Next, I urge you to read Vincent Vichit-Vadakan’s excellent piece on food trends to expect this year. From fermenting going mainstream to full-on food tours where participants don’t just try out local delicacies but learn their origins and the secrets behind their preparations, you’d want the low-down on our eight predictions. If you’ve been an avid follower of Going Places, I’m happy to report that we’ll keep the magazine much the same this year. It’ll still be filled with insightful articles about travel, food, lifestyle, and social issues that impact us, just to name a few, and the articles will continue to be accompanied by visually stunning photographs, where applicable.

One significant change that I must mention, though, is we’ve decided to retire Kam Raslan’s hugely popular Window or Aisle column. Kam has entertained us with his brand of humour, sarcasm and style of writing since our January 2016 issue and he’s collected quite a number of fans through Going Places. I’ll be the first to say I’ll miss his column the most, and I’m sure I’m not the only one. The decision to let the column go wasn’t easy, but as with all good things, it’s better to end on a high note.

Wow, it’s 2019! Here comes that time of the year again, where new beginnings will undoubtedly coax us into thinking we have to make resolutions at self-betterment. But are New Year’s resolutions still in? I’m not one to make New Year’s resolutions because it’s the same story every year. By March, I’ll start to slack off, and by April, I’d have fallen off the bandwagon completely. But that’s me. Some of you might still believe in resolutions. Most of us will pledge to live healthier, others will vow to be kinder to others. A number of us might even draw up a list of travel destinations to visit before the year ends. If you’re in the latter group, kudos to you, as travelling does add perspective to the challenges that we face every day. To help you decide where to travel in 2019, we turned to five well-travelled influencers for suggestions. They are CNN International host and anchor Richard Quest, award-winning travel influencers and Instagram stars Alyssa Ramos and Daniel James, our very own Malaysian “wanderluster” Mei Mei Chu, and Nepali-Australian Anna Sherchand. From Egypt’s colourful markets to Easter Island’s Moai statues, we hope their recommendations will inspire you to plan a visit of your own. Turn to pages 33-37 for our cover story this month.

That said, Kam has not left us entirely. We adore him so much, we asked him to take on a brand new section we created within our in-flight entertainment guide. From this issue onwards, Kam will review three films that are playing onboard each month. They aren’t necessarily the latest releases or fan favourites, just Kam’s take on some of the movies. If you’d like to know what Kam thinks of a certain movie, write to me and we’ll try to make it happen. For now, turn to page 70 to read what he thinks of Logan, Edge of Tomorrow and The Incredibles. Swings With Incredible Views Nothing beats riding a swing – unless it’s going on one with a view! The rush of the wind in our hair and the feeling of butterflies in our stomach as we are launched back and forth into the air brings back childhood memories, long after our days in the playground are over. We list four swings around the world that offer panoramic sights worth travelling for.

Sitting at 1,400 metres above sea level, Cau Vang – literally the Golden Bridge – looks like it comes from the set of a fantasy film. The unique 150-metre-long pedestrian bridge, located in the Ba Na Hills Resort near Da Nang, Vietnam, consists of two giant stone hands that seem to sprout out of the earth, supporting a slim golden bridge within its cusp. Aside from the bridge, the resort also has a medieval French village complete with squares and a cathedral, hotels, as well as attractions such as a shrine and a wax museum.

I am still a regular customer of Malaysia Airlines due to work-related activities. My most recent flight was from Bangalore, India to Kuala Lumpur. On that flight, I had the opportunity to read the September issue. The cover was very attractive about Gunung Mulu National Park in Sarawak. It may entice potential tourists to consider Sarawak as their possible holiday destination. However, what attracted my attention the most was the Photobook section. It highlighted the hopes and dreams of ordinary Malaysians post 14th general election. Everyone seemed to aspire for a better life and more prosperous nation. Kudos to Going Places for becoming one of the voices for the ordinary people. I have been a regular visitor to Malaysia and a client of Malaysia Airlines for over 20 years, but only recently discovered the benefits of your Business Promo fares on domestic routes for members of other oneworld partner airline programmes. As most of my travelling is within Europe, I accumulate my air miles and tier points with one of the other airlines, and in August this year, I took advantage of an excellent Business Promo fare to fly with my wife from Kuala Lumpur to Kota Bharu and back for our holiday on Perhentian island. The level of service and comfort as well as the very tasty satay served on board were all excellent, and the air miles and tier points that we earned more than justified the extra cost paid to fly in Business rather than Economy on this short flight. Exploring Movement Award-winning dance troupe BalletBoyz will soon present the London premiere of Them/Us, an innovative double bill featuring two new works set to original scores by returning BalletBoyz composers. Them is a unique collaboration involving the company’s own dancers, showcasing the individuality of the dancers through the company’s signature versatility of movement. The second part, Us, is inspired by the critically acclaimed duet by Olivier Award-winning choreographer Christopher Wheeldon that premiered in 2017, a tender piece that explores human connections. This collaboration with composer Charlotte Harding and singer-songwriter Keaton Henson asks where we see ourselves in relation to the “other”, exploring the fine balance between them and us.

Visitors will have a rare opportunity to see Orchids Of The Andes in Singapore, some 20,000 kilometres away from their native region. Around 3,000 orchids from 85 varieties are currently on display in Gardens by the Bay’s cooled conservatory, Cloud Forest. These rare varieties originate from seven South American countries – Venezuela, Colombia, Ecuador, Peru, Bolivia, Chile and Argentina, spanning a more than 5,000-kilometre mountain range.

