It has been more than two months since the downing of our flight MH17 over Ukraine on 17 July 2014. Coming so soon after the earlier tragedy of MH370, dealing and coping with the totally unjust accident of MH17 have been very difficult for us all. There are no words to express the sense of loss and disbelief that we felt then in those early hours and in the days that followed. My team and I, along with the whole world, continue to hold the families and friends of those who lost loved ones so suddenly in the tragedy of MH17, in our thoughts and prayers each day. The twin tragedies of MH370 and MH17 cast a dark cloud over us and the aviation industry as a whole. Impressions of the past

The Unseen is a British-based design collective that integrates the worlds of science and fashion by using chemical and technological innovations to create new materials. The collective recently collaborated with Swarovski in crafting a headpiece adorned with 4,000 Black Spinel gems. The gemstones act as conducting insulators; when the headpiece is worn, they change colour with the release of energy through the head, mapping the wearer’s brain activity. This October, the collective invites you to explore its world with an Emporium in the Vaults at Somerset House, London. Ceramic artist Paul Cummins’ breath-taking and emotive art installation, Blood Swept Lands and Seas of Red, marks 100 years since the outbreak of the First World War. See 888,246 handmade ceramic poppies cascade from a window in the Tower of London and flow like a red river into the moat below. Poppies gather in pools and spill out onto paths like splashes of blood, with each flower representing every recorded death during the conflict. Cummins has cleverly created a poignant, awe-inspiring tribute to those who lost their lives; the monumental size of the installation brings the utterly devastating effects of war into perspective. For a country that was home to Jack the Ripper, bloody queens and sinister kings, it’s no surprise that England boasts some of the world’s scariest secrets. Fascinating ghost tours can be found in almost every major city, but a good place to start is in London itself. veryone maintains a cerebral snapshot of Los Angeles, be it the pneumatic bodies and motley performance artists strung along Venice Beach, the totemic lettering on the hillside above Hollywood, or the zip code famously attached to Beverly Hills. So if the manicured lawns, whispering glades and generally rarefied air of Pasadena tend to be obscured by ultraCalifornian icons, it’s not something that disgruntles the well-heeled and supremely well-placed residents here. Northeast of central Los Angeles, at the base of the San Gabriel mountains, the city of Pasadena remains what its early, phenomenally flush settlers might have envisioned - liberally sprinkled with art galleries and museums, as well as a central strip carpeted with stores and restaurants whose excellence prompts even picky Angelenos living in other parts of the city to motor over here to browse and sluice. “There is not much in downtown LA, except office buildings, and even restaurants close at 5pm, so a lot of people head for Pasadena,” says software engineer Leah Heiss, who has lived in Pasadena for seven years.

“The great thing about the area is it has tons of culture, ethnic restaurants, art galleries, arboretums and gardens. And you are right next to the Angeles National Forest in the San Gabriel Mountains.” Pasadena picked up speed early in the 20th century. In 1908, Charles and Henry Greene designed a house for Procter & Gamble’s David and Mary Gamble that remains an outstanding example of the American Arts and Crafts school of architecture. At about the same time, William Wrigley Jr shelled out for a mansion whose graceful lines, exotic wood panelling, marble staircase and crystal light fixtures echoed the Italian Renaissance. In later years, Norton Simon, one of the founding fathers of Avis, chose Pasadena as the permanent home for his collection of art, which – following his marriage to actress Jennifer Jones in 1971 – had grown to embrace Asian as well as European sculptures and painting. Most stunning of all is railroad magnate Henry Edwards Huntington’s phenomenal library and clutch of art


galleries surrounded by several hundred hectares of gardens. Thousands of visitors come daily to gape at Gainsborough’s Blue Boy, a Gutenberg Bible, a Chaucer manuscript, or simply to wander through the gardens, which feature a variety of themes and more than 14,000 different plants. “As both a historic estate and a cultural institution, The Huntington (huntington. org) has been one of Pasadena's premier attractions and indeed, one of Southern

California’s leading destinations for nearly a century,” says communications coordinator Lisa Blackburn. “The Huntington has deep roots linking it to the city’s storied past, and with its unrivalled collections and extensive botanical gardens, it’s one of the ‘mustsees’ for visitors to the Los Angeles area.” If art and culture are Pasadena’s leitmotif, then the Rose Bowl flea market, held on the second Sunday of every month, is one of its best-known diversions. At this gargantuan mart, several thousand traders hawk everything from antique French movie posters to ethnic clothing and home spas. Downtown, the flea market’s premise of shopping-as-rollicking-entertainment continues, most prominently at One Colorado (onecolorado.com), an imposing block centred on a brick courtyard that doubles as an outdoor film festival auditorium and is stuffed with

the likes of Kate Spade, Gap, Armani and Juicy Couture. But if there’s a single store that sums up shopping in Pasadena, it’s the literary cornucopia that is Vroman’s (vromansbookstore.com) – staunchly independent, in business since 1894, its two storeys spread with shelf upon shelf of books valiantly trumpeting that the Kindle is little more than a flash in the pan. Thanks to come-hither seating, eager staff, and authors like Nick Hornby, Candace Bushnell and Bill Clinton speaking and signing regularly, plus an adjoining coffee bar, the best part of a morning can disappear deliciously here. “At a time when Internet competition has made brick-and-mortar bookstores somewhat of an endangered species, we’re thriving,” says Allison Hill, Vroman’s president. “We have 85,000 book titles, thousands of gift items, and over 400 free community events each year. Grandparents who shopped here as children bring their grandchildren here – it’s a very special place.” While Pasadena regards such local institutions as the California Institute of Technology and NASA’s Jet Propulsion Laboratory with a proprietary air, its alma mater could well be the hotel that’s set

along leafy avenues away from downtown with a view over the valley. The Langham Huntington (pasadena.langhamhotels. com) is somewhere that Pasadenans consider more of a private club than a regular hostelry. On top of the accommodation roster are eight private cottages. The hotel’s fitness machinery gets a day-long workout, and spa therapists are booked up weeks in advance. Couples plight their troth in the Japanese garden and kick up their heels beneath the gold-gilt vaulted ceilings of the Viennese and Georgian ballrooms afterward. Broad, soft-carpeted corridors lead to The Royce Wood-Fired Steakhouse, while there is much in the way of grain and grape in The Tap Room. “I guess you could say that we are the quintessential Southern Californian hotel,” says managing director Steven Parker. “This has been a landmark ever since it opened, and while it continues to espouse the grace and elegance of a bygone era, it’s also a very lively social gathering point for the surrounding community.”

