Welcome on board Malaysia Airlines, and thank you for reading our in-flight magazine, Going Places. April has traditionally been the month when we dedicate the entire issue to food. In Kuala Lumpur, the restaurant scene has flourished so significantly in recent years that we decided to come up with a list of the city’s best restaurants to help you navigate around the hundreds of gourmet venues. In our cover story, Sean Yoong, arguably Kuala Lumpur’s most well-known food blogger, tempts us with his vivid food writing and spoton observations of the restaurants which made it into the list. From Malaysia’s national dish of coconut milk rice to Peking duck with black truffles, Sean says, “it takes true skill and style to stand out amid the culinary clamour”. If you’re reading this on your way to Hong Kong, head over to Wan Chai, where big-name chefs have opened up trendy dining establishments, from Jason Atherton’s two outposts Ham & Sherry and 22 Ships to Parisian chef Akrame Benallal’s seafood-focused haute French cuisine. JET-SETTING CHEF Nobuyuki Matsuhisa, the highly-acclaimed chef proprietor of Nobu and Matsuhisa restaurants, traces the beginnings of his professional ambition to the day his older brother took him to a sushi restaurant for the first time. From head of security at a popular nightclub to internationally acclaimed artist, Joana Vasconcelos’ career has been extraordinary. After coming to prominence at the 2005 Venice Biennale, where she presented a chandelier sculpture entitled The Bride, the Lisbon-based artist has enjoyed whirlwind success with solo exhibitions in Europe and South America. This month sees Vasconcelos present her first solo exhibition in China, created and compiled especially for the Grande Praça space at the MGM Macau. This collection reflects on 500 years of trade between Portugal and China, in which Macau played an integral role, with various motifs such as maritime and Norse mythology running throughout. Vasconcelos employs numerous disciplines to explore her subject matter, including textile, sculpture and painting, making for a visually exciting showcase that’s not to be missed.

Oslo’s well-developed coffee culture provides ample opportunity for connoisseurs to parse the nuances of light roasted beans from local roasters like Tim Wendelboe (timwendelboe. no) and Solberg & Hansen (solberghansen.com). The food hall occupies an old brick factory building beside the river and gathers more than 30 stalls, shops and restaurants under one (very large) roof. A focus on seasonal, local products is


most evident at the mezzaninelevel restaurant von Porat (vonporat.no), where dishes often feature foods from fellow vendors. But for a quick bite, pull up a stool at Anni’s Polsemakeri (facebook.com/ Polsemakeri), a butcher that serves an excellent platter of grilled sausages, slaw and creamy potato salad.

2.30pm Tjuvholmen, or Thief Island, is the highlight of the city’s continuing urban renewal project to reclaim industrial areas and docklands along the waterfront. The gleaming area has been transformed into a vibrant arts district, and its centrepiece is the city’s new architectural jewel: the Astrup Fearnley Museet (afmuseet. no). This modern-art museum reopened in September 2012

in a sloping glass-and-timber complex designed by Renzo Piano. Inside, provocative exhibitions feature works from Damien Hirst, Takashi Murakami and Cindy Sherman. Outside the museum, a small sculpture park is dotted with pieces by Louise Bourgeois, Anish Kapoor and others. After a tour, explore Tjuvholmen’s pedestrian lanes, where several art galleries have taken up residence. At the Pushwagner Gallery (pushwagner.no), the giddy colours and playful pop art from Hariton Pushwagner – the pseudonym of the acclaimed Norwegian artist Terje Brofos – are a far cry from Munch.

4.30pm Not many capital cities have impressive waterfalls gushing within the city limits. But that’s

precisely what you’ll find on a walk north along the pretty footpaths hugging the Aker River. At the Beier Bridge, the river crashes down a cliff to create the spectacular Waterfall at Molla, as well as ephemeral rainbows in the misty spray.

7pm Head to the upscale Frogner neighbourhood west of the city centre, where hidden in a cobblestone courtyard is Kolonihagen (kolonihagen.no), a rustic restaurant with exposed brick walls and wooden beams. The restaurant sources organic ingredients locally, and the delicious results are simple, seasonal dishes, like wild mushroom soup with black truffles, and fire-grilled reindeer with Jerusalem artichokes, cranberries, sprouts and pickled turnips.

9pm At a pair of music spaces beside the Aker River, the stage itself is arguably as interesting as the performers on it. Kulturkirken Jakob (jakob. no) is a deconsecrated church whose afterlife as a ‘cultural church’ is devoted to a variety of dance, music and theatre events. In addition to jazz groups and country singers, the space also hosts a weekly Sunday-night service, which, with stage lighting, grand piano and band, is more performance than prayer. A few blocks away is Bla (blaaoslo.no), a bunker-like, graffiti-covered building that maintains an even more eclectic schedule. On some nights, you’ll find bingo parties and literature debates; on others, DJs and the odd electronic-pop band play to a packed, dancing house.

T

he sea is so much a part of Hong Kong that there might as well be salt water in its veins and the sound of surf in its ears. Ocean breezes blow through its streets; fish and fruits de mer overflow its market stalls and dinner tables; people pray to Tin Hau, Goddess of the Sea; ferries, water-taxis and rowboats hustle about the harbour, connecting the city with some of its hundreds of islands. Much of Hong Kong, especially that prime real estate around Victoria Harbour, is built on land reclaimed from the briny. Nowhere is this bond with the sea more apparent than in Wan Chai.

