CHARLIE & THE GREEN JUICE FACTORY The Reinvention of Green Juice Production A proposal for an organic fruit and veg marketplace, providing fresh goods to the growing community of Nordhavn. Produce unsold in the market, will be transferred into juice production, whereby the traditionally linear production process is reconfigured vertically and exposed in order for the visiting public, to wonder, explore and experience the process of fresh juice production. A variety of green juices will be produced and frequently changing, in accordance with the available goods. The juices will be sold in the marketplace and distributed more widely throughout Copenhagen.

Stages of Production 1 Washer - Washing the produce to remove debris and dirt 2 Selecter - Inspection of produce to remove rotten items, also analysis of items to ensure they meet maturity requirements and size standards 3 Extraction- Removal of skins or stalks which can be bitter in some cases and taint the sweetness of juice 4 Blending- Using rotating steel blades, produce is blended from solid into pulp 5 Pump- Pulp is pumped into the centrifuge 6 Centrifuge- The centrifugal machine further breaks down the pulp and spins at high speeds of (approximately 3,000-16,000 RPMs) and by the sheer force of the spinning motion, the juice is extracted from the pulp) -OR6 Hydraulic Press- Used in cold-pressed juicing process, the hydraulic press pressurizes the pulp between two plate causing the liquid content to drip into a collector 7 Mixing Tank- Juice is mixed prior to homogenisation to maintain distribution particles and balance. 8 Homogeniser- Liquid passes through the capillary openings at high speeds, disintegrating particles to uniform the particle size and distribution, overall smoothing the product 9 Ultra Pasturisation (or Temperature Sterilising)- Steralises the product using ‘ultra’ high heat of above 135°c for a short time, then ‘flash cooling’ to maintain the high temperature for the shortest possible time to prevent adverse effects 10 Mixing Pot- Combinations of single juice types are mixed for flavour purposes 11 Canwasher- Bottles and containers are washed and prepared for filling 12 Filler- Contianers are filled with the complete juice 13 Sealer- Bottles are lidded and sealed 14 Packaging + Boxing- Bottles are packaged and boxed for sale and distribution

Tree tenants give shadow in summer but let sunlight through in winter when leaves have fallen. 7. Butterflies and birds come back. 8. Beauty and joy of life come back. Living quality is improved with this piece of own nature. 9. The tree tenant is a symbol of reparation towards nature which is extremely visible. We restore to nature a tiny piece of the huge territories which man has taken away from nature illegally. The tree tenant is a giver. Pipes trace the figure of the factory - up, around and to the ground - growing into the surrounding landscape and spanning outwards, inviting visitors inwards.
