Here are a few ways to make the holidays have special meaning for your children: ■
■
■
■
‘Tis Better to Give…
N
othing enhances the holiday spirit more than the joy of giving to others and making Christmas time a memorable experience for those we love, especially for the little ones. Oftentimes, though, we forget the true meaning of this festive time of year and get caught up in the hustle-bustle of commercialism. For this reason alone, it’s critical to teach children the true meaning of the season.
Some parents want to be sure their children get everything they want for Christmas so there will be no tears. This is an unrealistic goal. Don’t get lost in the holiday hype. Don’t try to please everyone. It’s the little things that children remember, like time spent playing a board game. CHILDREN WILL MODEL YOUR BEHAVIOR. IF YOU BAKE FOR THE HOMELESS SHELTER (AND THEY HELP) OR IF YOU VISIT PEOPLE IN THE HOSPITAL, THEY WILL REMEMBER THAT, AND THESE LESSONS WILL STICK WITH THEM. Cook with your kids. Over time, develop a list of favorite Christmas recipes and make them every year.
■
■
■
■
CHILDREN CAN HELP WRAP PRESENTS – AND IT DOESN’T MATTER IF THEY AREN’T PERFECT. WRAPPING CREATES A SENSE OF EXCITEMENT AND IS A GOOD TIME TO TALK TO ONE ANOTHER.
■
Children should be encouraged to make their own wish lists, but to also describe why they want each item, giving parents the chance to modify expectations before the fateful unwrapping. Encourage children to make New Year’s resolutions and share your own hopes for the coming year.
START YOUR OWN TRADITIONS
• Go to the Nutcracker, a tree
lighting ceremony or drive around to see Christmas lights.
• Open an Advent calendar. • Go to church. • Let kids choose Christmas music. • Bring out the ornaments and
Making gifts is a good way to give kids a deeper sense of Christmas. Going to the craft store, planning a project and then making things is a good time for parents to give kids extra attention.
reminisce about each one.
• Give kids a disposable camera and put them in charge of picture taking.
■
The best time to consciously create new traditions is when the family has been touched by death, divorce or some major change. Even if it only means having dinner at a different time, try to differentiate between the past and now.
MOST IMPORTANTLY, INCLUDE CHILDREN IN AS MANY HOLIDAY EVENTS AS POSSIBLE.

Letter from the
EDITOR Hi everyone,
Take a deep breath in and let it out. Can you smell it in the air? Christmas time is here and the faint sounds of the season are heard any which way you travel. It’s funny how that perfect mix of festive ingredients creates something magical this time of year. It starts with a dash of cinnamon, a sprinkle of dancing sugarplum fairies, Nat King Cole’s rendition of “The Christmas Song,” and an overwhelming supply of twinkle lights. Now you’re all set and completely enthralled in a winter wonderland. Sure. Our mild temperatures may not bring a white Christmas, but Bing Crosby has that covered already. Read ahead. We’ve got some stories guaranteed to put even the Grinch in a holly-jolly mood, from recipes and gift-giving tips to fun events happening on the Space Coast. I don’t know about you, but this time of year brings out the kid in me. For those of you who know me, my home and family gatherings tend to be a mix of that found at the Griswold’s and Whoville, all the way from Thanksgiving to New Year’s. My childhood Christmases were spent within a very small family filled with love, which, at a very young age, left me with an important realization: to recognize that blessings were a gift and to find joy in whatever the circumstances may be. For some, Christmases are elaborate, while for others, pure simplicity. Many are filled with loved ones, while often, the time is spent missing them. The trick is finding your own Christmas in those instances. Whatever place you’re at in life this holiday, ask yourself what Christmas means to you and be sure to embrace it.

ave you ever been told your iron levels are elevated, you have “thick blood” or your hemoglobin is too high? If so, these can all be remedied by a simple act that doesn’t involve taking any drugs — donating blood. My husband and I have been regular blood donors for years. My mother is a retired registered nurse who supervised blood mobiles for the Red Cross. We became familiar with the process during those years, but at the time we didn’t realize how the benefits of donating are just as many for the donor as the beneficiary. As a flight attendant, I’m at high altitudes on a regular basis. It’s why I try to avoid any type of medical test that involves radiation, choosing alternative methods whenever possible. In addition, due in part to my job, my hemoglobin levels tend to be on the high side; my blood viscosity tends to be on the thick side. Too much iron in the blood can oxidize, and oxidation can lead to cardiovascular disease and stroke. Because of these factors, my integrative medicine doctor suggested I donate blood.

There are many places to donate blood; I use OneBlood Donor Center because it’s the most convenient for me. One can only donate every 6-8 weeks. For those of you who are able to, donating blood is healthy. And how often can you say that while doing something healthy for yourself you’re also helping others? It’s a win-win. So, in this season of giving, consider giving the gift of life. Donate today! ◆

Our perspectives of the holiday season vary greatly, but the common thread seems to revolve around warm-hearted feelings — the kind gained from giving support and acts of selflessness. Giving to something outside ourselves provides a unique sense of fulfillment and highlights what has been created in our own lives through someone else’s act of giving. Through the winter months, our hearts are focused on thankfulness, and as the year ends we reflect on what we have accomplished. Fortunately, the Space Coast region has an ample supply of opportunities to help spread the Christmas spirit. 18 : spac ec oa st l iv in g
Surfing Santas
Not just a time for fun in the sun. Proceeds benefit the Florida Surf Museum and Grind for Life. Grind for Life was founded by Mike Rogers, a competitive skateboarder, who beat cancer twice. He created Grind for Life to provide financial assistance for families forced to travel far for their medical treatment.
Space Coast Lightfest
The Space Coast Lightfest showcases more than 3 million Christmas lights. All proceeds go to the Boy Scouts of America. This year the lightfest also partnered with Toys for Tots. Attendees who bring a toy to contribute to the drive will receive a $2 discount on the entry price.
23rd Annual Reindeer Run
The annual Running Zone Reindeer Run is a great way to get in some holidaythemed exercise. A 5K in which holiday costumes are encouraged, the event benefits the Brevard County Sheriff’s Office Charities, Inc.-YDC Program. This is the newly formed combination of the Police Athletic League, Public Safety Charity and the Pet Posse.

at Melbourne Square By Mallorie Ann Ingram
I
t is beginning to look a lot like Christmas at Melbourne Square, but not just because of the holiday music being played throughout the festively decorated shopping center. Additional efforts are being made to put shoppers in the holiday spirit like never before.
“This is a thriving mall,” said Lesli Smith, director of marketing. “We have everything people need to shop for the holidays, and Melbourne Square adds significant economic impact to Brevard County, but we also want this to be a place where folks can gather together with family and friends.”
22 : spac ec oa st l iv in g
Various events will be held at the mall this holiday season, many dedicated to showcasing talent and supporting local charitable organizations. For starters, all money tossed into the mall’s indoor fountain is donated to local charities. “It’s truly a great shopping option during the holidays with some exciting upcoming events” Smith asserted. The season is positively jam-packed with fun, starting with a PJ party with Santa on November 30, Pet photos with Santa on December 2, and Sensitive Santa on December 9. “I’m very excited about this,” Smith affirmed. “Sensitive Santa is a compassionate event where children with special needs can enjoy a time-honored visit with Santa, scheduled before normal retail hours offering a quieter, calmer and sensory-friendly experience.”
“For our annual Holiday Showcase, we reached out to everyone in the school district — these are our brothers, sisters, kids, grandkids — to come to Melbourne Square to showcase their talents,” Smith said. “Through this showcase, we’ll have many performances to ‘decorate’ the mall with the sights and sounds of the season, helping shoppers and visitors get into the spirit of the holidays.”

