KL GETS MICHELIN TOUCH The “world’s juiciest lamb chop” can now be found in Kuala Lumpur. That’s according to Michelin-starred chef Jeff Ramsey, referring specifically to his new restaurant, Babe, in the affluent suburb of Damansara Heights. Malaysia’s first restaurant by a Michelin-starred chef offers a fun approach to modernist cuisine and molecular gastronomy. On the menu are Japanese-accented tapas, or ‘Japas’ as Ramsey calls them; truffled nori fries with seaweed and garlic aioli; 1,000-year-old cypress smoked aji nigiri (horse mackerel), momotaro aburi kanpachi (broiled amberjack), charcoal-grilled king crab with umami butter and calamansi, wood chip-smoked oysters, manga crab, sashimi ‘cigars’, jellyfish kimchi, and more from a menu of about 60 ingenious dishes.

ON A LOBSTER ROLL From Singapore’s foodie-friendly Duxton Hill comes Pince and Pints, a lobster joint in the trendy neighbourhood of Bangsar in Kuala Lumpur. There are only four food items on the menu and one flat price, but numerous drinks to choose from. Available are whole lobsters either grilled or steamed; lobster rolls; chilli lobsters in tomato and chilli sauce with fried mantou; and lobster noodles featuring wok-fried lobsters with egg noodles and gravy. RACE FIT FOR A COMMANDO

YTL-owned Pangkor Laut Resort has crafted a unique challenge to share the littleknown story of a British commando who escaped the occupying Japanese army during World War II from Emerald Bay in Pangkor Laut, an island off the state of Perak. Colonel Freddy Spencer Chapman spent three and a half years hiding in the wild jungles of Malaya before making his escape on 13 May 1945 by swimming 45 metres out to sea in the dead of night to be rescued by the Royal Navy submarine, HMS Statesman. Aptly named The Chapman’s Challenge, the race comprises a 6.2-kilometre run around the private island roadways and through a two-million-year-old rainforest, and a one-kilometre swim out at Emerald Bay before concluding at Chapman’s Bar. Registration for the race, happening in May, is now open online with limited slots available.

The streets of Paris serve as a canvas for artist Julien Nonnon’s latest series of images entitled Safari Urbain. very year, Hiroshima’s A-Bomb Dome, a World Heritage Site in the city’s Peace Memorial Park, attracts 1.2 million visitors. As the only downtown building to have survived the atomic bombing of 6 August 1945, it has been preserved both as a reminder of the bombing and as a symbol of peace. Nevertheless, Hiroshima – the selfstyled City of Peace – snuggled between the Chugoku Mountains and the Seto Inland Sea, has plenty more to offer the visitor, being rich in natural beauty, art, ‘shop-ortunities’ and delicious eats. Downtown Hiroshima has all the hi-tech bustle you would expect from a Japanese city, but within minutes of travel, you can be sipping matcha in a teahouse beside a waterfall in a maple forest, or cruising the misty islands of the Seto Inland Sea. "It's Tokyo minus the stress," says schoolteacher Hide Nakamura. Above all, Hiroshima is a city that welcomes visitors with its friendly, laidback charm. To get the most out of your stay, after you’ve visited Peace Park, try the following must-sees for a complete Hiroshima experience.
THE CITY OF WATER
Six rivers carve Hiroshima into a cluster of islands, earning it the nickname City
of Water. These waterways give the city a spacious, open feel, offering a great way to explore the place. A 30-minute river cruise takes you past Peace Memorial Park, Central Park, Temple Town and other downtown sights. Or hop aboard a Gangi Taxi speedboat and let it take you wherever you please. Simply hail one from any of the 300 gangi (stone steps leading down to the river). Or how about a World Heritage Cruise? These boats sail between Hiroshima’s two World Heritage Sites, the A-Bomb Dome and the island of Miyajima. Feeling weary? Relax and watch the world go by from Caffe Ponte, opposite Peace Park.

The island of Miyajima is one of Japan’s Three Most Beautiful Views, with its huge red torii gate rising out of the sea and the ‘floating’ 12th-century shrine of Itsukushima, framed by the dark backdrop of Mt. ART & NATURE
An art museum in the middle of a forest! Ride the Skywalk elevator up Mt. Hijiyama to the Museum of Contemporary Art, which rises above the surrounding forest at the eastern end of Peace Boulevard, "reflecting the development of civilization from the past to the future,” say the curators. Opened in 1989, it was Japan’s first public Modern Art museum. Designed by Kisho Kurokawa (co-founder of the Metabolist Movement), it won the 5th World Festival of Architecture’s grand prize. Outside, Henry Moore’s massive bronze Arch frames a panoramic view of the city. Past shows have highlighted Andy Warhol and Yoko Ono.

