week before Sam left to go to another restaurant, so we didn’t get the chance to get to know each other at first. Sam came back to Edgewater Dining after 3-4 weeks, and we began to spend time together as a group of friends from work, and from there we hit it off. We began talking more frequently. We were dating in what we thought was ‘secret’ for about 3 or 4 months, before we officially started dating in January of 2023.

How did he propose?

Sam proposed in the picturesque Hunter Valley at Audrey Wilkinson Wines in July 2023. It was a spot that we had visited a few months prior that he absolutely loved. I think he knew from the first time we visited that he would propose there. He actually bought the engagement ring on that trip.

He worked with my best friend to plan the perfect proposal, and they totally caught me off guard, even though I had a feeling that it would happen at some point during that trip, I had no idea when.

Where did you get married and what was the most memorable moment of the day?

We held a small intimate ceremony at Lovers Rock Park on the QLD/NSW border, and it was just perfect. When we got engaged, I was looking at ceremony spots online and fell in love with this one.

From there we had a small dinner at The Tropic, which was also so perfect. The day had a lot of wonderful moments. We started off slow, just the two of us, before we had my best friend and hair and makeup arrive. While my best friend was getting ready we spent that time with her baby, my niece, which was just so special.

For Darcie: I had my best friend and niece walk me down the aisle, which was such a special moment for me. She is my soul sister and I couldn’t have imagined our day without her.

Walking down the aisle to see Sam standing there was magical, I actually got nervous to say my vows because I don’t like public speaking!

For Sam: The whole day was just so special, having our closest family and friends there to celebrate with us was so amazing, and marrying the love of my life of course.

I found the day super relaxing considering how much work went into planning it all.

Any unique or surprising details about your wedding?

I guess how quickly we got married might seem surprising to some people, but to us it didn’t feel quick or rushed. Having both been in long relationships in the past, this relationship felt so right to both of us, that we didn’t want to wait, we wanted to be married to each other.

Where did you go for your Honeymoon?

We spent a wonderful two nights at Spicers Peak Lodge. Such a perfect place to disconnect from the world and just enjoy time with each other after our wedding. We are planning to do a bigger trip this year to Europe as a second honeymoon!

Would you do anything differently?

No, I don’t think we would. The day was so perfectly suited for us. We don’t love to be the centre of attention, and a big wedding was never on the cards for us.

Best advice for other couples?

Cherish all the little moments and do what makes you happy, at the end of the day, the day is about you and your love. You may not please everyone along the way.

How did you meet?

Our story began at the gym. I remember the first time I met Craig, feeling an instant connection, something that drew us together. Life took us on different paths for a while, but fate brought us back together.

How did he propose?

Craig’s proposal was a sunset dinner on the beach at Hayman Island. Despite his nerves, which he managed to hide, I was surprised when he popped the question.

Where did you get married and what was the most memorable moment of the day?

Our wedding took place at my Uncle and Aunt’s property in Gilston. Craig’s most memorable moment was seeing the smile on my face. My most memorable moment was feeling an overwhelming sense of joy as I walked down the aisle towards Craig and Harry.

Any unique or surprising details about your wedding?

Instead of renting furniture, we brought pieces from our home; this gave the space a personal touch that reflected our style.

Where did you go for your Honeymoon?

Due to my health, planning a honeymoon has been challenging. However, we hope to embark on an adventure when the timing is right.

Would you do anything differently?

We are immensely grateful for our families’ support in making our wedding day a reality. Given the circumstances, we wouldn’t change a thing.

Hens/bucks days and nights?

I opted out of a traditional hens night while Craig celebrated with friends at the Breakfast Creek Hotel.

What was the standout moment of the day?

It was celebrating with our loved ones, though we wished the day hadn’t flown by so swiftly. Our wedding was a labour of love, especially considering my health challenges. The entire family pitched in, making the day possible but exceptionally meaningful.

Best advice for other couples?

Stay true to yourselves and your story on your wedding day. It’s a day to celebrate your journey together surrounded by loved ones, so make it meaningful and unique.

AN EXHILARATING ADDITION TO THE PRINCESS YACHTS S CLASS RANGE; THE PRINCESS S65

Princess Yachts sail into a new decade of luxury, unveiling their latest trophy edition to the S Class sportbridge range, the all-new Princess S65. In keeping with tradition, the Princess S65 follows the distinct S class style and performance, while also offering the perfect combination of space and comfort that you’d expect of a sporty flybridge yacht.

Collaboratively designed by the inhouse Princess Design Studio, naval architects Olesinski and Italian design house Pininfarina, the S65 features a sleek, low-profile exterior that gives a powerful sporting stance, effectively concealing the large sports-bridge above.

