these pages, you will also continue to find articles from the world of dining, fashion and the arts. Our Senior Writer Eris Choo kicks off the refreshed issue with an essay on finding gems hidden deep in the heart of Japan. As clichéd as it may sound, Chubu, straddling the regions of Kansai and Kanto, is where you will find the most authentic of Japanese experiences. The historic villages of Shirakawa-go and Gokayama with their steeply pitched thatched roof houses are outstanding examples of how people have adapted their traditional way of life to their economic and social circumstances. Next, Joanna Abishegam-David writes about the iconic Liberty department store in London. Founded in 1875 by Arthur Lasenby Liberty, the retailer of luxury goods attracts shoppers from around the world.

In our giving back to the community section, a group of eco-warriors have been quietly maintaining one of the most popular green lungs in Kuala Lumpur in their free time. Bukit Kiara is an immensely popular park among hikers, runners and bikers attracted to Its network of trails which spans 30 kilometres in a pristine jungle. Fallen trees, mud and other issues that render the trails unpassable do not get fixed on their own. Thankfully, they have their own guardian angels in TRAKS of Malaysia, a special set of environmentalists who want to keep it as natural as possible. TRAKS welcomes volunteers, with or without their own cangkuls.

The beginning of a new year is a time for newness and clean slates; a time to seize the opportunity to do things differently and hopefully, with a little more purpose. So in the spirit of the new year, I warmly welcome you to the refreshed edition of Going Places. In the past few months, the team has worked hard to come up with a design and content strategy for the magazine that would be reinvigorating but not wholly unfamiliar. The magazine’s essence has not changed. The core of the Going Places brand remains that of inspiring travel and our main stories will reflect that. We will continue to feature inspirational Malaysians and organisations that have made a difference to the country and her people through their work. Within
In other essays, we speak to the people who are passionate about the art of drinking tea. For them, to fully appreciate tea is to pay attention to its joys. It is a ritual not meant to be rushed through but one that allows the person to savour the colour, the fragrance and the flavour of the tea. The next time you pour yourself a cup of tea, take a moment to engage your senses to these feelings. Finally, the Tamils of Hindu faith will celebrate the rice harvest festival of Ponggal on 14 January. If you’re up in Penang, Little India will be a hive of activity where the entrances of homes and businesses will be decorated with sugar canes, bananas, mango leaves and turmeric leaves to symbolise sweet and bountiful blessings. In this issue, these stories and more will chart the next phase of our editorial journey. We hope you like the new way our stories are presented. In all the pages, we invite you to come with us as we move forward into the new year. Have a great 2018. ■

towns that dot the west coast of Peninsular Malaysia. But during the Japanese occupation in the Second World War, it was a key nerve point for the underground resistance. Sybil Kathigasu, wife, mother, nurse and, later, war hero, moved to Papan just days before Japanese troops marched into Perak’s capital of Ipoh, where she and her husband, Abdon Clement Kathigasu, a doctor, had been operating a clinic. The couple helped guerrillas hiding in the Malayan jungles just beyond Papan with food, medicine and information, and treated their injuries. The couple kept a shortwave radio concealed, tuning in to forbidden broadcasts. As food became scarce and inflation soared, Sybil worked to keep her family and friends fed through a combination of relentless effort and resourcefulness. Heeding the call for food security by the Japanese occupiers, she planted vegetables and added a bamboo fence, ostensibly to protect the vegetable plot. The house the couple lived in became a calling point for injured Malayan People's AntiJapanese Army guerrillas who were treated in secret. The house itself was adapted ingeniously; the tall bamboo fence helped people approach the house unseen from the main street, and a small room at the back was fashioned into an operating theatre. The couple's efforts put them at risk. The Japanese ruled in a climate of fear and sought information through a network of informants. Stories about their brutality were also spreading fast. In 1943, Sybil and her husband were betrayed to the Kempeitai, the military police of the

