I came of age in the days when sunbathing was the norm. We would go to the roof of our three-story sorority house, getting as close to the sun as we could, and lay on silver reflective blankets. If we didn’t have baby oil, Crisco would do. Could we have been more stupid? At age 26, my skin rebelled and I sought my first dermatologist. ►
I learned two invaluable things from him. First, he prescribed something so simple - Vaseline and water. For over 30 years that has been my moisturizer day and night. I can almost hear the collective gasp from medical and beauty professionals but: 1) apply the Vaseline while your face is wet and 2) if you can see it, you’ve used too much. Exfoliating, extracting facials every six weeks also work wonders. The second thing the doctor told me all those years ago is, “The better a product smells, the crappier it is.” And was he ever right. Fast forward 30 years to the billion-dollar organic/ natural products industry. How can you gauge their efficacy? Labeling laws regulated by the Food and Drug Administration (FDA) mandate that a product’s main ingredient is listed first, and the rest of the ingredients grouped in descending order. Start by looking at the cosmetic products in your home. What is the first ingredient listed? Whatever it is, there’s more of that in the product than anything else. Likewise, the last ingredient listed means there’s the least amount of that in the product. Oftentimes you’ll find water (agua) or something you can’t pronounce as the primary ingredient. Therefore, you could be paying for glorified water or a bottle of chemicals. Conversely, what you think you’re paying for is often the last ingredient listed.

At 58, not having had a knife or a needle on my face is amazing considering the abuse leveled on it in my youth. We took our most recent trip late last spring, which is a wonderful time to go, as summers are very hot and there are lots of tourists. We began our trip in Madrid, one of our very favorite cities, and stayed at an historic hotel in the city center. The heartbeat of Madrid is the Plaza Mayor and our go-to place for tapas and Spanish wine. The Bull Bar there is a must stop for a cerveza or glass of wine. It is in the middle of a tourist zone, but still has a very local feel to it, with bullfighting memorabilia and walls lined with photos of famous bullfighters and pictures, including many photos of them being bored – not for the queasy! The Mercado de San Miguel is just behind the Plaza Mayor and another must stop for foodies. With dozens of food and beverage stalls selling tapas, olives, cheeses, breads and seafood, plus wines and champagne, it is a lively and festive mix of locals and travelers from all over Europe and the world. 24 : spac ec oa st l iv in g

The History and Culture
The historic buildings are countless and there are many awesome museums, but none on the scale of the world famous Prado, where you could spend days walking corridors and eyeing the art of many of the greatest, including Diego Velazquez, Goya and Ribera. 2
On this trip, we stumbled upon the Spanish Naval Museum. A smaller and less pretentious museum, it showcases the history of Spain’s navy from almost 700 years ago when the Spanish (along with the Dutch, French and British) colonized the world and, ultimately, discovered our part of the planet. We rented a car and drove through hundreds of miles of olive groves to reach Grenada, best known for the amazing Alhambra Palace. Built by the Moors in 1238 and unbelievably majestic, Alhambra represents the richness of the times and is filled with mosaic tiles and beautiful patterns similar to those still popular today. Largely well-preserved, the detail of the architecture and art are intact, as are the gardens, which still use a form
of irrigation developed during the time of its construction. From Grenada, we drove south to the town of Ronda in the Malaga Province. A historic city broken in two by a very deep gorge, one side of Ronda is from the days of the Moors, while the other dates to the 15th century. Ronda is famous for being the home of Spanish bullfighting and where Ernest Hemingway spent years enjoying the sport, ultimately using it as the subject of two books; “Death in the Afternoon” and “The Dangerous Summer.”
And the Food…
After a visit to the ring and to the Bullfighting Museum, we found a centuries old home/restaurant that overlooks a gorge before actually hiking down into and around it – just an awesome experience! Ronda
is a bit out of the way, but just amazing and so easy to understand why personalities like Hemingway, Ava Gardner and Orson Welles (he is buried there) chose it as a European retreat. One important thing to remember while in Spain is that Spaniards still embrace the afternoon siesta. So don’t go much of anywhere in the country looking for shopping between about 2 to 5 p.m. any day of the week. Dinner, as in much of Europe, is an evening event with most restaurants not opening before 8 o’clock at night. From the Basque country in the north to Barcelona, Madrid, Seville and all the towns in between, Spain has the culture and history of few other places in the world. By Jenny Norman Who’s ready for spring? Wow, this winter sure proved to be a very chilly one for the Space Coast! Although the cooler temps were a much appreciated break from the sweltering heat and we did have those great sweater weather and boot days, many of us are ready to flaunt our spring duds and pretty pedis! Straight off the runways, some of the must-haves for this spring include pretty pastels, dark denim, florals and stripes to liven up our wardrobes. 26 : s pac ec oa st l iv in g

