That’s just us – Malaysians love to celebrate festivals, which help to strengthen the close ties among our nation’s citizens. Frankie Stevens, a New Zealand entertainment icon and judge for all three seasons of the reality series New Zealand Idol was in Malaysia recently. He spoke to us exclusively about the country’s warm hospitality and his experience flying with Malaysia Airlines. How was your flight with Malaysia Airlines?

One of the reasons why I am here is because of Malaysia Airlines and their generosity in every way. On board Malaysia Airlines, there was the much talked-about hospitality from the friendly crew. It feels as though you’re already in Malaysia. Furthermore, I am hardly an average traveller with a single suitcase; as I usually travel with my equipment and instruments. Malaysia Airlines helped me with all those. The great food and company on board truly allowed us to enjoy ourselves. I will always fly with Malaysia Airlines. Tell us more about your experiences being here in Malaysia.

This isn’t the first time I am here in Malaysia and I’ve been exposed to the culture years ago. However, everything remained as what I would expect of

this wonderful country. It has a massive energy and a safe feeling. Malaysia exudes a warm, welcoming and accepting vibe and I’ve never felt intimidated being here at all. I love the friendly and beautiful people, the fantastic Malaysian food, the consistent weather and the amenities, which rival those of any major city in the world. It’s easily one of my favourite places to be in the world. Can you tell us what you’re working on presently and in the near future?

Papier-mâché floats stretching up to four storeys high make their way slowly along the promenade, guided by hundreds of dancing costumed revellers. I

’ve eaten seafood all over the world, but never quite like this. Like many things in Auckland, this is something just a little bit different. I’m having lunch at Depot (eatatdepot. co.nz), a self-styled eatery and oyster bar where chef Al Brown serves up thoroughly modern Kiwi cuisine – with a twist. I order the ‘craydog’, not entirely sure what to expect, and am blown away by this fresh take on just one of the highquality food products New Zealand is known for. It is served on a stick (like a hotdog), coated in karengo and sesame seeds, and comes with a healthy dollop of wasabi mayonnaise and rock sugar syrup. It is juicy, succulent and finger-licking delicious. Perhaps this is why everyone seems to be ordering it, from the visitors taking tables for two, to the locals sitting up at the bar. This is the sort of place where you are warmly welcomed whenever you choose to drop in. Coffee at 7am? Sure thing. Lunch at 4pm? No problem. That laidback Kiwi lifestyle is no myth. Depot

shucks oysters to order at the end of the bar, and I feast on a plate of sweet and plump Te Matuku Bay oysters from Waiheke Island while looking out onto Federal Street. Here, an enticing line-up of modern restaurants recline in the shadow of the city’s famous Sky Tower, a needle-like structure that pierces the bright, blue summer sky. Federal Street was given a new look in 2014 when it became a ‘shared space’ with public seating and pedestrian right of way. In another part of town, the pedestrian is also king. Down on the waterfront, Britomart is an example to urban developers the world over, its heritage buildings revamped, its once down-at-heel squares and streets filled with packed restaurants and bars that now account for some 20 percent of the city’s food and beverage sales. One such restaurant is Ortolana (britomart.org/ortolana), in the heart of urban garden The Pavilions. Here, I find that the greenery has encroached inside, with a ‘garden to fork’ philosophy ensuring that every dish comes dressed


with greens – everything from sorrel to sage. Ortolana means ‘market gardener’ in Italian, an appropriate name for a restaurant with its own organic farm, west of the city in Kumeu. No bookings are taken here (nor at Depot) and casual dining is the name of the game, with raucous groups sitting alongside businessmen, all enjoying Italianinspired dishes such as pork osso bucco and crayfish ravioli. But it’s not only on the food scene that Auckland has improved in recent years. Over on High Street, a defunct backpackers’ hostel that was home to a flock of pigeons has been reborn as the classy Hotel DeBrett (hoteldebrett. com). Checking in here, I follow the eye-catching, hand-woven stripy carpet created by owner-designer Michelle Deery up the elegant, wide staircase to find a room that is small but welcoming. Hand-printed throws cover the bed; there’s the sort of wooden writing desk I dreamed of as a child in the corner, and the only thing missing from the chic black-and-white tiled bathroom is a bath. This is the perfect base for exploring Auckland’s best boutiques, many of them along High Street, just

outside the front door. I shop for Kiwi designs in Workshop, Moochi and tkStore and stock up on jewellery at The Vault. There is just time for coffee at Grind on High before I make my way back down to the waterfront – where I have a date with crayfish. I have booked dinner at Soul Bar (soulbar.co.nz), a gem on the Viaduct, an area that is otherwise populated by tourist-targeting restaurants taking advantage of the waterfront location. Not so at Soul, where the open-air terrace doesn’t just come with views out over the yachts, but also with a tempting menu of Kiwi produce. Owner Judith Tabron developed her love of fish in the kitchen of London’s L’Escargot and this shines through in head chef Gareth Stewart’s creations. Stewart also trained in London (at Claridge’s, The Greenhouse and Mews of Mayfair), and that city’s forwardthinking and inventive approach can be

seen in dishes such as the strawberry salad, served with an aged balsamic dressing, bright green basil leaves and fresh purple flowers. Soul is packed when I visit, with locals and regulars having lunches that spill over into dinnertime and are still going on as the sun sinks below the waterline. Their top choice, Judith tells me, is the snapper, caught locally. “Aucklanders are boaties,” she tells me, and they often catch snapper themselves. The fish is served here with roasted sweet stem broccoli and Italian lardo di colonnata and coated in a lemon-andshallot crumb. Delicious. Aucklanders are also increasingly health-conscious and the trend of the moment is gluten-free cuisine. People have been switching to a wheat-free diet for health reasons for a while now, but it was not until October 2014 that they had somewhere in the CBD they could order at without questioning the menu. That place is Misters Real Food (misters.co), a new café serving healthy gluten – and dairy-free dishes to a constant stream of office workers. It was set up by Fraser Jamieson and Alex Brayne, and when I visit they are still wide-eyed with surprise at their success. Sitting next to the spectacular ‘living


If you like Auckland, you might also like: Sydney Australia’s most famous city has a vibrant, ever-changing food scene that focuses on the fresh, whether that be produce or ideas. Circular Quay in the heart of the CBD is set to be revamped, and with burgers currently big news the world over, Sydney is of course keeping pace, with new joint the Burger Project (burgerproject.com), from Aussie chef Neil Perry, opened in the CBD in 2014. San Diego This SoCal city has long been in the shadow of its northerly neighbours LA and San Francisco, but that just keeps things authentic. You’ll find some of the best Mexican food in the States here, thanks to the proximity to the border, and the historic Gaslamp Quarter (gaslamp. org) is packed with laidback restaurants and local boutiques. A new market of local artisans is planned at the Liberty Station building for 2015.

