Emendis was set up a few years ago by the Valles family - the owners, who had grown wine on this land for generations bringing into this project history, experience, tradition and above all a future: a new way of understanding wines and cavas. The Emendis Estate consists of 48 hectares of clayey soil, low in organic material and chalk but with a high magnesium content, which brings the necessary acidity to maintain the fresh taste of their white wines and cavas. Emendis grows 12 different varieties in their own vineyards. Once the owners gained confidence in the quality of their product, they decided to launch a new image and selected the best design that in their view represents the winery - the result is the stunning labels and bottles that you can see now. This winery has received many prizes in a very short period of time and is now posing itself to represent the future of wines in Catalonia.

“We look for the pure taste of Verdejo with no make-up” José Tejedor (wine maker) La Soterraña is the result of the ambitious project of several friends, unconditional wine lovers with years’ experience in the sector that got together united by their passion for wine – and for the Verdejo variety in particular – to develop a Verdejo white wine within the Rueda D.O. because of its quality and distinction. To this end, la Soterraña was established in 2006 in the town of Olmedo, a traditional region of kings and knights in Spain and ‘par excellence’ a quality wine growing area within the D.O. The first wine harvest was that of 2006, immediately recognised nation-wide for the quality and flavour of its wines. Today, these wines have excellent reviews, very high scores and various national and international prizes placing it at the top of the high-end wines of the Rueda D.O.

Near the old town of Olmedo, we find this amazing winery, which was born a few years ago from the passion of its founders for ecological agriculture, based on respect for environment and improvement to the ecosystem. The winery owners pride themselves in having successfully implemented this philosophy while achieving a great quality product. They collaborate with a number of NGOs in specific projects of ecosystem preservation and improvement, including bird monitoring. The organic development of their wines responds to a form of winemaking based on the natural evolution of the grape characteristics. Caraballas is a terroir wine, which was born from the desire of recovering a vineyard, a natural space for the elaboration of wine through the most radical respect for ecology. This D.O. Rueda wine is the transcription of a vineyard and the future of the authentic Cerdejo. Modernity and tradition are assembled in an author’s verdejo. The winery produces only two wines - Caraballas Verdejo and Caraballas Semi Dulce. Verdejo is a wine with a great power of expression that accurately reflects the vineyard where it was first dreamed, with an undeniable personality. Not to mention the care they take with all the products they use, like FSC certified natural corks in collaboration with FSC cork Organic Wine and WWF Spain, contributing this way to the responsible management of Mediterranean cork forests.

Maior de Mendoza winery is a family business founded by José Barros Cuervo, one of the pioneers in the Albariño world. In the beginning the winery marketed its wines only locally, but following years of continuous growth it is now present in 15 countries and receives awards in the most prestigious wine competitions worldwide. Although these days it is one of the references of the Rías Baixas Denomination of Origin, Maior de Mendoza holds on to its family business roots and values with a corporate culture based on their passion for the Albariño variety and aiming to always present it at its very best. This is the commitment of the technical staff led by Cristina Mantilla, one of the most important oenologists in the country and one of the persons who best understands the Albariño variety. The winery is surrounded by vineyards and is set on the hillside that descends on the fishing village of Carril, famous for producing the best clams in the world. Technically, the winery has the latest technology to produce quality white wines. All of this guarantees that the wines are produced in an extremely clean and tidy environment, vital for attaining the best expression of these crispy wines.