Pastel Sorbet Gracing the catwalk for Spring 2018 were all the shades of pretty pastels that you would expect to find in an Italian gelateria. The most popular flavor though, would have to be lavender. From the array of pastels, high-end designers like Max Mara, Tom Ford and Tibi favored lavender in their spring collections. This season’s hottest shade was spotted on everything from the expected spring dresses and blouses to the unanticipated leather pants and suits. Lavender is such a gorgeous color that you’ll want to request it at your next nail appointment too… it’s the must-have hue, the one shade you’ll want to definitely be seen wearing this spring. Jeans have become an essential wardrobe staple because they go so easily with everything. Denim is taking a turn for a more refined and polished look this spring with dark indigo washes. The added bonus here is how flattering dark jeans are. They create an instant slimming effect; who doesn’t love that! Denim-ondenim trends from the past are on replay this spring, too. This time around, instead of mixing different tones of denim, try wearing the same dark tone on tone. Sprucing up the “Canadian tux” by wearing a denim blazer and denim wide leg pant with a lavender blouse would be a fresh way to mix and contrast the boldness of the dark jean with the femininity of the pastel shade. Tailored denim dresses and skirts are such a girly and stylish way to incorporate the look this spring.
Florals and Stripes Flowers are always “in bloom” for spring fashion. From bold to delicate prints, to short and maxi lengths, there are so many floral dresses to choose from. Designers like Tadashi Shoji, have created a gorgeous “bouquet” of gowns in flowing romantic fabrics to inspire us. Stripes of all kinds were a nice surprise for spring during New York’s fashion week. This season, you’ll be glad to see that vertical stripes are more popular though, offering an elongating, flattering look versus the horizontal kind. The pattern was seen on dresses, shirts and jackets, some even looking like candy stripes! ◆

Soup's3 On2 By Deb Kempf The temperatures won’t exceed the 40s today, and for a Florida native, that is seriously cold weather. My very first reaction when I had heard we were getting a cold front was, “I am making soup.” I love soup; it is comfort food for me. Does anyone else get comfort from a bowl of hot soup? For me, it starts with the cooking of the soup and the aroma that fills the house. The anticipation of comfort has started. It is like a big warm hug from my mom. Psychological studies have shown evidence that the comfort food you crave is an artifact from your past. We relate our comfort food to happier times. Eating a specific meal that a loved one enjoyed can trigger happy thoughts and memories. It can remind us of a happy event or place. I know it is true for me, as I always relate a cup of hot soup to my mom and family snuggling on a cold day.

Not surprisingly, it appears soups have always been enjoyed and utilized, not only for warmth and nutrition, but survival, and their existence can date back as early as 20,000 BC. The ability to boil water was the key to innovation and was not feasible until waterproof vessels were made, most likely clay pots. Hides, tree bark and tightly woven baskets were used to hold liquids. Rocks were used as a heat source to boil the liquids. They always found a way to make soup. The word soup as we know it came from the French “soupe,” which comes through Latin’s “suppa,” which meant (bread soaked in broth), and from a Germanic source of the word “sop,” (using a piece of bread to soak up broth or stew). It seemed every culture had its own version of a soup, stew or bisque, and flavors familiar with their origins. In 1742, one of the first American colonial cookbooks came out with several recipes for soups and bisques, and American culture has been enjoying a variety of these ever since - including cold soups. I like a good vegetable soup. My recipe below is a good, basic soup and you can make a variety of soups or bisques using this recipe as a base, including my sister Annie’s favorite, chicken and dumplings. Simply add cooked chicken and follow the recipe on the Bisquick box for drop dumplings. Yummy. Hope you enjoy and stay comfy in chilly days ahead. ◆
Vegetable Soup 2 tbsp. butter (olive oil if you prefer) ¼ cup onion, diced ½ cup carrots, sliced ¼ inch Croutons/crusty loaf bread/dumplings 2 large cloves garlic, minced 2 tbs. ¼ cup celery, diced ½ cup mixed squash ¼ inch 2 cups low sodium vegetable broth 2 cups water, ½ cup white wine, ¼ cup for the soup 1 tbsp. celery salt 1 tbsp. poultry seasoning crushed black pepper to taste All seasoning should be to your taste, but this is a good start
Lightly brown garlic in butter, mix in onion, carrots and celery. Add spices. Cook down on medium heat until vegetables glisten (sweat). Add white wine and deglaze (scrape bottom of pan for the yummy crusty stuff ), mix well. Add remainder of vegetables and any cooked meat or pasta (optional). Mix in remainder of vegetables. Simmer, adding broth and water. Bring to boil, reduce and cover. Lightly simmer for 1 hour. Serve. Top with croutons or enjoy with a nice crusty bread.

As awards season winds down with the Academy Awards, so does my annual mad rush to watch as many of the year’s critically-acclaimed movies as humanly possible. It’s a process I’ve gone through every year since I was about 12 (and not actually allowed to watch most of the nominees); an attempt to make sure that I’m not completely out of the loop when they give out those little gold statues. Where this movie obsession came from, I’ll never know for sure, but I have a feeling it stems from lively film discussions at nearly every family gathering that instilled in me a need to be well versed in movie references. Regardless, my love for films, from the good to the so-bad-it’s-good, has only grown through the years. My favorites always manage to find ways to inspire me in every way imaginable, including my decorating obsessions. Some films are just so visually striking that I can’t help but want to borrow a bit from them, and some characters so fabulous that I’m desperate to mimic their style. Here I’ve included some of my favorite films to watch when I’m looking for some inspiration.
Breakfast at Tiffany’s
Everything about the 1961 film adaptation of Truman Capote’s novel is iconic: The apartment, the style, the music, and of course, Audrey Hepburn. Hepburn’s character, Holly Golightly, lives in an apartment that seems as effortlessly glamorous as Golightly herself. This sort of accidental, minimalist chic décor includes the unforgettable bathtub couch, a zebra rug, her suitcase set, stacked and ready to muffle the sound of any telephone that dared try to wake her… and not much else.

Because I Said So
There’s just something about Michael Lehmann’s 2007 romantic comedy that I keep coming back to, like comfort food. It might be the reliable rom-com plot or Diane Keaton’s circle skirts, but there’s something to be said for the décor, too. The protagonist, Milly, has an especially enviable kitchen: think the Nancy Meyers kitchens we all know and love, but with a more bohemian and eclectic touch. Warmer tones, open shelving, and (more realistically) a little more organized chaos. Oranges, reds and yellows make up the main color scheme, with mod mixed and matched accessories throughout.