Dense woodland, three waterfalls, a 16thcentury pagoda and a 9th-century temple – just two stops from Hiroshima Station. The Tahoto pagoda by the entrance was built in Wakayama Prefecture in 1526 and donated to Mitaki in 1951 to comfort the souls of the A-bomb victims. From there, follow the steep path up to Mitaki Temple, and continue up the trail beyond the temple into a forest of towering bamboo – you may even spot some wild boar. On the way down, chill out in the rustic Kūtenan Teahouse, near the entrance. Half-hidden among the maples, it’s built on wooden stilts overlooking a koi pond. Inside, masks and old curios abound. Sit by the window and order matcha green tea and warabi-mochi (cakes made from bracken starch).
SAMURAI GARDEN
Steve Jobs called the gardens around Kyoto “the most sublime thing I’ve ever seen”. He might have said the same about Hiroshima’s Shukkeien Garden. This city centre oasis was built in 1620 by Ueda Soko, a samurai warrior who became a Buddhist monk, tea-master and landscape gardener. He designed it for Asano Nagaakira, feudal lord of Hiroshima. Shukkeien is a 'shrunken scenery'
garden – creating a miniature version of the landscape of Xihu (West Lake) in Hangzhou, China in a space of just 40,000 square metres. Around Takuei Pond, with its hump-backed Rainbow Bridge, you can lose yourself along winding paths through mountains, valleys, rice fields, bamboo groves and tea plantations. Monthly tea ceremonies are held, to celebrate the changing foliage and flowers. The adjacent Prefectural Art Museum is also worth a visit.
HONDORI ARCADE
This colourful covered arcade is Hiroshima’s shopping heart. Over half a kilometre of 200-plus stores: trendy boutiques, traditional kimono shops, jewellers, electronics, video-game arcades and eateries, including multi-story malls at either end. Great for people-watching too, with young shoppers decked out in the latest J-fashions. Visit Yume Plaza for typical local produce souvenirs, from dried fish to okonomi sauce. Take a break at Andersen’s fabulous Danishstyle bakery, gourmet delicatessen and restaurant, full of imported wines and cheeses, and scrumptious pastries. Sit in the window for a front-row view of Hondori life.

route that joins Honshu, Japan’s largest island, with Shikoku. It spans six smaller islands, traversing the beautiful scenery of the Seto Inland Sea National Park. There are cycle lanes all the way, making it one of the world’s most incredible bike routes. Don’t leave without trying Onomichi’s legendary ramen.

OKONOMIYAKI: Hiroshima’s most iconic
dish: a griddle-cooked pancake topped with a mountain of cabbage, pork, fried egg, bean sprouts and noodles. Choose extra toppings, like prawn, squid or the renowned local oysters. “It’s a complete meal, and the okonomi sauce is amazing!” says Swedish student Michelle Norberg. Sit at the bar to watch the cook prepare it, then eat it directly off the hotplate with a metal spatula. Hiroshima boasts over 2,000 okonomi restaurants. Try Okonomimura, near Hondori – 27 okonomi bars in one building!

Cultivation involves suspending oysters from floating rafts – you can see hundreds of them dotted all over Hiroshima Bay.
Getting around: TRAMS. After the war, trams were donated to Hiroshima from cities all over Japan and even abroad, earning them the nickname Hiroshima’s Mobile Museum. Today, the tram fleet ranges from pre-war clunkers to the futuristic Green Mover Max. It’s the cheapest, easiest, and most eco-friendly way to get around. MEIPURU-PU SIGHTSEEING LOOP BUS. For less than USD2, take a 50-minute tour of the major sights. Alternatively, take a Drive City Window Course in an open-top double-decker. rague at any time of the year is a seductive, dreamy city that oozes old-world charm. Medieval churches, Renaissance palaces, hidden gardens and cobbled squares sit below a hilltop castle as the meandering Vltava River winds its way beneath the scenic Charles Bridge. If the scene is not romantic enough for you, try visiting in December. As the holiday season approaches and the ground starts to twinkle with frost, the fairytale vibe gets cranked up to 11. At the heart of the festive atmosphere are Prague’s Christmas markets – more magical than a Harry Potter convention at Disneyland. Rows of colorful wooden huts strung with lights, huge decorated fir trees and fragrant food stalls can be found in every Prague quarter in the run-up to Christmas, but the biggest and most famous market is in the Old Town Square, or Staroměstské náměstí. Like a medieval movie set, the Old Town Square is an
architectural showcase of Romanesque, Baroque and Gothic styles and home to some of the city’s most iconic sights, including the Old Town Hall Tower, Astronomical Clock, Týn Church and Kinský Palace. “The historical atmosphere makes the Old Town Square market unique,” says Hana Tietze from Taiko, an events organiser. “The opening ceremony (at 5.00 p.m. on 28 November) is one of the highlights – it’s when we turn on the Christmas tree lights.” The so-called Tree of Republic is a towering 22 metres high, draped in sparkling illuminations that can be admired from a special viewing platform. Surrounding the tree are the charming market stalls, brimming with traditional toys, handcrafted ornaments, bobbin lace and Bohemian crystal, as well as endless charms and trinkets for adorning your own tree back home. “I just can’t resist those Christmas decorations,” says Caroline Johnson from London. “I love the wooden ornaments, especially the marionette puppets.
And I also picked up some wonderful Christmas potpourri.” This traditional Czech purpura is made of a blend of seasonal herbs and spices like cloves, pine and orange, and can be burned in a ceramic lamp to intensify the fragrance. More festive aromas can be found at stalls selling scented candles, handmade soaps and even Frankincense. Caroline visited last year’s markets with her son and daughter, making the most of the family-friendly activities on offer. The authentic nativity scene in Old Town Square has painted figures in a wooden stable, while the petting zoo allows kids to feed and stroke donkeys, sheep, goats and even a llama. “And being there on the day that St Nicholas came out was something else,” she says. "My kids didn’t know whether to be thrilled or terrified!" Depending on your perspective, the 5 December tradition of Mikuláš – when groups of three characters dressed as St. Nicholas (Mikuláš), a devil and an angel roam the streets asking children if they have been naughty or nice – can be a traumatic trial or a thoroughly entertaining way of keeping your children in check. Children who (claim to) have been good will recite a short poem or song in the hope of being rewarded with small gifts or sweets. Those deemed to have been bad will receive potatoes or coal and the threat of being thrown in the devil’s sack and sent to hell. “It’s all great fun, though. There were lots of squealing but also some very enthusiastic singing. My kids were just gazing in wonder,” she says. If the experience hasn’t put you off your food, it’s time to indulge in another Christmas market rite of passage – sampling the gastronomic delights. Those with a savoury tongue will gravitate towards huge hams roasting on spits and barbecued sausage with sauerkraut, while anyone with a sweet tooth is well catered for – honeyed gingerbread characters, vánocvka (a braided pastry studded with raisins), and vosí hnízda or ‘wasp nests’ (nutty cookies with rum). And don’t leave without trying trdelník, the braceletlike sugarcoated pastry cooked over hot coals. Old Town Square is not the only place to indulge in Christmas market mania. Smaller markets can be found at the nearby Náměstí Republiky, flanked by

