Malaysia’s Culinary Gems It’s no secret that Malaysians love food, but there is much more to the country’s cuisine than just nasi lemak, the national dish of fragrant coconut rice served with assorted curries. From delicious kurma daging (beef stew) from the northern state of Perlis, to the fresh seafood of Sabah in East Malaysia, there are plenty of Malaysian culinary gems waiting to be discovered in each of its states.

new products and services, and especially our new aircraft, the A350s and the A330-200s. We’ve had a good year and won several awards, with 2018 being the year of firsts. We were the first airline in Malaysia to embark on the WhatsApp Business solution and to offer the flight booking chatbot on Facebook in partnership with Amadeus. We were also the first airline in Malaysia to offer Takaful insurance to our passengers. We recently reintroduced our student travel programme, MHexplorer, which has been quite popular among our passengers. Since the launch of the programme, we’ve received an overwhelming response from both parents and students, and the take-up rate has been very encouraging. We have taken a step forward to fully digitalise MHexplorer for the convenience of the students, thus making us the first airline in the world to offer such a service online. goingplacesmagazine.com | 8 | December 2018

We have also been very focused on our Disability Equality Training (DET) and Disability Related Services Training (DRST) to serve the disabled community better. Malaysia Airlines has also equipped all our aircraft with Braille safety cards — the first airline in Malaysia to do so. Since then, a lot of improvements have been made with our guests’ needs in mind. I am confident that 2019 will be just as good, as we prepare to launch new and exciting initiatives for you. December is, of course, a month of festivities and holidays, with Christmas and the promise of a new year. If you are visiting Malaysia for the first time, you’ll get a chance to celebrate a uniquely Malaysian Christmas. You will notice impressive Christmas decorations in major shopping malls, all competing to have the biggest, most beautiful themed decorations. You will also notice the streets of Kuala Lumpur decked in festive lights, perfect for that photo opportunity. You might also want to spend the night in the heart of the city as fireworks light up the night sky, welcoming the holidays.

EDITOR’S NOTE

“I was in Philadelphia, and there were two white dudes in their 50s who went to a screening. One of the guys admitted: “I haven’t cried in a movie in the longest time — but I cried.” And his friend was like, “Yeah, I cried too.” This was not the target demographic. But it’s funny to see them admitting to this and being so surprised by their own reaction,” said Kwan. For more of what he said about the making of the movie and the inspiration behind his Crazy Rich trilogy, read Kwan’s interview in pages 34-36. If you have not watched the movie, no, I did not spoil the ending for you. But if you’d like to watch it again for another laugh or another cry, check your in-flight entertainment system for channel information.

goingplacesmagazine.com | 10 | December 2018

With December being the month of giving and sharing, we’re highlighting a cause that has been feeding the hungry in the Greater Kuala Lumpur area since 2016. The Lost Food Project rescues unsold fruits and vegetables from wet markets and supermarkets to be distributed to various charities. They’ve rescued more than 500 tonnes of surplus food from donors todate. It’s mind-boggling, if you think about it. While we absentmindedly push aside our unfinished breakfast, lunch or dinner, a staggering 1.3 billion tonnes of food goes to waste each year! They end up in landfills, emitting methane which does so much harm to the environment. The time to rethink the way we consume food is not today or tomorrow, but yesterday.

(SPOILER ALERT AHEAD for the movies A Star Is Born and Crazy Rich Asians). Lady Gaga made her silver screen debut in October in A Star Is Born, a movie about an alcoholic rock star, played by Bradley Cooper, who helps Gaga’s character Ally, a talented singer, find fame. The movie was also Cooper’s directorial debut. It is a gutwrenchingly tragic story about making sacrifices, where in the end, Cooper’s character, Jackson Maine, commits an act of despair so he does not stand in the way of Ally’s fame. Two months earlier, two novices similarly made their debut on the big screen in spectacular fashion – Singapore-born Kevin Kwan as executive producer of the book he wrote, Crazy Rich Asians, and Malaysian-born Henry Golding as the actor and leading man in the movie. Golding plays Nicholas Young, the heir to one of Singapore’s largest family fortunes, and whose mother is against his Chinese-American girlfriend Rachel Chu, played by Constance Wu. In what most consider to be a pivotal moment in the movie, Chu faces off with Young’s mother in a game of mahjong by “giving up” her boyfriend. Like Maine’s, though less tragic, Chu’s action is the ultimate act of sacrificing for love.

Some of you flying today may be headed for London, Tokyo or Singapore. Do check out our travel stories, where in London, we highlight six of the best restaurants that have outdone themselves in coming up with the most creative festive menus. In Singapore, we highlight five small-group tours for regular visitors to explore a different side of the Lion City. In Tokyo, read about the winds of change blowing through the Japanese capital as it prepares to host the 2019 Rugby World Cup and 2020 Olympics. To get you into the mood for Christmas, we’ve put together a photo spread of some of the best Christmas markets in Europe. No one does them better than the Europeans, really. I’m still coming to terms with the fact that we’ve reached the end of 2018. Where did the year go? I must not be the only one feeling that the year has just zoomed by. As I take stock of what I have achieved this year, I hope yours has been a rewarding and fruitful one. I wish you all the best in 2019. Merry Christmas, if you are celebrating, and a Happy New Year, everyone. ■

Whilst no love was knowingly lost in the writing of the book and in the making of the movie, Kwan said, in an interview, that the film was a success because it transcended race. Although featuring an entirely Asian cast – the first Hollywood movie to do so in 25 years – people of various ethnicities liked it for the diversity it offered on screen and, of course, for its entertaining appeal.

Letter Of The Month We all remember our first love, our first heartbreak and our first flight! The very first time I went on a plane was for a short flight from Penang to Langkawi, at the ripe old age of 21, with the pride of our nation, Malaysia Airlines. The exhilaration of hurtling down the runway during take-off — who forgets that! I had my then-boyfriend and now-husband to thank for planning that trip. In August, as we celebrated a momentous year — our beautiful nation turning 61 years — my spouse and I brought our daughters to the beautiful island of Langkawi for the first time. The girls have flown numerous times. Yet, each time we tell them we’re flying, the excited jumping is always accompanied by “Is it Malaysia Airlines? Please, please, is it Malaysia Airlines?” Now, doesn’t that say it all about why you’re the one flying the nation’s flag high in the sky? You go, Malaysia Airlines! You’re the one I want to come home with after each trip. JANE LEE CHING SHEN, Puchong, Selangor, Malaysia

goingplacesmagazine.com | 12 | December 2018

Home. That is the first word that’s conjured up in my mind whenever I see a Malaysia Airlines plane fly gracefully overhead across the blue sky. It takes me back to the moment when I first ventured out into the great unknown, 834 miles away from the comfort of home and how it fuelled my desire to traverse foreign lands and adventures. It was not a smooth start; I was gripped by fear and was constantly battling my anxiety. Living alone far away from the protective cocoon that your family provides does not help that at all. I was the captain of my own ship, it was always either sink or sail, and trust me, there were many times when all I wanted to do was just abandon ship and swim to safety. However, three years into my journey and after raking in thousands and thousands of miles of flying, I found comfort in soaring the skies because it reminds me of the reason why I decided to move abroad to study in the first place: my soul longs and searches for new soil to bury my toes in, new memories to make and new experiences to write about and share with the rest of the world. I have flown with many airlines but nothing can quite compare to the feeling that Malaysia Airlines gives me. I feel at home even when I am 33,000 feet in the sky. PETER J. ALBERT, Miri, Sarawak, Malaysia

I would like to share my experience for my flight from Bangkok to Kuala Lumpur on 5 July 2018. The day before the flight, I received a flight re-time notification from Malaysia Airlines. Nothing much we can do about it, but it is still frustrating. However, as soon as I boarded the aircraft, I was amazed that I would be flying the A380 for the relatively short flight. Cool interior design, more comfortable seats and leg space, and a much better in-flight entertainment system. It was a wonderful journey for me and really compensated for the flight delay. CHENG MUN CHOON, Kuala Lumpur, Malaysia / Bangkok, Thailand

Malaysia Airlines took me on my first flight in the 1970s. The destination was London. It was to become my only choice when I fly simply because of the friendly flight attendants, the Halal food and the excellent service. I would always look forward to the magazine Going Places. I sometimes take it with me if I don’t have time to read it during the flight. Since I started working and due to my workplace policy, I seldom fly Malaysia Airlines. I have really missed the Malaysian Hospitality. So recently, we decided to fly to Tokyo on Malaysia Airlines to relive the MH experience. Well, aren’t we glad we did. The crew was all smiles when we boarded the plane. The seats were spacious and the service was excellent, and my favourite magazine is still as interesting and informative. When we heard the words “To all Malaysians, welcome home”, the experience was now complete. Will I fly MH again? Definitely. HASNAH HASHIM, Melbourne, Australia

Tchaikovsky’s classic ballet, The Nutcracker, meets colourful elements of the Far East in Guò Nián, The Nutcracker. This unique cultural fusion by The National Ballet of China has been widely praised for its performances across Europe and tells the story of Yuan Yuan, a girl who receives the curious nutcracker as a gift from a foreign friend while her family prepares to celebrate Lunar New Year. The show is being held in Singapore for the first time as part of The National Ballet of China’s 60th anniversary celebrations next year.