Japanese Imperial army. First her husband and later Sybil were arrested, accused of treason for collaborating with anti-Japanese guerrillas, a crime punishable by death. In the months that followed, they suffered barbaric torture as their interrogators sought to extract information from them. In her unfinished autobiography, No Dram of Mercy, written after the end of the war, Sybil talks about her torture. “They seemed desirous of battering the truth out of my body. Each unsatisfactory answer I gave – and they were all unsatisfactory – was followed by a dose of intense physical pain, administered in varying quantities and many different forms,” she writes. “They would run needles into my fingertips below the nail, while my hands were held firmly, flat on the table; they heated iron bars on a charcoal brazier and applied them to my legs and back; they ran a stick between the second and third fingers of both my hands, squeezing my fingers together and holding them firmly in the air while two men hung from the ends of the cane, making a see-saw of my hands and tearing the flesh between my fingers," she continues.
Sybil endured spells in solitary confinement, was forced to watch her husband being beaten, and in one particularly low point, her daughter Dawn was the pawn in a Japanese official's sadistic game of mental torture. He threatened to lower the sevenyear-old whom he had suspended from a tree into a fire below to make Sybil talk. Mother and daughter were saved by the intervention of another officer.

The Japanese found Sybil guilty of treason and sentenced her to life imprisonment, but by then the war was already nearing its end. In poor health, Sybil was freed in August 1945 and was later brought to Britain for treatment. While there, she underwent numerous treatments but she never fully recovered. She succumbed to complications from the injuries she sustained on 12 June 1948. Sybil, born Sybil Daly on 3 September 1899 to an Irish-European planter and a FrenchEurasian midwife in Medan on the island of Sumatra in today's Indonesia, was awarded the George Medal, the highest British honour for bravery, in 1947. I have been flying Malaysia Airlines for many years now. Numerous articles have been written. Many did make an impression and became useful information to be shared among friends and family. Your September 2017 edition is going to be one of the most memorable copies that I have read. The article ‘War Hero’ caught my attention. We celebrated Independence Day on 31 August and Malaysia Day on 16 September. Being a Malaysian, I celebrated it as an additional holiday, a break from the hectic work schedule, to be spent with family and friends. Never have I felt patriotic nor thankful for what I was given, being born in the 1980s. As a nation, we focus on creating a harmonious and prosperous society but how many of us really understand the meaning of patriotism? I have read much, watched enough and listened to countless experiences about wars, heroes and the bad guys. But this article proved something different. It makes my heart squeak like a little mouse feeling helplessly trapped. I cannot imagine what Sybil Kathigasu must have endured during the war, mentally and physically. All that for the future in which we now live in. The article has brought out the patriot in me, awakening me to never take our Independence Day as just another holiday. This story will be shared with my children and I will educate them on the real meaning of our Independence Day. Thank you for the wonderful article. LOW WEI LEON, Selangor, Malaysia

