Additional containers can be added and the connecting arch moved or taken away to adapt the design to a buffet, placecard, or other party table of any shape and size. 1. Cut bricks of floral foam as needed to fill glass rectangles of varying heights to the inner edge. Soak the foam and cover the sides with aspidistra leaves, secured with greening pins. Using variegated leaves adds curvy lines to the design, in contrast to the straight lines of the rectangle. 2. Insert flowers in groups. Start with liatris in groups of two and three, to establish height and also rhythmic divisions as the eye moves from left to right or vice versa. Begin to fill in at the base with low, round hydrangea, plus sprigs of eucalyptus. 3. Accentuate the stands of liatris by surrounding them with roses, callas and mokara orchids at medium height, in between the liatris and the hydrangea. 4. Connect the two designs with an arch of midollino. b

Woodland Nature, in one way or another, inspires all of the best floral designs. But nature in what aspect? Most floral arrangements recall a garden or conservatory more readily than a walk in the woods, a meadow ramble, or a stroll on the beach. And yet, when do we feel closer to nature than in the forest? Flowers may be present, but usually they play a relatively inconspicuous role in the great theater of tall trunks, PHOTO: BRUCE WRIGHT

moving breezes and green leaves. The palette is subtle, even muted, yet infinitely rich. Even in spring or summer, plants may be discovered at various stages of maturity; we may stumble on a fallen tree with exposed, decaying flesh, or find fresh sprouts growing out of last year’s crumbling humus. All kinds of plants—annuals and perennials, grasses and wildflowers, towering trees and creeping moss—share the landscape. Strips of birch bark and slices of wood set the tone for Tom’s woodland-inspired design, along with tall branches of feathery grevillea and furry kangaroo paws. Deep reds and golden yellows complement the dominant greens, grays, tans and browns and harmonize with them. Most of the materials in this design seem to spring in radial fashion from a single source at the center (inserted into floral foam in a liner that sits on the top reclaimedwood base). Craspedia and millet spill from the focal area; de-petaled sunflowers subtly shadow the angles of gerbera blooms higher up. The low base, the placement of the dominant branches, and the emphasis on shape and line suggest that Tom was inspired by the ikebana tradition, in which the goal is to imitate, rather than to control or overrule nature. That would be in keeping with the wabi-sabi spirit of the wild and woolly woods. b

Using variegated aspidistra and gerberas in vivid hues adds to the fan-fold fun. This technique can be used with just one gerbera stem or with two, one on each side of the spine of the aspidistra leaf. 1. Make three short slits along the spine of an aspidistra leaf, each just an inch or so long. Don’t make them too big, or they can tear as you insert stems through them. 2. Pull a gerbera stem through the slits, starting at the top of the leaf. 3. At the bottom, you may choose to wire and tape the leaf stem and flower stem together for security and ease of insertion. b

Something old, something new, something fragrant, something blue.

I

t’s official: lavender has joined the rank of other “old-fashioned” flowers that are now to be found all over Pinterest and Instagram, in fresh bouquets, hair ornaments, boutonnieres and corsages. Dried lavender and lavender essential oil, once confined to the drawers where Grandmother kept her linens and lingerie, have reemerged as the darlings of aromatherapy and even haute cuisine. Enthusiasts are recommending lavender as everything from a cure for insomnia to an insect repellent. Like many other trending flowers, lavender is deeply traditional, a flower and fragrance woven into Western cultural reference for cen-

turies. At the same time, for many customers an encounter with fresh lavender is a rarity; it’s certainly far from an everyday flower-shop staple. ALL IN GOOD TIME One reason is that as a fresh cut flower, lavender remains highly seasonal. True, different kinds and cultivars of lavender bloom at different times of year, and of course the harvest also varies with geography and climate—so you can get lavender almost year-round if you’re resourceful (and, perhaps, not too picky). “We’ve had such crazy warm weather for the past couple of years that we’ve been able to get fresh lavender of one kind or another virtually year-round—also thanks to our local microclimates,” says Malyne Hazard of California Flower Shippers, a wholesale flower shipper in the San Francisco Bay area. “We buy from a lot of small farmers up and down the coast, niche growers of niche things, and we’ll get 20 or 30 bunches every other day or once a week.”

