Move over ladies, these five men are leaving their mark on the design world. Regarded as top-tier in their fields, our designing men are respected and emulated by their
colleagues, many of whom they have mentored. For our October design issue, we are honoring this esteemed group of design aficionados.
Name: Garison Salinas Company: Columbus Design Division of GARRISON LTD. Years in the Industry: 23 Favorite design project, and why? During the last day of a Clayton ranch renovation, I met a single financial executive who informed me that he was about to become engaged. He said that he had been following my renovation work and wanted to hire me for a large town house he just purchased as a wedding gift for his bride to be. I accepted the project on the terms that he would help in the design process. Throughout his six-month renovation, I really enjoyed the working partnership defining his taste and having full participation in numerous design selections. Colors, art, fabrics, and room functions were the design details that I asked him to experience and select for his future home. We completely changed the once pastel palace into a very chic, rich and relaxing Santa Barbara-style town home. The textures were rich and the colors were very light in tones. The day came for the engagement, my client presented the newly renovated house with a gold key and a ring to his girlfriend of five years, but she did not accept! My client was heart-broken, and he was thinking of selling the new townhouse. I recommended and finally convinced him to move into the new house. A few months later, I learned he was dating and then married my flooring representative. They both fell in love with each other, and she also fell in love with the home.

Name: Scott Hepper Company: Walter Knoll Years in the industry: 35 Favorite design project, and why? RITZ CARLTON TABLETOPS! A total creation from first thoughts to design implementation to set up. Another fab project was being asked by the Chicago Florists and the Garfield Park Conservatory to become a lead designer for Fleurotica fashion runway show with couture and lots of flowers as fashion. It was an unbelievable experience mixing beautiful flowers with beautiful models, and I was a part of a winning team. Winery weddings are my specialty having grow up in Sonoma County.
Name: Jim Howard Company: Glen Alspaugh Kitchen and Bath Years in the industry: 30 Favorite design project, and why? My favorite design project is my kitchen. The project, which was 90% completed by myself working evenings and weekends, gave me renewed insights into what it takes to make a kitchen remodel successful. I was venturing into a project that was usually a collaborative effort for me. Appreciation for the multitude of material choices that a homeowner is bombarded with and the parting of hard-earned monies came in first. A reminder of the physicality of the carpentry and other skills involved became apparent early on and placed second. Designing without input from the many professionals normally involved in these projects gave me more than the usual amount of control, but tested my creative skills. Lastly, I live with the finished product and am able to appreciate it on a daily basis. I am 100% satisfied with all of my decisions. We will not discuss the budget.

Name: Dick Busch Company: Dick Busch Architects Years in the industry: 40 Favorite design project, and why? You ask, “which is my favorite project?” and that is impossible to answer. All of my clients think that their project was my favorite, and in a way that is true. My favorite project is the one I am currently working on at any time. When designing a custom home the client is the most important ingredient in the recipe. It is their vision and their ability to express that vision that will put a home on my favorite list. I do have architectural styles that I personally prefer, but doing only those would get weary, and then I would lean toward something else. So my favorite project is the one that I am enjoying so much that I come in to the office early and leave late.
Name: Tony Russo Company: Russo Stone and Tile Design Years in the Industry: 28 Favorite design project, and why? After 28 years in the stone industry, it’s difficult to pinpoint one specific job that I could say has been my favorite. Every client is unique as they have a vision all their own and are trusting that we will take their idea of a dream kitchen and bring it to life. One particular client came to us with a binder of magazine clippings and ideas she had gathered over time. She was relying on us to transform her ideas into a one-of-a-kind Italian marble kitchen. Her island was going to be complicated; something I’ve never done before. After spending several hours viewing various stone slabs, we located the perfect marble for her project. I was now ready to take her ideas and materials and turn it over to our craftsmen who would then take her vision and create a counter that was nothing short of a functional work of art. I took great pride and satisfaction in seeing our client’s expression as she watched each piece slowly lock together to complete her dream.

Chef Lisa Slay is dishing up small plates packed with big flavor at Remy’s Kitchen and Wine Bar.