NEGARAKU! Malaysia! This magazine never fails to keep me abreast of the latest promotions on food, accommodation and the latest gadgets although I am always on the go. Thanks to the Editor for interviewing several corporate personalities on what it means to celebrate Malaysia Day in your September 2017 issue. And what a great effort to mention Raja Singham of Brickfields Asia College (‘Making Education Accessible’), who has invested in making education accessible freely for all via Edunation. Indeed, this is good news to be shared especially for the underprivileged students as we celebrate Malaysia Day because education is for everyone regardless of race and religion. PEK SIONG YONG, Selangor, Malaysia
It was refreshing to read about the rising trend of the sharing economy in the September 2017 issue articles ‘Come Together’ and ‘Grabbing for Success’. As we live in a world with finite resources, it only makes sense that resources are shared. Instead of buying my own car, I can use ride-sharing to utilise cars that would have been idle, taking up precious parking space. Instead of building more hotels, we can use rooms that would have been left empty for the occasional relative or friend who stays over. The shared workspace concept is catching up in Malaysia, optimising office space and resources required to run it. In some places, there are also “libraries of things” where people can rent or borrow things instead of buying and keeping them in storage. Thank you for bringing our attention to the sharing economy and hopefully encourage more people to participate in it. CONNIE LIEW, Sabah, Malaysia
“Lesson learnt. What’s next?” uttered my ex-superior who never gives up. Kam Raslan, in his article ‘Lord of the Ringtones’, learnt a valuable lesson through his epic journey when he lost his precious: a brand new, high-end phone. Reflecting on his life-changing experience, I believe that all of us should not abandon but continue to learn from our invaluable experiences that have enriched us as a united Malaysia for a greater Malaysia. Truly, this is in line with Going Places’ September 2017 issue celebrating Malaysia Day on 16 September by presenting intriguing and captivating true-to-life inspiring stories of Malaysian individuals who have gained important lessons by overcoming their respective challenges in business or in areas of personal expertise. As an Enrich frequent flyer member, it has always been my priority to fly Malaysia Airlines whenever possible. Collecting Enrich points is a huge motivation for me, not to mention the relatively high level of service quality that the airline offers. However, one of my usual gripes was how cumbersome it is to book a flight through the website compared with other airlines’ websites. The site is simply not user-friendly. I also find that the Enrich redemption system was severely defeating its purpose when most of the time, buying promo price tickets outright from the website is much cheaper than redeeming the points. So, imagine my delight when I discovered the revamped Malaysia Airlines website and Enrich redemption system. Now the website is a lot more user-friendly and does not require the user to key in too many details when making a booking, while the Enrich redemption system now makes much more sense as you can see that it correlates with the actual airfares that are being offered at the time. Definitely a TWO THUMBS UP from me! SHAHRUL EZANEE, Kuala Lumpur, Malaysia

Elevating KL’s Culinary Scene We all crave dining experiences that engage, delight and surprise. Who better to create an unforgettable dining destination than the team behind award-winning Troika Sky Dining restaurants? Perched in a duplex loft atop a chic boutique hotel with sweeping city views, Mr Chew’s Chinos Latino Bar – the brainchild of Eddie Chew and Christian Bauer – became the talk of the town when it opened in Kuala Lumpur’s buzzy Bukit Bintang enclave. Capturing Eddie’s passion for globetrotting and Asian roots, the menu takes the concept of shared plate dining to a new level by paying homage to his family recipes while incorporating South American nuances. In the skillful hands of Executive Chef James Thong and Chef Ivan Ong, ordinary appetisers, salads, buns, dumplings, fried snacks and entrees are re-interpreted into innovative creations that will keep the dining table abuzz: think pan-seared barramundi in a laksa-inspired broth and a taco-sushi roll hybrid with tempurabattered nori sheets. There’s even char siew made from catfish. Following its runaway success since opening in May, Mr Chew’s recently introduced a bento box-inspired lunch menu (RM45++, add RM15+ for dessert)
which rotates frequently so that guests can try something new with each visit. Don’t miss the city’s only dessert bar, where you can enjoy a six-course dessert degustation menu with either tea (RM60++) or alcohol (RM95++) pairing. For those with healthy appetites, we highly recommend the Sunday brunch, a sumptuous tasting menu that allows you to sample over 20 dishes for only RM140++. As you sip signature cocktails on the luxe retro armchairs, relaxing to the sounds of Latino music, while your eyes drink in the wealth of whimsical details such as the arresting wall mural of Empress Dowager Cixi that towers over the bar, you’ll realise that everything is meticulously pulled together to embody the avant-garde spirit of Mr Chew’s. No doubt about it, Mr Chew’s understands a quintessential dining experience is a feast for the senses. ■