Visitors don’t have to journey far for entertainment. The Pasadena Symphony (pasadenasymphony-pops.org) blends classical with pop, while the Ice House Comedy Club (icehousecomedy.com) has been the proving ground for Steve Martin, the late Robin Williams, and Lily Tomlin amongst others. The Playhouse (pasadenaplayhouse.org) has been in business since 1917, and its productions usually move to Broadway. Pre- or post-show, there are something like 500 restaurants within the city limits,

a gallimaufry of global cuisine delivered with the genuine earnestness that California patented long before anywhere else. Anywhere else, the In-N-Out Burger (inn-out.com), founded in 1948 and strongly resistant to change ever since, would be regarded as an all-too avoidable curiosity, but Pasadenans point to it with enthusiasm and pride, going into raptures about the simplicity of the menu (hamburger, cheeseburger, double burger, and fries) and a décor that would be retro, except that it’s barely changed in the course of six decades. From a classic slice of Americana to somewhere with more of a European accent, Café Santorini (cafésantorini.com) spreads from the second floor of a historic brick building onto an open air terrace that’s chock-a-block with diners romping through risotto, pizzas & seared ahi tuna. One of the chief pleasures of dining in Pasadena is the abundance of fresh, high-quality ingredients, either sourced in California or off its coast. Dorothy Parker may have quipped that Los Angeles was so many suburbs in search of a city, but it’s in Pasadena that Greater LA seems to have found itself a neatly packaged American Dream.

Facing Up Modern Beijing Opera entertains a growing audience Text and Photos Daniel Allen

ts high-pitched, piercing deliveries may be an acquired taste, but for many cultural aficionados, Beijing (or Peking) Opera represents the very pinnacle of Chinese entertainment. As a fresh-faced troupe of operatic stars prepare for their nightly show at Beijing’s Chang’an Grand Theatre, they follow in the footsteps of talented performers who once bewitched the likes of Emperor Qianlong (1711-1799) and the formidable Empress Dowager Cixi (1835-1908). The full weight of Beijing Opera’s cultural significance is not lost on Zhou Jiaxin, director of the first troupe of the Beijing-based Jingju Theatre Company. “Of the 100 or so types of operas that exist in China today, Beijing Opera is undoubtedly the finest,” says the mastermind behind many of the Chinese capital’s most popular and innovative contemporary pieces. “Beijing Opera is nothing less than iconic,” continues Jiaxin. “Incredibly hard to master, it is such a multi-faceted and technical art form. Combining dance, singing, dialogue, mime, martial arts and acrobatics, the creative inspiration for each operatic piece is taken from China’s rich history, literature and folklore.”

While Jiaxin is onstage, overseeing last-minute tweaks to the theatre’s sound and lighting, performer Zhou Yan is equally hard at work in the labyrinthine basement. The 21-year-old has been applying make-up for more than half an hour, and takes a quick break to gobble a plate of chicken noodles and engage in frantic text messaging. In a world where opera stars can perform well into their seventies, Yan is a relative novice. Despite her tender age, she is nevertheless already adept at transforming her unlined face with an array of cosmetics; up close, the effect of raspberry lips and scarlet cheekbones on a blanched face is intentionally striking. The next step is for Yan and her assistant to collectively fashion the routine’s pièce de résistance - the so-called datou hairstyle - created with heavy strands of real human hair temporarily fixed in place with glue. “Datou means ‘big head’ in Mandarin Chinese,” explains Yan with a grin, passing her assistant a pot of viscous adhesive. “This special hairstyle gives all the dan (female) roles in Beijing Opera a perfectly oval face. Together with curved eyebrows and almond-shaped eyes, this is the Chinese ideal of feminine beauty.”

Operatic rise and fall While its name may suggest otherwise, Beijing Opera started life far from China’s current capital. Derived from musical performances originally put on in the more southerly Chinese provinces of Anhui and Hubei, it was first seen when operatic troupes visited Beijing at the end of the eighteenth century. After taking root in the north, it took on a life of its own through the incorporation of other local musical genres and performance techniques. From its early days, Beijing Opera was an art form that transcended class barriers. Initially staged outside in public spaces, it was enjoyed by all segments of society, from the emperor to the peasantry. Performances had to be loud to counter background noise, while extravagant costumes were designed to capture the audience’s attention in frequently dim conditions. Yet Beijing Opera’s long history and mass appeal were not enough to save it from years of decline during the 20th century. It became a propaganda tool during China’s Cultural Revolution (1966-76), while in the 1980s and 1990s, traditional opera lost its appeal amid competition from pop music, cinema, karaoke and computer games. Theatres across Beijing were boarded up or demolished to make way for shopping malls and apartment blocks. “I guess most Chinese at that time felt Beijing Opera had become irrelevant to their lives,” says Sisi Yang, marketing supervisor at the Zhengyici Theatre, another of the capital’s operatic bastions. “Shows were too long and the quality of performances was

up and down. It was as if everyone was just going through the motions.” “It got to the point where only those who had grown up with opera in some way were still interested in it,” adds hugely experienced performer Xue Yaping. “The true artistic profundity of Beijing opera was unsurprisingly lost on most Chinese. The art form was stale and in danger of disappearing forever. That would have been a tragedy.” Monkey magic It was during Beijing Opera’s darkest days that one of its most talented and idiosyncratic performers experienced his biggest epiphany. Ghaffar Pourazar - a Briton of Iranian-Azerbaijani origin - first witnessed Beijing Opera in London two decades ago while employed as a computer animator and