The tabbouli is not cous cous but cauliflower, and my coffee is white thanks to hazelnut milk. It is an eye-opener. I’m clearly not the only one to think so. Fraser and Alex are run off their feet, the queue of customers spilling out onto the street. Perhaps Auckland had been waiting for the chance to go gluten-free. Perhaps Auckland is no longer following trends from elsewhere but setting them itself. Perhaps it’s time you booked your table here.

Cape Town With a long history as a port, Cape Town is a true cultural crossroads, and its food scene represents this. Try Cape Malay curries in the colourful BoKaap district, just on the fringes of the city centre, or the locals’ favourite burger at Clarke’s (clarkesdining.co.za) in the CBD. The latest trend though is health food, with plant-based fast food restaurant Plant Café (plantcafe. co.za) leading the vegan way.

I

t was around 24 million years ago that Iceland first rose from the ocean as a collection of volcanoes spewing lava and gas. Perched atop the rift between the divergent North American and Eurasian tectonic plates, the environment of this north Atlantic island is today still wrought by fire, ice and a tempestuous climate. Eruptions, earthquakes, mud pools, fumaroles and spouting geysers are all part of daily Icelandic life. Flying over its capital Reykjavik, it still seems remarkable that anyone could call this seemingly inhospitable place home. Yet today the pint-sized Icelandic capital sits at the edge of the Arctic Circle with a pugnacious defiance that would make its Viking founders proud, while

 

Icelanders across this primal land revel in its dramatic beauty. Every winter many Icelandic residents and visitors retreat to cosy bars, cafes and hotel rooms while gale-force Arctic winds buffet walls and windows. Yet the very name of this wild and elemental country evokes such potent images that it challenges visitors to explore. For those who go beyond Reykjavik's city limits, some memorable sights await. Three of Iceland’s most popular destinations are conveniently within easy reach of Reykjavik – Gullfoss, Geysir and Thingvellir – which together form what’s known locally as the Golden Circle. This 300-kilometre round trip takes in gushing geysers, thundering glacial waterfalls and one of only two places in the world where two divergent tectonic plates can easily be observed above sea level. It's the perfect introduction to the jaw-dropping, frequently surreal natural sights that seem to abound in this small country. One of Iceland’s most famous attractions, Geysir has given its name to geysers the world over. While the main geyser on the site hasn’t erupted for years, today its smaller yet still impressive cousin Strokkur dutifully shoots a stream of boiling hot water and steam up to 30 metres into the air every seven minutes. If you can tolerate the sulphurous stench, there’s a panoply of other smaller geysers nearby, hissing, spitting and bubbling away like miniature cauldrons. "Geysir once shot water into the air

to heights of 80 metres," explains local Hjordis Reynisdottir. "In the 1950s, however, tourists blocked it by throwing rocks into it. Luckily Strokkur is still regular as clockwork. If you're coming in winter make sure to bring gloves - when you wait seven minutes for an eruption, bodily extremities can get a bit cold." A short drive from Geysir, the location of Gullfoss (‘golden falls’) is given away by the rising clouds of spray, which are visible for kilometres around. This massive, beautiful waterfall - created by millions of gallons of glacial meltwater plunging into a deep crevice - was once endangered by a proposed power station. A local woman threatened to throw herself down the falls in protest, and Gullfoss was rescued.

The last site on a Golden Circle route is Thingvellir, a UNESCO World Heritage site where the Vikings established the world’s first democratic parliament in AD 930. This is the only place where the Mid-Atlantic tectonic plate boundary is visible on land, with valley walls drifting further apart by 7 mm each year. On a windswept winter's day, walking amongst the site's jagged boulders and soaring rock walls, it's not hard to imagine Viking chieftains convening here to settle disputes and recount ancient sagas. Gaze northwest from Reykjavik on a clear day and those with eagleeyed vision will spy the gleaming Snaefellsjokull Glacier on the horizon. While the glacier is nowhere near the

size of Iceland’s largest ice sheets, it is by far the most mysterious and popular. Sitting near the tip of one of Iceland’s most beloved landscapes - the Snaefellsnes Peninsula - this is the glacier that French author Jules Verne chose as his doorway into inner space in Journey to the Centre of the Earth. One of the reasons why Icelanders love the Snaefellsnes Peninsula so much (aside from its enchanting landscape

brimming with lava caves, waterfalls, springs) is that it is a and mineral hot veritable heartland of history. Some of the country's best and most important sagas took place here, and it is said that explorer Christopher Columbus once spent a winter in Ingjaldsholl, where he heard stories of lands far to the west. With its glistening white cone, Snaefellsjokull is the most potent and enduring symbol of Snaefellsnes. But even if the glacier weren't there, the manifold wonders of Snaefellsnes would still stand out. With its lush fjords, haunting volcanic peaks, dramatic sea cliffs, sweeping golden beaches and crooked, crunchy lava flows, the 100-kilometre-long peninsula is renowned across Iceland as the place to witness the whole country ‘in miniature’. The gateway to the north coast of the Snaefellsnes Peninsula, Grundarfjordur is the most picturesque town in the area. Kirkjufell, its oblong signature mountain, pokes up from a promontory to the west like an upturned loaf of bread, while a network of hiking trails lead south across the peninsula's mountainous spine. During winter, the Snaefellsnes Peninsula is graced by two of the natural world’s most impressive phenomena -


large groups of killer whales (or orcas), and regular appearances of the iconic Aurora Borealis, or Northern Lights. When these twin attractions appear both day and night, it can be difficult finding time to sleep. From mid-December to early April, the waters just off Grundarfjordur teem with herring, attracting large pods of killer whales, dolphins, porpoises and a multitude of sea birds. A number of Reykjavik-based companies run whale-watching tours, with several in Grundarfjordur itself. "Whales are found in all the world's oceans, and about a quarter of all species are found in the waters around Iceland and the United Kingdom," explains Iceland-based marine biologist and whale guide Alexa Kershaw. "Around Iceland, the warm waters of the Gulf Stream mix with the cooler coastal currents, creating an abundance of plankton and fish, and therefore  food for the whales. The best time for