Eating Together The latest addition to the slew of eateries at Kuala Lumpur’s Solaris Dutamas is Deuce, a casual modern European restaurant and bar. Offering sizeable platters meant for sharing, the space is warm and inviting, with an open kitchen, a wine cellar and an alfresco dining area overlooking the lively nightlife strip. Its open bar is equally appetising, holding a selection of hand-crafted cocktails such as the Bungarosa, Smoky Mendoza and more than 40 labels of wine that make for perfect pairings for every plate. Try the Octopus with Pickled Beetroot and Saffron Aioli, Duck Breast with Salted Duck Egg Crumble, or the Pan-Seared Snapper a la Tippling Club, which pays homage to the restaurant of the same name in Singapore.
Wine enthusiasts have a new reason to visit The Point in Damansara Heights, Kuala Lumpur, which renovated its second floor in mid-2017 from a casual lounge into a fully stocked wine bar. It now carries over 350 labels of wine (and counting), including a selection of French vintage wines – some dating back to 1934 – deemed good enough to be given Wine Spectator’s Award of Excellence. Highlights include 1980s vintages from Chateau Guillot, Chateau Giscours, and Chateau Latour. The bar also hosts monthly wine tasting events, so check their Facebook page for updates.

Dead Obsessed ‘Romancing the Skull’ at the Art Gallery of Ballarat in Victoria, Australia explores humankind’s obsession with the symbol of the skull with works from as early as 1493 to the present day. The exhibition looks at how it has been used to represent our own mortality, piracy, rebellion, and political and social issues. It also looks at how festivals such as Mexico’s Dia de Muertos (Day of the Dead) have embedded the symbol into popular culture. Portrait Of America
Mind Over Matter
This month, Berlin’s Buchmann Galerie presents a collection of two bodies of photographic work by Joel Sternfeld – ‘Stranger Passing’ and ‘To Joseph Palmer’. The former series of images comprises individual portraits taken between 1985 and 2001 in America, depicting people from different walks of life going about their dayto-day business. The latter is a selection of imagery dedicated to people with beards. Joseph Palmer was a 19th-century New England farmer who grew a long beard during a time when beards were socially unacceptable, and his choice caused him to spend 15 months in prison. Together, these collective images of individuals help to describe larger aspects of American society.
The National Gallery of Victoria in Melbourne, Australia hosts the Australian premiere of ‘Ensemble 2013’, created by Australian-born, Paris-based artist Mel O’Callaghan. ‘Ensemble 2013’ comprises a two-screen video installation in which the human body is tested to its limits. The short video is projected onto a 20-metre space across the two screens, with one depicting a single man and the other featuring his opponents who keep him at a distance using a powerful fire hose. As the man slowly begins to walk toward his opponents, the installation serves as a symbol for resilience in the face of violence.

A long-lost Leonardo da Vinci painting was recently sold at auction for the recordbreaking price of USD450 million. To my untrained eye, it doesn’t look like it was painted by Leonardo da Vinci because it lacks his otherworldly subtlety but if it was actually painted by the great Renaissance master, then it really wasn’t one of his best. It looks like something he did quickly to give to his landlord to cover three months’ unpaid rent or maybe he did it in his art class at school. But let’s say, for argument’s sake, that the world’s foremost art experts know more about these things than I do (it’s possible) and that it really is a long-lost Leonardo da Vinci, then USD450 million is not a bad price considering that it was bought for USD10,000 at an estate sale in New Orleans as recently as 2005. I can’t help thinking about the people who sold the painting for USD10,000 because I bet they are feeling very, very unhappy right now. It got me thinking, do I have anything lying around the house that might be worth something? I’m fairly certain I don’t have a long-lost Leonardo da Vinci but do I have something that has somehow gained in value despite years of use? You know, like a 2010 Honda Civic. Several years ago my mother finally wanted to sell her grand piano and I thought, we were going to be rich! I immediately started looking for my dream home in Tuscany, nothing fancy, just a palace overlooking Florence. But then I looked on eBay and found that the same pianos were being sold for GBP50. Old grand pianos for a mere GBP50? And the seller had to arrange delivery! Obviously I had to forget about my dream home in Tuscany, again.

