When I was a kid

in the late 1970s and early ’80s, there were several TV shows I rarely missed: “Little House on the Pairie,” “Charlie’s Angels,” “Happy Days.” But perhaps my all-time favorite was “The Love Boat.” (I even dressed up one Halloween as Cruise Director Julie McCoy.) The popular sitcom set aboard the “Pacific Princess” featured a familiar cast who, each week, worked alongside different guest stars to fix troubled relationships and help passengers fall in love. Back then, I always was perched in front of the TV in time for the familiar opening theme music, eager to find out which up-and-coming actors or old favorites would embark that Saturday night. If the show were on today, I’d probably set the DVR or maybe even search Google to find out the details in advance. Yes, technology has changed dramatically since the days when Gopher, Isaac and the gang played matchmakers. It’s also changed the manner in which love connections often are made. Just ask Jack and Jan O’Connell, an area couple who married later in life after being matched up on a dating website. You can read their love story, and about how they make fitness a priority in their marriage, in Fit & Healthy (Page 26). Love is a common theme in this issue. In addition to our annual Wedding Guide (Page 43), you’ll find a feature on a local chocolatier whose decadent treats are particularly popular for Valentine’s Day (Page 69) and a story on one program at the Skelton 4-H Center geared toward adults who share an affection for lifelong learning (Page 31). Of course, the biggest love story we tell in this issue is what businesses, food, drink and lake lifestyle happenings our readers cherish the most. The trip was organized by Moneta’s Shirley Fry (far left in blue visor), who retired as the club’s tour leader in December after 12 years of service. “She has planned many trips over the years, and her organization skills, adventurous spirit and sense of fun has been appreciated by many lake residents,” said Sandy Furick, who submitted the photo.

Europe Tom and Jackie McKeown of Huddleston took the Laker on an alpine tour last May through Germany, Austria, Switzerland and northern Italy. While the couple saw many beautiful lakes on their trip (including Lake Como in Lombardy, Italy, where this photo was taken), Jackie said their favorite is still Smith Mountain Lake.

Mike Toalson combined his own industry expertise with that of a local contractor and interior designer when building the lake retreat he now enjoys with wife Mary Lynn.

hen Mike and Mary Lynn Toalson moved from the Midwest to Richmond in 1991, they pursued boating “on the riv-ah,” – the James, York and Rappahannock rivers, all within an hour’s drive of Virginia’s capital. But what the couple really yearned for was a body of water similar to Missouri’s Lake of the Ozarks, which they had enjoyed while growing up. “We searched out lakes, and let me tell you, Smith Mountain Lake had it all over any other lake we saw,” said Mike. “We bought a house in Penhook, a half a mile from Vista Point, in 1994.” By then, the family included two children, and they all enjoyed the lake house on weekends and during vacations for 18 years. Throughout the years, the Toalsons made several additions to the home to better accommodate their evolving lake lifestyle. However, they ultimately decided to build a new home on a lot in Compass Cove they discovered one day while out for a boat ride. “We love the view at Compass Cove, and one of our priorities was to be just a 15-minute drive from Westlake,” said Mike.

Since the Toalsons were living in Richmond during the building process, the project presented some challenges. But Mike had professional experience that helped: As chief executive officer of the Home Builders Association of Virginia (HBAV), he works closely with home builders on a daily basis and heads up a lobbying team that works with state lawmakers and regulators on home-construction regulations and legislation.

“You’ve got to find a builder you can trust,” advised Mike, who chose Scott Zechini, an HBAV member whose work on other homes at Smith Mountain Lake impressed him. The two started with a house plan Zechini had used previously and modified it accommodate the Toalsons’ wants and needs. “We really knew what we wanted in a house; we had had 18 years of experience at a home on the lake,” said Mike. “Not only do our children visit, we have a large extended family, so we needed room for lots of guests. We bumped out the plan’s eating area and great room, and we made the deck 12 feet wide, four feet wider than at the old house. We took some of the space from the master bedroom – all you do there is sleep, why have it be so big? – and added that space to the great room. We liked the open-concept floor plan, and we vaulted the ceiling to make the space more bright and airy. “Also, it was important to make the house as maintenance-free as possible,” Mike said. For the deck, the Toalsons chose low-maintenance boarding material from Azek and powder-coated aluminum railings. The lower level has tile flooring for easy maintenance; the main level has oak underfoot.


