FROM THE TEAM

Hello,

O

ctober is a great month, isn’t it? Even in sunny Florida, there is a subtle shift in the air that signals change as the world begins its quick transition from one year into the next. Here at Space Coast Magazines, we are also experiencing a change. As many may have read on our website, we are now under new ownership: Former CEO, Jeff Piersall, has left, and Eric Wright and Joseph Duda have stepped forward to take co-ownership of Space Coast Living and Space Coast Business magazines. One of the major shifts happening under this new ownership is our transition from a marketing company, to a media company. As stated in the previous paragraph, we are no longer, “SCB Marketing,” but, “Space Coast Magazines.” In the past, we’ve helped businesses design their ads, define their voice and decide on their brand. Now, our goal is to focus on storytelling, and we strive to be an ethical, inclusive and respected voice in journalism on the Space Coast.

greater heights. We have an exciting year planned and have been working diligently to provide the best content possible for you, our readers. Our motto is and always will be quality over quantity. In the next year, we hope to branch out into every community present within this 72-mile long county, and we look forward to connecting with new business owners, community leaders, volunteers, artists and any individual who is working hard every day to make a difference in this community. We are excited about the changes and look forward to the growth that is about to occur, not only for us, but for the community of which we are apart. Thank you for being here for this exciting new adventure. With love,

The Space Coast Magazines Team

In this transition, our goal has been, not only continue to deliver the high-quality publication to which you have all been so accustomed, but to take it to even

MY MIMOSA RUNNETH OVER: HOW RIVER ROCKS IS PUTTING ITS TWIST ON BRUNCH CULTURE

BY SARA SANTORA MANAGING EDITOR

F

or many, brunch is more than just a fun weekend meal: it’s a lifestyle. However, finding the right restaurant to brunch is hard work. You essentially have to dine by trial and error. Yes, a restaurant’s dinner salmon might be delicious, but that doesn’t ensure that its morning lox or omelet will wow. Fortunately, River Rocks’ weekend brunch is just as – if not more so – impressive as its everyday lunch and dinner menus. Here, it is perfectly apparent that the chef understands that brunch is more of a social experience, and that customers don’t need crazy flavor combinations to be impressed. Here, simplicity is key. River Rocks serves brunch on Saturdays and Sundays from 8 a.m. – 2 p.m., giving you ample time to add brunch into your busy weekend schedule. Not a huge fan of the Sunday brunch crowd, we decided to visit River Rocks on a Saturday, and to our surprise and delight, it was quiet. (Of course, if you are someone who prefers a bit of excitement with your morning eggs, our waitress assured that Sunday is the morning to visit, as the conversation is lively, and the mimosas are flowing.) When ordering, we decided to stick with entrees that are popular, because we wanted to see how River Rocks would add its own twist. So, we split the Cuban Benedict, Avocado Toast and Chicken and Waffles.

Photography by Harmony Lynn Goodson

Cuban Benedict How it’s different: The variances were subtle, but they made all the difference. First and foremost, instead of being served on a toasted english muffin, the base was two toasted pieces of, what appeared to be, french bread. River Rocks also added pork along with the ham, making the dish heartier and more savory. In a way, this felt like the classic American breakfast, though its namesake says otherwise. Quality: Eggs benedict lovers, celebrate! The poached eggs were cooked perfectly. They weren’t cold when they hit the table, and they were both soft and runny. I was pleased by this, as my favorite part of eating this dish is always cutting into the egg and letting the yolk drip everywhere. Because, let’s be honest with ourselves, the best part of the meal is dipping each bite of food into the yolk, right? 34 : SPAC EECOA 18: COAST ST LLIV IVIN INGG | S PACECOAST L I V I N G .CO M

Avocado Toast How it’s different: The thing about avocado toast is that there is no real standard. Because avocado is relatively neutral in terms of flavor, you can pair it with just about anything. River Rocks decided to use toasted artisan bread, and topped the smashed avocado with diced tomatoes, feta cheese and cilantro. I’m not a huge feta cheese fan, but it worked. If you’re going into brunch looking for something that is light and refreshing, this is a great dish for you. Quality: Avocado toast is arguably one of the trendiest brunch items out there, but it’s easily one of the hardest dishes to nail. Have you ever spent a pretty penny on a restaurant’s avocado toast and been disappointed, either by its size or lackluster presentation? Me, too. Thankfully, River Rocks gives you three pieces of toast, each piece bending at the weight of the avocado. So, you won’t go hungry. And as you can see, it’s picture perfect.

Chicken and Waffles How it’s different: There was only one difference here, and that was the choice to use bourbon sriracha maple syrup vs. standard maple syrup (though you can get standard if you ask). But though this change may seem small, it had a huge impact on the dish. I am not typically a chicken and waffles fan – blasphemous, I know – but this syrup was incredible. The subtle spice took the dish to another level and gave the allusion of eating hot wings. I understand that “hot wings” and “breakfast” don’t typically go together, but the best rule of brunch is that there are no rules. Besides, if you’re dining in at 11 a.m., it’s practically lunchtime. Quality: This meal is huge, and I can guarantee you’ll feel stuffed for the remainder of the day. This truly is, what our digital marketer so rightfully dubbed, “the man’s breakfast.” Of course, women and children are invited to chow down. I highly recommend this meal as the pre-game to a Sunday afternoon football game. If you’ve been tirelessly searching for the best place to spend your weekend mornings, consider adding River Rocks to the list. You can’t go wrong with great food and strong alcohol.

Grab unlimited house bloody marys, mimosas and house beer for $15. All seating is indoor before 11 a.m. Phone: 321-757-7200 6485 South U.S. 1 Rockledge, FL

HALLOWEEN PARTY

PHOTOGRAPHY AND ARTICLE BY HARMONY LYNN GOODSON CONTRIBUTOR 2 2: S PAC E COA ST L IV IN G | S PAC ECOA ST L I V I N G .CO M

I

love Halloween and all the fun decor that comes with the theme. But when it comes to fancy dinner parties, I find that less is more when trying to achieve that elegant and refined table style. Dark colors set the spooky atmosphere in this party with subtle touches of Halloween hidden in the details. Black plates, napkins, taper candles and pumpkins ground each table setting while pops of gold add an element of luxury. I highly suggest spending a little extra on your fine dining collections instead of purchasing single use plastics. Not only is it an elevated look for your home gatherings, but it’s also a great way to reduce plastic waste. For this artistic approach to a fall inspired table runner, I used a mix of dark-colored florals like these ranunculi and scabiosa stems I placed in hidden vials amongst a runner of fresh fruit. The personalized black pumpkins which topped each place setting were an easy DIY using black spray paint and a sharpie. You can use faux or fresh pumpkins for this project by spray painting them in matte black. Then, using your best handwriting skills, sketch out the names of your guests in pencil before finishing them in a metallic gold sharpie. To bring the final element of spooky drama to the table, I added dry ice in each drink for a foggy and ethereal effect! Themed charcuterie was the perfect way to start this spooktacular dinner. Starting with a large black slate serving tray, I topped it with a veiny blue and simple brie cheese. I then added my favorite pairings like the dark buckwheat honey, assortment of fruits, nuts and sliced sausage. Color is something to consider when shopping for your charcuterie items. Opt for purple grapes in lieu of the lighter green and look for dark brown table crackers. These small changes will affect the overall display results of your pretty grazing board. For the drinks, try serving a signature drink like this extra spooky and delicious apple cocktail using dry ice! It's a drink with a show and you can let the kids in on the fun with the mocktail version by leaving out the liquor.

GHOSTLY APPLE COCKTAIL INGREDIENTS: 2 oz Apple Cider 2 oz Caramel Vodka 1 oz Butterscotch Schnapps Sliced Red Delicious Apples for Garnish

DIRECTIONS: Combine all ingredients except the apple slices in a cocktail shaker with ice. Shake to mix and pour into glasses. Finish by garnishing the rims with a slice of apple. Optional: Carefully add a small chunk of dry ice to your cocktails for an extra spooky effect that lasts about 5-10 minutes! Use proper care when handling and serving dry ice.

FASHION

ELEGANT ENSEMBLES FOR A FESTIVE PARTY BY KATIE McCARTY CONTRIBUTOR

Photo provided byHarmony Lynn Goodson

W

hen it comes to dressing up for a festive Halloween dinner party, forget about cheesy costumes, crazy colors and over the top makeup. I know as adults, especially us women, we all look forward to opportunities where we get to dress up. Halloween, my friends, is the perfect excuse to reach for those elegant ensembles stored away in your closets. I bet those are two words you never thought would go together – Halloween and elegant! While you’re sipping cocktails, eating gourmet cheese boards and dancing the night away, this is your time to shine. When I am helping style clients, I tell them, “Don’t be afraid to step out of your comfort zone style wise.” I am here to say the same to you. We’re going to skip the commercial Halloween costumes and go straight for the glitz and glamour of sequins.

