hat a year, right? Are we out of hurricane season now? I sure hope so! One of my lasting memories of 2017 will be how well everyone came together after the storms. Even as I write this, there are still a few signs of the damage, but all in all we were very lucky considering what our friends in the Houston area, the Keys, Puerto Rico and the Caribbean faced. I hope you all had a good Thanksgiving as well, surviving all that food and football. One of my wife’s favorite holiday activities is planning her shopping mission with the massive newspaper that shows up for Black Friday. That takes us, of course, to where we are in this issue of SpaceCoast Living the holiday season! Check out this month’s profiles: We’ve assembled five families, all with a little different perspective. One of these profiles is on Jason Kempf and his family, who own Kempf’s Jewelers in Indialantic. The thought occurred to me as I was reading their story, “What does a woman want when she already owns a jewelry store? Does she still want jewelry? Or does something else come up in the discussion?” To get that answer, I asked Jason Kempf… “Women love jewelry and the women in our family are no exception! My mom (pictured at right), who is the primary designer at Kempf’s, still gets excited when Dad works on a special piece for her. My wife, Jamie, comes in and fills out one of our ‘Kempf’s Wish-Lists,’ which always helps me out. Connecting Through Food, Family and Culture BY CRAIG CHAPMAN

The holidays are here, and that means it’s time for some of our favorite traditional family foods. It’s a time to celebrate who we are with traditional family recipes and our unique cultural traditions. Food is the one thing we can all relate to, and it’s through these traditional family recipes that we tell and share the story of who we are and where we came from. Part of what makes living on the Space Coast so amazing is our incredibly diverse community. Food from around the world is available right outside our doors: Japanese, Columbian, Vietnamese, Cuban, Thai, Indian, Vietnamese, and more. During the holiday season, there are celebrations of all types that last through the new year. It’s the perfect time to take family and friends out, or spend a night in trying new foods from around the world. It’s also a great way to learn something new about your neighbors’ cultures and traditions, and probably find a new favorite food along the way. Each year my family certainly has their favorite dishes, but I always like to try something new each year as well. Sharing a piece of who you are through food is a part of everyday life for some. We reached out to a few members of our local community to find out how they celebrate the holidays and why food, family and friends mean so much to them. ►

Holiday Traditions Connecting Through Food, Family and Culture By Craig Chapman

Toni Elkhouri, the chef at her family’s restaurant Cedar’s Cafe in Brevard, celebrates the holidays with sambouski, a Lebanese meat pie. Toni points out something important: the similarities of foods from around the world. “Every culture has a version of pastry stuffed with meat of some sort,” Elkhouri said. “Sambouski’s are the favorites of my brother-in-law, as well as my late father. It’s a way of keeping him with us during the holiday.” Her restaurant also gets regularly requested dishes during the holidays. “Pumpkins are always a seasonal hit as well as many lamb dishes. Our vegans love the roasted root veg when we make it.” The sentiment and importance of family and food during the holidays resonates deeply, “Holidays are all about family, food and traditions. They bring everyone together and keep those who have passed on alive.” Caroline Grimaldi, owner of The Shoppes on Strawbridge in downtown Melbourne, is certainly sentimental about holidays and food. When asked how her Italian family celebrates, an immediate favorite came to mind, “Lasagna is very special to me and my family because we’ve made the same lasagna almost every year of my life at Christmas time,” Grimaldi said. “My grandmother, dad, and now myself are all following the same traditions that we did when I was a child. The little meat balls in the lasagna are especially special as I remember my grandmother frying them and us as children snatching them up as they were fried, and her yelling, ‘Basta, Basta (enough, enough).’ The pasta, ricotta cheese and sauce are all homemade.” Coming from an Italian family steeped in food, traditional recipes during the holidays have always been the highlight for Grimaldi. “The holidays are important to me and my family because it’s a time we all take a little break from our busy lives and enjoy each other’s company. It’s a time to gather and tell stories and, of course, share a meal. It is especially important to include food because sharing a meal is a great way to interact with each other and a great way to pass on traditions by teaching the children to cook. From the cooking in the kitchen, sampling the food and wine before it’s brought to the table, arranging the food on pretty dishes, teaching the children to set the table, to sitting down to eat it’s all an event.” These types of traditions are ones we can all relate to in some way even though our dishes may be different. ► 20 : spac ec oa st l iv in g