part-time drama teacher. It was love at first sight. “I was overawed by the power, the precision, the sheer beauty of it,” says Pourazar. “Here was an artistic genre that had been developing and honing itself for centuries. For the first time I saw a culture which treated theatre as a science as well as an art. For myself - a techie and theatre lover - it was the dream combination.” Pourazar’s story is one of devotion and perseverance. Desperate to learn more, he followed the opera performance as it toured England, eventually ending up in Beijing, where he spontaneously enrolled in opera school. At the age of 32, he found himself training with precocious 12-year-olds. “It was probably the most testing experience of my life,” Pourazar says with a slightly rueful laugh. “There I was, a lumbering foreign adult, attempting to learn moves alongside a bunch of energetic and extremely limber Chinese kids. Many of the people I encountered looked at me as if I had a screw loose.” The reward for those years of gruelling training came when Pourazar was awarded the Great Wall Friendship Prize for the promotion of Beijing Opera recently. Having graduated and gone on to master his art - entertaining Chinese, foreigners and dignitaries with countless performances - his most popular character remains Sun Wukong (the Monkey King) from the classical Chinese story Xiyouji (Journey to the West). “Chinese people tell me I’ve captured the true spirit of the monkey in my performances,” says Pourazar. “I guess that’s the ultimate accolade.” Something old, something new Pourazar understands the need for the art form to shed its somewhat staid image. completely authentic, his modern interpretations of the operatic classics frequently mix in doses of rap, jazz, and rock-and-roll. “To ensure that Beijing Opera not only survives but thrives, we must honour the old plays while also creating new markets,” he explains. “Neither can exist without the other. Of course some operatic old-timers and purists believe the genre has been sullied by the modernisation process. As someone who loves the classics, of course I can sympathise with this view.” “Beijing Opera had to move with the times, like all types of entertainment,” says Jiaxin. “The Jingju Theatre Company has created numerous new plays since it was established. We don’t overlook tradition and our artistic roots, but we also try to move forward. We’re an art form, but also a business.” Today, Beijing Opera is tentatively charting a new course. The government has introduced opera classes in schools across Beijing, while many theatres have received much-needed facelifts. A batch of new operas by young, innovative playwrights and directors is entertaining an increasingly appreciative public. “Slowly but surely Beijing Opera is modernising,” says Jiaxin. “Who knows what it will look like in another 200 years. China is changing and so are her art forms.”

Born in Yokohama and raised in Hong Kong, James has spent a large portion of his life in Asia. “My parents are American, they came to Asia in the 1960s and never went back,” said James, who spent the last 19 years working in China. Malaysia has always been one of the key markets for Crown Worldwide and I’m here specifically to oversee the expansion of our business. We’ve been here for over 40 years and we’re well established with facilities in Shah Alam, Penang, Bandar Enstek in Negeri Sembilan, and soon, in Johor as well.

It’s been excellent. Malaysia has some of the friendliest people and it’s blessed with nice weather and a good business environment. It is somewhat slower compared to China but the trade-off is the lifestyle. From a family perspective, the overall standard of living here is higher than what we had.

The level of talent here is good because Malaysians have a global mindset, are well educated, and multi-lingual. They also view the world from an international perspective. Those are qualities that are specific to a multicultural environment with a westernised education system, and that is unique.

"D

on’t forget the pizza!” the instructor reminds us yet again as we push off with our sticks, feet firmly strapped into heavy mid-calf high boots with knees slightly bent, and attempt to glide gracefully down the slope. It’s a crisp minus 8 degrees Celsius afternoon; the winter sun that greeted us in the morning is now tucked behind the clouds and the wind beats incessantly against our goggled faces, but we’re working up a sweat underneath well-padded ski suits. It takes all our concentration to maintain balance, but that’s the easy part. The real lesson is mastering the stop technique, the aforementioned ‘pizza’ created by bringing the front tip of the skis together to form an inverted ‘V’ and cruise to a smooth finish. In theory, it’s a breeze. In practice, it’s a lot of knee-jerking, with legs wobbling and skis overlapping rather than merely meeting – a recipe for comedic relief from the muscle-gripping sport as we take turns falling flat on our behinds, sliding out of control and crashing to a clumsy end against the safety nets. It’s not the most graceful way to finish but not a bad experience in itself, as Niseko is the recipient of

some of the world’s deepest snowfalls – between 12 and 16 metres annually, ranking it among the world’s snowiest resorts. Falling on the silky snow, which boasts a fine powdery quality, is not unlike flopping down on a giant cushy mattress. It’s tempting to stay down for a winter siesta while children as young as three whizz past nonchalantly and seasoned skiers zig-zag down the hill in no time. Located approximately 100 kilometres south of Sapporo, the Niseko Annupuri mountain is home to several ski resorts and is ranked among the world’s top 10 ski destinations. An estimated 700,000 visitors come here annually during ski season from December to May, making a beeline for the Niseko Village Snow School. For half a year, the school is a flurry of winter sports activities as skiers, snowboarders and other enthusiasts have a go on the runs, their colourful ensembles speckling the all-white landscape like dots and blobs of moving – sometimes flying – colours. The action doesn’t stop even after the sun sets, as some runs stay open for night skiing, when the experienced and the skilled can perfect their moves with far fewer crowds. For everyone else, it’s time to retreat to one of five resorts and soak in the outdoor

If you prefer your seafood sizzling rather than soupy, reserve a seat at Hilton’s Pirka teppanyaki bar, where seafood and other meat are cooked on hot plates in front of you and seasoned with six flavoured salts. Red-meat lovers will be pleased with the selection of wagyu fillet and sirloin; watch beautifully marbled slabs sizzle into a crisp skin while staying pink in the centre. More bovine satisfaction can be enjoyed at Sisam, where you can cut into a melt-in-the-mouth grilled wagyu sirloin with vegetables and yama wasabi, a mountain radish with more zing than regular wasabi. The simplicity of the dish allows the meat to be enjoyed unadulterated as it stands very well on its own, being of A4 grade, the secondhighest for wagyu. Meanwhile, Melt Bar & Grill serves a wagyu fillet with umamirich green pepper corn sauce and potato boulangere that’s pure comfort on a plate.