My favorite sequined pieces to style are rompers, shift dresses and skirts. Surprisingly, you can find sequined pieces year-round in the women’s section at any major department store, especially during homecoming, prom and New Year’s. Be sure to only wear mini, above the knee or midi length sequined pieces. Remember, it’s a dinner party, not a black-tie event. Keep the accessories simple, wear a neutral colored shoe and let the sequins shine. If you’re wanting to go the more subtle route and save the sequins for another time, other great fabrics will be faux-leather/leather, lace, velvet or silk. When you mix unique fabrics like velvet and leather, you create the most beautiful, texture-filled, elegant outfit. 2 4: SPAC E COA ST L IV IN G | S PACECOAST L I V I N G .CO M

To dress up an elegant ensemble, my motto is, go bold or go home. Statement earrings are super on trend at the moment and don’t seem to be going anywhere fast. When matching your outfit, neutrals will always be your best friend. A neutral in this case will be gold, black or silver. However, colorful earrings in the appropriate colors can add a fun element to a silver, gold or darker colored outfit. Last but not least are shoes. Right now, block heels are super in. Pair a block heel or pump if you’re wearing a dress, skirt or romper, especially if it’s sequined, leather or velvet. For a more minimal look, try adding a fun leopard print flat or heel for some pizzazz. Follow these tips and you will surely be the fanciest lady at the party.

@sunshinestyleblog www.sunshinestyleblog.com

As far as silhouettes and styles go, the attire for a festive party will most likely be cocktail, unless specified otherwise on an invitation. Any item above the knee or slightly below knee length, like a midi dress or pleated skirt, will work. A slinky, silk tank top with lace would be adorable to pair with a skirt. The one exception to the above or slightly below the knee rule would be dressy slacks and jumpsuits. An amazing pair of fitted slacks in warm hues with a sequined top would look great. And, rompers are dressy yet casual, whether short or ankle length. Now that we know which fabrics and styles work best, let’s talk color! Pumpkin spice lattes might be cool to drink, but the pumpkin orange color won’t work for this party. Skip typical Halloween colors like leaf green, pumpkin orange and candy corn yellow. Instead, lean towards black, gold or silver, with hints of emerald green, burgundy or white.

DECORATING

DIY BAT WALL:

HOW TO CREATE A FUN HOME INTERIOR THIS HALLOWEEN SEASON PHOTOGRAPHY AND ARTICLE BY HARMONY LYNN GOODSON CONTRIBUTOR 2 8: SPAC E COA ST L IV I N G | S PAC ECOA ST L I V I N G .CO M

f you love Halloween and decorating as much as I do, you’ll want to give this super easy and inexpensive DIY a try! This paper craft project is super versatile as it can be designed to fit any space, no matter the shape or size. This works great over my entry foyer table and acts as a fun and spooky first impression to my home during the fall season. I used my die cutting machine to make this a quick and easy process, but you can also use scissors if you don’t have access to a machine. Be sure to check out the link at the bottom of this article for the free bat printable!

PROJECT SUPPLIES LIST: Black Card Stock Scissors or a Die Cutting Machine Double Sided Mounting Tape

Start by measuring your space and calculating how many bats you want to make. I planned out my placement by taking a picture of the wall and drawing out the pattern to visualize the result. I used three different sized bats for my project and filled in the space evenly. Get creative and try drawing out different patterns to see what would look best for your particular space! Cut out your desired number of bats using the bat template or make your own bat templates. Once you have all your bats cut, gently bend the wings toward you without totally creasing them to give the bats a 3D flying effect. To apply to the wall, use double sided mounting tape. This is easy to take down at the end of the season and won’t damage your walls. I ended up making about 40 bats and used a ladder to get to the high areas near the staircase. I then finished off this space with a bowl of black pumpkins, fall leaves and cozy knits! And that’s it! A simple and elegant way to dress up your space for the month of October. You can find the free bat printable template on harmonylynn.com under the DIY Tutorials Tab! O C TOBE R 2019: 29

GARDENING

FALL GARDENING FLORIDA STYLE BY AMANDA ROSE ROCKLEDGE GARDENS

W

hile the rest of the country is putting their gardens to bed, ours are just revving up! Fall in Florida is a fantastic time to plant just about anything from vegetables to flowers. Not sure where to begin? Read ahead for what I think are your best bets this season. If the idea of growing your own food and perhaps having the delight of knowing that a few of this Thanksgiving’s dishes came from your own garden, then now is the perfect time to start your vegetables. Watermelon, tomatoes, pumpkins, onions, mustard greens and eggplant can all be planted as early as September, while cold hardy crops like cauliflower and broccoli can be started from seed. In October, just about any edible from squash to strawberry is ready to plant. Those who love greens of all kinds will be pleased to know you can plant those well into late November/early December.

Herbs are often underutilized in the garden, and not only do they apply lovely textural attributes to flower beds but are also versatile in numerous culinary masterpieces. As a bonus, many can be grown throughout the year, the exception being the hot summer months. Top choices for Florida include the perennials, rosemary, sage and thyme as well as classic annuals such as cilantro, basil, dill, fennel and parsley (which also serves as a host plant for the Black Swallowtail Butterfly). Herbs tend to be great beginner plants for those intimidated by the prospect of a large vegetable garden. Photography by Anton Nikollaj

30 : S PAC E COA ST L IV I N G | S PAC ECOA ST L I V I N G .CO M

If flowers are more your botanical interest, or you would like to attract helpful pollinators to your new vegetable garden, there is a wide array of floral beauties that last late into the season. Pentas, salvia and gerbera daisies supply beautiful blooms with minimal upkeep. It wouldn’t be fall without geraniums and mums (especially for us formerly from up North) which will happily take up residence as the summer heat dissipates. If you are looking for something unique, native coreopsis, twinflowers and wild petunia are natural choices for both beauty and ecosystem enhancement.

Short on space? You will be amazed what you can do with just one container! A raisedbed garden can often be a better way to control the quality of soil and nutrients your bounty receives. Group together a few different flowers in an attractive planter for a memorable pop of beauty right outside your door. You can also mix a few herbs and veggies together to create your own salsa, tea or cocktail garden, sure to come in handy for fall entertaining. Not only are these containers beautiful and functional, they double as great gifts as the season ends. When in doubt, remember that most vegetables and flowers require at least six hours of sun and properly draining soil. Pay attention to the water requirements of each and monitor regularly for pests and fungal issues. If you are in search of ideas, garden centers, botanical gardens and even neighbors’ yards can hold all kinds of inspiration. Fall is the ideal time of year to get into the garden, whether you are a seasoned pro or just beginning to get your hands dirty.

THE REAL ESTATE DREAM TEAM: A CONVERSATION WITH FLORIDA LIFESTYLE REALTY BY SARA SANTORA MANAGING EDITOR

uying or selling a home can become a full-time job. Between meetings with lenders, open houses, inspections, etc. buying or selling a home can be a hard job to take on alone, which is why many people turn to their local real estate agency for help. Cue: Florida Lifestyle Realty. Florida Lifestyle Realty is different than other agencies in that teamwork is the major emphasis for the group. Truly understanding that the homebuying/selling process is time-consuming and requires as many hands as possible, FLR works together under the “Jackie Griffin Team,” rather than as a group of individual agents. “There is no ‘I’ in TEAM,” shared Christina Griffin, ops manager with Florida Lifestyle Realty. “We all work together to make sure transactions go as smoothly as possible. We have a ‘behind the scenes’ team helping to coordinate everything from contract to close,” she continued. 32: S PAC E COA ST L IV IN G | S PACECOAST L I V I N G .CO M

To reinforce this team environment, Griffin shared that the office is “open concept.” So, instead of cubicles and offices that keep the team separate, they sit together in an open space without walls of separation, where they can collaborate, discuss and help each other out. Griffin shared that this ability to constantly work together ultimately “leaves less room for error.” This, of course, ensures that all clients are getting the best service possible. Apart from having a team behind you that can help guide you through this complex process, a benefit to working with the Jackie Griffin Team is their knowledge on the market. Griffin shared that the team travels to real estate conferences and masterminds with successful teams from around the globe to talk about successes and complications. This, combined with the fact that they are very active in the market, makes them stay current on market trends. Griffin shared that this helps current clients, “feel confident that we know what we’re doing and will get their home sold for

the most amount of money in the least amount of time.” Of course, many people feel hesitant to call real estate agencies to help with the process, but Griffin happily cleared some of these misconceptions for me. “It’s thought that [real estate agencies] push sales on them for commission, but that’s not in our best interest,” she said. “People also tend to think that we’re experts in everything … we’re not, we’re just really good at helping to buy and sell homes.” What are the added benefits to working with a realtor? Griffin and her team reminded me that they adhere to a code of ethics, and their guidance and advice comes from experience in the field. “Because we're active in the market and never miss an opportunity for a listing presentation, we have a heads up on properties before they go on the market,” Griffin said. “And we have strategies for setting the right price on a home." Because they are so experienced with buying and selling homes, I asked for some general advice they’d be willing to share with readers on the subject. When it comes to buying a home, she and the team shared, “Make a list of nonnegotiables and consider things that cannot be changed in the home. Also, it’s important to check the neighborhood at different times of the day. Talk to the neighbors if they’re out.” Regarding selling a home, they said, “Anyone can throw a sign in the yard, put it on the internet and wait for the phone to ring. Look for an agent that provides more value.”