There are many different holidays that cooking enthusiast Antonia Santos celebrates during this time of year. Her favorite recipe is a traditional Mexican mole sauce that she uses on a variety of dishes from chicken and rice, to enchiladas. Whether she’s celebrating Christmas or Fiesta of Our Lady of Guadalupe, mole is her ‘go-to’ throughout the holidays. This time of year is especially important to Santos. “Holidays are always exciting to me,” she said. “It’s the time of year my family comes together to practice family traditions that were taught from generation to generation. The traditional Mexican food that we cook has always taken center stage at all our family events. Now I’m teaching my children our customs.” Passing down these cultural traditions to her children is incredibly important to Antonia; for her it’s like passing on a piece of her life to them. “Recipes are how we hand down traditions and family history. For instance, I always made tamales with my abuela (grandmother) for Christmas.” Passing down recipes and traditions is one of the few “old school” ways that we can all connect today. It’s the moment we all slow down in the kitchen and create and share something together we can all relate to. From big families to small ones, from new to old ones, food, family, culture and traditions are important treasures to share during the holidays. How will you celebrate and share this year? ◆

These refreshing sparkling wines evoke feelings of sunshine and paradise in a glass and go great with fall’s sweeter fare. Try a Tropical Moscato wine during your holiday gatherings. Bringing a bottle of bubbly is a welcome addition and your host would probably love for you to do the honors of popping the cork (they are, after all, busy slaving away in the kitchen, and could certainly use a glass). Since bubbly is great with dessert, it’s a good idea to bring something with a bit of residual sugar. The slight sweetness of the wine will complement the sugar in the sweets. F

or years, Tom Beasley went to Jamaica on vacations and started bringing back jerk rub, little hot sauces he’d bought down there, and his friends who’d enjoyed it with him for years, decided they wanted to buy some. Beasley tells us, “this was just when the hot sauce was probably getting ready to take off about 25 years ago.” He connected with two or three manufacturers in Jamaica and started making it under his own label. Just like that, Montego Bay Trading Company was born. What started out a hobby, became a passion…and a business. “In fact I have two pallets at the Orlando airport as we speak, waiting for me. I do a lot of jerk. I sell a lot of nine pound pails to restaurants in Orlando. We do business with some of the better restaurants there.” Even Bob Marley’s restaurant. That’s quite the testimonial, selling hot sauces mostly made in Jamaica back to a Jamaican-themed restaurant with Marley’s name on it. “Yeah, they buy our jerk seasoning too, some scotch bonnets, and some red crushed peppers,” Beasley added. 32 : spac ec oa st l iv in g


Beasley first went down to Jamaica in 1962, when they gained their independence, but he was 72 before he’d visit again. At 72, he started just going frequently to arrange for the production of his hot sauces. “I use one manufacturer outside of Montego Bay. They make all my sauces,” he says.

More Than Hot Sauces

“Probably 20 years ago, I ran across a sauce in Costa Rica called Lizano. Every table in Costa Rica has it on it. Every restaurant has it in it. They use it as a condiment and they use it as a marinade. So we got into that and now sell it around the country,” Beasley tells us. Beasley loves most talking about his peppers. “And then there is the ghost pepper. It took me 11 months to bring that in from India. I was the first one to ever bring it in the States. I was bringing it in 100 pound bags, and was one of the first to make a hot sauce out of it. If you know anything about Scoville units, the ghost pepper is rated at about a million Scoville units. And now they’ve got one hotter, at a million four. It’s called a Trinidad Scorpion. I made a hot sauce out of that one, too. There’s another out of North Carolina called The Carolina Reaper, also 1.4 million Scoville units.” For someone reading about the Scoville Scale for the first time, at 1 million units for a ghost pepper, or 1.4 million for a Carolina reaper or a Trinidad Scorpion, a jalapeño in comparison comes in at around 15,000 units, a habanero tops out at about 250,000. If one pepper is 250,000 units, to be twice as hot, it needs to be at 500,000. The Scoville Scale is linear. Now consider that jalapeño you had last week to a Trinidad Scorpion. That’s a hot pepper. So, does Beasley love hot sauces on his food? “No sir. I use a little hot sauce that’s probably, I don’t know, 150 Scoville units maybe. I want the flavor rather than heat. But I’ll sell it. I’ve got one man in Cocoa Beach who will buy ten cases at a time. I’m guessing he probably runs through a bottle a week. I’ve got two or three people like that locally.” ◆

he Maxwell C. King Center for the Performing Arts, aka the “King Center” is widely recognized by locals and visitors alike as an outstanding venue for hosting national musical acts. The evening of November 10, 2017 was no exception when the Marshall Tucker Band (MTB) played to a sold-out crowd on a tour celebrating 45 years of success. The Marshall Tucker Band is among a group of bands that established their own music genre in the 1970s- Southern Rock - with six gold records and two platinum records to their credit. Along with bands such as the Allman Brothers, Lynyrd Skynyrd, The Outlaws, and the Charlie Daniels Band, MTB was part of a sound that has created an extremely loyal fan base and influenced a wide range of popular country acts today. 34 : spac ec oa st l iv in g