ELADIO PIÑEIRO D.O. RIAS BAIXAS ESTATE WINERY OWN PRODUCTION 20 HECTARES ATLANTIC CLIMATE FAMILY-RUN BIO-DYNAMIC

“It is a trip of today with references of the past, using traditional varieties and respecting the Terroir...” Eladio Piñeiro (owner) In 1983 Eladio Piñeiro launches the wine cellar Mar de Frades after several years of elaborating albariño wine before the D.O. Rias Baixas had been granted. He eventually sold that winery and realized his dream - a real pure Albariño wine - to become the Albariño prophet with his new project. This autochthonous and noble variety has inspired love in him since he was a child. During his school holidays and due to working reasons he visited the houses of the farmers who told him stories about this variety whose loose vines they conserved after the phylloxera and tried to grow enough of it for self consumption. Eladio Piñeiro witnessing all this since he was a boy and grew up seduced and fascinated by the cult these local people rendered to their wine, to the extent that he knew his life would be bound to this myth of El Salnés Valey in Galicia. In addition to his Galician wines Eladio in 1985 bought a quinta (state) in the D.O.C. ALENTEJO in Monçao with an ancient plantation of Albariño and elaborated his brand for the Portuguese market. From there he decided to create some red wines from the area. The result is the extremely well-crafted biodynamic wines produced since 8 years ago.

“Treixadura was going to dissappear, what a shame that would have been” Javier Alén (owner)

In 1988 Javier Alén, together with a group of relatives and friends, launched the project of making a traditional Galician white wine. They were very enthusiastic about going back to the origins of Ribeiro, using the native Galician vine varieties that had given the area wines so much fame and renown in the XVI and XVII centuries. With this in mind they replanted 16 hectares of vineyards on the best slopes of the Valle de Avia (San Clodio and Gomariz) with Treixadura, Godello, Loureira, Torrontés, Albariño, Lado and Albilla and built a modern and well-equipped winery. Later the winery was expanded into a cosy and charming hotel for those who seek relaxation and who love wine tasting. Meín estate appears in the history books of Galicia as one of the first settlements. It was born under the protection of the San Clodio monastery, which was very closely tied to the origin of viticulture in the Ribeiro area in the XI and XII centuries. That is to say, it was right there, in Viña Meín and San Clodio, where Ribeiro wine was born. The monks who planted the first vines were not wrong. The sabrego soil and the gentle South- and West-facing slopes make for the perfect place for viticulture. Viña Meín owns 16 hectares of vineyards placed on the best slopes of the Valle del Avia (San Clodio and Gomariz) with Treixadura, Godello, Loureira, Torrontés, Albariño, Lado and Albilla, which produce enough grapes to fully meet the winery’s demand.

Gorka Izagirre winery is a project under Eneko Atxa ,3* Michelin chef at Arzumendi Restaurant, supervision, in order to provide to his clients a full gastro-enlogic experience of what is produced within his land.They know that the only thing necessary in order to achieve a high quality Txakoli is working with excellent grapes, and treating these in the winery with the same affection that was given to them in the vineyard.For them, the wine cellar represents just another tool when it comes to making wine, at the service of the grape.The cellar is equipped with the latest technological advances in enology that allow to reveal the local grapes with their full potential while preserving its identity. Their Txakoli’s are cultivated in more than 40 hectares of vineyards; includes the Hondarrabi Zuri Zerratia and Hondarrabi Zuri varieties. La Verdosa Vineyard is located near Toledo, around 70 km south of Madrid. A 26-hectare plot on the south-western end of the estate was selected for the vineyard given that at 510 meters above sea level it has the most suitable climate, as well as an optimum, well-drained, sandy soil with a relatively low pH. The wine maker is Mayte Sanchéz who has recently been named “one of the most promising young wine makers of the Spanish wine world” in a wine symposium held in Madrid. A rigorous selection of Cabernet Sauvignon, Merlot, Syrah and Petit Verdot vines was planted in 1999 on a site bordered and dotted with autochthonous holm oaks, all of which were carefully preserved. The result is the 5 elegant and well-crafted wines that are very much appreciated in the Spanish wine world. Its success has been possible due to the help of a world-famous vineyard consultant, Dr. Richard Smart, who was instrumental to the selection of the most appropriate plot of land and vineyard design. “Viñedos Ponce” sits in the Manchuela DO a less-known Spanish wine region inland from Valencia, specializing in the Bobal grape variety, which is also unfashionable. It’s a variety known for its thick skins and rusticity, but it does maintain acidity well, even in this warm, arid climate. The vines are untrained, grown as bush vines, and are not irrigated. Altitude is 700 m. Juan Antonio Ponce began his winery in 2005, at the age of 23. He works biodynamically in the vineyard, and in the winery takes a natural approach, using low levels of sulfur dioxide. He makes 3500 cases a year in a rented facility, with virtually no mechanization.The winemaking process begins with hand harvest. The bunches of grapes are then chilled to 8 °C and fermented whole-bunch, with the stems, in a type of fermentation known as ‘remango’, which was once popular in Rioja. The bunches are foot-trodden in small wooden vats of 1500–4000 kg capacity. After foot treading for a few days, the must is transferred to barrels for the remainder of the alcoholic fermentation, and the malolactic fermentation. Thus the extraction is extremely gentle and relatively short, and the must ferments with the gross lees in the barrel. The wines are typically bottled after 7 months in barrel, with no filtration or fining. They are all 100% Bobal