Recently I was idly reading a book about funk music and I saw that a record by an obscure 1980s band from Washington DC called Trouble Funk was now considered to be a very rare collector’s item. I had that album! Back in the 1980s I had decided that I was going to be a funk music legend like Prince because I, too, am very “ghetto” (Bangsar is a ghetto, isn’t it?). So I put away all my Kajagoogoo and Flock of Seagulls albums and started studying James Brown instead and when I heard some music by Trouble Funk, I thought it sounded absolutely terrific. So I rushed out to buy their album. And then I rushed back home and listened to it intently and I thought “meh” and I never listened to it again. But the Trouble Funk album was now a collector’s item. I had it and it was in pristine condition. I’m going to be rich, I thought to myself as I started looking for my Tuscan dream home. For months and months I had to wait impatiently but eventually I made a trip to London and I immediately went to a second-hand record shop. I didn’t want the owner to know that I had a copy of Trouble Funk’s classic double-album In Times of Trouble, so I casually asked him if he had it. “That’s a collector’s item,” he said, impressed by my knowledge. So I casually asked him how much it’s worth. GBP15. A mere GBP15 for a collector’s item? GBP15 for an album that one reviewer on Amazon.com called, “This CD was defective because there was no music on the CD!!!” And yet he still gave it three stars even though there was no music on his CD because it’s that good. You just have to hold it to feel its greatness. The record shop owner was unmoved as I explained all this to him. “GBP15 is a good price,” he said. “And what’s it got to do with Tuscany?”
I have been told, I’m missing the point. I might not own anything that would be of any resale value but they are of enormous value to me. I’ve since given up thinking that my vinyl collection will yield any treasures. Even my Beatles albums would only be worth something if they were first prints from the 1960s and if there was a photo of John Lennon sitting on them. But, I have been told, I’m missing the point. I might not own anything that would be of any resale value but they are of enormous value to me. I wouldn’t part with my Beatles albums for anything in the world because I couldn’t imagine my life without them. Having said that, I’ve got a pristine copy of Trouble Funk’s In Times of Trouble. And if you’ve got a 2010 Honda Civic then we might be able to find a deal. ■