Prior to the show, we were able to catch up with the band’s original lead singer and founding member, Doug Gray, about the appeal of the Florida area and his appreciation of the King Center as a venue for touring musicians. “The Melbourne, Cocoa Beach, and Orlando areas have always been very important to the Marshall Tucker Band,” said Gray. Regarding the King Center, Gray was effusive in his praise of the center and its staff – “A fantastic place for musicians with a very hospitable staff. I would gladly make this a regular stop as part of our Florida swing in future tours.”

Along with lead vocalist (and Tambourine) Doug Gray, the rest of the longtime current MTB members consist of B.B. Borden (Drums), Chris Hicks (Guitar and Vocals), Marcus James Henderson (Keyboards, Saxophone, Flute and Vocals), Rick Willis (Guitar and Vocals), and Tony Black (Bass and Vocals). As the band entered the stage with the Grammy winning “Long Hard Ride” instrumental, they opened with the title track from their “Running Like the Wind” album. Gray frequently shared personal stories during the show at one time commenting “the last 25 years I have had the same set list but have yet to follow it – and I don’t plan to tonight either.” MTB deep tracks such as “Midnight Promises” and “Bob Away My Blues,” along with favorites “Fire on the Mountain,” “Desert Skies,” and “Hillbilly Band” were also included in the set. The final song of the set was the southern rock anthem “Can’t You See,” recognized by Ultimate Classic Rock as the all-time #1 Southern Rock song - had the fans dancing in the aisles. The band returned for an encore song, “Heard It In a Love Song,” that delighted the audience as evidenced by virtually everyone singing along.

After the show, the famously fan-friendly and humble bandmates, led by Gray, expressed gratitude for keeping MTB alive after 45 years and provided no sense of slowing down anytime soon. Judging by the reaction of the fans, the feeling was mutual. That’s why Health First is determined to pass healthy habits on to Brevard’s most impressionable residents – children. “Health First is committed to improving the health and wellbeing of the residents in Brevard County,” said Drew Rector, Health First’s executive vice president and chief strategy officer. “By teaching children how to make simple, healthier choices, they can improve their quality of life in the short- and long-term. That, in turn, helps our community to be healthier as a whole.” It’s an important step, as the number of overweight or obese children in Brevard County increased by 37 percent between 2013 and 2016. Health First is working with community partners to reverse that trend. Focusing in particular on alternative ways to encourage physical activity among 12- to 15-year-olds, funding and tools being provided to make better choices include support of:

There are vastly different treatments for ACES versus ADHD, and counseling alone can often greatly help a student with ACES.” Yoho is bilingual, which helps her relate well to Hispanic students and parents. “We need to do everything possible to not retain a student. Grade retention can be one of those events that triggers ACES,” Yoho adds. Yoho works in Polk County’s charter schools, but also at St. Mary's Catholic School in Rockledge one day a week as their school psychologist. She keeps office hours in Suntree regularly as well. Yoho is a state licensed and nationally certified school psychologist with many years of experience in the public schools and as a guidance counselor in the private education sector. As a school psychologist, Yoho is highly trained in child development, learning, behavior, assessment, educational interventions, motivation and mental health. She received a doctorate in psychology from Argosy University Sarasota and a Diplomate in School Neuropsychology from the American Board of School Neuropsychology. he Kempfs stay true to their holiday traditions. Jason Kempf tells us, “It all started back in 1989 while obsessing over the movie ‘Christmas Vacation’ featuring the one and only Clark W. Griswold. I was 17 at the time.” Kempf convinced his big brother to help with his plan to cover the entire house with lights "Griswold style." “It took us a few days, and thankfully Dad taught us everything we needed to know about exterior illumination. When we were finished, it was a vision of Christmas beauty unlike anything the Kempf family had ever experienced.” After that Christmas of 1989, they dialed the lights back a bit, but every year since they watch “Christmas Vacation” while decorating the family Christmas tree. “Now that our families have grown, and thankfully stayed in Brevard County, my brother and I continue the tradition by bringing our children over to Grandma and Grandpa’s to decorate their tree.... while ‘Christmas Vacation’ plays in the background,” Kempf explained. He added, “We still also all get together to pick out our Christmas trees. The children wear Santa hats and have a great time running around playing together while the adults are so very serious about their selection of the perfect tree. Thankfully Grandpa has kept his tradition of paying for all of our trees every year.” Another Kempf family tradition is the annual boat parade, a great night to get together with family and friends. “We love the excitement of seeing all the decorated boats and voting on our favorites. Last year there was even a ‘Christmas Vacation’-themed boat in the parade. That really made our night!” Kempf said. “As busy as the holiday season is, we are all so fortunate to have our families close by to celebrate with.” ◆