If you're looking to buy or sell your home, consider looking to the Jackie Griffin Team for advice. They really care about their clients and are always looking out for their best interests. The Jackie Griffin Team will welcome you into their "family" and will work together to make sure your transaction goes as smooth as possible. As the saying goes, "Teamwork makes the dream work."

A SOOTHING, RELAXING BATH: NO WATER REQUIRED BY GEO A. ROPERT CONTRIBUTOR

hen internationally acclaimed meditation master Anthony Profeta first brought his popular "Good Vibrations: Sound Bath Meditation" to the Foosaner Art Museum’s Harris Community Auditorium in Eau Gallie in 2018, the event sold out. Since then, he’s hosted many events in the museum’s domed auditorium, all have sold out. With the soft sounds of Tibetan “singing bowls” and other musical instruments filling the room, aromatic scents drifting in the air and laser lights on the auditorium’s domed ceiling mimicking the stars at night, participants find themselves immersed in a sensory trifecta that moves them into a deep state of relaxation, calm and peace. “Sound is an amazing form of energy that touches every nerve and fiber in the human body and can have profound effects on physical, emotional and mental health,” shared Profeta. “The vibrations within sound are proven to change brain waves from ‘beta’ which are the fastest and occur when we are active and thinking, to ‘alpha,’ the waves present when one is resting or in a relaxed meditative state. by Anton Nikollaj The sounds created improvePhotography the way you feel physically and put you in a better state of mind.” Photography by Benjamin Thacker

Touching the senses, healing the body

Profeta said the dome design of the Harris auditorium, which produces a unique acoustic effect similar to surround sound, is one of his favorite venues and has renamed this event “Surround Sounds: A Sound Bath Meditation Experience.” “The way the sound envelopes each person, bathing them in calming vibrations from head to foot, makes for an experience you can’t get anywhere else,” said Profeta. Growing in popularity with mainstream Americans, sound therapy, including sound bath meditation, has been proven to reduce physical pain from diseases such as arthritis or fibromyalgia, and the effects of surgery. According to a recently published article in Psychology Today, sound-based treatment has also been found to improve mobility, reduce muscle pain and stiffness, increase blood circulation and lower blood pressure. Research in the American Journal of Health Promotion found that adding sound from a Himalayan singing bowl has more of an impact on heart rate and blood pressure than directed meditation alone. Other studies have shown it to be effective in relieving tension, along with reducing fatigue and depressed moods. Profeta said he sees many of those who attend his experiences go from tense, nervous or anxious at the beginning, to calm, centered and relaxed at the end. “It’s amazing to see the transformation people go through after spending time in this type of meditation. These are very real physical and psychological improvements that don’t require modern-day medications. It’s the body naturally caring for itself.”

SOCCER STAR INSPIRES BIG DREAMS: MELBOURNE NATIVE TONI PRESSLEY VISITS BOYS & GIRLS CLUB

hen 12-year-old Caitlin met soccer pro Toni Pressley, she saw so much. She saw poise, skill, determination and maybe even her future self. “It was amazing, the fact that a professional soccer player took the time out of her day, just to come and play soccer with some kids,” said Caitlin, who got the chance to meet Pressley and play a game of scrimmage, as part of Health First’s partnership with the Boys & Girls Club. Interacting with Pressley at the Temple Terrace branch ignited even more of a flame for Caitlin. “Whether or not you lose or win, I’ve learned playing soccer is about the fun of the game,” she said. If Caitlin can follow Pressley into professional sports, all the better. “However far I can make it is my goal,” she said. Pressley, who grew up in Eau Gallie, loves giving back to her hometown community. For her, some of these kids even remind her of herself. “I didn’t have someone to come in and just interact with me at a young age, certainly not a professional soccer player,” she explained. “So, I think just having them see someone who looks like them, is from the same area as them – see that they can make it in whatever they’re dreaming of, I think it’s very important to see.” Caitlin admits she was trying to mimic Pressley’s moves and maybe even impress her a little. She described Toni as strong, beautiful and competitive – the type of person she’d like to be when she grows up. Having soccer as an outlet, as well as a role model like Pressley, has been invaluable. “No matter who you are, what happens to you, you can overcome that,” an inspired Caitlin said. “There’s always a second chance.”

PROMOTING PEACE:

HOW COMPLEMENTARY CANCER CARE IS SERVING THOSE AFFECTED BY CANCER BY ABBY McHENRY WRITER

C

ancer patients, in all stages, undergo many stressful doctor’s appointments and tests. Naturally, relaxation can sometimes feel impossible. However, it is important to feel empowered and hopeful. Complementary Cancer Care provides healing and support through its yoga, Tai Chi and other classes that help to empower cancer patients, survivors and their families, as well as provide peace during a difficult time. Amy Fentress, co-founder and president of Complementary Cancer Care, has been a nurse for 27 years, and became passionate about oncology nursing 15 years ago. She is also a 200-hour certified yoga teacher. She wanted to start a nonprofit but did not have the courage to do it on her own. She met her partner, Lórien Neargarder, who was a yoga therapist and had worked extensively with cancer patients. The two started the nonprofit together a year ago and have since brought on a third partner, the former executive director of the Cancer Care of Brevard Foundation, Gwen Hertlien-Haber. The three aim to promote peace and hope through their nonprofit. 33 : SPAC 38: SPACECOA E COAST STL LIVIVININGG | S PAC ECOA ST L I V I N G .CO M

Fentress said yoga is a practice of the mind, body and spirit. “For me personally, it’s a time to honor my mind, [and it’s] a time for me to be in the present [and] be in the moment,” she continued. According to Mayo Clinic, Tai Chi is “meditation in motion” and it “promotes serenity through gentle, flowing movements.” Fentress said Tai Chi helps you to use your core muscles and draw in energy and focus on breathing. The group’s mission is to provide complementary, nonmedical services to cancer patients, survivors and caregivers. This is very broad, which is why Fentress said the nonprofit tries to offer many different classes; there is something for everyone. “Healing does not necessarily mean that you’re cured,” Fentress said. “Somehow trying to find some peace in the journey [is important] because you can heal without being cured.” Not only does the nonprofit offer classes like yoga and Tai Chi, but it also offers educational and informational classes and support groups. Fentress says that the classes remind patients and survivors to take deep breaths, which is very healing to the body. The classes also help patients move around which can assist with fatigue. And, having a community in which all people are battling the same thing, ultimately helps all people feel more at peace and less alone.

October is breast cancer awareness month, which helps to promote and educate about checking on your needs regularly and getting tested. Fentress said it is important to encourage mammograms and reminded that there are so many organizations on the Space Coast that offer free mammograms. She also said that giving yourself a monthly self-breast exam is important as well because early detection is the key to survival. Complementary Cancer Care does not have a physical address or building because they are relatively new. They meet across multiple locations in Brevard including places such as Downtown Melbourne and Cocoa Village. Fentress hopes to one day have a freestanding building where the nonprofit can offer services every day and add more classes. But for now, she is so thankful for all the people with whom she gets to work. “Part of the journey with cancer is 25% finding that oncologist and finding that institution that you feel comfortable,” Fentress said. “The other 75% really becomes a journey of each individual patient, and that means getting up every day, getting dressed, putting your makeup on, and just being beautiful in where you’re at.”