Another local specialty not to be missed is Wakimizu tofu. It’s made with water from a natural spring at the foot of Mount Yotei, which can be seen through floor-to-ceiling windows that wrap around the semicircular restaurant named after it. Yotei is where Hilton’s guests start their day, piling their plates from buffets of local and Western selections. Even if rice is not your usual choice of breakfast, you’d be tempted here as Hokkaido is, after all, Japan’s rice capital and was the first place in the country to cultivate the staple grain. Locally grown rice has a slightly glutinous texture best paired with wobbly onsen tamago (soft cooked eggs), smoked saury fish and pickled vegetables – a typical Japanese breakfast that’s easy to get hooked on. Dairy detour On busy days, some 2,000 cream puffs fly off these bakery shelves. Those who arrive late console themselves with an array of other dairy and handmade pastry delights. For 17 years, Milk Kobo has drawn dairy lovers to its red farmhouse-like shop, just five minutes from the Hilton Niseko. Mamoru Takahashi started this bakery-

cafe to make use of leftover produce from his dairy farm, but Milk Kobo became so popular that all of the farm’s fresh milk is now reserved for its use. The milk owes its refined taste to the cows’ diet of grazing on Niseko’s natural pasture and drinking spring water that flows from the mountains. Everything that’s sold here – cheese cakes, éclairs, baumkuchen, fresh yogurt and ice cream are among the bestsellers – is made on-site, combining the prized milk with other premium ingredients to achieve the quality that has earned Milk Kobo its esteemed reputation. Its sought-after cream puffs were the brainchild of Takahashi’s daughter, Yuko Takai, who manages the café. And what a delight they are to sink your teeth into: crusty, chewy choux pastry gives way to a light custard known as shu cream that’s mildly sweet and silky. Their chocolate éclairs is another must-try, filled with the same memorable cream made even better by the dark cocoa coating. While Milk Kobo focuses on fresh milk, another red wooden building within walking distance of Green Leaf takes the fermented form to great culinary heights. At Niseko Fromage, former national

With the ample selection and gourmet quality of food served within Niseko Village, you really don’t need to step out, but if you’d like a break from the slopes, here are three pit stops in nearby towns. Ramen refuel

Sapporo is the birthplace of miso soup ramen, which you can slurp to your heart’s content at the narrow Ganso Ramen Yokocho or Ramen Alley, home to 17 quaint eateries that dish up various versions of the popular curly noodle. At Kuni Mitsu, order the kare miso ramen, an appetisingly spicy serving of meat-based broth that’s been simmered for two days to a rich aroma and milky consistency. The springy noodles are garnished with meat slices and hanjuku tamago, soft-boiled egg with melt-in-the-mouth whites and a custardy yolk.

Sushi street

If Sapporo has a ramen alley, Otaru has a sushi alley with over 60 sushi bars and some izakayas. Tatsumi Sushi is recommended for the freshness of its seafood, all fished from the waters around Otaru. Ask for one of the private tatami rooms where the chef will prepare your sushi, sashimi and chirashi don at a small adjoining bar, putting on quite a tableside show.

Hearth to hearth

Just outside Niseko, the small but lively town of Hirafu is lined with pubs, cafés and eateries. Restaurant Yo offers a unique traditional dining experience with its irori, a sunken hearth that serves as a barbeque pit. Guests sit around and cook their own dinner –a medley of meat, seafood, vegetables –over grills placed in the hearth.

snowboarding coach turned master cheese craftsman Noriaki Seki has won praise and awards for his Gouda, Havarti and handmade string cheeses. Between April and November, the fromagerie also churns out milk and Camembert soft ice cream. At other times, foodies can snap up packets of oven-toasted cheese crisps that come in flavours such as seaweed and chilli. Crunchy and salty, they’re great to munch with a nightcap or après-ski tipple, for which you have great choices. Cosy up in front of a sleek, see-through fireplace at Green Leaf ’s Tomioka White, a fullservice bar dressed in dark brown fittings punctuated by pony skin print armchairs. In winter, the Ice Bar appears but changes location each year, surprising even repeat visitors. It’s essentially an igloo carved from a mix of snow and ice, furnished with everything made of ice, including the bar counter and drink glasses. Inside the bar, blue and yellow lights glow from behind frozen columns, creating an

illusion of warmth amid frosty surroundings. It exudes an aura that sums up Niseko: Snowclad and chilly, but still a breath-taking winter wonderland that welcomes you for a good time and great meals.

A

rriving at an Omani home is like no other experience. Wherever you might be in this remarkably beautiful country, there’s one fundamental constant – coffee (kahwa) and dates. This mandatory welcome snack offers an insight into the nation’s philosophy: Omanis are incredibly hospitable and want to share their culture with the world. Luckily, food is a focal part of this. Fortunately for this sugarloving nation, an excess of local treats can be found everywhere. Mosques often have rooms stocked with dates, while in marketplaces, vendors come prepared to share. It’s not unusual for a souk to have a central meeting spot with communal sweets that any passer-by is

welcome to enjoy. Sharing is a big part of Omani culture and extends beyond food and drink. Oman only opened up to Westerners in 1993; today, travelling to this exotic land still offers an incomparable experience. The capital, Muscat, is the first port of call for most, with flabbergasting sights. There’s the magnificent Al Alam Palace with blue and golden pillars that glisten in the afternoon sun, the stately Sultan Qaboos Grand Mosque with its elaborate interior that includes the world’s second-largest handloomed Iranian carpet (it took 600 women four years to weave the 70 x 60 metre masterpiece), and the chaotic and pulsating Muttrah Souk, where it’s easy to roam for hours stocking up on all sorts of foodie delights.