Scoop up some of Lisa Slay’s creamy, lemony hummus with a piece of Lebanese flatbread. Sample her stuffed grape leaves, tight cylinders filled with savory ground rice and lamb and topped with a vibrant tomato sauce. Each bite is a little bit of the history of Lebanese cooking in St. Louis. Slay, executive chef of Remy’s Kitchen and Wine Bar, grew up in restaurant kitchens, and no wonder. Her grandfather Joseph Slay was a Lebanese immigrant who opened Slay’s Restaurant downtown in 1911. Her late father, Anthony, her brother, David, and various uncles and cousins followed in Joseph’s footsteps. “When I was just a little tyke, I’d run up to my grandmother’s house and cook with her a lot,” Slay says. Her grandmother, Monietta, used lots of lemon

juice, garlic and olive oil. So does Chef Slay, squeezing fresh lemon juice for every salad because the juice gets more bitter as it sits. “I’m not a frou-frou kind of chef,” she says. “I keep it simple, make it taste good and consistent.” She opened Remy’s in 1996 with Tim Mallett. “He’s the business side of things; I’m the food side of things,” she says. They have been business partners for 24 years and also own Big Sky Cafe in Webster Groves. From the start, Remy’s has offered a big selection of small plates. Their number has grown over the years, especially since the recession took hold. “I like to eat that way myself rather than commit,” Slay says, adding that the small plates offer good value. Another route to good value – and another way to avoid commitment – is
ordering one of the five wine flights, each with three 2½-ounce pours of wine, ranging from $12 to $18. “Occasionally, we will do a high-end flight so you have the opportunity to taste a high-end wine without spending 120 dollars on it,” Slay says. Those flights cost about $25. One Tuesday a month, Remy’s serves a three-course themed dinner, with wines, for $36. Adding a dessert or cheese course is an additional $7. This year’s special dinners are a tour of 12 countries. October is Germany, and November is Turkey. “We did that on purpose, because we like to have fun,” she says. A taste of the cooking school Menu • Hummus, a silky purée of garbanzo beans, garlic, tahini (sesame seed paste), lemon juice and olive oil. • Lebanese salad, a bowl brimming with tender lettuce leaves, tomatoes, cucumber and feta cheese, sprinkled liberally with garlic powder. “You just shake it on, it’s delicious,” Slay says. The salad is dressed with olive oil and lemon juice that is freshly squeezed for each order. • Lebanese rice and stew, meltingly tender beef braised with onions, green beans and tomato sauce served over rice studded with buttery browned pine nuts and bits of vermicelli. • Stuffed grape leaves. Skill David Moore brings passion and creativity to his inspired furniture

For most young people, their parents’ purchase of a disk sander and scroll saw wouldn’t affect their lives too much, if at all. But for David Moore, David Moore Furniture, that was where his love for hand-crafting beautiful furniture all began. “It showed me I had a passion for making stuff really early on,” David says. He eventually went to Boston to study traditional furniture-making with an emphasis in classical design. He returned to St. Louis in 2007 and has been practicing his skills and developing his furniture business ever since. But even after eight years of making furniture, he continues to perfect the skill. David recently recreated 15 “beautiful and curvy” benches for a large institution that put his skills to the test. “I feel like that particular job allowed me to learn so much about furniture-making,” David explains. “It was almost like I was back in school because it was extremely difficult.” The first step to David’s process is to repeatedly draw the design until his client is happy with the result. Using the final drawing, he creates a pattern and selects the materials. Using joinery with mortise

and tenon joints, he puts the parts together. Afterwards, he takes it apart and shapes the piece through carving and smoothing. Once he glues the piece together, he does even more smoothing and joining, and then he completes the finishing process—hand plane, scrape, sand. The piece is complete once the finishing regimen is perfected. “What really drives me is the finished product,” David says. “The process takes a while so it’s great to finally see it come together.” David has other motivating factors, as well. He draws inspiration from many sources, including architecture and the time he spent doing rig work for movies. He loves the way the camera moves and works in movies. “That was a time when I really felt like it was shown to me what was possible,” he explains. And David has used that knowledge to create unique and inspired furniture. “I’ve been practicing skills for a long time, and I’ve always treated skills as something to become an expert at, not realizing that once you work hard enough at those skills you can spend your time focusing on using them to be creative,” he says. A Compton Heights Classic with a Touch of
“Florida Casual ”
After 15 years in sunny Florida, these homeowners moved back to St. Louis into a Tudor revival that is classic with modern conveniences.