Where Dance Dreams Come True World-Renowned Dancers Bring “The Sleeping Beauty” and the Culture of Ballet to Melbourne By Carrie Stevenson
F
or internationally-acclaimed dancers and Melbourne City Ballet Theatre (MCBT) artistic directors Artem Yachmennikov and Ekaterina Vaganova-Yachmennikova, the dream was to bring a ballet theater to a city that held potential with local, talented dancers as well as residents interested in culture and creative expression, but lacked the resources to regularly attract professional ballet companies and world-class productions.
That city was Melbourne. “We really felt the amazing community support and strong desire for a year-round company of national merit, one that draws dancers from all over the area regardless of their dance school,” explained Vaganova-Yachmennikova. “There was a niche that needed filling as Melbourne continues to grow, and the desire for cultural and artistic opportunities grows with it.” After stints for Yachmennikov as a first soloist in the world-famous Bolshoi Theater, a soloist at The Mariinsky Theater in St.Petersburg, and a principle dancer at the Dutch National Ballet and the San Francisco Ballet — one of the 24 : spac ec oa st l iv in g
largest and oldest professional ballet companies in the United States — he and his wife, VaganovaYachmennikova, decided to open the Melbourne City Dance Center in 2017. Vaganova-Yachmennikova herself is a three-time world champion ballroom dancer and has been a professional teacher on “Dancing With the Stars” in Italy for five seasons and choreographer on “So You Think You Can Dance” in Russia. SINCE FOUNDING THE MELBOURNE CITY DANCE CENTER, AS WELL AS A NOTFOR-PROFIT ORGANIZATION, MELBOURNE CITY BALLET THEATRE, THEY HAVE COMBINED THEIR EXTRAORDINARY CREATIVE ABILITIES WITH THEIR TECHNICAL PRECISION AND TEACHING EXPERTISE TO GIVE LOCAL DANCE STUDENTS WORLD-CLASS INSTRUCTION. “I feel lucky to have danced with the greatest ballet companies internationally, worked with many of the best teachers and choreographers," said Yachmennikov. "It’s helped me as a teacher in how I explain information to dancers of all levels, which is helpful when you’re working with young students as well as professionals.”
The MCBT board of directors aims to consistently provide projects that bring ballet and a culture of dance arts to the center of community life, both for enjoyment and in ways that give back to the community, including scholarships and educational outreach programs for underprivileged youth and senior citizens. MCBT auditions were opened to the entire community, and the selected cast now includes 70 of the most talented dancers in Brevard who will have the opportunity to perform with a professional ballet company in their upcoming production of “The Sleeping Beauty.” THE MELBOURNE CITY BALLET THEATRE, ALONG WITH THE NATIONAL BALLET THEATER OF ODESSA AND SATELLITE INSTRUMENTAL MUSIC, WILL PRESENT “THE SLEEPING BEAUTY” AT THE MAXWELL C. KING CENTER FOR THE PERFORMING ARTS ON DECEMBER 28 AT 7 P.M. AND DECEMBER 29 AT 2 P.M. “This will be a purely classical ballet production, with authentic choreography, beautiful set and costumes made in Russia, and exquisite music by Tchaikovsky played by a live symphonic orchestra as in the best theaters of the world,” Vaganova-Yachmennikova said. “It’s a tremendous opportunity for our local dancers to perform with 55 of the brightest ballet stars of the legendary National Ballet Theater of Odessa in their first visit to the United States. It’s going to be an extraordinary performance.” ◆

Any changes to your medical history? with Derek Chenet
Dr. Derek Chenet achieved his Doctor of Dental Surgery at the Columbia University College of Dental and now works alongside his father and fiancĂŠe, Dr. Veronica Yu, at Dental Excellence Melbourne.
28 : spac ec oa st l iv in g
It is a routine question dentists ask patients. We document these changes, get a medical clearance if necessary and treat the teeth. Not very interdisciplinary. How many times have you been at your doctor’s and he has asked,
“Any changes to your dental history?” I am betting not many. This is a shame, because both the medical and dental fields would benefit from improved collaboration between our siloed health industries. This collaboration is important because there are links between the mouth and systemic issues, opportunities where dentists can serve as a first line of defense in catching medical issues early, and ways dentists can benefit patients with long-standing medical issues to improve their overall health.
THERE IS GROWING EVIDENCE OF A LINK BETWEEN SYSTEMIC HEALTH OF THE BODY AND OUR ORAL HEALTH. Periodontitis, or gum disease, is a condition we deal with daily in dental practice, but it may have a greater significance than most think. Periodontitis is more common in patients with diabetes due to an increased tendency for inflammation and poor healing. It has been shown treating gum disease can actually improve a patient’s level
of diabetic control. Furthermore, periodontal disease has also been shown to be correlated with an increased risk for heart disease and strokes. Periodontitis has even been shown to be correlated with low birth weight in infants when left untreated in expectant mothers. These are just a few of the links between systemic and oral health. Dentists can serve as a referral source to help discover certain conditions early. Head and neck exams and oral cancer screenings are a routine part of dental treatment. Dentists are some of the first people who can find the odd mole, palpate nodules on the neck, or notice a white spot on the tongue that are signs of something not so benign. Some of the first evidence of conditions like gastric reflux, GERD and obstructive sleep apnea are seen in the oral cavity through erosion of our teeth surfaces or evidence of grinding. Finding potential signs of conditions early and referral to the appropriate physician for further evaluation and treatment can make a huge difference in patients’ lives.
There are ways dentists can help physicians optimize their patient care. In certain parts of the country, gastroenterologists are called in to hospitals to see patients with impactions of under-chewed food, swallowed whole, stuck in their esophagus. Patients with a long history of sleep apnea and GERD have seen their teeth erode and grind away over the years. Xerostomia, or dry mouth, is a common side effect of many medications, and patients everywhere are suffering with recurrent cavities and decay. Through dental treatment, like replacement of missing teeth or restoration of broken or decayed teeth, dentists can help physicians improve the overall health and wellbeing of their patients.
THERE ARE MYRIAD OPPORTUNITIES FOR DENTISTS AND PHYSICIANS TO COLLABORATE TO BENEFIT OUR PATIENTS; WE JUST HAVE TO LOOK. ◆

Understanding Real Estate as an Investment Cap Rate: Measures Profitability over time - Allowing the investor to distinguish the difference in profitability between similar properties, in the market, as they compare to one another. Only Net Operating Income and Purchase price are factored in this calculation. IRR - Internal Rate of Return - Measures the long term value, a property generates, during the time the investor owns it. Through calculating annual cash flows we can determine how fast your investment is growing and how quickly you can obtain your initial investment back. Location - Understanding the population and growth rate, within close proximity of your investment, can greatly aid in an investors success. Consumer Demographics will assist in projecting rental likelihood & price ranges. Vacancy Rates - Obtaining information on vacancy rates, near the potential investment, is pivotal. Lower vacancy rates, indicate strong demand. Before deciding what to buy, become knowledgeable in what type of properties are renting nearby! Success Rate in Property Investments is highly dependent on comprehending the risks. The goal is to mitigate them with extensive market information & property history!