Curious Cuisine Fans of Spanish jamon and iberico pork can satisfy their hunger at Kuala Lumpur’s Curious Kitchen. Located on the alfresco second-floor dining area of Tropicana Avenue, the restaurant is helmed by Spanish Chef Rainer Krieger and Malaysian Chef C.K., who work to bring the best out of slabs of iberico pork ribs, chops and tenderloin by cooking them over a charcoal and oak fire grill – just the way the Spanish like it back home. Previously attached to Dinner by Heston Blumenthal, Marzo leads the way in creating cocktails in the form of seasonal creations like the Olive Oil Royale (mandarin-pressed olive oil liqueur, sparkling wine, green tea extract), as well as innovative takes on classics like the Wattle Seed Negroni (roasted wattleseed, Tanqueray No. 10, Campari, Mancino Rosso Amaranto). Non-alcoholic drinkers will have a great time too: the zero-proof cocktails are no less impressive, featuring house creations like the Single Origin (ice-cold Houjicha, vanilla vinegar, apple smoke). For the full experience, opt for the Lûmé Looking Glass cocktail flight, which features four of Orlando’s favourite recipes, with snacks from the kitchen.

It’s a fine time for the sweet tooth to be in London, with the opening of Cakes & Bubbles, helmed by Albert Adria of the legendary elBulli fame. Housed in Hotel Café Royal on Regent Street, the dessert haven features a selection of treats that carry Adria’s playful yet precise approach that characterises his other restaurants like Tickets, 41°, Pakta and Enigma. Standout desserts include house-made donuts, fruit cakes, ‘Airwaffles’ with caramelised bananas, and chocolate Japanese ningyo-yaki cake balls. If there’s only one thing to try, it’s The Cheese Cake, a signature creation made with coulommiers cheese, hazelnut and white chocolate. Defining A Movement The Montreal Museum of Fine Art presents a major retrospective of one of the late giants of the modern art movement, Alexander Calder. Known as the man who “made sculpture move”, the exhibition, Alexander Calder: Radical Inventor, delves into the American artist’s personal archives, showing how his masterpieces came to life, from page to podium. Over 150 of the artist’s iconic mobiles will be on display and set in motion every day by one of the museum’s expert handlers. Larger Than Life

The Berlin branch of the Blain|Southern gallery presents The Grinders Cease, a mixed-media exhibition by contemporary British artist Mat Collishaw. Collishaw’s works are characteristically preoccupied with death, destruction and decay, and the works in this show pose no exception. The Grinders Cease features works in a variety of mediums, including photography, sculpture and painting, thus showcasing the depth and breadth of Collishaw’s practice. One of the exhibition’s most haunting series is the Last Meal On Death Row photography sequence that pictures the final meals actually requested by prisoners in Texas before execution. The show is a must-see from one of the contemporary art world’s most exciting figures.

Towering installations and works from British artist Julian Opie will take over the NGV International in Melbourne and its Federation Court this month. One of Britain’s most unique and influential contemporary artists, this is Opie’s first major Australian exhibition and he certainly makes a huge impression, creating the tallest installation ever erected in Federation Court. Towering to 13 metres at its tallest point, Opie’s city of skyscrapers fills the court area, reaching right up to its glass ceiling. Adjacent to Opie’s ‘city’, visitors can see a school of digitally animated fish appearing to swim through the gallery’s waterfall. Many of the artist’s most recognised animated and still life images will be on display at the NGV, while an interactive exhibition, Julian Opie: Studio for Kids, will provide little ones with hands-on digital activities made in collaboration with the artist. Nature Of Art The Piet Hein Eek, established by the Dutch designer of the same name, is an interior design studio, shop, restaurant and gallery all rolled into one. After stumbling across the works of Gabriel Roca on a trip to Tenerife, Eek felt compelled to introduce the artist’s works through his gallery. Gabriel Roca – Composing Nature explores the length and breadth of the artist’s oeuvre. Roca often uses objects found in nature such as pine needles, stones and volcanic sand from his local beach to create intricate images preserved in glass. The images and patterns he creates with natural material redefines the natural world and provides the viewer with a reinterpretation of our reality and environment.

It’s safe to say that most of us are guilty of taking the odd dinner shot. This month, the Foam Photography Museum in Amsterdam invites visitors to one of its most delectable exhibitions yet, Feast For The Eyes – The Story Of Food In Photography. The show explores the significance of food and its role in images through the ages via three distinct courses: Still Life, Around The Table and Playing With Your Food. Through these categories, the show presents the evolution of food photography, with works from Andy Warhol, Nobuyoshi Araki, Guy Bourdin and many more on display.

With all the designer goods you might desire, Emquartier is the mall of choice for the more discerning Bangkokian. Any decent tour of Bangkok will include a visit to a floating market. The liveliest and least touristy is at Khlong Latmayom. Here you can sample tidbits of Thai cuisine and pick up souvenirs from friendly locals off colourful boats scattered along the khlong (canal). Best of all, the market is only a 15-minute taxi ride from Wang Wian Yai BTS Skytrain station.

Tranquil Urban Temples Sitting on the west bank of the Chao Phraya River is one of Bangkok’s oldest and most revered temples, Wat Arun, or the Temple of Dawn. This is a must-visit for Buddhist culture enthusiasts and is best seen — as the name suggests — at sunrise.

As night falls, strolling lovers, athletes and people-watchers head to Benjasiri Park. Here, you can rent a swan and pedal out to the still water reflecting the city lights, or just take a breather by strolling amid the palms as the heat of the day fades away.

Modern Malls & Makeshift Markets Each floor of the towering Terminal 21 mall represents a different location — from Rome, Paris, Istanbul and London to the Caribbean. Aside from the usual international chain stores, there are plenty of independent market stalls selling unique products. The real treat, however, is the food court on the fifth floor, where you can find delicious (and cheap) local cuisine. The coconut ice cream is highly recommended!