Talking about Valderiz is talking about Tomas Esteban, winemaker and winery owner, who is well-known for his work as one of the pioneers of replanting Tinta del Pais throughout Ribera del Duero in the late 60’s. With the continued leadership of Tomas as the head of the family and the crucial support of his two sons, Juan and Ricardo, and his daughter Esther, Valderiz is now standing out as one of the best wineries in the Ribera del Duero area. The winery has 75 Hectares of vineyards - many of them are more than 85 year-old. The vines are tended with the total absence of herbicides, pesticides and mineral fertilizers according to the strict guidelines of Biodynamic Agriculture – Valderiz being a pioneer in these techniques. The fermentation is a very gentle and is provoked by the natural yeast coming from the grapes themselves - with complete absence of any additional oenological product (acidifiers, tannins, glucose, enzymes etc.). The fermentation takes place in stainless steel and french oak tanks with a capacity of 20,000 kg. Valderiz has received great critical acclaim, both on the national and international levels.

César Príncipe is nowadays one of the most valued wines in Spain and the best example of the change experienced by the wines in the Cigales region. Cigales had been traditionally an area where the “famous” claretes (rose) wines were made (a blend between white and red varieties). At the turn of the millennium, Ignacio, Cesar’s son, realised what a patrimony they had in their ancient vines and decided to make a red wine in the traditional ‘tinajas’ - huge terracotta urns used for the fermentation process. It was not about high-tech winemaking, but low-tech and hands-on, employing the methods and techniques his family had been using for centuries. The result was a superbly intense, deeply colored and complex wine. This wine - his first vintage - resulted in a score of 94 from Robert Parker. With a result like that, there was no going back. The Cigales area differs from the neighbors as it is neither as cold as the Ribera of Duero, nor as “mediterranean” as Toro. With 60 years-old vines and a wonderful terroir, Ignacio Principe transformed the tempranillo grape into beautifully crafted wines that can easily stand as some of the greatest wines of neighborhood areas. The winery produces a “reserva”-type wine (“Cesar Principe”), a Crianza (“13 cantaros”) and a Clarete (“Clarete de Luna”).

The secret of Viñaguareña wines is the selection of grapes coming from the winery’s over- 25- year-old vineyards. The wine, which is produced with the latest techniques of wine-making, is fermented in stainless steel tanks of reduced capacity, between 15.000 and 30.000 liters. The winery is equipped with temperature control systems, exploitation of gravity for the transportation of grapes, barrel storage room buried underground for the temperature and humidity control, laboratory with all the necessary measuring equipment for the control of winemaking etc. All this combined with an ideal location for the cultivation of the vine, on the banks of the river Guarenya. The vineyards – stretched over 40 hectares - are located at minimum 700 meters and maximum 1,100 meters altitude. All of them are planted 100% with the autochthonous grape variety “Tinta de Toro.”