A BETTER VISION FOR EYE HEALTH:

PATIENTS WIN WHEN OPTOMETRISTS AND OPHTHALMOLOGISTS COOPERATE IN THEIR CARE BY CARRIE STEVENSON WRITER

W

hen patients walk through the doors of an eye care specialist’s office, they are looking for a health care professional who can address and treat his or her health concerns in the most effective way possible. Going to the eye doctor is a common annual appointment, but whether you see an optometrist, or an ophthalmologist will depend on your specific needs and course of treatment. Rafael Trespalacios, MD, Lead Surgeon and Medical Director of Brevard Eye Center, explains that there are differences in the training of optometrists and ophthalmologists, as well as what conditions each provider can diagnose and treat. He also illustrates why a cooperative approach to each patient’s treatment between an optometrist and an ophthalmologist ensures the best possible result. “Any good doctor is going to develop an individual eye care plan for a patient that can achieve the best outcome

33 :: SPAC 40 S PACECOA E COASTSTL IV L IVINI NGG | S PAC ECOA ST L I V I N G .CO M

with the least invasive method of treatment possible,” Dr. Tres said. “So, for many patients seeking primary vision care – including sight testing, correction and management of vision changes, as well as the prescription of medications for certain eye diseases – those needs can be met by an optometrist.” An optometrist is not a medical doctor (MD) but rather has earned a Doctor of Optometry degree (OD) with at least three additional years of optometry school after college. An ophthalmologist is a medical doctor who has completed at least eight years of medical school training and can perform eye surgery, treat all eye diseases and correct vision problems. Dr. Tres is one of very few ophthalmologists to pursue further fellowship training and specialize in a particular area of surgical eye care – he chose to dedicate an extra year of study to cataracts and consultative ophthalmology. This added training for

ophthalmologists prepares them to treat more complex conditions in certain areas of the eye or specific groups of patients. Dr. Tres believes that optometrists and ophthalmologists are at their best when they work closely together to best serve the individual needs of their patients. “At Brevard Eye Center, we follow this cooperative care model where – as the ophthalmologist here – I work closely with each optometrist so we can provide the best level of care for each patient at every stage of treatment,” Dr. Tres said. “So, if one of the optometrists has been working with a patient with glaucoma, they may be treating that disease with eye drops. If the glaucoma progresses to the point that the patient needs a surgical laser procedure, they will refer him or her to me so I can perform the treatment and follow up.” “After that, the patient will see the optometrist again for monitoring, until they need something like incisional surgery in the future, when I will treat them again,” he continued. “It’s highly beneficial to have this collaborative approach between a team of optometrists and an ophthalmologist, because we all know the patient’s history and can provide a seamless transition between different levels of care depending on what each patient needs at any given time. “Every disease process is a story,” he continued, “and there are multiple points of intervention. Sometimes those points are best served by an optometrist, and sometimes by an ophthalmologist. It’s up to us as health care professionals to work cooperatively so our patients have the best outcomes.” Cooperative care between specialties goes beyond the treatment of glaucoma, encompassing every area of eye health. It is an approach to treatment that emphasizes the strengths of each providers’ training and the importance of providers working together to best meet the needs of the patient. The cooperative care model, Dr. Tres explained, is not a rigid structure, but rather a “fluid transition between specialties as the care for the condition necessitates to provide optimal patient care.”

PUMPKIN SPICE AND EVERYTHING NICE THIS LITTLE LIGHT OF MINE IS BRINGING THE SCENTS OF FALL TO THE SPACE COAST BY SARA SANTORA MANAGING EDITOR

A

rguably, the best part of Fall is not the pumpkin spice latte that you can buy on your way to work in the morning, nor the falling leaves – sadly, those of us on the Space Coast do not get to experience this phenomenon – but the scents of cinnamon and pumpkin that don the shelves of home good stores. In a state where the two seasons are Hot and Less Hot, candles are key for those wanting to feel a change of season. With that in mind, though the Space Coast may not be home to sweater weather, we are now home to a candle bar, which is just what we need to get our spirits high this Fall.

Photography by Anton Nikollaj

Nestled between Downtown Yoga and Get Fired Up Pottery, This Little Light of Mine is bringing something unique to the area: hands-on candle making workshops. Different from a Yankee Candle or a White Barn, TLLOM’s main goal is not to send you home with a pre-made candle, but to get you involved in the experience. Here, you choose from one of the 50+ scents (current Fall scents include: Pecan Pie, Spiced Sangria and Dulce de Leche), pick the handmade vessel that best matches the overall aesthetic of your home and create. It may sound daunting, but it’s easier than you think. And, the workshops are incredibly fun. “You can bring a bottle of wine, friends, food … it’s a good time,” shared Kristina Gilmer, store manager. “We also hold social media competitions at the beginning of each class, and they get to take home a vessel if they have the most likes [on their picture] at the end of class … it’s just a really great time.” The vessels – along with the rustic wooden tables on which you work – are all handcrafted by the owners, Meagan and DJ Lappen. The vessels come in a variety of sizes, colors and materials and are multi-functional. “They can be used as planters, holders for makeup brushes, whatever you need them for,” continued Gilmer. Gilmer shared that, once your candle reaches the end of its lifespan, you can bring back your vessel, and the instructors will clean it out and give you a discount on your next workshop. 42: S PAC E COA ST L IV I N G | S PACECOAST L I V I N G .CO M

The store is open from 11 a.m. – 8 p.m. daily, with workshops running throughout the day. TLLOM is very flexible with its guests, and Gilmer shared that you can either book a class ahead of time or drop in. You can also come with a group of friends, your partner or come by yourself! “We have a lot of people who come in after work and make a candle who aren’t ready to go home quite yet,” shared Gilmer. Gilmer and I agreed that candle making is a great way to relax at the end of a long day. To better understand the experience, Gilmer held a mini candle-making session with me on a Monday afternoon. The tools were easy to use, and the smell of my chosen scent hitting the wax was heavenly. (For inquiring minds, I decided on cinnamon chai.) Though all workshops are led by trained instructors like Gilmer, TLLOM provides a guide for you that clearly states the amount of wax and scent you need for each type of vessel. As there are vessels in a variety of sizes, the amounts of wax and scents necessary for each is different. Having this guide on the table is great if you’re like me and forget a number the second it enters your head. The workshops are typically an hour long, and the candles take four hours to cure. So, if you’re making a candle on a weekend afternoon, you can shop around, get drinks or go to a yoga class while you wait to pick up your candle. If you can’t stay in the downtown area too long, that’s okay. You can pick up your candle later in the week. Apart from being a great place to relax and try something new, TTLOM is a place that emphasizes community, and is doing its part to “get people around the table again.” “The owners made this because they wanted to bring people back together again, and it doesn’t have to be through hardcore drinking,” shared Gilmer. “It’s a just a fun, good, wholesome activity to do with your friends.” The candle bar also boasts its own boutique, with jewelry, tee-shirts and tote bags made by local artisans. “We allow small boutiques to come up here if it fits the vibe and then we just charge commission instead of a monthly rental, because that can be hard on small business,” said Gilmer. “We try to help out everyone in the community.” As previously mentioned, because the handmade vessels are multi-functional, you can buy the vessels without a candle, and you also purchase wooden tables made by DJ Lappen. So, your home will not only smell like brown sugar and pie, but also become a unique collection of clothing and décor that can’t be found anywhere else. This Little Light of Mine is welcoming and fun, and the overall atmosphere of the store, from the rustic, wooden tables, to the tree-covered window from which the sun shines through, helps you feel as though you’re in a state where leaves turn to orange and the temperature drops below 80 degrees. I can’t wait to take family and friends back to make fun memories and add new candles to our respective collections. O C TOBE R 2019 : 43

GLOW IN THE DARK:

A LESSON IN BIOLUMINESCENT KAYAKING BY SARA SANTORA MANAGING EDITOR Photos provided by BK Adventure

I

t’s no secret that Florida is home to an expansive ecosystem of various wildlife. Though the state’s beaches are a huge pull for locals and tourists alike, we’re lucky to have access to natural springs, canals and rivers that allow for a glimpse at a whole different set of creatures that most only see on the pages of National Geographic. Of the many exciting and unique things to do in the state, from swimming with dolphins to petting stingrays, is something very close to home for Space Coast residents: bioluminescent kayaking. If you’ve lived on the Space Coast long enough, you’ve probably heard mention of bioluminescence at least once or twice. A friend of mine had shown me pictures he’d captured on a bioluminescent kayak ride a few years back, but as time progressed, I forgot that it was something he did here. Certainly, something that captivating couldn’t happen in my hometown, right? I was very wrong. According to National Geographic, “Bioluminescence is light produced by a chemical reaction within a living organism.” This chemical reaction can only occur when two unique chemicals are present within an organism, and with these two chemicals are exposed to oxygen, light is released. Most bioluminescent organisms are found at the bottom of the sea; however, other organisms such as plankton – that can be found without the use of an oxygen tank – are bioluminescent, too. When it comes to plankton, all it needs is energy to emit its beautiful, blue or green glow. It turns out, a kayak is a great source of energy for these little,

46 : S PAC E COA ST L IV IN G | S PAC ECOA ST L I V I N G .CO M

bioluminescent organisms. BK Adventure is a local outdoor excursion/tour group. The team gives both daytime and nighttime kayak tours, as well as bike tours. Here, the goal is to engage with the unique and interesting wildlife Florida has to offer. Both the Indian River and the Banana River – both part of the Indian River Lagoon – are home to glowing algae, so BK Adventures has dubbed this area, “Bioluminescent Bay.” Naturally, this is where you will take a tour if you’re dying to see some bioluminescence. There are four different bioluminescent tour options with BK Adventure: a clear kayak tour, a sunset tour, a family rafting tour and a bioluminescent tour done in a standard kayak. Space Coast Magazines decided to take the clear kayak tour, and if you want to see as much as the ecosystem as possible, we cannot recommend this tour enough.