Right next to the Grand Palace, Wat Pho is famous for being home to the reclining Buddha — a massive golden statue with a mystifying smile, lying in a temple of intricately designed flowers and jewels. The temple is free to enter, and it costs only USD3 (THB100) to see the sleeping Buddha. Don’t forget to wear long pants and keep shoulders covered if you’re a woman. Best visited at night, this densely packed warren of streets in Chinatown hosts all manner of stalls, offering some of the more daring and adventurous street cuisine that Asia has to offer. Just follow the fragrances that waft off every corner, and you will find your way to gastronomic contentment. The king of fruits, durian, has a unique spiky appearance, and an even more memorable smell. This much-celebrated fruit is a Bangkok favourite, and you would be wise to not leave the city without sampling it first, even if you do have to hold your nose!

Mingling With The Sacred & The Profane Thai culture is built on sacred foundations; these come to the surface every April at the Songkran festival, where for three days, water is thrown over all and sundry to symbolise the washing away of misfortune from the previous year. The narrow, bustling alleys of Chinatown — or Yaowarat — are lively every day of the year, but at

Chinese New Year, this excitement is catalysed with theatrical dragon parades, lion dances, firecrackers and more iconic red Chinese lanterns than ever. One of the most picturesque festivals in Bangkok is the evening of Loy Krathong, which usually falls in early November at the end of the rainy season on a full moon. Here, people gather around lakes, rivers and canals to pay respect to the Goddess of Water by releasing lotus-shaped rafts — lit up with candles and awash with the colours of flowers — into the water to drift away.

Eat Your Way Through Thai Culture A stone’s throw from Wat Pho is Thip Samai, a restaurant famous for Thailand’s signature dish, pad thai noodles, available

with seafood or as a vegetarian dish, washed down with freshly squeezed orange juice. Expect to queue for 45 minutes at least. Long ago, locals would quickly slurp miniature bowls of noodles after unloading cargo from longtail boats on the canal. Today, this style of eating is popular with students and tourists as it allows the sampling of several different flavours in one sitting. The most famous is Boat Noodle Alley, just north of the Victory Monument. They don’t call Bangkok the Venice of the East for nothing. Waterways cut through the heart of the city, and there’s no better way to experience them than with a river cruise. Riding an old restored wooden rice barge down the Chao Phraya river at dusk while dining on top-notch Thai cuisine and

Muay Thai tourism has grown in recent years, but even if you don’t want to get in the ring, this ancient martial art is also a popular spectator sport, and there are two big stadiums to catch a thrilling Muay Thai fight: Ratchadamnoen Stadium, the oldest in Bangkok, and Lumpini Stadium. Cycling might seem perilous in the chaos of Bangkok traffic, but colourful city backstreets offer peaceful exploration by bike — you can rent or sign up for a bicycle tour to guide you around the riverside temples and artefacts of the old city. The closest beach is several hours from Bangkok, but Flow House is an artificial wave machine and beach club in the heart of Bangkok that brings the waves and the chilled vibes to the city. This is a great way for the whole family to have fun, keep fit and cool off while enjoying some surfing and bodyboarding.

Tell us about Malaysia Airports Holdings Berhad (MAHB) and what services it provides.

Malaysia Airports manages and operates 39 airports in Malaysia – five international, 16 domestic and 18 STOLports (Short Take-Off and Landing airports) with operations in India and Turkey. Our business includes airport management, aviation services, commercial and retail, hospitality and training programmes.

In 2004, I joined KLCC Property Holdings Berhad as their Chief Operating Officer and Senior General Manager of Commercial. My portfolio included managing top-end commercial real estate and operations for various development components within the KLCC precinct.

As the custodian of major gateways into the country for the last two and a half decades, we are proud to have served hundreds of millions of people who pass through our airports. We are also proud to continue flying the Malaysian flag high through our presence overseas. On the Group’s Commercial Services division, we are responsible for the airports’ retail areas. We are tasked with reviewing and improving the mix of retailers and service providers to boost overall retail revenue per passenger. The division also devises marketing campaigns to drive retail sales and business strategies to grow retail concessions whilst diversifying its income portfolio by creating new revenue streams. Tell us briefly about your career and how you came to join MAHB.

I joined MAHB in 2016. I graduated from the University of New South Wales, Australia and my background as a Chartered Building Professional allowed me to start a career in quantity surveying and project management. My experience in the initial planning, marketing and sales of the award-winning 930-hectare Bukit Jelutong mixed development project at Kumpulan Guthrie Berhad was a turning point in my career. After that, I went on to oversee a business expansion by TDM Berhad, a listed vehicle of the Terengganu State Government. The expansion into property, F&B and healthcare in

What are the current trends for duty and tax-free sales at airports in Malaysia?

In recent years, sales of perfume and cosmetics have taken the lead to become the largest contributor to the duty-free segment. The sales per passenger recorded a double-digit growth of 12 percent at the Kuala Lumpur International Airport (KLIA) in 2017, and unsurprisingly, sales from the perfume and cosmetics category were the main drivers of this growth. We will continue to bring in more exciting brands from this category. We seek to offer more “retailtainment” and welcome innovations as we head towards the future of travel retail. Capitalising on these commercial developments, efforts are being made to ensure that we continue to entice travellers with exciting value propositions in order to stay relevant.

How is passenger growth in Malaysian airports?

International airports in Malaysia are strong contenders against those in our region. So far in 2018, we have recorded 49 million passengers entering Malaysia. The growth in the aviation industry places Malaysia at a very strategic location, especially with the influx of Chinese and Middle Eastern travellers. Being at the epicentre of the region’s travel retail growth, we will continue to leverage this passenger movement trend and maximise the opportunities that come along. What have been some of the challenges faced by MAHB in recent years in terms of duty and tax-free shopping?