The sweeping landscapes, ornate décor, Georgian era wardrobe, and musical score come together beautifully in Joe Wright’s 2005 adaptation of the Jane Austen novel. It may be a bit less kept up, but the rich blues on the walls and airy creams and whites used in other parts of the décor create a romantic and classic feel. The English countryside provides countless shots of beautiful greenery, incorporated with vases of flowers and potted plants sprinkled throughout the rooms of the home.

Earlier this year, I decided to choose a deep, cobalt-blue color that not only made my front porch stand out, but it opened the door for other great additions to my patio’s color scheme.

This leads right into the last, but certainly not least, tip: Outdoor furniture. But wait, you just bought a new patio set not too long ago? No problem. Consider switching up the seat cushions, bringing in fun elements of style with prints and colors. Blues, yellows, pinks and the like are great options to choose.

Author Taryn Souders Meets the Students at Viera Charter School What do writing, math and literary talent all have in common? They each spell out the name Taryn Souders, and students at Viera Charter School were able to hear firsthand from this author during book club one February day. This author’s unique journey makes her stand out, along with her sincere attitude and passion toward teaching kids to love reading and math. Souders didn’t plan on being a writer. Instead, she spent her time teaching math to middle-school students. What started off as an interest in writing, specific topic knowledge, and passion to help others learn, quickly progressed into something more. “I was actually trying to write a poem about Moses, oddly enough, and the phrase ‘Holy Cow’ just popped in my head,” Souders said. Souders didn’t just walk with the idea, she ran with it and began watching the pieces fall into place with her writing career for years to come. From that point on, Souders started writing books which include "Whole-y Cow! Fractions are Fun," "How to (Almost) Ruin Your Summer," and "Dead Possums Are Fair Game." She loves being able to have a hobby that’s successful and capable of flexibility to travel and most importantly, spend time with her family. In fact, she has her very own fan base right at home...her kids. “I don’t write anything that my kids wouldn’t read,” Souders says. We know that a large majority of our readers drive, and many drive their children or grandchildren regularly. So when Lexus of Melbourne tells us they have a new three-row crossover, we’re thinking some of you might want to know.

Any Stoplight in Brevard Have a look around. If the Space Coast had an official luxury vehicle, you could make a good argument for Lexus. We love our Acuras, Audis, Cadillacs, Infinitis, Mercedes, Porsches, Range Rovers and Volvos, too (those are listed alphabetically by the way, no inference of preference). The RX350 luxury crossover seems to be the model of choice for a very large number of us. It actually is Lexus’ most popular vehicle, accounting for 34.5 percent of their sales worldwide. What’s not to like? It is big (but not too big), roomy, sporty and reliable. With the Lexus RX, Lexus actually defined the crossover category, and it is still the biggest seller by at least a 2-to-1 margin. So what is missing? Why this article?
Add Two-and-a-Half More People That’s the news. Lexus has stretched the RX 4.3 inches to become the RXL, and added a third row. In parent-speak, that means all five or six kids can sit in the back two rows and still have room for their lacrosse accouterments behind the last row (the last row is vinyl, not leather, so put the muddy ones back there). It means shopping trips last longer with more room for friends and finds. It also enters the showroom as one of the most affordable three-row luxury sport utility/crossover vehicles. Yes, we said, “affordable” and “Lexus” in the same sentence. We talked to T.R. Page, Lexus of Melbourne’s owner/general manager, and he tells us he’ll have these in their showroom as you read this. But, be forewarned, if these sell like the shorter RX, you’d better hurry, they
won’t last long. We suggest the AWD (all-wheel drive) for confidence in our heavy rains. The Specs Like the regular-size RX350, you’re going to get a combined 22 MPG with its V6 engine, and a cruising range of almost 500 miles between fill-ups on a trip (365 around town). It will be available as front-wheel drive or all-wheel drive, and as a hybrid. Lexus says it will tow 3,500 pounds of personal watercraft or that small utility trailer full of football and cheer gear for the team. The RXL also features a touch-free power rear door and a panoramic view monitor for a bird’s eye view of your surroundings. Lexus continues to offer one of the safer vehicles on the road today.

What Do You Drive Generally speaking, if you open the door and sit down into your vehicle and it has a trunk or hatchback, you drive a car. If you open the door and climb up into your vehicle and it has a door on the back, or large open areas, that’s a truck or SUV (sport utility vehicle). Kaitlin Donner grew up in an athletic family. Her parents ran the Disney Marathon. At the University of Florida, she ran track and field as well as crosscountry. “My family has always been active; we loved being outside. What better place than the Space Coast to enjoy being by and in the water, running and cycling on some of the best roads of the country?” Donner has also been to two Olympic qualifiers, and is one of the top 10 female triathletes in the country. Ed Donner, Kaitlin’s husband says, “She doesn’t like to talk about herself much, but that’s a big highlight.” Ed Donner found triathlons late in life. In his 20s, he found the sport through running. “I used to run the causeway every day, and just found it as a great release, but once I found endurance sports, it really Ed Donner, CEO Donner Wealth Management & Kaitlin Donner, PT, DPT, owner of New Wave opened up my eyes to challenging myself. I found I was Physical Therapy good at it, and then pursued the Ironman triathlon. It took me about 20 Ironman races, but I finally made it to the Ironman in Hawaii last year; that's the world championship, the one everybody knows about.” “We got into this sport in very different ways, but we talk about it all the time,” Kaitlin Donner adds. “We notice if we don't exercise for a day, we don't feel as good, we don't feel as mentally sharp. When we go running in the morning, we're able to focus much better throughout the day and be much more productive.” “When someone is new to triathlons, they can be good at swimming and maybe not so good at running, but they have strengths and weaknesses. But if you are only a runner and you're just not a good runner, it's kind of challenging. When you get to triathlon there are age groups and skill groups where you can be amongst people like you. It starts with coming to the race and watching, seeing all the different types of people that are racing, big and small, tall and short. And then start a training plan and sign up for the next race,” Ed Donner explains. Interestingly, Ed Donner is a financial planner, and Kaitlin just completed her doctorate in physical therapy. They are working on how to combine their careers in private practice to manage elite athletes both physically and financially. ◆ MARC H 2 018 : 39