Sunset tour

To see the bioluminescence, you need to kayak at nighttime, and our tour was at 9 p.m. The second our paddles hit the water, we were excited to see a soft, blue glow, which at first appeared to be nothing more than moonlight, but as the sky was still a bit overcast from rain, we knew this had to be nature doing its special show. As we traveled further into the lagoon, and thereby started moving faster, we looked below us to see the water lit up almost like stars against a dark, night sky, which was a bit jarring at first, but impossible to look away from.

Florida’s ONLY Fat Tire Bike Tour! Famous Space Coast landmarks - unspoiled beach Florida wildlife - fun!

As our guides stopped us in the water to talk more about bioluminescence and tell us some nature-related jokes, a school of mullet appeared, creating a blue ripple effect across the top of the water. We very reluctantly followed our guides through the mullet to see more of the river, and Space Coast Magazines was “lucky” enough to have three fish land in our boat. Was this a bit terrifying in the dark? Yes, but the fish were harmless, and our tour guides very happily helped us get the fish out of our kayak and safely back into the water. As our tour guides quickly paddled around us, the trails of their kayaks emitted a soft, blue glow. Though I’m not big into kayaking, the algae put on a good show for me. Our tour lasted until 10:30, so we had plenty of time to enjoy the water and get a good workout in. Though, realistically, any kayak owner could go out into the waters themselves, I would recommend seeing the bioluminescence with a tour group, as it is very dark outside and it’s easy to get turned around or lost. Plus, our guide was CPR certified, a lifeguard and was licensed to help with medical emergencies, so if the worst possible situation were to happen, you have help. Of course, our group came back in one piece, with no tipped kayaks, which was impressive considering we were freaking out as mullet flew into our kayak.

Though it’s a bit of a drive to get out to this tour, I would recommend taking the time to check this off your Florida bucket list. The staff was friendly, the tour was beautiful, and it was fun participating in something so unique. So, grab your kayak and let’s get glowing.

esearch and personal experience both confirm that in the mathematics of synergy, one quickly moves from arithmetic, to geometric progressions, where potential can become something exponential. As author Steven Covey said, “Synergy is what happens when one plus one equals ten or a hundred or even a thousand! It’s the profound result when two or more respectful human beings determine to go beyond their preconceived ideas to meet a great challenge.” All businesses and economies are built on the principle of collaboration and interdependence, but on occasion, professional synergy moves to a unique level. This is the case with Steven Terry of Melbourne based Sena-Tech and Nicholas Roney of Veytec. Terry’s company is one of the area’s leading contractors for system design and installation of structured cabling, access controls, intrusion detection, video surveillance and audio/ SPACE COAST B US INE S S

video systems. Veytec is an IT infrastructure and services firm, locally representing Cisco Systems, the industry leading vendor of technical integration equipment from the Data Center to Collaboration and Network Security. By finding ways to work together and leverage the synergy found in complimentary skillsets, Sena-Tech and Veytec are able to offer and deliver complete, end-to-end technology solutions from the data center all the way to phones, video and security devices.

WHY IT WORKS “What Sena-Tech offers, Veytec doesn’t, and what Veytec offers, Sena-Tech doesn’t” Terry said. Adding, “Between our complimentary expertise, along with a focus on delivering an exceptional customer experience, the dynamic of our partnership has worked really well.” According to Roney, Veytec and Sena-Tech are very similar in size and approach.

“We are both locally concentrated and very relationally driven, while bringing state of the art technologies and business solutions to our clients,” he said. Being “relationally driven” means that each company spends a lot of time listening and getting to know the needs and expectations of the customer before deciding which customized solutions to implement. When it is a campus as large and complex as Mike Erdman’s new Nissan and Toyota dealership, located where 520 intersects with I-95, the challenges are considerable. Their experience, of working not only with the client, but with the general contractor – in this case MH Williams – becomes paramount. This hands-on approach also allows both local partners to deliver tailored and specific solutions for each complex project. It is not the first time the companies have teamed together. Last year, Pirtek – an international hydraulic hose company –

opened its national headquarters in Rockledge. It is a state of the art 120,000 square foot facility on a 10-acre site, which is the base for its U.S. operations. Again, Sena-Tech, Veytec and the general contractor worked together to produce a center where franchisees from around the country come, along with being their national distribution center.

CUSTOMIZED VALUE ADD Roney came to Veytec after serving as an intelligence officer with the U.S. Army Special Forces. It was an experience that trained him to analyze copious amounts of data, before making recommendations that could put Soldiers in harm’s way. It is a skill set that has bridged into his current profession quite well. After his Army career, he was trained by an organization founded by a former head of sales for Cisco, which works exclusively with veterans to provide them a fast-track to O C TOB ER 2 019

an Account Executive position. He then went to Veytec. “We are, what is referred to as, ‘a value-added reseller,’” Roney explained, “serving in that integration space between what vendors (such as Cisco) can supply and what a client needs. Our engineers and I do extensive discovery of the network and the organization, then work with the clients to produce a uniquely tailored and cost-effective solution for their company.” For instance, in the Pirtek facility, there were multiple conference rooms, which used four or five different types of Cisco collaboration gear tailored to meet the specific requirements of that room. As companies have more and more employees working remotely, as well as many needing global access, Veytec supplies the technology and Sena-Tech provides expert Project Management and installation to produce – among other things – board and conference rooms that have full audio/video displays and cameras that even move to track the person who is talking.

voltage cabling, security cameras, access card readers, etc. Sena-Tech and Veytec came highly recommended, especially by MH Williams, and offered that complete solution” Jonathan Bonnett, Mike Erdman Auto Group’s IT Manager said. Bonnett went on to say that the two companies “seemed to know exactly what we wanted and anticipated our needs.” Through their experience with other locations, the Erdman Group had a number of ideas and Sena-Tech and Veytec came back with solutions that exactly fit their requirements. “From an IT perspective, the system they designed and implemented is very easy to manage,” Bonnett said. “It is a lifesaver for me,” he added, “I can manage the networks on or off site. It is all cloud based; with features you just can’t find from other manufacturers.”

WORKING WITH PEOPLE YOU TRUST On major projects, like the Toyota and Nissan dealership, the buck ultimately stops with the general contractor, who oversees all elements of the construction process, in this case MH Williams Construction Group. Even if a subcontractor is to blame for a problem, the client always defaults to the general contractor to make it right. Fortunately, Steve Terry of Sena-Tech and Mike

MAKING AN EXPERIENCE When Mike Erdman moved his car dealership from Merritt Island out to I-95 in Cocoa, he wanted his customers to have an experience they couldn’t find anywhere else. That vision can be seen in everything from the car tower, which is visible from the interstate, to the technology that enhances the customer, sales and service experience, along with the technology that facilitates the dealer’s operations. “When the project was moving forward, we started reaching out to different vendors for the IT solutions we needed. We wanted a team who could provide the network, phone systems, low SPACE COAST B US INE S S

Williams Jr., the vice president of MH Williams, have known each other personally and professionally for a number of years. This has led to collaborating on several projects, including facilities for Embraer and Satcom Direct. “I really like Steve’s approach,” Williams said. “He and his team are extremely professional, well prepared and always delivering on time. Plus, you can tell they stay abreast of the ever- evolving technology which clients are looking for.” Williams added that Terry is also skilled at interfacing with a client to discover their needs and is quick to recognize when additional experts in the industry are needed. Then he will bring in experts, like Veytec, who can address specific desires or questions the client has. “There are an immense number of options customers can choose from. It is great having someone like Steve, who is local, who can meet with the client and work with them from concept, through installation, to testing and then being fully operational,” Williams said. More and more, whether it is a corporate headquarters or a place where clients are making purchase decisions, the goal is to create environments where technology and human interaction produce a productive, memorable and pleasant experience. The only way to generate that connection, is the same type of synergy seen in talented musical groups, where each musician’s special expertise is blended together to create that unique/harmonious combination. This is what Sena-Tech and Veytec have been able to deliver.