Those visiting Hokkaido in February may want to put the Asahikawa Winter Festival on their itinerary as one of three must-visit winter events held concurrently in Hokkaido. Marvel at over 50 ice sculptures along Heiwa Dori, the main street in the Asahikawa city centre, magically illuminated at night. From there, take a 10-to-15minute walk to see the attractions at the festival’s main Asahibashi Site, where there will be fun activities such as a 100-metre snow slide, zipline, snowmobile-pulled banana boats, a giant snow maze and horse rides. Stop at the various food stalls and the ice bar, then enjoy free concerts and performances at the main stage, which make up part of the event’s largest snow sculpture.

The Stars At Saint Pierre

Grab a bite of the Big Apple at Dean & Deluca’s first Malaysian outlet at Pavilion Kuala Lumpur. Founded in 1977 by Joel Dean and Giorgio DeLuca, the first Dean & Deluca opened in New York’s SoHo area as a gourmet grocery store and has since gone on to create its own line of products that range from coffee and chocolate to deli meats, steaks and sauces. In the four decades since, Dean & Deluca has expanded across the world, with cafés and stores in the Philippines, South Korea, Kuwait, Thailand, Macau and Singapore. Aside from the array of goods on sale, the café is a great place for a classic American meal, with blueberry pancakes, French Toast, breads, pastries, desserts, sandwiches, salads, and burgers all available on the menu.

The recent additions of luxury hotels in Kuala Lumpur has brought a slew of high-profile restaurant openings, among them Saint Pierre, the Malaysian branch of the Singapore-based restaurant nestled on the eighth floor of W Hotel. Founded by Chef Emmanuel Stroobant and assisted by Chef de Cuisine KimKevin De Dood, Saint Pierre in Kuala Lumpur features everything you would expect of a restaurant that has lofty ambitions: a gorgeous view of the city, an intimate dining experience, and refined dishes that have won it a Michelin star in Singapore. Diners can choose between the Classic (fivecourse), Discovery (eight-course) and Adventure (12-course) menus, which feature modern European cuisine with a Southeast Asian touch. Among the highlights are the Hass avocado mousse served with grapefruit, sansho pepper and golden croutons; Hokkaido scallop with anise and fennel confit; Atlantic cod brushed with miso and served with oxtail consommé and root vegetables; and foie gras with lychee and apricot.

Crowning Jewels

It’s your last chance to catch the late Magdalena Abakanowicz’s posthumous show Presence, Essence, Identity at the Centrum Nauki i Sztuki Stara Kopalnia (The Old Mine Centre for Science and Art) in Wałbrzych, Poland. Curated by Maria Rus Bojan, the exhibition picks out key pieces throughout the artist’s long career, helping visitors to understand the recurring themes in Abakanowicz’s work. The Polish artist grew to prominence in the 1960s, firstly with her experimental fibre sculptures she named Abakans. The woven structures challenged traditional pre-conceptions of sculpture and textiles, and throughout her vast career, Abakanowicz’s work continued to turn the norm on its head. The Old Mine Centre for Science and Art serves as the perfect venue to host a retrospective of such an innovative Polish artist.

The Legion of Honor Museum in San Francisco invites visitors to feast their eyes on a dazzling display of precious Indian jewels. East Meets West: Jewels of the Maharajas from The Al Thani Collection boasts 150 glittering objects lent by His Highness Sheikh Hamad bin Abdullah Al Thani. Many of the pieces date back to the 17th century, when India was under Mughal rule, a time when the country was famed for producing lavish jewellery. The Mughal rule of India started in 1526 and stretched until 1858. During this time, rather than the women of the court adoring decorative accessories, it was customary for male rulers and superiors to wear jewellery to signify their place in society. “The spectacular jewellery worn by the rulers of India is a captivating look into the expectations of both high culture and society across a large swath of history,” says curator Martin Chapma. “Audiences will find this aspect of the exhibit relevant to how we perceive gender today.”

Local Modernism Focus Kazakhstan is a large-scale exhibition celebrating the art of Kazakhstan that’s spread over four galleries in London, Berlin, Suwon in South Korea and Jersey City in the United States. At the end of this month, Suwon Ipark Museum of Art hosts one quarter of this huge project, with its part of Focus Kazakhstan exhibition called The Eurasian Utopia: Post Scriptum. The exhibition focuses on 20th and 21st-century artists working in Kazakhstan during times of political and social change. In the Soviet and post-Soviet period, artists responded to the influence of modernisation by combining modernist themes with local nomadic traditions. For example, the exhibition features work from pivotal artist Rustam Khalfin, who introduced performance, installation and other contemporary practices to Kazakhstan’s art scene, which previously was largely occupied by painting. The Eurasian Utopia: Post Scriptum is a chance to see how the nation’s artists took the wider modernist art movement and made it their own.

Tian Wei visits the October Gallery in London for the second time with a self-titled solo exhibition. The artist’s work focuses on bridging the gap between dyadic opposites; indeed, he was born in Xi’an, the first imperial capital of China and original starting point of the Silk Road, which linked two opposites: the East and the West. He later moved to study his craft in Hawaii and settled for a while in California. The influences of East and West play a huge part in his work, and he often makes references to Yin and Yang. At the October Gallery, a number of his paintings are on display. At first glance, they appear to feature scrawled Chinese characters, yet those who read English are naturally drawn to them as the erratic strokes spell out simple nouns and adjectives in English, such as ‘gaze’ and ‘soul’. In this way, he brings the East and the West, his two great influences, together.

WINDOW OR AISLE

Wayang Kulit goingplacesmagazine.com | 30 | December 2018

In the dim and murky mists of time, there was an age when frightened people stumbled through dark streets to get to the cinema to watch a movie they had read about in a newspaper (kids, ask your grandparents about newspapers). Or they stayed at home waiting patiently for the exact time when Murder She Wrote would be aired (why didn’t anybody ever arrest Jessica Fletcher? I mean, somebody always died whenever she turned up). And then in 1996, I set up my Hotmail account. The age of the Internet had arrived (buffering, buffering). Now I can be mesmerised by my phone for hours and watch The A-Team anytime I want. But there was a time not so long ago when the only entertainment with a backlight wasn’t the phone or even the television but the shadow puppetry of wayang kulit. Only on one occasion have I ever watched wayang kulit be performed in its proper environment. Back in the 1990s, a group of us flew up from Kuala Lumpur to Kelantan and then drove for hours beyond the bright lights of Kota Bharu down ever darker roads till we got to an isolated kampung and there in a field was a wayang kulit stage. I could tell there was a big river nearby, but in the darkness, I couldn’t see it. The field was lit only by one immensely bright light bulb behind the screen or by motorcycle headlamps as they swung onto the field and parked. When they cut off their engines, it left only the sound of a generator, the drum and gongs of the Gamelan orchestra and the piercing voice of the dalang – the puppet master, conductor and only actor. Gong is a Malay word that has entered the English language, along with amok and compound (from kampung). Wayang is the Javanese word for shadow and it’s a word that is often used to describe Indonesian and Malaysian politics. Are you watching the real person, or

