Quinoa & Chickpea Burgers Recipe by: STEFANIA CALLEJA Serving: Makes 8 Preparation: 75 minutes Ingredients: Quinoa, is nutritionally renowned for its good quality protein – not only because of its amount of protein but more essentially, the type of protein. This grain has the perfect balance of all nine essential amino acids needed for the human body as so, it is considered a complete protein food. This is the type of protein found in foods of animal origin, but less likely in plant foods. It is also a good source of fibre, and a range of minerals including phosphorus, calcium, magnesium and iron. It also contains anti-inflammatory phytonutrients. This is a perfect food to include in a gluten-free diet since it lacks gluten.

100g dry quinoa 1 carrot, finely grated ½ onion, finely chopped 400g cooked chickpeas (or any type of bean) 1 egg lightly beaten (optional) 1 tbsp ground cumin 1 tbsp parsley (or any type of spice/ herb) pinch of salt & pepper 2 tbsp olive oil

Method: 1. In a small saucepan, bring 200ml water to a boil. Add quinoa, (a little garlic or a sprig of rosemary), cover and reduce heat to low. Cook until liquid is absorbed, 12-14 minutes. Set aside for 5 minutes then use a fork to fluff and separate the grains. 2. In a food processor, pulse carrot until finely chopped. Add quinoa, onion, chickpeas, egg (if using), cumin, parsley, salt and pepper. Pulse until combined but still slightly chunky. 3. Form mixture into 8 patties. Refrigerate for 30 minutes to firm or until ready to use. 4. In a large pan, heat oil over medium heat. Cook patties until golden, 6-7 minutes per side.

Marinades With the sizzling season in full swing, we have selected four special marinade recipes for the grill! These will definitely make a hit at your barbecue! All you need to do is prepare the items listed in the ingredients and mix them all together. As simple as that! The quantities in the recipes are for about four servings. We have also prepared some wine tasting tips and recommendations to make sure all your flavours are complementing one another.

Ingredients:

1 tablespoon grated orange rind 2 tablespoons orange juice/wine vinegar/ vegetable oil 1 tablespoon tomato paste 1 tablespoon chili powder ½ teaspoon dried oregano ½ teaspoon salt ½ teaspoon pepper

Top Tips for Marinating * Do not leave the meat or poultry in the marinade for more than 24 hours. * Marinating meats should also be kept in the refrigerator and not at room temperature. * Use containers which are ceramic, glass, plastic, or stainless steel while marinating, as they are nonreactive materials. Top Tips for Barbecue Food & Wine Pairing Basic Food & Wine Pairing Rules: Rich foods should be paired with wine which is heavy bodied (Body of the wine refers to the fullness, weight and concentration and total mouth feel of a wine.) The flavour intensity of the food and the flavour intensity of the wine must be balanced. Food’s flavours are intensified by the method of cooking. High acid foods such as vinegar, tomatoes and lemons need to be paired withacidic wines. (Acidity in wine refers to the mouth-watering feel.) Sweet food goes well with sweet wine, so look out for late harvest wines which are ideal.

Barbecue Food & Wine Pairing Tips: Let the sauce, marinade and spice dictate which wine to pair with the food as these dominate the flavours of the dish. Smoking and grilling also transforms the flavours of food, so that will dictate which wines to serve with the food. Barbecued food pairs well with oak matured wines, such as Oaked Syrah and Oaked Chardonnay.
