What is the true meaning of Christmas to you? A sharing of memories and devotion to the Christmas spirit from Ms. Deborah Buelow’s third and fourth grade class at First Evangelical Lutheran School in Elkhorn What Christmas means to me is the day that Jesus was born, that God gave him to us, you and me. And when the Christmas service starts, the joy of the born king. From in the books of the Bible, in the books of Matthew and Luke, the children say passages. I think of “Joy to the World” at the end of the service, singing about God. When I get home, I think what will I get when I open presents. I open my presents then I think about what I did. I thank my relatives. ~ Morgan P. Several of my favorite Christmas memories are my dad and I went outside to shovel snow and we got the plow out instead of shoveling. We did and then when we got done, we

went inside, got some hot cocoa and then we went outside. My dad built a fort and I built a castle. He put lights in his fort and I did too. We had a snow war and guess who won this victory? It was me. ~ Brody B.

One of my favorite Christmas memories is when my sister came for Christmas. Then my sister and I went sledding. Then my sister and I went home and my sister slept over. Then the next day, we opened presents. Then my sister and I had some hot chocolate. My sister and I went outside to play and we stayed outside until supper. ~ Ambur F. What Christmas means to me is when Jesus was born and he was given gold, frankincense and myrrh. One of my favorite Christmas memories was when we had a huge snowstorm two years ago. ~ Trent V. What should he get her for Christmas and why? We asked fourth graders in Mrs. Lana Spranger’s class at Tibbets Elementary School what they thought Santa should wrap up for Mrs. Claus this season. Dear Santa Claus, I think that you should get Mrs. Claus a new mug for hot chocolate. You should get her a new mug because she might be sick of her old one. Do you know how hard she works? She is probably busy all the time. Do you get all the elves a present for Christmas too? I think that you should if you don’t because they work hard all year round! My Christmas wish is that my mom will get a dad. Your friend, Paige V. Dear Santa Claus, I think you should give Mrs. Claus some cookies and a soft blanket. She makes you cookies, so make her cookies and get a soft blanket because it’s cold there. How about jewelry, like a necklace and earrings? She will like some nice jewelry. Dear Santa Claus, I think you should buy Mrs. Claus something relaxing. You should think about how hard she works. So, you should buy her a massage chair because she is probably very tired. It would soother her aches and pains. She would love it. You could also buy her a blanket for when she’s cold. Mrs. Claus would love it too. Mrs. Claus would love either one a bunch. PEANUT BUTTER BALLS Ingredients • 3 boxes powdered sugar • 1 quart peanut butter • 1 pound margarine • one bar paraffin wax • 24 ounces chocolate Process Mix and roll powdered sugar, peanut butter and margarine into dime-sized balls. Melt paraffin and chocolate in double boiler. Dip balls with a toothpick into chocolate mix and place on waxed paper.

• 1/2 tsp. salt • 1/4- cup water • 1/2 cup sliced almonds • 4 oz. milk chocolate (optional) Process Grease very top edge around mixed bowl. Put butter in bowl, pour sugar in and add salt and water. Do not stir! Cook 7-10 minutes on high. It’s done when it’s the color of a Heath bar. Butter cookie sheet and sprinkle with sliced almonds. Pour mixture over top. If desired, lay broken pieces of chocolate over the top and spread evenly as it melts.

• 1 cup butter • 1 1/2 cups cashews • 1 cup sugar Process Put all of the ingredients in a heavy saucepan. Cook on high heat, stirring well until blended, then slowly until golden brown, or about 290 degrees. Pour onto a buttered cookie sheet and spread out. Let set to cool. Cut while still a bit warm or break into pieces. HOMEMADE PEPPERMINT PATTIES Ingredients • 1 pound powdered sugar • 4 ounces cream cheese, softened

HAPPY HOLIDAYS BUTTER TOFFEE Ingredients • 1/2 cup butter (not margarine) • 1 cup sugar