“The vineyard is the heart of our wines” Roberto Pan (owner) El Grillo y La Luna was born out of a dream of two families who, after several generations working on the land, decided to make their dream a reality. At the smallest winery in Somontano with an extraordinary terroir, and the collaboration of Michel Rolland, we create complex wines with personality; wines that convey the spirit of the land, from which they come. A great vineyard is one that maintains a perfect balance between the soil, the plant and the area's microclimate. The different combinations of these three elements make up the grape's personality. We have chosen vineyards in different areas of Somontano and different types of soils for the same variety of vine. The vineyards have good drainage and little organic matter in order to avoid too much vigour and to preserve a balance between kilo yield and leaf surface. The vines are aerated and kept dry to avoid diseases. They are north-south facing to ensure that the clusters receive equal amounts of sun for consistent ripening. The early varieties are grown in the higher areas and the later ripening varieties in the lower areas. A large number of micro-climates in Somontano means that varieties from many different origins can be grown. With this wide range of possibilities, the only remaining task is to choose the soils and the micro-climates that are best suited for each one.

“It has taken us many years of studies to learn more about the forgotten Rufete and Calabres grapes” Fernando Maillo (owner) “Viñas del Cámbrico” winery sits in the heart of the national park “Sierra de Francia” and produces wines of intense aromatic quality. Sierra de Francia is a breath-taking mountainous region, hidden away in a forgotten corner of southwestern Castilla y León. Cámbrico is situated at 2600-2950 feet, where the conditions are ideal for obtaining grapes of extraordinary quality. The winery produces two main varieties: Tempranillo and Rufete, little known variety close to Pinot Noir and brought to the region by Burgundian settlers over 400 years ago. Wines are all made from old vines (40 to 110 years) planted on terraces of granite and slate soil, formed during the Cambrian Age (about 500 million years ago). In addition to manual harvesting, all grapes are locally grown and farmed organically. So far Cámbrico Rufete is the only wine in the world made 100% out of Rufete. Some wine collectors consider this wine to be one of the top 5 Spanish wines. For others, it is a Spanish wine with a better mouth expression. This winery is certified with the Bio label and is carrying out a lot of research in order to gain a greater knowledge about these forgotten grapes. This relatively new family-owned winery hosted in the estate of Finca Vialba is located in the so-called “Golden Mile” area of Rioja, just in front of the “Marques de Riscal” winery. The estate, surrounded by its own vineyards, has several different zones dedicated to wine elaboration, aging, bottling and warehouse. The vineyard of approximately 20 hectares is more than 70 years old and consists of Tempranillo (predominantly) and a few Graciano and Viura grapes. Under the leadership of the new management Bodegas Fos has been able to create a good quality wine and to demonstrate that Rioja is still the leading wine area in Spain producing modern wines with a lot of common sense. The enologist is Mr. Murua, a well-known person in Rioja. The philosophy of this small winery it based on keeping up with the tradition while looking into the future, thus proposing a new approach to the traditional Rioja wine-making style.

Rioja. The winery was first founded in 1918 as Bodegas Arjona. The Navajas family acquired a share in the business in 1978, and in 1983 they become the winery’s sole shareholder, changing its name to Bodegas Navajas. Since its foundation, winery aspired to be faithful to their principle of “making quality wines”. Wine production begins in the vineyard itself. Depending on its situation and soil type, each plot and each grape variety is carefully looked after with a view to the wine that will finally be obtained, because they believe that the “quality begins in the vineyard.” Bodegas Navajas produces white, rosé and especially red wines, some of which are bottled as young wines and the rest as Crianza, Reserva and Gran Reserva wines. This is a traditional Rioja winery that has been reinventing itself by modernizing its facilities in order to keep up with the new trends and technologies and continue to produce high-quality wines. “We wanted to proof that our local Prieto Picudo can also be a traditional modern grape ” Noelia de paz (owner) In the year 2000, the De Paz Tampesta brothers decided to focus on the viticultural tradition of the Valdevimbre region, which is in the south of the province of León. This region has the greatest amount of vineyards with the native “Cult” grape, Prieto Picudo which dominates the image and personal character of the D.O. Tierra de León wines. This varietal is distinguished by its densely packed grape clusters and its pine nut-shaped grapes, with a blue-black skin; with such an intensely fruity expression that it seems like a fragrance on the vine. This varietal gives a well-structured wine, intense, concentrated and very aromatic.The winery at Bodegas Tampesta merges into the natural caves that have existed for centuries in the region. “The land knows nothing of the medals… and nature is our only prize” Gregory Perez (owner) The Mengoba Vineyards span over Espanillo, Valtuille, Villafranca de El Bierzo and Carracedo. Vineyards work is entirely artisan, and the French-born owner, Gregory Pérez, takes great pride in that. They are even ploughed by cows, a very unusual practice nowadays in Spain. This, together with green pruning and integrated agricultural treatments, ensures that the grapevines only receive products when there is significant risk of diseases. Furthermore, the high altitude where grapes are grown, and the wind streams they receive greatly reduce the need for treatments. Gregory Perez began his wine-making career at the highly reputed Chateau Cos d'Estournel. He then brought this valuable experience gained in Bordeaux to the areas of Tierra de Castilla and Bierzo. His latest project is The Preto, just east of the Bierzo area. It is noteworthy that Gregory ´s wines were selected by the famous El Bulli restaurant, even though Gregory – as a matter of principle - does not present his wines to competitions or wine gurus, he knows what he is doing...

