Burgers Article By Lea Hogg
Making burgers from scratch allows you to put exactly what you like into your burgers. The Fresh Meat & Poultry Counter offers a variety of great burger meats. Ask the butchers to help you make the perfect choice; ideally go for mince which is made of lean meat, so that your burgers remain juicy and moist after they are cooked. You can be as adventurous with your ingredients as you like by opting for the less traditional meat for your burgers such as ground rabbit or veal. Hamburgers are associated with unhealthy food but this is not necessarily so, especially when they are homemade. Here additional ingredients are included purely for flavour rather than for bulk. Our recipes make four burgers so you will need four fresh bread rolls. Make sure to pop over to the Smart Bread Counter for a wide assortment of fresh bread rolls.
Smart Tip To avoid a soggy burger bun make sure to toast the bun first and place lettuce under the burger. If you are adding tomatoes use a serrated knife to cut it and drain out all the juice and seeds. Lea Hogg is a food columnist and feature editor. Method Ingredients For Beef Burgers 400g Ground Beef 1 small onion, finely chopped 2 sprigs parsley, finely choppd Sea Salt, fresh ground pepper 1 egg 3 water crackets (galletti), crushed
Ingredients For Maltese Sausage Burgers 200g Maltese sausage meat 200g lean ground pork 1 teaspoon coriander powder 1 teaspoon cumin ½ hard white cheeslet (gbejna), grated 1 egg 4 water crackets (galletti), crushed
Ingredients For Chicken Burgers 400g lean ground chicken 1 egg 1 small onion, grated 2 tablespoons lemon juice 4 spoons dry breadcrumbs 2 teaspoons chopped fresh thyme salt and freshly ground pepper 1 tablespoon tahini
The Burgers can be cooked either: • In the oven at 180°C for 20 minutes turning them once after 10 minutes. • The traditional way on a barbecue. • Griddle pan 1. We decided to use the griddle pan. First wipe the pan with vegetable oil using a kitchen towel and heat up the pan to maximum heat. 2. If you are trying out the Beef or Chicken burger you will need to sauté the onion first, until they become soft. Remove and place on kitchen towel to absorb oil. 3. Put all ingredients in a large bowl and mix. Divide the mixture into four and wet your hands to form patties about 2cm thick. 4. You can now cook your burgers. Add a little oil to the griddle pan. They usually take 3 minutes each side. Make sure that the chicken is cooked through. 5. Prepare the buns by halving and toasting them. Then slide your cooked burger onto your buns and stack up the extras according to your preference. Recommended Condiments & Extras: Mustard (whole grain or Dijon), ketchup, red onions, fried eggs, pickled cucumbers, coleslaw, mayonnaise, bacon, lettuce, cucumber, cheddar, blue cheese.

Physiotherapy in Paediatrics Article By Rowena Tunks MSc FHEA Paediatric Physiotherapy Specialist State Registered Physiotherapist UK (HCPC) and Malta (CPCM)
Physiotherapy helps to develop, or restore, as near normal movement and function when someone is affected by injury, illness or disability. In the case of children, physiotherapy input is most commonly required to help optimise movement and function in a child who has a developmental problem or physical impairment. However, specialised physiotherapy input can also help children with a wide range of problems; such problems can be anything that affects normal posture or movement abilities, and also in supporting normal development. Children of all ages, from prematurely born neonates to adolescents, fall within the broad spectrum of paediatric physiotherapy. A newborn baby may require physiotherapy to support normal development if born prematurely, or to help recovery from conditions such as torticollis, Erb’s palsy or talipes. In the developing child, a parent may have
concerns about delay of motor skills, problems with walking, or concerns about flat feet, knock knees, bow legs or tiptoe walking. In the adolescent, painful muscles/ joints or deformities may become apparent. Throughout all stages of child development, children are continuously growing and developing. They enter various physical and psychological phases where signs of well-being are constantly changing, and may at times be mistaken for signs of disease or injury. Likewise, certain childhood conditions can be mistaken for an injury leading to inappropriate treatment; sports and traumatic injuries in a child are often managed differently from seemingly
Rowena Tunks graduated from King’s College, University of London with a BSc(Hons) in Physiotherapy in 1994. She continued to practice in London at Guy’s at St Thomas’ hospitals to consolidate a wide variety of experience at junior and senior level, before taking up specialist posts in Paediatrics at Lewisham University Hospital, and later at King’s College Hospital. Rowena also worked in a private London hospital treating international level professional athletes, and in the Harley Street Children’s therapy centre as Lead Clinician. Rowena completed a Masters degree (University of Brighton) in 2007 and has lectured both abroad and locally, lecturing at the University of Malta from 2005-2011. similar injuries in adults. Healing times and mechanical factors vary throughout a child’s development, and these factors make an essential contribution to the treatment plan. Similarly, developmental problems and conditions such as cerebral palsy, spina bifida, muscular dystrophy, scoliosis and joint hypermobility syndrome (double joints) demand particular care, sometimes with intensive treatment at critical developmental stages. Specialist therapy input is always to be advised as children are not merely small adults, so their treatment presents unique challenges, requiring specialist skills and knowledge. The basis of physiotherapy intervention is a thorough and individualised assessment of specific physical functions and abilities for each child. The initial assessment is followed by a discussion about immediate and longer term requirements, and a plan for appropriate treatment. Treatments are defined by the scope of physiotherapy practice, and may include: • Exercise and movement, including activities to stimulate and aid development • Manual therapy, including techniques to improve movements • Electrotherapy (rarely used in children as can cause damage to growth plates of bones) • Other specialist forms of treatment Intervention may also include referral to other members of the health professional team, especially in the case of children with complex needs.
Treatment may take place at a clinic or hospital, or sometimes at home or school if more appropriate for the child. A paediatric physiotherapist can also offer advice on suitable footwear, toys, home and school furniture and special needs and safety equipment where necessary. It is never too early, or too late, to seek help or advice from a paediatric physiotherapist, and many children can benefit from specialist input.
