How did it feel to be inducted into the Queensland Business Leaders Hall of Fame after 60 years in business?
It felt surreal. However, this recognition is not just for me; it’s a testimonial to everyone who contributed to this journey. I thank everyone from the Stefan Legends from the 60s 70s 80s 90s 2000s 2010 2020. We will never forget their contribution, and our amazing staff of today they truly are fabulous, my family and my beautiful partner Rose. Our training academy has been crucial because without a dedicated team, a business can’t thrive.
How did COVID affect your business?
COVID had a significant impact on our business. We were forced to close several salons, and it was a challenging period for everyone, especially our staff. Once restrictions eased and COVID was behind us, we began reopening new salons in different locations.
What Inspired you to start Stefan hair salons?
My inspiration came from my early experiences with my father, a hairdresser in Lebanon. When I was six, he made me an ugly wooden box and asked me to stand on it in the salon to brush clients’ hair. I ended up with so many tips, which surprised him. My father was a popular hairdresser, and I learned from him that hairdressing was like learning to talk - it was natural for me. At a young age, I knew I wanted many salons. My dad didn’t fully believe how successful I was as a hairdresser until he saw me on 60 Minutes years later.
When did you come to Australia?
I came to Australia in 1957, at 15 years old, and we settled in Adelaide. It was a beautiful day, and I felt privileged to be here. My grandfather had migrated here 120 years earlier, so in my induction speech, I expressed some guilt for not thanking him. I mentioned that without his move, we wouldn’t be here. I thanked him and hoped I’d made him proud, especially since he shared my name, Stefan. As a kid, I didn’t fully grasp the significance of moving to Australia, but now I appreciate the magnitude of leaving Lebanon so long ago.
What’s a memorable moment from the early days of building the business?
I have two. When I was eight, an American man at church was dressed like he was out of the circus in a white suit, red hanky, and red tie. He talked about his success and his seven hairdressing shops. I decided then that I wanted to have ten salons. Another was learning the importance of communication. Once, a client came into the salon wanting a hairstyle like Raquel Welch. Raquel had a perm at the time and the client’s hair was lovely and soft. So, when you want a perm with this type of hair it will only last about 4 to 6 weeks. This led to disappointment and taught me the importance of managing expectations. I realised that if someone asked for an apple but really wanted a carrot, they would not be happy with the apple, no matter how good it was. This lesson in communication significantly reduced our rate of unhappy customers by 90 percent.
What challenges did you face in the hairdressing industry?
The biggest challenge was the shortage of qualified hairdressers in the late seventies and early eighties. The law required two senior hairdressers to train apprentices, but there were no seniors available. I started training apprentices myself, leading to 150 summonses to fire them. When I took the issue to court, the magistrate found the situation absurd and advised me to keep training the apprentices, hoping it would eventually lead to change. With support of union official Harry Hauenschild, we introduced competency-based training at our academy, allowing us to train staff more efficiently and address the industry’s needs.
How does the Gold Coast resonate with you and what’s your perfect day look like?
I’ve been a Gold Coaster for the last 40 years, though I have a house in Brisbane as well. I’ve always felt a strong connection to this place. In 1969, while staying at the Hilton Hotel in Hawaii, I predicted that the Gold Coast would one day surpass it. Now, we have more buildings here than in Hawaii. My perfect day here is reminiscent of the day I first arrived from Sydney. I drove from Sydney to Brisbane, had my car serviced, and was struck by how lovely the people were. It was love at first sight, and that feeling has never faded. I feel privileged and I’m amazed the Gold Coast doesn’t have 5,000,000 people yet. My perfect day is simply enjoying a normal, uncomplicated life, as I’m not a fan of complexity.
You’re also recognised for your impeccable fashion sense, where do you draw your inspiration from?
I draw inspiration from everywhere and everyone but always choose what resonates with me. Fashion, like hairstyles, should be about what makes you happy and what suits you. I remember meeting Sylvia da Costa-Roque, a top journalist, who asked me about the latest trends. I told her that the best style is one that works for you and what you can manage, regardless of the current trends in Paris, New York, or London. Fashion is fleeting, but your personal style should be enduring. I have a special Louis Vuitton jacket for notable occasions, and for casual wear, I love Scotch and Soda. Fashion should reflect who you are and what you feel good in.
What advice do you have for aspiring entrepreneurs looking to make a mark?
My advice is simple: don’t lose your clients or your staff. Always appreciate and value both. If you focus on keeping your clients and staff happy, the rest will fall into place.
What’s next for you and the Stefan brand as you look to the future?
The Stefan brand will keep moving in the same direction it always has. We’ll continue to treat our staff and clients well and maintain fairness in all our dealings. As we continue to expand, our focus remains on upholding these values and adapting to new industry trends.

For Zoe Bennett, the Gold Coast is more than just home; it’s where her love for the outdoors and an active lifestyle was born. On weekends, you’ll often find Zoe at the HOTA Markets, relaxing at Burleigh Heads enjoying the local vibe, or indulging in her favourite sushi spot, Tokyo Sushi.
“Growing up on the Gold Coast has been pretty amazing. The beaches, the lifestyle - it’s all I’ve ever known. It’s made me love the outdoors and staying active,” she says.
Zoe is currently studying Sports Science at Bond University, but she embraces a flexible mindset and an openness to learn, adapt, and change. She believes in experiencing as much as possible to foster growth and development, embodying values that lead to living life to its fullest.
Although Abbey Knapp didn’t originate from the Gold Coast having moved here from Sydney, she now calls the Gold Coast home and describes the move as pivotal for her modelling career.
“Moving from Sydney to the Gold Coast has really been instrumental in shaping my career. Living here and starting a new school, gave me a fresh start and opened a lot of doors,” she says.
“I have been introduced to many important people, who have allowed me to be involved with local fashion runway events and photoshoots, which then expanded my network of opportunities.”
Abbey’s journey from local fashion events to walking the runway at Paris Fashion Week is a testament to these opportunities. She recalls her involvement in the inaugural Gold Coast Swim Week and the Sonia Stradiotto 35th anniversary gala show as defining moments in her career.
Madeline Braun, who also calls the Gold Coast home, echoes this sentiment of growth. She credits the region’s diverse culture and stunning surroundings for fuelling her creativity.
“My motivation stems from a profound desire to make a positive impact, both in the fashion industry and in the lives of others. Recognising the potential for change and growth drives me to keep pushing forward.”