Raúl Pérez was born into a winemaking family, Castro Ventosa, founded by the Perez family in 1752 and the family owns the estate ever since. The Perez family owns 75 hectares of Mencía vineyards in Bierzo making them the biggest owners of this variety within the Bierzo D.O. Raúl grew up developing his own ideas and values while working at the family winery until 2003 when he began his own project: Bodegas y Viñedos Raúl Pérez. They produce extra limited, hand-crafted, artisan wines. In any given vintage, Raúl can extract all the virtues of a place and leave behind the defects. Sketch, El Pecado… each wine is a masterpiece by itself. Raúl Pérez is one of Spain’s finest winemakers. His wines are unique so some wine trade veterans trust he is among a handful of the best winemakers in the world. As his virtuous winemaking talent has become widely known, many winemakers now seek to collaborate with him. Miquel Sastre Bordoy founded Bodegas Bordoy in March 2002. It is a family-owned company with a very peculiar man at the helm. Most people retire when they reach the age of 60 or 70, but not Bordoy. He is an entrepreneur who decided to spend his quietest years cultivating grapevines on his estate. He wants to craft and produce a highly respectable Mallorcan wine. His family helps him in this dream, which is now coming true. The winery and the area around it are spectacular. What used to be two ancient but deteriorated thoroughfares (now restored), have now become the winery, where Bodegas Bordoy wines are crafted. The entire peak of the cliff has been planted with local trees and vegetation, and two winemaking buildings have been installed: a covered one which houses the vintage and reserve wines, and another which houses the young wine. The landscape is eye-catching: you can glimpse over all the vineyards with the chapel of the Sa Torre estate in the background next to Puig d’en Ros hill. On the territory of 20 hectares that they have, Bordoy is growing Syrah, Cabernet Sauvignon, Merlot, and Chardonnay along with indigenous grapes, Callet and Prensal Blanc, producing a very good wine and at a very good price, compared with the other Mallorcan wines.The area is just 4 Km away from the sea and is under Pla I Llevant Mallorca D.O. A pure juice from the Mediterranean sea.

“Montenegro” is the name of the wine produced by Gonzales-Suñer at Ca Sa Padrina, evoking the name of the main grape variety of this wine - Mantonegro. The winery is located in the DO Binissalem-Mallorca, in the mountainous village of Sencelles (Sencellas), central Mallorca. Ca Sa Padrina winery was founded in 1999 by biologist and wine grower, Andreu Suñer, together with the physician and winemaker, Jesus Gonzalez. Montenegro is their first wine and was first produced and marketed in 2002. They own 9 hectares of vineyards, planted on sandy soils covered with pebbles. This type of soil originates from the Tertiary era, and is very common in the center of the island. Andreu’s and Jesus’ goal is to produce quality, balanced wines that bring out the fruit flavor and minimize the oak influence and which are made predominantly with indigenous grapes (like Mantonegro and Callet for the red, and Moll, also known as Prensal Blanc, for the white), sometimes blended with more international grape varieties. The production is carefully controlled in the vineyard and in the cellar. Low yield adjusted to 2.5 kilos per vine allows them to keep only the best bunches. The harvest is done 80% manually. The different varieties are vinified separately, then fermented in temperature- controlled stainless steel tanks prior to blending and ageing, which takes place in French, American, Hungarian and Bulgarian oak barrels (10% new to ensure minimal oak influence).