sightings is between October and March, when herrings come close to the fjords of the Snaefellsnes Peninsula to shelter from the worst of the winter weather. The killer whales naturally follow them, sometimes into really shallow water. You can frequently see them just by standing on the shore." Iceland is a country of natural juxtapositions. Lifeless glaciers sit above verdant valleys, while barren lava fields are bordered by gorgeous black sand beaches. Nothing seems to make sense, but it all fits together perfectly. One Icelandic journey where the environment constantly changes is that to Jokulsarlon, a glacial lagoon around 380 kilometres east of Reykjavik. From volcanic ash deserts to moss-carpeted boulders that stretch toward the horizon, the drive to Jokulsarlon offers scenery unlike anywhere else on Earth. Soaring peaks rear up suddenly from flat, prairielike fields, while countless waterfalls drop over huge cliffs right beside the road. Jokulsarlon itself is one of the most beautiful sights of Iceland. Situated at the south end of the Vatnajokull glacier, the lake first appeared in 1934 due to glacial melting and now covers 25 square kilometres. With approximately

500 square metres of ice breaking off the glacier every year, the lagoon is filled with icebergs of all shapes and sizes. As these reflect the sky above, the whole site becomes a kaleidoscope of icy hues. Today, many of Iceland's time-pressed travellers never get to witness the glaciers, geysers, erupting volcanoes or bubbling mud pools that continue to shape the nation's very existence. For those prepared to journey further and deeper, this dynamic land leaves memories as powerful as the landscapes that inspire them.

he view from the ramparts of the medieval Sant'Elmo castle is inspiring. Vesuvius, one of the world’s most famous volcanoes, rises from the mist to the left; the expansive Bay of Naples stretches in front, and to the right is the Isle of Capri, celebrated in the famous song. And immediately below spreads Naples itself, with its many domes, churches, red-tile roofs and terraces, grand plazas and palaces. Naples may not attract the throng of visitors who flock to Rome, Venice and Florence. Once the third most-populous city in Europe after London and Paris (and formerly one of the continent’s most opulent), Naples is often just a jumpingoff point for Pompeii and the Amalfi Coast. But this chaotic, charming city has great art, architecture, its own distinctive cuisine and a lively street life. On the advice of a local, I take the Chiaia inclined railway line, here called the funicular (as in the renowned Neapolitan song Funiculì, Funiculà). Within minutes, it takes me to the upper reaches of the city, away from the crowds. Here, the stylish Vomero district, home to the city’s wealthier citizens, is known for its fabulous views, grand villas and

extensive park. Luxury stores line the broad 19th and 20th-century boulevards, along with apartment buildings and delicatessens displaying a great array of delicious local specialities. Firecrackerred chillies hang in clumps outside grocery stores, ready to be picked for the cooking pot, and cheese shops display huge balls of mozzarella and pavingblock-sized bricks of parmesan. In this ritzy residential area, I find another attraction to this often-maligned city: the people. Several times while standing on a street, looking clueless and studying a map, I’m offered advice and directions by the locals – usually very proper-looking older citizens. Neapolitans are among the friendliest people in Italy. Following directions from an immaculately dressed elderly woman, I walk the short distance to the Castel Sant'Elmo, perched on the hill. Inside the massive medieval fortress, the Museo del Novecento is dedicated to 20thcentury Neapolitan art, with an extensive collection of varying appeal. The main attraction, though, is the panoramic view. From here, another line, the Funicolare Centrale, one of the world’s longest funicular lines, takes me down to


Via Toledo and Galleria Umberto I. This expansive indoor glass-and-iron domed gallery and shopping arcade, built in the late 19th century, is as imposing as any in Paris. The spacious, cross-shaped indoor plaza with its beautiful glass roofs and ornate tiled floors - including a mosaic of the zodiac at the centre - houses shops and cafés. Today, the grandest interior in southern Italy is almost empty, except for a bevy of ballerinas tottering up on their tiptoes, posing for a professional photographer. Leaving the giant arcade, I stroll up elegant Toledo Street (a remnant of when this city was Spanish), which

French author Stendhal called ‘the most populous and merry street in the world’ nearly two centuries ago. Elegantly dressed Neapolitans window shop at the designer stores and savour their country’s famous coffee in outdoor cafés. Groups of noisy, animated locals stroll the sidewalks, the ubiquitous scooters buzz past, and salesmen peddle cigarette lighters, fridge magnets and other affordable souvenirs. My next stop is the Gallerie d’Italia art gallery in a former palace, the Palazzo Zevallos Stigliano. Naples is an important centre of fine art, with excellent museums and galleries, often housed in historical buildings, which are works of

art themselves. This one displays a fine collection of Naples’ art donated by local banks, but I find the elaborately decorated building as interesting as the paintings. Just off Toledo, I happen on the Quartieri Spagnoli (Spanish Quarters), a working-class neighbourhood named for the Spanish who ruled the city for two centuries starting from 1504. There is energetic street life here, with colourful flags and laundry hanging over narrow alleys, people yelling and music playing over scooter noise. I catch the sound of an accordion in the street from a wandering troubadour playing classics such as O Sole Mio. Incredibly fresh produce is displayed at stalls: tomatoes grown on the black soil of Vesuvius, lemons, melons, peaches, plus various types of apples, from yellow to red to pink. There are also all sorts of glistening fish piled on tables. Bakery windows display tempting local pastries. There is little English on the menus of the small local restaurants here, making dining a challenge. Naples is credited for inventing the modern pizza, and it is sold


everywhere here, but menus out on the streets offer numerous other choices. That evening, I head down to the port to sit at an outdoor café on Via Caracciolo, looking at the waterfront Castel dell'Ovo (Egg Castle) and the sparkling lights of the city strung out along the shore and across the hills. Cars are banned on this stretch of the road, so it’s peaceful with only strollers and bicycles passing by. On my last day, eager to see one of the city’s main attractions, I take the Circumvesuvio train through the grubby suburbs, with extensive graffiti marring the local stations. In Ernaculo, I pay the equivalent of USD25 (including the entrance fee) and take a minibus up a winding road to Vesuvius, through forests growing from the black soil, past lichen-covered rocks. Near the summit, a restaurant sells snacks and beer, and souvenir shops offer typical tourist fare, as well as black volcanic stones and tasteful handmade volcanic stone jewellery. From the entrance, a black sand trail goes to the crater rim, steep at first, then levelling off. Wooden stairs lead up to an open area with ropes strung along to

hang onto, as powerful winds pummel the hikers. From the lip of this deadly crater, I look down into the cone, to see smoke rising from one corner. And there, far across the blue bay, I see Sant’Elmo castle, where I stood just days ago, and spread out all around it, the exuberant city bursting with life. Looking out at the blue sea, I recall that the Bay of Naples was home to the mythological sirens, mermaids who lured sailors to shipwreck with their enchanting singing in The Odyssey. I have certainly heard the siren call of Naples, and I will return someday.