Memorable milestones, such as her first runway show at the age of 14 and the day she and her family became official Australian citizens, are moments that have shaped her journey and deepened her connection to the place she calls home.
Nicole Peterson, a content creator and model, finds the Gold Coast’s community has been a constant source of inspiration and opportunity throughout her career.
“I truly love the Gold Coast and its community vibe. Being involved in the modelling industry and being a part of many fashion events over the last 25 years, you always see beautiful familiar faces which lead to blossoming friendships and an expanding network of opportunities,” she says.
Nicole credits the Gold Coast for giving her the space to express her authentic self while leading a healthy, happy life. Her success is intertwined with wellness, and she prioritises her health to ensure she’s at her best both personally and professionally.
“Success to me looks like a happy and healthy mind and body, so my health takes priority before my work. My day always starts with exercise, a sauna and a cold swim. I’ve always been a creature of habit so starting the day right leads to a happier and more productive me, where I can then be my best at work and home.”
Silka Kurzak, a model and mother of two, has also found the Gold Coast has played a significant role in both her professional and personal life. The mentors she’s encountered here have provided invaluable guidance, helping her navigate the various stages of her career.
“The Gold Coast has profoundly influenced my career through the remarkable individuals I’ve encountered here. Since graduating from university, I’ve been surrounded by influential figures who have become mentors at various stages of my life,” she says.
“Their guidance and the opportunities they’ve provided have taught me invaluable skills. I’m incredibly grateful for their support and the impact they’ve had on my professional journey.”
Participating in New York Fashion Week and being crowned Miss Australia in 2016 are just two of the many accomplishments Silka has achieved both professionally and personally.
“Over the years, I have evolved my goals and I’m now concentrating on my health and nutrition business alongside my fashion career. Each day, I am driven to be the best version of myself and to continually improve, with my two daughters serving as a major source of inspiration and motivation.”
For Margaux Parker, a breakfast radio announcer on Triple M Brisbane, the Gold Coast has been a constant in her life. From holidaying here as a child to bringing her own family to enjoy the region’s offerings, Margaux’s connection to the Gold Coast runs deep.
Her career highlights include interviewing Australian icons, raising significant funds for charity, and engaging with her audience in a way that feels authentic and real.
“I believe authenticity is the only way. I think people relate to me because I am not perfect, and I don’t always get the words right and am happy to have a laugh at myself,” she says.
For Margaux, success isn’t measured by financial freedom alone, but by the contentment and happiness she finds in her life surrounded by family and friends and in the places where she feels connected.
“Success to me is being content and happy which is how I feel about my life right now. I have a job that I enjoy, a husband whom I love dearly, four happy thriving children and a gorgeous tribe of family and friends who make us feel safe and supported.”
“School holidays on the GC is always a highlight along with ladies luncheons and girls weekends away. Birthday celebrations, dinners out, shopping and of course the beaches here are some of the best, not just for swimming, walking along and tanning, but also for boating jet skiing and some fun water play.”
It’s evident these women and their journeys are intertwined with the essence of the Gold Coast. Zoe’s love for the outdoors, Abbey’s breakthrough in the modelling world, Madeline’s commitment to growth, Nicole’s creative expression, Silka’s dedication to personal and professional balance, and Margaux’s authentic connection to her audience, all reflect the vibrant community that has shaped them.

Favourite teacher and why? Picking just one is tough, so here are a few:
Primary School: Mrs Christine Zavros was my Year 1 teacher. I repeated the year and had her for two years, so we became very close. She and another of my teachers from St Vincent’s Primary School, Mrs Norman, later taught my son, Harry!
Middle School: Mrs Wendy Harris, my Art teacher and next-door neighbour.
Senior School: Ms Suzanne O’Connor, my English teacher, who discovered my dyslexia and helped me overcome it.
These incredible women profoundly impacted my life and continue to inspire me.
Best memory at school? Living next to St Vincent’s meant my golden retriever, Arthur, would often visit for snacks and sometimes sit beside my desk in class. These are some of my fondest memories.
Academic or sporting achievement? I will always remember beating one of Papua New Guinea’s top swimmers, Ryan Pini, in an underwater race at our Port Moresby swimming club. Holding my breath for 25 meters, I outlasted a 28-time Pacific Games and Commonwealth gold medallist!
What did you want to be when you grew up? My dreams changed a lot: first, I wanted to be a hairdresser, then a nurse, then an artist, interior designer, or fashion designer. With some guidance from my mother, I ended up studying for a Bachelor of Commerce.
Is your life now what you expected it to be? If so how? My life is quite different from what I expected. Studying Economics, Banking, and Finance was a surprise, but I’m grateful for where life has taken me. I certainly never expected to spend 15 years working in public service. Despite health challenges, I have always embraced life’s twists and turns. As the owner and founder of ‘Life is a Party,’ I can combine what I have learnt over my career and continue to build a brand that I am proud of, curating items that make women feel elegant and beautiful. Can you tell us about your outfit inspiration?
As much as I try to resist, I inevitably dress for the most part in white and cream and tonight was no different. This ivory ostrich feather jacket keeps me warm and these great wide leg pants have given me so much wear this season. I was going to wear a cream knit but that felt a bit boring so instead I went with this blush furry knit - the texture is fun and it has a great structured shoulder.
Who did your hair and makeup? Me.
Who are your favourite style icons and why?
I love Pandora Sykes (British author and journalist) - I don’t necessarily want to dress exactly like her but she always looks so fabulous and ‘her’ without following trends. She has a knack for putting things together both in fashion and in the interiors of her beautiful home.
I also love Lauren Hutton’s timeless beauty and individual sense of style and that she’s never followed rules.
Who are your 2 favourite designers and why?
I am so into Sarah Jane Clarke’s brand SJC Made for Travel. She has a great eye for silhouettes and colours and I find her pieces so wearable and versatile; everything I’ve ever bought from her I still mix and match today. I also love Rosie Assoulinagain great silhouettes and use of colour, her clothes have spunk but also bit of a European sensibility.
Tell us about your own style and what you like to wear?
I usually wear clean block colours, but as I am quite short I’m big on the cut and shape of garments as the proportions are important. I guess I dress quite simple and classic but with a pop of something unexpected.
Has your style changed over the years?
I think over time it has just evolved as I’ve become clearer on what suits me and what I feel expresses me best. I enjoy clothes, they’re fun and you can be creative getting dressed each day.

I’ve spent a decade having my hair and makeup done professionally, so I’ve learnt a few tricks, but I love crafting a “look”, it’s my form of artwork!

I adore Margot Robbie and her iterations of theme dressing for different events/roles and at the moment I’m taking huge inspiration from Sarah Abo - host of the Today Show. She wears Aussie labels, especially strong suiting with ease!

I’ll always love Scanlan Theodore! The corporate girl in me has poured over every new release of theirs for a decade! For a more relaxed look - I’m obsessing over Henne. I live in denim - it will always be my uniform, so buying elevated basics which can mix and match, plus last for years and years is my ideal way to shop!
Tell us about your own style and what you like to wear?
I do a lot of “event dressing” because of my work, which means I’ll style a really specific look for a specific event. This is my creative outlet. But I like the element of surprise so I try to push myself and mix things up rather than falling into an expected style. But I would describe my fashion as timeless classics. I live in denim! It’s the number one staple in my wardrobe.
Has your style changed over the years?
I think my style has remained fairly consistent but I know when I was pregnant and then breastfeeding I found clothing options limited and lost my sense of fashion. There’s a great Brisbane brand called Apero Label who now offer the most stylish ‘mum first’ fashion. It helped me regain my confidence after my second baby.

My mum always said to me when I was younger “you can never be overdressed” and that mantra has served me well for 20 years!

It’s remarkable how life can pivot from one split second decision. It serves as a reminder that you can choose your own path in life.
When our son Brandon couldn’t attend a Robert Kiyosaki event in Brisbane, my husband Bill and I went in his place. While there, we registered for a session with global entrepreneur and investor JT Foxx to further refine our branding and marketing skills for our business.
Since then, I’ve been on a rollercoaster ride. Not only has my business grown exponentially, but the excitement in my life has also skyrocketed beyond belief. Who would have thought that a girl from a sheep property, at home in a shearing shed, would end up living a life mingling with movie stars and celebrities?
I’ve interviewed Brooke Shields and Vince Vaughn on stage in L.A., spent time with John McEnroe at Wimbledon, and was invited to his after-party where he performed with his band. I also spent three days with the cast and crew of Yellowstone in Montana, and
before we left, Cole Hauser (who plays the character Rip) invited me and my son Andrew for drinks.
This brings me to one of the most magical evenings of my life - an invitation from JT Foxx to the home of Veronica and Andrea Bocelli in Forte dei Marmi, Tuscany. We were privileged to attend Andrea’s ‘The Fab Thirties’ charity concert, celebrating 30 years of his international career.
The Andrea Bocelli Foundation, established by the Bocelli family in 2011, is dedicated to empowering individuals and communities facing poverty, illiteracy, and the challenges of disease and social exclusion. The Foundation’s mission is to promote and support national and international projects that help people overcome these barriers and realise their full potential.
And oh, my goodness, it was beyond belief. The dress code was 1930s, with dancers in elegant black cabaret gowns lining the entrance. We were served cocktails in the garden as the
sun set. I was excited to meet Dee and Tommy Hilfiger. Dee, who has her own clothing line, was very interested in my experiences on a shopping channel. Tommy and I shared a laugh about how I was supposed to have lunch with him in Miami last December with JT Foxx, but it coincided with my son’s wedding. He understood my dilemma and joked, ‘tough choice.’
We were then ushered into the most glamorous marquee, featuring a starencrusted ceiling, for a sit-down dinner with many celebrities. Shania Twain entertained, and among the guests were the cast of Bold & Beautiful and Sofia Vergara, just to name a few.
Andrea Bocelli, despite having performed at three concerts earlier that week, was absolutely incredible.

