We host exhibitions as part of the Engage Arts Festival every year and from 19th June to mid-September we will hold an exhibition called ‘The Locals’ with paintings and sculpture on display from several local artists.

STARTER (SERVES 4)

Pickled Fennel, Goats Cheese and Smoked Salmon Salad

MAIN COURSE (SERVES 4)

West Cork Fish Stew

By Barry McLaughlin, Poachers Inn Restaurant This dish is a celebration of the variety of fish & shellfish from the local West Cork coastline. YOU WILL NEED 1.5kg prawn heads (lobster heads & shells are good to use too) Tablespoon crushed garlic 2 tablespoons tomato paste 8 star anise 2L water 1 large onion, chopped

INSTRUCTIONS (SERVES 4) Remove the greens from the fennel heads and keep aside for garnish. Remove any brown outer layers from the fennel. Cut vertically. Slice carefully and as thinly as possible with a sharp knife. Put into a big bowl with the lemon juice, rapeseed oil, pinch of salt and pepper. Leave to macerate for 1 leek, finely sliced and washed 1 fennel bulb, chopped 3 tomatoes, peeled & chopped 2 thyme sprigs ½ teaspoon of saffron powder 4 tablespoons of white wine 2 tablespoons of pernod 4 x 70g pieces of skinned hake 4 x 70g pieces of skinned salmon 4 x 70g pieces of skinned monkfish 12 peeled & deveined local Prawns 20 mussels, beards off Salt & pepper 4 tablespoons of diced & sautéed vegetables such as carrot & courgette Fennel herb for garnish INSTRUCTIONS Add enough vegetable oil to cover the bottom of pot and turn up to high heat. Add the prawn heads and leave untouched for 1 minute. Crush down on the prawn heads with a strong whisk to allow the juices to flow out of the heads. Add the tomato paste, garlic & star anise and then add the water. Reduce by half and strain with a

Prepare the smoked salmon by pulling slices into 2-3cm thick pieces, curl up each ribbon – 5 pieces per serving Assemble the salad by draining the fennel and placing a little mound in the centre of each plate. Arrange the salmon around and over the fennel. Pull the goats cheese apart by hand into bite-size pieces, about 5 pieces on each plate. Dress the salad generously with pepper and finely chopped fennel fronds

sieve. In another pot, sweat the onions, garlic, fennel & thyme until soft. Add the saffron and mix well (powder is ok). Add the tomatoes, mix well and then add the white wine & pernod & reduce by a third. Add the strained shellfish stock and reduce by half, seasoning if necessary. THE FINAL PART OF THE DISH Heat a large pan and add the hake, monkfish & salmon pieces, seal well & turn over. Add the mussels & prawns and cook for a minute. Then add the broth to the pan and bring to the boil (this will happen very quickly). Turn the heat down to a light simmer and while the fish is poaching add the prepared vegetables and fish, depending on thickness should be cooked between 2-4 minutes after adding the broth. Transfer equal amounts of each fish & vegetables into bowls followed up by a ladle of broth. For extra presentation, add 1 cooked whole prawn and garnish.

White Chocolate and Raspberry Cheesecake

By Siobhan OʼReilly, Chapel Steps Restaurant West Cork is spoilt for choice when it comes to dairy producers and in the Chapel Steps we showcase this in this simple yet delicious dessert. YOU WILL NEED For the base: Flour 300g, Butter 200g, Sugar 100g, Dried Ginger 1tsp, Mixed Spice 1tsp For the cheese filling: White chocolate 350g, Cream Cheese 700g, Cream 660g, Sugar 60g For the raspberry jelly Fresh raspberries 375g, Sugar 60g, Lemon Juice 1tblsp, Leaf Gelatine x3

INSTRUCTIONS (SERVES 4) For the base 1. Combine all the ingredients until they come together into a loose dough. Roll out and bake the shortbread for 25 mins at 150C. Allow to cool, blitz into a fine crumb and press into a loose bottom cheesecake tin. For the filling 1. Melt the chocolate in a container over a pot of hot water 2. Mix the cheese, fresh cream and sugar until well combined 3. Pour over the melted chocolate and continue to mix until thoroughly incorporated. 4. Pour the filling over the base and let to set in the fridge for at least 2 hours For the jelly 1. Crush the raspberries roughly with the back of a fork. 2. Place in a pot with the lemon

juice and sugar and bring to a gentle simmer. 3. Meanwhile soak the leaf gelatine in cold water until the leaves are completely floppy. 4. Drain the gelatine leaf through a sieve and dissolve in the raspberry mix. Allow to cool 5. Pour the jelly over the set cheesecake, giving a nice thin layer. Return to fridge for 1 hour to set the jelly. Enjoy!

