Everyday Bordeaux is an annual event organized by the Bordeaux Wine Council (C.I.V.B. - Conseil Interprofessionnel du Vin de Bordeaux). Each year since 2007, a panel of wine experts is chosen to blind taste and select 100 good quality Bordeaux wines at affordable prices. This book proves that Bordeaux is full of surprises if you only give it a try. Graduated from the School of Travel Industry Management at The University of Hawaii at Manoa, Mr. Chan gained working experience at five-star or diamond hotels in various settings, including Kahala Mandarin Oriental, Hawaii, Cepage, managed by Les Amis Group and lnter-Continental Hong Kong. He was the Champion of the Hong Kong Sommelier Competition 2006. Now, he inherits the responsibility of managing Spoon by Alain Ducasse. 陳先生畢業於美諾亞(Manoa)夏威夷大學的旅遊業管理學院,曾在多間五星 級及鑽石級的酒店工作以爭取經驗,包括夏威夷卡哈拉文華東方酒店(Kahala Mandarin Oriental)、Les Amis Group管理的Cepage和香港洲際酒店。他更於 2006年的香港品酒師大賽中奪得冠軍寶座。陳先生現在承繼了管理Spoon by Alain Ducasse 的工作。

I am very glad to be a 2010 jury member for Everyday Bordeaux. Over the two challenging tasting days, I had a good chance to taste 270 labels. The market for Bordeaux wines in HK is getting more and more mature. Luckily for the retail market, we can see that the quality is gaining consistency in quality, allowing consumers that are more capable to select what they enjoy. As a service professional, it is also my mission to recommend quality labels with great values. Although Bordeaux has the largest number of Châteaux making blue-chip wines, it is not only about Rolls Royce; there are plenty of good choices that carry the messages of Bordeaux. A la votre! 我很高興能夠加入《每天波爾多2010》的評判團。兩天的品評實在有點吃力,但能夠一次過品嚐270款波爾多酒,絕 對是難得的機會。香港市場已日漸成熟,消費者的要求不斷提升。而波爾多葡萄酒的水準之穩定,更有利於零售市 場的拓展。作為業者,我有責任推介一些物有所值的美酒。波爾多酒區擁有為數最多的名牌大莊。但波爾多並不只 是「勞斯萊斯」;區內選擇眾多而優秀,全部充滿波爾多的性格。一起舉杯吧!

It seems that I have always had a special “karmic affinity” with Bordeaux. As early as 2000, when I was still a reporter for food and beverage features, I was invited by Bordeaux Wine Council to visit the region. In 2009, I became an accredited lecturer for the Bordeaux Wine School, and I am honored to be one of the judges for Everyday Bordeaux 2010. In two days, I tasted 270 bottles with six other experienced professionals to select 100 wines at affordable prices. In my 10 years of being in the wine industry, enjoying Bordeaux has been pleasant and unforgettable. I hope you can also enjoy the charm of Bordeaux with other wine lovers and more. 我跟波爾多特別有緣。早在2000年,我以飲食記者身份,接受波爾多葡萄酒業管理局邀請,親身踏足這片葡 萄酒之鄉;2009年,我成為波爾多葡萄酒學院認可導師;今天,我有幸加入《每天波爾多2010》評判團,2日 之內,跟6位前輩品試了270瓶葡萄酒,挑選出100款價廉物美的波爾多佳釀。十載經歷,波爾多帶給我無數 愉快難忘的體驗,但願你們也一起感受到波爾多葡萄酒的魅力。

Hong Kong is a fantastic city to experience and celebrate a diverse cultural experience. For years in the hotel, food and beverage industry, I see improvement in the standard of living among consumers, thus an increasing request for quality wines. Now the economy has rebounded, it is beneficial to high-end wines, and, at the same time affordable wines are also becoming popular. Dining in restaurants with wine is no longer a luxury, but part of consumers’ everyday life. Therefore, as a sommelier and consumer, I look forward to quality and affordable wines for every occasion. Star Sommelier, with 20 years experience in the F&B industry and private club management, Peter is totally fond of the wines with which he has been involved. He has won many local and overseas awards including the International Sommelier Championship in Paris, and in 1997 he ranked among the Top 2 in Asia, which still stands as the highest world ranking that a Chinese Sommelier has ever achieved. Peter is actively involved in nurturing HK and China wine experts as one of the few accredited lecturers for Bordeaux Wine School. He is also the Sommelier Position Conveyor of the Hong Kong Sommelier Association, in charge of approving registered sommeliers in Hong Kong. 星級品酒師,擁有20年的飲食業及會所管理經驗。鄺先生熱愛葡萄酒,更積極推動 葡萄酒文化。他曾勇奪多項香港及世界品酒師大賽榮譽。1997年代表香港出戰法國 格蘭披治國際品酒師大賽,取得亞洲排名第二、世界排名十六的殊榮,是大中華區 內擁最高世界排名的品酒師。鄺先生現時全力培育中港兩地的品酒專才,積極推動 葡萄酒生活化。他是法國波爾多葡萄酒學院少數認可導師之一,亦是香港專業品酒 師協會「品酒師名鑒」總監,專責批核全港註冊品酒師名單,訂立香港品酒師之國際 專業水平。