AMISH CASHEW CRUNCH Ingredients

• 1/4 teaspoon peppermint extract • 6 ounces semi-sweet chocolate chips Process Using a mixer, gradually add the sugar to the cream cheese; beat well until incorporated. Add peppermint extract and combine well. Roll dough into teaspoonsize balls and place on baking sheet(s) lined with wax paper or parchment. Create a small “bowl” or indention in each ball using a ¼ teaspoon or your finger. Cover with plastic wrap and let firm up in refrigerator for a few hours. When peppermints have firmed, melt chocolate according to package directions (microwave is fine). Fill a piping bag or freezer bag with the corner snipped with the melted chocolate. Fill each mini-peppermint bowl/indention with chocolate and let cool. Refrigerate in airtight container until ready to serve. Makes about 8 dozen. ORANGE CREAMSICLE FUDGE Ingredients • 2 pounds white chocolate • 1 pound cream cheese, softened • 6 cups powdered sugar • 1 tablespoon orange extract • orange food coloring, if desired Process Melt white chocolate in double boiler until just melted and smooth. Meanwhile, beat cream cheese and sugar in a large mixing bowl, adding sugar a little at a time. Add orange extract and mix well. Stir white chocolate into cream cheese mixture. If you

desire to have an orange-white marbled fudge, place ½ of the mixture in a small bowl and add orange-yellow and red food coloring until desired shade of orange is reached (about 2-3 drops of yellow and 3-4 drops of red). Spoon white portion of mixture into an 8x8-inch glass dish lightly sprayed with nonstick cooking spray. Top with orange mixture. Using a dull knife, swirl through mixture until desired marbling is reached, then smooth the surface. Chill 2 hours and store in refrigerator. CHOCOLATE FUDGE Ingredients • 2 cups sugar • 2/3 canned milk • 12 regular marshmallows • 1 stick margarine • few grains of salt • 1 cup chocolate chips • 1/2-1 cup chopped nuts • 1 teaspoon vanilla Process Cook sugar, milk marshmallows, margarine and salt, stirring constantly, over medium heat to a boiling mixture. Test in a cup of cold water to see if it will form a soft ball – about 5-7 minutes should be enough. Take off heat. Use wooden spoon for stirring. Stir in chocolate chips until completely melted. Stir in walnuts or pecans and vanilla. Spread in buttered 8-inch pan. Cool. Cut in pieces. TOFFEE SQUARES Ingredients • 1 cup butter • 1 cup brown sugar • 1 egg yolk • 1 teaspoon vanilla • 1/4 teaspoon salt • 2 cups flour

• 6 Hershey bars • 1/2 cup chopped nuts Process Mix butter, brown sugar, egg yolk, vanilla, salt and flour well. Spread in greased 10-by-15 inch cookie sheet. Bake at 350 degrees for 15 minutes. Remove from oven and put squares of chocolate on top; the heat from the bars will melt the chocolate. Then just spread the chocolate evenly over the bars like frosting. Sprinkle with chopped nuts. Cut into bars when cooled. PECAN DREAM COOKIES Ingredients • 1 cup butter • 2 cups flour • 4 tablespoons powdered sugar • 2 teaspoons vanilla • 2 cups chopped pecans Process Mix all ingredients together and roll into balls about the size of a walnut; place on cookie sheet. Bake at 300 degrees for 35-45 minutes. Roll in powdered sugar when still warm. FAIRY FOOD Ingredients • 1 cup dark Karo • 1 cup brown sugar • 1/2 cup white sugar • a dash of salt • 2 tablespoons of vinegar Process Mix ingredients together and bring to 300 degrees on medium heat. Add 2 tablespoons of baking soda and dump into an aluminum pan and let cool. Crack the hardened candy apart into smaller pieces. Melt chocolate in a double boiler and dip the pieces with tongs. Allow the pieces to cool and the chocolate to harden.
