hildhood is a period of time that is so often taken for granted. Do you remember being a kid? While responsibilities were few and opportunities for fun were endless, it was easy to look forward to the future as we were constantly frustrated that our schedules were at the mercy of adults. I always looked forward to the days where I’d be an adult. But now that I’m here, I can say I very much miss nap time and summer vacation. This in mind, I wanted to dedicate the August issue to children. As school kicks back into gear, I wanted readers to remember that fun is an essential part of childhood. Yes, good grades and extracurriculars are important; however, this time in their lives will move quickly, so it’s good to let them enjoy it while they can.

What’s a slumber party without fun snacks? While feeding someone else’s kids for the night might seem like you’ve bitten off more than you can chew, it doesn’t have to be that way. These snacks will please picky eaters without taking too much of your time and these snacks won’t make a mess of your kitchen, so the sleepover can go smoothly for both you and your houseguests. The recipes are so simple, in fact, that the kiddos can help make them.

Unicorn S’mores If your little guests are more into monsters than unicorns, swap the sugar sprinkles for chocolate rocks and choose a yellow-colored jelly, like orange or mango. Messy fingers, sugar rushes and happy smiles guaranteed. Makes 2 s’mores:
 2 sheets of graham crackers
 2 tsp powdered sugar 1/4 tsp water 1-2 tbsp sugar pearl sprinkles or any other kind of colored sprinkle 2 tbsp marshmallow fluff 1 tsp strawberry or other red-colored jelly
 2 tbsp dark chocolate M&M candies Snap each of the graham cracker sheets in half. In a small bowl, stir the powdered sugar and water together until it forms a thick glaze. If it’s too thin, add more powdered sugar until thick. Spread the glaze on top of two of the graham cracker halves and immediately press the sprinkles into the glaze.
In a small bowl, stir the marshmallow fluff and the jelly together until combined into a pale pink fluff. Dollop the fluff onto the unglazed graham cracker halves. Top with M&Ms. Heat the graham cracker-fluff-M&M stack in the microwave for 10-15 seconds. Top with the glazed graham cracker halves and enjoy! Photography by Harmony Lynn Goodson

S'mores-covered Apple Slices The decadence of a s’more is enhanced by the bright, juicy crunch of the apple. Just the right amount of sweet and satisfying, these slices are ideal for a late-night snack. 1 large apple, sliced
 1/4 cup dark chocolate chips
 2 tbsp Marshmallow fluff
 1 sheet of graham crackers, crushed into small pieces Melt the chocolate chips in the microwave at thirty second intervals, stirring in between, until smooth.
 Dip each slice of apple halfway into the chocolate. Lay on a plate or tray and refrigerate for about thirty minutes, until the chocolate is hard. Dollop marshmallow fluff over top of the chocolate layer. Sprinkle graham cracker pieces over top.

Mock Mimosas This non-alcoholic take on the light and refreshing mimosa will have your kids feeling like fancy grownups. Makes 2 mock mimosas:
 2 tbsp sugar 2 tbsp cold water Ice
 1 cup orange juice
 1 cup sparkling water
 2 Orange wedges (can also use lime) Spread the sugar on a plate. Pour the cold water into a bowl or plate. Dip the rim of your drinking glasses about 1/2 inch into the water, then immediately dip the rim of the glasses into the sugar until the rim is "frosted" all around. 
Fill the glasses with ice. Then, fill halfway with orange juice and the rest of the way with sparkling water. Add the slice of orange to the rim of the glasses. Enjoy with your favorite fanciful reusable straws.

Mini Pizza Pals Even the pickiest eater can’t turn down these cute tiny pizzas, especially when the pizzas are smiling up at them with veggie smiles. Makes 2 mini pizzas:
 1 whole wheat English muffin, halved
 1/3 cup pizza sauce
 1/4 cup shredded provolone and/or mozzarella cheese
 Sliced bell peppers, mushrooms or any other kid-friendly veggies Preheat the oven’s broiler.
Spread the pizza sauce over the open face of each of the English muffin halves. Sprinkle the cheese on top. Add veggies in the shape of smiles, animal faces, or other symbols.
Place the mini pizzas on a cookie tray. Broil for about five minutes or until the cheese is turning golden-brown on top, rotating halfway through.
Let sit a few minutes before serving to avoid burned tongues! AU G UST 2019 : 19

PINEDA CROSSING: TRADITION SINCE ‘96 BY SUSANNAH BOWMAN WRITER

I

n an age where trends and tastes are constantly changing, it is refreshing to find those places that remain the same. The world was a much different place in 1996, but Pineda Crossing was not. Here, consistency is key. In an interview with us last year, owner Bob Popp shared, “The idea here was to basically sell comfort food with the help of a qualified chef in charge, and that's what we've stuck with for the last 23 years.” “[There’s] no new ‘spin’ going on at Pineda Crossing,” continued Popp. “We have been here for 23 years by not chasing trends or food fashions. We are the very definition of ‘old school.’” Popp has owned Pineda Crossing since he bought it in 1995. At the time it was a grimy biker bar located right next to a trailer park. Popp worked on the restaurant, renovated and revamped it, and in 1996 opened Pineda Crossing. Popp prides himself on serving not only the same quality as 23 years ago, but the same beloved dishes. He claims, “If you got a dish here 10 years ago, you can come today, and it’ll still be here.” Some of their bestsellers are: filet Oscar, portobello strip steak, grouper nueces, Pineda sea bass and Florentine pasta. are made by their chef, Rand Morgan, who graduated from the Culinary Institute of America, and has been at Pineda Crossing for over 20 years. Morgan crafts all of the restaurant’s dishes from scratch with the freshest ingredients, never frozen Midwestern beef and fresh local seafood. Not only is their food the same delicious food as over 20 years ago, their drinks and the atmosphere are the same as well. They don’t try to trick your palette with overly fruity drinks or signature cocktails. Instead, they offer only the finest alcohol. They serve Old-Fashioneds, martinis and Manhattans. You won’t find a frozen strawberry margarita there — and that’s just the way Popp, and the locals, like it. Pineda Crossing is just a comfortable place to be. Popp says, “You can sit all day and listen to Big Band music, calm down and relax until you have to leave and face the rest of the day.” Here, customers can simply enjoy their surroundings and their meal. “The best meals come with no surprises,” says Popp. And that’s certainly how he runs Pineda Crossing. There are no surprises. Just consistently good, old fashioned, fresh food.