Defined
by its landmark water tower, Compton Heights holds a place in history as one of the nation’s first planned residential developments. The 250-acre tract was laid out in 1889 and designed with curvilinear streets, lush landscaping and deed restrictions intended to preserve the subdivision’s tranquil “neighborhood” ambience. Although slow to capture the imagination of late 19th-century St. Louisans, the project gained momentum during the 1904 World’s Fair era, attracting wealthy merchants and manufacturers eager to display their affluence. Rich in period architecture and beautifully maintained, Compton Heights was designated a local historic district in 1978. It was Compton Heights’ quiet residential atmosphere that first
attracted the owners of this three-story handsome Tudor Revival, which they purchased in February 2012. Still, it’s reasonable to ask what lured the homeowners back to St. Louis after 15 years in sunny Florida, but the explanation is simple. They’ve operated a successful transport-related enterprise on the east side of the Mississippi River for more than two decades. Once established, they determined that the company’s activities could be supervised remotely and moved to the Sunshine State, while maintaining a pied-à-terre here in the city. Recently, however, a major expansion of the business demanded more hands-on attention, and they returned (somewhat ruefully) to the metro area. STLOUISHOMESMAG.COM OCTOBER 2013

After touring countless vintage homes, co-owner Scott says, “I knew this was THE house as soon as I walked in! It was the nicest restoration of anything I’d seen – a century-old home with new conveniences, but still had the ‘feel’ of a classic home.” Researching its history, Scott learned that the home was built in 1908 by a produce magnate from New Orleans. With eight bedrooms and 6,000 square feet on the three main floors, it easily accommodated the tycoon’s large family, and he emphasized his cultural roots with the addition of several ornate porches and Juliet balconies. Sadly, the original owner died only a few years after the home’s completion, and his funeral was held on the premises. Noting that Halloween is just around the corner, Scott mentioned that a 5-year-old child is reputed to have seen a ghost on the staircase, but the warmth of this gracious residence belies any hint of apparitions. The home has changed hands many times over the years, and at some point the magnificent two-story rear porch was removed, but later restored from early photographs. Throughout every transition, the home’s authentic character has been retained, and today the residence is a faithful blend of original elements and conscientious updates.
Vintage features include countless French doors; seven fireplaces, two with hand-carved marble surrounds; the banisters, tiger eye oak treads, and magnificent art glass window of the main staircase; considerable trimwork and paneling; and pine flooring on the third floor. Although original to the home, all of the windows were removed and reinstalled with the original sash weights and chains in place of the cords. During previous renovations, the pine flooring on the two lower levels was replaced with elegant oak, and the radiators were exchanged for zoned gas heat. Rewired to meet contemporary standards, the foyer’s crystal chandelier is original, as is the fabulous Swarovski crystal chandelier in the dining room. Pointing to the Swarovski fixture, Scott quips, “It looks like a giant disco ball when the sun hits it!” With a salute to the previous residents, Scott explains that most of the furnishings – all comfortable, tasteful and well-suited to the period architecture – were purchased with the home. The new owners have added a number of treasured family heirlooms, for example, a beautifully carved “kitchen” clock in the living room and a small china hutch in the breakfast room. (featured in SLHL’s March 2013 issue), Scott acquired a variety of complementary antiques, including a Howard baby grand piano, dating to the 1920s-1930s and set in the dining room bay; a 9-foot-tall, 200-year-old wardrobe in one of the guest bedrooms; and a barrister’s bookcase that houses Scott’s cookbooks. Upstairs, various bedrooms have been repurposed for a media room, with balcony and a 72-inch flat-screen TV recessed in a former closet; a billiard room with an elegant slate pool table from an older home in University City; a separate room for card and table games, also equipped with a TV and a “very classy” foosball table; and Scott’s office. Surround sound is also installed throughout the home. Reflecting on the alterations they’ve made and future plans, Scott notes that Salinas will be overseeing the upcoming renovation of the basement, adding, “I wanted an older home that was comfortable, with a nice flow for entertaining, but I didn’t want it to look like a museum.” Then he reveals the exotic surprise…Unseen from the street, the L-shaped, 2-story rear porch adds another 1,000 square feet of glassed/ screened living space and overlooks a backyard that could grace the pages of any Florida design magazine. The lower level includes a
view-packed dining area, and the freeform pool is surrounded by an abundance of citrus trees – lemon, orange, key lime, and grapefruit – and a fabulous array of tropical plants, all transported from the Sunshine State. The pool has been converted to saltwater, which Scott claims is superior to chlorine and much gentler on the skin. A bank of huge cabinet-quality drawers under the porch floor provides storage for pool accessories, and a side stairway accesses the basement cabana area. Casual furnishings for the porches and outdoor area were purchased for this home and reflect the owners’ taste for all things Floridian. Several fountains murmur softly in the background; an enormous, age-old flowering crabapple tree shades the side yard; and Scott proudly shows off the red cedar plank floor of one side porch, which he refinished with 10 coats of marine varnish. St. Louis is known for its meticulous, and sometimes obsessive, preservation of historic architecture. But this spectacular residence in Compton Heights proves that respect for tradition and casual contemporary living can exist in glorious harmony. See www.stlouishomesmag.com for resources.