The size and scope of the service team at the Space Coast Business Realty Center is impressive. And of course, a readily-available mortgage lender can answer questions on the spot about refinancing or help clients feel comfortable making an offer on

Roofs for Life Hippo Roofing is making sure your roof is always ready for visitors, providing the highest quality materials and workmanship in the business. By Jack Roth
Your roof is often the least-thought-of but most important part of your home. A healthy roof protects your investment in your home, increases its value, guards against costly hidden damage and saves money on heating and cooling. A permanent, energy-efficient roofing solution is an investment that pays for itself over and over again. Melbourne’s Hippo Roofing has taken this to heart and is offering lifetime roofing solutions to Space Coast residents. “WE KNOW CONSUMERS HAVE MANY CHOICES WHEN IT COMES TO CHOOSING A ROOFING COMPANY, SO WE’VE DIFFERENTIATED OURSELVES BY CHOOSING TO USE ONLY THE BEST ROOFING MATERIALS AVAILABLE,” said Brian Stillwell, sales manager. “Our roofs are installed by professionals who know and love their craft. Our goal is to provide our clients peace of mind.” A multi-generational, family-owned roofing company with a long history of providing quality work and exceptional customer service, Hippo Roofing also offers free maintenance and inspections, various financing options and a transferable lifetime warranty on workmanship and materials. Stillwell stands by his product and is confident that barring a natural disaster, a new Hippo roof will be the last roof you will have to buy for your home.

A BUILDER FOR YOUR
“WE TAKE PRIDE IN THE FACT WE’RE A DIFFERENT KIND OF ROOFING COMPANY,” HE ADDED. “WE NOT ONLY PROVIDE A QUALITY ROOF, BUT WE ALSO WORK HARD TO ESTABLISH ONGOING RELATIONSHIPS WITH CUSTOMERS SO WE CAN GIVE THEM PEACE OF MIND.”
EXCEPTIONAL
LifeStyle
The company specializes in two types of roofs. If you are looking for a roof to protect your home and improve its energy efficiency, Hippo’s DefenderRoof is the way to go. Metal roofing is the best way to ensure your home is protected when the extreme Florida heat, strong hurricane winds and reindeer hooves come to bear. Energy Star-rated, DefenderRoof is a paneled metal roofing system with a natural metal finish that can be upgraded to 10 different colors. It can also be manufactured in aluminum for oceanfront installation in order to prevent corrosion or rust from salt water. The slogan “Metal Roof Same Price as Shingles” was trademarked by Hippo Roofing based on this product’s great affordability. “OVER THE LAST 10 YEARS, THERE HAS BEEN A TREND TOWARDS METAL ROOFS BECAUSE THEY PRETTY MUCH LAST FOREVER,” EXPLAINED STILLWELL. “THE SPACE COAST ISN’T EASY ON ROOFS, WITH THE HEAT, HEAVY RAIN AND WINDS, AND SALT WATER, SO MORE AND MORE PEOPLE ARE REALIZING A METAL ROOF IS A GREAT INVESTMENT. IT’S BASICALLY A ONE-TIME PURCHASE.” For those who want a permanent roof solution but cannot afford metal, ShieldRoof is a durable and dependable asphalt shingle roof that comes with a 50-year, non-prorated, lifetime labor and material guarantee from the manufacturer.
LIFESTYLE HOMES IS THE LEADING BUILDER OF SOLAR-POWERED HOMES O N T H E S PA C E C O A S T
“Whether you go with the metal or asphalt option, the quality is top-notch,” asserted Stillwell. “We came up with these specific solutions by looking at the weak spots in roofs and getting rid of the kinks. We’ve been doing this awhile, we love what we do and we take it very seriously, which is why we wanted to create the perfect lifetime roofing options for our customers.” ◆

THE
SPECIALISTS Anthony and Lisa Bogo of Studio Tile & Stone By Eric Wright
W
e live in a world of specialization. Regardless of the field, we place the greatest value not on the generalist, whether in medicine, technology or sports, but on the one who is recognized as the expert in that specific arena. That is the only way to describe Anthony and Lisa Bogo. They do not sell carpet, and they do not do wood or vinyl flooring; they are masters at tile and marble. The infinite variety, marvelous textures and transformative impact of tile has captured their imagination, much like color captured French impressionist Claude Monet.
The Connection
Anthony Bogo, who grew up in Naples, Italy, came to this country and, after serving in the Navy, began working for a flooring company while in college. He moved from installation to sales and then came face to face with something that connected, like a primal attraction, to his childhood: ceramic tile. Bogo recalled, “The Basilica, where I served as an altar boy, was beautiful. It had a large open courtyard, which was exquisitely landscaped with fruit trees and grape vines. Suddenly, I remembered the colorful and ornate tile that covered the many columns and stone benches. One of the tile patterns from that church is part of the logo of Studio Tile & Stone.
Santa Chiara Cloister Collonade, Italy 44 : spac ec oa st l iv in g
From His Homeland to Your Home
Italy has always been to tile what Silicon Valley is to technology. Not only is it where most of the innovations in manufacturing tile have been developed, it is also where most of the design trends originate. Bogo soon became a manufacturer executive, importing and distributing high-end Italian tile products throughout the United States. He has made hundreds of trips to Italy, as the desire and demand for tile in the United States increased over the past 30 years. For Lisa Bogo, Anthony’s wife, the love for tile came from an aesthetic awakening. An art and design major, she worked for a time in the corporate world, but when she went to work for a tile company, everything came together. “For me, the client’s space became the canvas, whether it was the bath, the entryway or the kitchen,” she acknowledged. “It was the perfect blend of beauty and practicality.” ⊲ decem b e r 2018 : 45
The First Thing They See
The couple decided to move from wholesale distribution to becoming more hands-on with clients and launched Studio Tile & Stone. Soon, Lisa gained a reputation for working with interior designers and homeowners to achieve unique customized spaces, which were carefully adapted to the client’s budget, and Anthony became known for having connections with the best tile manufacturers in the world. Today their expertise is sought out by designers, architects, developers and homeowners to help move their dreams into reality. Recently, they became the exclusive provider for the Oceana Oceanfront condo in Satellite Beach, with its two 10-story towers and 108 residences. For the Bogos, tile has always been a creative passion. They understand that people first look down when they cross the threshold into a home or office; the flooring frames the space. In a bathroom or kitchen, tile makes the useful and necessary a place where you want to linger.◆ Studio Tile and Stone is the exclusive provider for the Oceana Ocean Front Condominiums in Satellite Beach.