ALL AT SEA

Wan Chai! The world of Suzie Wong, sailors on shore leave, and rowdy bars awash with rum and badly sung sea shanties! Or it used to be. These days, Wan Chai is a glorious hodgepodge of grunge and glamour, highbrow and low-rent. It’s a district on the north coast of Hong Kong island, overlooking the magnificent natural harbour, and neighbour to Causeway Bay, one of the city’s retail hubs, where the sound of tinging cash tills mingles with the ‘ding ding’ of passing trams. Those same streetcars trundle through Wan Chai to get there, along Johnston Road, which followed the coastline in 1904 when the tracks were first laid. These days,

however, passengers on the tram would be hard-pressed to hear the crashing of waves – the water’s now a kilometre away, thanks to reclamation. But there are still echoes of those bygone days. Ship Street, for example, and its adjacent streets named after Amoy and Swatow (ports further along the China seaboard), originally led down to shipyards that busied the long-gone quay. Nearby Ruttonjee Hospital stands on the site of the Seaman’s Hospital, opened in 1843 as one of the city’s first medical facilities. Just behind, on Queen’s Road, a little temple (built about the same time) marks the natural coastline and is in honour of Hung Shing, the God of the Southern Sea. Long before the British planted their flag at Possession Point in 1841, this was a Chinese fishing village, and something in the air continued to attract seafarers and salty dogs well after the European-style city arrived. Deckhands and petty officers from far and wide headed here for R&R. For decades it was a cheap and cheerful quarter (to say the least) where they could make the most of the few coins in their purse. After all, their antics had already got them barred by the government from the centre of town.

their acts considerably! Nevertheless, there’s still a sense of what it was like in those pioneering, edge-ofthe-world days. Head to the market around Tai Yuen Street – there have been bazaars like this in Hong Kong since the start of colonial rule – where everything from fruit and toys to clothes and tools are on offer. It’s haphazard and cramped and boisterous – and thoroughly Hong Kong. Yet today, there’s gentrification in the air. On second thought, it’s beyond that. Wan Chai is now at the ‘gastronomification’ stage. Let’s go back to Ship Street. It’s just a hundred metres long and yet manages to squeeze in three-Michelin-star Bo Innovation (boinnovation.com) for cuttingedge Chinese cuisine, Akrame Benallal’s (akrame.com.hk) eponymous French dining room (1 star), British chef Jason Atherton’s two outposts, 22 Ships (22ships. hk) and Ham & Sherry (hamandsherry. hk), along with Korean at Baab (baab.com. hk), pizza and vegetarian joints, finishing off with May’s Cookies (mayscookies.com. hk) on the corner. If you’re after something lighter, there’s artisan coffee at Rabbithole (rabbitholecoffee.com) or a good bowl of beef brisket noodles at Wah Lam on Thomson Road. A 10-minute walk away, the cluster of cafés and bars on Star, Sun and Moon Streets is open from early (for an omelette breakfast at Plaza Mayor) till late (a nightcap at Ted’s Lookout, perhaps). There’s also a little huddle of clothes and lifestyle shops that spill down into St Francis’ Yard. It’s a neighbourhood that can afford to

burn the candle at both ends: this was the site – on Electric Street in 1890 – of Hong Kong’s first power generator. Culinary highlights on Wan Chai’s eastern fringe are distinctly fishy. Stop at Catalunya (catalunya.hk) for fine Spanish tapas, including codfish brandade and marinated sea bass that go well with the signature tomato tartar. Executive cook Alain Devahive Tolosa spent a decade at legendary elBulli learning the ropes. And a few minutes further on, Kishoku’s (kishoku.com) skillful sushi chefs know how to turn

But it’s not all international fine dining. Wan Chai’s connection with the sea may linger in a few names, but its connection with the past is much more tangible. Apparently, it was the only masonry paint colour available on that particular day! At the end of the lane, there’s a fine Lingnanstyle temple devoted to Pak Tai, another God of the Sea. Exquisite pottery figures on its

roof depict traditional Cantonese opera characters. For a view of the (much higher) rooftops of 21st-century Wan Chai, head to Wooloomooloo Steakhouse (wooloomooloo.com/hk) perched atop Hennessy Tower. Its open-air lounge-bar offers exhilarating panoramas of the skyscraperbristled cityscape. And if it’s too breezy, they grill some good steak in the glasswalled restaurant on the 31st floor below. But to the water we must head at some stage – and the ideal spot is the clumsily-named ‘Expo Promenade’ (by the Convention and Exhibition Centre), either at night when the harbour is encircled by the twinkly crown of the vast city, or before breakfast for the 8am-sharp flag-raising ceremony next to the glitzy Forever Blooming Bauhinia sculpture, a gift from Beijing to mark Hong Kong’s 1997 return to Chinese rule. Many locals come to the promenade for early morning tai chi or power-walking. From here, a short stroll reaches the Star Ferry that links Wan Chai with the vintage piers at Tsim Sha Tsui. It’s one of the world’s great – and at about eight minutes, short – boat rides. Because of reclamation, it’s much shorter today than when the service started in 1888. Take a look back: what a majestic sight – Wan Chai, framed by all of Hong Kong, a city that rises from the waves and stands on the shoulders of giants.