HOW TO GET YOUR CHILDREN EXCITED ABOUT NATURE BY KELLI COLLINS CONTRIBUTOR

M

y parents were always in the garden as I was growing up in Arizona. We had lemon, orange and grapefruit trees and an extensive flower garden. Every year, my father would sit down with me and ask me what flowers I wanted in my special corner of our yard. To this day, it’s one of my favorite memories of growing up. I truly believe that if we want children to flourish, we need to foster their love of the earth before we ask them to save it. I love getting our two girls excited about being outdoors and in nature! Here are a few ways that we incorporate this way of thinking into our everyday lifestyle:

Give them their very own plant to take care of and make it part of their weekly chore list. We teach them how to water, fertilize, prune and move the plants around to find the best sunlight. You’ll be surprised how excited and proud they are to see it flourish under their watchful eye.

Create a fairy garden in your yard. It doesn’t have to be extravagant, just a space that they can take care of outside. We’ll leave little garden treasures, flowers and new additions to the space at the beginning of the season.

Play with your food! This is a big one for our family! I think it’s so important that healthy eating is established at a young age so why not make it fun? I’ve found that if you have fruit and veggies out and accessible, then your kiddos are more likely to go grab one and graze throughout the day. We’re constantly creating and crafting over here and one of our favorite activities is to break out the non-toxic paint and have some fun. My girls love to paint fun designs on bananas, mangoes, pineapples, etc. We also have a pineapple garden on the side of our home and the painted tops are fun to look at, too! Speaking of food, herb gardens are a great way to introduce farm-totable living. We have an herb garden in our Florida room that the girls are responsible for during the year. Every Friday, we have them research a simple recipe that incorporates the herbs in our greenhouse. We assist them in harvesting, prepping and using the herbs in the recipe that they’ll make for our family dinner. This is one of my favorite ways to get children excited about nature, as they see the entire process from seedlings to table.

The best way to beat boredom for free around our home is what we call ‘Foraging Foliage Faces.’ I’ll have the girls go outside and gather leaves, flowers, grass, etc. and create faces from their treasures on our driveway. I’m always so amazed at the beautiful creations they make every time. I take and print pictures of the faces they’ve made and hang them up in our playroom. I’ve noticed they’ll naturally gravitate to doing this fun activity when my husband and I are outside doing yard work. It’s a great way to pass the time!

Get them involved in the local garden communities. My girls have been members of the ‘Little Bugs Club’ over at Rockledge Gardens for years. The programs are super affordable and something they look forward to during the season!

I’ll never forget that magical moment when, as a child, I discovered that I could pull every pillow and cushion off the couch to build my very own fort. ‘Ah, yes,’ I’d think to myself from inside my new home, as I sipped on a juice box. ‘Another hard day of work in the books.’ As technology evolves – and the interests of children along with it – it’s fun to see that pillow, blanket and sheet forts are the thread tying the generations together. But that begs one to ask: why do children love creating these spaces so much? When I think back, my mind immediately remembers how safe I felt inside my own, tiny fort. Though the pillow walls and thin sheet ceilings could collapse on me at any moment, I always felt secure. In an article written by Ashley Jones published earlier this year for Romper, Dr. Michael Mintz shared that this feeling is common among children. He said, “[s]ome children are thrilled to be in a tight space, where the feeling of being contained may provide them a sense of security or safety.” As someone who hates sitting in the middle seat on an airplane or standing in a packed elevator, it’s strange look back and think that I once felt most at home inside such a small, cramped and often dark space. But, as Dr. Mintz continued to say, to children, the world is big. Because of this perception, it can often be hard to attain those feelings of security or safety in everyday life. In addition to providing feelings of safety, Dr. Mintz continued to share that forts can be a great place for children to relieve stress, as well as a great outlet to express creativity, leadership and collaboration. After all, constructing a fort from the ground up is rarely a one-child job. While it can be frustrating to see furniture and linens strewn about the house, encouraging your children to live out their young, architectural dreams positively affects their development. Though it creates extra housework, you should encourage your children to invite their friends over and build a structure that’s entirely their own. In fact, as summer break quickly comes to a close, you should not only encourage your kids to build the fort of their dreams, but host – what I think could be considered as – the ultimate, endof-summer sleepover. The ability to collaborate with friends and watch their favorite movies will keep them feeling creative, stress-free and happy.

FUN FOR kids

First and foremost, you’ll need to make sure you have everything your child needs to build his or her own fort. The best places to build a fort are living rooms or children’s rooms, as these spaces usually have an open floorplan and contain a large cluster of furniture. You’ll want furniture of varying height for the walls, but I recommend you use high-backed chairs or stools for the main construction of the ceiling. Make sure your child has extra blankets and pillows, because these items will be used both for the structural integrity of the fort as well as for comfort on the inside as your kid lounges. Don’t worry too much about the details; your child will figure out how to construct the fort from the furniture you have. However, do make sure the opening of the fort is facing an empty wall. This will be important when it comes time to set up a movie night.

Once the fort is erected, let your child decorate it. After all, this is your child’s makeshift house for the evening, and décor is one of many things that helps make a house a home. I recommend using string lights, colorful blankets and stuffed animals. Once nighttime hits, the soft glow from the string lights will mimic the effect of camping outdoors, with only the stars and a fire to help you see. And, colorful blankets and toys gives children the ability to express their creativity. Who knows, you may find you have a future interior decorator on your hands!