Recently back from their tour of Adelaide in Australia, the TV stars share highlights of their trip, and give tips to visitors travelling to their home city of Mumbai.
Mumbai, India
Adelaide, Australia
What do you love most about this city?
One thing about the locals.
Mumbai is home and the people are the best part of the city. It is always so welcoming and that is what visitors and newcomers instantly like about it.
The locals are really very friendly. They seem so full of life and love to tell you more about their city and what to do there.
Where would you take a first-timer to in this city?
What's so great about Adelaide is that it is a compact city with so much to do in and around it. You can either enjoy everything around the CBD – shopping, eating amazing food, walking along the Riverbank, visiting the famous Adelaide Oval, or you could head out to the beach or the hills in just 20 minutes. Even the airport is just 15-20 minutes from the city!
Every first-timer should visit the Gateway of India. This is one of the most historic parts of the city and the monument looks absolutely beautiful at sunrise and sunset. Just opposite the Gateway is the famous Taj Mahal, which is an absolute stunning piece of architecture.
The one experience that everyone must try. What is the one thing that the first-timer must do in this city?
Definitely take a walk along Marine Drive or what we call the Queen’s Necklace, which is a long boulevard overlooking the Arabian Sea on the south side of the city. Everyone’s favourite thing to do is to grab some chai and roasted corn from one of the street vendors or an ice cream from the famous Bachelorr’s and sit over the ledge on Marine Drive and look out at the sunset over the sea. Your favourite dish from here, and where might we find it?
Everyone who comes to Mumbai should try the Vada Pav, which is a favourite street food among locals. You can find this on any street in Mumbai, usually made by street vendors. It is also available in most of the local restaurants in the city. The best thing about the locals.
The locals in Mumbai are very warm and always willing to help you. Even with its massive size you can never feel lost in this city. Someone will come up to you and lend you a helping hand. Five words that sum up this city.
Vibrant, inviting, fun, sleepless, open-minded. Where might we find you at 1 am in this city?
Hanging out with our friends and colleagues at a bar or just chilling in front of the TV at home.
Malaysia Airlines flies 10 times weekly from Kuala Lumpur (KUL) to Mumbai (BOM), India
There are so many experiences that one can enjoy in Adelaide. The RoofClimb experience at Adelaide Oval is definitely one of them. It’s so much fun and you get great views of the grounds and of the city itself. Outside the city, Kangaroo Island is a must visit! It’s a stunning island just 25 minutes by air from Adelaide that will transport you to another world. If you want to see Australian nature and wildlife in their true form, this is the place. The one local dish everyone must try.
The food is just amazing. There is a great eclectic mix of places to eat all around the city. It’s difficult to pick just one dish. The best thing you can do here for free.
Go and enjoy the outdoor activities. It is so easy and accessible to head up to the hills for a hike or to the beach to enjoy a swim. Your favourite memory of this city.
Our favourite memory would have to be when we got to hug a koala and feed the kangaroos at Gorge Wildlife Park in Adelaide Hills. It was one of the best moments of our lives. Another favourite would have to be the tasting of the wine of our birth year at Seppeltsfield Wines. That was something really special! What was the best piece of souvenir you took home from here?
Loads of memories of all the experiences we’ve had on our holiday. There are so many unforgettable moments. Name something they have here that you wished you had at home?
Koalas and kangaroos!

Top Of
The Game Mark Raine, Vice President of Sales and Marketing at Mercedes-Benz Malaysia, tells us why the brand has remained the premium choice among luxury car aficionados.
Tell us more about yourself and your role as VP of Sales and Marketing.
I oversee strategies to achieve our defined targets from a brand, product, customer and sales perspective. This, of course, includes our marketing activities, which are planned to make our brand desirable and approachable, while steadfastly pursuing our claim to modern luxury. Additionally, my role in Malaysia has a regional scope covering markets such as Singapore and Indonesia which are part of the Southeast Asia II hub and other general distribution markets, including the Philippines and Papua New Guinea, all the way up to Indochina and Sri Lanka. Mercedes-Benz Malaysia has seen a year-onyear growth in terms of sales. Do you see this trend continuing in 2018?
3
Through the strong and collaborative partnership with our dealer network, this exceptional result was made possible. We will continue to increase our efforts to grow the business with steadfast focus on the customer, and target to increase our market share as well as footprint in Malaysia and the region. Based on our stellar track record and the confidence and loyalty our customers have given us, we are confident that 2018 will continue to see us breaking sales records, while strengthening our position as the Number 1 premium brand in Malaysia. Mercedes-Benz is a leader in the market for luxury cars. What would you say has contributed to its success?
We believe in and employ a customer-centric strategy, where we constantly pursue excellence. At the same, we are agile and quick to adapt to changing market situations. We also recognise the need for committed investments in the markets we operate in. In Malaysia, for instance, this has resulted in a total investment of over RM1 billion (USD245 million) since 2003. In the aftersales department, we are proud of our comprehensive network coverage, which offers an exacting standard of premium service. Last
but not least, our superior product portfolio is aligned to local requirements and customer tastes. All this ensures that we deliver on our founders’ promise of The Best Or Nothing in every car that we offer. How is the Malaysian market different from other markets in the region?
The Malaysian market has its own challenges and opportunities just like any other. We find that the Malaysian Mercedes-Benz owner or driver tends to be very particular about their luxury vehicle and has very high expectations about the overall ownership experience. In terms of product offers, we have been able to introduce very progressive technologies in the form of our Plug-in Hybrid Vehicles such as the E 350 e and C 350 e limousines due to attractive incentives offered by the government. This has enabled the Malaysian customer to enjoy our most modern vehicles at a great value. A hot topic today is about disruptive technologies, such as Uber and Tesla, and how it is affecting the automotive sector. How do you stay competitive?
We look at our business holistically from the perspective of our customer-centric
The luxury car market must adapt to the changing tastes of the discerning customer. Our customers appreciate a high level of individuality in our cars and the latest infotainment and safety features, therefore the luxury car market must endeavour to stay ahead of the game.

