2019 will be remembered as the year of new restaurants at South Coast Plaza. In this issue of TASTE, we’re delighted to introduce Knife Pleat, a contemporary French restaurant from chef Tony Esnault and restaurateur Yassmin Sarmadi, and The Hall Global Eatery, from our longtime friends at Vaca, chef Amar Santana and business partner Ahmed Labbate. The two restaurants are on the radar of diners in OC and LA who can’t wait until the openings—and neither can we. Also new at South Coast Plaza is Yellow Vase, a charming café-bakery-florist from Morgan Sanjar, who has a loyal following in the South Bay. Come late spring, Marugame Udon’s famed noodles in signature bowls will make it the perfect spot for a quick bite. In summer Dripp will open, the specialty coffee bar from Rabih Sater. Across Bristol Street at our office towers there is more restaurant news. The popular Philz Coffee has opened to long lines. The Australian-inspired beach-café Outpost Kitchen, as well as a Japanese-Peruvian fusion restaurant, Costa, will debut soon. We have updates in retail with major remodels by storied brands Salvatore Ferragamo, Harry Winston and Valentino. Our Saks Fifth Avenue wing is undergoing extensive renovations to create a more contemporary setting for new retailers—Eve by Eve’s, known for luxury women’s ready-to-wear, fine lingerie and beauty; and Camilla, featuring upscale bohemian fashion from Australia. KNIFE PLEAT LIGHTS THE PENTHOUSE WITH

C
hanel, Dior, Hermès—all treasured French fashion houses represented at South Coast Plaza. And soon an appropriately refined French restaurant, Knife Pleat, will lure fans of acclaimed Los Angeles restaurateurs Yassmin Sarmadi and Tony Esnault to their new penthouse atelier for exquisite cuisine. Slated to debut in late spring, the dazzling venue is the most anticipated fine dining restaurant opening in years. Knife Pleat, named as a nod to the shared artistry in fashion and cuisine, is a freshly imagined concept that leverages the duo’s notable triumphs. Sarmadi broke new ground in a then-sleepy (circa 2008) Arts District zone with Church & State, the charming French bistro that wowed doubters and ultimately dazzled the late Jonathan Gold when Esnault joined the kitchen. Raised in the Loire and schooled in Lyon, Esnault was mentored by the illustrious Alain Ducasse, the first chef to own three restaurants with three Michelin stars in three cities. Esnault worked for Ducasse at Louis XV in Monte Carlo and was his executive chef at Alain Ducasse in Manhattan; he later served as executive chef at Joachim Splichal’s flagship Patina in downtown Los Angeles. Expect compelling interpretations of global French fare, inclusive of all provinces of France. Seasons hold sway here—so spring and summer will lean to southern French dishes, and in fall-winter, northern and Alsatian dishes. Esnault will conjure a composed vegetable dish, his celebrated metier, teasing expression from each season’s finest crops by local growers. Exacting and elegant, the dish is sure to dominate photo-hungry social and dining media. Pasta and risotto will be menu staples as well. 6 southcoastplaza.com

A wood-burning oven adds to the kitchen arsenal. Look for a prix fixe lunch designed to entice shoppers to a luxurious façade of onyx, brass and translucent glass that reveals surroundings of understated chic. Chevron pattern oak floors, soaring curved soffits and sculptural settees strike a tailored, modern tone. An expansive skylight floods the 80-seat dining room with the daylight aura of a serene orangerie. A striking alabaster chandelier illuminates diners at warm wood tables appointed with Rosenthal china and Sambonet cutlery. A bespoke chef ’s table will be in demand, but for an intimate view of the kitchen action, choose the centerpiece white Calacatta marble bar atop a fluted cast stone base that offers room for nine.

The dinner carte will also offer a tasting menu, signature cocktails and a vivid wine list. As the seasons change, Esnault will offer singular specials such as a winter truffle menu, white asparagus or morel mushroom creations in spring, and game dishes in fall. Knife Pleat brings a honed edge and by-hand artistic approach in keeping with its rarefied penthouse neighbors— Oscar de la Renta, Christian Louboutin, Canali and atelier Louis Vuitton.

A
mar Santana is the “Top Chef” finalist who burst onto the Orange County culinary scene as the executive chef of Charlie Palmer at Bloomingdale’s, where he first partnered with operations guru Ahmed Labbate. The duo will open The Hall Global Eatery, a large, ambitious and multi-themed restaurant concept, in an 8,000-square-foot space. A summer opening is planned. Those who love Santana and Labbate’s two other popular restaurants, Vaca, in South Coast Plaza’s Park Tower, and Laguna’s Broadway by Amar Santana, can expect the usual winning combination of vibrant surroundings, a welcoming vibe and inventive cuisine. The master chef is testing some bold new dishes influenced by his recent forays to Spain, Morocco and Korea, where he performed so well in a popular “Top Chef”style TV show that he became a national celebrity. “This new restaurant brings together a lot of things that I’m interested in trying now,” Santana said during a hard-hat tour of the site. “I like to experiment, defy people’s expectations and stretch my boundaries.” The Hall captures the “global marketplace” atmosphere that’s currently trending in America’s food capitals. It will offer diners three contrasting culinary experiences.

