Cauliflower Steaks Recipe by: THE VONGO

Serving: Side dish for 2 Preparation: 35-40 minutes Ingredients: Cauliflower must be one of the most versatile vegetables there is, and is not only low in calories, but it’s an excellent source of Vitamin C and has several beneficial antioxidants. This cauliflower recipe can be prepared ahead and heated up on the grill at BBQs. Now you have no more excuses – forget the frozen burgers and dodgy sausages; let’s fry ourselves some cauliflower goodness. Bring on Summer!

200g cauliflower, cut up into florets

Method: 1. Steam cauliflower florets for 5 minutes. 2. Prepare the three bowls next to each other and mix the contents in each bowl well.

Bowl #1: 28g chickpea flour Bowl #2: 60g linseed, ground 165ml hot water Bowl #3: 40g breadcrumbs 2 tbsp yeast flakes 1 tsp cayenne pepper ½ tsp salt few grinds black pepper

Take each floret through these stages, in the order given: Coat floret with flour in bowl #1; dunk the floured floret in the linseed mixture in bowl #2 and coat well; toss the covered floret in bowl #3 for a final coat with the breadcrumbs mixture. 4.Shallow fry the cauli ‘steaks’ on medium to high heat for 5 minutes, all the while flipping them so they brown evenly. If you want them to be even crispier, you can put them under the grill for an extra 5 minutes, or in a preheated oven on high heat for a final 10 minutes. Serve these with tomato ketchup, some baked potato wedges, and a side of salad.

Barbecue

Side Dishes With Summer almost here we start to think of BBQs again and spending more time outdoors in the fresh air. Eating al fresco is one of the biggest blessings we have on the island as we are nearly guaranteed great weather conditions from now for the next six months. We should all take advantage of this style of cooking and eating outdoors. Today I am sharing with you some easy side dishes and salads which are very versatile and can be eaten with any type of meat and are also substantial enough if you are having any vegetarian guests.

Roasted Vegetables Ingredients:

Method:

1 Onion Garlic, (use quantity according to your taste) Olive oil Seasoning, freshly ground pepper and salt. A selection of fresh herbs of your choice A few drops of balsamic vinegar or Worcestershire Sauce ½ Lemon, for squeezing. A variety of vegetables, 500g per person. Vegetables could include courgettes, aubergines, tomatoes, squash, butternut squash, pumpkin, fennel, mushrooms. If you decide to use carrots, broccoli or cauliflower, blanch them in hot water for a few minutes before adding them to the other ingredients.

1. Wash and chop the vegetables and mix them together in a large bowl. 2. Drizzle very lightly with olive oil, season and add some finely chopped herbs, keeping some aside for the garnish. 3. Squeeze a few drops of lemon. 4. Spread the vegetables onto an oven tray covered with baking paper. Cook in a hot oven for 30 to 40 minutes until they are slightly charred but retain the crunch. Drizzle with a few drops of balsamic vinegar and garnish with fresh herbs. The roast vegetables can be served hot or cold.

Mediterranean Apple Salad Ingredients: Rocket leaves or Lambs Lettuce, Ripe Tomatoes Fresh Mint Fresh Parsley Freshly Ground Pepper Salt Drizzle of olive oil 1 Apple Juice of half a lime Capers

Method: 1. Thinly slice the apple with skin on and squeeze some lime juice over it to prevent discoloration and it also adds to bring out flavour. 2. Arrange the leaves in a suitable container and add the capers. 3. Chop the ripe tomatoes and cut up mint and parsley. I do not chop them as I think they look gorgeous when so fresh. 4. Scatter the thin apple slices on top and season with sea salt and freshly ground pepper. Drizzle with olive oil and serve.

Corn, Quinoa and Avocado Salad

Strawberry, Fennel and Rocket Salad

Ingredients:

150g Quinoa 100g Frozen corn, cooked as packet instructions 200g Cherry tomatoes 1 Avocado, cut into chunks 3 Spring onions 100g feta, crumbled Salt & freshly ground pepper A Handful of basil leaves, torn not shredded. 50ml extra virgin olive oil Juice of half a lemon

Method: 1. Arrange the rocket leaves on a serving plate. 2. Slice the strawberries lengthwise and slice thinly. Slice the fennel bulb into thin slices.

Method: 1. Rinse the quinoa and cook as per packet instructions. Drain and set aside.