As the sun begins to set, and your heart is warmed by the festive voices, the fairytale feeling really kicks in. “It’s extra special to take a walk late at night,” says Hana Tietze. “The stalls and refreshments are open until midnight and that’s when the Prague magic is at its best.”
Other Christmas markets worth checking out: CHICAGO, USA Every year Chicago transforms its Daley Plaza into a magical European Christmas village, filled with candy striped wooden huts and twinkling lights. Expect holiday gifts like nutcrackers, cuckoo clocks and beer steins, and festive food like stollen, strudel and roasted nuts. he coast is lined with huge palm trees, with leaves that almost touch the South China Sea. They have survived heavy storms and rain floods. The long sandy beach looks untouched, running relatively steeply down towards the ocean where the periodical sound of a powerful beach break can be heard. The scenery is impressive, with low sunlight over the green, mystical hills. We park George's white Toyota Pajero between two palm trees. We have arrived in Kijal, a typical Malaysian small town in the east coast state of Terengganu.
I have travelled to Malaysia twice before, always during the windy season, which starts at the end of October with the onset of the monsoon season. During the 1990s, prominent windsurfing races were held in Malaysia. The Asian windsurfing tour made a stop here once a year from 1998 to 2007. I first surfed at the beaches of Malaysia in January 2007 when I was invited to the Monsoon Madness challenge. I stayed in the city of Kuantan, the capital of Malaysia’s third largest state of Pahang, competing with surfers from Australia, Poland, Southeast Asia, Japan and the UK.

The competition was tough. We struggled with high humidity and temperatures. But with the relaxed atmosphere after the race in the local restaurants, the stable wind and warm water, I knew I would return someday to surf at Malaysia’s beaches again. Fast forward several years later and I’m back in Kuantan with my partner and photographer, Kerstin. Kuantan is the perfect base in our search for new windsurfing spots in the South China Sea. It is also the city where our friend George Warren, a passionate windsurfer himself, lives. The city is the largest along the east coast and has all the facilities to accommodate the needs of Western tourists. The best months to windsurf in Malaysia are January, February and March, although the winds could get pretty strong from November till the beginning of April, George tells us. During this time, the northeasterly winds could go up to 20 knots or more, with swells and surf reaching three metres during peak conditions. "What generally happens is that for the first two weeks of the monsoon season, in November or early December, you have a period of rain for one or two weeks. It can rain almost every day but after that you usually get sunny windy weather again,” he says.

I always knew that I would eventually come back to Malaysia. After 17 years abroad, my family and I had adjusted well overseas. As UEM Group expands its international footprint, we are able to provide our talents with exposure to projects that involve different scale and complexities. We have implemented structured programmes in Indonesia and Australia where talents have been seconded to our projects. Some have returned home bringing with them greater skills and professional exposure and are contributing to our local operations more effectively. UEM Group takes part in career fairs in the UK and Australia. What is your advice to Malaysians you meet at these career fairs abroad?
Participating in career fairs abroad allows us to meet both Malaysian professionals as well as fresh graduates who are about to return home. We speak to the professionals about the nation’s need for them to share and transfer their skills and experience back to Malaysia, 5/6/15 8:38 PM to enable the country to reach its aspiration of a developed nation.
There are concerns about re-integrating, but they need to balance these with the positives of coming back home. We were blessed with strong monsoon winds on the first few days. At Balok beach, 13 kilometres north of Kuantan, the wind picked up to 20 knots, which allowed us nice jumps. Nearby, the Teluk Cempedak beach, with huge granite boulders, is another good surf spot with orderly waves. Farther up north, Tanjung Cherating, well-known in the Southeast Asian surfing scene, has a lefthanded break said to be the most consistent on the Malaysian east coast. In our quest for new windsurfing spots, we drove away from Kuantan until we came across scenic views of riverine settlements, houses with thatched roofs and buffalos

grazing in the fields. These villages have a laid-back atmosphere and a rustic charm. There, we chanced upon Kijal’s Penunjuk Beach. Facing southeast and framed by massive granite rock formations at the eastern end, it has an awesome set-up. As we began to rig up, a local car drove towards us at high speed and parked next to our Pajero. A local man who introduced himself as Ibrahim jumped out and began asking us about the wind conditions. “How is the wind force? Is it too strong? 4 to 5?” he asked. We were impressed and thrilled to meet him. Someone from a remote village understood the windsurfing code. “Yes, close to 5,” I said. He explained that he was a windsurfer too but he found the wind conditions there too rough. I decided to try my luck and walked down the steep, sloping beach to the water’s edge. I jumped in and began to paddle out. As soon as I launched my sail, the pressure I felt on it was great. After a few nice turns and jumps, I returned to the beach. Ibrahim was still there, and he invited
me to his house. Sitting there on the wooden terrace with the great view of the sea as the backdrop, I'm convinced that Kerstin and I had made the right decision to come to the Malaysian east coast. With its culture so rich and people so friendly, the discovery of a hidden gem in Penunjuk Beach made the trip truly unforgettable.