One of Italy's great seasonal food events is the autumn white truffle season. This is when the landscape around the historic towns of Alba and Asti in Piedmont comes alive with truffle hunters and their keen-nosed hounds searching for the prized Tuber Magnatum Pico – one of the world’s most expensive food items, costing around USD3,500 per kilogramme. The range of truffle-related activities includes the Fiera del Tartufo Bianco d’Alba (Alba Truffle Fair), truffle hunting excursions, and restaurant visits to experience the unique taste of the white truffle shaved raw over scrambled eggs or a simple pasta dish.

SEAFOOD HEAVEN

North of Lisbon, the charming seaside town of Peniche is renowned for its excellent seafood restaurants, especially Estela, a homely family-run place that has won numerous gastronomy awards. Den Gyldene Freden (gyldenefreden.se), or ‘The Golden Peace’, situated in the heart of Stockholm's old town, is one of Sweden's most historic restaurants and has been open continuously since 1722. Consisting of three cellar dining rooms on three different levels, each with its own ambience, the building is owned by the Swedish Academy, and members have dinner here every Thursday night. The environment is matched by the food, where a selection of imaginative modern dishes is blended with traditional Swedish cooking, including such classics as husets sill (assorted herring of the house) and viltkötbular med gräddsås och lingon (meatballs of game with cream sauce and lingonberries).

TAKE A WHISKEY TOUR

Amid the green fields on Northern Ireland’s County Antrim coast near the world famous Giant’s Causeway, where the winds blow and the water is clean and pure, is a small town that is home to Old Bushmills (bushmills.com), the oldest licensed whiskey distillery in the world. Take a tour to learn more about the whiskey-making process – one that takes malted barley, grinds it up into a mash with water and then distils it before putting it in casks to mature. The seaside town of Arbroath on the Angus coast is home to one of Scotland's most famous regional delicacies – the Arbroath Smokie. The traditional method of making this, still in use today, involves curing freshly caught haddock in salt, and then hanging it in pairs in a special barrel containing a hardwood fire to smoke for up to an hour. Take a stroll through the huddled cottages of the 'Fit o' the Toon' district to visit traditional producers, buy a Smokie or two, and enjoy their unique savoury flavour down by the harbour.

CHAMPAGNE TASTING

Located some 100 kilometres north-east of Paris is the historical province of Champagne-Ardenne, best known for its production of the world's most famous sparkling wine. Here you can explore the Route Touristique du Champagne – 600 kilometres of signposted roads that meander through the principal wine-growing areas and main champagne centres of Épernay and Reims, home to famous champagne houses such as Moët & Chandon and Mercier, many of which offer informative tours and tastings. Six kilometres from Épernay is the picturesque village of Hautvillers, where Dom Pérignon, cellar master at the Benedictine Abbey, contributed to the development of champagne centuries ago. It’s a Tuesday evening in Mallorca's capital, Palma, and joining the locals on a tapas crawl by going from bar to bar is an excellent way to get into the island’s eating and drinking groove. Tapas can be anything from a simple bowl of olives or tortilla española (potato omelette on bread) to more sophisticated offerings such as angulas (baby eels on toast). Some of the bars on Palma's tapas crawl include Jamón & Jamón (specialising in aged hams), Tapas Club, Bar Boya, La Gran Taberna, and Bar Cerveceria, but just keep an eye out for where the action is.

The picturesque village of Pateley Bridge in the Yorkshire Dales is home to a unique shop – the Oldest Sweet Shop in England (oldestsweetshop.co.uk) and now the world, having appeared in the Guinness World Records book. Inside, the shelves are packed with row upon row of glass jars bursting with over 200 kinds of brightly coloured confectionery, and on the wooden counter top are the traditional Avery scales used to measure the sweets into paper bags.

The Mayans may have invented it, but one country that is synonymous with chocolate is Belgium. Many connoisseurs consider the nation’s speciality – bonbons or pralines – to be the world’s best. Grace Estibero, 82 years old, lives in Mumbai, India but was born and grew up in Goa, in between the sea and the jungle. She is of Portuguese origin, and as a result, her cooking has the same influence. Some years ago, for the first time in her life, she left India with her younger son to visit Lisbon. “It was a long journey, I didn’t like sitting on a plane for so long. But I was lucky and more than happy to see the city where my parents had been born. I had always thought it as similar to Goa, but, in fact, it wasn’t”.


Ayten Okgu, 76 years ago, was born in Izmir, one of the most beautiful Turkish cities on the Mediterranean coast and spent the early years of her life there. She has two daughters and four grandchildren, two of whom are 18 years old. “Unfortunately, I can’t see my older grandchildren so often. They live in the opposite part of the city and it takes me almost two hours to get there to visit them. They never come to this part of the city, since all the forms of entertainment are to the north of the Bosphorus, in the European side.”

Fernanda De Guia is 71 years old and has spent all her life in Manila, the Philippines. She has three sons and five grandchildren. All her sons live in her neighbourhood with their families. “I really love the fact that my sons and my grandchildren are nearby, I never have a moment of rest. They are always here: lunch, dinner, tea time. We could say I’m a full time cook, but without salary,” she says.

Laura Ronzòn Herrera, 81 years old, lives in Veracruz, Mexico. Her kitchen is filled with jars of spices in every corner, clean dishes (and dirty ones, too) are piled up on the sink. There are vegetables everywhere but when she starts to cook, the smell takes control of your senses. The aroma of frying vegetables mixed with spices and the sweet smell of banana tree leaves taken off the boiling water are enough to make your mouth water. Laura is not so concerned about appearances. Substance is what is important. And, indeed, her dishes are delicious, even if they aren’t beautiful!