Granite vs. Quartz Tech 101
Granite: monte bleu. Cabinets: Fieldstone inset in navy. Granite is natural stone mined from quarries all around the world, cut into slabs, transported and polished. While very hard as a natural stone, it is porous and risks staining, so it needs protection with a sealer. Reapplication of sealers depends on the sealer used and the chemicals it comes in contact with during daily use (acids will deteriorate sealers). Granite is a precious resource that has been used in construction for thousands of years. Dark granite is naturally more dense than light granite and thus is more stain resistant. Quartz is the most abundant and hardest mineral on Earth. Quartz countertops are a man-made product using 95 percent natural quartz crystals, which are mined, ground and polished into small grains, then added to polymer resins, pressed and baked in ovens producing quartz slabs in a variety of colors and designs.
Originally developed in Italy in the early 1960’s, quartz tops hit the American market by storm in the 1990’s and have no sign of slowing. Quartz tops are as hard if not harder than granite, but are naturally more stain resistant (less porous), and require less maintenance. On average, granite tops can be more economical than quartz. However, several factors impact the cost. Quartz prices will vary by company based on their manufacturing processes, slab sizes and characteristics. Size of the project, seam locations and characteristics such as veining in the slab will also impact the project cost, so each project should be carefully designed. Choosing granite vs. quartz is a personal preference, and all factors, including cost, characteristics and maintenance should be considered to ensure the best product is used for the project. J&J did such an amazing job with our remodel project. Our project involved removal of a wall to open the floor plan, re-wiring the kitchen, adding recessed lighting, re-flooring nearly the entire house and installing new kitchen cabinets and counters. Dawn directed the entire job, and, after listening to what we were looking for, narrowed our choices. The number of options, otherwise, was overwhelming. The final product turned out fantastic and even under budget. We plan to re-model our bathrooms next, and J&J will certainly be involved. — Matthew & Heather Ricks

‘Tis Better to Give‌ 66 : spac ec oa st L IV I N G

othing enhances the holiday spirit more than the joy of giving to others and making Christmas time a memorable experience for those we love, especially for the little ones. Oftentimes, though, we forget the true meaning of this festive time of year and get caught up in the hustle-bustle of commercialism. For this reason alone, it’s critical to teach children the true meaning of the season.
Here are a few ways to make the holidays have special meaning for your children: ■
■
■
■
■
• Go to the Nutcracker, a tree
lighting ceremony or drive around to see Christmas lights.
• • • •
Making gifts is a good way to give kids a deeper sense of Christmas. Going to the craft store, planning a project and then making things is a good time for parents to give kids extra attention. Children should be encouraged to make their own wish lists, but to also describe why they want each item, giving parents the chance to modify expectations before the fateful unwrapping. Encourage children to make New Year’s resolutions and share your own hopes for the coming year.
START YOUR OWN TRADITIONS
Open an Advent calendar. Go to church. Let kids choose Christmas music. Bring out the ornaments and reminisce about each one.

Gift Etiquette Your Guide
For The Holiday Season
It’s easy to get overwhelmed when shopping for Christmas gifts. Most of us have a set of rules about gift giving that determines what is bought, how much is spent and who will be the recipient. These rules are subject to interpretation, and it’s common to find friends and family with different opinions. If your gift-giving rules are not in focus, it’s time to re-evaluate and be clear. Start by remembering why you choose to give to others. Define this and you will avoid those midnight runs to the store, overspending and the pressure that comes during the holidays. The spirit of giving is more important than the gift itself.
Gift for Gift Every year it's likely you'll encounter someone who buys you an unexpected gift, and you'll feel like it needs to be reciprocated. Truth is you don’t have to, but if you believe the opposite, have a few “just in case” gifts on hand. A heartfelt “thank you” note would also go a long way.
Gifts of Equal Value The belief that gift exchanges must be of equal value can lead to conflict since everyone assesses value differently. Feeling obligated to buy a gift of certain value or the need to buy more to make up the difference takes the joy out of giving. Remember to value the reason you give. That’s more important than how much was spent or what was received in return.
Family Traditions When the family is smaller, it was fun to exchange gifts with your brother’s kids, but now that they’re in their 30s and have kids of their own, does the tradition continue? If you believe it should, check to see if the other
parties involved share the same view. Chances are they may not, so it may be time to start a new tradition. In lieu of presents, some families will exchange ornaments, toys for their pets, conduct a White Elephant exchange or take a trip together.
Tipping It’s custom to give a tip (or gift) to those who provide year-round services. From the mail carrier to the personal trainer, pet groomer and housekeeper, holiday tipping is truly about saying thank you. Before you start giving every service provider cash, here are some things to consider: • Budget • The quality and frequency of the service • Your relationship • Length of service Don’t believe that if you don’t tip you won’t get good service. If you think you’re receiving poor service for this reason, consider changing companies or speak to a manager. ◆ decemb e r 2018 : 69
Gift Ideas for the
I
t is common courtesy to bring a gift for the host or hostess when invited to their home for a dinner party or fun gathering, which happens in abundance during the holidays. No need to show up empty handed! SpaceCoast LIVING found four fantastic and innovative gifts any host or hostess would greatly appreciate, especially during the most wonderful time of the year. 70 : spac ec oa st L IV I N G
Holiday Host or Hostess 1
Home-Made Gourmet Sugars
This is a gift your host or hostess will know was made with love. Adding different flavors to regular sugar will liven up any beverage or baked good, creating unique flavors one may have not had the pleasure of trying before. Mix sugar with blooms such as rose petals, geranium leaves, vanilla beans, dried orange peels, coconut flakes, lavender or hibiscus. You can also do a sugar mix with other spices, such as cinnamon, espresso powder and cocoa powder.
MIXING SUGAR WITH FLOWER BLOOMS AND SPICES Feel free to play around mixing different blooms or spices together in a single jar for new and different flavors, or mix separate batches of each to give as a set of different sugars infused with one flavor. Combine 2 tablespoons of the desired spices, dried organic flower blooms, peels or the vanilla beans with 2 cups of sugar in a jar. Seal the jar and allow for the spices or blooms to infuse the sugar for about one or two weeks, shaking the jar every other day to create maximum flavor.
When the sugar is infused, you can strain out the blooms and peels or you can grind them finely into the sugar using a coffee grinder, to add more zest in baked goods and in beverages. You can add food coloring to bring out the color of the bloom, such as purple for the lavender sugar, orange for the orange peel sugar and so forth. The finely ground hibiscus sugar turns a pretty pale pink on its own. Decorate the jars and add a ribbon or bow and give as a wonderfully creative gift.

Bar Tools Should your host or hostess have a bar in their home, they will certainly appreciate a collection of bar tools as a gift. Tools include cocktail shakers and strainers, citrus pressers, corkscrews, wine bottle stoppers, an ice bucket, cocktail napkins and coasters with a design that fits his or her style. You can buy bar tools prepackaged or wrap them yourself in cellophane, tie with a bow and place in a gift basket. For an added gift bonus, you can get them a book about mixology and/or the art of making cocktails.
Bringing flowers is always a nice and thoughtful gesture. However, they can be an unexpected annoyance for the host or hostess in various ways. For starters, they could have an allergy to the flowers. They would have to take time from greeting everyone to find a vase to put them in and cut them to size, and the flowers may not match their dĂŠcor or have a proper place to be set in their home during that time. Avoid all these faux pas by giving them a gift certificate to their local florist. That way, they can pick out flowers they love and can match them to the desired dĂŠcor of the room where they wish to place them.
Oils, Dressings and Marinades Stores such as From Olives and Grapes in Cocoa Village offer countless flavors of extra virgin olive oils and balsamic vinegar dressings for salads, marinades, and even toppings on desserts. Choose oils and vinegars for all different taste buds that range from classic blends to unique fusions. Your host or hostess will be impressed with a gift to liven up their meals, especially during the holidays when they are getting creative in the kitchen, whipping up something delightful for guests like yourself. â—† dece mb e r 2018 : 71

Yorkshire Puddings By Tanya Mutton
Ingredients 100 g/3½ oz plain flour ¼ tsp salt 3 large free-range eggs 225 ml/8 oz milk 4 tbsp sunflower oil
A British Classic Recipe
Directions: Preheat oven to 400F. Mix the flour and salt together in a bowl and make a well in the center. Add the eggs and a little of the milk. Whisk until smooth, then gradually add the remaining milk. This can be done with a wooden spoon, but is easier with an electric hand-held whisk. Pour the mixture into a jug. 72 : spac ec oa st LI V IN G
Measure a teaspoon of oil into each hole of a 12-bun tray, or a tablespoonful into each hole of a 4-hole muffin pan, or 3 tablespoons into a roasting pan. Transfer to the oven for 5 minutes, or until the oil is piping hot. Carefully remove from the oven and pour the batter equally into the holes or the roasting pan. Return the batter quickly to the oven and cook for 20–25 minutes (35 minutes if making the Yorkshire pudding in the roasting pan), or until golden-brown and well-risen. Serve immediately.