Farewell Noma René Redzepi to reopen influential restaurant as an urban farm
"W
elcome to the new Noma,” chef René Redzepi said on a bright summer day. “This is it.” Redzepi, 37, the godfather of the New Nordic movement and the chef at Noma, arguably the world’s most influential restaurant at the moment, was standing outside what looked like an auditorium-size crack den. Used spraypaint cans lay in heaps amid the weeds of an abandoned lot. Street art covered the walls of an empty warehouse; inside, teenagers rumbled around on skateboards. World-class culinary destination? The site, right outside the ragged border of Copenhagen's free-wheeling Christiania neighbourhood, seemed more like the Four Seasons after an apocalypse. But Redzepi envisioned something else as he climbed a staircase up to a tarpapered roof and gazed out at a lake on the edge of the property. In what qualifies as a wildly risky roll of the dice, he plans to close Noma after a final service on New Year’s Eve in 2016. He hopes to reopen for business in 2017 with a new menu and a new mission. As a crucial part of that, he wants to
transform this decrepit patch of land into a state-of-the-art urban farm, with Noma at its centre. “It makes sense to do it here,” he said, despite visual evidence to the contrary. “It makes sense to have your own farm, as a restaurant of this calibre.” His plans are nothing if not ambitious. He will put a greenhouse on the roof. He will dig out the dank old asphalt lot and truck in fresh soil. He wants part of the farm to float. “We’ll build a raft and we’ll put a huge field on the raft,” he said. “We need a full-time farmer with a team.” If the concept carries a slight echo of that dream of building an opera house in Werner Herzog’s film Fitzcarraldo, Redzepi is fully aware of the gamble. “It really, really, really, really makes me nervous,” he said. “I’m not afraid. But it does make me nervous.” Dan Barber, a New York chef who has dug deep into farming, said one big challenge for Redzepi could come from the unpredictability of agriculture. “Does that carry risks with it? Sure,” Barber said. When a restaurant has its own farm, as Barber does at Blue Hill at Stone Barns in the Hudson Valley, it can signify a chef ’s desire for “the ultimate control” of ingredients, he said, but “obviously the best

kind of farming is the lack of control,” and cooks have to learn to work with whatever the earth produces. “I continue to be in awe of the guy,” he said of Redzepi. “It takes a leader in the field to change the culture.” The changes at Noma are not driven by necessity. There has not been a rent increase at the original location; business remains brisk. Redzepi simply believes that the restaurant, where he has led the kitchen for 12 years, is ready for a dramatic evolution. In his mind, Noma hasn’t even crawled out of its infancy. “We’re just finding our way,” he said. “Even though it has been successful, even though it has had media attention and all that.” Lately, he has been asking himself broad existential questions about what it means to be a local restaurant in the Nordic region. “What are we?” he said. “And how do we progress?” To illustrate all this as he showed off the property, he grabbed a pebble and scratched out the number 12 in the dirt. Then he added a zero, conveying the notion that Noma could last for a century or more. “We should make decisions that make this evolution last for 912 years,” he said.
As for the next two years, he’s already committed to giving the menu a radical shake-up. Over time he has become less and less sure that it makes sense for customers to pass through the traditional stages of a tasting menu, from small nibbles to a slab of meat, culminating in sweets and coffee. “We’ve allowed the format of a tasting menu to dictate what we cook,” he said. He intends to replace that predictable progression with a more fervent adherence to seasonality. In the fall, then, Noma’s menu will focus only on wild game (from goose to moose) and foraged autumnal ingredients like mushrooms and forest berries. In the winter, when “the waters are ice-cold and some of the fish have bellies full of roe,” as he put it, Noma will mutate into a seafood restaurant. Spring and summer? “The world turns green,” he said. “And so will the menu.” In an expectation-thwarting move, during those months Noma will become a fully vegetarian restaurant, with much of the bounty ostensibly coming from the farm he wants to conjure up. “It’s huge,” he said. “How are you going to give a bowl of spinach the same pleasure that a steak gives? A richness

of flavour: that is something that we will deal with.” (Even the tableware will shift with each season.) Redzepi, who seems to crave change the way most people crave that steak, said the transplanting is only one of the shifts he has in store for the months ahead. From late December to the middle of next April, the restaurant staff will be relocating to Sydney, Australia, to see what happens when the Noma approach is applied to Australian ingredients. (It undertook a similar experiment in Japan this year, and the Japanese reverence for the seasons clearly had a deep influence on Redzepi’s thinking). For the first time in his career, Redzepi is partnering to open a second restaurant, a more casual enterprise in Copenhagen with chef Kristian Baumann heading the kitchen, and he has lured Irish chef Trevor

Moran to leave the Catbird Seat in Nashville, Tennessee, and come back to Noma (where he worked for four years) to help lead the next wave. Evidence suggests that Redzepi’s employees are accustomed to hearing their captain ordering them to steer for the high seas. Every week at Noma, after the final high-pressure dinner service, they gather in the kitchen for Saturday Night Projects, a public and semigladiatorial face-off at which young cooks are asked to put together their own dishes for Redzepi’s inspection and analysis. He even broadcasts it via Periscope. Over the years, Noma has pioneered approaches to fermentation, foraging, ageing and even cooking with insects. But a big leap into agriculture could be the riskiest move of all. “That’s where the challenge will come in,”
said the head chef, Daniel Giusti. “Are we growing the right stuff? Is it good? I know René. It’s going to have to be great.” Technically, Noma’s new home lies in the centre of the city, even though it feels like some faraway vegetation-tangled edge. Redzepi may be seeking wilder pastures at the right time. A new walkable bridge will soon connect Nyhavn, one of the most tourist-packed parts of Copenhagen, to the dock-like zone that currently houses Noma and its fermentation lab. As often happens in New York City, gentrification is surging in. Change is in the air. “Of course we could just keep continuing, just stay put and do what we do there,” Redzepi said. “But I genuinely think that we won’t progress.” He seemed rapt as he stood among the weeds and broken glass, as if admiring the new Noma in its finished state. “I have yet to meet anyone who thinks this is a stupid thing,” he said. He pondered this observation for a second or two. Then he got antsy, as he often does. “I can’t stand still like this,” he said.