When I arrived in Timimoun, Algeria, I asked my host if he could introduce me to someone who might be willing to take part in my project. “It isn’t a problem”, Kader said, “I know a grandma who makes a great couscous, I’ll call her and ask her to prepare it for tomorrow”. The next day, Legbaa Fanana opened the door and invited us in. She offered us tea and as we were talking, she asked: ”Are my clothes OK for the photo?” I gaped as I answered: “No, I’m sorry, you might have misunderstood. I must take a photo of your mum. I need a grandma for my project.” She laughed and said: “Well, in this house I’m the grandmother. I am 42, my daughter is 21 and my grandson is 2!”


Thilaga Vadhi is 55 years old and lives in Kuala Lumpur, Malaysia. On the wall in her kitchen, three photos of her parents and relatives in their traditional Indian costumes keep Thilaga company when she cooks for her husband and two children. “My men work almost all day long. Lunch and dinnertime are the only moments we can spend together and I am happy when I see them leaving the table satisfied for what they have eaten. That’s the reason why I love cooking for them.” Here, Thilaga prepared Malaysia’s national dish of rice cooked in coconut milk accompanied by fried peanuts, anchovies, spicy sambal and a hard-boiled egg.

Susann Soresen is 81 and she has spent all her life in Alaska. On the sweatshirt she is wearing, there is a picture of her with her two daughters and her son. “I became a grandmother more than twenty years ago. Now I have six grandchildren”, she tells me. When I asked her to cook something typical from her country, she asked me to choose between moose and salmon. I chose the moose. “My son and my grandson chased this animal but here, 90 percent of the time you don’t need to go hunting to get moose meat. It often happens that we run over one, since streets are full of them, especially at night! Hard luck, they smash your car, anyway!”

Kathy O’Donovan lives in Whitehorse, Canada. “My son chased this bison,” Kathy says, while showing me a dish with a dozen pieces of dark meat. “We butchered it a few days ago. You are lucky, it hasn’t been frozen,” says the 64-year-old grandmother of seven. “My daughters and son and their partners work and they often leave the children here, with me, sometimes at night, too. If I listened to the kids I would cook fried things all the time, but their parents want me to cook healthily for them.

Julia Enaigua, 71 years old, lives alone in La Paz, Bolivia. She was born in a little village on the shores of the Titicaca Lake. Julia sells vegetables in one of the many markets in the city. She gets her vegetables from local farmers in the countryside. Her husband died a few years ago and her children and five grandchildren live in another house. They visit every weekend when she can cook for them. Here, she has cooked queso humacha or vegetables and fresh cheese soup.


Normita Sambu Arap is 65 years old and lives in Oltepessi in the Maasai Mara Reserve in Kenya. Normita lives in a hut made of mud and straws and her kitchen is a small cooking area on the floor with four stones and a metal grill placed on top. Every morning, she lights a fire and keeps it on all day long. The ninth wife of the village chief, she is the oldest woman in the village. Her daily chores are cooking, collecting water from the river and gathering wood for the fire. She has 19 grown-up children and more than 40 grandchildren. They all live in the same village. Here, she has cooked mboga and orgali or white corn polenta with vegetables and goat meat.

Ana Lucia Souza Pascoal was born in Rio de Janeiro 53 years ago. Originally from Bahia, she started attending samba school in her neighbourhood when she was still very young and at 15, she was crowned queen of her dance group for the carnival parade. She stopped dancing a few years later and started to play the percussion. She is now the madrina de la bateria or the queen of the drums, and plays the leading role in her percussion band. Ana Lucia works in a textile factory, and on Wednesdays, she cooks her special fejoada (stew of beans with beef or pork) for her two children and four grandchildren.

Fifi Makhmer, 62 years old, was born in the desert, four hours to the south of Cairo in a village along the river Nile. That’s where she spent the first 20 years of her life until she got married and moved to the city. She now lives with her husband and two of her three children in a small house in the Eastern outskirts of the capital city. Her eldest son got married two years ago and made her a grandmother. She has always been a housewife and cooked for the whole family. Her children say she is the best cook. Here, she has prepared kuoshry or a pie of pasta, rice and legumes.

Bisrat Melake was born 60 years ago in Dessie, a town in the north of Ethiopia. She lived there and attended the small school in her village until she was twenty. She moved to Addis Ababa to go to university but she never obtained a degree because she got married. Bisrat has four sons but only one grandchild. She hopes to have more grandchildren soon! For my meal, she has cooked enjera (sourdough flatbread with a slightly spongy texture) with curry and vegetables.


This is my grandma Marisa Batini! When I was young, I used to spend a lot of time with her. So did my sister and our cousins. We would play in the yard all day long with a ball, our bikes or skateboards. We used to run around the house but she never lost sight of us. She was born and raised in the Tuscan countryside 80 years ago and she has always been a housewife. She has never been a great champion at cooking but her Swiss chard ravioli with meat sauce is hard to beat!