THE STORY BEHIND THE SPACE COAST’S NEW HEADQUARTERS [ By Sebastian Northside, Writer ]

T

he real story behind the new headquarters, that are being located on the Space Coast like Lockheed Martin’s Fleet Ballistics Missile headquarters’, is one that began quite a while ago. Like the awe of seeing a huge wave break on the beach, we usually do not realize that wave may have traveled hundreds, if not thousands, of miles to make that dramatic splash. This story actually began during a sixty-one-day period in 2005. In that fateful year, Florida was facing the possibility of losing up to five military installations, and Brevard County was especially vulnerable. Three years earlier, United States Secretary of Defense, Donald H. Rumsfeld, announced that 20-25% of all U.S. Military Bases would be closed in an effort to increase the efficiency of our military. Known as BRAC, or a Base Realignment and Closure, this process had only been conducted four times throughout the United States’ history. However, this round was

Photos provided by Lockheed Martin

to equal the total of all the last four BRAC rounds combined.

Taking Action The Economic Development Commission of Florida’s Space Coast (EDC) began a strategic approach to maximize the military’s presence in Brevard County. Primary Goals were established, and the community rallied together in a joint effort of support. On May 13, 2005, also known as “BRAC Friday,” the official list of recommended closures and relocations was released. Fortunately, Patrick Air Force Base (PAFB) skirted the recommendation to close, saving a huge economic engine for Brevard County. Currently, there are over 13,000 military, civilian, military dependents and contractors on the base. The good news that Patrick Air Force Base would remain, came with the news that a recommendation was made to relocate the Nuclear Test and Evaluation at the Naval Ordnance Test Unit (NOTU) in Cape Canaveral, to the Strategic Weapons Facility Atlantic in Kings Bay, Georgia. The work began again. This time, the stakes were clearly defined, and the timeline was extremely tight.

The EDC and the community had just 61 days to review this new recommendation and prepare a formal argument that would convince the BRAC Commission to reverse their recommendation. By analyzing the BRAC criteria, the EDC found that if relocated to Kings Bay, NOTU military operations would be degraded and cost significantly more due to the vast increase in transit time from pier, increasing a single mission’s duration by 22-26 hours. In addition, NOTU leadership would lose the Joint Force interaction with the 45th Space Wing, and with NASA. The final step was to testify before the BRAC Commission in New Orleans on July 12, 2005. Speaking on behalf of Brevard County and the EDC was Captain Bill Borger, U.S Navy Retired, and Congressman Dave Weldon, M.D. In an 8 – 1 Vote, the Commission overturned the recommendation, and NOTU remained at Cape Canaveral.

The Differentiating First Domino Saving NOTU was the first domino in a line which would ultimately lead to the recent announcement that Lockheed Martin would be moving its Fleet Ballistic Missile Program Headquarters from California, to Titusville, Florida. The sequence was: Lockheed Martin’s Post Production Center of Excellence coming to Cape Canaveral Air Force Station in 2006. Then, the Navy Engineering Service Facility in 2009, followed by the Navy Strategic Weapons System Ashore in 2012, then the Lockheed Martin E & O Operation in 2013. All were projects and successes that created the dynamics and catalysts which were key to bringing this important headquarters to Titusville today.

Celebrating a New Headquarters On July 30, nearly 15 years after EDC efforts played an essential role in retaining NOTU in Cape Canaveral, civic and community leaders joined Lockheed Martin executives in recognizing the significant milestone of Lockheed Martin’s Fleet Ballistic Missile (FBM) Headquarters officially marking its relocation to Titusville, Florida. The FBM program supports NOTU and its submarinelaunched Trident missiles. The presence of NOTU was one of the key factors in the decision to relocate the FBM Headquarters, announced by Lockheed Martin in February 2017. This move has already led to a commitment to invest nearly $40 million into the Titusville campus and the transition of 350 jobs from Sunnyvale, California. Lockheed Martin has developed, built and sustained six

generations of submarine-launched ballistic missiles under the FBM program. Sarah Hiza, Lockheed Martin Space’s vice president for Fleet Ballistic Missile programs, said the Space Coast’s significant defense and space industries were crucial in Lockheed Martin’s decision.

“The beauty of being in an area where you have a workforce and it’s already mission-focused,” she told the Orlando Sentinel at the dedication, “Is they understand when they are hired what we do. They know what they signed up for.” Sixty years from now, the success celebrated that day will still be felt on the Space Coast, as a move of this magnitude will positively impact generations to come in Brevard County. In a recent interview, Lynda Weatherman, President and CEO of the EDC stated, "Lockheed Martin's Fleet Ballistic Missile program in Titusville is equivalent to what Embraer was to Melbourne 10 years ago. Coming in, starting in with 200 or 300 jobs, but then as you make the case, it's at 1,000 jobs."

THE IMPORTANCE OF A HEADQUARTERS • Headquarters are the hub of an organization’s operation and administration, and holds a high level of influence not only within its own corporation, but also within the business ecosystem in which it operates. • By holding a company's executive management team and key managerial and support staff, key business decisions related to functions such as strategic planning, corporate communications, taxes, law, marketing, finance, human resources and information technology are handled within a headquarters • Where a corporation's headquarters is located can play a significant part in helping form its culture and mission, as well as steering its philanthropic and business practices. • Potential benefits from headquarters include:

So are 31 of the other head coaches of the National Football League, along with more than 100 top coaches in Division I college football.

Using technology to analyze video and give instant feedback to players has become a powerful tool in sports. In that sense, 8K Solutions, established in 2014 with a roster of approximately 25 employees housed in a 26,000-square-foot headquarters, scores touchdowns all over the place.

Aton doesn’t run with the ball elusively, make great passes from the quarterback position or lead a team in tackles on defense. But he does help coaches get the most out of their own players. Aton is founder and CEO of 8K Solutions in Titusville, which relies on decades of technology know-how to provide expert service and innovative lines of ultra-high-definition cameras to professional and collegiate sports organizations. In essence, as a trusted tech partner for the design, integration and maintenance of video solutions — with immense

“We’re focused on the needs of what in the big scheme of things is a pretty narrow niche of customer base,” Aton says. Leading the way: mastRcam. Talk about a versatile player. Arriving on the scene about five years ago, the mastRcam is best known for its ability to film from tall heights while being operated by a person safely on the ground. That’s especially important during use in windy conditions. Plus, there are multiple versions, each literally rising to the occasion, positioned high above practice fields. They include the mastRcam mobile, mastRcam SC and mastRcam Tower, all more maneuverable than traditional lifts or stationary structures. Notably, both teams from last year’s Super Bowl, the Patriots as well as the Los Angeles Rams, ran the mastRcam through its paces in preparation for the big game.

“We definitely don’t want to lose our focus on our core customer base,” Aton adds about his customers and the continual development of new technologies. That isn’t likely to happen, not with newcomers such as the Lyvve Coach and its instant video review on screens located right on the practice field. The system’s highlights: Each play is automatically created and "loops" until the next play is executed. Also, remote control and tablet interfaces enable coaches to illustrate their teaching points. Designed with the coach in mind, it’s the “world's first and most costeffective practice field replay system,” according to Aton. The newest star is the Walk Through Wall. One can call it the NFL’s popular Madden video game on steroids. The system produces projected images of approximately 40 feet wide and 10 feet high — with either virtual characters graphically generated or actual video

stretched and formatted to fit a wall of that size. Teams use it to “walk through” their game plans. “It really creates almost a [virtual reality] kind of experience,” Aton says, noting the challenge for teams is having an available room large enough to accommodate the viewing screen. Actually, all of 8K Solutions’ equipment can be described as larger than life. They have to be, Aton says, because the competitive stakes are that high. “There is a place for it,” Aton explains about the technology and equipment. “But people going out in their normal home and buying an 8K 65-inch TV, the cost is probably not worth the payoff. It’s more of an industrial and commercial application, where you’re viewing it on a very large screen. Then there’s a difference; then it’s worth the investment.”

And it’s a game plan that is closely tied to Titusville. He went to high school in Titusville, and his wife grew up there. In addition, he’s an integral part of numerous local organizations. In the end, he wants to win in football, and he wants to do it from home, describing Titusville as a “big part of my personal life and community life.” It’s happening — and you can view it on big screens.

Aton and 8K Solutions are betting on it. Aton is a pioneer in sports video

‘RESORT’ REHAB: VIERA DEL MAR HEALTH AND REHABILITATION CENTER IS ON THE WAY TO SETTING NEW INDUSTRY STANDARDS

[ By Michael Candelaria, Writer ]

achael Mazer leaves little doubt about her willingness and ability to engage with others throughout her community.