tacked above the shelves of Thomas Keller cookbooks are toy robots and boxes of cheap bubblegum. On the wall across her old family photos hangs a giant poster of The Police’s Synchronicity II. Piled on the table that divides the living room and dining space are a few dozen cranberry tins and a big huggable-sized jar of potato chips. The things that fill the Malaysian chef ’s house add up to more than just a wackadoo design aesthetic. They reflect who she is: unapologetically fun, creative, and accessible. They are the inspirations that the 29-year-old chooses to surround herself with as she wakes up, cooks, and entertains people through her pop-up dining and catering service Root Cellar. “I get inspiration from so many things: travel, listening to music, art, reading – I would listen to an album and I would try to put what I feel on the plate; or how Van Gogh’s Starry Night would lead me thinking up a themed meal, like what did he like to eat? What does this painting emote in me that I can make into a dish? Don’t make me sound like a ponce, but it does happen. It’s weird. But it happens.” Her approach may be unconventional and twee, but she has no delusions over the amount of hard graft needed to succeed. At 9 years old, when Jamie Oliver was just a lisping English bloke who could throw together a decent baked fish, she knew she wanted to be in the kitchen professionally. It was an ambition affirmed at 17 when
she worked in a tapas bar owned by an aunt’s friend. “The turning point came soon after the first week, when I’d come back with my fingers blistered, my back bent over for six hours doing prep work. ‘Ma! I just peeled 12 kilos of prawns,’ and I said it with this big smile on my face. That was when my mom went – okay, this girl is for real. Let’s send you to culinary school.” What followed next was a whirlwind of opportunities given, taken, and dropped: she went to college and received her diploma, travelled to Germany for a sixmonth internship with two-star Michelin restaurant Die Quadriga, spent three years being a saucier in Singapore at Novus restaurant, went to Switzerland to complete her degree, and became a head chef at a gastropub in Changkat Bukit Bintang. But it was her home-baking venture, Yay! Cake, and her subsequent underground sandwich club Yay! Sammich that developed her reputation in Kuala Lumpur. She was even given the chance to open a gourmet sandwich bar, Crumbs, in the trendy neighbourhood of Bangsar. It closed down in a year. Unfazed, she carried on with Yay! Sammich and Yay! Cake, and spent a year becoming the head cook for the bespoke breakfast catering service, the Fancy Breakfast Club. In 2015, she resumed control of her culinary journey by forming Root Cellar. Though the company mainly does catering and supplies to cafés, Root Cellar is known for its pop-ups where

Basira prepares dishes that reflect her playful personality: Pom Chicken and Dinosaur Egg (pomegranate molasses grilled chicken legs atop a bed of buttered rice pilaf, served with half a ‘dinosaur egg’ – essentially a hard-boiled, coffee-infused egg – a dollop of yogurt and “a bunch of tasty things”); foot-long Sambal Tempeh sandwiches; and Tender Me Brisket, a sandwich stuffed with six-hour braised beef brisket. “With Root Cellar, I wanted to bring the food you find in fine-dining restaurants to everyday folk. I come from a family that doesn’t do fine-dining, so this is my way of letting them know what I’ve learned and what I can do,” she said. “I pride myself on using proper oldschool Escoffier-like techniques; I can whip up a crème brulee with my eyes closed, but I’ll do it with a twist. So for instance, I’ll do a cheese tart with a pulut hitam filling, or a German bundt cake that’s moist for weeks and use limau nipis.”
Despite having certain crowd favourites, Basira prides herself on not having a fixed menu – an unpredictable approach that has its pros and cons. On the one hand, she’s never bored as she would be in a restaurant, churning out the same dishes everyday. On the other, it’s always a challenge to devise a daily menu based on the morning’s pickings. Not that she would have liked it any other way. “I’m very organic in the way I work. People ask me if there’s an end game, and I can honestly say that no, I don’t have one. I don’t want to open a retail space; I did that once, and one of the things I’m super thankful for now is that I haven’t woken up thinking, ‘Damn, I have to go to work today'." For now, she might not know where her journey will lead her to, but when she looks as happy now as she did when she was 17, cooking what she loves, and delighting people, you can’t help but feel that this girl will do just fine.
Cook Like A Chef Basira shares her recipe for O’Tannenbaum, a spiced ginger and orange cake topped with spiced frosting and dried nuts and fruit. It’s the perfect cake for this season of giving, sharing and caring!
Ingredients: Cake 260 gm caster sugar 170 gm butter 240 ml cream 300 gm AP flour
Syrup 100 gm caster sugar 120 ml water 3-inch fresh ginger, sliced Juice from orange
65 gm good quality chocolate (50-70 percent) chips or chopped bits
Frosting
50 gm crystallised ginger, chopped
50 gm sugar
3 nos orange zest (juice reserved for syrup)
1 tsp cardamom
3 eggs 2 egg yolks 1 vanilla pod 1 tbsp baking powder ¼ tsp baking soda 1 tbs ground cinnamon 1 tbs ginger powder 1 tbs ground cardamom ½ tsp each of nutmeg, allspice, ground cloves 1 tsp sea salt
200 gm cream cheese 35 gm butter ¼ tsp nutmeg
Method of cooking: Cake • Cream sugar, butter and orange zest until light and pale in colour. • Beat in eggs one at a time. Add scraped vanilla bits. • Sift flour, spices, baking powder and baking soda together. Add salt flakes. • Reserve 1 tablespoon of dry ingredients. Toss chocolate and crystallised ginger bits in reserved dry mix to coat evenly. This helps prevent the pieces from sinking in the batter during baking. • Beat in half the flour mixture into butter mixture. • Beat in cream. • Fold in rest of flour mixture until just incorporated. Add chocolate and ginger bits. Fold. • Bake in a greased and floured loaf pan for 40-45 minutes at 160°C fan assist/180°C. • While cake bakes, make syrup by putting all ingredients into a non-reactive saucepan. Bring to a
boil then lower the fire to a soft simmer and let the ingredients mull and steep for 15 minutes. Take off heat, strain. • Let the cake sit in the pan for 15 minutes before turning it out onto a wire rack. With a skewer, poke holes into still warm cake. Slowly pour warm ginger syrup over cake to allow it to seep through and absorb into cake. • Cool completely before frosting.
Frosting • Blend cream cheese, butter and sugar in a food processor until smooth. • Add spices and final blitz to incorporate. • Spread over top of cooled cake. Do not smoothen top; wavy uneven top will give cake a nice rustic finish. • Crown cake with as much crystallised ginger, chocolate bits, dried fruit and nuts of choice to achieve a grand finish of holiday proportions.