This is the fourth year that I’ve sat on the judging panel for Everyday Bordeaux, whose mission is to promote Bordeaux wines to the mass market. A recent research shows that the consumption of wines in Hong Kong has been going up, and the average per capita annual consumption is 3.6 liters - which is higher than that in Japan. Once again, this city with a population of seven million people has surprised the world. The Everyday Bordeaux campaign has been very successful in persuading more and more people to indulge in the world of wines! I believe Everyday Bordeaux will become one of Hong Kong’s sustainable projects! Cheers!

Bordeaux has long been revered as the world’s finest long-lived wine. Accompanying such a vaulted reputation is high price and for most of us, these wines are out of reach except on very special occasions. Yet, Bordeaux produces thousands of lesser-known, reasonably priced, wines that can be served with pride to clients, family and friends. Ian Symonds AIWS has been around Hong Kong for almost twenty years. He has focused on being a wine educator, teaching classes in the full range of the WSET courses as well as other wine related subjects. Being an accredited lecturer for Bordeaux Wine School, Ian has been keen on finding the best of everyday Bordeaux in Hong Kong for students. Tasting shows that the dry whites have improved unbelievably in recent years. Now the reds in Hong Kong have started to follow this trend of improvement. When students used to ask why red Bordeaux were always so “tough”, tutors had to say that knowing what was ‘behind the label’ was important in this relatively small market. However, membership in a group searching out Hong Kong’s best everyday Bordeaux gives the jury the opportunity to find wines with the fruit forward, easy drinking style that we know we want our affordable Bordeaux to be, each day and every day.

Based in Hong Kong, Debra Meiburg MW, is a celebrated wine journalist, TV personality, wine educator and in-demand speaker who holds the top honour in the wine world – Master of Wine. A former wine professor who is not afraid to get dirt under her fingernails, Debra has worked for harvest in Chile, pruned vines in Bordeaux and was a cellar-hand in New York. A widely respected international wine judge, she recently founded and is director of Asia’s largest wine competition, the Hong Kong International Wine & Spirit Competition.

Presenting Bordeaux 波爾多概覽

Geography Bordeaux is located in the southwest of France, right between the North Pole and the Equator at 45° north. It is the largest French wine growing area for the AOCs. Bordeaux’s land structure is comprised of an elevated plateau which dominates the west of the region and gradually slopes down to the eastern coast. There are two large rivers crossing the region – the Garonne and the Dordogne – which converge into the Gironde estuary before clearing out into the Atlantic Ocean. A unique region Centuries of blending mastery combined with a unique terrain and climate give birth to wines of refinement and equilibrium. Bordeaux was naturally predestined to produce among the world’s finest wines. Its vines benefit from a diversity of microclimates and soils which are well suited to different grape varieties: Cabernet Sauvignon, Cabernet Franc, Merlot, Malbec and Petit Verdot for reds, Sauvignon Blanc, Sémillon and Muscadelle for whites. The distinctiveness, richness and elegance of Bordeaux wines are the result of subtle blending of these different grape varieties, in styles determined by individual winemakers. ordeaux wine producers have adopted the AOC* system, which fixes strict rules for vine-growing, winemaking and labeling. The AOC label is a guarantee of a wine’s authenticity and quality. There are 60 appellations in the Bordeaux region. To simplify this mosaic, these are divided into six families, which correspond to distinct geographical areas and styles of wines:

Red Wine Varietals 紅酒葡萄品種 Cabernet Franc 品麗珠

An ancestor of Cabernet Sauvignon. Cabernet Franc is mellow, contains refined aromas and is relatively lively. 乃赤霞珠的祖先,能為波爾多酒增添圓潤、芬芳和清新的感覺。

Cabernet Sauvignon 赤霞珠

The varietal provides strength, complexity and good ageing potential to Bordeaux wines. Cabernet Sauvignon is the king of the Bordeaux varieties. 赤霞珠是波爾多的重要葡萄品種,為葡萄酒帶來架構和複雜度,使葡萄酒更宜陳年。