Apple Pie
with a twist By Cindy Kane
Ingredients:
Graham cracker crust
Pie Filling: 6 cups peeled and thinly sliced apples soaked in water with some lemon juice (I use 6 different types of apples to add interest to the flavor) ½ cup sugar 1 tbsp flour 1 tsp cinnamon
Crumble Topping: ½ cup flour ½ cup packed brown sugar 1 tsp cinnamon 2 tbsp butter
Directions: Preheat oven to 375 ° Drain the apples. Mix all dry filling ingredients and toss apples in the mixture. Add to the graham cracker crust – the apples will be an overflowing heap. Set aside. Mix the dry ingredients for crumble topping. Cut in the butter until the mixture resembles coarse crumbs. Sprinkle over the apples. Cover the edge with foil. Bake for 25 minutes. Remove foil and bake 25-30 minutes more, or until apples are tender. I usually put the pie plate on a baking sheet to catch any overflowing drippings while it bakes. I like to serve warm with a scoop of vanilla ice cream. This works great with no crust as well.

A Legacy of Leadership
2018 Business Leader of the Year
ROBERT CABANA Director of NASA’s Kennedy Space Center
The substance of true leadership is often manifest in times of transition and crisis, as we see in individuals like Lincoln, Churchill and Rosa Parks. Their leadership embodies that rare combination of vision, character and courage, which realistically assesses the challenges that must be faced, while also seeing those challenges as potential opportunities. They are the ones who either birth, or perhaps preserve, something vital to all of us.
R
obert “Bob” Cabana, the director of NASA’s Kennedy Space Center (KSC), has guided the spaceport through one of the most critical transitions in its history. However, he is also quick to point to his team and the contributions of the many, instead of the one, in setting the stage for the center’s future. But that kind of honest humility is why, for more than a decade, his leadership has been invaluable. He lives by what Ken Blanchard spoke of when he said, “None of us is as smart as all of us.” Cabana put it this way: “I truly believe in servant leadership, and this is probably the number one attribute I learned in the Marine Corps. If you put the welfare of the team above your own, you will be successful. In other words, if you take care of your people, your people will take care of you.”
The Phoenix Not long after he became director, this region realized the space shuttle program would actually be retired, and Cabana’s elasticity, vision and cool-under-pressure test-pilot experience have guided the center’s evolution. For the first time since the creation of NASA, our capacity to put humans into space went through a hiatus, with no clear end in sight.
The predictions were dire, and morale, not only at KSC but across the county for America’s future in space, was low. Now the space industry has not only been revived, it has been rising like a phoenix. Commercial space, with visionary leaders like Elon Musk and Jeff Bezos, are redefining how payloads, including human payloads, can be delivered. Once again space, with its mystery and limitless potential, has captured the popular imagination. That potential and possibility is something Cabana never lost focus on. “I was director of the Stennis Space Center before I came here,” he explained. “Though it’s much smaller than Kennedy or Houston, it’s unique in that there’s more than just NASA there. I learned what a multi-user center could be like, which helped crystallize for me what a multi-user spaceport, which is what we’re becoming, could be like.”
“THE KEY TO LEADERSHIP IS TRUST, AND TO HAVE TRUST YOU HAVE TO HAVE INTEGRITY WITH YOUR TEAM. IT TAKES A LOT OF TIME TO BUILD TRUST, BUT IT CAN BE EASILY LOST.” ⊲
The Path to Leadership
Growing up in Minnesota, Cabana dreamed of being not only a pilot, but a test pilot, while honing his work ethic on the very terrestrial tasks of helping on a family farm. A good student and a voracious reader, Cabana earned an appointment to Annapolis. “Attending the Naval Academy really opened a completely new horizon for me,” he said. “Looking back, I lived a pretty sheltered life up until that point, which is when I began to tap into what you might call my latent leadership abilities. The academy is where I really grew up.” After graduation his eyesight initially prevented him from becoming a pilot. Undeterred, he distinguished himself for three years as a naval flight officer, while he continued to petition for flight training, which eventually was granted. “Flying was everything I wanted to do; it just came naturally to me,” Cabana said. Earning his wings as the top Marine in flight training, he looks back on postponing his dream as a positive, not a negative, experience. Perhaps one that would give him the resolve necessary for the next major opportunity — becoming an astronaut. “In 1980 I was initially turned down for test pilot’s school — they weren’t looking for A-6 pilots, but six months later I got in,” he remembered. “Then I saw in 1984 that NASA was looking for its third group of shuttle pilots and I thought, ‘I can do this.’ I met all the criteria, I even went down to Houston for an interview and thought, ‘This was it!’ I just waited for the call, which I got, but it was that I didn’t make it. In 1985 however, I was selected. I didn’t get into flight school, test pilot training or astronaut training on the first try; it was a lesson in perseverance.”
From Commander to Director
Cabana enjoyed the collegium of astronaut training, as well as the opportunity to work with and learn from worldrenowned experts in their fields. “I did four very unique space flights (STS 41, 53, 65 and 88) and enjoyed every aspect of them. When you’re passionate about something, the training, the preparation, the study is all exciting and stimulating,” he asserted. Speaking of his flights as an astronaut he said, “I was never scared during a lift-off. Though I remember the first time I went into the Shuttle simulator and looked at all the gauges, dials and switches, I thought, ‘How will I possibly learn all of this?’ But you take it one step at a time, one system at a time and eventually you master it,” he explained. He then added, “Leading an astronaut crew is like being a member in a family. You don’t get to choose your family, and every family has its own peculiarities that need to be taken into consideration. So you learn to work with everyone to help ensure mission success. You expect people to make mistakes, we all do, but you can learn from them and rise above them. Later, I was chief of the astronauts’ office; imagine leading 115 Type A personalities?”
“ALMOST UNIVERSALLY, EVERYONE AGREES THAT WHAT WE ARE DOING HERE IS BRINGING PEOPLE TOGETHER AROUND A VERY POSITIVE GOAL.” It is hard to say which was the most challenging and rewarding position Cabana has held. What is interesting, though, is after he sought to become an astronaut, he never actually pursued another position; they all came to him. In 2007 he became the 10th director of the Kennedy Space Center.
Reaching for the Future It is impossible to reach for what can be in the future if you do not let go of your past. It was a lesson that was difficult for many at KSC to embrace. Cabana recalls, “In my very first all-hands meeting I had after taking over as director, I told everyone we needed to start preparing for the retirement of the shuttle. A lot of folks didn’t want to hear that. It took time for it to sink in, especially when the Constellation program was canceled.” Cabana believes the future lies in enabling commercial operations. “We’ve been moving towards this multi-user spaceport,” he said. “We started charting where we wanted to be and reviewed and reiterated it continually over the years.” Has it been challenging? Without a doubt, but Cabana freely admits, “The difficulties I’ve encountered over the last 10 years are nothing compared with having to go to the families of the Columbia’s shuttle crew and tell them their loved ones would never return.” Experts say it takes three to five years and constant pressure to change the culture of an organization, and without the pressure it will return to where it was. Bob Cabana is determined to keep up the pressure on a team that one day may put the first humans on Mars. ◆