3. Arrange the strawberries and fennel on to the rocket leaves.

2. Place in a large bowl and add the tomoatoes, corn, cherry tomatoes and season with salt and pepper. 3. Finally add the avocado and then make a dressing by whisking the olive oil with the lemon juice and seasoning. Pour over the salad and toss. Garnish with basil leaves, cover and refrigerate for at least an hour before serving.

4. Season with freshly ground pepper and salt. Drizzle with some olive oil and a few drops of balsamic vinegar. This is ready to serve as it is. It is worth buying a good quality balsamic vinegar as it makes a big difference to the flavour especially when using with such delicate flavors of strawberry and fennel.

Baked Potato Wedges Ingredients: 1 Large potato per person Olive oil, just enough to cover the wedges Salt and freshly ground pepper Smoked paprika, ½ a teaspoon per potato Mature cheddar cheese, 25g per potato, finely grated Fresh marjoram (optional)

Method: 1. Wash the potatoes and chop them into wedges, skin on. 2. Drizzle some olive oil, add the smoked paprika, salt and pepper and use your hands to mix them so that the oil and seasoning is equally distributed. 3. Add the herbs and bake at 175°C for an hour. Take out of oven. Drain any access oil. 4. Scatter the grated cheese over the potatoes. Return to the oven for 3 minutes. Mother’s Day Treat In most countries around the world, Mother’s Day is celebrated on the second Sunday of May. I love to stick to the age old tradition of gifting chocolate on special occasions, and as strawberries are at the peak of their season during this month, I always think it is a good idea to pair a gift of chocolates with strawberries and also perhaps flowers, something to make mums everywhere feel special. You can go a step further with these two simple recipes which are not only delicious but beautiful in appearance.

Method: 1. Cut a small piece off the tip of the strawberries so that they will stand on a plate. Use a paring knife to hollow out a small whole in the centre.

2. Beat the cream cheese, icing sugar and vanilla until smooth. You can have a healthier option by using the cream and yoghurt mixed with a spoon of honey.

Cheesecake strawberries are ideal as you get all the flavours of eating a cheesecake into a bite size and they look great on a plate served during a celebration.

3. Fill a piping bag with the mixture. Snip the tip off and fill up each strawberry with the mix.

Ingredients: 500g fresh strawberries, washed & hulled 1 packet cream cheese 1 spoon icing sugar or 1 spoon honey OR 125ml fresh whipped cream mixed with 125g local yoghurt A few drops vanilla extract 6 digestive biscuits 100g ground nuts, I use pistachio

4. Crush the digestive biscuits to a fine powder and sprinkle each strawberry with the biscuits and top with ground nuts. I love pistachios both in flavour and for color contrast. 5. You can either serve them as they are or cover the strawberry with the tip that you have cut off previously. Refrigerate before serving.

ke Available from th e Smart Bread Counter Another easy dessert to prepare is this All-in-one Frangipan which is gluten free and very easy to bake. I like to fill it with fresh strawberries and icing sugar.

Ingredients: 300g butter, soft 300g sugar 300g eggs, weighed and beaten 410g pure ground almonds I also added the zest of a fresh clementine but this is optional Fresh Strawberries to decorate

Method: With an electric hand whisk mix all the ingredients thoroughly together until you have an even consistency. Pour the batter into a cake tin and flatten the surface with a spatula dipped in water. Bake at 165°C for 25 minutes, but you need to adjust cooking time depending on the size of cake tin you choose. Allow to cool. Gently ease out of the cake ring. Decorate with strawberries amd dust with icing sugar.

There is no doubt that the most important job in a parent’s life is bringing up children. Unfortunately or should I say fortunately children do not come with a parenting manual. So how do we parent? Either as we were parented, if we liked it or the opposite if we did not like it. Unfortunately this is not always in line with current studies but fortunately everyone can learn new parenting skills and keep one’s self updated. One also needs to keep in mind that what worked thirty years ago may not be so relevant now.

Refrain from saying NO to a child unless the child’s action is dangerous. Control the situation not the child. Become aware of effort and catch the child doing ‘Good’ instead of ‘Bad’ behaviour. Acknowledge this immediately, all that is needed is a hug and a kiss and pointing out specifically what you mean. Saying ‘good boy’ does not help, but saying ‘you are growing up because you are learning to put your toys in their place’, helps the child understand what is expected of him; that he can get attention for positive behaviour, boosts his self-esteem and develops a loving bond with the parent. Who can ask for more!
