Ðhat d~ y~u mean? I find it amazing how important the influences of color and technology have become in our daily lives. Although technology is meant to simplify home operations and comfort, incorporating technology in the home is often a daunting task. The power of color to influence our moods, appetites, energy levels and feelings is a fact that every homeowner must address when making color selections. What mood do you want to create in a particular room? How do you achieve that mood? In this issue, we introduce the Pantone® color of the year, the latest in home technology and the importance of the collaboration of both. Every year, in great anticipation, design professionals in every industry from fashion to automobiles wait on pins and needles until the color authority, Pantone®, announces the color of the year. Drum roll, please… and this year the color is Tangerine Tango (page 22)! Adding a dash of the orange hue in small doses on an accent wall or in accessories is a refreshing update that will bring energy, excitement, enthusiasm and warmth to any space. Looking for a little attitude? Tangerine Tango will fit the bill. Happy and bright but also warm and inviting best describes our Urban home feature (page 40). The homeowners, Tessa and Stanley Greenspan, with the guidance of interior designer Caryn Burstein, owner of Arcterior Design LLC, did a complete 180° from their prior home. Tessa wanted “knock-your-socks-off bright and cheerful,” and Caryn’s solution was color that starts at the front door and reverberates throughout the home. Home technology was the top priority in our Suburban home feature (page 46). The homebuilder, Barry Simon of Simon Homes, and his team soon realized that the design of a four-room recording studio (page 66) would predetermine many of the home’s basic construction elements. An avid technophile, the homeowner worked with Dave Davis of Home-Tech to ensure technology synchronization through a single, handheld remote for every imaginable function inside and outside the home. Color choice is a personal matter and so is the level of technology you choose to incorporate into your home. Take time with these impactful decisions. Be sensitive to everyone in your household, and your home will become a magical retreat that is just perfect for your lifestyle. What it all means is simple: happiness is what it’s all about.

SLHL: When decorating a teen’s room, what do you take into consideration? DF: I always want the teen to be involved and take ownership when decorating his or her space. It should reflect her style, as well as be practical. I ask what colors she would like to use and whether she prefers modern or traditional. How will she use her bedroom? Will she be studying? Will she be watching TV with friends and hanging out? Also, a mirror is a must, especially in a teen girl’s room. Think stylish — the teen’s style. SLHL: Is there a rule of thumb you go by on how many colors can be used in one

room and how much of each color to use to achieve a beautiful balance?

SLHL: Where do you start when choosing colors with a client?

DF: I prefer to make larger upholstery pieces neutral and accent with paint and fabric on pillows. The best way for the home to “flow” is to choose three colors and make sure to pick up those three colors in every room (in accessories, art, pillow fabrics, etc.). I always try to use black as an accent in every room.

DF: You need to start somewhere — with a piece of art, a favorite rug or a fabric you found and love. I also tell clients to “pull” pictures out of magazines of things they love and hate. What they don’t like can be almost as important as what they do like. When choosing paint colors, I do like to use Benjamin Moore’s historical colors; these usually turn out great and can be very “safe” in case of confusion.

SLHL: Do you have favorite colors that you prefer to use in particular spaces? DF: Right now I am using blue and green in combination often. I love the coastal colors. As seen in the picture, hot pink and gray are very popular now for teen girls’ rooms.

SLHL: Where should I put the color in my room?

DF: I always try to use color on walls, anything that contrasts with white woodwork. I stay very “safe” on the larger upholstery pieces and accent again with color on accessories, artwork and bold fabrics on pillows. In addition to color, I am big on texture. It can add a lot of pizzazz to a space. SLHL: What if I don’t want a lot of color in my room? I like neutrals. MW: A popular “look” right now is white — white woodwork, white walls, white furniture, white everything! I suggest black accents or dark wood flooring; this can make quite a statement. Sitting

at her potter’s wheel, ceramic artist Rachel Akin rhythmically moves her hands in just the right way to give form to porcelain clay. The repetitive movements allow her to focus on the specific details she wants to create: the width of the sides, the depth of a curve. Rachel has been involved with artful pursuits since she was a child. Pottery became her lifelong passion after Rachel took a ceramics class in high school. Porcelain has always been her material of choice. Its smooth, silky texture is pleasant to work with, unlike others that can be grainy and rough on her hands. Even more important, porcelain provides a sleek white base that perfectly accents a pastel color palette, which is her preferred color family. “I have a soothing color palette because it’s important to have objects that are calming and pleasant to enjoy,”