Malbec 馬碧

The Malbec grape matures early and produces red wines that are rich in color, contain solid tannins and have good ageing potential. Rosé wines are also produced from Malbec. 一種早熟的葡萄品種,單寧豐富,適合陳釀,為調配帶來亮麗色澤和圓潤口感。它亦是玫瑰酒中的骨幹。

Merlot 梅鹿

The undeniable global reference for velvety and fragrant red wines, Bordeaux offers the ideal climatic and soil condition for Merlot, resulting in an unmatched richness of terroir expression. 梅鹿以能釀造出輕柔和香氣濃的紅酒而聞名於世。波爾多的風土優越,特別適合種植此品種。

Petit Verdot 小維鐸

Petit Verdot is used in many famous châteaux, for it imparts a special flavor and aroma, adding a special touch to the wines. 小維鐸深得著名酒莊所愛,因為它獨特的香氣使葡萄酒更有韻味。

White Wine Varietals 白酒葡萄品種 Muscadelle 蜜思卡岱

Muscadelle is very difficult to cultivate, but the results are well worth the effort since it gives wonderful aromatic richness to Sauvignon Blanc and Sémillon blends. 種植蜜思卡岱雖不容易,但它仍深受葡萄種植者的喜愛。因為它香氣豐富,是長相思和賽蜜蓉調配中不可少的角色。

Sauvignon Blanc 長相思

Sauvignon Blanc is an expressive Bordeaux varietal - while remaining consistently elegant and complex, it also expresses flavorful, round and lively notes. 波爾多的長相思優雅、圓潤而活潑。它擁有美妙的果香,為葡萄酒帶來優美的層次感。

Sémillon 賽蜜蓉

Complementary to the Sauvignon grape, this grape is less acidic and is more round in the mouth, making it an ideal blending partner. Favorable to the development of noble rot, Sémillon embodies the essence in the luxurious sweet wines of Bordeaux. 口感圓潤且酸度不高的賽蜜蓉,是長相思的最佳拍檔。賽蜜蓉極宜貴族霉的生長,因而成就經典的甜白酒。

Reading the Wine Label 閱讀葡萄酒標籤

Bordeaux wine labels indicate three guarantees: typicity, quality and traceability. Châteaux wines (which are produced on an individual property) are the most common types of wines in Bordeaux and are produced by the region’s 10,000 winemakers. Produced by cooperatives and some négociants, brand wines are blends of wines from several winemakers (thereby assuring constant quality of a large volume of wine). They also represent good value for money. Both châteaux wines and brand wines must respect the AOC's specific labeling requirements. 波爾多葡萄酒的標籤代表三樣保證:風格、品質及來源。 酒莊葡萄酒(由個別酒廠生產)是波爾多最主要的出品。區內約有一萬個釀酒人生產酒莊葡 萄酒。合作社及一些批發商則會選用數個酒莊的葡萄酒(以確保大批葡萄酒的質素),再自行 調配而成價格合理的品牌酒。酒莊葡萄酒及品牌酒都必須符合法定命名產區的標籤規定。 Mandatory information 1. One cannot judge how a wine will taste with a meal by tasting it alone, rather, it is important to take into account the ingredients and cooking methods of the food. The message and expression of this wine is at its clearest right now. The wine goes best with light flavored, steamed or poached foods, lean textured foods such as white meats, fish and chicken. 配搭清淡的食物,或質感結構較簡單的食品菜色,例如蒸煮白肉、魚和雞等。 This full-bodied wine is better suited with a rich dish that contains heavy sauce, such as red meat and game. The proteins in the meat will soften the tannins in the wine, which is why red tannic wines are typically matched with beef. 酒體圓滿的酒比較適宜配搭有濃郁醬汁的肉類菜色,如紅肉和野味。肉類 的蛋白質會令酒的單寧酸變得柔和,這也解釋了為何富含單寧的紅酒宜配 牛肉。

Chinese cuisine 配搭中菜

Red Bordeaux wines are particularly appropriate for most regional cuisines which tend to be rich. The tannins in the wine help to counter-balance the fat content of meat. For wines that carry a certain spiciness and / or have less oakiness, steamed seafood can be paired. 波爾多酒跟中菜十分合拍,因為不少省份的菜系都傾向味道濃郁,肉質豐 腴,而酒的單寧酸能夠平衡肉類的脂肪成份。若酒帶有一定的辛辣味或較 少橡木味,會易匹配清蒸海鮮。

This match takes the balance of fruits as well as acidity and structure into consideration, meaning the wine usually requires some meat dishes and / or dishes with heavy sauces to accompany it. 考慮到酒的果味酸度和結構,此類酒宜搭配一些肉類或者帶濃稠醬汁的菜色。