As your child creates the fort, set to making fun snacks that can be enjoyed during the movie. There are endless possibilities, from s’mores to popcorn, but if you turn to page 18, we’ll walk you through some of our recipes that will be sure to wow.

Finally, set up a movie night. Place a projector inside of the fort, facing the empty wall at the fort’s opening. Make sure you have a DVD player and speakers that can be plugged into the projector, otherwise this won’t work. Let your child pick his or her favorite movie and press play. There is nothing better than that first movie inside of your own home, right?

While it’s always good to provide structure for your children, allowing them to be creative and break free from the routine every now and again won’t hurt; a night like this may have a long-lasting, positive effect. Though it may seem odd, allowing your children to construct their very own pillow fort is good for their emotional well-being, and allowing them to do so with friends is a great way to keep them engaged and collaborative. Plus, who doesn’t love to enjoy a good snack and a movie?

CLUB PILATES THE SPACE COAST’S NEWEST FITNESS COMMUNITY BY SARA SANTORA MANAGING EDITOR

P

ilates: a word I’m sure many of us have heard, but one that is still shrouded in so much mystery. It’s a popular workout, but what exactly does it entail? Most think of it as a form of yoga class for the nation’s elite athletes; but, it’s actually a therapeutic workout that is beneficial for everyone. Pilates dates back to the ‘20s, and is named after its creator, Joseph Pilates. He battled chronic illness as a child and, wanting to gain health and strength, turned to exercise. He found work as a boxer and self-defense instructor, eventually working as an orderly in a hospital during World War I. There, he worked with wounded soldiers who were unable to walk. As a means to support the patients’ limbs, he attached bed springs to the hospital beds. as the “reformer,” the main piece of equipment used in Pilates. In the early 1920s, he emigrated to America with his wife, and in 1926, he opened his first studio in New York. Of course, the method was a huge hit, and Pilates studios can now be found all across the country, including right here on the Space Coast. The Club Pilates Viera location has a story as interesting and rich as the history of the workout itself. Owners Emily Rehkop and her husband Heath Rehkop are retired, service-disabled military veterans. The two had always wanted to run their own business, but more importantly, they wanted to give back. After doing their research and venturing down a few different avenues, they decided that joining the Club Pilates franchise would be the best fit for them, as they could use it to help support people of all backgrounds in achieving their


health and wellness goals. “One of the things that both Emily and I are familiar with was working out, you know, being physically fit,” said Heath Rehkop. “We tried to carry that through when we left the military because it’s such an important piece in the balance between work and life. “Pilates was something that really resonated with us as something that not only keeps you fit, but also has a lot of therapeutic and health benefits from these reformers for people that just aren’t able to work out in the conventional way,” he continued. Right away, my misconception that Pilates was an exercise for those who were already in peak physical condition was thrown out the window. When talking to Heath and Emily Rehkop, I learned that Pilates is a low-impact workout designed to help with alignment, increase range of motion, increase stability and strengthen your core. Even better? You do most of this while lying on your back or your stomach. Of course, though you aren’t standing for most of the workout, you are still working up a sweat.

But, what do you do? That was my lingering question as we talked about the workout and its history. Upon first glance, a Pilates studio can look a little daunting. However, Emily Rehkop quickly assured me that the reformer is not a “medieval torture device.” During our interview, she very quickly and easily hopped onto the reformer and showed me how it worked. She demonstrated that you use either your arms or legs to control the movement of the carriage (the part of the reformer on which you lie). She also showed me that the springs attached that control the weight can be adjusted, so your workout can be as easy or intense as you need it to be. This is one of many modifications you can make to your workout to ensure you’re doing what is right for your body. I was surprised by how easy it looked, so I signed up for one of the studio’s intro classes. As someone whose fitness background doesn’t go beyond an occasional yoga class or run around the block, I was pleased to not feel that overwhelming desire to quit that often comes with trying a workout for the first time. Emily and Heath Rehkop were right:

Pilates is for everyone. For this couple, educating the area about Pilates is their main goal. They don’t want residents of Brevard to fear Pilates, because as they’ve shared, most of the misconceptions surrounding the workout are just that: misconceptions. Heath and Emily Rehkop want everyone to feel comfortable in the pursuit of their fitness goals, so visit their studio or keep an eye out for them at community events. Club Pilates is more than just a studio, it’s a community. I can honestly say that this is a studio to which you can turn to work on your overall physical well-being without judgement. A SOLUTION TO OUR ANXIETY EPIDEMIC BY SUSANNAH BOWMAN WRITER

More and more, anxiety is becoming prevalent in our communities, especially in children. Whether they are anxious due to physical illness, school pressure or social interactions, many children suffer from anxiety. In fact, more than 4,000 children suffer from anxiety on the Space Coast alone. Luckily, the Space Coast is home to multiple health care professionals who are working to combat this widespread health problem. Among them is Dr. Cristi Salinas, who works vigilantly to help ease the epidemic of anxiety in our community. The daughter of a pharmacist and a nurse, Dr. Salinas gained a passion for the medical world at a young age. She is now the only pediatric neuropsychologist in Central Florida. In high school, she became interested in the non-profit sector, but it wasn’t until her fellowship at the Florida Hospital for Children that she truly found her calling. In working with several underprivileged children suffering from anxiety and other mental illnesses, Dr. Salinas realized that there was a real need for a community of doctors in Central Florida that would treat children who had health insurance that wasn’t

covered by most mental health providers, or children who had no health insurance at all. Thus, Niños Health was born. Niños Health is focused on getting care to underprivileged and undertreated children. Dr. Salinas hopes to bring a community of doctors to the Space Coast to treat these children and help them to be the best and healthiest version of themselves.