With the retail industry in general moving towards e-commerce, we acknowledge the need for the travel retail sector to adapt to this phenomenon. Based on sales recorded by the Group in 2016 and 2017, duty-free shopping has seen a steady growth, contributing a substantial amount to non-aeronautical revenue. Digitalisation of the retail space does not

Transformation

The non-aero to aero-based revenue is currently at 50:50. We feel that this is a big opportunity for us. The current trend is that 60 percent of nonaero revenue is being seen at mature airports around the world. I am optimistic that we will be on par with other airports in the region.

Perfume and cosmetic sales are the largest contributor to growth in the duty-free segment

Could you please explain the difference between aeronautical and non-aeronautical revenue? What is the ratio between the two types of revenue generated?

The Group’s revenue can be broadly classified under aeronautical and non-aeronautical. Aeronautical revenue is mainly derived from the airport operations business, which entails the collection of passenger service charge (PSC), landing and parking fees, and other ancillary charges to airlines. Meanwhile, the nonaeronautical revenue is broadly derived from commercial activities in the airport operations business and the non-airport operations business.

The terminal expansion at LGK now allows an airport capacity of four million passengers per annum. Vegan and vegetarian diets will be embraced by more followers, but a movement that will be even more widespread will be “flexitarianism”, or a conscious effort to reduce, but not necessarily eliminate, the production of meat and fish that has a huge impact on the environment. Limiting meat consumption and increasing vegetable sources of protein are not only healthy for the planet but are an important part of a healthy diet as well. A third of all Britons have already made a conscious effort to cut out or reduce their meat intake, and eaters around the world will be making similar choices. The 1.6 million followers of Ryoya Takashima’s YouTube channel Peaceful Cuisine aren’t all vegan. They enjoy the elegant simplicity of his presentation, while reducing their intake of products of animal origin.

The digestive benefits of traditional fermentation methods have always appealed to the healthconscious, but that awareness is now going mainstream in a big way. “Fermented foods such as kefir, kimchi, kombucha and even traditional sourdough bread will take centre stage in 2019,” says London-based author and nutritionist Jackie Lynch of the Well Well Well Clinic. “Naturally probiotic foods support the growth of ‘friendly’ bacteria in the gut, relieving digestive symptoms and regulating the immune system, which makes them a highly effective health food.” Shelf-stable fermented foods will figure even more prominently in shops, and restaurant menus will include more ingredients fermented in-house. presents his menu storyboard-style in the form of a series of watercolour cards, telling the story of each such as the “Ang Moh Chicken Rice” his grandmother cooked for her Western tenants. Chef Massimo Bottura of Osteria Francescana in Modena, Italy, number one on the list of the World’s 50 Best Restaurants, says simply, “My cooking is about storytelling.” The names of his dishes such as “An eel swimming up the Po River” prove the point. Look for more and more chefs to follow suit, coming out of the kitchen with stories of their own to tell.

Forget about looking for the most authentic Mexican restaurant or family recipes from the chefs’ French, Japanese or Brazilian ancestors. You can even skip fusion, where Peruvian food meets Japanese, sushi collides with pizza, or French haute cuisine techniques are applied to just about anything. These days, chefs are looking beyond national identity to forge cuisines that defy the expectations of a particular label by avoiding the labels altogether. First-time Michelin star winner Chef Garima Arora of GAA hails from India, honed her craft beside the guru of Nordic cuisine René Redzepi of Noma, and now serves her food in Thailand. Dishes like her dip-able baby corn are nods to all those places while belonging to none of them. French food guru Alexandre Cammas coined the term “inclusivism” to describe the cuisine. Unclassifiable is the new black.

Beyond The Food Tour

Travelling for food is nothing new. Seeking out the cheesiest cacio e pepe in Rome is as much on anybody’s itinerary as a trip to the Coliseum. But food tourists are now looking for full-on experiences. They don’t want to just eat the pasta but learn all the secrets of making it themselves, too. In 2019, more people will pull on their wellies to wade into rice paddies or vineyards in Indonesia or South Africa. It doesn’t mean the end of the food tour, but travellers will join bespoke and decidedly un-touristy tours like those hosted by Culinary Backstreet in Istanbul’s multicultural Beyoğlu neighbourhood or Little Adventure’s tour in the overlooked outer islands of Hong Kong, where the people who make the food and the places they live are as important as the food itself. And that Italian pasta? Ask a member of Le Cesarine, a group of Italian women who invite visitors into their kitchens and to their family’s tables to share the traditional recipes they know best. ■

“The straw is a symbol of change,” says Marissa Parry of The Green Guerrilla, a group of advocates, formed in 2018 to champion environmental awareness, sustainability and conscious living. “We won’t save the world by not using straws, but it is changing our collective mindset. It comes down to the acknowledgement that every single thing we do as humans has an impact on the environment, and that has an impact on us in return.” Those behind The Green Guerrilla are from a diverse range of backgrounds, from fitness trainers and nutritionists like Parry to food bloggers, entrepreneurs and vegan athletes. They’re united not only by their commitment to the environment but also their impressive social media clout, which they’re using to take ecofriendly living to the masses.

The Last Straw

Eco-conscious collectives prove that small can be mighty by leading the charge against single-use plastic in Malaysia. Words Sharon Crowther

It is conservatively estimated that Malaysians use (and toss) somewhere in the region of 31 million plastic straws each day. That’s the equivalent of eight school buses, filled to the brim with used straws, headed for Malaysia’s landfills, rivers, coastlines and green spaces, every single day. Not convinced? Think about it: your morning smoothie, your kid’s juice box, your afternoon iced coffee, your weekend cocktails. Now consider that every straw you’ve ever used, your

entire life, is possibly still out there somewhere because plastic takes around 200 years to decompose. But, as of this month, single-use straws are officially off the menu in the federal territories of Kuala Lumpur, Putrajaya and Labuan, with full enforcement a year later. Many hope it’s only a matter of time before other single-use plastics are also struck off, not least the passionate individuals advocating for action as part of campaign groups and lifestyle collectives.