Unlike with a play, a movie or with your handphone, the “action” with wayang kulit happens as much, if not more so behind the screen, as it does in front and the audience is free to wander behind and watch the orchestra and dalang at work. just a performance, or a mere character being manipulated by a hidden dalang, or just a shadow? I couldn’t understand what I was watching when I went in front of the screen. I could barely see the faces of the kampung audience as they sat on chairs they had brought with them or on their motorbikes. But they seemed to understand what was happening when puppets flew behind or suddenly hit the paper screen as the dalang sang/spoke tales of princes and princesses, court intrigues and battles between gods and kings from the Sanskrit epic of the Mahabharata. At least, I think that’s what it was about, but I really didn’t understand. I do know there were jokes. It was probably a satire on modern life as much as it was a fable from ancient times. Unlike with a play, a movie or with your handphone, the “action” with wayang kulit happens as much, if not more so behind the screen, as it does in front and the audience is free to wander behind and watch the orchestra and dalang at work. When you watch behind the screen you can see that the puppets made from rawhide are vividly painted, which is barely discernible in front. With only two hands and one voice, the dalang performs countless

characters, picking a new one from his cast, weaving it around the single light bulb to create the correct illusion of shadow, shivering it on the screen and then stabbing its shaft into a banana trunk, all the while somehow manipulating its arms. His small orchestra behind him echoes the tale with the ascending drum and gongs that quicken the heartbeat. Although he can’t see them, the dalang must have eyes at the back of his head because the orchestra seems to know what to do. I was lucky to see this wayang kulit performance with an audience that understood what was happening. I followed their lead as they wandered back and forth, came and went, chit-chatted and watched. It was so similar to an equally mystifying performance of Chinese Opera I had stumbled upon one night in the backstreets of Kuala Lumpur in the early 1990s that was being watched by grandparents and their grandchildren. I don’t know if that colourful and skilful Chinese Opera troupe even exists anymore, but with help, new generations of wayang kulit masters have been going through their long apprenticeships. Much like with The A-Team, if you can find them, then maybe you can enjoy wayang kulit. ■

MY GUIDE | Tokyo, Japan

worth a visit simply because it’s the tallest city hall on the planet. The observation decks, on the 45th floor of each of the building’s two towers, offer splendid views all the way to Mount Fuji, nearly 100 kilometres away, and unlike the pricy observation deck at Tokyo Sky Tree, these are free.

THINGS TO DO Ring In The New Year

goingplacesmagazine.com | 32 | December 2018

The first Shinto shrine visit of the year is a big deal for most Japanese, and that helps to explain why hundreds of thousands of people descend on Meiji Shrine in the waning hours of December and the early hours of 1 January. Agoraphobics beware: the crowds are eleven on a scale of ten; still, there’s none of the stampedes or chaos that would result in many other countries, and the orderliness of the proceedings provides an insight into the Japanese psyche.

Hanging Out With The Big Boys With wrestlers from Mongolia occupying many of the top slots in the rankings, Sumo is no longer as popular among Japanese as it once was, but that means it’s easier for a foreign visitor to get tickets. There’s a 15-day tournament in Tokyo each January (in 2019, it’s 13–27 January) at a purpose-built stadium called Kokugikan; tickets for the topmost row of seats cost ¥2,100 (USD19/RM78) but you can sit in any available seat closer to the action until the rightful ticketholder arrives and politely asks you to move.

People-watchers’ Paradise

THINGS TO SEE Something Fishy The Metropolitan Central Wholesale Market at Tsukiji, a tourist favourite famous for its pre-dawn tuna auctions and hole-in-the-wall sushi restaurants, closed in October after an 83-year run to make room for Olympicrelated facilities. Its replacement, to the southeast in Toyosu, is as sleek and high-tech as Tsukiji was funky and low-tech—but will it be

Dec 2018_MY Guide_.indd 32

as popular? Tourist access to the new facility will be curtailed during the New Year’s holidays but will resume in mid-January.

Back To The Future House The National Museum of Emerging Science and Innovation, Miraikan for short, is where you can get a taste of what Tokyo might be like a few decades down the road. Located in the popular Odaiba area, it’s geared to the

younger crowd, but even adults will find plenty to interest them. There are science workshops on weekends, when kids can cultivate an interest in chemistry, biology, the environment, robots and information science.

Long gone are the days when the streets were blocked to cars on Sundays and leather-clad hipsters danced to tunes from the 1950s, but the most enjoyable pastime in Harajuku is still people-watching. Harajuku as a whole, particularly the crowded lane called Takeshitadori, is where Tokyo’s young

away, was the first). There can’t be many other Michelin-starred restaurants in which the signature dish costs less than ¥1,000 (USD9/ RM37), nor can there be many in which you order your meal from a ticket-vending machine. But get there early: at both Nakiryu and Tsuta, the queue to get in is typically dozens of people long.

PLACES TO SHOP Shopping Shrine

people come to see and to be seen. The fashions will probably have you chuckling and sneaking plenty of photos.

Bohemian Boutiques More refined, slightly older fashionistas tend to hang out in neighbourhoods such as Shimokitazawa, a little west of Shibuya and Harajuku. There are plenty of bohemian boutiques, second-hand clothing stores, live music venues, and one-of-a-kind eateries waiting to be discovered here, and in addition to buying, you can also sell: some stores will give you cash for your unneeded clothing, especially if it looks even a little retro.

PLACES TO STAY Robot Receptionists All the major international hotel chains have one or more locations

in Tokyo, but why come to Japan and stay in a Western-style hotel? At the Henn-na Hotel Ginza, which opened in February, the reception desk is staffed by humanoid robots that can handle Japanese, English, Korean, and Mandarin Chinese; housekeeping duties are performed in part by autonomous vacuum cleaners. The name means ‘Strange Hotel’, and room rates are strangely affordable for Ginza.

When Cost Is No Object For those with big-enough budgets, the best accommodation option might be Hoshinoya Tokyo, smack in the middle of the city but as quiet as if it were tucked away in a northern forest. Each floor has half a dozen impeccable Japanesestyle rooms and a lounge in which staff serve complimentary onigiri (rice balls), miso soup, and even

sake. Opened in 2016, it features separate open-air baths for men and women on its top floor, with thermal water pumped up from 1,500 metres below Tokyo.

PLACES TO EAT Thinking About Eating The farm-to-table ethos is taken to the next level at Mensho, a new restaurant in the Otowa neighbourhood. Through the glass at the back of the restaurant, you can even watch the staff milling their own whole wheat flour, which they then transform into ramen and other forms of noodles. The ultimate goal is to make people think about what they eat.

Etiquette

Currency

The Japanese yen is rather unusual as it’s not subdivided into smaller units: there are coins from ¥1 to ¥500 and bills from ¥1,000 to ¥10,000, and cash still enjoys a strong following. Indeed, some smaller businesses won’t take credit cards.

Attire

The Japanese have few hang-ups about what foreign visitors wear, but if you have tattoos, consider keeping yourself reasonably covered up. Attitudes are gradually changing, but tattoos are still frowned upon. Public baths, for example, will turn you away.

Hoping to take home a cuttingedge rice cooker or a deluxe massage chair? Yodobashi Camera sells everything that has an “On/ Off” switch (as well as plenty of things that don’t). Showing your passport with your tourist visa will earn you an exemption from the 8 percent sales tax, which incidentally is scheduled to rise to 10 percent next year. There are huge Yodobashi stores in multiple locations around the city, but the most mind-boggling of all is probably the ten-storey megastore next to Akihabara Station.

Practical Tips Japanese etiquette is so complex that you’re likely to commit at least a few faux pas every day you’re here. Fortunately, the Japanese will cut you some slack because you’re a foreigner. Just watch how the locals behave and try to behave similarly.

On & Off

goingplacesmagazine.com | 33 | December 2018

Built to resemble a Shinto shrine, Oriental Bazaar should be a pilgrimage site for anybody looking to buy souvenirs of a trip to Japan. From top quality to total kitsch – antique kimonos to USB thumb drives shaped like pieces of sushi – it has every kind of souvenir you can think of, as well as many you would never have dreamed of; be ready for some impulse buying. Oriental Bazaar is in the Omotesando district, not far from the goofiness of Harajuku.

Weather

Tokyo can be unpleasantly hot and humid in the summer and cold enough for occasional snow in the winter. Spring and fall are optimal, but avoid the first week of May, when the ‘Golden Week’ holidays result in packed trains, jammed roads and full hotels.

Language

The locals will appreciate any effort you make to use a few Japanese phrases, but generally, getting by on English is no longer a problem in Tokyo; it might be if you venture out into the countryside and off the beaten track.