Without a Heart, it’s just a machine. So in 1971, a little Heart built a different kind of airline—one that made sure everyone could fly. Everyone has important places to go. So we invented low-fares to help them get there. To us, you’re not 1A or 17B. You’re a person with a name, like Steve. Here, we think everyone deserves to feel special, no matter where you sit or how much you fly. And with all the places we’re going next, we’ll always put you first, because our love of People is still our most powerful fuel. Some say we do things differently. We say, why would we do things any other way? Without a Heart, it’s just a machine.
JOHN MURRAY CEO Port Canaveral
He could be described as pragmatic, yet visionary — a leader who honed his skills as a ship captain and maritime executive who also understands the importance of listening and building consensus, not just making command decisions. It is a set of skills that has garnered John Murray the respect of both industry and regional leaders since he took the helm at one of the Space Coast’s most recognized and valuable resources, Port Canaveral.
S
trategically positioned at the junction of Florida’s north-south and east-west transportation corridors, the potential for the multi-purpose port continues to evolve and adapt to market demands and opportunities. In almost three years in the role, the 40-year industry veteran has helped shape the future of the port, while providing a focus and well-reasoned approach to what those goals should be and how to get there. Speaking of the port’s cargo business, Murray said, “We’re strong on many of our commodities, specifically those necessary to sustain the construction boom, like lumber and aggregate.” He added that the port’s oil and gas imports are equally strong, noting that automobile imports have also done well and seem likely to continue in the future due to the port’s location.
The Golden Goose
Forecasters see the port’s cruise volume doubling over the next 30 years to nearly 9 million cruise vacationers, necessitating the construction of three new terminals, while also completely renovating several of the existing ones.
“THE CRUISE INDUSTRY IS ALWAYS LOOKING FOR NEW AND INNOVATIVE IDEAS, AND FLORIDA AND THE CARIBBEAN REPRESENT THE LARGEST CRUISE MARKET IN THE WORLD,” MURRAY SAID.
Adapting to the Role
The best leaders continually evolve and adapt to the leadership challenges the position demands. As Anthony D’Angelo once said, “Become a student of change. It is the only thing that will remain constant.”
Murray has always been realistic about how to leverage the port’s cargo assets for the best return, but he keeps his focus on the real prize, which is the burgeoning cruise industry. “There was a time when cruise ships were a leisurely means to get to a destination,” he explained. “Now, the ships are so spectacular, they’re the destination in themselves, and even larger and grander ships are being built.”
Moving from ship’s captain to shipping executive and then to a position where every major decision requires nearly unanimous consensus and often may involve local, state and federal governmental support, Murray admits his role has been challenging.
With his characteristic guarded optimism, Murray described the port’s 30-year plan as “a vision document — a high-level blueprint that looks at the port’s future with information that we know today.” Though full of opportunities, he emphasizes that “not every project in this plan will become a reality,” but there is enough that will become a reality that it dizzies the imagination.
Many important initiatives, like replacing the bridge on S.R. 401, take years to plan and complete.
“I was accustomed to making executive decisions based on careful due diligence and immediately moving to implementation,” he said. “Now, that’s just the beginning of the process.”
Murray’s temperament and acumen has been the right combination to manage a position that has so many stakeholders to consider. Perhaps the statement of Henri Bergson describes him best: “Think like a man of action, act like a man of thought.” ♦
KATHERINE COBB
Holy Trinity Episcopal Academy When Katherine Cobb, J.D., was named president of Holy Trinity Episcopal Academy (HTEA) by the school’s board of trustees in April 2017, it was the culmination of a lengthy process of identifying the single most qualified person to proficiently lead the school into its future.
T
oday, Cobb is providing direction and oversight for 145 full- and part-time faculty and staff, as well as 850 students at two campuses … and she loves every minute of it. “It was quite different than I expected at first,” said Cobb, who most recently served as provost and associate vice president for academic programs at Eastern Florida State College, “but I quickly embraced its dynamics. It’s invigorating, and being around the students keeps me young.” Cobb’s hire seems a natural fit, as she has many ties to the school. Her children, Alex (30) and Allison (26), are HTEA alumni (graduating in 2006 and 2011 respectively). Her husband, Mark, attended the school in the 1960s. Cobb served as a member of the school’s board of trustees from 1989-1993, 2003-2009, and 2012-2014. “When I was offered the job, I felt totally comfortable,” she said. “It was like coming home again.” Cobb cites two influential women in her life, both of whom worked at HTEA. She met her mentor, Catherine Ford, through her involvement in the Junior League. Ford was head of school at Holy Trinity for 25 years. Reverend Joy WillardWilliford, a major inspiration in Cobb’s life, was chaplain at Holy Trinity for many years before she retired.
“I HAVE DEEP RESPECT FOR EACH OF THESE WOMEN,” ASSERTED COBB. “THEY’VE OFFERED ME INCREDIBLE INSIGHT AND ADVICE OVER THE YEARS.” HTEA, celebrating its 61st anniversary this year, is a premiere private school that boasts a 100 percent college acceptance rate. Since 1957, the school has focused on educating and nourishing the whole child — mind, body and spirit — in
the Episcopal tradition. Part of Cobb’s job as president is to continue to enhance educational opportunities while also upgrading the campus to include the newest technologies. She recently saw the renovation of the upper school library, which was equipped with new technology. “Also, 80 percent of our students are involved in athletics, so we’re constantly identifying where we can improve our athletic programs and facilities,” she said. The Space Coast has seen huge growth in STEAM (science, technology, engineering, arts and mathematics) careers in the last decade, and HTEA continues to incorporate these areas and expand on them in its curriculum. “Our vision is to have our students master core academic content while learning to work collaboratively with the skills necessary to succeed in a global workforce,” said Cobb. Another part of her job as president is to be “present” in the region. Active engagement in the community, and the partnerships created as a result, are what have created a symbiotic relationship between the school and the community surrounding it. “These relationships have helped me in my mission as president of the school,” acknowledged Cobb. “Schools don’t thrive in vacuums; the best schools are the ones that establish strong relationships with the people and businesses around them.” Cobb, who came to the Space Coast via Miami, still marvels over the region’s natural beauty. “I drive over the Pineda Causeway every day, and it inspires me,” she said. “I get tears in my eyes crossing over the bridge and seeing the upper school chapel on the other side of it.” Most of all, Cobb is inspired by her students. “They’re clever, intelligent kids who ‘wow’ me every day.” ◆
CLIFFORD GRAHAM Orlando Melbourne International Airport
Since the dawn of the space program, Brevard County has drawn people from around the world, making this area a unique and diverse melting pot. Though that magnet of innovation and opportunity continues to attract the best and brightest, a new generation of individuals, who actually grew up on the Space Coast, are helping shape its future. One of these people is the director of Operations and Maintenance at Orlando Melbourne International Airport, Cliff Graham.
R
ecently recognized as Florida’s Aviation Professional of the Year, Graham has, for more than 24 years, been a part of developing the airport into one of the leading aerospace and aviation hubs in the world. More recently, he supervised operations during one of the most extensive periods of renovations and improvements in the airport’s history. Projects include: completely rebuilding all three runways, construction of a new air traffic control tower, an upgraded U.S. Customs facility, improvements on the on-site fuel farm and beginning the initial phases of the airport’s terminal transformation project. These projects total more than $100 million in capital improvements in just the past two years, and all without any major disruptions to passenger and commercial service.
Transformative Projects “Within the last five years, the intensity of the projects we’ve been involved in, along with the growth of the tenants who call the airport home, has been remarkable,” Graham observed. “There have been incredible changes, and there’s more to come.” One major project the airport, tenants and most residents have long anticipated is the direct connection from the airport property to I-95, which is now underway. “This has been discussed for 20 years,” said Graham. “Today, the travel time from our parking lot to I-95 is about 20 minutes during commute hours, and this project should cut that time in half. That’s significant.”
Graham exudes enthusiasm and obvious pride in the airport, where he began working in the maintenance department while going to college. “I grew up here and went to Eau Gallie High,” he said. “I’m a hometown guy who had the opportunity to work my way up in this organization. The airport has treated me well, and I always try to treat the airport well in return.” He added: “My parents instilled in me a strong work ethic, that hard work and letting your work speak for itself brings results.”
A Team Approach Graham was especially appreciative of the opportunity to work with two individuals he considers remarkable airport executive directors — Greg Donovan and his predecessor, Richard Ennis. Plus, he is much more comfortable talking about others than he is himself. “Richard was brilliant on the financial side, but he was also so good with people; he treated everyone fairly,” Graham said. “If he said he would do something, it got done. Greg is also such an amazing visionary leader and a real aviation guy. The experience and background he brings to our airport is great, but you add his passion and you see the results in what’s happened in the last five years.” Graham believes the size of the airport gives everyone the ability to work as a team and contribute on these projects. “Our airport has a great safety record, but that’s because it’s something we work on every single day, not just when there’s an inspection approaching,” he asserted. “That’s how you stay at your best and ensure a safe and positive experience for everyone.” ◆