“Our planet needs everyone, not just those already inside the eco-bubble, to do better,” explains Parry. “The power of change lies within all of our hands. Saying ‘no’ to single-use plastic, to bottles of water, to plastic bags, to takeaway containers, to buying more clothes we don’t need, all of that can and does make a big difference.” Mareena Yahya Kerschot, co-founder of campaign group Tak Nak Straw, founded in 2015 and meaning ‘No Straws, Please’, agrees. She says the collective ‘no’ ringing in the ears of Malaysian businesses is what has and will continue to drive legislative change. “Our campaign started out by asking people to make a social media pledge to refuse plastic straws because then businesses will bend to consumer pressure and stop using straws,” she says. “When businesses stop using straws, that creates pressure on the government to follow up with legislation.” “It might seem like baby steps but when you add them up, those baby steps will take us far,” she continues. “Step one is straws, step two is

And that’s how it starts, one step at a time.” Tak Nak Straw’s next step is to reach out to rural Malaysia to educate people on the impact throwaway plastic has on the environment and the greener alternatives available. Straws, she says, are just the tip of the trash pile. “The challenge in our countryside is that businesses there, such as food vendors, are often 200-ringgit-a-day enterprises and they need incentives in order to be able to make changes that will cost them money. We need to find ways to make alternatives, such as biodegradable cutlery, affordable to even the smallest businesses,” she says. With necessity being the mother of invention, Mareena believes legislative changes ahead

could present an opportunity for entrepreneurial Malaysians. “We believe Malaysia can be the first country in Southeast Asia to completely ban single-use plastics and I believe there’s a chance for Malaysians to take a lead in developing alternatives to plastics,” she says. “We’re already seeing success with Orang Asli businesses making bamboo straws, for example.” Yasmin Rasyid, founder of EcoKnights, an environmental organisation that has been tackling issues including waste management and river eco-systems since 2005, says interest in the environment, generated by social media influencers, is also helping to throw a spotlight on other environmental issues such as waste management and sustainable consumption. “I’ve been in this sector for 20 years and there’s been a tremendous leap in public awareness, action and engagement in our programmes over that time,” she says. “Social media influencers are playing a huge role in that.” “The government recently announced its environmental roadmap for Malaysia and a plan to abolish single-use plastic by 2030. Part of our remit is to ensure the public are engaged with this plan, they see the benefit, and they throw their support behind it,” she adds.

In an effort to bring garbage more fully into public sight, EcoKnights members run regular river clean-ups in and around Kuala Lumpur where they invite people to roll up their sleeves and segregate waste collected in log booms. Yasmin says the “shock value” of this exercise is huge. “We’ve had up to 200 people turn out for these efforts and we run them for businesses as well as groups of social media influencers and the media. It’s a powerful thing when people are faced with their own trash, things like straws that they assumed just disappeared when they were done with them,” she says. “We live in such a convenience culture these days, it’s important that we face up to the impact that it has on our environment. Then we can make informed decisions on how we manage our lives and the choices we make every day with regards to takeaway cups and food containers, but also to household waste and consumerism.” Yasmin hopes the momentum behind environmental issues in Malaysia continues to grow. “We’re seeing a trend towards environmental issues in Malaysia, especially among millennials, which is a great thing, but to be sustainable, interest needs to outlast the trend. I hope we’re going to see a long-term generational shift,” she says. “Ultimately, my utopia would be the day that EcoKnights is obsolete because, in a perfect world, nobody would need us,” adds Yasmin. For Parry and her comrades, the next step is to translate this consumer trend into a business one, where bigger trash piles mean bigger wins for everyone. “As more individuals become conscious of their own footprint on the planet, we must hold businesses accountable and make them realise that being more sustainable improves their sales prospects to this growing market,” she says.

“In a good Spanish omelette, the outside should be perfectly cooked, but the colour should still remain yellow, while the inside remains soft and creamy. You can only achieve that by cooking the omelette at a gentle low heat and turning it over several times to prevent over-browning. A much-beloved comfort food of the Spanish, the tortilla de patatas or Spanish omelette is one of the most popular dishes at Marta’s Kitchen, her eponymous restaurant in Desa Sri Hartamas, a suburb in Kuala Lumpur. Marta applies a fastidious, almost military-precise approach to her cooking recipe and techniques. She must be doing something right: the restaurant pulls in over a thousand patrons weekly with its menu of traditional Spanish favourites. Highlights include croquetas de jamon (delicious deep-fried ham-and-bechamel balls), gambas al ajillo (chilli and garlic prawns), patatas bravas (deep-fried potatoes with aioli and a spicy sauce), and the unmissable paella, that intensely flavoured Valencian rice dish named after the flat pan it is cooked in. Testament to its popularity: the restaurant has sold over 30,000 plates of it since opening! Ironically, running a restaurant was never part of Marta’s plan, though growing up as the only girl among three siblings in Salamanca, a hilly province in Spain, she spent a great deal of time in the kitchen. As a child, she helped her mother make jam and tomato preserves and loved to frequent the butcher and fish market. Despite her passion for cooking, being a chef for Marta was absolutely “not an option as a job. Back then, we didn’t have all these fancy schools that turn out chefs.” She became a teacher and cooked mostly for her family until she was nearly 40, when she enrolled in a course to learn