If you have time for just one day-trip outside Tokyo, it should be southward to Kamakura. The home base of several generations of shogun – and therefore, the de facto capital of the country – Kamakura was one of the world’s largest cities in the 13th century. Historical Buddhist temples and Shinto shrines abound, including Kotokuin, the home of one of Japan’s three big seated Buddha statues. Not far from Kamakura sits Enoshima, an island from which you can get both Mount Fuji and local surfers into the same photo. ■

Crazy Talented

Crazy Rich Asians is a story that transcends race, says its author and executive producer Kevin Kwan. Interview Andrew R. Chow

goingplacesmagazine.com | 34 | December 2018

With its lavish banquets, helicopter escapes and sweeping descriptions of Singapore’s lush coast, Kevin Kwan’s novel Crazy Rich Asians practically begs to be turned into a film. But when Kwan wrote the book, which was published in 2013, he never thought his set pieces would spring to life. “I told a story that I think was very cinematic. Did I ever dare to dream it would ever happen? Absolutely not,” he said. “I didn’t think I would even get it published to begin with.” Not only did the book get published and top best-seller lists, but the ensuing film stormed to No. 1 at the box office, buoyed by warm reviews and aggressive theatre-renting campaigns. The film has carried the weight of being the first Hollywood film with an all-Asian cast and a contemporary story since The Joy Luck Club in 1993. Since its premiere four months ago, Kwan says the film has already increased the appetite for different kinds of stories in Hollywood.

tragedy. A Christian counsellor had come over and was destroying everything that was Chinese or had any dragons or idols. I was 10 years old, and remember watching from the sidelines in this enormous mansion as they were tipping vases to the floor. The maids are weeping. They see fortunes they can’t even make in their whole lifetime being destroyed right in front of them — and they have to literally sweep it up. I can’t make this stuff up. While other authors option their books for thousands of dollars, you optioned the book to the production companies Color Force and Ivanhoe for USD1. What did you do with that dollar?

I don’t think I actually got that dollar, quite frankly. Basically, I was trying to make myself as amenable to the deal as possible. I didn’t want things to be held up by money. I wanted the money to be spent hiring a great screenwriter

— to really adapt my book rather than to pay me some stupid option fee. And it gave me a partnership stake in the whole process. So it was worth every dollar — it was worth that dollar. The book is a satire of this culture of excess, but Hollywood loves to glorify wealth. Were you worried that critique would be lost in translation?

Jon (Chu, the film’s director) and I had many, many long talks over this. I knew and understood his vision: that even though there are decadent scenes, you look beyond that. The story at the heart of it is about a family, a couple, a mother and a son. And there’s where the true crazy richness lies in the story. There was controversy over the casting of Henry Golding, who is half white, to play Nick, the male romantic lead. Did that debate come up during the casting process?

It definitely came up in the room and was something we deliberated about for a very long time. We were hyper-conscious of what would happen and how people would respond. But at the end of the day, we really felt that he really was the perfect Nick. We had to put aside our own issues to see that. I understand the issue, and I’m glad it came up. But being from Singapore, which is such a multicultural society, and having so many cousins who are mixed race — and seeing their struggle as mixed-race Asians who aren’t fully accepted on either side — I really have a lot of empathy for that. How are they not Asian? How is Henry Golding, who has spent most of his life living in Asia, considered not Asian? Fifty years ago, he wouldn’t be let into a lot of private clubs just based on the way he looks.

I was in Philadelphia, and there were two white dudes in their 50s who went to a screening. One of the guys admitted: “I haven’t cried in a movie in the longest time — but I cried.” And his friend was like, “Yeah, I cried too.” This was not the target demographic. But it’s funny to see them admitting to this and being so surprised by their own reaction. It’s great to hear that, because that’s what we believed from the beginning: that this story transcends race. The story explores the world of the uberrich in Singapore, where you grew up. What was the most obscene show of wealth you saw as a child?

This made it into Crazy Rich Asians. There was this family that had recently suffered a personal

Over the past few months, have you seen a change in potential opportunities for Asian and Asian-American stories in Hollywood?

1

Absolutely. There’s tremendous interest now in projects that I’m developing going forward. I see it also with the cast: All of them have different pots that are boiling. They’re being offered different roles and possibilities. We’re seeing how all these actors are in demand in a whole new way, and in projects that aren’t just Asian-based. The climate’s already changing.

We are definitely trying to set things up for a sequel. But it all depends on this movie performing well and having legs. This is not up to us.

2

Now that you’ve broken the bamboo ceiling, what kinds of stories are you interested in telling?

Crazy poor Asians. Or just crazy average Asians. I’ve written three books about the one percent. Now, it’s all about exploring this wide spectrum and showing other facets of Asians around the world. I want to show how they can be as cool as the crazy rich Asians, if not more. I’m also developing a TV series with Amazon. It’s going to be set in Hong Kong, and it’s about the most powerful and ruthless family there. It’s going to be very different in tone and subject matter. The post-credits scene of the film sets up a new potential love interest for the spurned Astrid (Gemma Chan). Is the scene a harbinger of a sequel?

I really hope so. A few of the actors and me, we snuck into one of the screenings in Union Square and were watching as the credits rolled. The minute that scene played, people were screaming. It was hilarious to watch. We are definitely trying to set things up for a sequel. But it all depends on this movie performing well and having legs. This is not up to us. ■

EXPLORE | Singapore

Many tourists know of Singapore’s major attractions such as the glass domes at Gardens by the Bay, high-end dining at Marina Bay Sands Integrated Resort, and designer shopping on Orchard Road. But Singapore has more to offer than these glitzy attractions. For the repeat visitor or those looking to understand Singapore’s psyche, try connecting with a wellinformed local for an authentic experience. Here are five small-group walking tours for your next visit to the Lion City.

Food Tour Of Joo Chiat & Katong Roads Singapore has a long history as a trading hub, and the ensuing cultural mash-up has led to a unique culinary scene. Many of the Straits Chinese, or Peranakans, live around Joo Chiat and Katong Roads. Today, this district offers intergenerational Peranakan, Chinese and Indian eateries and beautifully-restored architecture, perfect for a foodie walking tour. goingplacesmagazine.com | 40 | December 2018

Salma is our spritely 77-year-old guide who grew up here. The three-hour tasting starts at an Indian restaurant where roti prata, the Singaporean version of a South Indian flaky pastry, is being prepared. With a wrist-flick, the ball of dough is flipped like elastic onto the hot plate, sizzling in an alarming amount of oil. Salma demonstrates the traditional right-handonly method of eating, scooping up spicy gravy with her prata. The tour moves to a Peranakan tea shop, run by the same family since 1945. The speciality here is bak chang, a rice dumpling stuffed with pork, chestnuts and mushrooms wrapped in bamboo

leaves. Next, the group tries kueh lapis Nyonya, a steamed sweet treat featuring coloured layers representing good fortune. Singapore loves laksa, and the hawker centre here claims the original. Seated on plastic chairs, locals and tourists slurp down steaming bowls of the rich, coconut prawn curry soup. The group lets their belts out a notch while watching a chef prepare popiah, a Singaporean take on the spring roll, before finishing with a staple, the curry puff. singabites.com

Battle Box Tour The Battle Box was part of the Malaya Command Headquarters during World War II, a bomb-proof underground bunker hidden under the shady trees and British army barracks of Fort Canning Hill. The rooms were restored in 2016 and the only way to see them is on this excellent tour.

workings of the Battle Box itself, before leading the way into the bowels of the hill. The underground rooms, once oppressively hot, are now air-conditioned. Wartime furniture and mannequins depict the use of a military strategy board and a cipher machine for coded messages. Secret ‘cat ladders’ leading outside show the emergency escape routes. The final small room contains a recreation of the pivotal wartime moment, a life-sized model with 12 grave men clustered around a table. Joanne explains it was here, with resources dwindling and no apparent alternative, that these men took just 15 minutes to decide to surrender Singapore to the Japanese. This was the biggest capitulation in British military history; learning about it in the room where it occurred induces goosebumps. Video of the formal surrender brings home the gravity of their decision.

Formerly known as Tiger Balm Gardens, Haw Par Villa was opened in 1937 by the brothers behind the medicinal balm and remains Singapore’s quirkiest attraction. More than 1,000 brightly coloured sculptures stand here, educating the public on moral issues relevant to the 1930s, with lessons from Confucianism, Buddhism and Taoism. This fantastic weirdness is best experienced on the Journeys to Hell Twilight Tour, and just as night is falling and the park closes to the public, things start to get delightfully spooky. After touring the gardens, guide Sharul directs guests into the multi-cultural ‘Hell’s Museum’, followed by (for those who dare) the hair-raising opportunity to lie in a real coffin. Shadows play across the face of the fearsome King of Ghosts in his display, and visitors giggle nervously as the tour enters the infamous

Chinatown & Little India Photo Walk Singapore is a photogenic city, and a relaxed walk through the enclaves of Chinatown and Little India with long-term American expat Mark Stevens yields great souvenir photos and unexpected insights.