The vessel’s craftsmanship showcases premium quality with a design that accommodates a large sunroof that when opened, floods the saloon and lower helm with natural light and fresh air.

A generous and flexible cockpit inspires relaxation while the twin MAN V8 1200 or V12 1400 engines offer a high speed of 36 knots, delivering the exhilaration expected from the sporty range.

Thrill seekers will relish the excitement offered by the S class models thanks to the Princess’ speed, space, and flexibility. These yachts are designed to connect you to the water, bring loved ones together and cruise in ultimate comfort and style. They exemplify the ability, quality and design expected from a Princess and inject a unique level of performance, style, and on-water attitude.

Design

Princess Yachts Director of Design Andy Lawrence explains the concept behind the sophisticated design, which is inspired by the modern elegance showcased in the range.

“Defined by Princess’ sweeping design, language and sculpted exterior surfaces, the S65 illustrates a prominent yet sophisticated presence,” Andy says.

“Maintaining that low-profile, powerful stance while accommodating a spacious flybridge is a crucial element of the S Class design and I am delighted that we have created something that still looks sporty but provides more space on board than we have ever had in this size range.”

The S65’s ultimate luxury is witnessed from the onset with her teak laid Electro-hydraulic bathing platform, a garage with electro-hydraulic door to store a tender of up to 3.3m, and tender launch system with electric winch.

The cockpit features U-shaped seating, a dining area with a foldable teak table, and aft sunpad perfect for soaking up the rays. An upswinging door seamlessly connects the inside with the outside while the cockpit countertop to port adjoins to the gallery countertop.

The sense of spaciousness continues throughout with ample storage options such as an optional top-loading cool box, cupboard, and starboard. Entertain with ease thanks to a servery unit featuring a 100-litre drawer fridge and integrated bilge locker, which also doubles as an L-shaped aft-facing seat.

A teak stairway leads to the flybridge, that opens to a spacious sportbridge deck. An optional table with infill cushions transforms into a large sunbed where relaxation beckons. The sportbridge helm station features twin seats along with dual station instrumentation and controls. A large seating area with storage and teak-double-fold dining table with built in drink holders is the perfect space to enjoy meals.

Indoors, the sociable deck saloon offers a versatile environment to relax while a sofa provides storage options with crockery drawers and is accompanied by a coffee table and sideboard unit. A 55” UHD LED TV is connected to a Marine audio system that provides state-of-the-art onboard entertainment.

The Dinette features an L-shaped sofa complemented by a folding dining table and convenient cup holders. Transition to the cockpit through a stainless-steel framed sliding door, where an integrated hinging window off the galley seamlessly merges with the saloon. Within the saloon, discover a full-height fridge/freezer and twin sinks, ensuring both functionality and elegance.

The foredeck offers a truly unique cruising experience and features a U-shaped seating space. From here, walk through to a dedicated sunbathing area that accommodates twin sun beds, cushions, and storage lockers.

Below deck, the S65 sleeps eight guests across four cabins. There is an additional crew cabin towards the aft with a separate toilet and shower. The showpiece master stateroom makes full use of the generous beam, and features a large double bed with drawers below, twin bedside tables, and sizeable walk-through wardrobe.

Craftsmanship

Designed with meticulous attention to detail, the S65 is the Princess Design Studio’s crowning jewel that oozes luxury coupled with functionality. For over 60 years, Princess Yachts has designed and manufactured luxury yachts from its Plymouth headquarters. The very essence of the S Class is powerful, exhilarating, and precise, with stylish, contemporary, and seamlessly executed finishes. The S Class blends iconic design, exceptional engineering, and unrivalled craftsmanship to create an unforgettable, emotional experience.

HOROSCOPE

ASTROLOGICAL COMPABILITIES

Throughout my journey as an astrologer, I wrote a book entitled ‘Astrology: A Compatibility Guide’. The reason being was that many of my clients had an interest in how they and their partner would navigate their relationships considering their astrological chart and differences.

I have found astrology to be a wonderful tool to help people participate more effectively in their relationships regardless of their star sign. If people can learn to identify their own needs and desires, it may help to attract a compatible partnership.

Of course, each individual has their own unique astrological chart. Therefore, my approach to my book had to be simply based on the twelve sun signs with the various partner combinations. The book is only a guide for people wanting to know how compatible is their potential.

It is impossible to be too prescriptive by simply using people’s ‘Sun’ signs, given the absolute nature of our own personal defined astrological chart. However, it is important to look more deeply into our unique tapestry of planets which include the Moon, Venus and Mars, all of which are -pivotal players.