Likewise, at Camflor, a grower-shipper in central California, “we have lavender at this point year-round,” says Carlos Cardoza. The only limitation, he says, comes from the fact that lavender is always field-grown, without SOME LIKE IT HOT While lavender is grown commercially all over the world, from Japan to Ukraine to the American Midwest, one of the oldest and most storied production areas is the Provence region of France (pictured). Field after field in Provence is planted with one or another cultivar of what is perhaps confusingly known in the trade as “English” lavender, famous for its sweet scent. French lavender is another species altogether (see page 20)—but if you buy something called “French lavender oil,” it is probably made with English lavender that was grown in France. Despite the name, English lavender (Lavandula angustifolia) is native to the Mediterranean region; in general, lavender grows best in areas with a relatively dry climate and plenty of summer sun.



any cover—so if there is heavy rain after the weather has turned warm (more likely to happen in spring than in summer), the flowers can get mold. The only choice then is to cut it back and wait for the next harvest. At Camflor, Carlos grows mostly French and Spanish lavender, which he says his customers prefer: “smaller heads, but more compact. My customers like the wheat look, with the little tassel on top of the flower.” By far the dominant variety in the industry, however, is English lavender. (More on the different types in a moment.) And English lavender typically blooms later in the season; it’s at its peak only for a short period of two or three weeks. In the warm, sunny, relatively dry areas of high production that English lavender loves best, that’s usually in June. “I sell English lavender the most,” says Aaron McKinnon, Los Angeles market manager for Mayesh Wholesale, “and the quality is by far the best in late June, maybe into July, when we get gigantic 50-stem bunches in from a nearby growing area in Ojai, California—the best of the best. yes, we can get lavender at other times of the year, but it’s relatively scarce and not the same quality.” In the end, lavender of any kind is a perennial that blooms at most once or twice a year. (Some growers insist it’s better for next year’s harvest to leave the second bloom, if any, on the plants.) The places where it can be grown

are limited; it’s finicky about the climate it prefers, and can’t be grown cost-effectively in a greenhouse. So, the very best time to enjoy fresh lavender is during its brief season. CULTIVATING QUALITy Worldwide production of lavender is driven more by the essential oil business than by the market for cut or dried flowers. But whether for cut or dried flowers or essential oil, one species reigns supreme: English lavender, Lavandula angustifolia. Don’t be confused by the name: this lavender is not native to England but to the Mediterranean. Much of the lavender used for dried flowers and essential oil is grown in the south of France—but the variety is still either English lavender (L. angustifolia) or one of the English lavender hybrids known as the lavandins (Lavandula x intermedia). English lavender is favored for the sweetness of its scent and for its ability to retain color and fragrance when dried. The lavandins are also widely grown; they are tougher, with longer stems and bigger, more compact flowers. They also produce more flowers and more oil—but the oil is of lesser quality, because sharper and less sweet. Within these two categories, many cultivars known to gardeners have their own special characteristics. Colors range from dark purple to pale violet, pastel pink, and pristine white. A popular variety of English lavender is