Along with Niños, Dr. Salinas has her own private practice in Melbourne. Here she helps to diagnose and treat children with anxiety and other mental health conditions. Sometimes it’s hard to tell whether your child has an anxiety disorder, or just the normal nerves that come with adolescence. Dr. Salinas shared that, in young children, the markers for anxiety disorders include anything from separation anxiety to angry outbursts. In older children, anxiety disorders are marked by avoidance of beloved activities and friends. If you suspect that your child may have an anxiety disorder, it is only beneficial to seek professional, medical help. Doctors such as Dr. Salinas and many other pediatric health professionals can help you and your family. Talk to your children and always make sure they’re doing their best. And remember, if they need the help of a doctor, there are many who would love to lend a hand.

ust a year after the term “selfie” was added to the Oxford English Dictionary in 2013, the American Academy of Facial Plastic and Reconstructive Surgery released a study that uncovered a fascinating trend. The research revealed that one in three facial plastic surgeons surveyed saw an increase in procedure inquiries based on patients being more self-aware of their looks due to selfies and social media. GREAT EXPECTATIONS Mark W. Mullins, Ed.D. BY ERIC WRIGHT PUBLISHER It was one of those formative events Mark Mullins, the Brevard Public School Superintendent, will never forget. In the early days of his term, the Superintendent at the time, Dr. Blackburn, called his leadership together and asked them, “What makes Brevard great?”

Mullins recalled, “Immediately, a hand went up in the crowd and one of the true matriarchs in the room, who had been a principal for I think something like 35 years, stood. She said, ‘You need to know one thing about Brevard. We put men on the moon here. That will drive what we do, we will rise above this current situation.’ “I’ve never forgotten that,” he said. “I suppose it has always motivated me. There is a culture of high expectations here and a perspective that together we can beat the odds, no matter how great the challenges are.” The overarching and unchanging challenge, and the opportunity school systems have, is to mold and equip future generations who will shape our community, our nation and our world. Mullins acknowledges that most teachers approach their career as a calling, which is how he has always viewed it.


It was working with young people in his church’s youth group, while finishing his associate degree at a community college in South Florida, that led him to consider teaching as a profession. Though his wife is from Melbourne Beach, it was more opportunity than intention that brought him to Brevard in 1994. With his newly minted degree in math education from FSU, Mullins and his wife who was then pregnant with the first of their three children, moved to the Space Coast. “We’ve been in the community for 25 years. Early on, while teaching at Cocoa Beach High, I was drawn to the leadership side of education,” Mullins said. “My initial experience in administration was managing a sizeable federal grant covering mental health, counseling and social services, during Dr. DiPatri’s first year as superintendent.” Mullins considers Richard DiPatri a mentor. He was a celebrated superintendent and the longest serving appointed superintendent in Florida history. DiPatri also tapped Mullins to be his student liaison, a role he continues today, meeting regularly with high school senior class presidents and even taking them with him on legislative trips to Tallahassee. “Their student voices helped seal the mental health funding we received and restrictions on underage vaping,” Mullins shared. “It is a privilege to help train them to use their very significant influence, in a respectful and responsible way.” In his new role he has experienced firsthand the diversity that is representative of Brevard. “As a superintendent I have seen the affirmation of the really strong communities that make up our district. Each one has a unique identity, heritage and traditions, and all of them are engaged in making their schools and their communities the best they can be. I have coined a phrase that sums up my experience: ‘Brevard takes care of Brevard,’” he said. Speaking of what guides his leadership and decisions, he was very clear. “We make student led decisions; they are our first priority. Since DiPatri’s administration our motto has been, ‘Serving all students with excellence.’” “Secondly,” Mullins continued, “what are the right things to do for the people who interact with our kids every day? They are making the difference. Finally, we must ensure we are acknowledging and are accountable to all the citizens that make our schools possible.” “Bottom line, I hope it will be said that Mullins helped all kids beat the odds.”

TEACHERS COMING TOGETHER TO MAKE A BIG DIFFERENCE

Mahatma Gandhi once said, “Be the change that you want to see in the world,” and that’s just what retired Brevard County teacher Nancy Donahue became when she discovered the plight of 23-year-old teacher, Temwani Chilenga, from Malawi, Africa. Beginning with a book and a post on a teacher Facebook group, the two women have developed a strong bond that is inspiring many others to make a difference. “Teachers were discussing class sizes on Facebook. One was complaining about having 23 students. Temwani asked if the person was joking. This is when I learned she was from a small village in Malawi with over 250 students, and the conditions that she and her students faced everyday were tremendously challenging,” said Donahue. Donahue was first familiarized with the humanitarian crisis in Malawi when she discovered a book based on the true story, “The Boy Who Harnessed the Wind,” by William Kamkwamba and Bryan Mealer. Knowing that the country suffered from extreme poverty, she immediately asked how she could help.

Chilenga said that she needed pens. Although Donahue found a company to donate 300 pens, she wanted to do more. The smallest class at the school where Chilenga teaches has over 130 students. The school has no electricity or food, and many students quit because they are starving and exhausted from the long walks to school, which can take up to 2 hours each way. This is after walking an hour for unsanitary water from the river. Donahue learned how the children also take dangerously long foot trips to the city to scavenge for food – which is often rotten – and empty bottles to sell. Many students do not even own shoes and Malaria is common, but medicine is scarce, leaving many to die from the disease. Learning more about the heartbreaking circumstances, Donahue contacted Linda Garrett, a member of the Delta Kappa Gamma Society (DKG) – an organization of women educators – to see if the group might help. Juliann LoSasso, DKG World Fellowship Committee Chairperson, said that when Donahue explained


the challenges the teachers and students face, she agreed for Donahue to speak to the group. Upon hearing the moving story, members donated almost 300 pounds of educational materials and cash for shipping. Donahue knew the supplies would help the students’ education, but it was not addressing the hunger. Donahue turned to Facebook again and requested donations to build and populate a sustainable henhouse. Her friends stepped up immediately and it is working! However, it wasn’t enough. She wanted to do more. Throughout this experience, a bond was developing between Donahue and Chilenga.