RON DuBois

“I moved here and went to Florida Tech to surf,” Ron DuBois explains. “I was a surfer as a kid and lived on the west coast of Florida. When I was in high school, we would make road trips over here to surf. We thought we were big surfers,” he recalls. After a shoulder injury years ago left him unable to paddle out beyond the breakers to surf, he won a paddleboard in a raffle. “I swear, I think I bought one ticket. It sat in my garage for maybe six months,” DuBois said. “Then one of my buddies sent me a YouTube video of Laird Hamilton on a big 50-foot wave. I thought out loud, ‘what's he got in his hand?’” DuBois realized Hamilton was on a stand-up paddleboard, or SUP, using a paddle to surf the large wave. He realized he could likely paddle standing up all day long. DuBois says, “I caught one wave and realized, I got this. As big and clunky as the board was, my shoulder injury did not matter anymore.” DuBois then went down to Longboard House in Indialantic, and they set him up with his first proper board. DuBois and his family have done everything on the water. They are scuba divers, they fish, surf, and they paddleboard together. “We've taken our SUPs all over Florida and to other countries.” DuBois surfs more now than ever. “It is the best workout I have ever done, and I have done plenty of workouts.” And what about paddleboarding here at home? DuBois tells us, “There are not many places where, on any given day, you can put a paddle out and have dolphins and manatees swimming around you. The birds are amazing, and there is no cell phone, no clanking stuff and no one raising their voice at you. It is just beautiful; standing up gives you a whole new view on the water.” Lastly, DuBois adds, “There is something great about being on water. Once you are out there it is like nothing else. It is like no surfing I have ever done. Surfing on a paddleboard is easy to learn.” ◆ 40 : s pac ec oa st l iv ing

The national anthem is performed to perfection, then the singer hands off the mic and steps into the corral near the front of the pack, ready to race. The runners are joined by former astronauts, surfing legends, world-renowned artists, environmental advocates, cancer survivors, educators, rocket scientists, executive directors, kids of all ages and first time racers, this is running on the Space Coast. "It is Saturday morning and I find myself standing in a race corral nearly half naked with a thousand of my closest friends. I feel the body heat of the runners next to me, smell their perspiration and Axe Body Spray. I look down at my feet and notice the goosebumps on my legs, not because I’m cold, but because I’m nervous. In the crowd of athletes are familiar faces, most I see only at races, but they feel like family to me.

Every race is different and every runner has a story. Running has been my constant and I can do it anywhere. It has been my way of connecting with my surroundings, the environment, people and community on a local and global scale. I don’t wear a watch and you’ll find me barefoot on the beach. The seagulls are familiar with my stride now and no longer fly away. As the 10-second countdown begins in the corral, I’m overwhelmed by emotion and nerves and start to tear up. I love running. I’m inspired by my dad who taught himself to walk again and by my mom who pushed him to do so. Five seconds. I'm grateful to be in a relationship with a man who has his own passion for running. I love the worldly racing experiences we have shared together and I am looking forward to many more adventures with him. Three seconds. Deep breath. Focus and enjoy this moment. Set. Brevard County has great in shore areas you can fish that aren’t shallow. If you fish the Keys you can hit rock bottom in a lot of places. But here, the worst thing you can do is hit some sand. The fishing is not as epic as it is down there, but it is a little more family friendly. You can go around any of the islands here, catch snook, trout and catfish, and have a great time with your family. We have a lot of great boat ramps in Brevard County. The Sebastian Inlet ramp is nice, and we also have Port Canaveral. That boat ramp is incredible now that they moved it to the mouth of the inlet. My first boat was an 18-footer, but I’d suggest renting a boat first. The marina in Eau Gallie rents boats, so does Captain Hiram's. They have deck boats, and they have boats with center consoles. I tell everyone, if you didn't get the addiction like me, you can rent a boat and take your family out for 300 to 400 bucks for a whole day. You can even rent pontoon boats, take 10 people out and see the manatees, see the dolphins. The main thing I like about fishing? Once I get a certain distance away from land, my phone doesn’t work. It's just total freedom out there and you never know what's going to happen, what you're going to catch, and what your day is going to bring. That can be relaxing and exciting. Remember, if you're going to own a boat and fish, it's a day of preparation, a day of fishing, and a day of cleaning the boat. It's three days of your life, so you must love it. Me? I do love it. OUTDOOR CHEF If you are not inclined to paddle the length of Merritt Island or run a marathon, we have news for you. Maybe the single best way to enjoy the outdoors in Brevard is from your own lanai. Even the best athletes appreciate a rubbed pork loin and a nice pinot noir. No article on enjoying the outdoors would be complete without that which we all enjoy, a quiet night at home on a warm Florida evening. Joni Norton was anxious to share her (and husband Doug’s) summer kitchen in Wyndham. “The way I live in my home, I am kitchen-centric. My heart is in my kitchen. Our summer kitchen allows me to take advantage of four seasons and to enjoy cooking, grilling and entertaining outside, whether it is just ourselves or our neighborhood full of friends. I probably cook outdoors three times a week, weather permitting. Sometimes I just come out and grill the meat or fish and then come inside and finish the rest,” Norton says.