Mary Lynn enlisted the help of Miranda Shotwell of Designer Solutions for many of the home’s interior design elements, including lighting, cabinetry, countertops, flooring, shower-tile design and paint colors. “Mary Lynn liked what I call ‘spa colors,’ that are very light,” Shotwell said. “In the bathrooms adjoining each of the four bedrooms, we used a coordinating color that was a few shades darker.”

HOME JOURNAL We designed the House around “It was designed around our experience about what areas of the home you use a lot. We made the master bedroom smaller and added on to the great room,” Mike said. The Lake Factor The Toalsons expanded the deck to run the full length of the back of the home and increased the width from 8 to 12 feet. The space allows the couple to enjoy additional time outdoors and sunrise views over the lake. Glad We Splurged On “Built-in cabinets around the fireplace and large closets,” Mike said. Why We Chose Smith mountain Lake “Friends invited us to SML on a cloudy, dull day, but the lake was still so beautiful,” Mary Lynn said. “We were sold on it right then.”

Even though Zechini sent photos throughout the construction process, the Toalsons visited the lake monthly to check on the home’s progress. But they took comfort in knowing the builder had their best interests at heart. “Scott rebuilt the lakeside stone columns three times – not because of our comments, but because he didn’t like the look of them, and he wanted to get it right,” Mary Lynn said. “After much searching, he found the Arts and Crafts-style front door for us. My tastes were higher than our budget, but he was a good shopper. and planning for the season to come. In that spirit, I offer suggestions for fun and useful garden products I’ve

come across recently (Page 25) and recommendations

for books to keep you company as you sit by the fire and contemplate the wonders of the coming spring at Smith Mountain Lake.

“The World oF Trees” BY HUGH JOHNSON

Even if you think you’re not interested in trees, Hugh Johnson’s book will convince you otherwise. The superb photographs draw readers into the book and teach them to see the splendor and intimate beauty of trees. The opinionated, informative text is equally compelling. An example of his delightful style: “It is possible for a tree to be too easy and prolific - to devalue itself by appearing whether it is invited or not. The tree of heaven (Ailanthus altissima) makes this mistake. ‘Urban weed’ is the phrase most often used about it; even ‘ghetto palm.’ No other tree in this book comes with a ‘Don’t plant at any cost’ label. But before dismissing it we should at least look closer.” You’ll learn about the structure and life cycle of trees, how trees are named, trees and the weather, the use of trees in gardens and landscape design, and tree planting and care. Buy it as a reference book, as a coffee table book and as a book you’ll want to read from cover to cover.

The photographs are beautiful, helping to identify the plants, and the close-ups are revealing, showing plant details we generally overlook. The humble blue violet gets prime coverage, and we learn what an exceptional plant it is. You can eat it, it can soothe your soul, alleviate your pain and save your life. And the blue violet is a survivor. When the seeds are ripe, the three-chambered seed pod opens and the edges of each chamber begin to contract. The

Clap if you believe in fairies. One of the latest trends in gardening is creating miniature garden settings outfitted with tiny accessories for “fairies” to enjoy. The resulting “gardenettes” are enchanting for young and old, and a fun project to do with the grandchildren. “Fairy Gardens: A Guide to Growing an Enchanted Miniature World” will get you started in this interesting hobby that combines the love of gardens with the fascination of miniatures and dollhouses. Laced between instructions and inspirational ideas for creating and caring for a fairy garden, author Betty Earl inserts tales of fairy lore I found fascinating.

Put the fogger to another use at Halloween to create a spooky jack-o’-lantern. Fill your carved pumpkin as full of water as you can, insert the fogger and plug it in. inding love later in life is the hope of many single seniors. But finding that special someone after the careers, marriages, children, losses and achievements of younger years can seem a daunting mission. Franklin County residents Jack and Jan O’Connell’s story proves a perfect match doesn’t have to be an uphill climb. “Jack lost his wife after a very brief illness in February of 2003, and I lost my husband, Steve, in March of 2003,” said Jan. “Early in August 2005, I saw Jack’s abbreviated profile on [dating website] match.com. When I read he was a widower, I felt for him and his family and wrote to him in support. He wrote an entire page back, which I still have.”