Dance workouts are popular additions to gym programmes. Dancing is a great workout for the whole body, burning calories as you learn dance moves to upbeat music. It often doesn't feel like a workout but a fun dance party for sociable participants. JJ Sweeney and the Celebrity Fitness Dance Team created Dance N' Attitude, or DNA, as an all-new dance concept, exclusive to the gym chain's portfolio. The dance class was introduced to Malaysia's Celebrity Fitness gyms in 2012, joining their portfolio of dance classes such as Zumba. The largest fitness centre chain in Malaysia, Celebrity Fitness has 21 clubs throughout the country. "Dancing enhances your life in so many ways, giving you health and confidence as a means of fun and social self-expression," says Sunny Cheong, Senior Group Fitness Manager at Celebrity Fitness and a DNA instructor. He has had more than 10 years experience in the fitness industry covering DNA Raw, Core Ex, Fastfit and TRX. Dancing, says Cheong, improves the cardiovascular system, increases muscle tone and burns calories. It also helps to increase flexibility, strength and coordination. "With the DNA classes, one can burn from 300-500 calories in an hour, depending on how big the movements are," he says.
DNA has four classes, each with specific moves and music. DNA Seduce combines flirty and sexy moves in a series of dance styles such as jazz, contemporary modern, street and funky style. DNA Raw features a variety of energetic choreographies, including Hip Hop, RnB, House and Funk. DNA Insanity combines a variety of dance moves into one, from contemporary to pop modern styles. Finally, DNA Flavour combines different Latin styles and movements such as salsa, tango, flamenco, merengue and more. "Every dance has an attitude. Similarly, everyone has his or her own DNA, and participants bring their own feeling into the dance. Participants take a class depending on what suits them and their mood," explains Cheong. In each 60-minute class, participants learn a dance routine that they get to perform at the end of the class. "We will break down the steps with background music so that participants get to feel the moves with the beat of the music. In the last 10 minutes of the class, participants will have the chance to perform the full routine. This is a chance for participants to demonstrate their talent and what they have accomplished during the class," says Cheong. DNA dance classes differ from Celebrity Fitness’ other dance offering, Zumba, because of their varied dance moves and styles. "With Zumba, it’s very