Norton has always loved to make meals. She grew up in a family where both parents cooked. “They were both born and raised in Chicago. I have this beautiful mix of food culture in my life. I have my Polish father, my German-Irish mother, and then I was raised in Pennsylvania around Pennsylvania Dutch and Amish cooking. I have this mental cookbook of all these amazing recipes; I love being able to cook a meal for our friends and neighbors and introduce them to recipes that I grew up with.” “Before coming here we lived in California, but this is my first true outdoor summer kitchen. It is so wonderful to have a bar, a small seating area at the end there, so I don't feel like I'm off to the side. Whether friends are in the hot tub, lounging in the chairs, at the dining table or watching TV, I'm still part of everything. We open the doors and have such a beautiful addition to our indoor living.” For those of us not born here, we all bring our own history with us to Florida. What better way to share where we’ve come from and where we’ve been than cooking for friends at home on a beautiful Brevard evening? ◆ MA RC H 2 018 : 43
BIRDING enthusiast | Tim Ebaugh As a Brevard County native of 56 years, Tim Ebaugh grew up watching and admiring the wildlife and birds of the great state of Florida. In the early 90s, his father, a professional photographer for Harris Corporation, retired and gave him most of his high-end photo gear. Ebaugh says, “With his guidance, I became adept at wildlife photography, and with the advent of the DSLR digital cameras and long range lenses I became addicted to ‘photo hunting.’” Florida is home to over 500 native and migrant bird species. Naturists, bird watchers, and photographers alike are afforded a wide variety of subjects. The Indian River Lagoon, Atlantic Ocean, and an abundance of lakes and ponds put these photo opportunities right at our fingertips. The Space Coast is routinely thought of as one of the best birding areas in the United States. Ebaugh adds, “For me personally, I love to be out in nature. Why not take my favorite camera? It’s an awesome feeling when you spot that one particular bird or animal, click the shutter, and create a great shot.” Living on the Eau Gallie River, Ebaugh gets many shots in his own backyard. “My personal favorite is the bald eagle. While somewhat rare, they can be found in and around Brevard County.
Many people tell me they have never seen an eagle around here. My response is ‘look up!’” “I always hope that hikers, watchers and photographers alike will respect our wildlife and bird populations. Don’t invade the animal’s space; be stealthy and quiet, get the best shot you can, then retreat carefully. Places like the Ritch Grissom Wetlands in Viera allow you to slowly drive around large retention pond cells, where you can photograph or just watch several species as they carry on with their activities. Take some time on your next outing, look around and enjoy what nature has brought to our doorstep here on the Space Coast. Make it a hobby and have some fun! 44 : spac ec oa st l iv in g
BIRDING enthusiast | Ursula Dubrick My love of birds and photography combine to give me one of the greatest pleasures in life; to be able to observe the great variety of birds and record their presence and beauty. I have always enjoyed the outdoors, and birding in Brevard county is an activity I can engage in year around. In 2008, I purchased a Nikon DSLR, and found myself at the Viera Wetlands. I was amazed at the variety of birds there. Since then I have found many more birding locations in Brevard County. I find that observing birds in their natural habitat is a very captivating activity. There is no such thing as having a bad day when you are observing great blue herons flying in with nesting material, or watching the courtship activity of these beautiful birds. To watch the graceful flight of the colorful roseate spoonbills, or the gentleness of a great horned owl taking care of her chicks makes you forget about what else is going on in the world. There is no stress, no worry.
Photographing birds has taught me patience. I have waited for long periods of time to see a bird, or to see it perform a certain activity. If it does not happen I come back another day, knowing that I’ve still had a good day outdoors. In addition to being outdoors, birding can also involve walking, carrying equipment, and enjoying the camaraderie of other birder/photographers. Often at the end of the day my friends and I enjoy a good meal and discuss the fun time we’ve had photographing at a particular location. There is no down side to being a birder in Brevard County. It is a mecca for birders, with countless locations to choose from. It is an activity that is enjoyable, healthy for you and gets you outdoors.

BIRDING enthusiast | Jim Boland Jim Boland lives on a storm water retention pond in Titusville. In 2004, a flock of black-bellied whistling ducks took up residence in the pond. That sparked the passion for him to get images of those birds in flight. Now a recognized bird photographer in Brevard, Boland says, “Brevard County provides a wide variety of birds throughout the year. I live in Titusville, so the locations I visit are mostly central and north Brevard.” From freshwater to saltwater habitats, beaches, marshes, and freshwater habitats, each offers a different bird species to photograph. Any tips for a newbie? Boland suggests that people hold off in spending a lot of money on equipment in the beginning. Cameras and lenses today can be quite expensive. “I suggest getting moderately-priced equipment and learn how to get the most out of it. Once you learn your camera settings and capabilities, you can make a more informed decision on the next purchase.” As far as field suggestions, “I have two for both birders and photographers. The first is to be respectful of nature. The second tip is for places like Black Point Drive and the municipal wetlands. Stay in your car. Most of the birds at those locations are tolerant of the automobile traffic. Once you open a door to try to get out the birds will start moving away from you.”
Boland continues, “In my opinion, early morning provides a soft, golden light that is the best. Ideally, the sun and the wind will be at your back. Position the sun at your back and your shadow pointed at the subject will best illuminate the bird. Also, a wind coming from behind you is ideal. Birds take off and land into the wind. Having both sun and wind behind you will provide great light and provide more opportunities for those amazing takeoff and landing images.” Besides Black Point Drive, his favorite spots are Merritt Island National Wildlife Refuge, Canaveral National Seashore, Blue Heron Water Reclamation Facility Wetlands in Titusville, and Jetty Park at Port Canaveral.