here were lot of obstacles along the way, and going through that at a young age shaped me into the person I am today,” asserted Romeu. “I’ve always surrounded myself with supportive people.” Romeu, who got married right out of high school, took a less-direct path to complete her education. While working full time and raising young children, she took night and online classes at several colleges to eventually obtain her bachelor’s degree in Business Management and a Master’s in MIS from Florida State University, sharpening her skills in implementing Enterprise Resource Planning (ERP) systems. “I loved that project management process of ‘here’s the problem, do the research and come up with a solution,’” she admitted. “I also knew I eventually wanted to start my own business.” In 2013, Romeu founded Alluvionic, a company that specializes in right-sizing project management, process improvement and engineering solutions. When a company has a troubled project, whether it is over budget or not on schedule, Romeu and her staff fix it. “First, we need to understand the client’s desired end state,” she explained. “Then we put a plan in place that includes requirements, estimated costs and schedule. We basically set expectations and set up the processes that are going to make the project successful.” Romeu admits she has had a transitional year. With the help of regional entities such as weVENTURE and CEO Nexus, she learned how to transition from working in her business to working on her business. Today, she spends approximately 30 percent of her time with clients and 70 percent out and about, meeting people, educating them and growing the business.
“These support organizations taught me how to properly convey my vision,” she added. “They also made me realize I needed to take more risk as an entrepreneur. I’m pretty riskaverse, but I’m in the world of risk-taking, so I needed to strike a balance – lean in but not so far I get my head chopped off.” Most of all, Romeu loves the process of creating solutions. “We’ve come into companies that were chaotic and created better processes that have eliminated the dysfunction,” she affirmed. “We take them on this journey, and in the end they’re incredibly grateful for the gift we’ve given them.” Romeu’s vision for her company is to create a nurturing, positive work environment and family-first atmosphere. She also has a 10-year strategic plan in place. Alluvionic recently received an 8(a) business designation from the U.S. Small Business Administration (SBA), which puts them in position to secure prime government contract work. Romeu wants to continue to grow the commercial side of the business and become a $5 million company by 2020. One thing is certain: a childhood filled with uncertainty and disorder has shaped an entrepreneur who truly embraces protecting the people she cares about and helping companies turn inefficient, untimely and chaotic ways into streamlined, successful processes.
“I GENUINELY CARE ABOUT MY FAMILY, EMPLOYEES AND CLIENTS,” SHE SAID. “I’M ALWAYS LOOKING TO DO THE RIGHT THING FOR THE RIGHT REASONS. I WANT PEOPLE TO WALK AWAY FROM KNOWING OR WORKING WITH ME BETTER OFF FOR IT.” ♦
JOE REILLY
National Drug Screening Successful entrepreneurs usually share four common differentiators. They continually develop their skills, they leverage their experience, they are always opportunistic, and they are passionate about whatever they are doing. All four boxes would be checked in the case of Joe Reilly, the founder and CEO of National Drug Screening.
R
eilly grew up in New York City, and after earning a degree in accounting and marketing, his initial foray into business was working for the state of Massachusetts as a tax auditor. That experience confirmed the entrepreneurial inclinations he always thought he had, and with a friend, he moved to Florida and launched a window treatment company, which eventually brought him to Brevard. “Our marketing strategy was pretty basic,” he recalled. “Homes were going up all over Palm Bay, and we would simply follow moving trucks to the house, and if they didn’t have window treatment, we would knock on the door and ask if the homeowner wanted blinds.”
Following the Opportunities He left that enterprise to take over a restaurant/nightclub that he ran for nine years. During that time, he joined a good friend in a business providing loss prevention training programs for the hospitality industry. “After being in that business for about four years, we ran across a Florida statute that mandated if you institute a comprehensive drug-free workplace program at your business, you automatically qualify for a 5 percent reduction in your workers comp insurance,” Reilly said.
“WE SAW THIS ISSUE OF HIGH WORKERS COMP AS A REAL PAIN POINT WITH ALL OUR CLIENTS AND DECIDED TO FOCUS ON IT.” Focus on it he did. Today, Reilly is a leading authority, not only on testing for a drug-free workplace, but also how to
craft policies that ensure a company’s position is legally defendable, particularly with the new legislation legalizing certain forms of marijuana use.
A National Footprint Soon, Florida Drug Screening expanded to National Drug Screening as his company grew. “We focused primarily on the transportation industry, where the DOT mandates drug testing for certain jobs, such as truck drivers, pilots, oil pipeline workers, etc.,” he explained. As he traveled around the country doing presentations as a subject matter expert and serving as chairman of the board of directors of the Drug & Alcohol Testing Industry Association (DATIA) from 2004 to 2008, Reilly also began to be sought out by others who wanted to start a similar company. “We developed a comprehensive training and vetting process for people who wanted to get into the industry,” he explained. “Also, we developed a backoffice system that allows owners to focus on building their businesses while we attend to many of the details.” Now celebrating 25 years, Reilly has seen the growth and transitions in the workplace drug screening landscape. His company was one of the first in the industry to have a website promoting its services and has grown dramatically with a national reach. With mixed emotions, he said, “Unfortunately, the drug situation isn’t showing any sign of declining, so our business model has tremendous potential.” ◆