10 Courts of Hell. Constructed more than 70 years ago, each of the dimly lit courts depicts a gruesome, blood-thirsty diorama of the different tortures awaiting in Hell, scenes that will send chills through any reprobates. Signage informs the visitor of the crime and corresponding punishment, such as ‘Ungratefulness’, which will result in one’s heart being cut out, or ‘Disobedience of One’s Siblings’, punishable by being ground by a large stone.

Singapore’s first satellite town, Toa Payoh, affectionately known as the Heartlands. There are now 24 satellite towns across Singapore and 82 percent of Singaporeans live in an HDB flat. Guide Shal aims to give people an insight into the ‘real’ Singapore, beyond tourist sites. Shal leads guests through the HDB Hub Visitor’s Gallery, just opened in 2018. One display pays homage to Singapore’s Founding Father and HDB visionary, Lee Kuan Yew.

Sharul lightens the tone, explaining the burning of paper replicas of household items for the ancestors, a Chinese tradition modernised to include paper mobile phones and mansions now available for burning and becoming useful in the afterlife. The tour takes two hours. journeys.com.sg

Mr Lee’s goals of strong families and interracial harmony are reflected in modern HDB operations. At the home-buyers’ hall, electronic signboards display the availabilities of flats for each race (Chinese, Malay, and Indian/Other), ensuring each housing block maintains an ethnic balance. The tour visits common areas of 1970s-style HDB blocks and newer towers featuring carpark rooftop gardens and multistorey bicycle storage.

The walk reveals hidden street art, elderly men playing Chinese checkers, traditional shophouses and colourful Indian temples. Some vantage points capture scenes where historical buildings meet gleaming new highrises, and the pace is guided by the group’s interests. At the morning tea break, Mark shares his love of mango flavoured ‘snow ice’, and guests dive into plates of mounded, colourful desserts. The 6.5-hour walk includes tickets for trains (MRT), buses or taxis, and the day finishes on a ‘bumboat’ tour of the Singapore River, taking in the iconic downtown photo opportunities of Marina Bay, Clarke Quay and Boat Quay from the water. ■ singaporestreetshots.com

London restaurants outdo themselves for creativity this festive season, and these six establishments are the reason why. Words Baldwin Ho | Photography courtesy of the respective restaurants

3 Though the current Brexit negotiations look to tighten border controls, the culinary scene in London continues to showcase some of the most vibrant flavours from across the globe. We look at the key trends this winter and festive surprises you might encounter while visiting London.

Onodera Veganism has become big business in the U.K. in recent years, but choices have been limited

in Japanese restaurants until now. Onodera in St James has launched a festive vegan menu that is as stunning as its meat equivalent. The vegetable sushi rolls offer freshness, crunch and vibrancy in equal measures, whilst the miso aubergine is perfectly grilled to retain its juiciness and flavoured with appetising sweet miso sauce. The pièce de rÊsistance is a mushroom and tofu sukiyaki; silky smooth tofu is perfectly complemented by enoki and shimeji mushrooms, packed with rich umami flavours.

7

Those wishing to sample the meat version of the festive menu will find it the pinnacle of luxury dining: black kampachi carpaccio and Scottish salmon rolls are followed by exquisite Canadian lobster tempura, with the main course of 35-day dry-aged Scottish sirloin robata steak. The rich flavours from both menus can be paired with sake and wines with the help of the supremely talented sommelier. With branches all over the world, this is fast becoming a brand that is synonymous with the finest quality. onodera-group.com/uk

Ikoyi Fresh from acquiring a Michelin star, this restaurant in St James defies characterisations. The young, Princeton-educated head chef Jeremy Chan has delivered a unique menu that is worth flying halfway around the world for. He has combined complex, unique West African ingredients like grains of Selim and Iru, which are fermented locust beans, alongside more European-sounding ideas like herb-fed chicken and vegetable stew to deliver a powerful finedining experience, unlike anything you will find elsewhere. Stand-out dishes include mushroom suya, malted barley and pine, packed with umami

richness (hardly surprising considering Chan has worked with the Umami information centre) and a crab jollof that goes to the heart of the cooking. This rice dish has been cooked in a stock of blackened vegetables and shellfish dashi, topped with a crabmeat salad and a custard of brown crab, given a smoked finish. You might question the authenticity of such a dish, but such is the ingenuity of Chan’s cooking; it isn’t about the constraints of borders but about offering the ultimate taste sensation for diners. This is a restaurant for those who are prepared to have their perceptions challenged. ikoyilondon.com

Kinilaw & Buko Filipino cuisine is the on-trend food of choice for discerning diners in London. This newly opened restaurant delivers sexy tapas-style dishes along with a lengthy selection of quirky ice creams. Situated in Hoxton, the hipster quarter of London, the restaurant has an edgy, industrial design that is the definition of modern East London. The restaurant’s name translated from Tagalog means a Filipino-style ceviche and coconut. Most of the food has been cured with vinegar and retains that sense of rawness that allows

fresh ingredients to speak for themselves. Hand-dived scallops and oysters are the musttry dishes at this laid-back venue, where you can savour top-quality seafood along with cocktails with a Southeast Asian edge, like the Sherry DiVine, which contains Amontillado sherry, lemon, orgeat, chilli, ginger and basil. ‘Buko’ refers to the coconut shells used to hold the Filipinoinspired homemade ice creams here, including unusual flavours like smoked blackberry and star anise sorbet and rum and pineapple ice cream, which has a strong Pina Colada feel. This restaurant is for those who want to experience the real eclectic side of London, away from the standard tourist hotspots of Oxford Circus and Leicester Square. kinilawandbuko.com

Berber & Q Another restaurant that can’t be bracketed into a particular category, this Middle Eastern and North African grill house takes inspiration from a multitude of culinary capitals across the globe, such as London, Marrakesh, Istanbul, Tel Aviv and New York. The owner, Josh Katz, has successfully married the flavours of the kebab houses of Istanbul with the exquisite BBQ techniques of modern New York eateries. While Christmas isn’t a big festival in some of the countries that influenced Katz’s food, the restaurant has come up with a delectable festive menu; labneh is served with burnt apricot while hummus is delivered with matbucha and sprouts. You wouldn’t imagine turkey to be a dish served often in the warmer climates of the Middle East and North Africa, but here it is given a delicious twist with sumac onions, herb salad, harissa, tahini and laffa.

If you want a Christmas experience with a difference, this is the place to be. The restaurant is in the Haggerston area in East London, where the most ground-breaking restaurants are discovered these days in London. berberandq.com

Nobu Hotel Shoreditch English afternoon tea is a quintessentially British experience that all visitors must endeavour to savour. This winter, the iconic Nobu brand has launched a festive afternoon tea with a distinctly Nobu twist. Instead of the repetitive smoked salmon and coronation chicken sandwiches you are normally offered, they present mouthwatering variations like snow crab tempura in a creamy spicy sauce with ikura on a shokupan bun. Beef tenderloin is served with shichimi miso

mustard, while vegan diners are offered a tofu bun that contains flavoursome tofu truffle cream and pickled tomato.

13

For those with a sweet tooth, the coconut snowball with white chocolate ganache and snowflake yuzu tart will melt away any resistance to these delightful festive offerings. Ideally paired with these desserts is the unique coffee selection, including London’s only Kinto Hand Brew Japanese filter coffee, which allows for more of the coffee’s natural oils to infuse the cup. The decor offers a distinctly natural vibe; with a mixture of earthy timbers, dark-toned stone and densely woven textiles, this is a lifestyle space that is welcoming and serene. nobuhotelshoreditch.com

Cora Pearl Named after the infamous 19th-century courtesan, this new restaurant has been all the rage with restaurant critics and influencers alike with its brand of serving comfort food in a complex yet satisfying manner. The high ceiling, parquet flooring and velvet banquettes evoke the historic feel of an establishment Cora would have frequented herself. The food has a mixture of British and French influences.