‘Hidcote’: a dark blue-purple, short-stemmed but highly fragrant variety, excellent for drying. Another English lavender cultivar, ‘Jean Davis’, is known for its light pink coloration and fruity flavor. The English hybrids in general can be faulted for a higher rate of abscission—flowers dropping from the stem—but one cultivar in particular, ‘Grosso’, keeps its flowers nicely; the flowers of ‘Grosso’ also have a purple rather than a green calyx, making them ideal for monochromatic bouquets. In practice, however, when you purchase lavender as a fresh cut flower, you will probably know only that it is one of three broadly defined types: English (or English hybrids), French, or Spanish. Grown in lesser quantities, the French and Spanish lavenders bloom earlier in the spring. They tend to be less fragrant, however. Also, “they don’t dry well— they’re too pulpy,” says Malyne at California Flower Shippers. “The florets are larger and floppier and the stems not as stiff. They have to be cared for differently and turned quickly.” CUT AND DRIED Given the short season and the vulnerability of lavender as a cut flower, we’re fortunate that dried lavender flowers ENGLISH PREFERRED The market for dried flowers and for the production of essential oil is dominated by the “English” lavenders (Lavandula angustifolia) and their hybrids (a typical cultivar is pictured). Many buyers also find these to be ideal as cut flowers. Highly fragrant, they produce long, whorled spikes on sturdy stems. The hybrids are also called lavandins; their fragrance is sharper than that of pure English lavender, with pungent notes of camphor, but the flowers are larger and more abundant, on longer stems. The blooming season for the hybrids follows close upon the season for L. angustifolia, so that together, the English lavenders and the lavandins produce flowers over a short period from late spring to mid summer. They come in a wide range of cultivars, with diverse colors and other characteristics. Of these, however, a few are the best known, including ‘Hidcote’ English lavender and the English lavender hybrids, ‘Grosso’ and ‘Provence’.

can, under the right circumstances, retain their color and fragrance beautifully. In purchasing dried stems, look for healthy stem color: gray-green, not gray or brown, advises Diann Lovejoy of Lovejoy Farms, a grower of dried flowers, herbs, and botanicals in Washington state. A discolored stem could indicate that the product is old and petals will drop. “We only use English lavender for drying,” Diann attests; other types are likely to drop flowers or to change color as they dry. “Ours is not preserved, nor colored”; it is naturally air dried, without application of heat, which tends to destroy the fragrance. The very best dried lavender from Lovejoy Farms, then, would be available about three to four weeks after harvest, which for English lavender in

Washington is from the end of June to the first couple weeks of July. But fragrance and color last nicely for at least a year. GROW yOUR OWN? When brides or other customers want fresh lavender and it’s out of season or otherwise difficult to obtain in good quality, one solution might be to check your local nursery for blooming plants. Another, if you have a little space for it, outdoors in a dry climate with well-drained soil and full sun, is to plant some in your garden. If you choose to go that route, be advised that it’s best to take cuttings or purchase the plants, since lavender is quite difficult to grow from seed. In fact, it is actually impossible to grow lavandins from seed, because the spe-

cies is sterile. your plants will start producing quality lavender starting during the second year of growth as long as they have good air circulation, and should need little or no fertilizer. Harvest lavender flowers in the morning, while it is cool, but after any dew has dried. Be sure to keep them out of direct sunlight, which will cause the cut flowers to fade faster and to release their fragrance more quickly. For use as fresh cut flowers, they should be harvested just before the blooms open—but if you miss that moment in the bloom cycle, you can still harvest for drying. If the flowers are more mature, they may fall, but can then be used in making potpourri. Like many other flowers, lavender can be

TASSEL-TOPPED FRENCH AND SPANISH In the cut-flower marketplace you may encounter two other broadly defined types of lavender. Easily recognized by their tassel tops, French and Spanish lavenders (also called topped lavender) bloom earlier in the year than the English lavenders and their hybrids. In general they are less hardy than the English. The colored tassel tops are actually bracts (modified leaves). French lavender (Lavandula dentata, pictured at left) has a more compact flower and lovely serrated foliage; in the photo, you can see the tiny true flowers peeking out from the compact inflorescence. Spanish lavender (L. stoechas, at right) has a cylindrical shape and dramatic flags of vivid purple.