Rachel says. Ninety-five percent of her work happens at the potter’s wheel, where she fashions sweet, gorgeously simple ceramics such as vases, bowl and mugs. Rachel lets her intuition and spontaneity guide her hands as she molds each distinctive piece. Antique depression and milk glass, as well as vintage Christmas ornaments, inspire her coloring and texture. After crafting a piece on the wheel, Rachel will slip the edges or alter the rims to add decorative details. “I add split dots with a syringe or fine needle tip that creates a raised top,” she says. The dots look like white pearls lacing the porcelain, adding a touch of effortless elegance. Rachel’s designs are kept basic to accentuate form, but details and texture make her pieces pop. Her early work was labor intensive,

with a great amount of detail put into each piece, but that was easily fixed by simplifying her designs and emphasizing the silhouette of each piece. She describes the simplicity of repetitive motion used to create her art as meditative in nature. “I get lost in the process, especially with the surface decorations,” she says. She allows her mind to wander as her hands knowingly add a pattern, such as thin stripes or dots, to the design. Rachel’s ability to perfectly mold porcelain comes from 17 years of experience. She received her bachelor’s degree in Fine Arts from the Kansas City Art Institute in 1999 and then pursued higher education at Ohio University, where she received her master’s degree in Fine Arts in 2006. She currently works as an art teacher at Forest Park Community College, where she teaches all levels of ceramics and craft alliance. “I teach basic hand-building techniques and then introduce the potter’s wheel, which requires a lot of practice,” she says. Rachel has shown her work at art shows throughout the state, including such venues as the Schlafly Art Outside, Plaza Art Fair in Kansas City and the Laumeier Art Fair where she was awarded an outstanding local artist award. This year, she will show her work at Craft Alliance’s HOT TEA: 13th Biennial Teapot Exhibition, March 9 through April 26, 2012. Chef Bob, a self-described professional student, has been in training all his life. His grandfather and father were both in the restaurant business, and Chef Bob received his formal training from the Culinary Institute in Hyde Park, New York. He’ll be the first to say that being a restaurateur is a vocation that has kept him motivated for the 28 years he’s been at Sunset 44 and inspired him to buy the restaurant 10 years into his tenure. S u n n y s i d e u p e g g s  eggs benedict Poached eggs English muffin, slit, toasted and buttered Canadian bacon, heated Hollandaise sauce Crack the egg and place in a small cup, bring water to a simmer in a small pot, swirl the water before gently sliding the egg into the pot. Simmer for 3 to 5 minutes. Place the heated Canadian bacon on top of the toasted, split English muffin and top with the poached egg. Cover with hollandaise sauce and serve immediately. Hollandaise sauce 1 stick of salted butter 2 egg yolks 2 tbsp lemon juice 2 tbsp white wine vinegar Melt butter 5 minutes ahead of preparation. Fill one-third of a large pot with water and bring to a simmer. Use a stainless steel bowl that fits on top of the pot but does not touch the water. Place all ingredients in the bowl (except for the butter) and whisk vigorously until small bubbles form and mixture starts to firm. Do not over heat and continue to whisk. Remove bowl from heat and slowly whisk in the hot melted butter until desired consistency is reached.

ituated near downtown’s Scottrade Center and accessed by a private elevator, Tessa Greenspan’s condo is the epitome of urban living. Enormous south-facing windows flood the living area with sunlight, and colorful contemporary art dots the walls, creating a warm and inviting space that contrasts the gritty industrial view outside. “I love it,” she says. “I love Washington Avenue and Citygarden, and I walk to both of them. It’s taken a long time, but St. Louis really is becoming a vibrant, alive city.” This urban lifestyle is new for Tessa and her husband, Stanley (a complete 180° from their prior home). “I lived in a house in Creve Coeur for 39 years,” Tessa explains. “It was full of antiques and collectibles.” The couple knew they would move eventually, and when Stanley found the condo in the Edison building six years ago, she knew it was the right choice. “I wanted to be where the action is, and to be on the cutting edge of promoting downtown; I wanted something completely different. So I sold it all.” The new beginning figured prominently in the inspiration for her new home’s decor. “I wanted contemporary, happy and bright, but also warm and inviting,” Tessa says. She enlisted the help of designer Caryn Burstein,