estled deep in the woods, deer and turkey roam this 850-acre farm just outside of Morse Mill. Catfish, bass, bluegill and crappie fill a 30-acre lake upon which sits a refined lodge that is the family compound of Elke and Paul Koch. While the animals and natural elements have been a part of the land since 1969 when Paul’s family purchased the property, the lodge, or the farm, as the Koch’s affectionately call it, has only been in existence for four years. “About seven years ago, our son had a great time visiting the Lake

of the Ozarks,” Paul explains. “It got my brother and me thinking about developing our property.” With the idea that the farm would be a place to bring both Paul and his brother Roger’s families together, the Koch’s began building a home on their lake with family in mind. With a number of children, grandchildren as well as friends, Paul and Elke knew their second home had to accommodate the vast amounts of guests they would inevitably host by giving everyone their own space and privacy. To meet this requirement, they came up with an

idea where family and friends could still feel connected while having their own private sanctuaries. “The idea for the home came from Paul’s uncle’s house around Columbia,” says Elke. “They would visit when they were young. He had two houses with a breezeway in between. We knew we wanted a similar concept.” Their idea further came to fruition after seeing a similar home on HGTV. Calling in architect Lauren Strutman to bring their vision to life, the
three of them designed a main house, which features a kitchen, dining room, great room and master suite, with a main-level breezeway that adjoins the guest house, featuring two master bedrooms and two children’s rooms. “The upstairs bridge also connects the two homes and makes for an easy connection in bad or cold weather,” Lauren explains. After finalizing plans, builder Oscar Higginbotham began constructing the home while Elke could focus on what she does best…designing and furnishing the interior spaces. that was reminiscent of a fishing or hunting lodge, but more refined, Elke drew inspiration from their travels abroad and through the Western states. “Paul and I are both big fly fishers, and Paul is a hunter,” says Elke. “We incorporated the style of some of the lodges we have stayed in as well as elements of our outdoor interests.” Elke established a color palette that includes red and brown wood tones with punches of muted oranges, reds and greens. The result is a sophisticated lodge filled with personal touches and prized catches and hunting mounts, including plenty of horns and deer décor, which are a nod to Elke’s Austrian heritage. Entering through the front door, guests and family are greeted in the expansive great room, complete with high ceilings and a wall of windows overlooking the serene lake. A fallen-antler chandelier illuminates the room and brings in a hard element to balance the upholstery and wood. Two plush chairs in a Highland Court fabric and two leather sofas create a cozy seating area in front of the stone fireplace.

The great room walls are ornamented in 100-year-old reclaimed wood from Utah, which plays up the lodge feeling of the home. To keep the space more dimensional, Elke mixed fabrics with varying shades of wood and stone. Over time the wear and tear on the soft pine plank flooring, which covers the great room, dining room and kitchen floors, will enhance the character of the space. Open to the great room, the dining area is a true delight for family and visitors sharing a meal. The large table seats up to 10, and complementary upholstered chairs in muted greens, reds and golds provide a comfortable place to sit. With a constant stream of guests and visitors, you will never find Elke and Paul’s table unset. No matter the occasion, Elke outshines herself by setting a beautiful table with seasonal plates and napkins. Silverware, cups and serving pieces with horn detailing add to the lodge ambiance. Adjacent to the dining space is the home’s kitchen. Designed to accommodate communal cooking, with a double oven, Wolff cook top, Sub-Zero refrigerator, wine cooler and two dishwashers, the kitchen