Rowan, Trinity, Pallasgrean and I moved here from New York state three years ago, and like many northerners, we struggled to find our tropical holiday footing. In New York, we lived in my family’s 152-year-old homestead—a perfect Christmas house with huge 16-pane windows to watch the snow fall on cozy nights with hot cocoa. It was Hallmark Christmas movie material. In keeping with homestead traditions, a large part of our holiday traditions revolved around dragging in the largest tree that would fit in the house, sending out a holiday card made from one of my paintings, and hand making most of our decorations together. We made paper chains, garlands, snowflakes and stars mostly out of white paper, stringing them from corner to corner, lit up by strings of white lights. Much to our surprise, we found out that those white paper decorations and white lights translate perfectly to beachy interiors and we realized we didn’t need to change our traditions all that much. This year’s plans include large-scale paper poinsettias and three-dimensional stars. The tree? Well, after one disastrous live tree which took joy in shedding showers of needles whenever I entered the room, we’ve traded our live tree for multiple ‘pretend’ trees in different sizes. And my holiday paintings have converted from scenes of snowy sledding to scenes of Christmas parade boats. We've done our best to prove that the north doesn't corner the market on cozy. ◆

Until our children became adults, for many years we would pile in the car with our luggage and watering mouths, anticipating the taste of each of our mothers’ holiday meals, and head to Georgia for a few days to enjoy Thanksgiving with family. We now re-create our own Thanksgiving tradition in Titusville, sometimes only including family, and other times, old and new friends alike. The ladies are usually in the kitchen preparing for the festivities, while the guys are outside bantering and watching the smoke rise from both the BBQ grill and the football field as they watch their favorite teams play.

Then comes the spread of turkey, BBQ ribs and chicken, ham, macaroni, baked beans, salads, rolls, green bean casserole, brown rice and collard greens. Of course, such a meal must be topped off with sweet potato pie, apple pie, chocolate cake and antacid pills…which, hopefully, were taken prior to the gluttony! Our Christmas traditions take on a whole other dimension as we look forward to shopping for gifts for family and friends, and then heading to Georgia for the holiday. We always take time out as a family to reflect on the “real reason for the season,” the birth of Christ, to count our many blessings and to remember that no matter how hurried the season, we are to also be a blessing by giving to others less fortunate than ourselves. ◆

Because of our busy schedules, in years past Chris and I have let Christmas fly under the radar. We’d usually hang a few decorations and spend Christmas day with our families. But in our household, the holidays came and went without much fuss.

That’s going to change this year, however, now that our son, Brooks, is two. The holidays will take on a whole new light for us. This will be Brooks’ third Christmas, but it’s the first year that he’ll understand what it’s all about, and we can’t wait to share his excitement.

I just know he’ll be elated to meet Santa. Last year, he was afraid of him and had a meltdown on his lap, and the year prior, at three months old, he fell asleep in Santa’s arms. So, this year we’re eager to start new holiday traditions. We’re looking forward to picking out a tree together, reading Christmas stories, watching Christmas movies, strolling through holiday lights, listening to holiday music, baking sugar cookies, and doing all the fun things that kids love this time of year. And of course, we can’t wait to see Brooks’ face light up when he wakes up on Christmas morning to all the presents under the tree. This will be the first of many exciting Christmases to come in our home. ◆