allied ASID, founder and president of Arcterior Design, to help her create such a space. They began when the condo was still just a shell of steel beams and dangling wires. Armed with Tessa’s vision and Caryn’s design and architecture expertise, the pair started with one of the builder’s layouts and customized from there, widening hallways, adding lighting and incorporating architectural interest like the hallway’s barrel ceiling and the living area’s arched entryways. From there, they turned their attention to creating the warm, contemporary décor that Tessa envisioned for her new life. “She wanted knock-your-socks-off bright, cheerful,” Caryn says. The solution? Color. “Being in a smaller environment than she was used to, Tessa needed that vibrancy.” It starts at the front door, where guests are welcomed with a burst of vibrant red from an original painting by local artist Sharon Spillar. The piece, commissioned by Tessa and composed of nine individual square canvases, depicts a heart. “I believe we are all connected,” Tessa says, “so hearts are important to me.” More heart-themed contemporary paintings lead down a gallery hallway, their bright hues and the barrel-vaulted ceiling keeping the long, windowless space from becoming dreary. The hallway leads to the center of the home, a large, open area that houses the kitchen, living room and dining room. Sleek kitchen cabinets, a two-sided fireplace and simple-lined furniture establish the contemporary motif. More of Tessa’s vibrant art collection and colorful accessories add cheerfulness to the room, while honey-colored wood floors and soft, neutral walls throughout add warmth. “Tessa did not want white, rigid, cold,” Caryn says of the choice of wall color. “She wanted warmth.” She also wanted color, a challenge when the goal is to allow the artwork to take center stage. “You can’t have bright red or green walls and have art; they compete,” Caryn explains. “So we found something that is soft enough, but, with a bit of yellow in it, has enough color, too.” The notable exception is the breakfast area’s accent wall, painted a peachy, coppery orange. Not only does the wall add more cheerful color, but it helps to define a distinctive space within the open floor plan. “I wasn’t sure about it,” Tessa says. “But Caryn said, ‘Trust me.’ She was right; it really pops.” Scale was another challenge for the duo: the building was originally a warehouse and features the large windows and tall ceilings common to industrial spaces that have been rehabbed into lofts and condos. “The rooms were so large and the ceilings so tall, it was a challenge to make the furniture fit the scale of the room, especially because contemporary furniture is often very low and sleek,” Caryn explains. She addressed the issue with size: large art pieces, large furniture, oversized accessories. “Everything has to be big and powerful, but simple,” she says. The approach is seen clearly in the dining area, where an oversized triptych of bright Gerber daises dominates the south wall and a long, built-in buffet stretches the length of the east wall. Customdesigned by Caryn, the buffet hovers a few feet above the floor and features a distressed copper countertop that adds a distinctive but subtle contemporary character to the piece. It’s also perfect for Tessa’s lifestyle. “I don’t like to cook anymore,” Tessa says cheerfully. “But I love people, and I love to entertain; this buffet is great for potlucks.” A round dining table in the center of the room completes the clean, contemporary feel. “It was time to purge,” Tessa says of her previous furniture. “I had so much stuff! I just wanted to clear it all out. Plus, antiques are so often dark. The pieces, from Caryn’s furniture line, are shaped like an upside-down “A,” a contemporary look that also carried meaning for Tessa. “‘A’ is the essence of the beginning,” Caryn explained. “So [the furniture] resonated with her because of her own new beginning.” The result is a living space representative of its owner. esigning and building a fine custom home is always a formidable task, but everyone involved in the creation of this magnificent St. Louis residence faced some very unique challenges. Although the owners’ primary objective was to “create a beautiful space,” achieving that goal demanded an intricate balance of art and technology. A retired corporate executive, the husband was insistent on two things: a state-of-the-art recording studio, where he could indulge his lifelong passion for music, and a handsomely appointed study/library, where he and close friends could savor their cigars. Working with Dave