Matteo Bocelli and Shania Twain also joined Andrea on stage. Matteo had everyone up and dancing, and the marquee was absolutely rocking. We didn’t say our goodbyes until well into the early hours of the morning - it was certainly not a night to keep an eye on the time.
The next day, Lizzie Smithers, Sandy Shields Bell, and I drove up into the Tuscan hills to accept a luncheon invitation from the owner of a six-star hotel. The venue was a medieval castle, once owned by the Medici family in the 13th century, complete with an amazing spa, two golf courses, and more. We couldn’t help but wonder who would stay in such a remote location... and then we discovered that the Kardashians had just checked out while we were there.
As I reflect on these extraordinary experiences, I’m reminded of the power of saying ‘yes’ to opportunities and embracing the unknown. From a country sheep property to mingling with global icons, life has shown me that our paths are shaped by the choices we make and the risks we take.

Trying to raise a baby is a challenge at the best of times. When you throw being an Olympic athlete into the mix with rigorous training schedules and strict meal plans, it’s almost impossible to imagine how Bellamy’s Organic Ambassadors, Genevieve Gregson and Alyce Wood, manage all their competing priorities. Both Paris 2024 Olympians shared with us how they make being dedicated mothers and professional athletes work for them, and their top tips for busy parents to make time for their own health and fitness after having a newborn.
GENEVIEVE GREGSON STARS
Can you tell us about your journey into motherhood and how it intersected with your athletic career? I always wanted to be as active as possible when I decided to fall pregnant, however, my circumstance was a little different than I had always imagined. When I ruptured my Achilles tendon at the 2021 Tokyo Olympics, I found a window in my normally vigorous schedule to break and breathe and start a family. I did a lot of different forms of exercise while pregnant, but running wasn’t really an option during this phase due to my injury. In saying that, growing my baby boy, Archer, who was born 15th June 2022, while rehabbing a very difficult injury went hand in hand for me because I had always wanted to be a mother and it took away the anxiety and stress of being sidelined from what I love to do.
What was your journey back into elite-level form? This was a long road but a seamless one. Although becoming a mum had its challenges, it was also such an exciting journey for me. Everything was so new, so I was able to take the pressure and expectation away from my performances and let my body take the time it needed to return. I used my training as a way to energise myself when I had a rough night from not much sleep. Running for me is a happy place so rather than feeling like it was an extra load on top of being a new mum, it was another fun challenge to watch my body progress and regain strength and endurance over time.
Did you encounter any unique challenges as a mother returning to competition? The scariest part of the whole return was worrying that I may never get back. Although I say I enjoy a challenge, it is obviously normal to have a lot of doubt creep in at times, especially when you are functioning on less sleep and navigating parenthood for the first time.
I worried my sponsors would walk away, or that I wouldn’t be able to compete for a living if I didn’t get back to where I left off. I had to learn to trust that I would get there, but I needed to get there my own way and be flexible with how that journey could look. I listened to my body and made hard decisions to pull back when I knew it was necessary.
How has your experience as a mother influenced your approach to training and competition? I think I am mentally stronger in a way because I have a whole new perspective when it comes to my running. I know when to pull back now, which I never used to do, and I know to not get too obsessed with performance. There is so much more to my life than my results now, and I love that I can focus on my baby boy if I am ever disappointed in a race result.
What is your stance on the sporting industry and their support of professional athlete mothers? I believe the sporting industry is taking steps in the right direction. I do believe there are improvements to be made, mainly just support for mothers that have returned or are returning to sport professionally. There is so much more to consider now as I prepared for the Olympics with travel and help with my baby that an individual would never have to worry about. The best part though, is there are so many mums out there doing it and if they keep paving the way and shining light on where and what can be better, there will be no limit to what a mother can do with her sporting career and family.
What advice can you give to working mums of young children when it comes to the internal tug of warcompeting priorities between career and family? It is so so hard and I still find myself having that inner battle with what to do when it comes to having more children. I believe you can have both, it just comes down to your support system. Do you have a village of people that can help support your ambitions of being a mum and career woman? It’s okay to ask for help when you find you have taken on more than you should. I really lean on my husband and parents when I can and they are just as onboard with my dreams and goals as I am.
Can you share any specific strategies or initiatives you have for time poor parents to adopt healthier habits?
Meal prep is a must. I cannot think on the spot when it comes to meals and I get too tired and lazy to prepare something when my body needs a big nutritious meal at the end of the day. On a weekend I think of food I really need for everyday meals and snacks, and pre plan dinners ahead of time. My mother in law and grandma also are big on bulk cooking then freezing, so that’s another winner. With regards to fitness, try to have a schedule with your exercise that can be from the door. Mothers are usually time poor with a million other priorities, so being able to step out the door and get a quick and efficient run or walk in definitely gives you the best bang for your buck.