Photography for me began with a cheap point-and-shoot camera taking photos of my son playing flag football in the early 90s. It has since become more than a hobby and more like an obsession. Space Coast residents have so many places close by to watch and photograph wildlife, birds in particular. This time of year, we see so many species of birds both native and migratory in Brevard County. It’s a short drive to the North Merritt Island Wildlife Refuge, the Viera wetlands, Moccasin Island or the Dan Click ponds where raptors, wading birds and a host of others can be found throughout the day, and you don’t even have to get out of your vehicle. It’s a great place to take the family out for an afternoon, and the kids love it.
A bird feeder in your backyard can also entice a wide variety of visitors such as blue jays, cardinals, painted buntings and ruby throated hummingbirds too. I love to get out in the fresh air to see what birds are around in the area. It is so relaxing. Some days are better than others, and I may see an owl or bald eagle, but ospreys, herons, ibis or egrets can most always be spotted. I have met several birders, either through social media or in the field, and all have been very friendly and all share my love of wildlife and the outdoors. The right floor choice can really tie your room décor together, open up an otherwise small space or create a sense of coziness in large room. It can provide a feeling of luxury or comfort. But what’s the right choice? Nelson Green is a longtime businessman in Brevard County whose family has been providing flooring options and guidance to the community for decades. His store, Great Southeast Flooring America, is riding the wave of several different floor styles that have become hot in recent years. One of the most notable is luxury vinyl flooring, such as the Downs H20 luxury vinyl plank.

Luxury Vinyl a Hot Option
The popularity of wood floors in the New World goes way back. Settlers felled trees from old-growth forests and cut broad planks for flooring in their cabin floors. But there are disadvantages to real wood. Chiefly, it’s not waterproof; flooding and serious spills can wreak havoc with a natural wood floor. The new vinyl planking is different, with its water-resistant, super-tight joints that keep out moisture and mildew. It offers homeowners this beneficial quality while looking like the real thing. “Even
with all my years of experience selling floors, I often can’t tell the difference myself – even when I get up close,” Green said. The luxury vinyl planks are also popular because of their ease of installation. There’s usually no need to tear out the existing flooring. In most cases, the planks can go right over the top. “That’s a tremendous advantage,” Green said. “If you have a ceramic tile floor, for example, and you want a traditional laminate floor installed, the preparation is extensive and messy.
Breaking out the old tile is a lot of work – dust is everywhere and there’s major cleanup required. With the vinyl planks, that’s rarely necessary.”
Pet-Friendly Floors
Pets are another consideration that steers the homeowning population to vinyl flooring. “If you have kids or pets, luxury vinyl is a great choice,” Green said. “As durable and water-resistant as this flooring is, it repels the spills, the messes – it’s pet-proof and kid-proof. The cork backing also makes it soft for people to walk in their stocking feet.” MARC H 2 018 : 49
Speaking of pets, the Stainmaster PetProtect vinyl plank is also a popular option because of a technology that allows dogs and cats to walk around on the floor without slipping and sliding. A special “Claw Shield” protects the floor from scratches and has a finish that helps pets maintain their footing. Theresa Clifton, executive director of the Brevard Humane Society, said that this issue is more serious than people realize: The slick surfaces of many floors can actually put pets at risk of injury. “For animals slipping and sliding on floors, it can be hard on their joints and can cause permanent damage if they’re unable to keep their legs beneath them when moving about,” Clifton said.
Other high-demand choices
Luxury vinyl isn’t the only hot trend in flooring. Wood-look porcelain tile is also a favored option these days, Green said. “It has the appearance of wood, but the durability of porcelain,” he said. “People like the combination.” Those who prefer carpeting often gravitate toward Stainmaster, with its stain resistance, durability and wide spectrum of available patterns. Textured Saxony, commonly known as “plush,” is a strong seller, Green said. The Stainmaster PetProtect has become an especially popular carpeting choice. A special treatment repels pet accidents and makes it easier to vacuum up pet hair from the fibers. The right floor choice is important not only for the homeowner but also the potential homebuyer. “When homebuyers can envision their own furnishings on top of a beautiful floor, they can look past other things that don’t necessarily suit their personalities,” said Mona Stevenson, a Realtor with SunCoast Real Estate Group in Melbourne. “The floor can make a big difference.”
Changing trends of modern flooring
Flooring has seen a rapid evolution during the past 15 years or so. Tile, vinyl, wood and other types have surged ahead of carpeting as preferred surfaces. It’s also common now for a home to have one kind of flooring throughout, in every room (although bedrooms are still often carpeted). Before the advent of water-resistant floors, woodlook floors were conspicuously absent from kitchens and bathrooms – but that’s all changed now. “The surfaces we walk on certainly have changed over the years, for the better,” Green said. “They’re more attractive, tougher – just superior in so many ways.” 50 : spac ec oa st l iv ing