Davis and his team at Home-Tech, this avid technophile fulfilled several other requirements, too, for example, a large flat-screen TV in every room, hidden electronic components, and a single, hand-held remote for every function, which he worked with . Vivacious and candid, the wife had somewhat more conventional aspirations, but readily admits to her eclectic tastes. She wanted a home that was “warm and inviting,” spacious enough for entertaining their vast circle of family and friends, where guests “felt comfortable taking off their shoes and going to the refrigerator without even asking.” Also on her

wish list: a master closet large enough for her entire wardrobe, without the need to rotate seasonal items. Simon Homes was chosen as the custom builder, and it quickly became apparent to CEO Barry Simon and his team that design of the four-room recording studio would predetermine many of the home’s basic construction elements. Located on the lower level of the home, the studio’s cables would be pulled through underground PVC conduits, and soundproofing and insulation that far exceeded the norm were crucial to the space. In the homeowner’s words, “The studio was first and foremost on my mind, but eventually the insulation techniques became the mentality for construction of the whole house.” (Technical aspects of the studio are described in Small Scale [page 66].)

Interior designer Jeanne Huber of JE Design Group faced a different challenge. “The artwork and many of the pieces came from the owners’ previous home and were very special to the wife,” Jeanne explained. “To integrate them successfully into the new home, we decided to unify everything with a warm, consistent color flow throughout, so that her personal pieces didn’t compete.” Harvest Plains, a rich neutral color that works well with many hues, proved the ideal choice for the walls. The activity hub of this more-than-9,000-square-foot residence is its open hearth room/breakfast bay/kitchen area. “We had 38 here for Christmas, including 12 children, and they all congregated quite comfortably in this part of the house,” the wife recalls. Practical, “childfriendly” pieces selected for the fireplace grouping included a custom-

made, two-piece sectional, an oversize ottoman upholstered in an antique rug and a richly carved lounge chair in embossed leather and hair on hide. Armless, deep-seated and covered in a textural, heavyduty fabric that’s soft to the touch, the extra-long sectional can seat a surprising number of people and invites cuddling with the owners’ grandchildren. Off the hearth room, a three-season porch with wood-burning fireplace and Eze-Breeze vinyl windows adds still more space for casual entertaining and overlooks the surrounding woods, free-form swimming pool and waterfall. Similarly practical, the floor tiles blanketing the foyer, dining room, galley hall and kitchen/hearth area are an imported Italian porcelain

that resembles stone and is easy to maintain. Warm brown, cream and putty tones in the hand-picked granite slab topping the massive,14foot custom kitchen island complement the custom-finished Crystal cabinetry. The most formal space in the home, the two-story great room was furnished with contemporary pieces from the owners’ previous residence and included chrome, glass, polished marble and rich indigo geometrics. The Harvest Plains wall color maintained a cohesive flow from the adjacent hearth room, and the wet bar’s iridescent mosaic glass tiles and a hammered satin nickel sink picked up the established color scheme. LED rope lighting installed inside the edges of the display shelves flanking the honed travertine fireplace casts a soft glow on

treasured glassware pieces, and an imposing silver and crystal chandelier completed the transformation. Making a smooth transition to the “more natural yet elegant” dining room are an organic light fixture laced with iron vines and crystal “buds,” a medium-distressed buffet console in an antique black stain and decorative hardware finished in antique silver. Clean lines and spillresistant, leather-like upholstery characterize the chairs surrounding the glass-topped dining table. Paneled in cherry wood and topped by a beamed ceiling, the library is a luxurious masculine haven. A special-order, temperature- and humidity-controlled humidor built into the floor-to-ceiling cherryfinished bookshelves stores the homeowner’s fine cigars. Behind the

walls, the entire room is encased in a vinyl shield, all outlets are sealed and high-tech exhaust and air filtration systems remove every trace of smoke within minutes. Leather and hair on hide, wood shutters and a large Portuguese writing desk with a distressed black finish dominate the furnishings. A study in serenity, the opulent main-floor master retreat reemphasizes the organic theme with a leather and iron bed, iron nightstand bases and a crystal-accented, wrought-iron light fixture descending from the deeply coffered ceiling. A comfortable settee and TV transform the vast master bath into an “experience.” Upstairs, the three additional bedroom suites reflect the interests and personalities of the owners’ adult children, who no longer live at home but provided

their adoring mom with a theme for the décor. The home’s lower level is technology central, showcasing a media room with theater seating and an overhead 3D projector and the recording studio complex, plus a spacious recreation area, billiard room and fully equipped exercise room with ballet bar and sauna. Behind the rec room’s fabulous bar is a full-scale wine cellar, where Kim Meyers of Great TransFAUXmations used a break-away plaster technique to give the walls a feeling of authenticity. Kim was also responsible for the many imaginative faux finishes in various rooms throughout the home. Jeanne wanted to carry the home’s warmth and “style sensibility” into the recording studio. Installed inside the frames, the window