is well equipped for entertaining large groups. Baygents Company provided the rich distressed natural cherry cabinetry by Wood-Mode. Pulling in the gold and copper tones from the cabinetry, the dark granite countertop is a fitting contrast to the warm wood tones. After a day of entertaining family and friends, Paul and Elke retreat to their relaxed master suite. They fall asleep and wake each morning to the quaint view of their lake. Stucco walls and iron-trimmed furnishings are a welcome change from the abundance of wood in the main living areas. The combination of deer, pheasant and fox décor enliven the suite. One feature Elke and Paul made sure to include in their bedroom was a fireplace. “We have had a fireplace in our bedroom in every home we have had since we have been married,” Elke says. Other private spaces in the home include the guest wing, which is connected to the main house by a breezeway and bridge. The inbetween space includes a game table and sitting room. Each level of the guesthouse has a master bedroom with a view of the lake. An additional room on each level is devoted to Elke and Paul’s grandchildren – a fishing room for the boys and a fun and feminine room for the girls. “I definitely had family in mind when planning the guest rooms,” says Elke. “As I came up with the vision for what I wanted each room to look

like, I would start to plan the furniture and bedding.” Elke first selected the boutique (themed) fabrics, which are not always easy to find, and then she finished with accessories. Her favorite fabric is in the little girl’s room, where she did a Scalamandre Covey print for her granddaughters. The master bedrooms are furnished with Old Hickory furniture, while the children’s rooms are outfitted with fun finds from Appalachian Rustic Furniture. While everyone has his or her private space, the highlight of the home is the exterior space where Elke, Paul and guests cozy up around the fireplace, dine alfresco, peacefully watch the sunset over the lake or admire Clyde, the fisherman statue who stands at the water’s edge by Mike Casper, that Elke presented to Paul as a birthday gift. Accessible year round, the outdoor space truly is magical. “We love to sit around the fire in the evening listening to the crackling of the fire,” Paul says. As the leaves begin to turn and the chill of the fall air sets in, you can bet that you will find Elke, Paul with family and friends celebrating the season at their farm. “I love being in my garden when I get home. It’s very therapeutic.” Be it tending to pots overflowing with floral color or supervising projects so major they begin with earth movers and retaining walls, Kim Kelce, along with partner Nancy Pedley of Kelce & Pedley, spends six days a week up to her green thumbs in other people’s gardens. So where does she head when her workday is over? You’d most likely find her in her own Webster Groves garden nursing a recently planted hyacinth bean vine over a wrought iron arbor or looking for the best place to plant a few orphan yellow marigolds left over from a recent job. “Look at them. You just can’t throw them away,” she says lifting a slightly flopped plant to its proper height. With all the time and talent she has devoted to clients’ projects “I have

the most enthusiasm for my own garden,” she smiles gazing out over the space. “I love being in my garden when I get home. It’s very therapeutic.” Her current garden has been six years in the making and, at two thirds of an acre, is considerably smaller than the two-acre spread she tended at her former home. Although on a busy street, the property appealed to her because the deep lot offered privacy in back and she easily envisioned ways to screen the historic, European-influence residence from traffic. Kim began by framing the front of the property with a tall line of evergreen Foster hollies. Working toward the house, a second line of Winter Gem boxwoods scales down the height of the hollies and ties

the screening to the earth. Azaleas, scattered through the landscaping, provide beautiful spring color. The back of the property presented a second challenge. While once the site of a lovely garden, weedy honeysuckle had taken over. “It took me two years to get rid of it,” Kim recalls. She also needed to re-grade and build up parts of the space. A plus was Kim’s good relationship with the previous, long-time owners of the property Rich and Alex Usher, who took a great interest in her restoration of both the house and grounds. In addition, they provided background on the home, which was built in 1887. The most striking feature of the historic landscape was a flagstone walkway, still lined with the original iris and peonies, that went straight down the
center of the yard. It was a feature, that though unusual, Kim quickly decided to retain. “It’s not something I would envision doing for someone else,” she suggests. “But when you see it in this yard, it makes perfect sense.” To the existing plants Kim has added amber Drift roses, tall, white David phlox, purple bell flowers, mounds of scarlet Divine New Guinea impatiens and evergreen boxwood shrubs for winter interest. Most striking is the tiny, purple-leaved Chocolate Chip ajuga that creeps between the flagstones in the walkway, outlining each stone as if it were a piece of the three-dimensional quilt. (sculptor) Bob Cassilly that I had at my other house,” Kim explains. “I just couldn’t leave her behind.” Kim also managed to reclaim flagstone steps leading to a shady, lower, grotto-like enclosure at the very back of the yard. “Alex told me they were there,” she recalls. “I just had to keep working until I uncovered them.” Now lined with hosta, azaleas and hydrangeas, the space projects a cool, serene, refreshing ambience in even the hottest weather. “My kids tease me and say, ‘Mom, why do you want to have a garden back there. No one sees it,’” she says. “I tell them, ‘I’m the one who sees it.’”