Tasty traditional fare A flock of youngsters natter outside Kargeen Caffee (kargeencaffe.com), waiting for a table to free up. This is one of Muscat’s most popular restaurants, and it’s easy to see why. The tree-filled courtyard and interior are jam-packed with a crowd enjoying traditional Omani food amid charming surroundings. Most tables start with Arabic-style mezze of creamy cheese, fresh vegetables, olives, homemade dips and breads. For the main course, almost everyone will order shuwa, a delicious slow-baked lamb dish. “This is absolutely our most famous dish,” chef Mohammed Abdullah Mohammed Yousuf says proudly. “The lamb is very succulent! We marinate it in cumin, turmeric, masala salt and apple vinegar, wrap it in banana leaves and then bake it for 48 hours in an underground firewood oven.” Because of the time and effort involved in cooking shuwa, traditionally the dish is only prepared for special occasions, but Kargeen Caffee is one of only a handful of restaurants in Muscat offering the dish cooked in the customary manner. Waiters weave between tables with aromatic shuwa still wrapped in banana leaves, perched atop steamed basmati rice and served alongside dates, chutney and olive oil as guests’ eyes follow the servers, hopeful it might be theirs. “We probably serve 50 or 60 of these a day,” explains Mohammed Abdullah.

Although lamb is very popular with Omanis, fish also commonly makes appearances; the best seafood restaurant is on the outskirts of Muscat in its own serene oasis. The Shangri-La’s Barr Al Jissah Resort & Spa complex is made up of three different hotels and feels as if it belongs in another world. Strolling along the resort beach or through the grandiose complex is part of the attraction, and ending up at Muscat’s finest seafood restaurant, Bait Al Bahr (shangri-la. com/muscat/barraljissahresort/dining/ restaurants/bait-al-bahr), for dinner is a divine way to spend a night. Chef Mahmood Said Humaid Al Shibli explains that both hotel guests and visitors frequent the restaurant because of its famed reputation. “We work hard as a team to develop and perfect our signature dishes to maintain our standards,” he says, citing the smoked and baked cod with saffron cauliflower crush and a wispy foie gras cloud as one of the most popular selections. “All the seafood on offer is caught daily by fishermen, and the menu selection will usually include an assortment of fish, prawn, squid and Omani lobster offerings.”

Entrepreneurs lead the culinary wave Although you can’t go wrong with tasty traditional fare, there’s a trend in Muscat for the new and different, reflecting changing lifestyles and attitudes. Khalid Al Suwaid, 24, is leading the culinary wave. Founder of Love at First Bite (facebook.com/bitelounge), Oman’s first themed restaurant, Khalid was just 22 when he opened the unique diner. Since then, the movement has surged with new themed eateries (a jungle-themed restaurant and a cave-inspired eating complex), catering to a crowd hungry to enter a fantasy realm. “I’ve always thought entertainment and dining should be one,” Khalid explains while bouncing through his rambunctiously furnished restaurant where beds are tables and corners are Bedouin tents. The food is a fusion of many cultures, and the names of the menu items are reflective of the quirky-cool concept. Fries come with ‘benefits,’ She Loves Me Not is a medley of sweet and chilli flavours, and there is even a ‘break-up’ dish. “We want customers to enjoy reading the menu. And they do. They even enjoy reading the bill,” he laughs. Although Khalid opened the restaurant with no background in

hospitality, he is one of Muscat’s most successful entrepreneurs and is due to open two more restaurants come November – another themed eatery and a traditional Omani restaurant that will also double as an art gallery. “I just love what I do,” he says, smiling as he watches a love-struck couple perusing the menu and giggling. “Muscat is ready to be different and I’m here offering exactly that.” Different works brilliantly in a city full of people receptive to new ideas. Salma Al Hjari and aunt Aisha Al Hajri of Salma’s Chocolates (salmaschocolates. com) spent years studying how to create speciality chocolates that have got everyone talking. Like Khalid, the duo were inspired by the desire to present residents with something they hadn’t tried before, and since both were passionate about

sweets, they decided to make chocolates, something not previously done in Oman. With no classes available in Oman, they started by reading books, then travelled to Dubai, India, Lebanon and Italy to complete chocolate-making courses. Ascertaining that high-quality chocolate was crucial for success, they journeyed to Belgium to negotiate with world-class suppliers. Then they created fusion chocolates by using top-grade Belgian chocolates and local Omani ingredients such as honey, thyme and pomegranates. “Our speciality is native flavours and that’s what makes us unique in Oman,” Aisha explains, grinning as she observes an expat tasting one of their creations. “That’s the halwa flavour. It’s one of our most popular chocolates and visitors love it because halwa is Oman’s famous traditional sweet.” The blissful customer goes in for another bite, not aware she’s being watched. Sweets are after all Oman’s forte.

This halal restaurant tucked away in a suburban hotel has its share of fans for fine Teochew cuisine. It also does an excellent dim sum lunch. With over 100 dishes, including different kinds of dim sum, it’s a beguiling experience trying to choose. Among the highlights are the har gao (crystal dumpling with prawn), steamed yam cake with dried shrimp, and pineapple polo pau. What also sells here are the claypot dishes, including a hearty lamb kut teh, or chunks of lamb in a rich herbal soup.

A member of the Oriental Group of restaurants, Maju Palace offers excellent halal dim sum in the city centre. Besides the chicken siew mai (meat wrapped in wanton), har gao and springy fish balls, their other specialities are cod fish roll with salted egg and the salted custard bun. For the latter, tear open the soft bun to reveal the piping-hot golden insides. Desserts are luxurious and special; try the steamed egg with bird’s nest or the aloe vera tart.

It is worth going to Chynna for the restaurant’s looks alone. Styled after the Tang Dynasty’s opulence, complete with painted panels and apothecary drawers, the decor is stunning and highly atmospheric. Besides the tried-and-true dim sum choices, other favourites are the scallop dumplings, flaky golden egg tarts and fragrantly fried radish cake. A Noodle Bar is on standby to whip up your favourite concoction, while musicians on traditional Chinese instruments provide entertainment.

De Dai Tong Cafe

Up in Penang, De Dai Tong Cafe holds true to its traditional ways of serving dim sum in push carts and metal dishes. This historic teahouse in George Town is often filled to the brim, with tables and chairs spilling onto the walkway. You can wait to have the carts come around to you or join regulars as they crowd the carts to pick up their favourite har gao, chee cheong fun (rice noodle roll) and lor mai gai (steamed glutinous rice with chicken). A rarity in the dim sum world, this restaurant opens for breakfast and dinner too.