“I’m a social butterfly,” Mazer said. As the administrator/chief executive of Viera del Mar Health and Rehabilitation Center, which opened to patients last spring, Mazer’s pleasant disposition fits well. Owned by Gulf Coast Health Care, a leading multistate provider of short-term, postacute and skilled nursing services, the center has ambitious plans. Built on Stadium Parkway, the center is a senior rehabilitation and nursing care center to serve Viera and surrounding areas — with eyes on being a resort. “We didn’t want to be like everybody else,” Mazer noted about the vision. “Our expectations are higher.” Specifically, Viera del Mar is designed to expert care in recovery from accidents, illnesses or injuries. Specialists customize in medical, nutritional, mental and behavioral treatments; work with referring doctors to issue progress reports or update treatments and clinical care as needed; and collaborate with local specialty physicians to further individualize your care. In addition, personalized discharge plans are created with follow-up support. Meanwhile, outcomes meet and typically exceed industry standards, with the rate of return to hospitals considered exceptional, cites Mazer. There are 131 beds in all, with 77 private rooms and 27 semiprivate rooms. SPACE COAST B US INE S S

Services encompass physical, occupational and speech therapy; medication management provided by a wellness team; 24hour skilled nursing care; specialized skin and wound care with weekly consultations as needed; respiratory therapy; stroke rehabilitation; diabetes management; VitalStim® therapy to correct swallowing problems; cardio-pulmonary rehabilitation; hospice care; and postsurgical care. That’s just a sampling. The full list is long. Also, included throughout the center’s 92,600 square feet are more than 3,850 square feet of therapy space with state-of-theart equipment and modalities. Mazer calls it a “rehabilitation gym.” There is a rehab courtyard, too, along with a studio apartment that provides therapy teams the opportunity to conduct complete therapy evaluations by studying daily activities, plus a beauty salon/spa, restaurant-style dining and room service. A few more amenities: a movie theater, bistro, active life enrichment programs, private dining for family celebrations, WiFi Internet access and flat screen televisions. The overriding message: “No matter the need, we are committed to helping you or your loved one achieve the highest level of independence and health.”

S PAC E C OAST BU SINES S .CO M

Notably, the center already has received national recognition from NRC Health, an organization that honors top-performing hospitals and health systems. NRC recognized the center’s ability to discover and fulfill residents’ most important needs and expectations. The center, according to Mazer, holds true to ownership’s motto, “A New Generation of Care.” Gulf Coast Health Care operates 43 skilled nursing and assisted living centers throughout Florida and Mississippi with a team of more than 6,000 employees, referred to as associates. Mazer, who has been part Gulf Coast for more than five years, says the company understands that the mindset and needs of caregiving is ever-evolving. As a result, the company cultivates a proactive, progressive approach to meeting that challenge — particularly when it comes to staffers, who currently total more than 90 nurses, therapists, counselors and other care providers, with addition personnel planned in the future.

While the center looks forward to contributing to the area’s economic development through jobs, employment positions won’t be filled without ample due diligence. “We don’t just higher people who walk through the door. Associates [staff members] are part of the interview process, peer review,” she describes. “They can confirm or deny [a hiring], and it gives them a voice. … We try to promote empowerment and compassion.” For Mazer, that also means customer service, both to patients and to their families.

“Customer service is really our big focus,” she said. “Quality is a given in our industry that we have to have good quality of care. But we really have a huge focus on customer service and guest service.” Rachael Mazer

It’s an accommodating approach, she added, that extends throughout Greater Melbourne. The center is a frequent sponsor of community events, such as health fairs, while volunteerism from locals is welcomed at the center and is encouraged outward among staffers.

“We want to be able to help the community, too,” Mazer concludes. “… We want to show the community what we’re made of.” Photos provided by Viera del Mar

President of the Titusville Area Chamber of Commerce [ By Jack Roth, Writer ] SPACE COAST B US INE S S

A

lifetime resident of Titusville, Marcia Gaedcke knows that the Space Coast is truly the “comeback king,” having recovered from the devasting job losses from the Space Shuttle retirement at the beginning of a national recession. As a passionate and thoughtful leader, her efforts as president of the Titusville Area Chamber of Commerce are a big reason why things are looking up in North Brevard, and she’s willing to roll up her sleeves and work to ensure the future remains bright. What inspired you to take the professional path you have chosen? Many people have inspired me along the way – teachers, friends, relatives. In my interview for employment at the Chamber, I was asked to name one person I admired who was famous or notable, and I answered Lawton Chiles. The reason I picked him is he made it a point to stay grounded and in touch with the citizens he represented in his career as an elected official. He didn’t let the power of his position(s) influence his perception of his importance or self-worth, and he wasn’t afraid of hard work.

How has your past experience helped you in your current role? I was fortunate to grow up here, so I have institutional knowledge about this community that has been invaluable over the years. I’m a product of Brevard Public Schools (go Oak Park Eagles, Madison Mohawks and Astronaut War Eagles!). For me, it’s about having an impact in the community where I was raised and building a better place for current and future generations so they can have the opportunities to make positive memories and get a solid foundation for their success.

How would you define your role at the Titusville Area Chamber? I joke I’m the chief cook and bottle washer … but it’s not really a joke. We’re led by an amazing group of passionate community leaders with our volunteer board of directors, and they set the vision and direction for the organization, but the business of the Chamber isn’t their primary responsibility – it’s mine. I have an incredibly dedicated team I have the privilege of working with every day, but in the end, I’m responsible to the members of this organization and the community to provide value and to keep this organization relevant and growing. In many ways I’m running a small business like many of our members. I worry about the same things they do, and this gives me perspective to help them face their challenges and meet their needs.

For me, it’s about having an impact in the community where I was raised and building a better place for current and future generations so they can have the opportunities to make positive memories and get a solid foundation for their success. – Marcia Gaedcke

How important is building relationships with the local business community? Relationships are everything. We’ve worked extremely hard over the last year to look at how we’re communicating with our members and the community, as well as improving our systems and procedures. Being responsive to input, open to conversation and discussion, and genuinely interested more in the other person/entity than in yourself are key. I constantly remind my team it isn’t about us, it’s about the person needing assistance and what we can provide to get them the results they desire.

How would you define the relationship between the Chamber and the City of Titusville? There aren’t enough adjectives to describe how much I value the positive relationship we have with the city of Titusville. I’m a big fan of our city manager, and his approach to leadership and development of our city, and he has an amazing team of leaders throughout the organization. We’ve got a solid city council that’s ⊲ O C TOB ER 2 019

tackling opportunities and challenges in a thoughtful manner, and I’m grateful for my friendship and business relationship with each and every one of them. The Chamber and the city work very closely on many things, including our Launch From Here community brand, and we’re so much stronger and impactful as a result.

What is your greatest challenge? First, I would say resource development. Maintaining relevance and being innovative and involved in literally every aspect of the community takes a lot of hard work and funding. We’re masters at doing a lot with a little and stretching our resources to cover all of our bases, but it would be nice to not have to worry sometimes. The second challenge is more personal. When you’re in my position, people associate you with that more than anything else, and when you speak or express an opinion, it’s usually viewed as the opinion of the Chamber. That’s a lot of responsibility, and I take it very seriously.

What is your No. 1 goal for the Chamber? Right now, it’s financial stability and building a solid reserve. We’ve weathered a lot as a community with the recession and the retirement of the Space Shuttle, and the Chamber has suffered along with every other business and organization. We’re in a bit of a rebuilding mode too, growing our membership, increasing our revenue streams, continuing to innovate and stay on top of the latest trends and technology, so focusing on that reserve base to free ourselves up to embrace new opportunities and provide more services is my biggest priority.

What do you love most about your job? The diversity. I can’t imagine another place where I could be involved in so many different things. We’re engaged in education, advocacy, environment, recreation, social services – you name it. I’ve learned so much, and every day presents a new challenge or opportunity.

How does technology help the Chamber with outreach and other initiatives? It’s changed the way we communicate, but it has also increased the expectations of our constituents. We’ve integrated texting reminders, targeted e-mails and blogs, and added social media channels to our repertoire. We’re also working with interactive maps and videos on our website and are always looking at new ways to share information and get our message across. Technology is also a top concern for many of our members, so we’ve developed programming to help them navigate their way and make informed decisions about what’s best for their business.

What do you love the most about the Space Coast? We’re in close proximity to anything we could possibly want, and if it’s not here we have access to major transportation hubs to get us there. I also love the intersection of nature and technology. Seeing the commitment of this community to our natural environment while still challenging the edges of human exploration and technological development continues to be a thrill for me. My favorite place to watch a launch is from my kayak out in the lagoon.