“At first, I felt like we had a teacher-to-teacher relationship, but our relationship began to transform into something more. I started worrying about her getting malaria, not having enough food and her safety living without locks just as if she was my own daughter.” Meanwhile, a North Carolina teacher from Facebook was moved by Chilenga’s story, too. She applied and received a grant so Chilenga could visit and soon, she ventured from her small village in Malawi to the United States. Chilenga was scheduled to fly home when Donahue discovered that her visa would allow her to stay longer. Donahue reached out to strangers from Chilenga’s USA followers, and they pitched in to change her ticket so she could spend two weeks in St. Louis and a week on the Space Coast.

Donahue planned an amazing week for Chilenga, including Epcot, SeaWorld, Kennedy Space Center and the beach. “Chilenga saw things that she didn’t know existed. She was amazed by escalators, elevators and moving sidewalks. She couldn’t believe people had televisions in their bedrooms and how easy it was to access clean water. She had no idea that man had been on the moon! Though these discoveries were surprising, the biggest was the friendships she formed,” explained Donahue. But Chilenga was not the only one to learn something from this experience. When asked what she learned from Chilenga, Donahue said,

“Life changing gratitude, the true value of a dollar, the need for less and how a little money can change a life.”

During Chilenga’s visit, Donahue also hosted a potluck dinner to raise money for Malawi. “I posted an open invitation on Facebook for folks to come meet and hear Temwani’s story. The love and generosity from that evening will be with me for the rest of my life. Many of us cried happy tears that night.” The funds raised are already going a long way. For example, they used $50 of the funds to provide fresh fruit to over 200 of her students. For some, it was the only food they received that day. Donahue noted how moved she was by Chilenga’s generous nature. “I took her to Goodwill to purchase a used suitcase so she could bring back more items. She had no interest in things for herself but bought many clothes and shoes for children. When she packed, not everything fit. She removed personal items over pieces for children.” Although, Chilenga has returned home, Donahue’s mission to continue helping is not over. Donahue is currently creating a nonprofit with the goal of feeding all the children in Chilenga’s school. When asked why Donahue decided to put this much effort into helping Chilenga, she explained that while there are resources and nonprofits, there’s none in this area.

t was not his love of cars that moved Chris Saraceno, vice president and partner of the Kelly Automotive Group – which purchased INFINITI of Melbourne in January – into the industry where he has built a nationwide reputation as a business trainer. It all started when a friend and mentor told him he would do great in car sales, to which he responded, “I don’t know anything about cars.” His friend replied, “That isn’t the point, you know and understand people.” It is a priority that Saraceno still infuses into the dealerships he works with today. “Most of the sales team members we have at INFINITI of Melbourne don’t have a background in car sales, which was intentional,” he said. “If a sales consultant genuinely cares about a


a guest and finds out what their desires and expectations are, in other words, treats them like a friend or family, we know we have a product that people desire.” He doesn’t even like to use the term, “Closing the sale,” among their team. “To me that implies that someone won, and someone lost,” he said. Explaining, that unless both parties leave the transaction feeling like they have a win-win agreement, he doesn’t consider the transaction a success. That combination, of transparent relationships and an iconic brand, has resulted in solid growth in a community with the highest percentage of engineers anywhere in the county. “What convinced us to purchase INFINITI of Melbourne,” Saraceno shared, “was the number of engineers who came to us and said, ‘INFINITI is the best engineered and best value of any car in the world.’” It may also be one of the most innovative. In January 2018, INFINITI’s chief executive announced that all new models of the INFINITI brand, introduced after 2021, will have an electric powertrain, which can mean pure electric vehicles or what most people know as hybrids.

To accommodate the popularity of INFINITI in the area, the dealership is planning to move from their current location, on Apollo Blvd. in Melbourne, out to US 1. The dealership is part of the Kelly Automotive Group, which has been in business since 1934, and owns five dealerships in Pennsylvania, as well as the Kelly Ford in Melbourne.

The Theory of 5 When he joined Kelly Automotive Group in 1989, he became their youngest general manager, before transitioning into one of three national sales trainers for Saturn Corporation, which was a division of GM. He worked for Saturn for five years before being invited to come back to the Kelly Automotive

Group as their vice president in 1997. Then in 2008, they offered him to be a partner in all their stores. Though Saturn was discontinued in 2009, Saturn became a model of how a dealership could and should operate. It was formative for Saraceno. In the course of his career and the inevitable ups and downs that life throws at you, Saraceno developed a personal and professional strategy he calls The Theory of 5. This has also become a best-selling book. According to Saraceno, we are shaped by focusing on five key areas of life and surrounding ourselves with five key relationships. “All of us would like to surround our kids with the kind of young people that will motivate them to pursue positive goals and make good decisions. But that principal of influence, that the kind of people you are around, you will become like, is true if you are eight, 18, 28 or 58,” Saraceno explained. Mr. Robert Kelly and his sons Greg, who is now president of Kelly Automotive Group, and Tim, who is the dealer/ partner of Kelly Ford here in Melbourne as well as a partner of INFINITI of Melbourne, have been that to Saraceno, along with many others throughout his life. The five key areas are business & finance, fitness and health, spirituality, parenting and marriage. For Saraceno, if any of these are not harmonious in life, we will not realize the full potential. It is obvious that they are principles he lives by, which are shaping the dynamic and the success of INFINITI of Melbourne.

Every year, summer break is the perfect opportunity for many families to reconnect and relax without school, homework and parent conferences getting in the way. But through all the traveling, vacations and beach days, summer seems to go by quicker than ever. As it comes to a close, parents around the country start to prepare for yet another school year ahead. Here are a few helpful points to help tackle this academic year.

Adjust bedtimes accordingly. There is nothing worse than being consistently late because your child does not want to wake up early. Even though it feels right to give our little ones as much sleep time as possible, there is no avoiding the early hours during the school year. Enforce an appropriate bedtime before the year begins to ensure that your child is waking up at just the right time.