This banquet-hall Chinese restaurant has a huge amount of real estate, though it’s hardly enough to stem the ravenous dim sum crowd that congregates here for weekend lunches. A reservation is scarcely sufficient; once at the restaurant, you still have to wait for a table. It’s that busy. Come earlier to sample their top-notch siew mai, har gao and rice congee. The restaurant specialises in Cantonese cuisine, and the cooked dishes are also excellent. Try the flat rice noodles in superior prawn soup.

ingapore is cementing its position as one of the region’s coolest cities, as trendy cafés, stylish boutiques and hip restaurants mushroom all over the city-state. Neighbourhoods are given face-lifts as fresh businesses set up shop among time-honoured establishments. For a start, we pop into Tiong Bahru, the emerging hot neighbourhood that is also one of Singapore’s oldest. This charming neighbourhood bordering the city centre was the country’s original model of the ideal housing estate. Designed in the 1930s after the prevailing Streamline Moderne style mixed with the local Straits Settlement design, it has undergone a renaissance to attract young, vibrant businesses and an equally enthusiastic crowd. Tiong Bahru Bakery (facebook.com/ tiongbahrubakery) landed a corner spot here in 2012 and immediately attracted a loyal clientele lured by its buttery croissants, golden raisin rolls and kouign-amann, a Breton cake. Opened by the Spa Group in collaboration with celebrity chef Gontran Cherrier, this artisanal bakery has a bustling ambience to go with its coffee and pastry. Similarly, The Spa Group has applied its winning touch to the Forty Hands café (40handscoffee.com) and Open Door Policy restaurant (odpsingapore.com) over at Yong Siak Road, where another Tiong Bahru stalwart, Books Actually (booksactually.com), is located. Books Actually is a wonderful

independent bookstore with an impeccably curated selection of literature, non-fiction and compulsory reading material. The selection also offers the bookshop’s self-published books from its Math Paper Press, publishing essential Singaporean writers and poets. Another favourite is The Orange Thimble, a cheerful café with rotating art on its walls and a friendly attitude to long stays. “We are unique for the art and the ambience,” agrees manager Dewi Hajar. “It’s very relaxed and casual here. We welcome our patrons to stay and relax.” We also discover Bloesem (bloesem.co), the bricks-and-mortar version of the popular home and design blog by Irene Hoofs. In this spartan but chic shop is a well-edited collection of gifts, jewellery, home decor and clothes from designers Hoofs has met or dealt with online. Also in Tiong Bahru, Strangelets (strangelets.sg) offers a unique and eclectic range of products sourced from all over the world, including Saipua's heady-smelling soaps and Postalco's leather envelope bags. Elsewhere, Chinatown is getting its groove back. The opening of Indonesian outfit Potato Head Folk (pttheadfolk.com) at Keong Saik Road is upping the voltage of this busy wining-and-dining street. Reservations are essential for Potato Head Folk’s colourful second-floor restaurant,

but seats are usually available for kerbside dining. Gourmet burgers rule at this fun, smart-casual restaurant. The food options on Keong Saik are as trendy as they are varied. You can find Modern British cooking at The Study (the-study.sg), vegetarian fare and raw food at the newly opened Afterglow and a burritos bar at Muchacos (facebook. com/muchachos.sg). Not too far from the main strip is Jason Atherton’s standup tapas bar, Esquina (esquina.com.sg), which serves a wonderfully inventive mix of salt-baked beetroot with truffle honey, sea urchin and crab bisque and popcorn milk with chocolate mousse, among many other offerings. For nightlife antics and more food options, a short stroll away is Ann Siang Hill, a little warren of streets lined with trendy restaurants, bars and shops. On weekend nights, Club Street and Ann Siang Hill are closed to traffic as diners and revellers spill out onto the streets for a spot of alfresco dining and partying. Top on our list of places to go here is Oxwell & Co (oxwellandco.com) for its extensive attention to decor (think naked bulbs by the dozens, artfully stained walls and gold-panelled paintings, including a wall lamp of light-carrying squirrels). food is contemporary European with Asian influences, thanks to its youthful chef Nicholas Scorpion. “I aim for fresh ingredients, sustainability and accessibility,” says the chef, who picks fresh herbs from the restaurant’s rooftop garden. Similarly at neighbouring Lolla (lolla. com.sg), only the finest ingredients from seasonal produce are offered as small plates. A hot ticket in town, Lolla evolved from a Singaporean gourmet supper club known as Lolla’s Secret Supper. On the street level, an open kitchen lets you see the chefs cut, slice and plate luscious duck rillettes, Hokkaido scallop carpaccio and beef tongue escalopes for your dining pleasure. At the basement-level dining room, you share joyous meals with old and new friends at a communal table. As for the younger crowd, they head to Haji Lane, hemmed in between Beach Road and North Bridge Road, and the neighbouring Kampung Glam. The vibe here is indie and youthful with fun shops and cafés lining the streets. Dulcetfig (dulcetfig.com) carries an eclectic mix of products from crafty Singaporean and international designers. Among the wares you can find here are handmade jewellery by Dancing Dangles, cute slogan postcards from Keepcalmgallery, and BFF-crocheted soft toys. retro wave that has hit Singapore’s trend radar. A perennial favourite here is Maison Ikkoku (maison-ikkoku.net), which lies off Haji Lane on Kandahar Street. Maison Ikkoku has been offering single-estate specialty coffees since 2011, when kopi ais (local iced coffee) was more commonplace. The café, rocking an industrial chic decor, continues to attract a diverse crowd of trendsetters, office workers, students and everyone else in between. The gorgeous bar upstairs comes alive especially on weekends. In the past year, a glut of cafés has cropped up in the area, including I am… (facebook. com/Iamathajilane), La Marelle (facebook. com/lamarellecafe) and Cad Café (cad.sg). ekumpulan individu berpakaian elegan duduk di dalam ruang istirahat yang mewah. Sambil menghirup teh dari dalam cawan porselin, mereka turut menikmati hidangan pastri, kek, petit four dan sandwic kecil enak yang tersusun rapi di atas rak tiga tingkat. Bak kata seorang penulis Amerika, Henry James: “Tiada masa selama beberapa jam dalam hidup yang lebih nikmat daripada masa yang dihabiskan untuk minum petang.” Namun, bagi kerabat diraja, rutin menikmati minum petang boleh berlangsung beberapa kali dalam sehari. Pembekal biskut dan pastri kepada sekurang-kurangnya tiga kerabat diraja, Raja Badariah Redzwa sejujurnya mengakui kenyataan tersebut. Jelasnya, dalam satu petang saja, dia mungkin perlu berjumpa dengan orang-orang kenamaan sebanyak tiga sesi. “Setiap kali, pelbagai juadah akan disusun di atas dulang perak yang cantik. Apabila teh atau kopi mula dihidangkan, pelayan akan membawa dulang berisi biskut dan pastri untuk dihidangkan kepada setiap tetamu. Sebagai tuan rumah, Raja lazimnya akan mengambil seketul. Bayangkan, dalam beberapa jam berikutnya, baginda perlu mengulangi tindakan tersebut beberapa kali!” katanya. Pendek kata, saiz kecil pastri yang dihasilkan itu bukan semata-mata untuk memenuhi ciri-ciri estetik tetapi atas sebab yang lebih praktikal. “Saya pernah menghasilkan pai ayam yang perlu muat dalam cawan-cawan kertas, sardin gulung bersaiz satu inci dan burger mini dengan pai sekecil hanya satu inci,” ujarnya sekadar mengenang memori lama. Memasak untuk kerabat diraja benarbenar menguji kecekapan serta daya inovasinya. Sambil memetik contoh tempahan sebalang tart nenas yang dibuat untuk arwah Sultan Azlan Shah pada awal 1990-an, dia berkata: “Tart nenas itu ialah cenderamata untuk diplomat di London. Jadi, ia semestinya sangat istimewa.” Setelah beberapa hari membuat penyelidikan dan mencari idea, dia akhirnya berjaya membuat pembaharuan pada satu resipi tradisional kegemaran rakyat Malaysia dengan memperkenalkan tart nenas Nyonya berbentuk itik. Mewarisi minat memasak daripada ibunya, Sharifah Seha, bekas krew kabin Malaysia Airlines itu dan suaminya,

