CHARLIE & THE GREEN JUICE FACTORY The Reinvention of Green Juice Production A proposal for an organic fruit and veg marketplace, providing fresh goods to the growing community of Nordhavn. Produce unsold in the market, will be transferred into juice production, whereby the traditionally linear production process is reconfigured vertically and exposed in order for the visiting public, to wonder, explore and experience the process of fresh juice production. A variety of green juices will be produced and frequently changing, in accordance with the available goods. The juices will be sold in the marketplace and distributed more widely throughout Copenhagen.

Nordhavn Aerial Perspective
“More than 20 million people around the world watched Joe Cross juice his way across America, losing 100 pounds and getting off medication in Fat, Sick & Nearly Dead. The film ignited a juicing movement. Viewers around the world have been inspired to start juicing, lose weight and get healthy - and as a result of the film over 370 million glasses of fresh juice have been consumed, 370,000 tons of fruit and vegetables consumed, more than 24.8 million pounds of weight lost, and over 220,000 people are now medication free.

4. Fruit and Vegetables “Danish fruit and vegetable suppliers are not able to cover the growing demand in Denmark and the market is constantly looking for new suppliers. In 2016, the U.S. exported USD 6 million of fruits and vegetables to Denmark.” United States Department of Agriculture (USDA) Mission to the European Union https://www.export.gov/article?id=Denmark-Agricultural-Sector Published: 08/08/2017
“Denmark is one of the leading consumer countries of organically certified food in Europe. In the retail industry, sales of organic products is increasing, most recently reaching a 10% share in 2016 agri-market share. Grocery stores subsidise prices to keep the price of organic food down. Organic dairy and eggs, vegetables, and bread/grains make up a large share of organic sales. Organic food and beverage products are, for the most part, sold in the mainstream in Denmark.” Agriculture and Agri-Food Sector Profile - Denmark http://www.agr.gc.ca/eng/industry-markets-and-trade/international-agri-food-market-intelligence/europe/market-intelligence/agriculture-and-agri-food-sector-profile-denmark/?id=1486669705936 Published: November 2016

The world leading organic nation “The Danish consumers are the most pro-organic consumers in the world. In fact Denmark has the world’s highest organic share and the most well-developed organic market. The sale of organic fruit and vegetables has increased with 26% percent from 2015 to 2016 and now makes up 29% of the total organic turnover. Resultantly, fruit and vegetables have outpaced dairy as the largest organic food category. The chart shows the value shares of the total, organic turnover per category in 2016.” Source: Statistics Denmark 2017 http://organicdenmark.com/organics-in-denmark/facts-and-figures

Stages of Production 1 Washer - Washing the produce to remove debris and dirt 2 Selecter - Inspection of produce to remove rotten items, also analysis of items to ensure they meet maturity requirements and size standards 3 Extraction- Removal of skins or stalks which can be bitter in some cases and taint the sweetness of juice 4 Blending- Using rotating steel blades, produce is blended from solid into pulp 5 Pump- Pulp is pumped into the centrifuge 6 Centrifuge- The centrifugal machine further breaks down the pulp and spins at high speeds of (approximately 3,000-16,000 RPMs) and by the sheer force of the spinning motion, the juice is extracted from the pulp) -OR6 Hydraulic Press- Used in cold-pressed juicing process, the hydraulic press pressurizes the pulp between two plate causing the liquid content to drip into a collector 7 Mixing Tank- Juice is mixed prior to homogenisation to maintain distribution particles and balance. 8 Homogeniser- Liquid passes through the capillary openings at high speeds, disintegrating particles to uniform the particle size and distribution, overall smoothing the product 9 Ultra Pasturisation (or Temperature Sterilising)- Steralises the product using ‘ultra’ high heat of above 135°c for a short time, then ‘flash cooling’ to maintain the high temperature for the shortest possible time to prevent adverse effects 10 Mixing Pot- Combinations of single juice types are mixed for flavour purposes 11 Canwasher- Bottles and containers are washed and prepared for filling 12 Filler- Contianers are filled with the complete juice 13 Sealer- Bottles are lidded and sealed 14 Packaging + Boxing- Bottles are packaged and boxed for sale and distribution

The ‘Greenhouse Effect’ The Greenhouse Effect: The trapping of the sun's warmth in a planet's lower atmosphere, due to the greater transparency of the atmosphere to visible radiation from the sun than to infrared radiation emitted from the planet's surface. Global Warming: A gradual increase in the overall temperature of the Earth’s atmosphere generally attributed to the greenhouse effect.

“Wheatgrass is a food prepared from the freshly sprouted first leaves of the common wheat plant. Wheatgrass differs from wheat malt in that it is served freeze-dried or fresh, while wheat malt is convectively dried. Wheatgrass is allowed to grow longer than malt. Like most plants, it contains chlorophyll, amino acids, minerals, vitamins, and enzymes. Claims about the health benefits of wheatgrass range from providing supplemental nutrition to having unique curative properties, but these claims have not been scientifically proven. It is often available in juice bars, and some consumers grow and juice wheatgrass in their homes. It is available as fresh produce, tablets, frozen juice and powder.

“A person in a rented apartment must be able to lean out of his window and scrape off the masonry within arm’s reach. And he must be allowed to take a long brush and paint everything outside within arm’s reach. So that it will be visible from afar to everyone in the street that someone lives there who is different from the imprisoned, enslaved, standardised man who lives next door.”
Hundertwasser Village, Vienna: A Market Place within Residence Friedensreich Hundertwasser | Hundertwasser House, Vienna
A Tree Tenant Hundertwasser Exhibition Venna, 2017
“The tree tenant pays his rent in much more valuable currency than humans” 1. Tree tenants create oxygen. 2. Tree tenants improve the city climate and the well being of dwellers. They bring the needed moisture into the desert climate of the city, reduce the dry-humid and the cold-warm contrast. 3. Tree tenants act like vacuum cleaners. More so. They swallow even the finest and poisonous dust. There is less dust in the apartment and in the street. 4. Tree tenants swallow noise. They reduce the echoes of the city noise and create quietness. 5. Tree tenants protect you from outside view like curtains and create shelter. 6. Tree tenants give shadow in summer but let sunlight through in winter when leaves have fallen. 7. Butterflies and birds come back. 8. Beauty and joy of life come back. Living quality is improved with this piece of own nature. 9. The tree tenant is a symbol of reparation towards nature which is extremely visible. We restore to nature a tiny piece of the huge territories which man has taken away from nature illegally. The tree tenant is a giver. It is a piece of nature, a piece of homeland, a piece of spontaneous vegetation in the anonymous and sterile city desert, a piece of nature which can develop without the rationalist control of man and his technology.
Friedensreich Hundertwasser | The ‘Tree Tenant’
“Tree tenants can be seen from far away and benefit many people, also those who walk around the house and dwell nearby. The tree tenant symbolizes a turn in human history because he regains his rank as an important partner of man. The relationship man - vegetation must have again religious dimensions. Only if you love the tree like yourself you will survive. We suffocate in our cities through poison and lack of oxygen. We destroy systematically the vegetation which gives us life and lets us breathe. We walk alongside grey and sterile facades of houses. It is our duty to reinstall the rights of nature with all means. Cars have chased the trees up into the storeys of houses. We suffer daily from the aggressivity and the tyranny of our vertical sterile high walls. But streets in the cities will become green valleys where man can breathe freely again. Tree tenants dwell inside the walls of the house in an area of about one square meter behind the windows. The windows are set back and you can look at the tree tenant and outside. The tree tenant has one cubic meter of soil at his disposal and can become quite big.”