Bagaimana pun, Kim Lyew yakin situasi ini boleh diubah. Baginya, golongan muda yang berpengetahuan lebih pandai menghargai
karya buatan tangan yang terhasil menggunakan teknik-teknik asas tradisional. Namun, ada suatu faktor yang perlu diambil kira. “Kini, pelanggan juga semakin bijak. Cita rasa dan permintaan mereka semakin tinggi,” kata Kim Lyew. Menurutnya, pelanggan biasanya sudah membuat kajian di Internet terlebih dahulu sebelum datang ke kedai dengan pelbagai idea dan konsep yang tidak diduga. “Mereka ini pula lebih pentingkan kesempurnaan berbanding tuan-tuan kolonial dahulu!” ujarnya sambil ketawa. Realitinya, bagi Kim Lyew, perniagaan ini sukar untuk diteruskan oleh generasi seterusnya. “Saya cuma ada anak perempuan. Dalam bidang ini, kadang-kala kami perlu ambil ukuran badan pelanggan di bilik tidur mereka. Jadi, ia tidak berapa elok bagi penjahit perempuan,” terangnya lagi. Walaupun kesinambungan perniagaan ini bakal berakhir, minat Kim Lyew terhadap bidang ini tidak pernah luntur. Kesungguhannya jelas terpancar ketika beliau menunjukkan sehelai baju kot biru kelasi double-breasted yang menjadi titik tolak penglibatannya dalam bidang ini. “Baju kot daripada kain bulu biri-biri ini ayah buat untuk adik perempuan saya. Lihat betapa halusnya jahitan tangan ini. Seperti jahitan mesin. Masa itulah saya nekad nak menguasai kepakaran ini!” ujarnya. Jelas sekali, beliau sudah berjaya melakukannya. Kwong Fook Wing celebrates a century of fitting and measuring history-makers
W
hen Malaysia’s second prime minister, Tun Abdul Razak, needed a new suit for his inaugural visit to China in 1974, he had only one tailor in mind. That was Kwong Fook Wing, a family-run men’s bespoke clothier that has survived a World War and witnessed the formation of Malaysia. Operating from its unassuming premises on Jalan Sultan, Kwong Fook Wing looks like any classical tailoring shop. Bolts of fabric are piled up in dark wood-panelled cabinets alongside old mannequins, sewing machines and tailoring tools. A closer look at the framed-up letters on the wall, however, reveals a list of famous clients straight out of Malaysia’s history books. In the years before and after independence, a procession of British dignitaries walked through the door daily, recalls thirdgeneration owner Khong Kim Lyew, who lived in the shop with his ten siblings. This made him privy to political developments before the public did; he learned of the country’s impending independence because Sir Donald MacGillivray, the last British commissioner of Malaya, ordered a suit for the flag handover ceremony on 31st August 1957. One reason a Kwong Fook Wing bespoke suit is so highly coveted is that its measurements are reputedly so precise that many international clients remain loyal after they return overseas. They continue to order from Kwong Fook Wing through snail mail or telephone calls. Lt General Sir Geoffrey Bourne, the General Officer Commanding Malaya from 1954-1956, declared that Kwong Fook Wing’s immaculate finish was as good as London’s Saville Row –a comment that has been echoed by a bevy of illustrious fans. Kwong Fook Wing had humble beginnings. Kim Lyew’s grandfather, Khong Leong, a rickshaw puller from China, picked up tailoring skills when he arrived in Malaya and observed the growing popularity of Western suits. By 1915, he saved enough to establish a shop at Jalan Sultan –‘Fook’ denotes good fortune while ‘Wing’ means glory - and secured contracts sewing and stitching suits for departmental stores John Little & Company and Robinsons & Company, which were patronised by the European community. He also had the foresight of sending his only son, Peng Koon, to an English school. The decision paid off when Peng Koon found a job as a cutter at Robinsons; his popularity with the Anglophone clientele was such that when he joined the family business, they followed him. Entrepreneurial savvy runs in the Khong family. When Kim Lyew took over, he acquired professional qualifications from the prestigious Tailor and Cutter Academy in London, which enabled him to offer tailoring services for the judiciary. Generally, ceremonial clothing is a tough niche to master because it is governed by strict regulations and technical protocol. One must know what goes where, because the wrong placement of a trimming can have embarrassing consequences. In 1977, Kwong Fook Wing’s expertise in formal dressmaking resulted in a rare royal charter from the fourth Malaysian King.
In the late 20th century, the advent of faster, cheaper readyto-wear and mass-manufacturing options hit bespoke tailors. This decline might be reversed, however, Kim Lyew notes excitedly. An unlikely saviour: well-educated millennials, who appreciate the artisanal value in all things handcrafted. There’s just one caveat: “Discerning customers are also more demanding. By the time they come to me with their internet research and highbrow concepts, they are more perfectionist than the colonial masters!” he says with a laugh. Sobering, Kim Lyew admits that the business is unlikely to survive into the next generation. He says matter-of-factly, “I only have daughters. In our business, we sometimes see our clients in their bedrooms to measure them. Not a good thing for women.” The business may be in its sunset, but Kim Lyew’s passion for his trade is very much alive. His eyes glow when he shows me the garment that sparked his lifelong love affair with clothes making: a navy double-breasted wool coat that his father made for his teenage sister. With the enthusiasm of a ten-year-old, he exclaims, “The hand-stitching is so precise you’d think a machine did it. When I saw this, I told myself, I want to master this!” He certainly has.

‘TIS THE SEASON With December being the month of end of year celebrations, nothing quite gets you in the festive spirit like a good oldfashioned Christmas movie. With a selection of Christmas titles playing on board this month, we give you our top four picks:

If you ask ten people what their favourite Christmas movie is, at least half of them will say Elf. The film includes a hilarious starring role by Will Ferrell as Buddy, a lovable yet calamitous man who has been raised as an elf in the North Pole only to learn that his true identity lies in the US, where he causes a string of catastrophes en route to finding his real father. With Zooey Deschanel and James Caan in supporting roles, you won’t find a funnier modern festive movie.

THE FAMILY STONE
With a star-studded cast, The Family Stone is the quintessential festive family rom-com. With a big, cosy family house with log fires, thick-knit sweaters, hanging mistletoe, and a plethora of presents under the tree, if this film about an uptight woman who spends Christmas with her boyfriend’s eccentric family doesn’t give you that warm and fuzzy festive feeling, then nothing will.

Plenty of seasonal silliness in this comedy about a couple who are forced to celebrate Christmas four times with their unconventional families while all they want to do is escape on vacation. Starring Arnold Schwarzenegger at the height of his mid-nineties action and comedy fame, Jingle All The Way tells the familiar family story of a father desperately hunting down the season’s hottest toy for his son’s Christmas present before it completely sells out. Cue classic Arnie slapstick comedy as he clambers all over town to fulfill his son’s Christmas wish.

THE DEFINITION OF COOL Sharp suits and vintage racers, Guy Ritchie’s action spy adaptation, The Man From U.N.C.L.E finds the perfect blend of style and substance

tarring two of the squarest jawlines in Hollywood: Henry Cavill and Armie Hammer, and directed by likeable Londoner Guy Ritchie, it could easily be said that The Man From U.N.C.L.E is a real man’s movie. An adaptation from the popular 1960s TV spy drama of the same name, the film is set during the height of the Cold War, and follows CIA agent Napoleon Solo and KGB operative Illya Kuryakin as they participate in a joint mission to derail a mysterious criminal organisation from proliferating nuclear weapons. Having helmed the recent Sherlock Holmes movies, Guy Ritchie has a pedigree of giving vintage stories a touch of rejuvenated style – and The Man From U.N.C.L.E is no

Better known as Captain America in Marvel’s flagship franchise, The Avengers, Chris Evans’ Before We Go is a far cry from superhero summer blockbusters. An independent drama about two strangers who cross paths at New York’s Grand Central Station before spending an unforgettable night together, Evans deliberately wanted to make something small and intimate: “I’m a romantic, I like romantic movies,” said the star. “So I wanted to do something simple, but do it well.”