The result was a cook book of detailed recipes that mixes love, photography, and travel and illustrates the international language of food and family. SATE FOIE GRAS AT CANTALOUPE

Director and Executive Chef Christian Bauer gets inventive at upscale restaurant Cantaloupe, part of the stunning Troika Sky Dining restaurants. As adapt at mixing up recipes as he is at adhering to tried and tested ones, Bauer ups the ante on the traditional Malaysian sate, or grilled skewered meats, by swapping meat with the utterly luxurious foie gras. The idea, says the star of the Cooking for the Crown show, was to have a familiar taste presented with an unusual, completely non-Asian ingredient. “This is a dish that never fails to surprise, but also to please,” says Bauer. The foie gras is beautifully grilled, and the painstakingly prepared garlic peanut sauce is the perfect foil for it.

MUSANG KING PIE AT THE HUMBLE PIE

Living Food advocates healthful eating, preparing fresh and organic meals that are cooked at low temperatures to preserve enzymes and nutrients often lost in excessive heat. In this case, healthful is done with panache with the Hot Stone Nasi Lemak. Conceived as a fusion between the Malaysian nasi lemak and the Korean dolsot bibimbap (dolsot meaning stone pot), this wholesome dish features aromatic Bario Highland Rice, spiralised vegetables, tomato sambal (a sauce typically made from a variety of chilli peppers blended with secondary ingredients such as shrimp paste, garlic, ginger, shallot, scallion, lime juice, and others) and poached egg cradled in a hot stone bowl. A choice of sambal tofu, sambal seafood or spiced beef stew comes with the dish.

It may be called humble, but modest this sweet pie is not. This seasonal pie is a little wonderland of premium Musang King durian on a buttery shell of crushed biscuits layered with homemade caramel, and finished with a hearty dose of whipped cream with coffee sprinkles on top. The combination may sound unusual, but it works, especially if you are a durian lover. Baker and owner Eugene Ng worked the recipe to high standards in his home kitchen before unleashing it to the public. The delectable pies, which include banana and strawberry fillings, are now available at this smart little café in Petaling Jaya.

Maggi goreng, a dish of stir-fried instant noodles, is a staple at any mamak restaurant. Usual fillers to go with the noodles are bean sprouts, cabbage, onion and egg. At Wondermama, the dish is flipped on its head and reworked from the noodles up – routine for a restaurant that has carved a reputation for taking on Malaysian classics and reimagining them in new ways. The recipe took weeks to perfect, starting from the sauce right to the consistency of the noodles. Finishing it off is a mélange of Japanese scallops, squid and prawn.

Food gets the luxe treatment at this elegant restaurant specialising in contemporary Chinese food. Way, which means ‘the one and only’ in Mandarin, is also the name of the firstborn of the proprietors, Dian Lee and Jared Lim. Globetrotters and foodies, they set very high standards for their menu, which includes this utterly delectable truffle-infused double roasted duck. The rich, earthy perfume of the truffles is a keen match for the hearty gaminess of the poultry, which boasts tender meat and wafer-thin crispy skin. A house special, it has to be ordered in advance.

Chef Evert Onderbeke had kuih ketayap in mind when he created this dessert. Ketayap, which also goes by the name kuih dadar, is a special Nyonya and Malay dessert and is a pandan-scented (screwpine leaf) crepe roll stuffed with grated coconut soaked in palm sugar (gula Melaka). Onderbeke runs with this idea to create a pandan crepe parcel that opens to reveal a gorgeous concoction of caramelised banana steeped in gula Melaka, all of which is eaten with housemade coconut sorbet.

runch is doing very well for itself in the Klang Valley, as well it should. In an 1895 article in Hunter’s Weekly, Guy Beringer wrote, “Brunch is cheerful, sociable and inciting”. Not quite breakfast or lunch, but an enjoyable hybrid of the two, this late morning meal is ideal for greeting the day or meeting up for an extended tête-à-tête with your best mates. The origins of this meal are hazy but it has been traced, in part, back to 1800s England, where it was served in a buffet style at hunt breakfasts. By the 1930s, the new mealtime had reached American shores, where it gained increasing popularity as a Sunday event. The concept has spread all over the world. These days, there is no shortage of places to do brunch on any day of the week. As the current social event, no café in town is complete without a brunch

selection. Whether you’re an early bird or a late riser, there is a fry-up out there with your name on it. Selection is varied, recipes inventive. There are pancakes, waffles, muesli, and a variety of cooked or baked goods. Bread is often housemade, the coffee excellent. Egg, the staple brunch ingredient, is done in all ways – scrambled, poached, baked, hard-boiled and mashed – to go with anything the chef fancies. With such a lot to pick from, the question now is: what kind of bruncher are you?

This Melbourne-inspired café does a brisk business with its all-day breakfast fare. Mixed in with their other offerings, the brunch food has all the classics like an English fry-up and pancake stacks, but it is the signature dishes such as gooey cheese-topped eggs baked with lamb, chicken and beef that stands out. “Having the freedom to have a bit of fun and not take things too seriously is one of the perks of creating a menu,” says co-founder, Lee Yew Kheong. Buoyed by the success of Quar/tet, the boys behind the popular café have spread their wings to open a second eatery in Bangsar. Cut from a different cloth, La/Pa – a play on the word lapar, which means hungry in Malay – has a chic set-up that echoes the clean lines of Scandinavian design, guaranteed to be an Instagram hit. The in-house music selection is impeccable, and soon, the handsome eatery will host a rotating collection of works from a nearby art gallery. La/Pa’s food is often twists on classics. The menu is tweaked every few months but some staples are here to stay. Highly recommended brunch items are the Duck Eggs in Purgatory, a hearty meal of baked double eggs in a spinach and garlic cream sauce, and the pancakes with healthy orange and quinoa compote topping. As a startup entreprenur who was willing to relocate from New York to San Francisco to take her company further, Cheryl Yeoh’s efforts paid off when her company was acquired by Walmart Labs. Now she is back in Malaysia to help other entrepreneurs take off and thrive.