f Osakans appear smug these days, it’s for good reason. Japan’s third most populous city has seen an increase in the arrival of overseas tourists longing for a bit of old-world charm along with the comforts and excitement of a modern metropolis. With beauty characterised by stone-paved, lanternlit alleyways, stunning greenery, and the enduring moniker of kuidaore no machi, or ‘the city where you eat till you drop’, the hometown pride is perfectly understandable. Add to that Osaka’s reputation for its down-to-earth people, and it’s easy to see why the city is one of Japan’s must-visit destinations. Here are some of the not-to-be-missed attractions if you’re visiting Osaka for the first time.

What to see

To experience Japan’s breath-taking cherry blossom season or to take in its fall foliage, visit the Expo ‘70 Commemorative Park (expo70.or.jp/ languages/English). The 260-hectare park is built on the site of the Japan World Exposition 1970 and features the Japanese Garden and the Japan Folk Crafts Museum, among others. The grounds of the Osaka Castle (osakacastle.net) are also worth visiting for its beautiful landscape, acres of cherry trees and a huge variety of flowers. The castle itself is a reproduction after it was destroyed in the Summer War of Osaka, rebuilt, only to be heavily damaged during World War II. Today, it is a museum housing Japanese historical documents, while an observation deck on the 8th floor offers panoramic views of the city. If you’re tired of walking, a great way to take in the sights of the city is on the Aqua Liner (suijo-bus.jp/language/english) from the Okawa River. The seasonal cruise passes many of Osaka’s famous sites, including under bridges. If you’ve had enough of the views from the ground, get up to the ‘floating garden’ located at the top of the 173-metre high Umeda Sky Building (kuchuteien.com/english). On the way up the twin skyscrapers connected at the top floors, see-through elevators and escalators are bound to make you weak in the knees. Once up, step out onto the Lumi Sky Walk, a 122-metre completely open circular corridor, for 360-degree panoramic views of the Osaka cityscape. If you have time for just one visit to a museum, the Osaka Museum of Housing and Living is highly recommended. Be transported back in time to the Edo period through a life-sized reproduction of the town of Osaka in the 1830s. Stroll through lanes and peek into shops and

Guests sit on an ‘enchanted bench’ and are launched at varying speeds in all directions while chasing dragons, flying over Hogwarts Castle, and playing quidditch, among others. The entire experience is conducted in Japanese, even when Dumbledore is speaking to you. But for fans, it’s easy to guess the storyline. If you’re prone to motion sickness or have small children who don’t meet the requirement for the Forbidden Journey attraction, hop onto the family-friendly Flight of the Hippogriff coaster that spirals and dives around a pumpkin patch and

specialised shopping, Amerikamura has hundreds of small, inexpensive boutiques catering to youths, while the nearby Horie and Minami-senba districts cater to the slightly older, more sophisticated crowd with prices to match. Those craving a more holistic experience can head to the Osaka Station City complex in the Umeda district, where large Daimaru, Hankyu, Hanshin, and Mitsukoshi-Isetan stores are located.

What to eat

As tenka no daidokoro or the ‘nation’s kitchen’, Osaka is clearly all about food. The Dotonbori area is a street food haven known for the hundreds of neon lights and mechanised signs that line its street, including the famous Glico Running Man and the Kani Doraku crab signs. Okonomiyaki is arguably Osaka’s most famous food. A cross between an omelette and a pancake, okonomiyaki is filled with a choice of meat, seafood or noodles, and topped with bonito flakes, a special brown tangy sauce, mayonnaise, and scallions. four traditional arts developed primarily in Osaka, including Noh plays, kyogen comic plays, bunraku puppet theatre, rakugo comic storytelling, and rokyoku narrative ballad, among others, in a single evening. Noh plays reached their perfection about 650 years ago and are believed to be the oldest existing theatrical performance in Japan. Fijian chef Talala Tupou smiles as he prepares the kokoda, a raw fish dish that’s marinated in coconut milk and mixed with onions and chillies. He carefully places the pieces of local snapper aside and massages coconut shavings around a hot stone with his hands, explaining this is how to achieve a smoky flavour. After 10 minutes, he’s made fresh coconut milk for the marinade. No canned varieties here. “I love cooking. I love food. When I was a boy and mum was cooking I would always watch,” he says, chuckling. “After mum cooked, then I cooked.” Together with executive chef Jona Ravasakula, Talala crafts a variety of traditional dishes at Yasawa Island Resort and Spa (yasawa.com) and comes up with innovative meal concepts. The enticing menu at this tranquil resort is on a 10-day rotation – more than 50 different main course recipes are prepared over the span of 10 days. And guests are never limited to three-course meals. “If a guest wants three desserts, that’s fine, or even five – it’s all inclusive here,” Talala says, gazing out at the waves gently rippling against the powdery white-sand beach – a scene straight out of a honeymoon catalogue. Yasawa Island Resort and Spa is the only resort on the idyllic Yasawa

Island, the biggest island in the Yasawa archipelago (a chain of volcanic islands stretching 80 kilometres in the Western Division of Fiji). It’s a wonderful showcase of just how good food in Fiji can be. Guests come to unwind and eat to their heart’s content.