Can you tell us about your journey into motherhood and how it intersected with your athletic career? Starting a family was incredibly important to my husband and I post the Tokyo Olympics, but I knew I wasn’t ready to hang up the paddle. I was originally quite worried about the feasibility of this and whether it was worth the sacrifice, but ultimately we decided that bringing Florence into a world surrounded by my teammates who chase their dreams every day was the right decision.
Did you maintain some form of training throughout your pregnancy? I trained with our National team in the Kayak until 33 weeks (when I couldn’t physically sit in the boat any longer) and then continued on dry land until the morning I went into labor. I was incredibly lucky to have such a supportive coaching team who worked right throughout my pregnancy to ensure Florence and I were always safe whilst training at an elite level. Florence was born 23rd June 2022. Co-incidentally, she was born on Olympic Day.
What was your journey back into elite-level form? When I finished at the Tokyo Olympics there was a feeling inside of me knowing that if I retired then, I would regret it. I knew I wasn’t done. Since then, the dream to go to my third Olympic Games with Florence cheering me on has been my main point of motivation.
Did you encounter any unique challenges as a mother returning to competition? Balancing the expectations of being a new Mum and an Athlete has been challenging. On one hand, there are so many social pressures on new mums to feed, change, bathe, nurse and be incredibly present in every moment of their baby’s life. Then on the other hand, I am on a strict timeline in the lead up to Paris, which requires me to be selfish at times and lean heavily on my support network. The guilt pulling me both ways has been real, but it’s also taught me how to prioritise my time and energy.
During your journey back into elite-level form, have there been instances where you have been pleasantly surprised? When I came back, I felt very strongly about never wanting to race in a K1 (single boat) internationally ever again. I think I had lost the confidence I used to have by myself and wanted to pursue a different route. But at 8 months postpartum we had our National team selection trials (Feb 2023), and I won the K1. This result is something I never thought was possible and made me believe in myself again after so many months of doubting my abilities.
How has your experience as a mother influenced your approach to training and competition? Kids teach you that you don’t need to sweat the small stuff. When they’re learning to walk they fall over a thousand times, but get up a thousand more, always with a smile on their face and so much determination. This is now how I approach my training. It’s unrealistic to think I am going to produce PB’s every day, so rather than get caught up in negative energy when I have a bad session, I address the issue and get up and go again.
What is your stance on the sporting industry and their support of professional athlete mothers? Whilst there’s been a groundswell of support behind Mum-Athletes in recent years, it’s still not a ‘normal’ route. As more women take this path, many sporting organisations are now introducing policies which is amazing to see, but ensuring these are fit for purpose will take time. In my opinion though, the biggest gap is within the actual physicality
of the pregnancy and post-partum periods as there is still so much unknown about how much we can exert ourselves. There are currently a number of dedicated studies underway that specifically look at elite athletes, rather than the general population, which is incredibly exciting. These will help eliminate stigma and create a less stressful environment for mums and their support teams when looking at training prescriptions.
What advice can you give to working mums of young children when it comes to the internal tug of war - competing priorities between career and family? Everyone’s journey is so unique, so don’t try and model yourself off someone else’s priorities and expectations. My best advice is to give yourself permission to have a laundry full of dirty clothes, or a child wearing odd socks to daycare. Be flexible, laugh at yourself sometimes and enjoy the little moments.
Can you share any specific strategies or initiatives you have for time poor parents to adopt healthier habits? You’re more likely to do something if it’s convenient to do it. This makes it easy to stick to a habit. Even as an athlete I eat very quick and easy meals so I can spend less time in the kitchen and more time playing with Florence.
LOBSTER RISOTTO WITH ZUCCHINI FLOWERS
Tipo 00 The Pasta Cookbook
SERVES 4
INGREDIENTS
• 1 live or cooked lobster, about 600–800g
• ½ brown onion, finely diced
• 3 tablespoons olive oil
• 320g Carnaroli rice
• 80ml dry white wine
• 60g cold unsalted butter, diced
• 60g finely grated parmesan
• 8 female zucchini (courgette) flowers, with baby zucchini attached
• Finely grated zest of 1 lemon
• Squeeze of lemon juice
• Sea salt
YELLOW TOMATO BISQUE
• 100g unsalted butter
• 1 teaspoon fennel seeds
• 500g yellow tomatoes, grated on a box grater
• 1.5 litres (6 cups) fish stock
• 1 sprig of lemon thyme
1 If you’re using a live lobster, chill it in the freezer for 1 hour to ‘put it to sleep’. Meanwhile, bring a large saucepan of well-salted water to the boil. Take the lobster out of the freezer, lay it on a chopping board and insert a knife between the eyes to kill it, cutting right down through the head. Put the lobster into the boiling water and cook for 7–8 minutes, then take it out and let it cool.
2 To prepare the lobster, twist and pull the lobster head away from the tail. With kitchen scissors, cut down either side of the belly shell and carefully remove the tail meat from the shell. Keep the lobster meat in the fridge and reserve the shell (including the head) for the bisque.
3 For the bisque, take the lobster shell and separate the top part of the head from the bottom. Wash off all the impurities under cold water, then use a heavy knife to break the shell into smaller pieces. Melt the butter in a saucepan over low heat and saute the lobster shells and fennel seeds for about 10 minutes. Add the tomatoes, stock and lemon thyme and bring to a simmer, then cover with a lid and cook gently for 45 minutes. Strain the bisque through a colander into a clean container, using the back of a ladle or a big wooden spoon to press down on the shells and extract all the juices. Let it cool for 10 minutes and blend with a stick blender until smooth. Pass through a sieve again, then set aside – you’ll need about 1.5 litres (6 cups) of bisque.
4 To make the risotto, bring 1 litre (4 cups) of the bisque to the boil and keep warm. Place a wide pan over medium-low heat and saute the onion in the olive oil until translucent. Add the rice and lightly toast for 2 minutes, then season with a pinch of salt. Pour in the white wine and let it evaporate completely. Continue to cook the rice, adding the bisque one ladle at a time and stirring every couple of minutes.
5 When almost all of the bisque has been absorbed, about 15 minutes in, the rice should be 90 percent cooked. If not, add some more bisque or water and cook it for a little longer – you want the rice to have a good bite without being crunchy. Now proceed with the ‘mantecatura’ (to make the risotto creamy), stirring in the cold butter one piece at a time. Once that’s done, add the parmesan a handful at a time and keep stirring until the risotto is creamy and smooth. If it seems dry, add a little more stock or water. Thinly slice the baby zucchini, saving the flowers for garnish, and stir through the risotto, then add the lemon zest and lemon juice and check for seasoning. Cut the lobster in half lengthwise and remove the dark digestive tract. Cut the lobster meat into large chunks and gently warm in the remaining 500 ml (2 cups) of the bisque, along with the zucchini flowers. Serve the risotto on warmed plates, topped with the lobster and zucchini flowers.

SERVES 8 - 10
INGREDIENTS
• 180g dark chocolate chips
• 200g unsalted butter
• 4 eggs
• 250g brown sugar
• 350g self-raising flour, sifted
• 3 tablespoons Dutch cocoa powder, sifted, mixed with 80ml hot water (or espresso for adults)
• 300ml buttermilk
MASCARPONE GANACHE
• 200ml thickened cream
• 300g milk chocolate chips
• 100g dark chocolate chips
• 300g mascarpone
1 Preheat your oven to 160°C (140°C fan-forced). Grease and line a 22cm round cake tin.
2 Melt the chocolate and butter in a heatproof bowl set over a saucepan of simmering water (make sure the base of the bowl doesn’t touch the water). Set aside.
3 Whisk the eggs and sugar until pale and fluffy. Add the flour, cocoa powder, buttermilk and melted chocolate mixture and mix until well combined.
4 Pour the batter into the prepared tin and bake for 40–45 minutes until a skewer inserted in the centre of the cake comes out clean. If it’s still wobbly in the middle, give it another few minutes, but keep an eye on it so that it doesn’t over bake and become dry.
5 Cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely. Cut the cake in half horizontally using a serrated knife (so you have two discs of the same size).
6 To make the mascarpone ganache, pour the cream into a saucepan and bring to a gentle simmer over low heat.
7 Turn off the heat and add the chocolate chips, allowing the residual heat to melt them as you stir with a metal spoon. Cool, then add the mascarpone and mix through.
8 To assemble, place the cake base on a platter and spread with one-third of the ganache. Top with the second half of the cake, then cover the top and sides with the remaining ganache. If you are feeling creative, this is the time to get out your piping bag.

BAKED PASTA SHELLS STUFFED WITH ALMOND RICOTTA AND ROASTED TOMATOES
A Plant-Based Farmhouse
SERVES 4 -6
INGREDIENTS
• 700g roasted tomato passata
• 300ml water
• 200g conchiglioni pasta shells
• 250g Almond Ricotta
• 2g pink peppercorns
• 3g salt, to taste
• 20ml extra virgin olive oil
1 Preheat your oven to 200°C.
2 Have a large baking dish at the ready — ideally one measuring about 30cm x 24cm, and about 8cm deep.
3 Mix the tomato passata and water together in a bowl, then pour half the liquid into the baking dish.
4 Using a teaspoon, fill the uncooked pasta shells with the almond ricotta. Arrange the filled shells in the baking dish, facing upwards, to keep the ricotta in place, and making sure the pasta shells fit snugly.
5 Gently pour the remaining tomato passata mixture in and around the pasta shells. Do this as slowly as you can, to avoid disrupting the ricotta too much. The liquid should just cover the tops of the filled shells.
6 Sprinkle the pink peppercorns and salt over the top and cover the baking dish with foil. Turn the oven down to 190°C and bake the shells for 1 hour.
7 Carefully remove the foil and bake for a further 10–15 minutes, or until the shells are starting to colour along their edges. Remove from the oven and allow to sit for 10 minutes before serving, giving time for the pasta to absorb any residual liquid. The tomato sauce should be lovely and thick around the cooked shells.
8 Drizzle the olive oil over the cooked shells and serve. I love having a big salad of fresh rocket leaves on the side.