The restaurant is conveniently located in the heart of theatreland in Covent Garden, ideally paired with a trip to the nearby shows. It has also come up with festive surprises like mince pie doughnuts. ■ corapearl.co.uk

Troika Sky Dining

Dining

Among Stars Cantaloupe, the first Troika Sky Dining establishment by Christian Bauer and Eddie Chew, opened in 2013 to rave reviews. Nearly six years later, the fine dining gem continues to surprise, offering up beautifully crafted menus and a carefully curated wine selection. Cantaloupe sits on level 23A of the Norman Foster-designed luxury tower, The Troika. Emerging from the lift, guests will be awestruck by the views below and ahead as they traverse the glass-walled passageway to the dining hall. The soaring floor-to-ceiling windows of the double-height dining area afford sweeping views of KLCC Park and the city skyline. The minimalist interior design, with a water feature and a black-and-white theme to the table settings, is a stylishly discreet backdrop to the view. But what are pleasing interiors if there is no substance to the food? At Cantaloupe, eclectic ingredients and cooking styles merge to produce dishes that are a feast for the eyes and taste buds. For his latest, Executive Chef Bauer has crafted an eight-course degustation menu (RM380++) that kicks off with seafood – Pearls of Oscietra caviar, followed by a luscious oyster and then the classic lobster bisque, a favourite that never fails to please. An elegant slice of pan-seared parrot fish rounds up the ‘fruits of the sea’ courses before guests are served foie gras cubes, with hints of local satay flavours in its peanut sauce and pandan rice crispies. Even the palate cleanser, a delicately sour yogurt and cherry soda sorbet, is a delightful testament to the discerning taste and skill of the chef. Having put themselves in safe hands, the only choice guests need to make is to decide between the filet mignon or duck breast for the seventh course, and to select an accompanying wine if one is imbibing. Troika Sky Dining venues appeal to diverse palates. For a more casual experience, there is Fuego, with its focus on tapas and grilled meats, or Strato, a family-friendly Italian bistro. And as the sun sets, there is no better place to be than at Coppersmith, the craft cocktail bar, or at Claret, the wine bar, to watch day drift into night. troikaskydining.com

Shaun Teo | CHEF’S CUT

Hunched over a marbled table-top, Shaun Teo concentrates wholly on the task at hand. Peeking out from between two sizeable palms is a balled-up bit of cherry-red fondant. His nimble fingers that belie a towering stature move quickly and precisely, setting aside his discomfort of an audience. With a couple of toothpicks, he creates textures for what turns out to be the tiniest Santa hat to top off an adorable Polar Bear Cake Pop – just the thing for Christmas.

The humble chef recalled that growing up in the Malaysian port town of Klang, he instinctively knew his calling had to do with design. However, he was clueless as to what creative outlet to base his future on. "I studied in Taiwan's Ming Chuan University. But I didn't know what to choose. I first planned on studying interior design, but too many people were doing the same thing that year. I wanted to be different," he said. Heeding his supportive mother's suggestion, he enrolled in the Hospitality Management course. It was then that he received his first taste of baking through an elective subject. "I had never even baked before then. So the first thing I ever made was a fresh cream cake at university." "After that, I fell in love with baking rather than hospitality. With baking, I could do whatever design I like, I don't have to be the same as everyone else," said Teo. It also fit well with his quiet demeanour. "I'm an introvert and quite shy, so that's why I wasn't looking to do things with too much communication," he said. Still, it wasn't an easy road. Teo started from scratch, working in a bakery for a year after graduating to learn the tricks of the trade. As his skills grew, he made a delightful discovery. "When I started baking, I became attracted to cute, animated and pretty (designs). I love to decorate cakes and see them turn out magical.” Later working for JW Marriott Hotel in Kuala Lumpur, the two-hour long commutes to and from Klang through the city's traffic took a toll on him and his expenses. To earn a little extra money and to improve his techniques, he began taking requests from friends and family by early 2015. "So I would work for 12 hours or more every day, then drive home and start on the orders. That's when I slowly started posting

Dec 2018_Chef's Cut03.indd 67

1

photos on social media of what I'd made to get my name out there," he explained.

goingplacesmagazine.com | 67 | December 2018

These images work in stark contrast yet give a glimpse into the duality of his nature. An introvert who shies away from social situations but has a dreamy love of all things adorable, he’s also a confident baker who works long hours, conducting workshops around the world to make his dreams a reality. Before sitting for this interview at his studio, Shaun Teo Creations, he systematically wipes down his workstation to calm his nerves.

"What makes me happiest is when I get good feedback about my designs, when my customers tell me I've done a great job. Or when the outcome is pretty, I am satisfied," he said. "But the hardest thing for me is having to constantly come up with new ideas for my classes and for my clients’ orders. I have to use different techniques on the cakes all the time.” For Teo, inspiration comes from social media platforms such as Instagram and Pinterest. He not only searches for cake designs but also draws inspiration from photography and art pieces. Although he still takes orders via his Instagram handle, @shaunteocreations, his ambitions have grown. Gaining popularity with pictures of his whimsical, too-beautiful-to-eat creations on social media, he now has over 140,000 followers. As he turned 26 this year, the self-styled artisanal baker opened his own studio. "I actually had a smaller studio around a year ago. Then I decided to expand my business."

2 3

With determination, he pushed himself out of his comfort zone by teaching workshops at the baking studio, based in Petaling Jaya in Selangor state. His ventures have also extended to China, Singapore, Thailand, Indonesia, Taiwan and Dubai. "I have a workshop on baking or cake decorating in China once a month," he said. "I'm also planning to hold one in the United Kingdom and United States next year. Maybe I'll even open up a café by the end of the year, hopefully. But right now, we have at least one workshop in the studio every month.” The space itself is calming, with soft beige wood tones, stainless steel equipment and floor-toceiling windows that bring in the light. Of course, there are hints of the self-starter's unique personality throughout the studio, including

delicate glass and metal ornaments and a special ivy-covered teepee in one corner. One thing stands out. Tastefully dotted around the studio are prints of Henri Matisse's paintings. "I like Matisse because he is very artistic. His drawings may seem very minimalistic and simple. But they are also very beautiful and I feel like there's a lot of meaning in each painting." As he traced his artistic traits back to his youth, Teo remembered drawing every chance he could get as a kid, then mastering his flair with a brush later on. "I picked up my art skills in secondary school where I had watercolour painting classes every week. But drawing has always been one of my loves since I was young," said Teo. "It's where I learned the importance of details." It is this characteristic that gives him a distinct edge, offering up the fantastical with a touch of realism. Baking to Teo seems more an art form, and should he persist to always raise his game, his cakes will never go stale. ■

EXPLORE | Lost Food Project

Food Rescue How The Lost Food Project is fighting food wastage and feeding the hungry. Words Tan Lee Kuen | Photography SooPhye

goingplacesmagazine.com | 70 | December 2018

In a small warehouse in Kuala Lumpur, volunteers are sorting through boxes of produce and dry food such as eggplants, potatoes, lettuce, tomatoes and noodles. The produce is arranged into piles (with the obvious inedible ones put aside to be composted) and divided into portions that will then be delivered or picked up by various charities. This is just a typical morning at The Lost Food Project. Founded in 2016 by British expatriate Suzanne Mooney, together with a group of parents from her children’s school, the nonprofit organisation works with supermarkets, manufacturers and markets to pick up their surplus food and distribute them to charities around town. To-date, The Lost Food Project has rescued more than 500 tonnes of surplus food from its donors and provided almost two million meals to those in need. ‘‘Our core function is as a food bank. Our driving force is to feed people, but the knock-on effects are to do with the environment and sustainability,’’ says Mooney, who often cites Robert Egger, the founder of DC Central Kitchen in the U.S., as an inspiration for setting up the NGO. According to the United Nations’ Food and Agriculture Organisation, 1.3 billion tonnes of food are wasted every year, whether through production or consumption. That is a third of all food produced, a staggering amount that can feed up to 45 percent of the world’s population.