Situated in the south-east of Mallorca, ÀN Negra winery produces its wines in the old country estate of Son Burguera close to the town of Felanitx. The buildings date back to the 13th century and have always incorporated an area for wine making in order to supply wine to local people living in or near the estate. The cultivation of vines has been a constant feature over the centuries, contributing greatly to the Mediterranean island landscape, and has resulted in wine becoming an emblematic product of Mallorcan gastronomy. The first production was initially made exploiting the existing infrastructure of the old estate buildings. Since then, the improvement of the winery’s buildings has been constant and has been considered an indispensable condition for the making of quality wines. The respect shown to the individual features of the soil and the cultivation of the indigenous varieties (manto negre, fogoneu, prensal and, above all, callet) has formed the basis of winery’s philosophy in the way they approach viticulture and this is reflected in the wine itself. This philosophy aims to revive the original significance of an “appellation d’origine” as it was first conceived in France in the 1920s, in the sense that wines should be made to reveal their own personality. Born of the unique symbiosis of the climate, the land and the indigenous varieties, these inimitable wines are honest and distinctive and challenge the current trend of producing impersonal wine. It is this premise, together with the aim of offering a product of the highest quality, that marks the day-to-day running of ÀN Negra.

Bodegas Navarro winery was founded in 1830 by Jose Antonio Navarro who brought into the project the accumulated expertise of many generations of elaborating Montilla-Moriles wines. According to ancient writings, the Montilla-Moriles wine producing tradition dates as far back as the 8th Century B.C. and the pre Greco-Roman Mediterranean civilizations. José Antonio Navarro employed this ancient traditional process, combining it with contemporary technology when setting up his winery. These wines, elaborated with the best grapes found in the vineyards of the Montilla-Moriles region, are the fruit of a characteristically soft and dense terrain, giving the wine its own special personality. The fact that the emplacement of a great part of the vineyards is on a white hilly terrain called ‘alberos’ or ‘albarizas’, in the south of Cordoba’s province, is not by chance. The ‘albarizas’ are soils rich in calcium carbonate (limestone) with topsoil and subsoil made up of soft marl, poor in natural organic matter, not very fertile, and with a simple mineral composition – mostly lime and silica - with a layered and lumpy structure and a low proportion of chloride and sulphate. The subsoil has a high humidity retaining capacity (around 30%).

Bodegas Blanca Reyes is a traditional family winery, originally founded in 1884 by Mr.Francisco Espinosa de los Monteros in Jerez de la Frontera, capital city of the Jerez-Xèrez-Sherry denomination of origin, sited in the popular Plazuela, home of great flamenco artists in the district of San Miguel. Until 2008 this winery had been working only as an official provider for Gonzalez Byass, a winery supervised by the world renowned sherry maker Rafael Garcia, so their history as an independent wine maker is quite recent. The winery has got a typical cathedral-like structure of the wineries from Jerez, with thick stonework, high wide windows and elevated Arabian tiles. All the process of breeding and ageing is traditionally made with the genuine sherry system of criaderas and soleras. Sherry was regarded as the most famous wine on earth in the times of Shakespear, but sadly in recent years has seen a significant decline in its consumption. Bodegas Blanca Reyes decided to focus their efforts on re-conquering the “lost crown” for the sherry kingdom. A small winery when compared with the big players, they would only bottle their wine after receiving an order, so the clients can expect a fresh from the cellar wine, to be enjoyed in any part of the world.