We have a large gathering in our house every Christmas for a gift exchange. We'll probably have 30 people or more. The grandkids always get gifts. This gift exchange is for all of us over 18. We’ve already set a spending limit, because think about it, at Christmas, trying to buy 25 to 30 gifts for everybody is just overwhelming, right? Then when we get together, we make up numbers based on how many people we have, then we each draw a number. Each person can only pick a gift once. Number one picks a gift, and can pick whatever they want, then number two picks, including the gift number one picked. If number two picks number one’s gift, then number one can go pick whatever they want as a second choice. It's keeps going. The gifts are not opened until everyone has picked. You're picking but you really don't know what you're going to end up with. One year, my nephew bought paper towels and put them in a big box. That was super popular, by the way. In the mix, you have some nice gifts, but then you also have something just to make it more fun. As long as it's at that agreed amount, no one cares. From paper towels to blankets to books to dishes to wine glasses, it is so much fun. Then there’s dinner. I always smoke a turkey, and we add some Korean dishes to go along with it. With 30 people, a lot of wine is flowing, and it's chaos, but a happy chaos. ◆

Whether the song originated as country, rock, pop or blues, when she gets through with it, it is pure R&B. She gets inside a song and shapes and twists it to convey all the emotion that can be wrought from the lyric. Her first single, "My Man - He’s a Loving Man," was released on Atlantic Records. She recorded for numerous labels over the course of the 1960s through the 1980s and worked alongside Charles "Honi" Coles, and Cab Calloway in the Toni Awardwinning Broadway musical, "Bubbling Brown Sugar," in the role of Sweet Georgia Brown. She has received the Blues Music Award for Best Contemporary Female Blues Singer, and her most recent CD, “Worthy,” garnered her a third Grammy nomination. Although still not a household name, fans, critics and artists have nothing but high praise for her live show and her interpretive vocal skill. SCL: We have to ask…how did this get started? George Trosset: Surfing Santas started back in 2009. I called my son on December 23 and said, "Tomorrow morning, I need you on the beach, you and your wife, in elf costumes. I'm going to be surfing Santa, you guys are going to be my elves and we're going surfing!" SCL: That explains a crowd of three. How did you get to over 10,000? George Trosset: Someone from Florida Today happened to take a photo, and the next day, in the lower right-hand corner of the front page, there was “Surfing Santa.” During the next year, I'd see friends or talk to somebody and they’d ask, "Hey, what's this Surfing Santa thing?" The following year, we had 19 friends come as Surfing Santas. The next year, they invited their friends and then friends of friends. Last year we had over 600 Surfing Santas and 10,000 people on the beach watching. SCL: We’ve seen the video on YouTube as well. George Trosset: I bought a Mac Mini with a cinema display on Craigslist. I met the guy at a McDonald's in Orlando. This guy was six-foot-eight, and looked like a football player. He says, "What do you know about music videos?" I said, "Nothing, but we're going to make one!" He says, "Maybe I can help you." The song we chose was Meghan Trainor's “All About the Bass,” so we made the video “All About the Beach.” It turns out this guy was an established rapper and had gone to the University of California Berkeley’s school of music! SCL: How many views are your videos getting on YouTube now? George Trosset: We are probably up to about 100,000 on three different videos. In 2015, the TDC (Brevard’s Tourism Development Council) approved and supplied some funding for our event. We spent the money on social media and grew our Facebook friends from 500 to nearly 10,000. Then we were designated a “signature event,” meaning we were locked in for years to come. With the TDC’s help, we’ve been able to grow the event every year. Last year, the TDC engaged their PR agency out of Atlanta to help. They published an article naming us one of the five best places to go for Christmas. Cocoa Beach was number one. SURFING SANTA FOUNDER GEORGE TROSSET about our event; it's all filled with good fun. So far, with our efforts and their help, we have over 450 media placements with a half billion views across all media outlets with a value of about $1.2 million. SCL: The event is a holiday tradition for many people now. Do you have a different charity every year? Or does the money raised just fund the event and keep it going? George Trosset: The Florida Surf Museum is the main benefactor. They've got a small museum in the Ron Jon complex in Cocoa Beach. Also, Mike Rogers’ “Grind for Life” has been one of our beneficiaries, too. SCL: What’s next for Surfing Santa? George Trosset: One of my dreams, one of my goals, is that we'll have Jimmy Buffett play his new hit song, “Surfing Santas” at our event one year. He hasn't written that song yet; I just think that one of these days we're going to get Jimmy to write a song called “Surfing Santa,” and then play it on our beach. This year’s Surfing Santas event is December 24 at 8 a.m. at the end of Minuteman Causeway, Cocoa Beach. Read more at www.SurfingSantas.org.