1

Dec 2018_Explore-Lost Food Project_2pp.indd 70

In Malaysia, where food is an obsession and not just a necessity, we are also guilty of wasting food, throwing away 3,000 tonnes of edible food every single day. That’s a lot of perfectly good meals being dumped in the landfill. Food wastage is often described as a ‘farm-tofork’ problem. Produce loss happens all along the food production chain, from the fields to transportation, factories, supermarkets, restaurants, and our fridges. Growing food requires water, arable land, energy, labour and money. Letting food go to waste is to squander these valuable resources while filling up landfills, which emit methane. There are many reasons why food goes to waste. Part of it has to do with us, the consumer, and our expectations of food. For example, the demand for perfect and beautiful food means much of it is discarded. ‘‘If we see a fruit with a bruise or a dent on it, we would not take that and choose another one. Straightaway, we have created waste because we want perfection,’’ says Mooney. When The Lost Food Project was first launched, a handful of volunteers were carting away a few boxes of groceries from Jason’s Food Hall direct to the charities. Today, they collect food from almost all the major supermarkets in town, including Cold Storage, Giant and Village Grocer. Standard operating procedures are in place and The Lost Food Project has contracts with its food partners to ensure due diligence. One of their biggest accomplishments is working with Kuala Lumpur City Hall (DBKL) and the traders at the Selayang Wholesale Market, where they can pick up unsold fresh fruits and vegetables. ‘‘It is very important to us that we give people a nutritious diet as well as feed them. We are about sustainability, but we are also concerned about society and don’t want to create more problems like obesity. We want to make people’s lives better,’’ says Mooney. Every day, except Sundays, The Lost Food Project sends refrigerated trucks to pick up food from its food donors and bring it back to its warehouse, where the food is sorted by volunteers.

Volunteers form the bulk of the organisation and are its driving force. The drivers will then take the products to the different charities, but The Lost Food Project encourages the charities to come by the warehouse and pick up food that they need and will use. ‘‘We have to be careful who we give food to. We can’t give out food randomly. It’s a complicated jigsaw and we have to work out a clever but simple way of addressing this issue,’’ says Mooney. The Lost Food Project currently works with 50 vetted charities in the Greater Kuala Lumpur area. A liaison is assigned to each charity to work closely with them, conducting occasional spot checks to ensure things are being done correctly. SOLS Academy of Innovation, an educational non-profit organisation, has been picking up fresh fruits and vegetables from The Lost Food Project once a week for over a year. ‘‘It’s been a really great help to us and it makes the students happy to have a good meal,’’ says Saron Rous, the academy’s director.

The Lost Food Project also sends weekly food supplies to over 7,500 families in the People’s Housing Project and has set up kitchens in refugee schools. When food is provided at the schools, attendance rates shoot up. Besides rescuing and supplying food, The Lost Food Project engages in education work and public awareness campaigns. At this year’s World Food Day in October, it ran a My Clean Plate challenge to encourage participants to finish their food and make a donation. The campaigns are to promote awareness around food waste and what we as individuals can do about it. Even simple changes, like eating leftovers and understanding expiry dates, can make a big difference in how much food gets thrown out. ‘‘We’re not trying to be boring,’’ says Mooney. ‘‘We just want people to be thoughtful about food and to take baby steps toward changing their behaviour toward it. The more you get into food sustainability and wastage, the more you realise the massive impact it has on our planet.’’ ■

Ukiran Artisan Seorang pengukir artisan muda kini giat mengembalikan kegemilangan seni ukiran kayu lama. Teks Alexandra Wong Terjemahan Yeo Li Shian Foto SooPhye

Cutting Edge. The ancient craft of woodcarving gets a boost from a young artisan in Penang.

Dec 2018_Warisan.indd 72

Tucked above one of the quieter pockets of Penang’s World Heritage Site, Keng Hwa Carving Studio is a curious study in contrasts. Illuminated by natural light streaming in from wooden windows, peeling walls surround stark white shelves and light workbenches filled with jars of old wood, ornate signboards and miniature replicas. Both modern and old-school at the same time, the wood carving studio is very much reflective of the maker himself – a young man with an old soul and nimble hands. When we meet at his studio, 32-year-old Tong Wing Cheong is putting the finishing touches to a puppet figurine for Ombak Potehi, a group of young artists who aim to revitalise the Hokkien Potehi glove puppet theatre.

Itulah keindahan kayu,” ujarnya sambil mengukir senyuman.

1 2

These days, he explains, plastic is commonly used as the base material to make Potehi puppets but traditionally they were constructed from wood. The difference? “Wood looks heavy before carving. But after the work is done, the outcome is soft and light. That is the beauty of wood,” he says with a smile. Tong fell in love with the art of wood carving in Taiwan, where it was part of his Masters curriculum at the Graduate Institute of Native Culture, National University of Tainan, an institution renowned for its traditional folk culture. After graduating in 2012, the Klang-born Tong was lured to Penang, “one of the few places in Malaysia where there are still rich pockets of heritage trades left.” Through his work with non-governmental organisation Penang Heritage Trust, he met Yeap Siew Kay, a master wood carver who shot to fame

3

for almost single-handedly completing the elaborate decorative shrine in Yap Temple on Armenian Street, Penang. Thong began apprenticing for the 70-something wood carver in 2013. “For the first six months, I honestly didn’t know what I was doing,” he confesses. “There was so much to learn. In the old days, apprentices would live with their sifu (instructor), and even then, they took three months just to learn how to sharpen their tools!” Keeping your tools sharp is of primary importance, he notes, because it will affect the outcome (fineness) of your lines and curves. From mallets to chisels, gouges to “doglegs”, Tong probably has over a hundred tools in his collection! As he refined his skills, Tong made the decision to go full time and rented his current space from a former swiftlet house

early this year. Rather than limit himself to a particular genre such as signboards or plaques, he experiments with various forms of woodwork. His handiwork can be found all around town, from plaques and ritualistic objects for religious use, to reproduction and repair work for Peranakan heritage homes. The latter has turned out to be a significant stream of income for Tong. “It occurred to me one day that I could do refurbishment and renovation work as well as creating designs from scratch. After all, I know my way around wood.” While carrying on an ancient tradition, Tong also attempts to popularise fading art forms such as woodblock painting. “Right now, people either buy the blocks

from China and Taiwan, or go for computer printouts,” he laments. To ensure the art of wood carving continues for years to come, he spends a significant portion of his time organising workshops with local activists to educate the public. Carving wood by hand is so old-school that the craft, on a professional level, could be considered endangered in this part of the world. Tong hopes to inspire inquiring young minds to work with their hands. “This generation has not had a lot of real opportunity for hands-on experience,” he says. “You never know how one experience might spark their interest, like it did for me.” ■

and discipline. It continued the emphasis on a national curriculum and looked to include vocational education in secondary school. Aminuddin was part of the earlier Barnes committee, which produced its report in 1951, a colonial-led effort to formulate the country’s education policy. The report had not been well received. Aminuddin was born in Chemor in Perak state in January 1926 and received his early education at the Malay school in his hometown before going to Anderson School in the state capital, Ipoh. He then studied at the University of Malaya in Singapore and was picked as a Queen’s Scholar in 1951, going to study at the University of London.

Educationist

Teacher, lecturer, researcher and later the Head of the Education Advisory, Aminuddin Baki was a key player in shaping Malaysia’s education system. Words Siva Sithraputhran | Photography Arkib Negara Malaysia

Aminuddin Baki was a pioneer in his chosen field of education. Starting as a teacher, he soon found his vocation in the civil service, making policy and contributing to a series of reports that formed the basis of Malaysia’s education system. As the newly independent country began to forge its identity, the need for its own distinct education system became apparent. Aminuddin was chosen to be on several crucial committees to this end.

Aminuddin also served on the Rahman Talib committee in 1960, expanding on the Razak Report. The Rahman Talib Report became law through the Education Act of 1961. It emphasised basic education made up of reading, writing and arithmetic. It also placed importance on religious education

His first stint as a teacher was at the Sultan Yusoff English School in Batu Gajah, Perak. He later taught at Anderson School, progressing to lecture at the Sultan Idris Teachers Training College. He also began to be active in student politics, setting up a state-wide organisation for Malay students. He went on to become a founding member of a wider organisation aimed at uniting ethnic Malay students from the Malay peninsula. The organisation, Gabungan Pelajar-pelajar Melayu Semenanjung, was set up in 1948 and Aminuddin was elected president twice. He took an active role in addressing the problems facing Malay students, including their high drop-out rate during the 1960s. He progressed quickly in the civil service. He was appointed Principal Assistant Secretary to the Education Ministry in Negeri Sembilan state. He was also Head of Education Control in the states of Negeri Sembilan and Selangor. By 1961, he was the top civil servant in the education department as the Head of the Education Advisory. Today, the equivalent title is the Director-General of Education. During his tenure, Aminuddin continued to shape the education system. He succumbed to a heart attack in 1965 while still in the post. He was just 39 but had achieved so much in his life. ■

He served on the committee that produced the Razak Report of 1956, aimed at reforming then-Malaya’s disparate education systems to set a new standard for the future as independence loomed the following year. The report successfully formulated the national education system and declared the ultimate goal of making the Malay language the key medium of instruction. Further, it began a curriculum that was Malaya-oriented and established a common system of examinations.