Since 2014, the Beyel family has owned Rockledge Country Club. As new owners, they are committed to continuing the rich traditions members have enjoyed for years and making major renovations to the course and clubhouse. The family has strong ties to Rockledge, living and doing business in the Cocoa-Rockledge area for decades. For the Beyels, the community has been a place that they find special and one of the many things they come together over.
For General Manager Andrea Beyel, the move to improve Rockledge Country Club is rooted in the Beyels’ strong family ties to the area and understanding of diversifying the options for their club members. “We have six children and three grandchildren, and we firmly believe there has to be respect for the past to have a well-rounded future,” she said. “Not everyone plays golf, and you can go to a sports bar for a cocktail, but the sense of family, camaraderie and belonging to something bigger happens in a country club.”
Progression Through Diversification
The Beyels decided to create various levels of membership that allow people to enjoy the course and services at different rates — gold, silver, bronze, silver junior executive and corporate — as well as one for individuals under 17 through a junior membership. Rockledge Country Club also serves as a host for private events. With a grand ballroom that can hold approximately 175-250 people, a conference room, a 40-person lounge and two outdoor wedding locations, it has hosted a myriad of events, including wedding receptions, baby showers, birthday parties, corporate trainings, high school proms, banquets and more for members and non-members alike. Heavily attended public events are the Easter Egg Hunt and Easter Brunch. Rockledge Country Club’s Haunted Hayride with a golf cart style-trunk or treat brought in 350-400 people from the community. Rockledge Country Club also hosts Thanksgiving brunch, brunch with Santa and New Year’s Eve parties, all popular among Rockledge residents.
Rockledge Country Club also opened a restaurant, Vue 18. With a panoramic view that allows for scenic sightlines throughout the area, the restaurant has been a success with patrons. With a happy hour, dinner and trivia on Tuesday, and live music and live action chef Friday night, it is a favorite place for lunch six days a week (closed on Monday). Vue 18 also has a monthly brunch that runs from October through June. While it hosts several community events, Rockledge Country Club is still heavily invested in making sure its members receive individual attention at all events.

Everyone needs a little guidance when trying something new, and this applies just as much to projects in your home as it does to any other aspect of your life. Even with all the resources available online, from checklists to expert advice, having a consultant you can trust to answer any and all of your questions empowers you with the exact knowledge you need.

It’s ok to invest a little more knowing that you have quality and longevity.” Taking into account those details can be overwhelming without the extra guidance of help from a pro.

In-home consultations: “By working with the client in the home, it allows us an opportunity to discuss the issues they face with the window area in question,” explained Gray, whose team typically does 15-25 of these in-home consultations a day. Whenever possible, these can give the designer a more exact idea of what will best fit your style and function needs.
4. Get creative: Even if you know exactly what product you
want, having the creative perspective of a designer can open up a world of opportunity for fun and unique projects. Christine Brown, drapery design specialist at Blinds of All Kinds, shared one of these jobs: “I had a client who was a glass art collector. The house was very neutral from wall color to furniture so the glass would stand out. They decided on their funky multicolor motorized roller shades that mimicked the swirl of their glass art and stood out just like their collection did. It was a very fun job.”
5. Make a connection: When you work directly with someone
to make your design vision come true, you are bound to build trust and understanding. Those relationships become invaluable down the road if you have any questions about the maintenance or longevity of a product, or when you are looking for advice for your next project. Meet CHRISTINE HICKS Christine Hicks was in the U.S. Navy for five years as an aviation structural mechanic in Mayport, Florida. Hicks learned many lessons while serving. 2017-18 Tom Bishop Award Brandon Jenkins Director of Bands Brandon T. Jenkins has been at Heritage High in Palm Bay during his five years with BPS. Since Jenkins assumed leadership of the band program, it has more than quadrupled in size with approximately 130 current members. Jenkins received the 201718 Tom Bishop Award from the Florida Bandmasters Association which is awarded for taking over a poor band program and turning it into a superior program in a short period of time. He has created multiple instrumental ensembles at the school and uses technology daily to aid in teaching and enhancing the classroom experience. Under his leadership, the band actively participates in community events such as parades, school board meetings and banquets. The band was invited to perform for the Florida Classic Battle of the Bands. Dr. John Harris, the principal of Heritage High, said, “I can count on Mr. Jenkins to arrive at school ready to impart his love for music to eager students. He has developed our Heritage High School band program into a superior-rated concert band for the past three years.” Jenkins loves that he has the opportunity to build relationships with students from different backgrounds on a daily basis. He believes that all students, regardless of socio-economic status and physical and intellectual ability, should be offered the opportunity to discover and explore their innate potential as a musician. Jenkins says it’s his responsibility to help create the next generation of quality musicians and music educators. He states that the goal of music education is to not only form an appreciation of music, but to also encourage students to shape their own unique musical identity through academic study and performance opportunities.
2018 Principal Achievement Award for Outstanding Leadership (Principal of the Year): Rick Fleming For more than 23 years, Principal Rick Fleming has served the school district in various teaching and administrative roles. To enhance team camaraderie, Fleming instituted a “Wildcat Winner” program at faculty meetings where teachers acknowledge each other’s hard work and dedication. He is often sought for his leadership expertise, and he serves on various committees that are focused on improving education. He is praised for leading by example and serving as a role model for his students, staff and community.