The produce

Fijian food is the unscripted sum total of absorbed influences from different ethnicities arriving in Fiji at various times throughout history. The Polynesians, Melanesians and Micronesians came first, and then the Indians, Europeans and Chinese travelled to this island country. Some stayed, some departed, but everyone left behind a splash of their culinary practices. At resort restaurants, you’ll find Western, Eastern and fusion dishes all on offer, but the constant is the produce, mostly from Fiji. Island resorts like Yasawa work with local fishermen and farmers to harvest organic, fresh food. Many mainland resorts grow herbs and vegetables in gardens and get other produce from markets. The daily Nadi produce market is where to go to get a sense of what’s in season. Unlike countless markets around the globe, it’s not frantic or noisy – a nod to the relaxed Fijian culture.

Hawkers convene on the ground, casually chitchatting with each other, their fruits and vegetables tidily bundled together – finger eggplants with a deep purple lustre, sweet papayas, plump mangoes, red and green chillies, plenty of coconuts and more. In the seafood section, fishermen hawk the daily catch: wild-caught fish, pipis, clams and lobster. At Sofitel Fiji Resort and Spa (sofitel. com/gb/hotel-5706-sofitel-fiji-resort-andspa/index.shtml) on bustling Denarau Island, French chef Jean-Marc Ruzzene uses fresh-picked herbs and vegetables from the restaurant garden, local seafood, and some imported produce when the dishes call for specifics (like lamb, which comes from Australia or New Zealand). “It’s about supporting Fiji and forming the best possible flavours,” he explains as he strolls into the elegant V Restaurant.

There are three restaurants and a café at Sofitel Fiji Resort and Spa, but fine diner V Restaurant is where you come for the ultimate gastronomic seduction. Dishes are paraded out of the kitchen like artwork heading to a gallery. Bright-red cherry tomatoes border a plump fillet of local mahi-mahi, while seafood lasagna is a beautifully constructed mound of glossy pasta sheets, succulent lobster and meltin-the-mouth cheese. Desserts dazzle in both visual appeal and taste. “I don’t believe in garnishes,” Jean-Marc says. “All ingredients on the plate are designed to be eaten. I think when you over-garnish, you’re saying that something is missing from the dish.”

Desire to learn

Local chefs in Fiji work hard to stand out. Some jazz up their dishes with an assortment of garnishes for visual oomph, while others let the flavours do the talking. There’s no right or wrong – just the desire to create dishes that dazzle. Every October, young chefs from all over Fiji gather in Nadi for the three-day Moffat Culinaire Salon, a prestigious internationally judged competition. Last year, four chefs from Peter Kuruvita’s Flying Fish restaurant at the Sheraton Fiji Resort (sheratonfiji.com) walked away with medals. Gold medals went to Akshay

Kumar for ‘Static Main Course’ and Munish Rahul for ‘Live Beef Dish’, and silver medals went to Sumeet Chandra for ‘Live Salad’ and ‘Live Curry’ and to Ashnil Kumar for ‘Live Dessert’. Even the category names are imaginative and point to Fiji’s desire to learn, to grow, to astound. The head chef at Flying Fish, Pawel Klodowski (who hails from Poland), can’t wipe the wide grin off his face when he chats about his staff. “They are amazing. Without them, there would be no Flying Fish,” he gushes, gazing at the superbly situated waterfront restaurant. Inside, staff members whizz past guests and distribute aromatic dishes, cheerful diners savour both the food and the view, while chefs smile, knowing that their handiwork is being appreciated. In Nadi, at Tata’s Restaurant (tatasrestaurant.blogspot.com), chefs also smile as they work – a Fijian trademark. Lovo: Fish, vegetables and meat are cooked in an underground oven, which is basically a hole in the ground lined with fire-lit coconut husks and covered by stones. Customarily, lovo was prepared for communal celebrations, such as weddings and festivals. The base – comprising red ginger, onion, yam flakes, papaya, ginger, jellyfish, pomelo and winter melon to mimic the colours of the sunrise – represent the seven fortunes. The centrepiece is a choice of fresh salmon, jellyfish or abalone, with special advanced orders for lobster and geoduck. Top it off with other special New Year dishes such as braised dried oyster with dried fish maw and sea moss in a special abalone sauce, or the highly popular steamed claypot rice with Chinese waxed meat.

The upscale Noble House has a reputation for fine Cantonese cuisine, and the food is worthy of its repute. Its yee sang has two options for its underlying base, the traditional yee sang with the inclusion of pickled vegetables and another with modern vegetables such as purple cabbage, lettuce and Chinese turnip. To make it vegetarian, ask for the golden crispy enoki mushroom as a topping instead of the usual fish. But if you want it decadent, go for the Hokkaido scallop and spider crab meat. You can even request for an additional side order of white truffle to make it quite an unforgettable dish for the celebrations.

Japanese restaurant Yuzu does its own take on yee sang for Chinese New Year. Fresh Norwegian salmon is tossed with a delectable combination of fruits and vegetables such as pumpkin, carrots, white radish, purple cabbage, raisins, Japanese plum and fresh-tasting mizuna leaf. Yuzu’s Japanese chef has included tempura fritters and specially marinated jellyfish and seaweed to the mix, which is topped with a homemade plum sauce and garnished with salmon roe. As a seasonal special, Yuzu is importing a whole tuna from Kyushu, so you can have your pick of the fish from tip to fin and have it specially prepared the way you like it.

Hands has teachers in schools in the Klang Valley, Taiping, Kuala Terengganu and Sandakan. In the last few years, Goh, the ensemble’s artistic director, has experimented further with the style, introducing new innovations to the performance and creating a new vocabulary for the musical language. “It needs constant new life,” says Goh, who regularly injects a Malaysian flavour into the original compositions for the troupe. He has been experimenting with different sets of drums, dipping into Malaysia’s rich cultural mix to tackle the Malay rebana and kompang, and the Indian tabla. Goh started incorporating the different drum rhythms in his composition for the traditional Chinese drums. With time, he introduced the instruments into the mix as well. The troupe is well-versed in Chinese drums and the gamelan, forming the Hands Gamelan Group in 2007 when they acquired a custom-made gamelan set, comprising bronze percussive instruments and gongs. “We want to represent the voice of Malaysian drumming and not confine it to using only Chinese drums,” he says. 2014 was a turning point for Goh and his merry troupe. In terms of production, it was an especially heavy one with three original performances, the highlight of which was Tchaikovsky on Gamelan. “It turned out that Tchaikovsky’s music fits in

