Top Tips

for cooking on a

flame charcoal

BBQ Preparation

Before you can start preparing your BBQ, you’re going to need to know how many people you are cooking for – this will determine the size of the BBQ that you need, as well as the portion of meat required. Charcoal will help to give that smoky flavour to your cooking. Mix a good amount of easy-to-light charcoal and some heat beads, as these will keep heat on the BBQ for as long as possible, allowing you to cook for longer. Light the BBQ and wait until all the flames have died out; then allow a further 10 minutes for the coals to heat through. This is now the perfect temperature to cook your meat.

Smart Tip Set aside a small part of your BBQ and don’t add much charcoal to this area. This useful spot can be utilised to keep food warm once it has been cooked.

Cooking Beef Steaks

Cooking Pork or Filleted Chicken Breast

Having selected the best cut from the Smart Butchers, choose the right cooking method to get the most from your meat. Know your guests’ preferences, so you can cook their meat rare, medium or well-done. To kick-start the process, seal the outside of the steaks by cooking them for 2-to-3 minutes on each side. This will retain their juices. Depending on the desired results, a rare steak will need 4-5 minutes cooking time, while a well-done steak will need 10-12 minutes; any longer will dry the meat out. While you are grilling, fat from the meat will drip onto the charcoal causing occasional flames to flare up from the BBQ. These flames carbonise the meat, making it taste unpleasant and unhealthy to eat. Thus, it is important that the meat is removed from that area until the flames die out.

Cooking pork or chicken steaks is similar to cooking beef steaks, and the cooking time is mostly dependant on the thickness of the steaks. Once again, seal the meat by cooking both surfaces of the steak for a couple of minutes. Then allow a further 8-10 minutes – checking regularly to see if the meat has turned white. If it has, then this means its has reached the required cooking temperature and may be removed from the grill. If left much longer, it is likely to dry out.

Foot Health in Children

As parents/guardians we worry about our children’s teeth, eyes, hair and physical health. We teach washing, brushing, and grooming, but what do we do about our child’s feet; those still-developing feet which have to carry the entire weight of the body through a lifetime? Several studies and research affirm that most of adult foot ailments, like other physical ills, have their origins in childhood and are present at birth. Specialized attention and regular foot care can lessen these problems in later life.

Neglecting foot health encourages problems in other parts of the body, such as the legs and spine. In some occasions we can come up with even undesirable personality effects, for example a child or youth which develops poor general posture due to feet misalignment becomes shy, introverted, and even avoid athletics and social functions due to the same condition. It is then, of great importance that we parents/guardians seek

professional advice by a team of specialist which include podiatrists, pediatricians, and other medical specialists to help to resolve these related problems. The human foot (Called a Master piece of human engineering by Michelangelo) is one of the most complicated parts of the body. It consists of 26 bones, and is laced with ligaments, muscles, blood vessels, and nerves. Because the feet of young children are flexible and pliable, irregular pressure can simply cause deformities. A child’s feet grow hastily during the first year, reaching almost half their adult foot size. This is why Podiatrists consider the first year to be the most important in the development of the feet.


Starting to walk It is risky and un-wise to force a child to walk. When the child is physically and emotionally ready, the child will walk. Comparisons with other children are very misleading, since the age for independent walking ranges from 10 to 18 months and even longer. When the child first begins to walk, shoes are not necessary indoors. Allowing the child to go barefoot or to wear just socks (preferably non slip socks) helps the foot to grow normally and to develop its musculature and strength, as well as the grasping action of toes. When walking outside or on rough surfaces, babies’ feet should be protected in lightweight, flexible footwear made of natural materials. When growing up the child’s feet continue to develop and thus shoe and sock size must be checked regularly every few months to allow room for the feet to grow. Again, shoes cannot be borrowed from one child to another due to different walking patterns. Studies also affirm that although foot problems result mainly from injury, deformity, illness, or hereditary factors, improper footwear can aggravate pre-existing conditions. The feet of young children are often unstable because of muscle problems which make walking difficult or uncomfortable. A thorough examination by a podiatrist may detect an underlying defect or condition which may require immediate treatment or consultation with another specialist.

Look carefully at your baby’s feet. If you notice something that does not look normal to you, seek professional care immediately. Deformities will not be outgrown by themselves.

Cover baby’s feet loosely. Tight covers restrict movement and can retard normal development. Provide an opportunity for exercising the feet. Lying uncovered enables the baby to kick and perform other related motions which prepare the feet for weight bearing.

Change the baby’s position several times a day. Lying too long in one spot, especially on the stomach, can put excessive strain on the feet and legs.