Kim is delighted to credit Alex Usher for a number of plants in the garden, such as the magic/surprise lilies grouped as floral bouquets along the steps and has tried to retain as many plants from previous owners as possible. “Alex planted things, and I’ve rearranged them to work in this landscape,” she says. The most recent addition to Kim’s landscape is a deck off the back of the main floor of the house and a stone retaining wall and patio off the lower level. Both break up what otherwise would appear to be a four-story structure from the rear. They also provide additional garden space. Lush flower boxes overflow deck railings and containers

of herbs and vegetables, such as tomatoes and peppers, add utility to the lovely patio. Her garden succeeds, Kim says with a laugh, because there are few, if any, rules. Terra cotta pots mix with limestone. “I like to try things. If it doesn’t work, it doesn’t work. You can always change things.” The most successful gardens, she feels, mix annuals, perennials and tropicals. “They all have their value,” she notes. Kim also has success mixing shrubs and annuals such as boxwood and New Guinea impatiens, normally thought of as shade loving, into sunny spaces. The secret, she says, is making sure the shade lovers get plenty of moisture.
Her tips for creating a beautiful garden include regular pruning to maintain size and keep plants looking tidy and regular feeding, particularly of annuals. “Just because you have an irrigation system,” she notes, “doesn’t mean that you don’t have to add additional water to trees and shrubs, particularly in hot summer weather. “People need to understand,” she emphasizes, “that gardens are always changing. You can’t plant something in a space and have a look that always stays the same. Gardens are made up of living things than grow and change. Made in the Alsace
White wine with meat...Sacre Bleu!

The region of France that turns on its head the tried and true axioms about the proper wines to serve with meats and fish or chicken is in the northeastern part of the country, bordering both Germany and Switzerland. The Alsace lies in the picturesque Rhine River Valley, just east of the Vosges Mountains. Its geography has informed its history as this picturesque land has changed hands between France and Germany several times. From the names of its towns and cities to its cuisine and wine production, one can easily identify both French and German influences. Like Germany, the wines are largely white, including dry and off-dry Rieslings and Gewurztraminers. But Cremants, that show Champagne-like characteristics bubbles and all, have a definite French flair. There are also dry Pinot Gris and Pinot Blancs that are neither French nor German – much more particularly Alsace. Yet, despite the popularity of white wine, this region is not known for seafood, aside from fresh-water trout found in the Rhine and lakes in the area. Pork and pork-based sausages, frankfurters and bacon

typically are served here. They can be found either roasted or braised in stews or hearty dishes such as the world-famous, traditional Choucroute (“sauerkraut” in the old Alsace dialect). It is a stew of smoked pork shoulder, bacon, pig knuckles, sausages and Strasbourg frankfurters, cooked with the sauerkraut, onions, garlic and potato. The potatoes, dumplings, noodles and spatzle in many Alsace dishes lean heavily towards the German side of the region’s personality, while other dishes are “tres” French. These French-influenced foods would include: Tarte Flambe (with onions, bacon, butter, heavy cream and Fromage Blanc), pates, foie gras, onion tarts and cheese pies. Also influenced by the French is Coq au Riesling, a chicken-based stew with cognac, carrots, garlic, mushrooms, a host of herbs and a cup or two of chicken stock and Riesling in which to simmer the rest of the ingredients. Additionally, the region’s white wines, with their acidity and richness, are excellent libations for these hearty, meat-based dishes. These are the foods on which all the wine families of the Alsace have been raised. Take for example Georges Lorentz, whose family has been