Bronte Langbroek
What part of the Gold Coast did you grow up and what school did you go to?
I grew up in Clear Island Waters and am lucky enough that my parents still live in my childhood house so coming back to that area always feels so homely and comfortable. I went to St Vincent’s Primary School which was just around the corner from our place and then Somerset College in Mudgeeraba for high school – my real claim to fame is having been there at the same time as Margot Robbie, who also lived at the end of our street.
Being a Gold Coast native, what are some of your favourite local spots?
For the breakfast, I’d recommend Goji Café in Clear Island Waters; it has delicious food, and the staff are always super friendly. No Name Lane in Broadbeach has my favourite coffee on the Gold Coast. We often end up spending some point of our weekends at Capri on Via Roma which has so many different offerings. A real hidden gem for dinner is Matteo’s Woodfired Pizza – the best Italian food and wine on the Coast – you won’t be disappointed.
What was it like growing up with MP John-Paul Langbroek as your father, did you ever want to follow in his political footsteps?
Before he was an MP, Dad was a dentist which are the more prominent memories from my early childhood. He was home, every night on the dot at 6pm and my siblings and I would run
out of the house to greet him as he drove into the garage. He was, and is, the ultimate provider; whatever he can do to show he cares, he will. When he was elected in 2004, I didn’t totally understand what that meant but knew he had a big, important job to do - even if it did mean he stopped coming home at 6pm every night. I’m so proud of him and love seeing him use his caretaker skills to strive for change in his community. As I’ve always said after telling people my dad is a politician, “He’s one of the good ones”. The impact of his career change probably didn’t hit me until he because Leader of the Opposition in 2009. That was a huge adjustment and definitely steered me clear from wanting to venture in the world of politics. Not that there ever was much of a desire… there was another Langbroek I was already looking to emulate.
Your aunt Kate Langbroek is a successful comedian and media personality. Has her career influenced or inspired your own career?
Absolutely; I am so lucky that the person that genuinely inspires me in the industry just happens to be part of my family and is only a text away when I need advice or guidance. Growing up, I didn’t have a grasp of what it meant to have a career in radio like Kate did but I knew I wanted to be part of the entertainment industry in some way. When we would go visit her in Melbourne and she’d take us behind the scenes of Nova 100 or backstage at Channel 10 for tapings of The Panel, I was charmed by the glitz and glamour and saw how much she enjoyed it so I figured it would be a pretty fantastic industry to work in, if I could be so lucky. I am constantly inspired by Kate’s ability to stay so successful in an industry that can be pretty cut throat and can only hope I can enjoy a tenth of the longstanding career she’s still blossoming in.
How does it feel to be the voice that Gold Coast residents wake up to every morning?
It is such an honour; 6 months in and it still feels as special today as it did on the first day. I care so deeply about helping my community start their day in a positive way because I know firsthand the impact a breakfast radio show can have on your morning. Plus, the station itself90.9 Sea FM – has such an important place in my heart. This is the radio station that shaped all my morning drives to school, that I entered competitions for; that I bought a clock radio to have beside my bed so I could listen to it as I slept. It has an important history and legacy in our city which I only want to continue and take very seriously in upholding.
What has been the most surprising or memorable moment on-air since you started at Sea FM?
Definitely the stamina of our contestants who participated in our competition ‘Kiss for the Cash’. $10,000 was on offer for whichever couple could kiss for the longest time. We held the event on top of the Q1 the timer started during our show around 7am. Naively we thought it would all be wrapped up by 9am…6 hours later and there were 2 couples left with no signs of backing down. It was a good reminder that despite the premise of our show mainly being about having fun or being silly, we have a real opportunity to help change people’s lives; the notion of a $10,000 prize is thrown around a lot in radio but for the first time I really saw how huge an impact it would have on each of our contestants. All’s well that ends well – the final 2 couples mutually decided to split it between them.
Considering your early starts on breakfast radio, how do you balance your personal and professional life?
Honestly, it’s taken quite a few years to get into a healthy routine working in breakfast radio. I’ve found that the thing I need to do to be the best version of myself, both personally and professionally, is to stay as active and healthy as possible during the work week. I work out twice a week with a fantastic personal trainer, I do reformer Pilates a couple of times a week with my mum (who bribes me with coffee afterwards to make me come), plus this year I’ve taken up running and have just completed my first half marathon (ouch). So when I feel my best physically, I find I have a better grasp of dealing with work and life. I lead a pretty quiet homelife during the week because sleep and going to bed early is very important, so I often save any fun activities for the weekend. This job sometimes means saying no to some pretty fun mid-week opportunities but I’m ok with that because I have my dream job to wake up at 4am for.
What do you think sets the Gold Coast apart from other cities in Australia?
Having moved around the country A LOT for my job, I can honestly say there is nowhere like the Gold Coast. Everywhere I’ve lived, people have said their dream is to live on the Gold Coast and it isn’t hard to see why. Obviously we have our iconic coastline and all the other aspects that make us a tourist haven but it’s the little things about the GC that I love; we don’t take ourselves too seriously, we’re a world-class city with a small-town welcoming mentality; no one and nowhere is ever too busy or too important. Everyone feels lucky and grateful to live here, we cherish our place in the world and we’re so proud of it.
What advice would you give to young Gold Coasters aspiring to enter the media industry?
Say yes to every opportunity, even if you think it is going to derail your path. You never know what job might lead to what interaction. When I started in radio, my end goal was never to be an announcer on a breakfast show; it was just to work in radio because I loved the industry so much. I was an intern, a receptionist, a producer, a sales coordinator, a promotions manager all before I was on a breakfast show. But each of those roles introduced me to different people who connected me to the next gig. So remember to build golden bridges with all of your contacts because the media industry is small and people will remember you. And stay humble and hungry; the industry rewards genuineness so don’t be afraid to be yourself and work hard!
What does a perfect day off look like for Bronte Langbroek on the Gold Coast?
It would start with a sleep in and a coffee before either hitting the pavement and smashing out a run or a reformer Pilates class. Then another coffee and brunch before doing some damage at Pacific Fair or TK Maxx. Home in the afternoon for a nap and then either staying home, getting takeaway and watching the footy or dressing up for cocktails and dinner before seeing a show. Then back in bed before 11pm because in case you missed it, I love sleep.