T

he writing is on the wall. Traditional art forms are in danger of falling by the wayside if not for young performance art groups reinterpreting them in new and contemporary ways. Take for example Hands Percussion (hands.my), Malaysia’s first professional percussions group, which was founded in 1997 by Bernard Goh and Eric Ch’ng. The ensemble is widely sought after for its original and exciting performances, packed with scintillating rhythms and high energy. A full-time performance troupe, Hands uses the 24-seasons drums style, a uniquely Malaysian style developed by Tan Hooi Song and Tan Zai Pan in Johor Bahru in 1988. The style itself is a modernisation of an important Chinese tradition; drums have been used in Chinese culture since ancient times, both in wars and celebration. This particular style is far more romantic, inspired by China’s seasons, celebrations and festival. As suggested, it makes use of 24 drums, a high-energy style and deep roots in the Chinese drumming tradition. The 24-seasons drum has spawned troupes in Malaysia and around the world, each imprinting its own signature on the style. The drum style is taught as an extra-curricular activity in Chinese-medium schools nationwide.

very well with the gamelan,” says Goh. The show was a collaborative process and took a year to produce, develop and perfect. The hard work, persistence and frustration paid off; the show was a resounding success and there are plans to restage it again in the coming year. For future collaborations, Goh is throwing his net wider to include Southeast Asian art forms in Hands' performances. “We are very much based on tradition, and while we aim to evolve our art form and make it more colourful, we cannot forget our tradition,” says Goh. Meanwhile, another revival of sorts is playing out in the world of wayang kulit, or shadow play, an ancient form of storytelling where communities would gather around to hear tales of heroism and wisdom told with the use of cut-out puppets, a screen and a single light source. A Tok Dalang, or puppet master, manipulates the puppets while narrating well-loved tales to the hypnotic tunes of the gamelan.

As TV and computers began providing home entertainment, wayang kulit’s appeal has waned, with only a handful of troupes remaining in the country. That was impetus enough for Peperangan Bintang Wayang Kulit (facebook.com/peperanganbintang) founder Tintoy Chuo and co-creator Teh Take Huat to champion this art form to the young. Peperangan Bintang is Malay for 'war of the stars'. As a character designer, Chuo is familiar with the need for strong characters and a good story to attract an audience. As wayang kulit stories often revolve around good and bad characters, it was perfect for the adaptation of the Star Wars movie saga’s storyline. “I wanted to do something with Malaysian culture, but to make it fun so as to attract a younger audience. I started thinking, what if we tried to combine different elements together, and hit on the idea of wayang kulit and Star Wars. It works because while wayang kulit is a disappearing art form, Star Wars

is universally known,” says Chuo, who received the blessings of Lucasfilm to pursue the project. “Star Wars has iconic characters that are easily recognisable in different forms. So even if we present Darth Vader as Sangkala Vedeh in our performance, the audience can pinpoint who he is,” says Teh. The duo work closely with Muhammad Dain Othman, or Pak Dain, a master puppeteer, shadow-play expert and historian from eastern Kelantan state. Pak Dain had gotten in touch with Chuo by Facebook out of curiousity about the project, and was eventually persuaded to lend his expertise. With Pak Dain on board, the staging of Peperangan Bintang, complete with a gamelan ensemble to provide the music, came within reach. “As a purist, if he’s going to be involved, everything has to be researched and done properly, and we want to do it the proper way,” says Chuo. The attention to detail is great. From the patterns, also called bunga, on the costumes to the classic gamelan interpretation of the Star Wars theme song, Peperangan Bintang is a delightful and entertaining fusion of old and new. They did take creative liberties, such as computer-generated visual effects (traditional shadow play employs a clean, white backdrop) and the use of sandy emboss, a type of plastic, in place of cowhide in making the puppets. “Cowhide

has a yellow tinge to it, and we wanted white for characters like R2D2 and the Storm Troopers,” explains Chuo. The project has rolled out the first out of four acts, garnering a positive response and media attention while reaching out to a new audience, young and old. As Chuo explains it, Peperangan Bintang is just the first step to a bigger objective. “This is just one of our projects. Our aim is to preserve or reintroduce this art form to a younger audience, to get them interested in it so the art form does not die out with the next generation. We feel like it is our responsibility to help promote and preserve Malaysian culture,” says Chuo.

Dengan pedati sisi beroda yang dipasang pada basikal biasa, beca merupakan kenderaan popular untuk membawa penumpang ke destinasi yang dekat. Dikemudikan dengan teknik kayuhan, beca juga digunakan untuk mengangkut barangan kargo yang berat dan dapat menempuh kesesakan lalu lintas dalam masa tersingkat. Bagi saya, beca nampak ringkas binaannya dan mudah rosak. Namun, sangkaan saya meleset sejurus bertemu dengan Benny Diong, pembuat beca terakhir di Kuala Lumpur. Di Pasar Pudu, tempat dia mengusahakan kedainya sejak 54 tahun lalu, dia berkata: “Perasan atau tidak? Bila dipasang dari bahagian yang lebih tinggi, platform kayu penyambung itu akan jatuh sedikit sebelum melonjak semula, menentang hukum graviti. Semua beca sengaja dibuat senget bagi menyokong beratnya dan ini bergantung kepada kegunaan.” Tambahnya: “Kalau nak guna untuk mengangkut penumpang, kerusi akan ditambah. Jadi, pedati akan lebih senget bagi menyokong berat kerusi dan penumpang. Keseimbangan juga

amat penting. Kamu tak mahu roda basikal cepat haus.” Menurutnya, struktur beca yang baik boleh bertahan berdekad lamanya. Keunikan beca Benny terletak pada seni pertukangannya. Hampir setiap bahagian becanya dihasilkan sendiri termasuk peralatan untuk membuatnya. Pemotong besi dicapainya untuk memotong dan melentur penyandang roda berbentuk “U”. Melihat saya tertarik pada selonggok kepingan besi terbuang, dia berkata: “Ini mungkin sampah bagi kamu. Tapi bagi saya, inilah rezeki!” Jelasnya lagi, kepingan besi ini