Maintain a positive “back to school� attitude. If your child sees you dreading the start of school as much as they are, they will most likely start to lose interest before the year even begins. Getting them excited about learning will increase their motivation to do well and help them associate school with positive thoughts.

Take advantage of all the back to school deals. Getting the right supplies for your child will be vital to their academic success and fortunately almost all of it is on sale! Not only will they be prepared to learn, but they will also get a heightened sense of organization that will make them feel ready to conquer the year!


Create a schedule that you and your child can reference. At the start of the school year, it can be difficult to adjust to a new schedule. With young kids in particular, it can be hard to remember the times that they start school, go to lunch or get dismissed. Create a comprehensive, color-coded schedule and place it where you and your child can both visually reference it daily.

Discuss safety and after care. These discussions are extremely important to have in this day and age, especially with young children. Ensure that he or she understands how they are getting home from school every day and who will be picking them up. Contact the school ASAP regarding how their dismissal process works and what to do if your child needs to partake in after school care.

Create a list of goals for a successful school year. Together with your son or daughter, write a list of goals and go through them at least once a week if possible. You can even create a mission statement highlighting the goals they hope to accomplish by a certain date and put it on the fridge or on the wall. Whether it is aiming for straight A’s or obtaining zero tardies all year, establishing a clear set of expectations will motivate them to achieve each of these goals during the year.

I

talian culture has majorly impacted and shaped the modern world. Some of history’s most beloved paintings, musical compositions and fashion houses have been born from this wonderfully passionate culture, a culture that is both hard to ignore, and easy to love.

As the sisters grew up in salons and barber shops, they found a love for hair at a young age. Cally shared that Ruano has been doing hair since high school, joking that, “she got her cosmetology license in one hand and her diploma in the other.”

My father’s side is Italian, and they are all exactly as you’d expect: incredibly boisterous, intelligent, sarcastic, loving … the list goes on. But what I find I love most, aside from their passion, is their family-centric attitude. There is a warmth that comes with Italian families, a sort of hilarity and insanity that can only exist among people who know and love each other so well.

It wasn’t until Cally moved to Florida and had her kids that she got her cosmetology license. Ruano moved down from New York to be closer to her niece and nephew and started looking for work in barber shops. However, because barber shops in Florida are much different than those in New York, Cally convinced her sister to start looking into salons. She said, “Just try it, and if you don’t like it, you can go work at a barber shop.” Of course, Ruano thrived in the salon environment and the two eventually opened their own salon: Sorelli Hair Studio & Spa.

This vibrance is exactly what you feel when you walk into Sorelli Hair Studio & Spa. The studio’s name “Sorelli” is the Italian word for “sister,” implying a family business. Rose Cally and Grace Ruano – the sisters and owners of Sorelli – are filled with as much love for their salon staff as they are their own families. I met up with the pair, along with Cally’s daughter Julianna Cally, to talk about their business and of course, their fierce devotion to their large family. They began by sharing that hair care has been in their family for generations. “[Our] mom’s family were all hairdressers,” shared Cally. Their mother went to beauty school and their grandfather owned a barber shop. “He actually used to cut Yogi Berra’s hair, and the Yankees,” Cally said. “Even our mom’s cousin in Florence owns a salon.”

When it first opened, Sorelli was a small salon located on US1. The space consisted of three units, which was too big for the sisters at that time. They signed the lease anyway, and only worked out of one of the units. It wasn’t long until nail techs and massage therapists started knocking on their door wanting to join the team. With the available space, Sorelli began to expand, and before they knew it, all three units were up and running. They very quickly outgrew the space that was once too big for them and moved to their Suntree location. The clientele continues to grow every year, and to celebrate almost a decade in business, the sisters have been busy

renovating their studio. Cally, Ruano and the rest of their family have worked tirelessly over the past few months to brighten the studio, reupholster chairs, change the mirrors, freshen up the paint and just about everything else that comes with running a successful business. The salon now feels more modern and is as picture perfect as the clients who come and go. Having experienced Sorelli myself, I am certain that their success is due not only to their talent, but to the atmosphere they have created.

“We wanted to make it, not so corporate but more of a family environment where the staff and clients feel comfortable,” said Cally. “We’re very family-oriented, whether it’s home or at work … that’s just how we are,” continued Cally. “That’s how we feel about our clientele, that’s how we feel about our family, that’s how we feel about our staff …” “… when you grow up in a big Italian family and have dinners every Sunday, it’s something you can’t turn away from, and it follows you through every avenue of life,” said Julianna Cally. Julianna Cally continued to share that the well-being of the salon’s employees is a top priority to the family. They go out of their way to create strong relationships with the staff and help support them through whatever it is they might be going through. Of course, she continued to share that this can be difficult at times, as they have to remember that there should be some separation between owner and employee, but as Ruano so simply put, “they’re our family.”

“You’re always wanted, you’re always loved and there’s always a place to go,” continued Julianna Cally. The love that this family has for their business and those who work there is palpable. As a client, I love walking into a salon where stylists are laughing with each other and their clients. It makes for a more comfortable environment and, as anyone who has ever watched "Steel Magnolias" knows, the right salon can be the place where you share and experience so many of life’s biggest moments. Cally and Ruano have captured that with Sorelli. I enjoyed my time with Cally and her daughter and Ruano, as it reminded me so much of time spent with my own family. "T

he Equalizer” is a fictional character of television and film, who uses his unique and remarkable skills to tip the scale in favor of vulnerable people who are confronted by those with power, influence and wellhoned experience. The lawyers at Morgan & Morgan see their role in much the same light, though in very real-world sense. Their clients, whether seeking resolution on a personal injury claim or one to cover the hurricane damage on their home, often find themselves facing off against insurance carriers with highly skilled attorneys, who clearly have the advantage in experience and the crucial factor of time. “When I first met with John Morgan to discuss opening the Melbourne office, he asked me what I wanted to do in life,” Derrick Connell, the partner who oversees the offices in Brevard recalled. “I told him I wanted to help people. It is a deep connection that Connell shares because of his personal experience. He suffered an automobile crash in 2012 which left him with injuries that required surgery and still cause him significant issues today. “I know what it is like to undergo treatment and surgeries due to someone else’s negligence. I know what it is like to personally deal with insurance companies and others that don’t understand or believe in the scope of your injuries. I also know how injuries can affect your family and interactions with them. I have lived it. And each day I try to alleviate this burden the best I can from my client’s lives.”