Both make fitness a priority, enjoy all sorts of outdoor activity and prefer rustic cabins and camping to more posh vacation options. Jack had dates lined up for the rest of the week. “I asked that he let me know how it goes, and should he meet someone he really liked, then I wished him good luck and happiness. I could not believe it when Jack called me every night to fill me in,” said Jan. Jack’s other dates turned out to be unsuccessful, and he and Jan began an official courtship. Jack said much

Soon, the two were sharing a first-date picnic lunch and hike to Sharp Top at the Peaks of Otter in Bedford. The hiking part was easy; breaking the ice took a bit more effort. “No sparks flew when we met,” said Jan. “When we reached the top, we talked for several hours. The more we talked, the more we realized we were interested in each other.” The couple learned they had much more in common than the loss of a spouse. of it was spent doing many of the same activities they participate in today. “We enjoy the outdoors at every opportunity – going biking on the New River or Greenbrier River trails or spending a weekend in a rustic cabin to go hiking in the mountains. We travel on our own or with the Roanoke Ski Club, never running out of places that we want to explore,” he said. There are some differences between the two, however. Jan noted Jack’s natural athleticism and brave handling of expert-level ski slopes, which she has yet to conquer. But it is their many similarities that have kept them together.

“When you are middle-aged, there are so many things that have to mesh for a relationship to work out,” said Jack. “Jan and I were delighted that things worked out relatively easy for us. We work in the same area, like to reside in a rural setting, attend church regularly and are dedicated to our families.” As added affirmation, they were one of the highest scoring couples on a church premarital test. After two years of dating, the couple married. “The choice for our honeymoon was a week’s stay in a restored Civil War-era cabin near Marlinton, West Virginia,” said Jack. “We made no plans and decided each morning where we would hike and drive. One day, we rented bicycles and biked on the beautiful Greenbrier River Trail. We had so much fun that we purchased bicycles and have biked the entire lengths of both the Greenbrier and New River trails several times over.” The O’Connells continue to prioritize outdoor activity and fitness. The couple can be found frequenting the Franklin County YMCA in Rocky Mount, where Jack is the instructor of Thursday evening’s “Rock Hard Abs” class. “I have been a YMCA member for about 15 years. I just want to stay fit and live a long and healthy life. Teaching a class at the YMCA was a personal challenge for me to grow in confidence,” said Jack. Jack and Jan’s experiences have given them insight for others who long for similar success.

“Dating and marriage isn’t for everyone. I think it is important to be truthful, open and honest in any relationship, and especially with yourself,” said Jan. Jack added, “After I lost my wife, I wanted to resume a loving relationship right away. I often came home from dates feeling depressed, like I would never find the right person for me. My daughters, family and friends gave me support and encouragement. Their advice was: Don’t settle. Wait for the right person. It was good advice.”

or many, when they hear the words “Smith Mountain Lake,” they think warm breezes and water sports. But for others, the words conjure up thoughts of cultural tours, history lessons, lectures from experts in a wide variety of fields and the opportunity to make new friends who share a zest for lifelong learning. That’s because the W.E. Skelton 4-H Educational Conference Center in Wirtz is a host site for Road Scholar, a non-profit educational travel organization for adults. Since 1975, the organization (formerly known as Elderhostel) has offered 6,500 educational tours in all 50 states and 150 countries. Participants come to the Skelton Center, a scenic, 120-acre lakeside facility, from all over the country to participate in multi-day programs on topics ranging from American presidents to the Civil War to antiquing. Dennis Crowley, the center’s adult education coordinator, said he utilizes experts from local colleges, including Hollins, Radford, Virginia and Virginia Tech, and works closely with local attractions such as the National D-Day Memorial

in Bedford and the Booker T. Washington National Monument in Hardy. “I’ve been very lucky to find excellent academic experts locally,” Crowley said. “We are limited to the kinds of programs that are native to this area, so we tend to go to local colleges and tap into their speaker’s bureaus.” Road Scholar programs used to be open only to those 55 or older, but that restriction has been removed, said Crowley. “Still, the majority are at least 65 and older, and the average age is 72,” he said. “It’s a case of they’re now having time to tap into their interests, without worrying about tests and grades. We offer a ‘snapshot’ course where one would come in on a Monday and leave Thursday. Additionally, there is the traditional course where one comes in on Sunday and leaves Friday.” The program’s usual format includes a lecture in the morning and a group trip in the afternoon. For instance, if the subject matter is Thomas Jefferson, the trip may be to nearby Poplar Forest, the third president’s personal retreat in Bedford County. Or, if group members are studying the Appalachian Trail, an activity might include a walk around the trails at nearby Peaks of Otter. In the evening, there are more lectures, a movie or some other form of entertainment. The conviviality is a big part of this program, said Crowley – “what you gain from others attending. For the most part, participants are well educated, want to learn and are curious, and this provides a setting of learning for learning’s sake.”