Two intimate fast-casual food areas will occupy the back of the space: an open espresso bar offering pastries, baked goods, sandwiches, salads and coffee; and an adjacent counter featuring shawarma, babaganoush, hummus and other Middle Eastern fare. A six-foot-tall juicer will produce fresh fruit juice to order. “In the coffee shop, everything will be homemade,” Santana said. “I’m planning casual meals that are a cut above, like bacon, egg and cheese on brioche. With the juices, we will bottle different flavor combinations every day.” An added bonus: Santana’s mother, Altagracia, will be helping out.
A more upscale dining experience, Crudo, occupies the front half of the room near the windows. “At Crudo there will be 22 seats at the restaurant and another 22 seats at the bar,” Labbate said. “We’ll do a shellfish display on one side of the bar, cheese and charcuterie on the other side. It will be a full-service restaurant.” A small retail section will stock delicacies identified with Santana’s growing culinary empire. “We’ll also carry wine, fancy cookies, chocolate and preserves,” Santana said. “During holidays we will offer themed items.” With 200 seats in total, a large tree-shaded patio, and outdoor and indoor cocktail bars, The Hall will provide something irresistible to every palate and whim. The larger inside bar, where guests can order crudo dishes and housemade charcuterie, will serve cocktails custom-designed by creative mixologist Michael Rooney. The business partners chose two respected design firms for the project. The interior design is by New York’s Studio Padron, and the architect is the Laguna-based firm of Anders Lasater, known for its clean, minimalist and airy style. Santana and Labbate agree that The Hall is a new concept with many challenges. But that’s what attracted them. “It would have been easier to open another Vaca or Broadway,” Santana said. “But this is more creative. s someone who prefers dining out over staying in, it was an eye-opening experience to participate in sSouth Coast Plaza’s various culinary education settings. We learned from experts at Stonewall Kitchen Cooking School (located within Macy’s Home Store), Williams Sonoma, Sur La Table and Antonello Ristorante. The quartet of culinary options was as unique as the instructors who taught them.
Stonewall Kitchen Cooking School Open since November, Stonewall’s dedicated classroom is the second educational facility by the East Coastbased brand, best known for specialty foods such as Wild Maine Blueberry Jam. Classes are offered during

a 90-minute span at a variety of times and days. While this was strictly a demonstration setting, it was an immersive activity involving interactions between us and our gregarious instructor, chef Susan Carter. We enjoyed

Menus are well-rounded, incorporating a complete meal within the topic provided; our Casual Dinner theme included a white bean salad with arugula and almond pesto and preserved lemons, skillet chicken with mozzarella, fresh potato focaccia and Shaker lemon tart. With seating for up to 24, Stonewall Kitchen’s offerings are ideal for friends of all skill levels seeking an easygoing afternoon, evening or weekend outing. Williams Sonoma Intimate groups of 10 are wrapped around Williams Sonoma’s large cooking island, giving everybody an ideal vantage point from which to observe the execution of recipes. Our instructor was chef David Thompson, and his weeknight menu focused on seasonal vegetables and dinner preparations, including a perfectly cooked salmon. Courses were explained methodically, so as dinner progressed, we’d dine on the finished component 16 southcoastplaza.com
Providing a hands-on learning environment, chef Kim Mital’s layout factored in a prepping workstation for each participant. Throughout our Chinese Cooking 101 session, everyone had opportunities to prep ingredients and use the stove during the cooking process. First-timers received useful practice with knife skills; seasoned students used the class time for inspiration in their own kitchen. Sur La Table’s recipe packets also included an ingredients glossary describing common terms in-depth. We helped ourselves to all the dishes at the end of class, and were given the option (as with Stonewall Kitchen and Williams Sonoma) to take advantage of a same-day discount toward food and equipment. Antonello Ristorante Fiorella and Antonio Cagnolo welcome guests as family during their quarterly culinary series in one of Antonello’s private dining rooms. Taught in a restaurant setting, service is second to none with complimentary wine pours and breaks between recipes to clear each of our courses. The complexities of scratch-made pasta are demystified, as ricotta gnocchi is swiftly prepared and cooked in a matter of minutes. An unintentional comedic duo, Fiorella walked us through traditional Italian dishes, while Antonio offered colorful commentary. Antonello Ristorante’s Friday evening mainstay is a quintessential date night. For equally entertaining classes, sister restaurant Quattro Caffé offers similar cooking events with Domenico Grillo. The Orange County Museum of Art’s second season in its temporary space at South Coast Plaza Village presents new exhibitions of works by six Pacific Rim artists. A seventh show features objects from the museum’s collection. The exhibits include interactive installations, photography and site-specific interventions that speak to some of today’s pressing global socio-political concerns. The interim location, named OCMAExpand, is almost double the size of its previous venue. The award-winning Thom Mayne-designed new museum is underway at Segerstrom Center for the Arts and projected to open in 2021. Admission and parking at OCMA are complimentary.