growing grapes and making some of the finest Alsace wines since 1836. Georges is the sixth generation of the family to proudly produce Gustave Lorentz wines, so named after the founder. Along with his wife Ingrid and three beautiful daughters, Georges still enjoys these dishes in their historic chateau in the town of Bergheim, right in the heart of the Alsace. Bergheim is one of the few cities to have retained its medieval walls, which date back to the 1400s. The centuries-old masonry and timber-lined homes within these walls are surrounded by some of the most beautiful floral landscaping in all of Europe. Among the family’s favorite treats are the Alsace specialties Bretzels, a large pretzel with a bread-like” consistency, and a brioche-shaped bread called Kougelhopf, which is studded with smoked bacon bits and walnuts. Sparkling Cremant d’Alsace is a great wine for the adults to enjoy with these savories. With October’s cooler weather pointing us in the direction of soups, stews and heartier fare like Choucroute, Coq au Riesling and the rest,
it’s a comfort to know that we don’t have to give up our white wines – we just have to follow the Alsace’s lead and defy conventional food-wine pairing wisdom. Apple tart ‘‘Apfelkueche’’ • 1 1/8 c of short pastry • 4 3/8 c of apples • 1/2 c of sugar • 3/4 c of cream • 2 eggs • 1 sachet of vanilla flavored sugar Preheat the oven to 350°F. Roll out the dough and place in a buttered, floured tart mold. Peel and core the apples, and cut them in quarters. Place them in circles on the pastry. Beat the eggs with the two types of sugar and the cream and pour the mixture over the apples. Place in the oven for 30 to 40 min at 350° This tart is delicious served hot, with a sprinkling of cinnamon, but can equally well be eaten cold.

Don’t mess with perfection. After rehabbing multiple old houses— and selling countless more—realtor J. Warner understands the truth to the old adage. So when he and his partner, George Hettich, found their current Clayton home, they knew to leave well enough alone, preferring instead to allow the house’s elegant proportions and sophisticated details to speak for themselves. Once the home of William Ridgely Young, the renowned early 20th century architect and founder of the St. Louis firm Maritz and Young, the house features the graceful lines and beautiful touches its designer was known for. Overlooked by an open mezzanine, the living room

stuns with a dark wood cathedral ceiling detailed with a painted geometric pattern, plaster walls textured to look as though they’re made of stone, and four sets of French doors topped with arched transoms. Three walls of French doors flood the dining room with eastern light in the morning, making the small room feel anything but; in the evening, warm lamplight from the room’s crystal sconces spotlights the cloister vaulted ceiling. The duo’s eclectic mix of traditional furniture, comprising family pieces, items collected on travels and objects with sentimental value, fits well with and adds to the house’s Old World aesthetic. “We basically

knew where everything would go when we purchased the home,” Warner says. Though the spaces hold many treasured pieces, they don’t feel crowded—a feat aided by the dining room’s airy architecture and the living room’s multiple area rugs that create separate vignettes based on use: sitting area; desk space, and the once-fire-damaged 1917 Ludwig Aeolian piano that George restored. That’s not to say the house didn’t require some polishing. After decades with a reclusive former owner, the Spanish eclectic style home was not without its share of projects. But its new owners were careful

to update with an eye toward preservation. Reopening two porthole windows above the living room’s scalloped built-ins added extra light and restored balance to the four already in the room. A new gas insert for the enormous fireplace cozied the room while making the 6-foot-tall mantel a focus element. Removing wall-to-wall carpet yielded some pleasant surprises: original gray terrazzo floors in the living room and flagstone in the dining room. “We tried to return the house to its original elements,” Warner says. “With an old house, you never really own it, you just take care of it.” See www.stlouishomesmag.com for resources.

Cooking Up Change A Mediterranean makeover breathes new life into this Richmond Heights kitchen.

For many people, the kitchen is the heart of the home where family and friends gather to nibble and nosh while sharing stories and making memories. With an Italian heritage, a deep love for food and a propensity for entertaining, homeowner and interior designer Mary Tramelli is definitely one of those people. But her tiny (123 square feet) kitchen posed a problem. “It meant that I was alone in the kitchen while the party went on without me,” says Tramelli, who was forced to prep food in the small space and then bring it out to guests. She knew a remodel was long overdue. “Now everyone gathers around an antique farm table and food preparation is a group effort,” she says. “I can soak in the voices and laughter of the company that surrounds me.” When Tramelli started the remodeling project, size was the first obstacle to overcome. The kitchen was gutted and extended by eight feet, as far as it could go before hitting a tree in the backyard. To further open up the room, the wall between the kitchen and the adjoining breakfast room was removed. Next, it was time to give the new space a new look. In keeping with the home’s Mediterranean style, Tramelli chose architectural features that already existed in the house, such as arched openings, stucco walls, a beamed ceiling and hardwood floors. The hood over the range top was faux-painted to resemble copper.