What were your reasons for coming back to Malaysia and accepting the job as CEO of MaGIC?

There is a real culmination of talent, passion from the community and desire to create successful global ventures, coupled with government support and the influx of private funds. I was inspired to further support that by spurring innovation within white spaces where so many markets are still in its infancy in Southeast Asia.

I had studied and worked in the US for the past 12 years, and when my startup was acquired by Walmart Labs, I was ready to take up a new challenge. I often thought of contributing back to Malaysia, and wanted to take action rather than just talk about it. When I was approached by the Ministry of Finance and the Prime Minister’s Office for the position, it was the perfect opportunity to use my experience in Silicon Valley to help develop the startup ecosystem. How did TalentCorp help with your return?

What are your thoughts on the startup scene in Malaysia?

How do you parlay your experience in the US towards helping out companies in Malaysia?

I started my company in New York, where the startup scene blossomed within 2-3 short years and learned first-hand how a successful ecosystem is built. At MaGIC, we hope to enhance the startup ecosystem via inspiration through success stories, education in technical skills, exposure to different markets and acceleration of growth. to the mentorship and being surrounded by like-minded and talented individuals, so we are building a community that will be able to sustain itself over the long run. How do you see MaGIC growing?

In 2015, our focus is ASEAN and tapping into the 600 million population that our entrepreneurs should be targeting. The programs rolled out will leverage the resources, shared expertise and experiences between startups from Malaysia and the ASEAN region. We will be launching our flagship program, the MaGIC Accelerator Program (MAP), providing a platform for Malaysians to build regional relationships and global companies. MAP will be a catalyst to creating a critical mass of regional startups, positioning Malaysia as the startup hub in the region.

agi kebanyakan orang, Sin Hoy How yang terletak di kawasan deretan rumah kedai pra-perang di Jalan HS Lee itu mungkin hanya sebuah kedai kopi biasa. Namun, nama yang terus bergema di hati beberapa dozen para pengusaha kedai kopi sebenarnya cukup sinonim dengan salah satu jenama kopi tempatan terkemuka. Sejak Perang Dunia Kedua, sebahagian besar kopitiam di sekitar Lembah Klang telah menggunakan produk serbuk kopi keluaran perusahaan tersebut yang berusia hampir lapan dekad. Hari ini, perusahaan keluarga ini diterajui oleh keluarga Lee yang merupakan generasi kedua penghijrah Hainan. CH Lee, anak kepada Lee Kah Kit, pengasas Sin Hoy How, kini mengetuai unit pengeluaran kopi manakala adik-beradiknya, Lilian dan Mei pula mengemudi tugasan di dapur bersama anak saudaranya, Lily Fong. Sin Hoy How yang bererti ‘pelabuhan baharu’ bertitik tolak selepas ketibaan Kah Kit dari Pulau Hainan pada usia 12

tahun. Setelah menimba pengalaman dari sejumlah kedai kopi, dia mula menguasai teknik merendang dan membru kopi sebelum membuka kedai kopi di sebuah rumah kedai. Di rumah kedai ini anak-anak Lee membesar dan sering membantu di kedai selepas waktu sekolah. Menurut CH yang kini berusia 62 tahun: “Dahulu, ramai watak-watak menarik yang saya jumpa semasa menghantar kopi di sekitar kawasan. Mereka suka letak mentega dalam kopi. Lebih lemak dan enak, kata mereka. Nampaknya trend popular tersebut kini kembali semula.” Apabila perniagaannya beransur baik, Lee telah membeli sebuah van untuk memudahkan pengagihan produknya ke kedai kopi lain sebelum membuka kilangnya sendiri. Pakar rendang biji kopi (roastmaster) akan melihat, mendengar dan merasa untuk menentukan sama ada biji kopi yang direndang telah mencapai aroma serta rasa yang dikehendaki. Proses ini melibatkan pelbagai faktor seperti asal usul, kadar kelembapan serta jenis biji kopi yang digunakan.

Ya, ia amat rumit dan memenatkan. Kini, Lee yang semakin berusia dengan berat hatinya telah mendapatkan khidmat professional dari luar untuk menjalankan proses merendang biji kopi mengikut spesifikasinya. “Dunia perniagaan kopi hari ini amat sengit. Tidak seperti dahulu, hanya dimonopoli oleh sejumlah peniaga. Formulanya paling penting; iaitu nisbah kopi dan gula. Warna kopi akan lebih gelap juga ‘kaw’ disebabkan oleh gula hangus. Lebih banyak gula, lebih kaw. Lebih banyak kopi, aroma pun jadi lebih kuat,” tambahnya. Sehingga 1997, menu sajian di Sin Hoy How hanya terdiri daripada sarapan pagi popular masyarakat Hainan. Antaranya termasuk kopi, telur celur dan roti kahwin yang berintikan kaya serta mentega. Ringkas dan enak. Namun menu ini berubah setelah mereka berpindah ke lokasi terkini yang bertentangan dengan kedai asal. Berikutan pemansuhan Akta Kawalan Sewa pada tahun 2000, menu baru terpaksa diperkenalkan untuk mengatasi kenaikan kos sewa. Situasi tersebut telah mengalihkan tumpuan mereka kepada resipi masakan Hainan tradisional keluarganya. Mereka merupakan sebahagian daripada generasi penghijrah yang terakhir dari China pada awal abad ke-20. Apabila kebanyakan peluang pekerjaan telah