3 the professional side of cooking in Holland, where she had relocated after her marriage to Dutchman Finn Leijnse. “The school had a restaurant that we students ran, but after a year or so, I left because it took too much time away from my two young children.” It wasn't until her husband, an IT engineer, relocated to Malaysia that the idea of a restaurant was mooted. Bored with the expat lifestyle, Marta conducted weekly cooking classes and started catering for small-scale events. When her husband’s contract was up, he suggested opening a restaurant. She was apoplectic, Marta recalls with a laugh, but after a good hard think, she decided to go for it. Her side hustle had swollen to the point that one weekend, she found herself having to cater to three events for 275 people! Her husband assured her he would go back to his original job after the restaurant was up and running, but that never happened of course. “Suddenly people discovered the place and were coming

Because the serving of food was small enough, people in Spain would hop from bar to bar sampling different types of tapas. “Here, we aim to bring together all the best tapas experiences under one roof,” Marta explains. Defining Spanish ingredients such as olive oil, lemon, garlic, parsley, oregano, paprika and pimiento, a sweet and hot spice, make a prominent presence in her repertoire. While Marta stays true to her Spanish roots, she sources her ingredients locally where possible, except for speciality items such as Iberico ham and cheese. For example, her husband goes to the Taman Tun Dr Ismail market four times a week to get seafood. Working with local ingredients does require some adjustments. "Did you know that tropical

Long hours, military precision, perfectionism – where is the fun part? “To see people enjoying the food. On Sundays, I have Spanish couples in their 30s with kids coming here and they act the same way like they would when they go to see their mum because they feel at home. Method: 1. Peel, wash and thinly slice the potatoes. 2. Soak them in water for

10 minutes. 3. Mince the onion. 4. Warm up the oil in

a pan. 5. Fry the potatoes and the onion at low heat until soft.

6. Drain the potato and onion mixture. Put aside. 7. Beat the eggs. Add salt and mix well. 8. Add potato-onion mixture into the eggs. 9. Warm up a pan with 15ml of olive oil. Pour the potato, onion and egg mixture into the pan. 10. After 30 seconds, turn

the omelette over to the uncooked side. 11. Repeat the action until omelette is cooked to your taste. 12. Serve on a round plate.

“Inikah tapak pasca bencana?” tanya hati kecil ini. Akhirnya kami tiba di Perusahaan Tembikar Xin Fa setelah mengharungi satu perjalanan singkat yang agak mencabar. Saya bagaikan terpaku seketika melihat longgokan kulit-kulit siput, guni-guni yang berhabuk dan timbunan papan di depan mata. Di ruang ini jugalah, tertimbun aneka tembikar dan mesin-mesin lama yang telah berkarat. Ah, akhirnya jumpa juga! Tanur naga sepanjang 150 kaki itu menjadi tumpuan di lokasi seluas tujuh ekar ini. Tanur bata panjang dibina menyerupai seekor naga dan dipenuhi kayu-kayu untuk membakar tembikar seramik. Hakikatnya, tanur naga seperti ini merupakan inovasi masyarakat Cina yang mula tersebar luas ketika penghijrahan masyarakatnya ke serata Asia Tenggara sekitar awal abad ke-20. Ipoh merupakan antara lokasi

terakhir di Malaysia yang masih mengamalkan tradisi warisan ini. Sebagai bekas hab perlombongan bijih timah, Ipoh kaya dengan bekalan tanah liat yang merupakan bahan mentah terbaik untuk industri pembuatan tembikar. Have I just stumbled into a post-apocalyptic site? Entering Xin Fa Pottery after a short drive over a gravel path, I am stunned momentarily by the sight before me: haphazard piles of cockle shells, dusty sacks and bundles of wooden planks share space with rusty machines and assorted pottery. Then I see it – the 45-metre dragon kiln that forms the heart of this threehectare site. Long brick constructions that are shaped like a dragon and fuelled with wood to fire ceramics, dragon kilns are an ancient Chinese invention that spread to other parts of Southeast Asia in the early 20th century due to migration. One place that did particularly well was Ipoh, as its tin mining industry generated lots of surplus earth, which in turn produced a steady supply of raw material for the ceramic industry. Chin Kam Peng, Xin Fa’s owner-partner, tells me that Ipoh’s earth (“thao” in Mandarin) is endowed with a special quality of resilience. “We found this out accidentally when a friend brought our pots to England for the first time. Our cargo reached the United Kingdom in the dead of winter. We were at first worried that due to the extreme change in temperature

Perusahaan Xin Fa atau lebih dikenali dengan nama asalnya, Sin Cheak Seng semakin maju sehingga berjaya menembusi pasaran Eropah, Amerika Syarikat dan juga Kanada menerusi pengeksportan tembikarnya. Pada zaman kemuncak industri ini, nama Ipoh cukup gah di persada antarabangsa sekitar tahun 1970-an dan 1980-an. Malangnya, industri pembuatan tembikar secara tradisional menggunakan tanur bata semakin pupus. Ini berikutan kemerosotan industri perlombongan dan ledakan pelbagai kilang berkuasa tinggi dengan kemudahan bekalan elektrik dan diesel di Ipoh.

Chin, bagaimanapun ada cara tersendiri untuk menghidupkan semula seni kraf lama ini menerusi bantuan beberapa rakan pelukisnya. Pada tahun 2013, Chin telah membina sebuah tanur bata kecil atas permintaan khas seorang pembuat tembikar artisan dan juga pewaris generasi ketiga seni kraf ini, Tan Vooi Yam yang ingin menghasilkan karya-karyanya untuk sebuah pameran. Menerusi usaha beliau, minat masyarakat tempatan terhadap seni yang kian pupus ini berjaya diberi sinar baharu. Atas dorongan seorang rakan artisnya, Eric Lai, sebuah lagi tanur bata kecil dibina bagi memudahkan golongan pembuat tembikar