Johari Palermo telah berpindah dari Hong Kong ke Malaysia selepas kelahiran anak kedua mereka. Sedang suaminya, seorang pemuzik profesional sibuk mengajar muzik di UiTM, Badariah pula meluangkan masa melakukan eksperimen dengan semua resipi yang diperoleh daripada kelas-kelas masakan di Hong Kong. “Seloroh suami saya, perutnya yang semakin buncit pun sebab semua keenakan eksperimen masakan saya yang gagal,” kongsinya dalam tawa sambil menjeling manja ke arah buah hatinya itu. Atas dorongan dan desakan sahabat ibunya yang merupakan pembekal kuih tradisional Melayu kepada keluarga kerabat di Johor, dia mula menghasilkan biskut dan pastri Barat. Berita keenakan pastri buatannya mula mendapat perhatian seolah-olah aroma enak dari ketuhar yang mengisi seluruh ruang udara setiap hari. Tanpa disedari, bermulalah perjalanan kerjaya Badariah membuat pastri apabila menerima tempahan peribadi daripada kerabat diraja Perlis dan Perak sehinggalah Istana Negara. Lazimnya, dia akan menerima tiga hingga empat tempahan daripada istana setiap minggu. Setiap tempahan biasanya merangkumi sekurang-kurangnya 100 ketul pastri. pastri buatannya di bazar serta membekalkannya untuk majlismajlis korporat. Apabila anak-anaknya semakin dewasa, dia mengambil keputusan untuk mengubah apartmennya kepada sebuah studio masakan. Suri rumah-suri rumah dari kawasan perumahan Ampang mula membanjiri studionya untuk mempelajari cara-cara membuat biskut, kuih raya serta masakan menyelerakan seperti piza dan pai. Di kediaman baharu mereka di Seri Kembangan, rumah teres dua tingkat itu bukan sahaja ibarat perpustakaan kecil yang menempatkan sejumlah koleksi buku resipi. Malah, ia turut memberi ruang kepada Badariah untuk terus melakukan eksperimen. Pelbagai perkakas dapur memenuhi ruang yang luas itu, dari hujung siling ke lantai. Anda tahu yang berdiri di depan mata itu bukan calang-calang chef apabila Badariah dengan pantas menunjukkan perkakas berbeza untuk fungsi berlainan. “Bekas Renaware ini digunakan khas untuk membuat pastri choux. Ia perlu mempunyai ketebalan yang tepat untuk menahan kepanasan,” jelasnya. Bagi Badariah, membuat pastri bukan sekadar minat, tetapi juga satu bentuk sains. Biarpun sering memasak mengikut naluri sendiri, dia tidak pernah jemu melakukan eksperimen dengan pelbagai resipi dan teknik. Malah, eksperimen yang kerap inilah membantunya menyelami dunia pembuatan pastri dengan mudah serta mengelakkannya daripada melakukan kesilapan mudah. Sebagai contoh, pastri paling popular

Ingredients: 2 cups of plain flour 2 cups of water 6 oz of butter A pinch of salt 5 eggs size B or 4 ½ eggs size A

To make the choux pastry, pour water into a heavy pot Add butter. Add salt Heat over medium fire until the butter dissolves Once the butter has melted, turn fire to high Let it boil for five minutes Turn off fire. Add flour all at once Stir the mixture until it becomes a ball Cool the choux pastry and add beaten eggs 1 tbsp at a time The end result must be glossy and not too soft. It must be able to stand and not collapse Using two spoons, mold the choux pastry into small balls on a baking tin. Bake for 40-50 minutes until golden brown

Tip:

The baking tin must not be over oiled to prevent the pastry from clustering together during baking Beat eggs in a jar first, then pour 1 tbsp at a time

FRENCH CREAM

Ingredients: 1/3 cup sugar ¼ cup custard powder 1 cup milk 1/8 tsp salt ½ tsp vanilla essence 3 egg yolks (beaten) 3 tbsp butter (for step 5) 1 bar of butter

Method:

Mix the sugar, custard powder and milk in a pot With a whisker, cook over medium heat When the custard has thickened, add in the beaten egg. Turn off fire immediately Continue whisking until mixture thickens Add butter and vanilla. Cover pot with Glad-wrap and cool in the fridge Beat the bar of butter and add in the cooled custard 1 tbsp at a time Pipe cream into each cream puff

Tell us about your album, Home. My vision has always been to produce jazz-instrumental albums that could stand toe-totoe with international releases; but at the same time feature all that Malaysia has to offer in terms of its ethnic instruments, and local rhythms such as ‘Zapin’ and ‘Inang’ performed by Malaysia’s best musicians. That’s what I sought to achieve with Home. The tracks Kampong Boy and Out & About are prime examples of this.