treatments are double-cell pleated shades operated with a remote and covered with woven Romans shades. For the carpeting, she selected a tight-woven, small geometric pattern that reminded her of musical notes and transitioned into the theater with a more playful, abstract undulating carpet pattern. There is a Zen Buddhist text that perhaps best describes the astonishing harmony – the perfect balance of art and technology – achieved in this spectacular residence. It reads: The masters in the art of living make little distinction between their work and their play, their labor and their leisure… They simply pursue the vision of excellence in whatever they do… To them they are always doing both. ou could make the argument that the stacked-stone walls in Sharon and David Raich’s Kirkwood garden give it an English feeling. There’s also a good case to be made that the neat, boxwood-hedged beds and precisely trimmed topiaries reflect a more formal French style. But when you get right down to it the flowing pathways, inviting lawn and seating areas and splashing water feature are a tribute to good old American ingenuity. The Raiches are only the fourth owners of their 110-year-old, Federalstyle home adjacent to downtown Kirkwood. That they live there at all is a serendipitous accident. Eleven years ago, the Raiches were heading toward retirement and relocating from Ft. Worth to St. Louis, where Sharon grew up and had family. “I’d always promised Sharon that when I retired we’d move to St. Louis,” David says. “We were going to build off Wild Horse Creek Road, and the project kept getting bigger; it was out of hand,” David recalls. The couple began looking at existing homes closer to downtown St. Louis when David had a “stop the car” moment. They just happened to be driving down a street in Kirkwood when David noticed a “For Sale” sign. “I got this vibe,” he recalls. “It was a happy home.” The house may have been “happy,” but it also craved attention. Before the couple could move in, the historic beauty required not just a facelift

but also a total transformation. Once work on the interior was completed, the Raiches focused on a garden that required a complete makeover. The project proved to be more of a task than they had anticipated. The ground backing up to their home — probably originally cultivated farmland, according to David — now sprouted apartment buildings, condominiums and asphalt parking lots. Rather than gently soaking into tilled earth, rain poured off paved surfaces and into the Raiches backyard. It took a series of drains with seven-inch lines that flow directly into the sewer system to alleviate the problem. Even with that, the Raiches call plants that don’t mind wet feet some of their best gardening friends. In addition to moisture control, the Raiches needed screening to make their garden private, and they “didn’t want to wait 25 years” for the garden to take shape. A line of hornbeam trees, known for their rapid growth, moderate size and adaptability to a variety of soils and conditions, now line the back of the lot. Among the trees, ‘Ruby Spice’ summersweet shrubs provide added screening and pink, bottle brush–like flowers from midsummer to fall. “[Ruby Spice] is a Missouri Botanical Garden Plant of Merit,” notes Sharon. “It blooms in the shade and attracts butterflies.” Along the east side of their property, the Raiches created a screen of columnar arborvitae and cedar trees.

Once they finished the screen, the Raiches envisioned their garden as a series of rooms, each with spots to sit and take in an ever-changing vista. David credits Sharon with the garden’s flowing design and sense of spaciousness in what is a relatively small, urban footprint. “She’s got a great eye,” he says succinctly. Sharon is far more modest. A self-taught, “trial-and-error” gardener, she jokes she has learned “by killing things. When I walk through a nursery plants see me coming and say, ‘please don’t take me home.’” Both Sharon and David call themselves practical gardeners. “You plant what works; you don’t slight nature,” Sharon emphasizes. As a result she laughs and happily accepts shasta daisies that “scoot” around the yard searching for sunlight as trees grow and branches die. Rather than creating a dedicated vegetable garden, the couple incorporates vegetables such as tomatoes and peppers into the general landscape in areas where they will get the most sun. Hostas, astilbe, ferns, witch hazel and serviceberries frame the shady, stonefloored outdoor dining room on the west side of the house. Moistureloving cardinal flowers, ligularia, water iris and cattails thrive in and around the flowing pond while purple cone flowers and black-eyed Susans cover the man-made high ground at the back of the pond.