If you had to live somewhere other than Bandon, what would you miss most about it? ‘I would miss the people living in and around the town – all my friends and neighbours.

“Bandon is a very

affordable town to eat, shop and play.

I’d also miss the fact that Bandon town is really convenient for shopping and living, with great sports clubs run by people who really take pride in being from the town. Also the fact that I live, at most, only 15 minutes from the coast.’ Where’s your favourite location in Bandon? Why? ‘My favourite location in Bandon is the town park on Saturday morning at 10.30am, just as the referee is about to blow his whistle to start the game. For the next hour and a half enjoying a game of football, going through all the emotions…there’s nothing like it.’

Why is Bandon a good place to live/ bring up a family? ‘There is a great choice of schools for anyone with a family who lives or is thinking of moving to the town. Generally I would consider it a safe environment to rear a family – as a friend of mine once said, it’s a town of tolerance’ If you could change one thing about the town, what would it be and why? ‘It would be great if we could have a full-size swimming pool . The more sports facilities a town has the better its future – in this regard I believe there are social benefits for a new generation growing up in town apart from the obvious exercise and health benefits.’ What do you think Bandon can offer visitors that no other West Cork town can? Proximity to Cork Airport while still being in beautiful West Cork. Plus it’s a very affordable town to eat, shop and play!

Where’s your favourite location in Bandon? Why? The Graham Norton River Walk because of the beauty of the river and the tranquility of the place. Why is Bandon a good place to live and bring up a family? Because there is a top class choice of national and secondary schools and there are a wide variety of sporting clubs which cater for young people.


11 If you could change one thing about the town, what would it be and why? I would pedestrianise and roof South Main St and make it a unique, modern town centre for shopping. Also I think the River Bandon is being underused and we should have cycleways and more river walks.

HISTORY AND HERITAGE Things you might not know about Bandonʼs rich and medieval past Before Bandon town was established the area was an important point for meeting and commerce as the river could be forded for a considerable amount of time each year.

slate, quarried at Ballylangley, Twomey’s Glen and the nearby Park. Most of the walls were nine feet thick and varied in height from thirty to fifty feet. These were mounted with cannon guns and had six round watch towers built along them at regular intervals.

The two main clans were the O’Mahony’s and the McCarthys, the former to the North and the latter to the South and two small settlements existed, Ballymodan to the South and Coolfada to the North.The O’Mahony’s built the first bridge across the river in the 14th century. On September 13th 1588 Elizabeth 1st granted 14,000 acres on the south side of the river to Phane Beecher at a yearly rent of £66 The land was to be peopled by English settlers from Somerset, Protestants loyal to the Crown. Farm and dress were to be in the English fashion and they were instructed to erect a place for their worship. In 1604, Phane Becher’s son Henry leased the land to William Newce and John Archdeacon for 31 years – the latter leasing it on further to John Shipman. Newce controlled the north side of the river mostly and Shipman the south. The building of Kilbrogan Church/Christ Church commenced c1610. Richard Boyle was appointed Privy Councillor for Munster in 1606 and in 1613 Privy Councillor for Ireland. He bought Bandon town from Beecher/Shipman

The river openings were protected by iron flood gates and fences, manufactured from timber beams and poles, with sentry guards on duty at all times.

and Newce and undertook the building of the walls of Bandon in 1613 which were completed by 1625. He built 250 houses the majority of which are amongst our best architecture and still standing. Richard Boyle’s family was given the Dukedom of Devonshire and he is buried in Youghal. He was the father of Robert Boyle the famous chemist/physicist, inventor of Boyle’s Law. Christ Church was the first Protestant place of worship in Ireland following the Reformation Bandon was a military outpost and was under constant attack from the conquered natives. In 1620 Richard Boyle had a wall constructed around its perimeter. The wall took approximately 5 years to build and enclosed an area of twenty seven acres. The Walls were composed of thick black



The Gates were built within an archway capable of allowing the tallest cart-load to pass through. The Bridge was built of stone and consisted of six arches. Three Castles were erected within the wall each of them containing twenty six rooms. In 1625 Richard Boyle, the first Earl of Cork boasted, “My town of Bandon-Bridge is more encompass than Londonderry - my walls are stronger and thicker and higher”. For many years people were rejected entry into the town with a slogan at each gate reading, “Turk, Jew or Atheist may enter here, but not a Papist”. Following the siege of Bandon in 1689 the conditions of a truce negotiated that the Protestant Soldiers were forced by the Bandon Militia to take down the Wall of Bandon.