While the Road Scholar program is headquartered in Boston, it has more than 2,000 host sites around the world. For those who live at or near SML, the Skelton 4-H Center can also provide a learning opportunity for commuters, said Crowley. Because commuters usually don’t stay overnight, the course is also more affordable. For example, the upcoming program, “American Presidency: Success, Failure, Character and Leadership,” offered May 28-31, is $498 for a double-occupancy room, but only $228 for a commuter. For both options, the price includes nine meals (three breakfasts, lunches and dinners), seven expert-led lectures, three field trips and two performances. The Skelton Center offers both hotel and dormstyle accommodations as well as a dining hall., which will be remodeled in the fall Other facilities include the lakeside James A. Meador Nature Center, which offers aquatics and forestry classrooms and an atrium with live animal exhibits. Additionally, there are miles of nature trails, fields, forests and shoreline to explore. Crowley said Road Scholar participants come not just for the educational benefits, but also because they want to see another part of the country. There are usually about 40-50 students for one program, he said. For many years, true love was waiting just across Smith mountain Lake for Jessica Bohn and keith Bishop. But the couple had to venture to the New River Valley to find it.

essica Bohn grew up in the Moneta area of Bedford County, never missing a Fourth-ofJuly fireworks celebration at nearby Parkway Marina. Keith Bishop spent his youth in the Pittsylvania County town of Chatham, about 30 miles away. Though they were not far from one another in childhood, the two were strangers until college. “I attended Radford University and lived in Blacksburg while Keith was in college at Virginia Tech. Mutual friends of ours introduced us in 2008. We hit it off and became college sweethearts,” said Jessica, who now works as assistant director of admissions at Chatham Hall, an all-girls boarding school in Chatham. “I was drawn to her outgoing personality, kindness and attractiveness. We were a perfect match,” said Keith, superintendent of a construction company in Chatham.

Keith proposed on a rainy day in September 2011 on a beach in North Carolina. A year later, the two wed in a rustic and personalized wedding at one of Jessica’s favorite lake locations, Parkway Marina in Huddleston. “It was a special place because I grew up just two miles from there and, from the spot we were married, you can see part of Pittsylvania County across the water,” said Jessica. “We were able to incorporate both our homes into the wedding that way.” The couple took advantage of the location’s sprawling five-acre peninsula, inviting 500 guests – 385 attended – and using the space to create an atmosphere suited to the bride’s rustic taste. “It was definitely a do-it-yourself wedding,” said Jessica. “My mom and I were able to get all the resources locally. We decorated with a mantle, barrels, chalkboards and primitive centerpieces from Olde Mill Primitives in Goodview. We used pavilion

ferns from Smith Mountain Lake Flowers and baby’s breath from the Kroger in Westlake. I bought old books from the Moneta library for the centerpieces, and the Common Ground Bluegrass Band, also from Moneta, played during the ceremony.” Firepits for making s’mores, hay bales for seating, an antique dresser used as a photo prop and a simple bride-and-groom seating set added to the homespun vision.

2013 SML Wedding Guide The days surrounding the Bishop wedding were prime opportunities for guests to take advantage of lake amenities. Some of those who lived at SML traveled to the event by boat. The ones from farther away shopped and dined locally and enjoyed nearby attractions. “Keith’s dad and stepmom turned our wedding weekend into a vacation by renting a home on the water. All of our out-of-town guests stayed at Mariners Landing Resort, and many of our guests ate at local restaurants. Keith and his groomsmen ate breakfast at the Mayberry Diner and golfed at Mariners Landing the morning of the wedding,” said Jessica, adding that guests were impressed with the elaborate design of the wedding, as well as Smith Mountain Lake itself. 46 January • February 2013 | SMITH MOUNTAIN LAKEr

“Many people commented on how detailed the wedding was but would always add in, ‘And the lake, how much more perfect can you get?’” she said. After celebrating their dream wedding, the couple spent their wedding night at Mariners Landing before heading to Cape Hatteras in North Carolina for their honeymoon. Both bride and groom said they were overjoyed with how their big day turned out. “I really enjoyed everything about the wedding, from the bluegrass at the ceremony to all of the decorations,” said Keith. “It was a lot of hard work, but it was worth it. The best day of my life.” Jessica added, “Smith Mountain Lake was a special place to us already, so being able to add even more memories to this place gave us such a good feeling. From now on, every summer we pass Parkway Marina by boat, we will never forget … how beautiful the setting of our wedding was on a late-summer evening at Smith Mountain Lake.”