At the helm of this culinary oasis is Chef De Cuisine, Ryan Locke, whose philosophy of simplicity and respect for locally sourced ingredients shapes the essence of the menu. Having honed his craft at prestigious establishments across New Zealand and Australia, including stints at Vue De Monde and Qualia Resort, Locke brings a refined creativity to the table.
“We start with what’s local and fresh, building our menu around native Australian products, ensuring we support local farmers and deliver vibrant flavours,” Locke says. The open kitchen adds a theatrical touch, allowing guests to witness the artistry behind their meals while the menu is a celebration of Australia’s bountiful produce, with seasonal awareness and a focus on local suppliers.
“By focusing first on local ingredients, the menu practically builds itself. It’s all about respecting the produce and letting the natural flavours shine through.
“Supporting Australian farmers and using local ingredients is crucial to our ethos here. We focus on Australian ingredients because we believe in the quality and want to respect the hard work of our producers. That’s why we feature Australian cheddar instead of imported cheeses like
Parmesan- it’s not only about showcasing what’s local but also about using what truly tastes better.”
Our culinary journey commenced with an array of standout dishes, personally curated by Chef Locke. The Airlie Beach Tiger Prawns were a particular highlight, delicately paired with native succulents, lemon myrtle, and a zesty finger lime and lemon chive butter. The Yellowfin Kingfish, dressed in yuzu and shallot, was a flavour sensation. Complementing these was the freshly baked bread with house-made herb butter and a macadamia dip, enriched with thyme and a crunchy macadamia crumble.
Adding to the experience were Locke’s personal favourites such as the oxheart tomato dish with goat’s cheese mousse and a warm pepper dressing, sprinkled with black olive powder—a simple yet profound nod to the garden-totable concept he champions.
Next, we savoured a series of refined main courses. The Elgin Farm chicken breast came with caramelised onions, charred shallot, roasted onion purée, and a red wine jus. The Tasmanian salmon featured crispy skin and was enhanced by a sorrel butter sauce, broccolini, and goat cheese mousse. Completing the selection were wild mushrooms with soy caramel, onion garlic crumble, and signature chips, showcasing an exquisite balance of flavours and textures.
For dessert, we enjoyed a decadent trio. The Dark Chocolate Fondant, with its gooey centre, was smothered in rich salted caramel sauce, caramel gelato, and chocolate crumble. The Berry and Meringue Cheesecake offered a delightful tang and creamy texture. Completing the selection, the caramelised pineapple accompanied by coconut gelato and white chocolate powder which provided a refreshing finish to our meal.
The 1.9kg Stockyard Tomahawk stands out as a signature and highly popular dish at Garden Kitchen & Bar. Renowned for being impeccably cooked, it’s served with roasted truss tomatoes, red wine jus, and signature fries. The Importance of Body Corporate Levies: Legal Obligations and Consequences
Residents within strata titled properties, are known as a collective entity as the Body Corporate. The Body Corporate and Community Management Act 1997 (BCCM Act) provides for the establishment, administration and termination of community title schemes. The BCCM Act sets out the legislative framework for community titles schemes, addressing a wide range of matters including governance and decision-making, meeting requirements, financial and property management, insurance and by-laws.
The BCCM Act ensures the smooth functioning of the maintenance and management of the Body Corporate scheme.
A crucial aspect of the Body Corporate schemes’ functionality and the life blood of the Body Corporate is the payment of Body Corporate levies (lot owner contributions) which is a financial obligation that every lot owner must fulfill.
Understanding Body Corporate Levies
1. What are Body Corporate Levies?
Body corporate levies are regular contributions made by individual lot owners to cover various expenses related to the common property and shared facilities.
These expenses include maintenance, repairs, insurance, administrative costs, and the establishment of a sinking fund for future capital works.
2. How Are Levies Determined?
Each year, during the annual general meeting (AGM), the Body Corporate agrees on administrative and sinking fund budgets.
Based on these budgets, the amount that each lot owner must pay is calculated.
The number of instalments and due dates are also decided during the AGM.
3. Special Contributions and Interim Contributions
Special contributions may be levied to cover unexpected costs not included in the budget.
For instance, if a major repair project exceeds the allocated sinking fund amount, a special contribution can be collected from owners.
Interim contributions help bridge financial shortfalls until new levies are set for the next financial year.
4. Consequences of Non-Payment
A failure to pay your Body Corporate levies is a breach of your legal and statutory obligations as an owner within the Body Corporate.
The payment of Body Corporate levies is the ‘lifeblood’ of the Body Corporate and it functionary as a community title scheme. The body corporate relies on these funds to maintain common property and provide essential services to the Body Corporate.
Levy Recovery
If a contribution remains unpaid after the due date, the Body Corporate can initiate debt recovery action.
At OMB Solicitors, we have a designated Body Corporate levy recovery team to ensure that Bodies Corporate can defer to expert assistance in recovery outstanding levies and to ensure the Body Corporate can comply with it obligations.
The process is as follows:
1. A Final Letter of Demand is addressed to the lot owner. If the owner simply pays the amount in full, then there will be no further action.
2. If no payment is made by the lot owner, then a Claim and Statement of Claim is filed within the Magistrates Court seeking recovery of the unpaid levies, interest and all reasonably incurred recovery costs.
The Body Corporate is empowered under the BCCM Act to recover all ‘reasonably incurred recovery costs in recovering the unpaid levies’. Thus, the costs the Body Corporate incurs as a result of the recovery action (inclusive of legal costs) are paid by the lot owner.
3. Once the Claim is filed, this is personally served on the owner or in the case of a company this is served on the registered office.
4. The defaulting lot owner has a period of 28 days to pay the debt or the Body Corporate is at liberty to apply for default judgment. Against, the costs are charged are recoverable from the Lot Owner.

How long have you been a local of GC for?
I’ve been a local on the Gold Coast since 2018. We took a family holiday here in the winter of 2018 and loved it so much that we went home, packed up our life, and officially moved here six weeks later. It was a whirlwind, but one of the best decisions we’ve made for our family.
What inspired you to start Idea Athletic?
Idea Athletic was born from my personal desire to buy activewear that prevents sweat marks from showing through to the outside fabric.
What I didn’t realise was that this type of activewear actually did not exist! It then became obvious to me that there was a huge gap in the market for solution-focused gear. I began my journey to create it, initially to solve my own need and, hopefully, the need of other women as well.
How did you find this niche idea to help women everywhere?
The Idea Athletic solution helps by allowing women to feel more comfortable and confident during their workouts.
Prior to moving to the Gold Coast, I spent a decade as a fitness instructor and always heard so many complaints from women about not wearing certain coloured activewear because they thought it would show too much sweat. Many would say to me that they felt distracted during their workouts, wondering if the sweat marks around their crotch were really obvious, and felt embarrassed.
While sweat is healthy and there is no better feeling than a solid, sweaty workout, by offering women a functional solution in their activewear, my aim is to allow women to focus on the workout without worrying about ‘those’ sweat marks.
How do you keep your brand relevant in a constantly changing landscape, particularly with fast fashion industries? First and foremost, we are not a fast fashion brand. Idea Athletic is a solution-focused brand designed by women for women.
When it comes to staying relevant, I don’t really think about it too much. My focus is on truly understanding who my customer is and creating products that she wants to buy.
I believe that you can put yourself into a spin if you are trying to keep up with trends, whether on social media or elsewhere. My aim from the very beginning was to solve a common issue that many women (including myself) encounter when working out. I’ve always stayed true to that focus and the solution I created, which has helped me build a strong foundation of loyal customers.
In our fast-paced world where the goalposts are always moving, staying true to the brand and the solution we offer has helped us carve our own path and remain relevant to the people that matter most—our amazing customers.
What did you learn from taking some time to do some research and development?
How long have we got to list these? Hahaha. In all honesty, so much was learnt during the development process of creating our unique sweatproof feature, invisiSweat. One of the biggest lessons was understanding the importance of pivoting and not focusing on just one outcome. I had to pivot in many ways to achieve the desired outcome for my business and the concept of invisiSweat. If I had only focused on one outcome for bringing the idea to life, it might not exist today because so much didn’t go according to plan. By understanding and accepting the need for continual pivots, I was able to achieve what I set out to do. Though I won’t lie, it was highly frustrating at times, especially when I thought I had it all figured out.
What advice would you give yourself if you had to start all over again?
As clichéd as it sounds, I would tell myself to enjoy the journey. During the two years of research and development to create invisiSweat, I was so focused on the solution I wanted to create that I’m not sure I ever stopped to appreciate how far I’d come. If I could do it all over again, I’d remind myself to enjoy the process because this unique experience will never happen again.