Strong Performance Malaysia Airlines proved its marketing and branding prowess as the airline took home four awards at the recent Putra Brand Awards and the Marketing Excellence Awards. The Putra Brand Awards saw the airline winning Gold for the ‘Transport, Travel & Tourism’ category – its second consecutive win. At the Marketing Excellence Awards, the wins were Silver for ‘Excellence in Performance Marketing’ as well as Bronze for the ‘Excellence in Performance Marketing’ and ‘Excellence in Media Strategy’ categories. The wins come on the back of tough competition in all categories.

Unforgettable Experience It was an occasion to remember for 32 students from Sekolah Kebangsaan LKTP Tenggaroh Selatan in Kota Tinggi, Johor when they flew for the first time, courtesy of Malaysia Airlines. To make it extra special, they were given a send-off by Group CEO, Izham Ismail. The students were travelling with their teachers between Kuala Lumpur and Langkawi on an educational trip via flight MH1436 and MH1446. “As the national airline of Malaysia, we find ways to appreciate our passengers, even with little gestures, while at the same time promoting the attributes of Malaysian Hospitality. We hope that these children will aspire to give back to society one day,” he said. The gesture fits in with the airline’s MHmoments campaign, an initiative to make each passenger’s travel experience unique and memorable from end-to-end.

INSIDE MALAYSIA AIRLINES

Flavours of Home Whether it’s the fragrance of curry wafting through the house, or the incomparable taste of grandma’s cooking, we all have food memories that take us back to the whole experience of family, nourishment and comfort. This festive season, Malaysia Airlines invites passengers flying onboard to celebrate hearth and home, as the airline will be serving a special dish synonymous with the local Portuguese Eurasian community. A staple at family gatherings and festive occasions such as Christmas, Chicken Curry Debal, better known as ‘Devil’s Curry’, is a unique reflection of the community’s East meets West roots, featuring ingredients such as candlenuts, white vinegar and potatoes as well as local spices like dried red chillies, turmeric and lemongrass. goingplacesmagazine.com | 84 | December 2018

The curry, served with steamed rice and mixed vegetables, will be available onboard as part of the special festive menu for passengers flying from Kuala Lumpur to London and from Kuala Lumpur to Auckland. Through it, the airline welcomes guests to experience a slice of Malaysian Hospitality, whilst highlighting the rich and colourful heritage of its staff and the people of Malaysia. The idea for the dish was inspired by a member of the cabin crew, Gina Ann Marie Lazaroo, who is of Portuguese Eurasian descent. Lazaroo grew up savouring her grandmother’s unique recipe, which has been handed down through nine generations.

“December is my favourite time of the year. It brings back memories of my childhood, watching my grandmother in the kitchen. She used to let me help her prepare this important dish to be served to our guests at our big Christmas feast each year,” Lazaroo says, adding that she loved the fiery taste and complex flavours from the spices and ingredients used.

For her, Christmas is a time for family and celebration. “We have a big family of more than 200 relatives, and most of us return to Malacca for the Christmas holidays,” she explains. On Christmas eve, she and her family members (pictured below) attend mass, after which they gather at her grandmother’s house and wish everyone ‘Bong Natal’ – the Portuguese version of Merry Christmas – at the stroke of midnight on Christmas Day. This year, she plans to surprise her grandmother by cooking the dish and presenting it for Christmas supper. Lazaroo is excited to share her heritage with passengers flying with Malaysia Airlines during the festive season. “I’m proud to see the airline serving this mouthwatering dish, and it will definitely bring back fond memories for people of Portuguese-Eurasian descent,” she says.

SAFETY + SERVICE INFO

CABIN LUGGAGE HANDLING Passenger and crew safety onboard our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This is to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. Passengers who are fit and in good health must carry, stow and secure their own hand luggages on board. Hand luggage exceeding the 7kg weight limit is required to be checked in before boarding.

PORTABLE ELECTRONIC DEVICES (PED) For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system.

LITHIUM BATTERIES Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.

ELECTRONIC CIGARETTES Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device in-flight is not permitted.

ZERO TOLERANCE OF ABUSE We value courteousness. Any form of threat, verbal abuse or violence towards our staff will be taken seriously. We are committed to supporting anyone who has been the victim of an assault.

Lena and Martin are a couple with three kids undergoing a divorce. The family continues to live under the same household with an odd arrangement – one takes on the parent role while the other gets to live a carefree life as a single person for one week, and then the role reverses. They learn to become better parents and partners to each other through the experience.

In modern-day London, Dr John Watson, a war veteran previously based in Afghanistan, returns home and meets the brilliant but eccentric private detective Sherlock Holmes. They form a friendship when Watson decides to share a flat with Holmes. Together, they solve baffling and often bizarre crimes and mysteries while competing with Holmes’ nemesis, the criminal genius Moriarty.

AUDIO ON-DEMAND

The hugely talented EB DUET, comprising Eve Wong and Billy Ho, is our featured artist for December. We catch up with them to talk about their second album I’ve A Song For You, which is playing onboard this month.

Congratulations on the release of your second album I’ve A Song For You, where you wrote and produced all the 11 songs in the album. How does it feel to finally release one of your own? Thank you! Even though this is our second album, we are so excited and nervous at the same time because it’s our first time sharing our own composition! All the songs are produced in Malaysia; however, not all the songs were written in Malaysia – some of the songs were written overseas when we travelled. goingplacesmagazine.com | 100 | December 2018

Inspiration for music is a very impromptu and unpredictable visitor! Sometimes it will take us less than an hour to complete a song when the inspiration hits us, but some songs are done over a period of more than 10 years! Tell us a bit about the album. What were the songs based upon? Any particular track you’re especially proud of? This is our second album, but it’s our first full original album. We retained the jazzy touch of our first album, with its fully jazz standard tunes, but at the same time infused our own style and character. As music lovers, we have found that there will always be songs which will stick in our hearts whether we like it or not, whether we are feeling good or bad. Now as music creators, we hope that our music will become that song in our listeners’ mind to accompany them through good or bad times. We want to tell them, “Whether you are feeling good or bad, we’ve got a song for you!” One of our fans told us that The Past helped her get through her difficult time; she told us that she finds comfort every time she listens to this song, that this song sounds like a close friend talking tenderly to her when she was sad, and the lyrics gave her courage and strength to confront her negative emotions. Because of this, this song has become the song we are most proud of! Even though we might be strangers in real life to the listener, we are so glad that the music we made can be a part of their life in a positive way! That is the best reward!

Dec 2018_GPE_Listings02.indd 100

Tell us how EB Duet came about. How did you guys meet? EB Duet was formed in 2013. We first met each other on a job in 2010 and over repeated collaborations, quickly discovered that we share the same musical preference, philosophy and passion. It was only a matter of time that we decided to make music together; what started off as jam sessions and test recordings resulted in the 2015 release of our first studio album, The Beginning. Eve, you have a beautiful voice. Have you ever been compared to Norah Jones or any other female singers of the same genre? How do you feel being compared to them? Thank you! Yes, quite a lot of people have told me I sound like Norah Jones. There’s also a lot of comments on one of our viral videos, a cover of a Malay classic (Getaran Jiwa by P. Ramlee), that I sound like Yuna. It’s an honour to be compared to big stars and talented artists like them! However, I hope one day I can develop a style where people can remember me as myself. And Billy, it’s mesmerising watching you perform, like you’re in another world. What goes through your mind when you’re performing? Every time I perform, I’ll forget the fact that I’m “playing an instrument”; instead, I’ll let every single note I play become part of me, become my voice. I hope the audiences not only listen or look at how I play the guitar but listen to the feelings and words that I try to express through the music I play. What are you up to these days? After we finished our second album and a whole month’s tour, we slowed our pace down to make room for ideas and creativity for future projects. We also work on musical projects with other musicians and artists to get more inspiration and to expose ourselves to different musical chemistry with others! We hope all this will inspire us to come up with exciting ideas for our third album, which we plan to produce and release next year!