Each Sun sign carries the element of either Earth, Air, Fire or Water. It’s interesting to note that opposites do attract providing each person makes allowances and accepts their differences. Earth signs can at times feel overwhelmed by their practical nature, so they might find themselves attracted to a partner who is less grounded and more spontaneous, eg a Fire sign. The challenge is the initial spark might ignite, but is it lasting?

Life with a partner can be a challenge and it often takes two people to recognise the positive and negative aspects of their relationships. Although some signs are better suited because of a compatible combination of astrological influences, there is not right or wrong pairing.

The Moon sign represents your emotions, your moods, and your domestic needs. So to live compatibly with a fire sign such as a Leo, Aries or Sagittarius, they will need a partner who allows them freedom, is not oppressive, and is fun and spontaneous.

Similarly, a water sign such as Pisces, Cancer and Scorpio will need a secure partnership with lots of nurturing qualities and compassion.

Earth signs need order and a domestic partnership that adds practical value.

Air signs such as Gemini, Libra and Aquarius need a partnership that considers communication, intelligence and also provides mental stimulation.

Although there always is an element of luck in all meetings, it’s often important to recognise that most relationships need to appreciate “viva la difference”.

One couple that seem to be extremely compatible are Tom Hanks and Rita Wilson. Both are water signs. Tom is a Cancerian and Rita is a Scorpio.

Immediately the water element will show an affinity. The compassionate nurturing quality with depth is prevalent.

Both share a Leo Moon, and have healthy egos that don’t overshadow each other but rather showcase their individual creative talents.

Furthermore, their Mars the planet of action is in the sign of Pisces. This indicates that they are not combative and aggressive in nature but would manage their disputes in a more gentle and considerate manner.

This example highlights their affinity so mutual understanding comes very easily. This union has sustained 26 years of supposedly marital bliss!

ShellyHorton

How long have you been in the media?

I’ve been a journalist for 30 years now, I started as a crime reporter for ABC Radio in Melbourne which was fascinating.

I’m still obsessed with true crime. Then I moved to London and hosted my own entertainment TV show which shifted my focus to celebrity and lifestyle. I’ve worked with Channel Seven, ABC TV and Entertainment Tonight USA. For the past nine years I’ve been working with Channel Nine doing weekly opinion segments on Today Extra and Today Show. I write for 9Honey.com.au and I host all their digital content and TV segments. I’m also the host of Nine’s Official Married First Sight (MAFS) podcast which was a ridiculous success and featured many Gold Coast participants. On top of all of that I run my own business, ShellShocked Media, teaching media training and how to speak with impact.

How has the media changed?

When I started in the media, there were no women on TV over a size eight. Thankfully that has changed. Now the feedback I get is women relate to me because I’m not the typical stick thin blonde. I’m a size 16, curvy redhead who is full of opinions. You can’t be what you can’t see.

What’s your key to success?

I love the saying “It’s nice to be important, but it’s important to be nice.” I’ve had times where I’ve mentored younger journos and they have ended up being my boss.

What are some career highlights?

I’ve interviewed lots of celebrities like Oprah, Tom Cruise, Dwayne “The Rock” Johnson, Nicole Kidman and even the Kardashians. I’ve been to the Emmy’s, the MTV Awards and

of course the Logies. So that means I have lots of behind-thescenes stories I can only share at dinner parties.

Why did you move to the Gold Coast?

I’m originally a Queenslander. I grew up in Kingaroy, but I moved away for my career working in Melbourne, London and Sydney. Then in 2020 my Dad needed brain surgery so my husband (Darren Robinson) and I decided we needed to move home. The good news is Dad’s surgery was a success and Darren and I loved the relaxed lifestyle up here so much we bought a home in Palm Beach. I’m still flying to Sydney a lot for my emceeing work and Nine filming but the plan is to do more work here.

What are your Speak with Impact workshops?

I’ve been doing media training as a side hustle for my entire career, and it was only when I started ShellShocked Media that I realised only 1 percent of the population end up on TV but everybody needs to speak confidently. Whether you’re a small business owner needing to promote yourself on socials, a professional wanting to be heard at work, or simply someone who wants to finally nail that toast at your friend’s wedding without imagining everyone naked, I can help. I teach you how to control nerves, organise your thoughts and the power of body language. The workshop is in our own studio, so not only do I teach you how to present but you get professional content to take away with you.

Tips for confidence

Confidence can be taught. My life motto is “The 5Ps - Prior, Preparation, Prevents, Piss-Poor Performance!” Don’t wing it. Write some dot points. Practice in front of the mirror. If you’ve prepared the nerves disappear.