BASQ HOUSE OPENS ITS DOORS IN BYRON BAY

Nestled in the heart of Byron Bay on Bundjalung Country, Basq House, a chic 32-room boutique hotel, has recently opened its doors on Fletcher Lane. This prime location places guests right in the heart of Byron Bay’s vibrant scene.
Distinctly eclectic, this hideaway is a landing pad for those seeking privacy and peacefulness. A hotel from where you can explore the bucolic hinterland, vibrant restaurant scene and renowned beach-culture.
General Manager Laurent Boutonne personally welcomed us when we arrived, offering plenty of charm and wit as he proceeded to take us through this stunning property.
Melbourne-based owners, Matt Walsh and Shane Wilkinson, envisioned the property as a cozy escape, similar to staying at a best friend’s house. To bring their vision to life, they enlisted Matt Dalby, the creative director and founder of StudioFAB, to design Basq House.
Complementing Dalby’s architectural vision, local interior designer Léo Terrando styled the interiors, infusing them with a distinct sense of place and comfort that echoes the relaxed Byron Bay vibe.
Inspired by the grandeur of Moroccan riads, the design pays homage to tradition, with many rooms overlooking the central temperature-controlled magnesium pool, offering a contemporary sanctuary for guests.
Much like a house, and with a distinct indoor-outdoor aesthetic, the reception area - featuring artwork from Byron Bay artist Damian Bisogni, weaved pendant lights from Tigmi Trading, ceramics and objets d’art - doubles as a bar where guests can sit back and relax with a Coconut Margarita or Negroni in hand.
The generous, speakeasy-style lounge room, which flows through to the outdoors, features pieces from Bodhi Living and bespoke rugs from local Byron brand Pampa, fusing the interiors with a sense of warmth. Many original artworks that adorn the walls, offer a glimpse into the region’s artistic heritage.
Moving through to the library, the intimate space features a whimsical three-panelled Brazilian Rainforest artwork and South African carved wooden masks. A bespoke floor-to-ceiling bookcase is filled with an eclectic collection comprising classics, travel, art, design, literature and photography. Low-slung leather sofas and a large open fireplace make the space cosy in the cooler months. The perfect place to unwind, for quiet time or use as a workspace.
The design philosophy for Basq house is a testament to the intertwining of cultural influences and artistic expression. Embracing the bold, fluid forms of Fauvism and a Bohemian spirit, Basq House is a space that speaks to the soul.
The overall result is a visual tapestry of influence and eras, tones and textures, which evoke a sense of wonder and exploration, and is anything but haphazard.
These free-flowing communal spaces are at the heart of the House - designed to encourage interaction and connection among guests, places for socialising; to eat drink and play. The house-style hospitality includes bar snacks, Maybe Sammy pre-batched cocktails, and a selection of board games.
Meanwhile, the bedrooms, with a mix of formats, are thoughtfully designed and stylishly minimalist. A soothing colour palette of neutral tones juxtaposed against bespoke
honey-hued timber joinery, embodies a relaxed sensibility. Room amenities include HD TVs with Chromecast, Mr Smith toiletries and a minibar with a menu that reads like a list of the area’s best producers.
We had a spacious balcony off the main room, cleverly designed as an outdoor living area. With retractable screens that could be opened to bring the outside in, offering the perfect spot to relax. We spent our days reading books and enjoying afternoon drinks there - a delightful space that added to the hotel’s charming ambiance.
Landscaped greenery frames the jewel in Basq House’s crown. The logo embossed pool, sun-drenched daybeds and cabanas, offer guests another oasis of calm and barefoot breeziness. The magnesium pool is perfect for relieving stress, soothing sore muscles and of course ‘basqing’ in the sunshine.
Located just moments from Main and Clarkes Beach, The Pass, and a short distance from Wategos Beach and the Cape Byron walking track to the Lighthouse, Basq House puts guests at the heart of Byron Bay’s natural beauty and slow rhythm. For dining, a step outside the door offers a range of choices including local favorites like Light Years, Bar Heather, Loft, Pixie Food & Wine, and Lovers Lane.

Celebrating our end of financial year awards outdoors and making the most of the beautiful winter days, we took to the countryside of Northern New South Wales.
We hired our bikes from Valley E-Bikes, and after a quick briefing we set off along the 24 kilometre trail all the way to the small town of Mooball. We doubled back 6 kilometres to our final destination at Burringbar where Pedals and Picnics created the perfect place for us to enjoy the afternoon sun along with a delicious spread of food.

How did you meet?
Our very first date was at the lagoon pool at Sanctuary Cove - sun, sand, and a drink in hand. It was such a perfect date, we did it all over again a couple of weeks later and the sparks continued to fly.
How did he propose?
Phil proposed at sunset on the back of the YOT superyacht, in front of a group of close friends and approximately 200 other onlookers. At the time he was terrified he would drop the ring overboard.
Where did you get married and what was the most memorable moment of the day?
Our chosen venue was Summergrove Estate because it has picturesque views of both the coastline and the Hinterland. As the morning rain cleared it was like the sun gods came out just for us, it was surreal.
Any unique or surprising details about your wedding?
Our first dance song was performed live by Jason McGregor with a lyric change to “Bright Eyed Girl”. Jason recorded the track for us to keep, so now we have our very own version of the song as a treasured memory. Our five flower girls also stole the show in their stunning tuille dresses that were custom designed, handmade and came all the way from Europe.
Where did you go for your Honeymoon?
After a 2-year house hunt, we recently purchased a house on the lake at Regatta Waters and started renovating just weeks before the wedding, so our honeymoon was spent putting the finishing touches on our new home and creating memories that will last a lifetime. We hope to make it overseas for our first anniversary.
Would you do anything differently?
We could not have asked for a more perfectly blissful day, everything was immaculately planned, and it was a truly beautiful time spent with our closest family and friends.
What was the standout moment of the day?
The first time we laid eyes on each other standing at the alter and aisle was absolutely breathtaking for both of us, but the raw honesty of Phil’s Groomsman speech was definitely the highlight of our ceremony.
Best advice for other couples?
A wedding day is just one day... although it is important to have a special and memorable day and celebrate the occasion, try to keep it in perspective and don’t lose sight of the big picture, which is the lifetime you will spend together once the celebrations are over.

How did you meet?
We met online and talked for a couple months. We first met in person when Oliver came to pick me up from work because my car broke down, ever since we have been inseparable.
How did he propose?
Oliver planned a surprise private romantic picnic at our home in our back garden at my favourite time of the day, sunset, the sky was pink and beautiful. Then there he was on one knee asking me to marry him.
Where did you get married and what was the most memorable moment of the day?
We chose to get married at the family’s backyard golf course called Yarravale. Most memorable moment of the day was taking the photos, we really just had fun together and didn’t try to make them perfect and they came out amazing and hold so many fun memories now to look back on.
Any unique or surprising details about your wedding?
Oliver’s mum (Natalie) and sister (Harriet) executed the entire wedding plan, we just told them the key things we wanted in the day, they made it all happen and more, it was perfect. It made the whole day stress free so we really got to enjoy it.
Where did you go for your Honeymoon?
We spent a few nights at the Calile hotel, but we are currently planning a whole Tasmania road trip closer to summer so the weather is better.
Would you do anything differently?
The only thing we’d change is to have my mum (Caroline) there in person, it was quite short notice and she couldn’t make it in time from the UK but she did a video call to be there. Apart from that we’d change absolutely nothing.
What was the standout moment of the day?
The immediate rush and relief once we were married because it has felt like we are an old married couple since we met, it felt and feels so right.
Best advice for other couples?
• Do what makes you happy, we are pretty quiet and private people so we decided to have it small and intimate wedding.
• Be very open and communicate with your partner, it is stressful so make sure to lean on each other.
• Don’t be afraid to follow what you want, it doesn’t have to be traditional just be yourself, we wore Dr. Martens.

How did you meet?
We met in Wollongong through mutual friends and family back in 2007. We didn’t start seeing each other until 2017.
How did you propose Rod?
I arranged access to Videre rooftop restaurant at RACV Royal Pines Resort on a Wednesday evening, but the restaurant was closed. They had set up one table at a window overlooking the Gold Coast with a single red rose, Champagne and two glasses. It was sunset and a full moon was rising. We were alone and I got down on one knee and proposed.
Where did you get married and what was the most memorable moment of the day?
We had the ceremony at Froggys Beach at 11.30am on a Wednesday. The weather was perfect and we were surrounded by our kids (all six of them) their partners, Sarah’s Mother, Brother and sister in-law and their kids. We had our reception at Cooly Breeze rooftop restaurant, which was closed for us for the day. There were amazing views and we were spoilt rotten by Marco and Vanessa who run Cooly Breeze. Our day was so memorable because it was so intimate with only 19 of us attending in a beautiful setting surrounded by love.
Any unique or surprising details about your wedding?
Friends and family got involved. Our friend Fiona Cox from Fraser Lawyers was our photographer, our cake and Sarah’s make-up was done by Bek Armstrong, Sarah’s son gave her away, my son was my best man, our six kids were the bridal party and our son’s found us the reception venue. Truly a family affair.
Where did you go for your Honeymoon?
We haven’t yet, we had a six weeks holiday in Greece prior in August/September but are planning a honeymoon in the Cook Islands later this year.
Would you do anything differently?
No, we planned, organised and arranged this ourselves. We had considered a big wedding, 120 friends and relatives, but in the end we decided what was most important to us was our kids their partners and close family. We spoke to a lot of venues who had wedding packages but in the end we persisted to get a venue and ceremony space that worked with us to make the day special, not fit into a prearranged format. And that’s what we got, a day for us.
What was the standout moment of the day?
It is hard to pinpoint one moment, it sounds cliché but we just had the most amazing day together, laughing and enjoying the company of those we love and are loved by the most in such a great setting. We enjoyed a few drinks at the Rainbow Bay Surf Club to end the day.
Best advice for other couples?
Two pieces of advice that worked for us. First - don’t compromise on what you want, we found a venue that opened for us and worked with us to make our day so memorable. Second – sometimes simple is best, is was for us.

