INTRODUCTION

Food and shelter have been long considered two of the most basic human necessity. It is a fascinating idea of how food streets unite humankind and becomes the identity of the city. Across India street vending of snacks and small meals is growing in popularity, coinciding with a rise of food stalls at every corner of the city. Observing it, the relationship of food and urban spaces, and how the idea of food streets evolve is a noticeable point of perspective.

Indian Street food is a perfect way to sample India’s vast cuisine and culture. These food streets are the living heritage which is growing old with the city. Also, there are many reasons leading to the endurance of such food streets which maintain the public realm in the city by creating urban spaces. Today, street food plays a vital role in the urban economy, as a source of jobs, revenue and ‘value added’ to its social culture. It is the most active and lively place of the city. Whenever a street food becomes famous it is used at a greater extent as way to promote cultural offers and helps in growing interest of regenerating surrounding urban economy. As a result, not only leisure parks, art museums but also city’s public dining facility acts as important operators in the overall experience related sector.

Hence, this design study explores the challenges of managing the street food agenda with its public and how inclusive design can generate the imaginative use of space.

Food in the city enriches daily sensations of sound, sight, smell, taste, and touch through the way it is produced, displayed, and consumed. Within the rapid pace of city life, anonymity and the modern city’s - large scale-spaces: street side food places give a sense of intimacy, a place to stop at an entirely human level and fills the space with laughter and joy.

BACKGROUND/ RATIONALE “The concept of street as public kitchen and dining room is as old as cities themselves”

Vadodara is popularly known for its “Culture” and the “people of the city”. Street food is considered the heart of its public, inviting every aspect whether it is breakfast, brunch, lunch, or dinner comprising a variety of tasty, filling, healthy, and sometimes unhealthy choices. Type A

Lip smacking street food are majorly found in Ratri Bazaar, Dairy den circle, Uma char rasta, Jakatnaka, near Sursagar and many more places of Vadodara. These spaces or narrow by lanes, with their carts are usually located near railway stations, colleges, offices and gardens, offers visual and gastronomic delights.

From early morning to midnight cravings, these streets are ready to offer from chai to packed lunches with a variety of street food such as sandwiches, panipuri, sev-usal, pav-bhaji, and what not. Type B

Whether at corner street, it can be a meeting place in recess timings for employees, or a small reunion place for group of friends, or a daily chit-chat place with absolute food satisfaction for public. From daily routines to festive seasons, from children to old people these kiosks are always ready to serve various facility with a bundle of laughter and enjoyment.

SITE

Sandesh Circle popularly known as “Dairy Den circle” is situated near Maharaja Sayajirao University in Sayajigunj, Vadodara. On the east side of the site, the Railway station is 600 mts away which adjoins Bus Depo which is 850 mts away from the circle. It is surrounded by MSU college, Kadak Bazaar, Baroda stock exchange, Kala Ghoda circle, Kamatibaug as the main landmarks present in 1.5 km vicinity.

Sandesh circle is one of the few food street which is surrounded by social hub all around. It comprises of various kiosks which starts from early morning and serves till late night. Food streets provides opportunities, like self employment affordable prices and creates an interesting city environment. Though, it comes along with its issues too such as :

Site is a social hub comprising of the main road connecting Railways and Bus depo with a group of commercial sector, residential factor as well as various bazaars connecting the vicinity. The food street surrounding the circle has gained the importance of the place with availability of variety of sectors with a connection of its food culture around it. A

ACTIVITY MAPPING

Detailed street mapping is crucial , because often official planning processes do not show what is happening informally, and thus there is no documented information on the scale and size of food street activities. Any rearrangement or usage of space during time difference should be noted in it.

From the above mapping, it is seen that as the day gradually rises the number of kiosks surrounding the circle increases. And, thus it also impacts its surrounding by increase in population around it with its vehicular movement.

The idea is to adapt Inclusive design, which is a design process in which a mainstream product, service or environment is designed to be usable by as many people as reasonably possible, without the need for specialized adaptions. For this, the reuse of existing or available banners and its fabrication is a mode of proposition.

PROPOSITION

Existing Situation: The cluster of kiosks cannot maintain a formation of great serving towards people with proper infrastructure and environment. Proposed Solution: An element bringing the essence in the space and creating welcoming environment altogether as an architectural solution.