A RIVER RUNS THROUGH IT The River Bandon is a most scenic and prolific game fishing river flowing through some of the most picturesque countryside in West Cork. As it passes through the town it flows over an old weir which is a beautiful feature in itself and is floodlit at night. A modern fish pass is installed on this weir which allows migrating salmon and sea trout to pass on up river. Historic churches Bandon is famous for its historic and architecturally spectacular churches – St Peter’s (Church of Ireland), St Patrick’s (RC) and the iconic Methodist Church. The beauty of these buildings really becomes evident at night thanks to some very effective outdoor lighting.

Canoe or kayak The Bandon River is popular with canoe and kayak enthusiasts. You can launch your ‘craft’ by the Allin Institute near the main bridge in town. For more information and indeed any equipment you might need, visit Wild Side Sports or Bantry Bay Canoes.

Skate park The kids will love this one. Bandon has its very own skateboard park (on the Glasslyn Road) complete with ramps, and rails. Younger children and BMXers also like to take their bikes to the park for a safe spin – free from traffic but full of fun!

Historic tours Every Saturday at 12 noon for the months of July and August you can take one of the historic town walks. Assembly is at the Tourist Information Office in Bandon Craft Centre on Bridge Street. The nominal cost is €3 per person with special rates available.

LEt’s get physical For those of you who like to get physically active, Bandon has a wide range of options including safe running facilities in the town park (situated on the Macroom Road) and an outdoor gymnasium on the Glasslyn Road that’s free for all to use.

Heritage centre The West Cork Heritage Centre is housed in Christ Church on North Main Street. Some of the historic town walls are incorporated in the layout of the church, which was built in 1610 on the site of a Danish fort. The church is now the setting of a unique exhibition in which visitors are transported through time to experience Bandon as it was.

LEAGUE OF THEIR OWN Footballers, hurlers, athletes, soccer stars, rugby heroes and more are all helping to put Bandon sport on the map

BANDON can currently lay claim to being the hot spot of West Cork sport following a stunning few months for the town’s talented sportspeople. This year alone, Bandon AFC won promotion to the Munster Senior League (MSL) Premier Division as champions of Division 1– the first time the soccer club has won an MSL crown. Also, on the soccer field, Bandon ace Conor Hourihane continues to dominate headlines across channel as a midfielder with Barnsley FC in the League One Championship. The Old



Chapel native won the Club Player of the Year award for his heroics last season with the Yorkshire club, and he was also named the Celtic Ross West Cork Sports Star of the Month for May. Also, Bandon Rugby Club also picked up a monthly West Cork Sports Star this year following a terrific treble winning season for their juniors. GAA has also played a huge role in Bandon sport, and it’s no different now, as the club fights for championship honours on various fronts, both in West Cork and on the county stage.



Bandon AC athletes continue to make the headlines, none more so than sprinter Phil Healy who will represent Ireland at the European Athletics Championships that will be held in Zurich in mid August. SO, WHATʼS ON? Bandonʼs a busy spot with a number of annual events that anchor the social calendar. Hereʼs a quick overview. SHOW TIME Bandon Agricultural Show is one of the biggest and most popular of its kind on the calendar in West Cork. It takes place in May of each year and features categories for horses, ponies, dogs, poultry and more, plus a wide range of side shows and stalls. MUSICAL MAGIC The now nationally-acclaimed Bandon Music Festival is held on the June holiday weekend. Many greats of the Irish music scene have played this festival in recent years including Paddy Casey, Jerry Fish, and Sharon Shannon. CELEBRATING SUMMER Bandon Summerfest is held in July (13th to 19th this year). This is a family-focused festival with something for everyone. The Miss Bandon Pageant and the declaration of the winner of the Distinguished Citizen Award are an integral parts of the festivities. CHARITY WALK The annual Make Your Mark on Cancer charity walk takes place in July also (Sunday 19th this year) from the Viaduct just outside Cork to Bandon. WALLED TOWN FESTIVAL The Bandon Walled Town and Medieval Festival will be held from August 28th to 30th. 2015 sees the fifth instal-

ment in a festival which is going from strength to strength. With everything from medeival fancy dress to battle re-enactments and harp workshops, this is a not-to-be-missed event. ENGAGING ARTS The Engage Arts Festival takes place in Bandon from September 24th to 27th and once again promises a wonderful and eclectic programme of contemporary arts throughout the town. Music, dance, visual art and theatre all feature strongly. VINTAGE FUN The annual Bandon Vintage Charity Run takes place in October of each year. This is a great family day out, and benefits various local charities.