Namun, khazanah lebih berharga iaitu timbunan gambar lama sebenarnya tersorok di dalam laci-laci mejanya. Siapa sangka, kedai kecilnya juga pernah menjadi pengeluar walker lipat untuk bayi? Malah, dua beca buatannya juga pernah diterbangkan ke England sebagai kenderaan untuk bersiar-siar selepas Benny menerima tempahan daripada seorang lelaki warga Barat. Sejak mewarisi seni pembuatan beca daripada mendiang bapanya, Diong Kim Seng menerusi pemerhatian semata-mata, Benny telah menghasilkan sebanyak 20,000 buah beca. Hakikatnya, kehidupan ribuan rakyat Malaysia era pasca perang bergantung kepada kenderaan kecil tersebut. “Sekumpulan imigran China berusia sekitar 80-an yang saya kenal telah datang ke Malaya pada ketika itu dan mencari sesuap nasi sebagai pengayuh beca – menghantar budak-budak ke sekolah dan wanita ke pasar. Selepas bersara, mereka datang

dan tempah lapan buah beca untuk dihantar ke China agar cucu-cicit dapat memahami kehidupan masa lampau mereka,” ujarnya. Semua beca buatan Malaysia masih mematuhi piawaian yang ditetapkan oleh kerajaan. Berukuran selebar 76 cm (30 inci) dan sepanjang 127 cm (50 inci), kenderaan beroda tiga itu bagaimanapun boleh dibina secara modular. Pada era pasca perang, penjual buah-buahan akan meletakkan barang jualan di atas sebuah rak yang telah dibina di atas beca. Penjual mi pula gigih menebuk lubang di tengahtengah beca untuk mendirikan peralatan memasak masing-masing. Di bawah roda bebas itu Benny turut menambah satu motor demi memenuhi kehendak iklan Petronas. Pengubahsuaian ini bagaimanapun bergantung kepada daya kreativiti pembuat dengan tukang kayu. Hari ini, beca banyak digunakan sebagai kenderaan untuk membawa pelancong bersiar-siar atau sekadar alat pelengkap iklan. Benny Diong, Kuala Lumpur’s last maker of beca, sustains a trove of Malaysian history The samlunche, Cantonese for the three-wheeled vehicle also known as a trishaw, evokes fond memories of my late Uncle Anthony. On days when he didn’t ferry tables and chairs to the play field where he helped Auntie Kiew sell wantan mee, he put me on the cargo cart and took me for a spin round the neighbourhood. Configured by mounting a side cart with a free wheel to a regular bicycle, the beca was a popular pedal-driven

vehicle used mainly to ferry passengers on short distances in residential streets and to transport cargo too heavy to carry by hand and over roads too congested for motor transport. To my child's eyes, the beca seemed flimsy and primitive, a misconception quickly dispelled when I meet Benny Diong, Kuala Lumpur’s only beca maker, in a shop that has operated out of the Pudu wet market for the last 54 years.

“Notice that when you mount from the higher side, the interconnecting wooden platform sinks slightly before springing upwards again, defying gravity? All beca are deliberately tilted to support the expected weight, depending on its usage,” Benny explains. “If you use it as a trishaw by adding on a chair, the cart is more sloping because you have to support the weight of the chair and passenger. Balancing is also critical if you don’t want the bicycle tyres to wear out quickly.” A well-built beca, Benny tells me, can easily last several decades. What makes Benny’s beca unique is that he makes almost every part, including even the tools to build it. His mother used to sew the nylon folding hood for the trishaw. Now he cuts and bends the U-shaped wheel holders with a steel cutter. When he catches me eyeing a pile of truncated steel parts at the shop front, he says with a chuckle, "To you it may look like rubbish, but to me, it’s money!" He tells me they are used to solder broken knives and brackets. Benny's shop is like an open treasure chest: Hanging from the ceiling is a rare cart wheel, the missing link between the old wooden spoke bullock cart wheel and modern steel wheel; a director's chair; old-school trolleys. But the greatest treasure is a stack of fantabulous old photographs that tell stories we'd never believe otherwise. Who knew that Malaysia once made foldable children's walkers? Or that an Englishman once found his way to his nondescript shop –hidden in the middle of a potholeridden wet market –and

would commission two beca to be delivered to England, albeit with the bicycle on the left side, of course. Since picking up the trade through ngan keen kungfu (learning by observation) from his late father, Diong Kim Seng, Benny has produced enough beca –at the height of its popularity, he made six beca daily –to recall the heydays when thousands of post-war Malaysians relied on the humble vehicle. "I had a bunch of 80-something China immigrants who came to pre-war Malaya and eked out a living as trishaw riders, ferrying children to school and ladies to the market. When they retired, they commissioned eight beca to be made and shipped to China to show their grandchildren what their lives here were like!" All made-in-Malaysia beca still adhere to a standard governmentapproved measurement of 76 centimetres wide by 127 centimetres long, but beyond that, the vehicles are modular. In the post-war days, fruit sellers would build a rack on the cart to display their wares, while noodle sellers made a hole in the middle to erect their cooking equipment. Benny even added a motor under the free wheel for a Petronas advertisement –its customisability is only limited by the carpenter and maker’s creativity. These days, the beca is primarily trotted out as a novel form of transportation for tourists or prop for advertisements, but it’s far from a relic of the past. The humble beca has cycled through, and is a timeless reminder of, Malaysia's entire post-Merdeka history. Just ask Benny.

Love is in the air Celebrate Valentine’s Day this month with our selection of hit romantic comedies... Valentine’s Day Continuing the ensemble rom-com trend started by Love Actually, Valentine’s Day follows a group of Los Angelinos and their Cupid-inspired trials and tribulations. The cast includes, among others, Julia Roberts, Bradley Cooper, Jamie Foxx, Jessica Alba, Anne Hathaway, Ashton Kutcher and Taylor Swift criss-crossing each other’s lives and romantic entanglements. Adding to the love-laugh pedigree is director Garry Marshall, whose 1990 rom-com Pretty Woman made Julia Roberts a worldwide star. Coincidentally, one of the plot strands in Valentine’s Day involves Roberts’ character Kate striking up conversation with Holden (Cooper) on a flight home –so that’s something to consider if you find yourself sat next to an attractive stranger on board this month!

You’ve Got Mail Also returning to familiar territory are Tom Hanks and Meg Ryan, who electrified audiences in 1993’s Sleepless In Seattle. The pair’s romantic chemistry was reignited five years later in You’ve Got Mail by Sleepless writer-director, the late, great Nora Ephron. Made during the pre-social media era of the internet, the film follows Joe Fox (Hanks), owner of a large book chain, and Kathleen Kelly (Ryan), whose small bookstore’s existence is threatened by the former’s business interests. The pair loathe each other in person without realising that they’ve been flirting anonymously online via email. The film chimes with Ephron’s trademark wit and humanity as both characters’ competing interests and dual personas become ever more intertwined.