What advice would you give young musicians? Practise hard to be proficient at what you do, so that when that opportunity knocks you’ll be ready. You don’t want to miss any chance that comes your way because sometimes it can take several years before another presents itself. Your sister is a singer. Is anyone else in your family musical? My father could play a few instruments and my mum was a soloist in the church choir. My wife also dabbles in songwriting and has written for artists like Jacky Cheung, A-mei, Ning Baizura and Siti Nurhaliza.

We understand you recorded it in just three weeks. How did you set about doing it in such a short period of time? With Home being a selffinanced ‘pet project’, I really could not take too much time off my ‘paying’ jobs! Having said that, I think it all came together fairly quickly because I had a clear goal of what I wanted to achieve. Once I started writing and arranging, the rest of the production process went rather smoothly. You became involved in music at a very young age. How did that come about? As a teenager I would often dream of being a professional musician, but at the time it didn’t seem like a very realistic option. It was during a collegelevel talent competition that I got ‘spotted’ and was invited to ‘hang out’ at a professional music studio. One thing led to another, and as they say… the rest is history. Did you find practising a chore when you were a child? Yes, of course. I still remember the days I had to stay in and practise in the evenings while the other kids would play football in the field just outside my house. That was mental torture!

Do you have plans to collaborate with your sister? We collaborate every now and then. Currently I am producing a few tracks for her next album, and she is one of the featured artists on my upcoming Christmas album, due out later this year.

What do you do in your spare time? I really enjoy spending time with the family, sometimes playing a game of tennis or catching a movie together. The rest of the time I spend on the road, though I’m also a huge fan of Arsenal Football Club. What can we expect next from Aubrey Suwito? Look out for the release of my Christmas album. It will feature slightly lesser known Christmas songs together with a few of my own that I’m writing specifically for this album. Our intention is to produce something unique among the usual fare that is on offer every Christmas.

New world order Dawn Of The Planet Of The Apes is the latest instalment of the reboot of the classic Planet Of The Apes series. War and the mysterious simian flu have claimed the lives of both apes and humans, but good and bad still exist on both sides…

Second helpings The sequel to cult comedy The Trip, in which British funnymen Steve Coogan and Rob Brydon played fictionalised versions of themselves travelling around the north of England on a restaurant reviewing tour, The Trip To Italy is now playing on board. Together with director Michael Winterbottom, Coogan and Brydon journey around Italy’s finest eateries, soaking up its culture and getting on each other’s nerves. ‘We drive through the most spellbinding scenery that I’ve ever seen in my life and diminish it by talking rubbish,’ jokes Coogan. As before, the dialogue is improvised and evolves during multiple takes, giving the minimal story an unconstrained feel that has made both Trips cult hits. Also making a repeat appearance are Coogan and Brydon’s competing impressions of famous people. ‘I did everyone that I know how to do well,’ says Brydon, ‘and some I don’t do at all well. Single Life In Undateable, stand-up comic Chris D’Elia plays Danny – a single guy in his 30s, most of whose friends are settling down in serious relationships. ‘He’s got a lot of false confidence,’ says D’Elia of his character. ‘Girls like him, but they don’t like to stay with him.’ Many of D’Elia’s co-stars are fellow comedians, leading to moments of improv. ‘We know each other’s rhythms,’ he says. ‘It’s more fun that way.’

Liev Schreiber stars as the title character, a Boston native living in Los Angeles who wields everything from a wiretapping kit to a baseball bat while he works. ‘Part of what I love about the show is the clash of East Coast culture with the West Coast culture of Hollywood,’ says Schreiber. ‘Los Angeles is a place we’ve been told we can all re-imagine ourselves: it’s the “City of Dreams”. Affirmative action Jason Mraz’s latest album, Yes!, has opened up a new world of songwriting for the multi-platinum pop-rock star. The fifth studio album from the 37-year-old Virginian, who began his career playing coffee houses, is a collaboration with female folk-rock group Raining Jane. ‘Saying “yes” always got us to the next verse,’ says Mraz, explaining the resonance behind the album’s title. ‘It’s the mother of positive words. When you say “yes”, something’s going to be born into the world.’ Yes! is also Mraz’s first acoustic album. The songs are far from simple – they incorporate cello, sitar and ukuleles, among other instruments – despite being recorded at his home studio. ‘I’ve been making demos at home for many albums now,’ he says. ‘So over those years I’ve learned how to record music and I love being at home. Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.

A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.

Taiwanese dessert shop in Japan gets weaved in wooden lattice Text Julie Goh Photos Kengo Kuma & Associates

When Taiwan’s SunnyHills, maker of the island’s popular honest-to-goodness pineapple cakes, asked Kengo Kuma to build its shop in the posh neighbourhood of Minami-Aoyama in Tokyo, the acclaimed Japanese architect decided against creating a concrete box. Instead, he came up with a systematic construction that’s reminiscent of a bamboo basket. Using a traditional Japanese building technique called JiigokuGumi, vertical and cross pieces of wood of the same width are entwined in each other to form a muntin grid, furnishing the effect of a building wrapped in wood. “As the building is located in the middle of the residential area of Aoyama, we wanted to give some soft and subtle atmosphere to it,” said the Japanese architect. “We expect that the street and the architecture could be in good chemistry.” Jiigoku-Gumi, an ancient craft passed down among woodworkers and artisans, is a complex technique used largely in the wooden frames of shoji screens. 