profesional mahupun amatur untuk mendalami kaedah tradisional pembuatan tembikar. Selain itu, Xin Fa turut menjadi tarikan para pelukis yang suka menjadikan laman hijau dan strukturstruktur kayunya sebagai sumber inspirasi mereka. Di sinilah lahirnya pelbagai produk tembikar pada suatu ketika dulu hasil daripada usaha dan jerih perih ratusan pekerjanya. Setelah puas mengamati tanur naga tersebut, saya mula merayau di sekitarnya. Aneka jenis tembikar dan barangan bersejarah memenuhi seluruh tempat. Sambil mengambil sebuah mangkuk bersadurkan sepuh abu seakanakan kristal, Chin bersuara: “Inilah hasil sampingannya. Selepas dibakar pada suhu setinggi 1400 darjah Celcius selama 70 jam, abu kayu akan melekat pada permukaan mangkuk. Sepuh abu semula jadi terhasil daripada gabungan api, abu dan segala bahan mineral.” Satu serpihan tembikar yang berukir nama Sin Cheak Seng dalam tulisan diambilnya sambil berkata: “Inilah sisa peninggalan tembikar yang kami buat untuk satu lagi industri besar di Perak, pengeluaran kicap soya. Mengikut kaedah tradisional pembuatan kicap soya, kacangkacang yang telah ditapai akan dibiarkan kering di dalam bekas tembikar secara terbuka selama berbulan-bulan. Bekas-bekas tembikar dengan adunan ini perlu tahan lasak kerana tahap kemasinan dan suhunya yang teramat tinggi. Hanya kilang kami yang boleh menghasilkan tembikar seperti ini.” Menerusi penelitian saya, lokasi ini seakan-akan sebuah muzium hidup. Lantas, saya ajukan soalan terakhir: “Kenapa tak buang semua ini?” Sambil tersenyum sayu, beliau berkata: “Nak kata saya sentimental pun boleh. Bagi saya, inilah cebisan sejarah Ipoh. Saya dah lama simpan semua ini. Moga-moga suatu hari nanti, kewujudannya disedari dan nilainya akan dimartabatkan dalam lipatan sejarah kita.” ■

local artists, the ancient art might find a second lease of life. Local interest in ceramic art got a push in 2013 when Tan Vooi Yam, a third-generation pottery heir and ceramic artisan, approached Chin to construct a small kiln to produce artworks for an exhibition. At the urging of another local artist Eric Lai, Chin built another small kiln to cater for professional and hobby potters who wish to learn about wood-fired ceramics. Xin Fa also attracts artists who love to paint the foliage-enveloped yard with its abandoned wooden structures, where over a hundred workers once churned out ceramic ware by the lorryloads. After checking out the dragon kiln, I wander through the grounds, laden with all kinds of ceramic and clay pottery wares and historical memorabilia. Picking up a bowl of ash glaze that looks like crystals, Chin explains: “This is the by-product of 70 hours of firing at 1,400°C. Wood ash settles on the pieces during the firing, and the flame, ash and the minerals of

the clay interact to form a natural ash glaze.” Then he shows me a broken shard, inscribed with Sin Cheak Seng’s name inscribed in Chinese. “This is the remains of a pot that we made for soya sauce manufacturers, another big industry in Perak. In the traditional way of making soya sauce, the beans are fermented in salt and dried in the open air for months, so the pots holding the mixture had to be able to withstand extreme salinity and high temperature. We were the only factory that could make such pots.” Looking at my surroundings with new eyes, it dawns on me that this place is no less than a living museum. “Why didn’t you throw any of this stuff away?” I ask. A wistful smile spreads over Chin’s face. “Call me sentimental, but to me these are pieces of Ipoh’s history. I’ve kept them all these years in hopes that one day somebody would recognise their value and rightful place in our history.” ■

SAFETY + SERVICE INFO

CABIN LUGGAGE HANDLING Passenger and crew safety onboard our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This is to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. Passengers who are fit and in good health must carry, stow and secure their own hand luggages on board. Hand luggage exceeding the 7kg weight limit is required to be checked in before boarding.

PORTABLE ELECTRONIC DEVICES (PED) For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system.

LITHIUM BATTERIES Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.

ELECTRONIC CIGARETTES Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device in-flight is not permitted.

Our cabin crew reserve the right to decline serving and selling alcohol to any passenger who appears intoxicated. Consumption of personal alcoholic drinks is prohibited.

FRESH & FROZEN SEAFOOD Fresh and frozen seafood are strictly not permitted in check-in baggage. They may be accepted in cabin baggage, subject to the destination’s quarantine regulations. They must be properly packed and meet the cabin baggage weight and size requirements. A maximum of 2.5 kg of dry ice per passenger is permissible if dry ice is used to carry these items. We reserve the right to refuse carriage if the items are not properly packed.

As they are hunted by evil forces even stronger than themselves, they carry the frail Professor Xavier, played by Sir Patrick Stewart, who channels his Shakespearean training to become King Lear. Will they succeed? Will they survive? Normally, with a superhero movie, the answer is simple. Of course they will. I mean, they’re superheroes. They can’t die and neither can the lucrative movie franchise. The middle of the movie will be lots of smashing and bashing, laser beams coming out of their eyes, battleships flying through the air, and wall-to-wall music that makes you lose your superpower of staying awake watching a movie. But in Logan there is real danger. Right from the start, we see that Wolverine’s powers are fading and he’s earning a pittance as a limo driver. He looks diminished. We don’t know if he’ll survive. Logan has plenty of smashing and bashing, but it’s more like a thriller than the usual superhero movies. Logan is gritty, exciting, cruel, human and a perfect conclusion.

A family of superheroes have to live in witness protection as normal people because superheroes have been deemed a menace to society. Naturally, Mr Incredible hates his boring life as an insurance salesman and his children have to hide their superhero skills. But when an opportunity for a return to the old life comes knocking, Mr Incredible puts his entire family at risk, which sounds like a job for Elastigirl.