On the other end of the spectrum is Joel Edgerton’s offering The Gift, an unnerving thriller about a married couple who unwittingly move in next door to an old school friend who takes on an unhealthy interest in them. Edgerton made the jump from acting to directing in search of a new challenge: “I don’t feel I use a large part of my brain while I’m acting on set,” said the Australian. “But directing makes me feel a lot more in control of things.”

IDENTITY CRISIS Sean Bean takes on multiple roles in new psychological crime drama, Legends
I
f you happened to notice the hashtag #dontkillseanbean floating around social media last year, you may have found it to be a rather strange message. However, dig a little deeper and you’d discover that it was all part of the promotional campaign for new crime drama Legends, starring Sean Bean – an actor with a tendency of falling victim to untimely onscreen deaths. Created by the man behind cult sci-fi series Fringe, David Wilcox, and based on the book by spy novelist Robert Littell, Legends follows the escapades of FBI agent Martin Odum (Bean), an undercover specialist who can transform himself into multiple personas, called ‘legends’. These alternate identities are so complex and thoroughly planned that they almost take on a life of their own, so much so that Odum begins to question which identity is actually his. “Martin doesn’t know where the bottom of the rabbit hole is,” says show-runner David Wilcox. “In fact, what makes him such an interesting hero is that his greatest asset and the thing that lets him be this incredible operative, is the same thing that is jeopardising his own psyche.” Not only is the line between reality and makebelieve blurred for Odum throughout the series, but he also faces tough decisions on where his own moral thresholds lie. “It’s this question of: if he commits a crime in ‘legend’, does Odum himself have to answer for that,” adds Wilcox. On playing such a ranging role that has him switching
between at least three regular personalities, Yorkshireman Bean describes it as: “Fantastic and fun. It’s an actor’s dream to be able to do that. But sometimes it gets a bit confusing, even for me too.” Describing his character’s obsession with these personas, Bean adds: “Just like actors,

HONEYMOON HAUNTING Lana Del Rey continues to impress and mystify in equal measure with her latest album, Honeymoon
I
n a world of carefully groomed sugar sweet popstars and manufactured girl bands, real female singer-songwriters with unique vocals and a message to be heard are becoming few and far between. However, in the elusive and even ethereal star Lana Del Rey, pop music still has one of its most powerful and unique talents. In the last year, Del Rey has recorded tracks with the Weeknd, Brian Wilson, and Emile Haynie. She was also asked to write a song for Tim Burton’s movie Big Eyes, earning her a Golden Globe nomination in the process. Not one to divulge in press tours and self-promotion, the 30 year old will end the year on a typically understated yet artistic high, with the release of her fourth studio album, Honeymoon. Only two months after the release of her previous album, Ultraviolence, Del Rey jumped straight back into the recording studio to work on her follow-up record, stating that the process was “growing into something I really like. I’m kind of enjoying sinking into a more noirish feel for this one. It’s been good.” The perfect record for broken-hearted hipsters, Honeymoon is characteristically melancholic. Including songs that lyrically touch upon tortured romance, bitterness, lust and violence, the album takes an even darker tone than some of her previous material. Musically

however, Honeymoon has been acclaimed for its elegant dreamy pop sound; a retro piece of work that mixes elements of blues, hip-hop and jazz to create a distinctive baroque pop album that only Del Rey could pull off. Co-produced by her longtime collaborators, Rick Nowels and Kieron Menzies, the album subtly layers the singer-songwriter’s signature wispy, haunting vocals with echoing guitar melodies and decaying synths, resulting in a hypnotic pop journey that has been widely acknowledged as the enigmatic artist’s most sophisticated work to date.
If talk of young, gifted, and successful people gives you that slight sense of empty underachievement, you’d better look away now, as they don’t come much more multitalented than Troye Sivan. At only 20 years of age, South African-born Australian Sivan is an established actor – having starred in X-Men Origins: Wolverine and Spud – as well as a YouTube vlogging sensation with over 3.6 million subscribers. However not one to rest on his laurels, and having spent much of his youth playing songs to his growing online audience, Sivan has recently recorded his debut album, Blue Neighbourhood, which includes tracks from his newly released EP, Wild. In an age of stream-and-download music consumption and with catchy six-tracker Wild being Troye’s second ‘mini album’ to date, the artist defends his choice of making these shorter, snappy records: “Unless you feel you need a full-length album to tell your story,” he says, “I don’t feel it’s that relevant or important anymore.” Wild is playing on board this month. Accessing your screen in Business Class
Laptop power point

Press to release the handset.

Press to stow the handset.
Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.
A power point is available on all seats in First and Business Class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.

The village of Le Mesnil-sur-Oger in the heart of C么te des Blancs in the Champagne-Ardenne region of north-eastern France is planted completely with Chardonnay. Its 100-million-year-old terroir yields Grand Cru-rated grapes that produce some of the best champagnes in the world, including Le Roi Soleil. Each year on 22 January, villagers gather in traditional costumes to honour Saint Vincent, the patron saint of the vignerons or the men and women who work in the vineyards.