No Reservations Something’s cooking in Shine director Scott Hicks’ 2007 restaurant-set romantic comedy-drama. Uptight-yetbrilliant Manhattan chef Kate (Catherine Zeta-Jones) is a raging success in the kitchen, with an emphasis on the rage. Kate’s co-workers fear her for her obsessiveness and she’s in therapy for her temper. But her life changes irrecoverably when she loses her sister in a car accident and her nine-year-old niece (Abigail Breslin) moves in with her. What’s more, her professional life is rocked when an equally brilliant chef, Nick (Aaron Eckhart), is hired to work alongside her. Could these events herald the start of Kate’s rehabilitation? As they say, the way to a person’s heart is through their stomach, and No Reservations’ charm brings that theory to life.

Definitely, Maybe Not content with playing the adorable youngster guiding a wayward guardian to love in No Reservations, Abigail Breslin pops up again in Definitely, Maybe as Maya, soon-to-bedivorced Will’s (Ryan Reynolds) inquisitive daughter. Her wish to know the story of her parents’ romance leads Will to recount relationships with three women (Elizabeth Banks, Isla Fisher and Rachel Weisz). The romantic chemistry came easily, it seems. ‘Elizabeth and I connected on an easy-going level’ says Reynolds. ‘Then Isla has an unbelievable quality. She just lives for irony, and Rachel has a star quality where I was lost in her eyes.’ Can Will rekindle lost love? Maybe. Will you laugh till you sigh? Definitely. Everything must go Inside the thrilling movie adaptation of international bestseller Gone Girl A novel regarded as ‘unfilmable’ by some, Gillian Flynn’s multi-million selling thriller Gone Girl is brought to life on screen by the author herself, who wrote the screenplay, veteran director David Fincher and actors Ben Affleck and Rosamund Pike, who play Nick and Amy, the troubled couple at the story’s centre. ‘It’s a very big book, and two thirds of it was going to have to go,’ says Flynn, who also rewrote key events from the novel’s final act. ‘My first draft was as streamlined as possible, and my second draft was all about working with David.’ ‘You have to choose which aspect of a book to make a movie from,’ says Fincher, no stranger to bringing books to the big screen having directed

Fight Club and The Girl With The Dragon Tattoo. ‘Most interesting to me was the idea of our collective narcissism as it relates to coupling, or who we show to our would-be mates and who they show to us.’ Affleck puts the film’s success down to the freedom to play against convention. ‘Usually when you’re a lead in a movie there are unspoken rules. In this case, we weren’t encumbered by that at all,’ he says. Pike agrees that Gone Girl subverts the usual character types: ‘I think Amy’s a potent cocktail. She does get into your head. • Before I Go To Sleep is an adaptation of the bestseller by British writer S.J. Watson. He wrote the book, his debut novel, between shifts at his job as an audiologist at a hospital. • ‘I’m a huge fan of psychological thrillers,’ says Nicole Kidman, who plays Christine, an amnesiac trying to piece her life back together. ‘She’s a real woman afflicted by extraordinary circumstance.’ • ‘On holiday, I told my wife the story out loud,’ says Rowan Joffé, who directed the film and wrote its screenplay. ‘I noticed a lot of the family had come to listen because it’s so good.’

Legal Tangles Courtroom drama The Judge pits Robert Downey Jr. and Robert Duvall against each other as father and son. Downey Jr. plays Hank Palmer, a lawyer estranged from his family who returns home for his mother’s funeral. When Hank’s father – judge Joseph Palmer, played by Duvall – is put on trial for a murder, the two must work together. ‘I knew this movie was going to be a trial, in and of itself,’ says Downey Jr.. ‘I remember the first scene, he (Duvall) and I were sitting there and he had a three-page monologue. We just had to sit there, me looking like I don’t like him… my heart was just pounding in my chest.’

James Gordon New to Gotham City, Detective Gordon must adapt to a new town, new colleagues and a host of villains unlike any other. ‘In Gotham, we want to keep a sense of realism, but at the same time it is fantastical,’ says Ben McKenzie, the man carrying Gordon’s badge.

Oswald Cobblepot Earning himself the nickname of ‘Penguin’ early on, Cobblepot is a rising career criminal and one of the series’ many origin stories. ‘We start with him clawing his way up,’ says Robin Lord Taylor, the series’ breakout star, who brings the Penguin to life.

The story of a man meeting his true love, How I Met Your Mother teased viewers with twists and turns over the course of its nineyear run. On board this month are three episodes from the final season of the show. ‘I think if you’re going to do something new and bold and daring, you’re going to upset some people, and you’re gonna thrill others,’ says Josh Radnor, who plays Ted, when discussing the show’s controversial ending. ’Part of the DNA of the show is it leads you one way and then pulls you back. I think that the twists in the final season were in keeping with that.’ ‘It wasn’t necessarily the happy ending people were expecting,’ adds Neil Patrick Harris, who plays Ted’s best friend Barney and also appears in the film Gone Girl on board this month (see left). Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.

A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.

Hay-on-Wye books place in history with thriving bookbased community Text Zurien Onn

Books are everywhere in Hay-On-Wye, a Welsh town with a population of 1,900. Dubbed the National Book Town of Wales, books are for sale almost everywhere you turn, including at outdoor bookshops and even corner book stalls operating out of a cabinet. The town first became a centre for second-hand books when one of its inhabitants, Richard Booth, inherited Brynmelyn Estate from his uncle and proceeded to buy and ship back containers of books from America, where many libraries closed down in the 1970s. Booth opened a second-hand bookstore and promoted the establishment by proclaiming Hay an ‘independent kingdom’, styling himself ‘King Richard Coeur de Livre’ and his horse ‘Prime Minister’ as a prank on April Fool’s day in 1977. The stunt proved successful and encouraged up to about 40 other bookshops to open, getting about 350,000 tourists to visit each year. The annual Hay Literary Festival was spawned from the book craze, now in its 27th year, to be held on 21-31 May this year.  hay-on-wye.co.uk