focus towards representing people. “I didn’t get any satisfaction defending insurance companies, compared to representing homeowners, especially after hurricanes,” Hoag explained. “It is so tangible, when it is someone’s home, their whole life is disrupted.” Hoag went on to share how many times he had heard statements like: “I’ve lived in my home for 40 years and I’ve never filed a claim. Now that I need help, I can’t get it.” He summed it up saying, “Fundamentally, it is just a matter of getting the insurance companies to do the right thing.”

Making it a Mission

“Initially, I wanted to be a high school history teacher,” Gillenwater said. “But I took a law class in the second semester of my freshman year and that was it, I knew being a lawyer was all I wanted to do.” What he later realized was as a trial lawyer, he was still in front of a group of people educating and persuading them on behalf of a client and on behalf of the truth. It was the perfect combination of what he loved to do and what he felt compelled to do.

Passion and empathy seem to be part of Morgan & Morgan’s culture. This is clearly expressed in the comments made from people the firm has represented.

It was Gillenwater who used the phase, “Equalizer”, when describing the role their firm plays on behalf of their clients. “When people are injured, they are not only in physical and financial distress,

they suddenly find themselves in totally unfamiliar waters, getting advice from sources that may not have their best interests at heart,” he said. Gillenwater’s effectiveness was recently highlighted when he and Connell obtained a top 100 verdict for all of Florida. All the attorneys Connell has recruited form a team of specialists in areas where people feel vulnerable and often overwhelmed. The legal profession has long been symbolized by Themis, the female image of Justice, blind folded and holding a pair of scales. The lawyers at Morgan & Morgan, led in this market by Connell, Gillenwater and Combs, have learned from experience that without skilled and dedicated representation, those scales usually tip in the favor of the insurance companies.

“I was on vacation in Florida for my birthday when I was hit by an uninsured drunk-driver. My injuries were extensive and so were the medical bills. I thought I was going to have to pay it all out of pocket, but Derrick found me coverage and took care of everything,” a client named Kevin said. Adding, “He did a great job not only handling the insurance companies, but also managing the health care providers. He helped make the best out of a pretty disastrous situation.” A woman, who wished to remain anonymous said, “Mr. Connell and his staff settled my car accident case in a timely manner, that made healing comfortable and worry-free. They contacted me through email and phone calls to eliminate unnecessary travel. My settlement covered all expenses, with some left over for future care if necessary.” Another central member of the team, Grant Gillenwater, focuses his practice on representing clients who have been seriously injured as a result of the negligence of a property owner. He embodies that sense of passion and mission that permeates the practice. He is a graduate of Stetson Law, which he attended because U.S. News and World Report rated it the top law school in the nation for advocacy. During his time there he competed, as did Connell,

The sights of massive cruise ships carrying thousands of excited guests to enticing vacation destinations, along with the sounds of heavy machinery erecting new state-of-theart terminals, are unmistakable signs that Port Canaveral, the world’s second-busiest cruise port, is thriving today and building for tomorrow. And cruise passengers are taking notice. Recently, Port Canaveral was voted the world’s “Best Cruise Port” by readers of Global Traveler, a monthly magazine for business and leisure luxury travelers, and earned one of the publication’s 2019 Leisure Lifestyle Awards. The Port finished ahead of other U.S. and international ports for the honor. “We strive to provide our cruise partners and their valued guests with the best possible cruise port experience,” Port Director and CEO Capt. John Murray said after accepting the magazine’s award in June.

More than 4.5 million passengers passed through the Port in Fiscal Year 2018, a 7.7 percent increase over 2017.

And multiday cruise revenue jumped 7.1 percent from the previous year, accounting for more than $77 million of the Port’s record $103.7 million in revenue for FY18.

New Ships, New Terminals

Carnival Cruise Line, Disney Cruise Line, Norwegian Cruise Line and Royal Caribbean International have nine cruise ships based at the Port, which is also a popular port of call for other cruise lines. On Memorial Day, the Port hosted six cruise ships for the first of nine times in 2019 and welcomed 35,111 passengers. Only twice before – in February and March 2015 – had the 65-year-old Port handled so many cruise ships on one day. In March, the Port broke ground for construction of a new Cruise Terminal 3 complex that will become the year-

round home of cruise partner Carnival’s newest and most innovative cruise ship, the 180,000-ton Mardi Gras. The $163 million project – the largest in the Port’s history – will feature a two-story, 187,000-square-foot terminal facility with a futuristic design inspired by nearby Kennedy Space Center, an adjacent six-story parking garage with room for 1,800 vehicles and a new waterside berth. The complex is scheduled for completion in May 2020 and will be ready for the Mardi Gras’ arrival in October 2020. With a maximum capacity of 6,500 passengers and about 2,000 crew members, the Mardi Gras will be the first North American-based cruise ship powered by cleaner-burning liquified natural gas (LNG). Groundbreaking occurred a few months after the Canaveral Port Authority approved a new 25-year operating agreement with Carnival, its oldest

cruise partner which currently bases three cruise ships at the Port – Carnival Breeze, Elation and Liberty - and will bring another ship, Carnival’s 4,000-passenger Radiance, in November 2020. The Port Authority also reached a 20-year deal with Disney in May to expand operations and bring two of Disney’s three new cruise ships to the Port. Replacing a deal set to expire in 2027, the new agreement gradually increases the number of port calls from the current 150 to 180 in 2023 and up to 216 calls in 2024 through the remainder of the 20-year term. The new agreement continues Disney’s exclusive operation from Cruise Terminal 8 and provides preferential use of the Port’s Cruise Terminal 10 for a third homeported vessel. More than $46 million in planned waterside and landside improvements to both terminals will accommodate new

Disney ships, which are expected to be delivered in 2021, 2022 and 2023, with two of them homeporting at the Port for at least their first five years of operation. Disney currently operates its two biggest ships, the Disney Dream and Disney Fantasy, at the Port year-round.