CAMpgrounds A walk on the wild side is the accommodation choice of many vacationers, and Smith Mountain Lake has numerous locations for it. Campgrounds here offer a wide range when it comes to amenities, seclusion, lake access and views, but each is sure to provide a rustic, back-to-nature experience. Whether you prefer a tent or RV, SML’s campgrounds and RV parks offer easy access to outdoorsy activities, including water sports, fishing, swimming, hiking, biking and canoeing.

HoteLs/MoteLs The hotel and motel scene at SML and in the surrounding area offers a variety of choices, with perks that depend on location. Fishermen and water sport enthusiasts may want to consider hotels and motels in the heart of the lake area – including Lake Inn Motel, Halesford Harbour Inn, Gills Creek Marina and Westlake Waterfront Inn – that provide easy access to the water and ample parking for boats and trailers. “For fishermen, we’re in the bullseye about 10 months out of the year,” said Ron Webb, who has owned and managed Westlake Waterfront Inn in Hardy the past nine years. “Surrounding the point we’re on is the largest concentration of striped bass. [And] this location offers very convenient access to the hub of the lake.”

Some are looking for a special way to celebrate a special event. Our houseboats have hosted many weddings, anniversaries, birthdays and family reunions. With a houseboat, you have the freedom to cruise the lake at your leisure and whenever you feel like settling in, just find a cove and drop anchor – and with all the comforts of home at your disposal.”

resorts And ConFerenCe Centers While all can accommodate families and small groups, resort and conference centers at Smith Mountain Lake are ideal for businesses and larger groups that need easy access to amenities for conferences, meetings, weddings, reunions and other events. A spacious conference center is located in each of the three counties bordering the lake, where


guests can be treated to high-quality lodging along with meeting facilities and technology to ensure productivity. Many lake visitors choose a resort for a more metropolitan stay complete with suites, on-site dining, pools and fitness centers.

VACAtion rentALs Vacation rentals are an increasingly popular choice for lodging at Smith Mountain Lake. Singles, couples and families can secure a lake home or condo, many of which are pet friendly, by dealing directly with the homeowner or with the help of a vacation rental company. Coveside Cottages owner Candace LaPerna said renting a cottage or home provides vacationers with flexibility. “When you go to a hotel room or conference center, you’re often limited to [what’s at] that facility as opposed to having a full kitchen and [outdoor] grill. Everything is available that a house would have. It’s like going away from home and being home. The affordability is a big benefit. You can save money by making your own meals,” said LaPerna. TURNING A NEW LEAF AT LOVESTONE When it comes to the daily demands of owning a bedand-breakfast, Dawn Spencer and Tom Zirkelbach have lost that lovin’ feeling.

“I’m available to prepare meals – like a personal chef, any meal they want – and that is contracted separately,” she said.

The couple, who recently celebrated their 36th wedding anniversary, have spent the past 10 years operating LoveStone Inn as a B&B at Smith Mountain Lake. This year, they will convert the five-bedroom waterfront property into a vacation rental home and venue for special events.

The couple also will concentrate on booking the facility for special events accommodating up to 200 guests, including weddings, rehearsal dinners, birthdays, anniversaries, showers and holiday parties. Spencer offers expertise as a consultant in human resources management to business professionals who wish to schedule meetings or retreats at LoveStone.

“Converting it to a vacation rental home is going to give us more time to travel,” Spencer said. “It won’t be as confining as a bed-and-breakfast. The B&B was 24/7.” Spencer and Zirkelbach live in a cottage adjacent to the main house and will continue to serve as caretakers of the property, which encompasses six acres near SML State Park in Bedford County. Spencer also will offer her culinary skills to LoveStone renters.

Spencer said she and Zirkelbach will miss certain aspects of being bed-and-breakfast owners, but are looking forward to the next chapter in their lives. “The 10 years were fabulous,” she said. “We met hundreds of wonderful people, so it’s kind of bittersweet. Perhaps the crunch of heatinfused habanera peanut brittle or smooth-tasting beer brittle would better tantalize your taste buds? Decadent treats make an irresistible addition to any Valentine’s Day menu, but who needs a holiday that only comes around once a year as an excuse to indulge? Not local chocolatier Stacy Noland, owner of Stacy’s Sweet Spot. She makes sweet sensations in her home kitchen all year long. “I started developing recipes for sweet stuff when I was young,” said Noland. “Instead of spending my hard-earned cash on clothes like most adolescent girls, I spent mine on chocolate. I would buy chocolates from the local candy store, eat them and recreate the flavors in brownie, cake or frosting form.” Noland put aside the childhood hobby to pursue careers in retail and construction management, moving from Houston to Smith Mountain Lake where family members, including sister Tiffany Silva and brother-in-law Bruno Silva, owners of The Landing Restaurant, had settled. She met and