In a reversal of their usual concern over too much moisture in the soil, the Raiches have successfully used a thick row of heat- and drought-tolerant sedums to mark the dividing line between their driveway and the immediately adjoining driveway of their next-door neighbor. Although the Raiches believe firmly in planting what works, their trial-and-error philosophy also allows them to take an occasional risk. A case in point are the hardy gardenia shrubs that they purchased a year ago at Sugar Creek Gardens in Kirkwood. Gardenia 'Crown Jewel' is being touted as the first gardenia plant that is cold hardy in the St. Louis area. With blossoms that look and smell exactly like they were part of a yesteryear corsage, the evergreen shrubs are thriving in the Raiches' garden. This is the third year that Sugar Creek has stocked 'Crown Jewel.' "While this past mild winter wasn't a true test, we're hearing of a number of plants that did well through the really cold winter a year ago," says Abby Lapides, a manager at Sugar Creek. "We were tentative at first when we stocked the plants, but we're beginning to get really excited about 'Crown Jewel.'" Although we'd still advise people to plant it in a somewhat protected area."

“Design a state-of-the-art recording studio… within the context and confines of a private home.” That was the daunting assignment issued by the owner of the extraordinary custom home described in this month’s Suburban feature (page 46). Although the studio is intended purely for the owner’s enjoyment, experts agree that the finished space rivals any professional studio on either coast. Following lengthy collaboration with studio gurus Paul Andris of Pelican Reel and Danny Watson, Ozark Pro Audio, the homeowner worked side-by-side with custom builder Barry Simon to create a technological masterpiece. The four-room complex features a generously proportioned control room, vocal booth, sound room (for instrumental recording) and a humidity-controlled instrument workroom.

Dave Davis and his team at Home-Tech laid the underground cable channels made of PVC conduit before the home’s foundation was poured. Construction then focused on the soundproofing and insulation critical to the studio’s acoustics. More than a foot thick, the floating walls include air space to minimize sound transmission and are sheathed with a damping layer of QuietRock. Resilient channels (RC) support the ceiling finish for sound attenuation, and IWC isolators further reduce structure-borne noise and vibration from the home’s main-floor joists. Delighted with the results, the owner incorporated many of the insulation techniques into the rest of his home, producing what the builder describes as “a home that’s as quiet and energy-efficient as it could be.” See www.stlouishomesmag.com for resources.

Depending on the ingredients, medium-bodied red wines from all over the world are delightful accompaniments to couscous. For my lamb version, I’ll open a well-priced French Cotes du Rhone (which is always a blend of red grapes such as Grenache, Carignan, Syrah and Cinsault) such as the Cachette label. Its spicy, fresh and fruity flavor — dominated by almond, cherry and spices — is a great complement to the dish. I also might try an Italian montepulciano like the one from Vino de Fratelli. It shows a soft, vinous bouquet reminiscent of the varietal, and a dry, smooth, well-balanced flavor, with an enjoyable, slightly bitter aftertaste. If your “field of dreams” looks a lot more like the sands of Aruba than the slopes of Aspen, I’m sure you’re happy that spring is just around the corner. My limbs may still be feeling a late winter chill, but my heart, mind and stomach are in warmer climes, enjoying foods and wines from countries with Mediterranean coastlines. These days, my dinner table features a tray full of Spanish olives and the longest-aged Manchego cheese I can find, paired with some warmed Italian bread and a young Spanish red, like Tinto Figuero 4-Months. Tempranillo — Spain’s signature red grape from the Garcia Figuero vineyards in Ribera del Duero — is aged four months in new oak barrels and tastes of blackberries, mulberries, cherries and redcurrant, with hints of black liquorice. After that “palate primer,” it’s on to soup, which I love hot or cold. Greek avgolemono soup, that lightly creamy combination of chicken stock, egg and lemon, usually including orzo and pieces of chicken, or Stracciatella, the Italian version of Chinese egg drop soup, finished off with a few spoonfuls of parmesan cheese. I’d choose a dry or semi-dry white wine — something light, but with fruit and enough body to play off the lemon or the saltiness of the Italian soup. Some new wines in the market that would pair well include the citrus-y, minerally Ascevi Luwa Collio Pinot

Lighter, fruity red wines from France, Italy or Greece are perfect complements to lamb, chicken, beef and/or shrimp over fluffy Moroccan couscous, mixed with rice such as Spanish Paella or even Italian chicken cacciatore with angel hair pasta.