EDGE OF TOMORROW Because it was made all the way back in 2004, the animation for The Incredibles may not seem quite as plush as, say, Zootopia, but director Brad Bird (who made his name with The Simpsons) created such a complete universe that you instantly forget. With a humour that has proven to be unique in animated movies, Bird subverts and questions the superhero genre. For instance, what is the legality of superheroes? Can they be sued? And who designs their outfits? The answer to the last question is Edna Mode (voiced by Brad Bird), who insists, for good reason, “No capes!” With a visual style, soundtrack and super villain that are more early James Bond than your average superhero movie, The Incredibles has never been matched.

Is Edge of Tomorrow the best science fiction movie ever? Maybe not, but it’s definitely the best science fiction movie starring Tom Cruise, and when it comes to big-budget action Hollywood movies, nobody delivers as consistently as Tom Cruise. He dominates Hollywood in the same way that Jackie Chan dominated Hong Kong. Tom Cruise doesn’t have Jackie Chan’s martial arts skills, but both inject a vulnerability into their action sequences that helps make them become an excitingly believable contest for survival. Edge of Tomorrow is set in a near future when unbeatable, shape-shifting, metallic aliens have conquered Europe and only the island of Britain remains free. A publicity-seeking and cowardly Major (Cruise) is forced to join an international army’s D-Day attack on the beaches of France. The landing is a disaster, but Cruise finds himself in a time loop, repeating the same day. Can he break the loop? Can he enlist the help of the army’s true hero played by the sensational Emily Blunt? Packed with wit, thought and action, Edge of Tomorrow is an absolute thrill ride.

ARTIST OF THE MONTH

Kuala Lumpur-born singer and songwriter Talitha Tan burst into the music scene with her endearing personality six years ago. Her debut single Okay received heavy airplay and rave reviews, garnering 1.8 million streams on Spotify in 2016. A year later, Please Stay, her second single, hit one million streams on Spotify in less than 12 months. We caught up with the singer, who is also a fitness enthusiast, to find out what she’s been up to.

I started singing in the shower, like everyone else (laughs). But in all seriousness, I sing because I enjoy it. At that point, it seemed like it’s the only thing I felt like I knew how to do. I watched people like Kina Grannis and Tori Kelly on YouTube, and I thought, “if they can, why can't I?” I had a video camera. So I started posting up covers on YouTube. Eventually, I got noticed a little. Went for open mics, then started slowly getting called for performances. But never would I have ever thought I would have been where I am today.

Tom Misch, Charlie Puth, Billie Eilish, Jhené Aiko, they all make absolutely amazing music. It’s like when you listen to some music and you go, wow, this is some good stuff, I wish I wrote this. So yes, I want to be able to create music like they do.

Why did you choose a career in music?

Never quite liked studies. I’ve always enjoyed being practical. I’m horrible on paper until my parents begged for me to at least get a “Pass”, not even an “A” in my papers. I knew from the beginning I was only interested in pursuing music. Having said that, I do feel like I’ve missed out a bit on general knowledge that could be somewhat useful. So, kids, stay in school. But don't let it define you! How would you define your musical genre?

My songs don’t really have a genre. I’d say I’m a mixture of the music I listen to. A pinch of R&B, Indie, Pop and Acoustic. Have you had any professional training as a singer/musician?

Nope. Never. Not really. I had piano lessons when I was really young, but I can barely play anything now. It’s sad. I also took basic guitar lessons for a month and realised I could have learned all these on YouTube. My dad sent me for vocal lessons once because he insisted that I could not sing, but the teacher said there was nothing wrong with my singing and I never went back. How many original songs have you written? Which is your favourite, and where do you get your inspiration from?

I have written, I think, officially eight finished songs. I can’t really choose a favourite because the majority of them are close to my heart. I pour my heart into my songs. For inspiration, (I get them) typical(ly from) heartbreaks, but hey, they work! Any plans for an album of your own in the future?

What about your style icon? Anyone in particular influences the way you dress?

Not really. I just really love my Nike sports bra and short crop tops, and baggy pants or high slit pants because they are so comfortable, and I look super in them. We know you’re very much into fitness such as parkour, rock climbing, powerlifting. How often do you train and why is this important to you?

And not to forget, motocross! It’s something I’m quite proud of. I used to train every day without fail. But then, every time I pick up a new sport, I’d neglect the others. So, I’m sort of a jack of all trades but master of none. I’ve just always wanted to represent Malaysia for something. So, because I was committed to all these sports, I couldn't prioritise my music. Hence, writers block, et cetera et cetera. So, this year, I put the majority of the sports on hold to concentrate on writing and performing. And only on occasions, I get back into the sports I enjoy doing.

When did you get into singing?

You’ve also started acting. How do you feel about acting as opposed to singing on stage?

I wouldn't say I’ve gotten much opportunities to act, but I love it. I’ve always wanted to act. I love the idea of being able to be in someone else's shoes. Like I get to be someone else for a period. I think it also helps you appreciate who you are. I'm definitely an amateur, but I’m happy to learn if someone is willing to take me in. But of course, music is my first love. Performing and being on stage is my happy place. Performing for fans and people who have followed my journey means the world to me.

Definitely! What can we expect from you in 2019? You’ve collaborated with some of Malaysia’s best and international names in music such as SonaOne, Ali Aiman, Darren Ashley and Tatsuro Miller. What have you taken away from these collaborations, and which global name in the music industry do you dream of working with one day?

Everyone has different ways of working, but music is somehow able to bring us all together! I am so thankful to have been able to work with these individuals. I absolutely LOVE their work. Malaysia has amazing talent. I’m so glad to have been given the opportunity to work with some of them. I’ve got to say a big “Thank you” to Darren Ashley for