WHERE TO GO AND WHAT TO DRINK AT EPCOT’S FOOD & WINE FESTIVAL 33 :: SPAC 90 SPACECOA ECOAST ST LLIV IVIN ING G | S PAC ECOAST L I V I N G .CO M

ARTICLE AND PHOTOGRAPHY BY ABBY McHENRY, WRITER

O

ctober, as it is home to Halloween, is usually a time of year that excites children. However, Disney World has made sure to give adults a reason to celebrate, too: Epcot’s International Food & Wine Festival. Every year, this festival features a variety of food, wine, cocktails, etc. from around the world, as well as live entertainment and the opportunity to meet your favorite celebrity chefs. Though there are certain drinks and menu items that have become staples, any Food and Wine Festival devotee will know that the lineup changes every year, so there is always something new to experience.

Dinner …

The new Appleseed Orchard Marketplace offers a variety of craft brews, ciders, wines and lite bites. It will be located in Canada next to Le Cellier Steakhouse in the World Showcase. The drinks will be offered individually or as flights, and this stand will also include a kid-friendly Frozen Apple Pie drink. Our pick: The Apple Blossom Sky Cocktail. It is an iced apple flavored cocktail with marshmallows on top. This comes served in a cute, rose-gold colored plastic cup, which is perfect for Instagram.

If you are looking for some healthier options, Active Eats is the place to be. For a healthy spin on a classic, kid-approved favorite, try Loaded Macaroni & Cheese with Nueske's Pepper Bacon, cheddar and leeks. We’ve given this dish a 10/10. The stand will also offer gluten-free and vegetarian options. Our pick: If you love the lime and drinks with a bit of sparkle, try the M.I.A. Beer Company’s HRD WTR Key Lime Hard Sparkling Water.

Emile’s Fromage Montage – inspired by Remy’s brother, Emile from the movie Ratatouille – gives you a chance to enjoy a variety of cheeses. The fromage includes five stands. Once attending and collecting stamps from all five of the stands, you will receive a specialty cheesecake unique to Epcot’s Food and Wine Festival at Shimmering Sips, the final destination of the Fromage. Each required menu item from the stand will include cheese (obviously). And, as you might have guessed, Shimmering Sips offers a variety of mimosas, champagnes, ice creams and more. Our pick: The Blood Orange and Key Lime Mimosas were fruity and sweet, and perfect for sunny Florida.

… and a show

The best way to enjoy wine and food is with a show, of course. The Eat to the Beat Concert series includes famous acts such as Baha Men, Hanson, Boyz II Men and many more. The concerts will take place during the evening at the America Gardens Theatre at World Showcase, Epcot. The theatre will host 36 acts from now through November 19 (see Walt Disney World website for full schedule). And with all this talk about celebrities, what would a food and wine event be with its celebrity chefs? Chefs include Robert Irvine from Food Network’s Restaurant: Impossible; celebrity chef and author of Life is a Party, David Burtka; Chef, Writer and TV Personality Andrew Zimmern; and so many more. Chef Brunch, Q&A, and Meet and Greets are a separate fee from your Epcot admission. On select Sundays, you can dine with a gourmet guest while feasting your eyes and taste buds on a delicious breakfast buffet. With over 30 individual marketplaces and musical artists, accompanied by several celebrity chefs, this event is not to be missed! For more information on the 2019 Epcot International Food and Wine Festival, visit disneyworld. disney.go.com. One final tip: though the festival is the park’s main attraction, Epcot’s usual rides are still operating. So, make sure to get fast passes early (a month in advance if you’re visiting for the day, and two months in advance if you’re staying at a Disney hotel). O C TOBE MAYR2019 2019:: 34 91

Once Upon a Theme Park A GUIDE TO MICKEY’S NOT-SO-SCARY HALLOWEEN PARTY ARTICLE AND PHOTOGRAPHY BY JESS MACK, COLUMNIST

Instagram: @jessamack_ Website: jessamack.com This is the beginning of a new column called, “Once Upon a Theme Park,” by Orlando park blogger, Jess Mack. In this column, she’ll cover special events at both Disney World and Universal Studios, provide insider tips and keep you up to date with all that’s new and exciting at the parks.

S

pooky season is upon us and one of the biggest Halloween events in central Florida has been in full swing for about a month and a half now. That may seem crazy for some but, for others (including me) it was the beginning of their favorite time of the year. Mickey’s Not-So-Scary Halloween Party began on August 16th and I went to the event to give you the full rundown on how to have the perfect night! Let’s start out with the basics. Not-So-Scary takes place on select nights in August-November. Tickets are anywhere from $90-$122 per person, depending on the night. The party begins at 7 p.m. and runs until midnight, but your party ticket will allow entry into the Magic Kingdom as early as 4 p.m. that day. These parties are jam-packed full of things to do and see, and it can become overwhelming for first-timers. I suggest taking a look at the event schedule so that you know exactly what you want to see and do. There are several special shows – like the Hocus Pocus Villain Spelltacular – throughout the night with multiple showtimes for each, so you can be a bit flexible with your schedule. Keep in mind the fireworks happen only once per night. There are also special changes made to a few attractions just for the event, including an even darker Space Mountain and live actors on Pirates of the Caribbean.

92 : SPAC ECOA ST L IV IN G | S PAC ECOA ST L I V I N G .CO M

Special character meet-and-greets are also available like Jack and Sally, the Seven Dwarfs and various villains, just to name a few. However, these meet-and-greets will have tremendous waits. Jack and Sally can get up to three hours depending on the night. Unless you really want to meet these characters, I would suggest skipping them. Some characters will have very short waits though so you can still meet them without losing too much time. And don’t forget about the candy! As soon as you enter the event, you’re handed your own trick-or-treat bag to fill with as much candy as you can get at the designated treat trails throughout the park. They are rather small so if you want to collect more, bring your own bag. Now that you have all the basic info, let's run through how we had the most relaxing time, even with the crowds. First, we created a list of the things we wanted to do, which included Space Mountain, Pirates of the Caribbean, Disney’s Not-So-Spooky Spectacular Fireworks and the Boo-to-You Parade. We knocked the rides out as soon as we got in and only waited about 15 minutes for Space Mountain and 20 minutes for Pirates of the Caribbean. Once we did those, we had about two hours of free time to roam around the park to observe and enjoy the little not-so-scary touches Disney created. Your best chance to get on some of the more popular attractions will likely be during the first parade. We saw Seven Dwarfs Mine Train at only 30 minutes!

A couple extra tips: 1. Dress for the weather! It’s fun to dress up for Halloween, but this is Florida and it will most likely be 90 degrees during your Party. 2. My last and most important tip to you is to have fun and take it all in. Chances are you are only going to be at this event once this year so take your pictures and then put your phone away and enjoy time with your family and friends!

During this downtime we ate dinner, hit all of the treat trails to load up our bags with candy, headed to the Haunted Mansion to listen to Lady Carlotta tell tales of the classic attraction (highly recommend) and then found our way to Main Street to get our spot for the fireworks. The best spot for the fireworks this year, in my opinion, is in the back of the hub by Casey’s Corner. You will have a great view of the projections on the castle while also being able to see all of the half perimeter fireworks without having to turn your head. Definitely don’t miss the fireworks. They are amazing and the projections are stunning. After the fireworks we grabbed our spot on a curb on Main Street for the second Boo-to-You parade. Unless you really want to see the first parade, wait for the second one. Most guests will already be waiting for the first parade by 7:30 p.m. and they’ll spend roughly two hours just waiting around. And if you’re on Main Street, keep in mind that the parade starts at 9:15 p.m. in Frontier Land, meaning it won’t be getting to you until about 9:45 p.m. If you wait for the second Boo-to-You, you will have a much easier time finding a great spot about 30-45 minutes before the parade. BEST OF SPACE COAST

Jeffrey Donnelly, The Bar Butlers

For three months, community members visited our website and voted for their favorite business owners, entertainers, artists, etc. in the “Best of the Space Coast” campaign. In celebration of our winners (almost 200), we held a finale mixer at the INFINITI of Melbourne dealership. Here, winners not only received their awards, but all guests were welcomed to enjoy free food and drink, get silly in a photo booth and, most importantly, network with other local business owners. For one evening, the community came together in celebration of all the incredible businesses held here on our huge coast, and the excitement was palpable. Thank you to our event sponsors: INFINITI of Melbourne, Buds Etc. Florist, Red Ginger Chinese Restaurant, River Rocks, Yellow Dog Café, CuiZine, the Bar Butlers, DJ Tunes of Florida and TapSnap.