diambil alih oleh penghijrah Hokkien dan Hakka, masyarakat Hainan pula mengasah kemahiran mereka di dapurdapur golongan ekspatriat British sebagai tukang masak. Pengalaman memasak stik, telur separuh masak dan roti ternyata berguna apabila mereka membuka kedai kopi sendiri nanti. Tugas memasak biasanya dikendalikan oleh seisi keluarga. Lantaran menerima permintaan tinggi bagi sajian segera daripada pelanggan utamanya, Sin Hoy How kini giat menawarkan sajian klasik Hainan berkonsepkan ‘one-plate dish’ seperti kari ayam untuk dinikmati bersama roti bakar atau nasi. Setiba di kedainya, saya melihat kelibat sekumpulan wanita yang sibuk menyediakan kaya untuk bekalan hari esok. Proses yang mengambil masa 12 jam itu perlu diawasi dan dikacau dengan kerap agar hasilnya tidak berbintil-bintil. Setia dengan kaedah masakan lama itu dan membawa ciri-ciri keberanian masyarakat Hainan, Lilian berkata: “Kami masak semua masakan ini dengan sepenuh hati. At Sin Hoy How, the flavours and fragrances convey decades of history and the culinary prowess of the Hainanese who set up shop­-and thrived­-in Kuala Lumpur Located along the antebellum quarter of Jalan Tun H.S. But to dozens of kopitiam operators in Kuala Lumpur, the name is synonymous with one of the city’s most venerable coffee

to kopitiams in Klang Valley since the Second World War. Today, CH Lee manages the coffee manufacturing arm, while his sisters Lilian and Mei, with the help of niece Lily Fong, keep the kitchen humming. The story of Sin Hoy How – which means 'new port' – began with the arrival of founder Lee Kah Kit from Hainan Island as a plucky 12-year-old who moved around different kopitiams learning the ropes. It was not long before he mastered the skills of roasting and brewing

coffee and opened his own shop-lot. Growing up, the Lee children lived upstairs of the shop-house and often helped out after school. His son CH, now 62, shares, “I used to deliver coffee to some colourful characters in the neighbourhood. They liked to mix a stick of butter into their coffee. Made it more creamy, they said. Nice to see the trend is popular again.” As business improved, Lee bought a van to distribute coffee to other kopitiams in the neighbourhood, eventually setting up his own roasting factory. Roastmasters use sound, sight and smell to determine when the beans have achieved the right aroma and flavour, a process that involves variables such as origin, moisture content and type of coffee bean. If that sounds complex and labour-intensive, it is. With age catching up, Lee recently – and reluctantly outsourced the roasting to a local specialist that does it based on his specifications. “The coffee business is very competitive these days, not like the old days when only a handful of manufacturers monopolised the business. Most important is the formula – ratio of coffee to sugar. The caramelised sugar gives the coffee the dark colour as well as the kaw (strong) taste. The higher the sugar content, the more kaw. The higher the coffee content, the stronger the aroma.” Until 1997, Sin Hoy How served only coffee, coddled eggs and roti kahwin – the standard Hainanese brekkie of kaya (a custard-jam made of coconut milk and eggs) and butter sandwiched between charcoal fire-toasted bread that’s light yet hearty. All that

changed when they moved into their current lot across the old shop. The current food menu was a necessary addition to cover rising rental costs following the repeal of the Rent Control Act in 2000. Naturally, the Lees turned to their traditional Hainanese family recipes. Among the last generation of Chinese immigrants to British Malaya in the early 20th century, when the Cantonese, Hokkien and Hakkas already had a lock on most employment opportunities, the Hainanese ended up as cooks for British expatriates, honing their skills in creating steaks, soft-boiled eggs, chicken chops and bread – valuable experiences they put to good use when they eventually set up their own coffee-shops. Because the cooking is done entirely by family members and the majority of their patrons are office workers who want fast meals, Sin Hoy How concentrates on one-plate dishes that incorporate other Hainanese classics like curry chicken. The Hainanese-style curry goes exceptionally well with toast and rice because of the decadent creaminess from the generous amount of santan (coconut milk). When I arrive, the ladies are making kaya for the next day, a laborious 12-hour process of monitoring and stirring to achieve a smooth consistency. Demonstrating the military commitment to time-honoured cooking methods, and the feistiness associated with true-blue Hainanese, Lilian insists, “so much heart and soul goes into our food. When customers ask for extra sambal (chilli dip), we tell them, make sure you eat it all!"

Let battle commence The dramatic conclusion of the Hobbit movie trilogy, The Hobbit: The Battle Of The Five Armies doesn’t disappoint. Here’s our guide to who’s involved… Dwarves

The dwarves initially side with Bilbo on a mission to reclaim their mountain home from Smaug, the evil dragon who has driven them out. They must also reach an uneasy truce with the elves, as the orcs and other fearsome forces threaten them both. At the centre of their conflict with the elves lies the Arkenstone, a family heirloom coveted by the king’s grandson Thorin, the dwarves’ leader, in order to unite the dwarves after they lost their home.