The Long-Term Vision

In May, Royal Caribbean repositioned the 1,188-foot-long Harmony of the Seas, the world’s second-largest cruise ship, and the 1,020-foot-long Mariner of the Seas to the Port. The Harmony, the largest cruise ship ever to homeport at the Port, has room for 6,700 guests and 2,100 crew members. The Mariner can carry up to 4,000 passengers and 1,200 crew. Royal Caribbean also brought the world’s largest cruise ship, the Symphony of the Seas, to the Port in November for its first U.S. debut. AUAUGUST GUST 2019 2019 :7

In April of this year, Norwegian Cruise Line’s 2,000 passenger Norwegian Sun returned to Port Canaveral to sail three-and four-day cruises with an overnight stop in Havana, Cuba. The Cuba overnight visit has stopped after the new U.S. Government’s policy change. The Sun continues to sail very popular all-inclusive cruises – three, four- and five-day cruises to Key West and the Bahamas. In November this year, the 4,000 passenger Norwegian Breakaway arrives at Port Canaveral to sail seven-day alternating Eastern and Western Caribbean itineraries for the winter season. With the Port’s 30-year vision plan in place as a guide, and more than $400 million currently in capital improvement projects that will boost the Port’s capabilities and capacity in cruise operations, Murray believes the course charted for the Port is a good one.

he childlike love of play is something with which many of us grown-ups lose touch. Fun can be difficult to incorporate into adult life, yet every now and then it can be cemented by breaking loose the shackles of normality and seizing moments beyond the status quo. Many local businesses recognize this case and spend their lives shouting at you to let loose. Nothing says play like driving a tank. At a veteran-owned business tucked away in Melbourne, FL, business partners John Kinney and Troy Lotane have created the infrastructure to provide this once in a lifetime opportunity to excited guests. At Tank America, customers are given the chance to be at the helm of tanks ecclesiastically named FV433 Abbots. The three menacing Abbots were the property of the British Army until acquired by the United Nations and later purchased by the intrepid business partners. John Kinney recalls a day roughly a half-decade ago when he received a call in which Lotane asked him if he knew that they could purchase tanks, “Well no, Troy. I didn’t know that. But I’m interested!” An hour outside of the largest tourist destination in the country, Kinney remembers thinking, “I’d like to drive a tank, I think other people would also like to drive a tank…so I think we can set something up.” Viewed by most as an eccentric business idea, the development of Tank America was met with relentless execution. The dream of this business was never discounted With Lotane’s background in the Army and the Marines, coupled with Kinney’s experience in the weapons industry fleshing out contracts with the military and police department, the dream of running such a unique business has now been actualized as if it were imminent. Kinney says that Lotane was teased while in the Military that his operational and mechanical knowledge of tanks would never translate to civilian life; he showed them! A day at Tank America will begin in the army-outfitted briefing room with a forty-five-minute instruction on how to be a proficient tank crew. Once the briefing is through, you’ll head to the hangar where you and your outfit will climb into your armored personnel vehicles for the most anxiously anticipated taxi of your life, to the 16.56-ton crawling behemoth you’ll soon station. Tank America even struck a deal with a local junkyard that made possible their “Car Crush Package.” With a few passes over The Joneses’ old Buick, the envy of yesteryear will take the form of a pancake. The car can then be completely torn apart with a finishing move dubbed “The Can-Opener,” spewing the remains of what was a car into every direction outward from your helm. For the duration of your operation post, the centrism of all the power in your world is at your fingertips. Once crews have tasted enough power for a lifetime, they can unwind in the mess hall to some local barbeque and watch live footage of other combatant guests duking out shots in the laser tag arena. The Tank America building has been outfitted by an interior design group into a Middle Eastern battlefront, hosting 90-minute Tactile Laser Tag battles.


Tank America asked the designers during the inception to help them create “Disney World, meets warzone,” with the response of, “Disney doesn’t normally do warzones...but we can make you what you need.” Tactile Laser Tag provides real-weight guns with authentic recoil and noise comparable to a paintball gun. Online profiles log all of your stats like a real-life video game, tracking personal progress and that of friends’ too. Teams are split evenly into groups with up to ten players, with beginners starting at an average score of 10 and developing upon experience in the arena. A hospital and an auto garage serve as bases on the opposite ends of the facility, with on the spot button-pressing revival stations. A prison, an alley, a coffee house and more exist as battlegrounds between bases for the bulk of combat. Creative games like “capture the sandbag” and the Hollywood set realism exist to elevate Tank America’s Tactical Laser Tag experience to a level above the rest! Tank America is a company that everyone wishes they started, and nobody would refuse a ticket to. John Kinney remembers his first tank driving experience as, “Exhilarating! 1 lb. scallops 1 Tbsp. olive oil 3 green onions, thinly sliced, including tops 1⁄8 tsp. pepper 1 clove garlic, minced 14 oz. can artichoke hearts, chopped 10 cherry tomatoes, quartered 2 cups raw baby spinach 8 oz. angel hair pasta 1 Tbsp. lemon juice

Heat olive oil in a 10-inch skillet. Cook scallops, onions, pepper and garlic over medium-high heat four il minutes, stirring frequently or unt scallops are white. and Stir in artichoke hearts, tomatoes y, nall asio spinach.