of the Year Employee of the Year Dinah Kramer, Human Resources
Senior Human Resources partner Dinah Kramer has worked for the district for 29 years and in human resources for 15 years. She manages instructional certification to ensure employees are highly qualified for teaching positions and monitors state teacher requirements and laws. She also advises school administrators on personnel matters and recruiting efforts. Kramer likes, that she’s allowed to be creative with ideas that help teachers succeed and, as a result, helps students succeed. She loves her job because she’s able “to serve every student with excellence as the standard.” Dr. Carol Kindt, the district’s deputy superintendent and chief human resources officer said, “I am more than convinced that our children and this community have benefitted from her commitment to serve them. She has ensured for decades that Brevard Public Schools employs only the best and brightest to serve our most precious community members, our children.” Kramer’s position requires tremendous attention to detail to ensure employees are highly qualified and properly vetted for their teaching positions. She has a profound understanding of employment law, policies, procedures and regulations. Kramer was named the employee of the year for 2008 and 2013 for her department and was the first recipient of the “You Rock” award for Human Resources 2017. She also received recognition for staffing Viera High during its opening. In her tasks, Kramer identifies out-of-field teachers and helps them in obtaining a professional certificate. She also guides college senior interns through the certification process.
Assistant Principal of the Year: Candace Jones, Hans Christian Andersen Elementary This year was a pivotal one for Assistant Principal Candace Jones. She collaborated with Principal Denise Johnson on the Care*Connect*Coach theme, and was invited to be part of the District Level Five Leadership team. Jones is inspired and motivated by her husband Ron, and son Riley. After losing her younger brother in a plane crash four years ago, making each day count became a reality for Jones. “I know each day is my opportunity to build my evidence for the legacy I want to leave behind, which serves as motivation.”

he day starts with an Irish breakfast, and as Scotty Marathas, co-owner of Meg’s, tells us, “From that point, we have Irish dancers, bagpipes, all your traditional Irish food, inside and out. Plenty of green beer and Guinness.” There is Irish entertainment throughout the day and then, in the evening, the streets are closed for their big street party featuring Collie Buddz and Gorilla Squad. If you’ve never been, it is a great time for everyone. Dressed in green and fun costumes, people of all ages come for breakfast then stay to enjoy the dancers and live music. You’ll see more than one leprechaun to be sure, likely carrying a pint of Guinness. Marathas adds, “You know, we hold the event and get it going, but much of downtown rallies around it. Most everyone appreciates and embraces it. It has become much bigger than just Meg O'Malley’s. It is truly a downtown event.” But this article is meant to be about the food, so we asked Chef Matt Elmer about the traditional staples of the day. “You mean besides the thousands of pounds of cabbage and potatoes?” he said with a laugh. “We're very proud of the corned beef. It's taken us quite some time to fine-tune what we do, but we take the corned beef in a raw state, cook it over six hours, and then chill it. We then slice it and reserve the very lean pieces for the dinner plates. We take the less lean pieces for our corned beef sandwiches.” Marathas adds, “It is our Kilkenny. If you haven't had one of those, I think it’s one of the best sandwiches you'll ever eat.” Looking at the reviews on social media, it seems the public would agree.

“We also do shepherd's pie, bangers and mash and our Paddy's pot pie, which is our chicken pot pie. There's something for everyone if you like the Irish favorites, but there’s much more here,” Elmer said. Marathas adds, “I had a gentleman in from Dublin the other day; he gave me the greatest compliment. He said, ‘It feels like I am at home here. This is spot on.' He now works as a writer and broadcaster with NBC Sports and Golf Channel. David was born in Bangor, County Down, Northern Ireland. Summer and fall months provide an unparalleled bayside experience in the evening. When the sun goes down, the bioluminescence comes out! Paddle around in water that literally glows in the dark, from A1A’s exclusive waterfront park access at Banana River Park in Cape Canaveral. SpaceCoast LIVING talked to Dave Lane at A1A Outdoors, a family-operated business that began, like many businesses, out of a garage. After providing beach gear to a few resorts and responding to increasing demand over time, they moved to a storefront on A1A at the Cape Canaveral and Cocoa Beach border. In addition to providing bioluminescence kayak tours in the area, they also offer scenic tours of Merritt Island National Wildlife Refuge, Ulumay Wildlife Refuge, and Thousand Islands in Cocoa Beach. But today, we wanted to talk about those famous dinoflagellates that glow in the dark! SCL: How long have these tours been going on? Dave: We’ve been running tours for almost ten years. We start the bioluminescent tours later in the season. Conditions have to be just right, we monitor the conditions closely so our groups really get to see the glow. SCL: What happens if you move your hand around in the water? Dave: First, the glow comes from dinoflagellates emitting a bluewhite glow when they are disturbed. Running your hand in the water does that, the kayak paddle does that, and even a jumping mullet does that. It is quite spectacular to see, very otherworldly. SCL: How bright do they get? Dave: It is a very dim light, but we maximize the timing of the tours to see the glow at its best. Each group member gets a glow stick, and that’s the only light source out there besides the glowing plankton. The glow sticks are for us to see each other. SCL: What makes conditions better for viewing? Dave: We monitor the weather conditions and water temperature. A big storm can interrupt the glow for a few days, but we adjust the tour schedule accordingly. SCL: What do we bring on a tour? A camera? Dave: This is a simple experience to enjoy. Bring dry shoes and maybe a towel and extra pants just in case you get a little wet. Most people stay completely dry though. Bring a bottle of water and maybe some bug spray. We spray down before we leave, but you’ll be surprised how few bugs there are once you’re out on the water. As for a camera? Leave it at home or in your car. This is an amazing sight, but nearly impossible to photograph. Relax and enjoy the memory. SCL:How do you describe this to someone who has never been? Dave: If you put a very dim blue light under your kayak, you’d begin to get the effect. It is the motion of the water and the plankton that give it its magic. This only happens in a very few places in the world. I’ve heard it can be seen in the Chesapeake Bay, but irregularly. We are gifted with this being a regular occurrence here, just another one of the great things about living in Brevard.