In addition, a large arched window was added above a farmer’s sink with a window box placed outside, its flowers popping up above the windowsill, just in view. “In making selections, I chose everything with an Old World feel,” says Tramelli. “The cabinets are dark brown knotty alder with added distressing; countertops are concrete with shades of terra cotta and chocolate brown; the tile back splash is cream travertine with terra cotta accents; light fixtures, hardware on cabinets and the faucet over the farmer’s sink are oil-rubbed bronze; the stucco walls are taupe, and the ceiling beams are stained dark brown.” She found Italian dishware and pottery to match her color scheme, and she repurposed an existing antique butcher block by fitting it with a new top (given an antique look, of course). The top extends beyond the base, and barstools were paired to create an island centered in the room. “What I love most is not one feature, but all of them together that make the kitchen feel so Mediterranean… so much like Italy, which is my favorite place in the world,” says Tramelli. “But the very best thing about my kitchen is not that it’s aesthetically appealing, but that it functions well and is now the hub and heart of our home.” See www.stlouishomesmag.com for resources.

“Pewter is a wonderful metal, and one that’s becoming very high style,” says B. As such,” Knapp says, “silver is being replaced by pewter and bronze.” Gravitation toward pewter, in particular, traces to a younger generation of shoppers – one that’s less formal and ornate than buyers past. “We don’t have time to polish things in today’s busy world,” says Nancy Bischoff, co-owner of Byron Cade. Pewter offers a low-maintenance, upscale solution for busy folks who still covet exquisite interiors. The metal – it’s 95% tin enhanced with small amounts of antimony and copper – comes polished, almost like silver, or in a matte finish. The latter, very rustic and Old World looking, has gained popularity, particularly in the realm of contemporary design, Knapp notes. Bischoff, too, notices a movement towards “the antique look you’ll get with matte,” particularly with young brides who prefer lines like Woodland and Ralph Lauren. And, while formality and delicacy may be on the decline, there’s one thing that hasn’t gone out of style: quality. Pewter is a durable metal that

won’t rust or tarnish. Unlike silver, it improves with age and, because of its heaviness, won’t dent. “Pewter may darken slowly over time,” warns Davis, but she happens to like this mutation for its natural aesthetic. Vagabond House and other manufacturers now offer dishwasher-safe pewter products (just don’t use lemon detergent); Reed and Barton, Bischoff discloses, recently released its new Pewter Plate line. “They’ve been in the silver business forever,” she says, “and now they’re finding a new way to tap into a popular market.” Davis likes pewter mugs and pitchers, and always has, because they condense to hold temperature. Knapp likes pewter best in the kitchen and bath where faucets have gone from chrome to pewter. Whatever you do, don’t hold your pewter hostage in a box or closed-off cabinet: use it! With a metal like pewter, the more you use it, the better the finish becomes. “You can display pewter in a beautiful way,” Davis says. Turn an old pewter pitcher into a vase; use pewter mint julep cups as sink-side vases in a guest bathroom, or incorporate pewter candlestick holders or trays into your mantel. The metal’s the most mixable material in decorating, according to Davis, who’s all about mixing: pewter with copper or gold looks playful and oh-so-lovely. See www.stlouishomesmag.com for resources.

Washington University in St. Louis recently renovated a three-story atrium in the School of Engineering and Applied Science on the Danforth Campus. As the hub of the School of Engineering, the school’s goal for the atrium was to create a student-friendly environment full of energy and excitement while providing food services. The new space is a gathering place for student and faculty interaction. The Directions in Design, Inc. team, consisting of Jeanine Bequette, Melissa Rozell and John Peckham, created an area that unified
the two very different building facades and aesthetically projected a progressive, appealing and sophisticated engineering identity. The feeling of motion is conveyed in angled drywall projections and sculpted wall panels. Bright colors add to the visual movement and interest of the space. Lounge furnishings are comfortable, easy to reconfigure, and accommodate a diverse range of groupings.

Todd Saunders of Saunders Architects was commissioned by the Shorefast Foundation and the Fogo Island Arts Corporation to design a series of six artists’ studios on various Fogo Island locations. The organization is committed to preserving the Islanders’ traditions and aims at rejuvenating the island through the arts and culture. To date, four of the six have been completed. The solitary, off-the-grid Long Studio, located near the Newfoundland community of Joe Batt’s Arm hovers on a series
of stilts that lifts the structure above the ground to frame a view of the North Atlantic Ocean. The Squish Studio is located just outside the small town of Tilting on the eastern end of Fogo Island. The Bridge Studio is dramatically located on a steep hillside overlooking the calm waters of an inland pond. The Tower Studio is dramatically situated on a stretch of rocky coastline in Shoal Bay, Fogo Island, Newfoundland.