CyCLAMEN CIRCLE The foundation of the design at right is a FloraCraft Styro Plus wreath, 14 inches in diameter and two inches thick. “Styro Plus” means that the green Styrofoam wreath is fortified with a waxed-corrugate backing—important for supporting the finished design. Jenny hollowed out a cavity inside the wreath form and equipped it with wire legs, as seen in the how-to photos, page 37. She decorated the outside of the wreath with green ribbon decked with fresh pine needles; the inside of the wreath is also lined with ribbon. Finally, she lined the wreath cavity with plastic and filled it with cyclamen plants in two striking colors. She filled in the space between the plants with dark green reindeer moss and added a woodsy veil made with stripped sprigs of asparagus fern. Massed and elevated in a circle, the winged blooms

PURPLE CLOUD At left, to call out the blush tints of long-stemmed phalaenopsis blooms, Jenny surrounded them with wax flower, first stripping the lower stems of the wax to create a tiered or cloud effect. The wax flower stems also provide support for the phalaenopsis, in lieu of a stake. The orchids are placed in the container in their pots, surrounded by foam, which hydrates the wax flower, including a little patch at the base; lava rock covers most of the foam and soil. Lime green wired wool adds a bright accent above the textured Iris Bowl. EAT OR BE EATEN Plants like carnivorous sarracenias (pitcher plants), available but certainly not run-of-the-mill, can turn an everyday design into a striking novelty. At right, the pitcher plants are paired with “shamrocks.� (These, with their pretty white flowers, are not true clover but a kind of oxalis, an edible plant related to sorrel.) Jenny planted both together with equisetum, which shows a different, more delicate character as a plant. The plants make a fan shape that goes from dark to light, domed in soil in the center of a low clear glass bowl and shored up with black river rocks. Callas and curly willow tips are added for color and line. The callas are in water tubes, so they can be removed when they have faded without leaving floral foam behind.

MOONSCAPE At upper left, a superstructure of craspedia functions like an abstract botanical sculpture that will dry in place above a long row of yellowflowering moon cactus (Gymnocalycium mihaori). Jenny placed damp potting soil into the long low Denver Boat, then wedged the cacti into place with black river rocks, starting from either end of the bowl. She created the superstructure of craspedia separately, simply by inserting short craspedia stems directly into the flowering heads of other craspedia, some with short, some with long stems. Cuttings from a string-of-pearls plant add the finishing touch. LOVE yOU BUNCHES African violet plants look more than ever like little nosegays when they are massed in a low bowl and surrounded with loops of bundled bear grass. The plants are left in their pots, but Jenny first prepared the bowl with lava rocks and potting soil to anchor the pots; they will need to be watered individually. She trimmed both the root ends and the tips of each bear grass bundle to make it nice and even, easy to insert into the soil of the pots. ORCHID ABSTRACTION The “branches” are bright fuchsia-colored Fiber Sticks, encased and elevated inside rectangular plate-glass prisms—and yet, the presentation on this page recapitulates the natural growth habit of epiphytic orchid plants, perched on trees in the rainforest. The sticks are stuck together with UGlu to create free-form sculptures, where the orchids look right at home, their dangling roots washed clean. Pink gravel and bright green reindeer moss reinforce and brighten the palette. The reindeer moss also helps to capture and retain moisture at the base of the plant. A taller orchid nestles in a low glass rectangle, its root ball covered in moss and wrapped in bright pink wool fabric. For a how-to photo that shows how Jenny prepared the Fiber Sticks, see page 37. INTOXICATING FRAGRANCE Wafting their rich perfume, the flowering jasmine plants above share two low green ceramic rectangles with echeveria in a seductive shade of purple edged with pink. Accents of light pink wired wool underscore the margins of the succulent rosettes. Can you imagine a more luxurious, romantic, and at the same time long-lasting floral gift?

STARS AND STRIPES Below, pink ‘Esperance’ roses in water tubes bring out the glowing pink margins of echeveria rosettes in a structure of tiered aluminum trays. The water tubes are slipped into rolled ti leaves. They can easily be pulled out to replace the roses as needed; the design remains attractive without the flowers. Jenny secured the stacked trays with UGlu Dashes. She filled them with potting soil, including the covered areas (for weight and balance), then took the succulents from their pots and removed enough soil to plant them in the shallow trays. Floral adhesive holds the shape of each rolled ti leaf; the leaves are then simply nestled in the soil along with a few sansevieria leaves. Pink gravel punches up the color scheme, plus one-inch Styrofoam spheres, sprayed with Design Master Basil and Olive Bright and studded with apple-green midollino.