Another of three factions on the side of titular Hobbit Bilbo Baggins, the elves have previously clashed with Bilbo, his wizard ally Gandalf and the dwarves. The threat of the orcs and the elves’ troubled history with the dwarves has caused splits within the Elven faction. They have also becomes targets for Smaug the dragon’s vengeance after a raid to destroy him by the dwarves and Bilbo does not go as planned. Together, they must fight, Smaug, the orcs and others.

A city near the Lonely Mountain populated by men, the Dale has been destroyed and rebuilt since Smaug’s reign of terror. Caught in the crossfire because of their home’s location near Smaug’s lair, the Men Of Dale side with their allies the dwarves and prepare for another battle. Like all the factions in The Hobbit, the Men Of Dale have a complicated, intriguing history. No allegiance is set in stone as they attempt to live in peace once and for all.

Also known as goblins, the orcs are ruthless raiders and scavengers who have a long history of combat with the dwarves. The chain of events set off by Bilbo, the dwarves and their allies in The Hobbit: The Battle Of The Five Armies leads to them building an army to seek their share of the riches guarded by Smaug inside Lonely Mountain. They are also seeking to avenge the death of the Great Goblin after a previous battle with the group.

Allied with the orcs, wargs are predatory wolf-like creatures that hunt in packs and are ridden by orcs into battle. Bilbo’s travelling party previously clashed with them when it became apparent the wargs were trying to hunt them down. Said to be possessed by evil spirits and in possession of their own language, wargs form part of a sophisticated threat. Along with the orcs, their final assault must be stopped through careful planning and co-operation between the dwarves, elves and others.

Man of the moment Inside the soaring success of Birdman, a superhero movie with a difference The winner of this year’s Academy Award for Best Picture (along with three further Oscars), Birdman is the story of a washed-up Hollywood actor trying to revive his career on Broadway. Michael Keaton stars as Riggan Thomson, who is haunted by his most famous role: the superhero Birdman. The parallel with Keaton’s career is plain to see: the first big screen Batman in the late 80s/early 90s, Keaton memorably walked away from the franchise. But while his two Batman movies remain his biggest hits, he went on to pursue other projects. Riggan, however, was not so lucky. ‘The levels of this film have levels!’ Keaton enthuses. ‘This movie made me remember

“this is what I want to do”. I want to make a statement. It makes fun of everybody but it respects everybody.’ In addition to its clever casting, Birdman also embraces unusual techniques behind the camera. Co-writer and director Alejandro González Iñárritu worked hard with his cast and crew to ensure there are practically no distinguishable edits in the whole movie. ‘It was intense, scary but enjoyable,’ he says of the process. ‘It’s kind of a magic trick. My hope was to put the audience in the shoes of the character and not be able to get out!’

Back from the brink Growing Pains In comedy-drama Laggies, Keira Knightley plays Megan, a woman in her late twenties who drifts into the lives of a divorced father and his teenage daughter. ‘I’m much better known for the taut, British, neurotic kind of thing – darker characters,’ says Knightley. ‘Working in England on all these stylised period pieces, you don’t get to deviate from the script, so I was excited to work in a totally different way.’ Knightley says Megan’s story is a familiar one. ‘You don’t often see quarter-life crisis stories with female characters,’ she explains. ‘It’s always been interesting to me that there weren’t more stories like this, so I really connected to it.’

Timeless quality In Forever Ioan Gruffudd stars as medical examiner Henry Morgan. When he’s not helping the New York Police Department solve murders, Henry pours his time into unravelling a more unusual mystery – his own immortality. ‘We’re seeing a trend now with television, where the writing is magnificent,’ says Gruffudd of what makes him the latest movie star to switch to the small screen. ‘This concept would never exist as a movie, unless it had a Marvel or DC superhero attached to it.’

Gruffudd’s previous roles also helped him prepare. ‘Because it has a flashback element, I thought I could lend my skills and experience, having worked period costumes over the years,’ he says. ‘They were looking for somebody who could bring an element of the outsider to it. Being a British actor on an American network has that element – I’m honoured that they chose me!’

It was never our ambitions to become musicians. We believe things just happen for a reason. Although we can’t see like others, we are blessed with good hearing. We learned music by ourselves. We listen to the sound, and we try to imitate as if it would sound the same. We also seek advice from the professionals to improve our skills.

o you hang out socially? D Not very often, since most of us already have families. But when we do get the chance to meet up, we make use of it by jamming together. hat’s the rest of the W year got planned for Caliph Buskers? Thanks to God, everything has been great so far. Currently, we are preparing ourselves for a new single, made by Edry A. Halim and produced by KRU Music, that is coming out this month. Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.

A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.

Artistic rock-cut architecture astounds visitors with its sheer size and fine details

This imposing Buddhist statue is just one of 51,000 carved into the 252 caves of the Yungang Grottoes at the base of China’s Wuzhou Mountains. Located in Shanxi province, the grottoes were declared a UNESCO World Heritage site in 2001 due to the impressive assemblage of early Chinese Buddhist cave art dating back to the 5th and 6th centuries. The carvings were begun by the monk Tan Yao in 460 when the first emperor of the Northern Wei dynasty assumed the throne. Since their completion in the year 525, the grottoes have become the centre of Buddhist art in North China, appreciated by thousands of visitors daily. yungang.org