How did you meet?
We met at work at a law firm. In the beginning we started off as friends and stayed that way for over a year, however eventually our group adventures dwindled down to adventures of just Adam and Montana and here we are! We started dating on the 14th of April which is also the date we got engaged and the date we got married!
How did he propose?
It was completely unexpected! He booked a stay at the Crystalbrook Byron (telling me it was for our five year anniversary) and a sunset dinner in Lennox Head. Before the dinner, we walked along the Lennox Head esplanade where Adam proposed on the grass looking out at the beach, it was picture perfect! He even arranged for his cousin and his Aunty to hide in the bushes to capture the proposal. On the beach Adam had set up a predinner sunset picnic where we celebrated with a candlelit champagne. The following day Adam had organised a “proposal party” with all our close friends and family to celebrate, which was the best fun.
Where
did you get married and what was the most memorable moment of the day?
We got married on Hamilton Island. Our ceremony was in the Chapel Gardens and our reception was in the Beach Pavilion which overlooks Catseye Beach. Seeing the sunset over the water while enjoying dinner at our reception was just perfect. One of the most memorable moments for us both were the speeches. Our mums, brothers and Montana’s Maid of Honour did such an amazing job –there were a lot of laughs and a lot of tears, not a dry eye in the room! Our MC and one of our best friends, Julia Simpson, was also fantastic and had everyone in stitches!
Any unique or surprising details about your wedding?
There were so many special and exciting moments that we experienced by having our wedding on an island. Travelling to Hamilton Island, and staying in a beautiful holiday home with our immediate family in the days leading up to the wedding was so special. Most of our guests then began arriving on the island a couple of
days prior to the wedding, and it was a lot of fun greeting everyone as they arrived. We arranged a sunset sail on the Friday afternoon and then an afternoon by the pool (which has a swim up bar!) on the Saturday to catch up with everyone before our wedding on Sunday. This was especially great since all of our guests had the benefit of meeting each other prior to the wedding; by time the reception rolled around on Sunday evening, everyone was getting a long like a house on fire and hitting the dance floor together – it was amazing to see.
Where did you go for your Honeymoon?
We spent a few extra days on the island before and after the wedding – it was so nice running into our friends and family around the island the next day and hearing about the day from their perspective! We are hoping to get to the Maldives early next year as a belated honeymoon!
Would you do anything differently?
We wouldn’t change a thing! Everyone had such a wonderful time and, although people say the day goes so quickly, we really feel like we soaked up every moment –we couldn’t wipe the smiles off our faces!
What was the standout moment of the day?
We would say the reception as a whole - it was just such good fun being able to relax after the ceremony and enjoy some food, drinks and lots of dancing with our friends and family. Also the sparkler tunnel at the end of the night was the perfect send off!
Best advice for other couples?
We know everyone says this but try to enjoy the planning process and don’t get too stressed. It’s the overall feeling and vibe of the day and the little moments you can’t plan for that you’ll remember and hold onto, not the little details. Also, create a separate email address to be used solely for wedding planning. It was so helpful in keeping track of emails. We also told everyone after the speeches and dinner were finished that we wanted one last group photo, and so we had everyone stand up on the dance floor area “for the photo” and after the photo was taken, the lights dimmed and the DJ started the music. It was the best thing since it meant no one had to have their arm twisted to jump up on the dance floor - they were already there!

Kamala Harris is the Democratic Party nominee to run for President in the upcoming United States Presidential Elections to be held in November this year.
If chosen, she will become the first ever female to hold this position, although she has held the position of Vice President since 20 January 2021.
Delving into Kamala’s astrological profile I feel her potential for holding this powerful leadership position is incredibly good and well favoured from an astrological viewpoint.
Really her astrological transits where timing for her to potentially win the role as President has never been more fated.
With her Sun in Libra, this planetary position often reveals a charming charismatic person who is fair and balanced in all her dealings. The Women of Influence Great Debate breakfast, was held at RACV Royal Pines Resort in July. Great morning debating the topic that ‘The Empowerment of Women will eradicate the Institution of Mariage’. CHARITY LUNCHEON
Gold Coast local charities lunch at QT Hotel in Surfers Paradise was held in support of The Gold Coast Community Fund. Over 100 ladies turned up to hear all about the Fund from board members Karen Phillips, Belinda Dawes and Kate Bennett. $7800 was raised on the day to support the fund with all money raised helping Gold Coasters. Pam Sturgess and her team Barb Schaal, Charmayne Partrigde, Lesleigh Gibson, Jenni Kennedy and Di Baker do a fabulous job month to month helping a variety of Gold Coast charities.

Gold Coast locals united to celebrate The Entertainment Group’s 30th Birthday at iconic dining, drinking and design destination, kõst Bar & Grill, Broadbeach. The event was co-hosted by the Gold Coast Hospital Foundation, who are also celebrating their 30th anniversary.

WINTER WHITE LUNCH
The ladies of the Gold Coast were painting the town white at the Long Lunch held at the JW Marriott Gold Coast Resort & Spa. The event was masterfully hosted by Triple M Brisbane breakfast radio announcer Margaux Parker, with $25,530 raised on the day going to The Gold Coast Community Fund. You moved to the Gold Coast as a teen, how has the city influenced your career?
The Gold Coast has helped shaped me into the person I am today. As a teen runaway, my life could have turned out very differently. The people I have met and opportunities I have been given have allowed me to succeed, now it’s time to give back.
Tell us about your 18-year stint on 7News and Sunrise?
Breakfast TV is exhausting and exhilarating all at once. In my 20+ year career I have covered everything from terror attacks and murders to floods, cyclones, fires and major sporting events. I have jumped out of a plane, swam with sharks, slept in an underwater hotel, patted tigers and released snakes. No two days are the same. It is an honour and privilege to be trusted to tell someone’s story. It’s something I will never take for granted. I have formed some special bonds with people I have met in the most horrendous circumstances.
What’s a memorable moment from your time as a journalist?
I was sent to London to cover the Queen’s funeral. It was like having a front row seat to history.
What made you change course and head from journalism to politics?
I became increasingly frustrated with the current Government’s inaction on important issues, including youth crime, housing and health. I want better for my community so I decided instead of sitting on the sidelines and whinging, I would stand up and make a difference.
What do you love most about living on the Gold Coast?
The people. Every part of the Gold Coast is beautiful but it’s the people who make it so special.
As the LNP Candidate for Gaven, what has impacted your perspective on community issues?
Listening to the community. It’s vital to understand what people are going through so you can properly represent their interests. I have spent many, many hours knocking on doors around the electorate and finding out what’s important to residents.
How long have you been the emcee for the Gold Coast Suns and are you an avid AFL fan?
I love sport, any sport but particularly AFL. I am a Foundation Member of the Gold Coast Suns. My husband played footy and my son was in the Suns Academy. Through my work in the media and love for AFL I was made a Suns ambassador five years ago.
What are your future aspirations, both professionally and personally?
Personally for me, as long as my children are happy and healthy, I am too, and professionally if I’m given the honour of representing Gaven in the Queensland Parliament I look forward to working hard to shine a light on my electorate and the rest of the Gold Coast.