TAKE A STAND At left, airplants (tillandsias) nestle, elevated, on custom stands that Jenny made herself with florist wire, covered with Bind Wire. The stands are constructed with feet to hold them upright; at the top, they have branches that support the airplants. The branches are additionally dressed with skirts of long bundled bear grass and a chain of short bear-grass bundles. For how-to shots, see page 36.

PEARL CASCADE Dark red ti leaves provide a beautiful background for dangling strands of string-of-pearls (Senecio rowleyanus). The strands have been cut from the plant but, being succulents, they can easily be re-rooted and recycled as living plants. Eucalyptus leaves join the cascade; ‘Cool Water’ roses, Moon spray carnations, and eryngium complement the colors of the ti leaves and the dark blue Occasion Vases. To create height in the designs, Jenny stacked bricks of foam while providing support and an essential layer of plastic, as seen in the how-to photos on page 36.

BRANCHING OUT The twisty shape, natural texture and light color of grapewood branches make a beautiful complement to lush green and blooming plants. Jenny mossed the ferns and azaleas simply by removing them from their pots, wrapping them with moss, and securing the moss with a further wrapping of Bind Wire. Then she mounted the mossed plants onto the grapewood with florist wire, as seen in the how-to photo on page 37. When the plants need watering, they can be removed and dunked in water, then allowed to drain before they are replaced on the grapewood. Skeleton leaves, handmade of curly willow and Bind Wire, harmonize the color and texture of the wood with the living plant motif.

TREE HUGGERS Like orchids, many bromeliads grow naturally as epiphytes on trees— including tillandsias (airplants) and flamelike guzmanias. Here they create an eye-catching, nature-inspired spectacle, hung right side-up and upside-down on a curly-willow “tree” fashioned with both willow tips and the thick lower stems. Jenny built the tree using the Lomey Design System in clear acrylic. The Lomey System is sturdy enough to support the willow yet nearly disappears when the design is completed. To secure the structure, she surrounded the hollow, upright Lomey Column with willow; she bound the willow, not to the Column but to other stems and branches. With the cut ends drinking water from the clear Lomey Dish, the willow will leaf out as time goes on. The mossed bromeliads and tillandsias are secured to the “tree” with Bind Wire. Equisetum stems angle their way around the tree; reindeer moss adds touches of bright green. 34 www.flowersandmagazine.com

How-to’s TAKE A STAND, page 29 The foundation of this design is a reusable, custom-made stand made by wrapping bundles of heavy-gauge (#18) florist wires with Bind Wire. To make the stand tall enough, you need two bundles, each composed of about two dozen wires. The two bundles overlap in the center of the

Make a bundle of the wires and twist them around the branch as seen in the photo at right, with ends splayed so that they can be bent upward to make a “basket” that catches the mossed plants. The wires can also be used to secure two branches together for greater stability. The ends of the wires are inserted into the moss. When the plants need watering, they can be removed and soaked, then allowed to drain before they are replaced on the wood.

Use your design knife to carve a circular cavity in the center of the wreath. To give the wreath legs, make bundles of heavy-gauge (No. 18) wire, four wires to a bundle, and insert them through the bottom of the wreath in four places, so that the wires emerge just above the cardboard backing. Wrap the wires tightly with Bind Wire, then reinforce them in place with pan glue. To decorate the outside of the wreath, cover a long piece of ribbon, first with UGlu Strips, then with pine needles (lay the pine needles on thickly, then shake off the excess). Tom stapled the giftwrap in place, then secured twin aluminum deer heads to the plywood. He wrapped a four-foot rod with ribbon in gunmetal gray, secured silver mitsumata to the ribbonwrapped rod, and let the rod and mitsumata rest in the deer antlers, so that he could hang ornaments, garlands, and flowers in water tubes from the rod. This wall would make an eye-catching shop-window or in-store display.