married her husband, Steve, in 2010, and they have a blended family that includes six children and three grandchildren. Four years ago, Noland rediscovered her love of chocolate creation. “Steve was looking for Christmas gift ideas for his friends and clients, and I suggested making up gifts of homemade candies, chocolates and cookies. When year two of doing this came around, everyone could not wait for their sweets, and many suggested I go into business for myself,” Noland said. “I enrolled in the professional chocolatiers program at Ecole Chocolat chocolate arts school and ended up graduating with honors.” Steve cashed in their Aruba fund (fortunately, they were gifted a trip there last May) to pay for the course and supplies. Stacy’s Sweet Spot was launched in 2010. “Just as with any business, you breathe and sleep what you do. It is a full-time job for two of me, maybe three,” said Noland. “Right now, I am the only full-time worker, but I have help when it comes to keeping up with demand, right down to my 6-year-old granddaughter, Johana, who is a labeling princess.”

Noland’s chocolates, which range in price from $5 to $36, require hours of effort.

“One batch of truffles is at least a 24-hour process,” she said. “There is the initial preparation of the ganache, the time needed to crystallize the formation of the actual truffle if hand rolled or piped into molded shells, overnight time to cure, and then the actual dipping of hand-rolled truffles or placing the cap on molded truffles, and any further decorations required.” Noland said Valentine’s Day is her busiest holiday, followed closely by Christmas and Easter.

Each occasion provides inspiration to experiment with different flavors and molds. “New items are a constant,” she said. “I keep a notepad on the nightstand to capture [the ones that come] in my dreams. Popcorn truffle is one of them ,and we have some new and even funkier brittles due to launch, some involving basil and tomato. As for my favorites, I tend to gravitate toward the stronger, darker flavors - and anything spicy. So, Bad Ass Brittle dipped in 80-percent dark chocolate or a dark chocolate truffle gets me every time.” Last Valentine’s Day, Noland partnered with Hickory Hill for special wine-and-chocolate-pairing events. Wendy Furrow-Scott, who operates the family owned winery with her husband, Donald Scott, said they plan to host a similar class on Feb. 15. “It was fun to learn about the chocolates from Stacy, who created nuances I would never have imagined,” said Furrow-Scott. “People loved her chocolates. It’s the quality that sets them apart. She goes to a lot of trouble to bring in good chocolate.” Furrow-Scott said the Deep Dark Espresso Truffle paired well with the winery’s cabernet sauvignon, and the Strawberry Breeze Truffle enhanced the flavors of their Smith Mountain Lake Redbud, a sweet wine.

Cakes, cookies, pies and cheesecakes are also part of the goodies offered by Stacy’s Sweet Spot. Whenever possible, Noland incorporates local products in her recipes, including dairy from Homestead Creamery, beer from local breweries such as Blue Mountain near Afton and produce from PePaws Produce in Penhook. “My goal is to teach and inspire others about fine chocolates,” Noland said. “Try a fresh Cherry Cardamom Truffle, made with a single-origin chocolate made with pure cocoa butter and not all the additives mainstream chocolate companies use. g Prepare crust: Stir together all ingredients and press into the bottom of one 8-inch spring form pan, two 4-inch spring form pans or 12 muffin tins. Bake at 350° for 5-7 minutes. Allow to cool. g Prepare filling: Pre-heat oven to 450°. Melt white and milk chocolates (separately) by microwaving at 50-percent power until melted and smooth. Set aside to cool. Beat cream cheese with an electric mixer until fluffy; add eggs one at a time until blended. Mix in white chocolate, sour cream, sugar, flour and vanilla, beating well after each addition. Remove 1½ cups of the filling, transfer to another bowl and blend in the milk chocolate. Place one spoonful of milk chocolate filling into each muffin tin, follow with white chocolate filling. Using a knife, toothpick or fork, pull through filling to create a swirled effect. Place muffin tins in oven on pans filled with hot water and bake for 10 minutes. Reduce heat to 240° and bake for an additional 10 minutes. Cool to room temperature, then refrigerate. g Infuse pears: Mix wine and sugar in saucepan over medium heat until sugar is dissolved. Add pears to pan and cook for several minutes until pears are slightly softened. Remove from heat, let cool and then chill. Serve atop cheesecake.