he concept of combining sports, bar food and an at-home atmosphere is not a new one, but at Cheers Sports Bar & Grill, owner Neil Shastri has proven that a sports bar and grill can also serve fresh, delicious seafood, as well as a number of other tasty items. With two locations in the region – Cocoa and Rockledge – Cheers Seafood Bar & Grill welcomes patrons with the same kind of hospitality people became familiar with on the classic TV series, Cheers. “Where everybody knows your name” is not too far from the reality for those Space Coast residents who frequent Shastri’s establishments. And that is just how he prefers it.
“WITH ANY RESTAURANT, YOU WANT TO CREATE A WELCOMING ATMOSPHERE AND COMBINE THAT WITH GREAT FOOD,” SAID SHASTRI. “BEING THAT WE’RE ON THE SPACE COAST, WE WANTED TO GIVE PEOPLE THE ADDITIONAL OPTION OF GETTING HIGH-QUALITY, FRESH SEAFOOD, WHICH HAS BEEN A REALLY BIG WIN FOR US.” When you walk in, you immediately notice the plethora of TVs showing a variety of sporting events and sports talk shows. If you come on a Saturday during college football season, you can pretty much catch the game you want to see on one of the screens, and if you come on a Sunday, the same goes for watching your favorite NFL team. In fact, regardless of your preferred team or sport, or when you come in, if a game is being televised, odds are the staff will find it and put it on for you.
REDEFINING BAR FOOD Perhaps the most unique aspect is the extensive menu that redefines “bar food.” You can enjoy the usual bar fare, including nachos, potato skins, chicken wings, salads, burgers, sandwiches and french fries, but you can also turn it up a notch by ordering bacon-wrapped scallops, crab cakes, fried gator tail, fried calamari or Caribbean conch fritters. And here is where it gets really interesting for those with more refined palettes. Fresh seafood – including mahi mahi, grouper, yellowfin tuna, catfish, salmon, shrimp and scallops – is available daily, cooked to your preference (blackened, broiled, char-grilled or fried) and served with soup, salad and your choice of baked potato, rice, coleslaw or french fries. Not in the mood for fish? Try a pasta dish, or some steak and chicken from the butcher’s block. And if all of that does not fill you up, finish off your meal with some New York-style cheesecake, two-layer chocolate cake, key lime pie or apple cobbler.
Grilled Tuna
“A lot of our patrons are repeat customers, many times over,” explained Shastri. “That’s important, because it tells us people are enjoying their experience. We couldn’t have asked for more, being in such a great community with such loyal customers.” Imagine sitting at a table or comfortable bar, watching your favorite team play in the big game, enjoying any number of delectable dishes, and in a warm, friendly atmosphere.
THIS IS WHAT YOU GET WHEN YOU GO TO CHEERS SEAFOOD BAR & GRILL, A PLACE WHERE, USING A DESCRIPTION OF ANOTHER MUCH-ENJOYED ESTABLISHMENT, “YOU’RE ALWAYS GLAD YOU CAME.” ◆

Susan Smith, a lawyer in administrative law, health care, civil litigation and criminal law, started her Imperial journey in 2012, becoming a regular guest at the Indian Harbour Beach location. Moving to Brevard County in 2010, she
was looking for a salon to take care of her curly red hair. A friend of Kohl’s, she was recommended to stylist Dawn, who has worked at the Indian Harbour Beach for over six years. “[I felt] a lot better, I could not believe the difference in basically just making it look natural and really having them do what I wanted them to do instead of whatever product line they had access to,” Susan said about her
first experience at Imperial. Since then, she has expanded her time at the Indian Harbour Beach location to massages and facials. She also loves the flexibility that the company gives her, since she is a frequent traveler, and has also recommended her 14-year old daughter for her hair and esthetic services. “It’s a beautiful place, great environment, and everyone seems to be happy that’s working there,” Smith said. “[For my hair], I’m a result-oriented person. I was happy with the salon and they met all of my needs.”
Dr. Stephanie Haridopolos, M.D. and board member of the Florida Board of Medicine, also frequents the Indian Harbour Beach location, focusing on hair
services with stylist Erin for the past year. As a blonde, she wanted a stylist that could cater to her hair’s specific needs. “I decided to interview a new hairdresser [...] and get to know each other,” Haridopolos said. “She [Erin] was extremely knowledgeable, caring and understood what my expectations were. It’s been a process, but we’ve been able to achieve my dream hair.”
Stephanie felt special the moment she walked in the Beachside location’s doors, comparing her experiences to TV show “Cheers.” She has also experienced massages and facials and has even brought her daughter into the spa and salon to receive nail services.
“The moment you walk in, everyone knows your name,” she said. “They book you in straight away and ask if you want something to drink or eat, and it just feels like I’m visiting a friend instead of just walking in a store to get a service.”

PUMPKIN TREATS
GINGERBREAD COOKIES
APPLE MINT CHRISTMAS BONES
INGREDIENTS 2½ cups whole wheat flour 2 eggs ½ cup canned pumpkin 2 tablespoon peanut butter ½ teaspoon salt ½ teaspoon cinnamon
INGREDIENTS 1 cup molasses 4 tablespoons honey 1 cup water ½ cup vegetable oil 6 cups all-purpose flour 2 teaspoons baking soda 1 teaspoons cinnamon 1 teaspoon ground cloves 2 tablespoons chopped fresh ginger or one teaspoon of dried powder ginger
INGREDIENTS 1½ cups whole wheat flour 1 cup unbleached all-purpose flour ½ cup old fashioned rolled oats 1/3 cup oat bran 2 tablespoons dry milk 1½ teaspoons dry baking yeast 2 tablespoons chopped spearmint leaves 1/2 cup applesauce 2 teaspoons green or red powdered food coloring or spinach powder (to get the color desired) 7/8 cup water
INSTRUCTIONS Preheat oven to 350. Whisk together flour, eggs, pumpkin, peanut butter, salt, and cinnamon in a bowl. After initially mixing all ingredients together, use your hands to really mix everything well. You may also need to add a little bit of water. Roll the dough into a ball. Then flour a hard surface and use a rolling pin to roll the dough out, which should be about 1/2 inch thick. Use a cookie cutter to make a cute shape. Bake for about 30 minutes, or until hard.
144 : spac ec oa st l iv in g
INSTRUCTIONS Preheat oven to 350. Take two bowls, one medium and one large. Combine the molasses, honey, water and oil in the medium bowl. In the large bowl mix the flour, baking soda, cinnamon, cloves and ginger. Slowly add the dry ingredients to the wet ingredients. Divide this dough in four balls, wrap each ball in plastic wrap and refrigerate for 3-5 hours, or freeze them for 1-2 hours (just don't let them get solid!). After the dough is cold, lightly flour your surface and roll the dough out into about 1/4" thickness. Cut the dough into fun shapes, such as gingerbread men, with a cookie cutter. Bake for 20-25 minutes, or until the cookies start to get brown.
INSTRUCTIONS Preheat oven to 250F. Mix all ingredients together in a bowl. When the dough is ready, roll it to 1/4” thick with a non-stick rolling pin. Using a mini bone cookie cutter; cut the dough into mini dog bone shapes. Bake at 250 for about an hour. Check to make sure they don't get too brown. Turn off the oven and let the mini dog bones dry completely in the oven — this works best overnight. These Christmas dog treats will keep for several months at room temperature in your snowman cookie jar, so you can make them well ahead of the holidays.