MAKING WAVES For the most lavish look possible in a floral wall, nothing beats Oasis Floral Foam Tiles. Squares of Oasis Maxlife floral foam are adhered to a plastic backing; the segmentation of the foam into square “tiles” keeps the moisture within each tile, so that all the foam on the sheet remains fully hydrated. Here, the tiles are secured with Velcro to a sheet of plywood supported by a wood frame (see page 48). The sheets can easily be cut with a design knife to fit the frame exactly (it doesn’t have to be where the tiles separate). To create the wall seen here, Tom filled the frame with the tiles, then laid it horizontally on top of a long table. Before beginning his insertions, he carved wavy lines and circles in the foam to serve as guidelines for the design—a colorful confection suitable for a spring or summer wedding.

sPriNG sHoWErs A decorative shower curtain, made of textured fabric, is glued onto a plywood frame, and sewn with horizontal stripes of rosette ribbon. The ribbon stripes are closed on the bottom, but open at regular intervals on the top, making pockets for water tubes, so that fresh flowers can easily be placed and replaced as needed. For the top and bottom of the wall, Tom created a border made of foam board petaled with silk rose petals. The panels are stapled to the plywood, which is supported by a frame built out of two-by-fours and held upright with brackets like the one in the howto photo on page 48.

FLOATING FRAMES Premade window screens, framed in white vinyl, are faced with brown ribbon and decorated with split sections of bamboo; they hang suspended on monofilament in an open wood frame. The monofilament is strong but practically invisible, while the window screens create a smoky illusion. The bamboo sections are cut from cubes and rectangular containers in the Teleflora Bamboo Collection, soaked in water overnight so they could be pulled apart. Once soaked, they can be sliced with a utility knife, going with the natural grain. Bullionwrapped embroidery rings add further decoration, along with water tubes, attached to the bamboo with UGlu and wire, then filled with ‘Mango’ callas, craspedia, and pheasant feathers. Tom curled the feathers with his knife, running the blade with a single motion against one side of the shaft. Overlapping, gilded salal leaves add the final touch. For how-to’s, see page 48.

A GARDEN MEDALLION Garden mesh (as seen on page 48) is sold under many different names, mostly in garden centers, to keep deer and other wildlife out of the garden. It’s like chicken wire, but made of a plastic that is slightly stretchy—just enough so that water tubes can be pushed through the holes. It comes on a roll. Tom stapled the mesh to an open plywood frame, stretching it fairly tight and overlapping two rolls to cover the frame entirely. He placed sections of white hydrangea and salmon-colored ‘Amsterdam’ roses into water tubes and inserted the tubes into the mesh, so that the bottoms of the tubes were angled downward to prevent leaks (overlapping sections of garden mesh make this easier). He then outlined the roses with rolled and folded leaves, a combination of aspidistra and anthurium. As a finishing touch, he feathered the edges of the wall and filled in here and there in the center with White Mist plumosus.

MAKING WAVES, pages 40-41 Oasis Floral Foam Tiles, segmented to prevent moisture from draining to the bottom, come in sheets of 12 square foam tiles. The sheets can be cut to fit the space available within a wood frame and adhered to plywood on the back of the frame with Velcro. For construction of a large floral wall, place the frame horizontally, elevated on a table, and carve guidelines in the floral foam surface, like the curves and circles seen here, before you begin your insertions.

A GARDEN MEDALLION, pages 46-47 Garden mesh is sold at garden centers under various names. For your floral wall, you want a mesh or nettings made of somewhat flexible plastic, strong but flexible enough to hold water tubes pushed through the holes. The mesh can be stapled onto a wood frame.

STANDING WALLS All of the walls in this feature were built on the foundation of a wood frame made of two-by-fours or one-by-threes. The frames can be assembled in different ways and equipped with a plywood backing, or not, depending on your needs, but all were supported with brackets to keep them securely upright.