• What’s your favourite area to strategy. Together with our in-house partner Mercedes-Benz Financial, we offer a broad range of services for financing such as Agility Financing and Lease2Go, unique offerings that are tailored to the Malaysian market to offer an ownership experience of a different kind that isn’t necessarily outright. This allows our customers the freedom to experience new Mercedes-Benz cars over shorter intervals. We also pay very close attention to innovation as evident in our automotive technology leaders – the plug-in hybrids – which are our new bestsellers. Tokyo and Osaka have always been prime tourist destinations, so it’s not surprising that the Chubu region remains relatively undiscovered, a well-kept secret enjoyed by the locals. For those craving an escape into the countryside, Chubu has much to offer in terms of nature, history and culture. Literally translated to ‘central part’, it covers nine different prefectures in the middle of the country’s Honshu mainland. The best way to travel around Chubu is by bullet train, or Shinkansen, as it connects to many major cities around the region.
Nagano: A Spiritual Sanctuary
goingplacesmagazine.com | 40 | January 2018
Follow the path of pilgrims to the city of Nagano, home to Zenkoji, a seventh-century Buddhist temple and one of Japan’s most important religious sites. Legend has it that the first statue of Buddha to be brought into the country is enshrined here but kept hidden, even to the temple’s chief priest. A copy is shown to the public every six years, with devotees coming from far and wide to witness the ceremony. To enter the temple complex, visitors walk through a massive niomon (guardian gate) before arriving at the main shrine, rebuilt in the Edo era after fires and earthquakes razed previous buildings. Inside is a wooden statue of Binzuru, a physician said to be one of Buddha’s most intelligent followers. The statue’s features have worn down over the centuries on the belief that touching it can cure one’s ailments. An experience not to be missed is the walk through a pitch-black corridor underneath the shrine’s altar. Bereft of sight, you’ll have to rely
Kanazawa: Reliving History Just an hour away from Nagano by bullet train is Kanazawa, a city known for its rich art, culture and history. The city escaped air raid bombings in World War II, leaving most of its old buildings and streets intact. Like many places that flourished in Japan’s feudal era, it was built around an ancient castle. Adjacent to it is the city’s most popular attraction, the 11.4-hectare Kenrokuen. Dubbed one of Japan's three best landscaped gardens, it houses over 8,000 trees from 183 species of plants, and features a large man-made pond, hills and teahouses. Relive the scenery enjoyed by the lords and ladies of old as you stroll through the grounds, and look out for the oldest fountain in Japan which operates by natural water pressure. Kanazawa is one of the few places in Japan that still retains its authentic geisha districts. The oldest is Higashi Chaya Gai, which dates back to the 1820s. Admire the unique architecture of the dozen-or-so original wooden chaya (teahouses), built along a wide cobblestoned path. While many of these have been converted into cafes and souvenir shops, two teahouses are still open to the public: Ochaya Shima, which has been preserved as a museum, and Kaikaro, a working geisha house that hosts exclusive events at night for wealthy guests.

For those craving an escape into the countryside, Chubu has much to offer in terms of nature, history and culture.
Ringed by mountains, Gokayama is a UNESCO World Heritage Site famous for its traditional thatched roof farmhouses called gassho-zukuri, literally ‘prayer hands’. The roofs are designed to withstand large amounts of snow that fall in the mountains in winter. Due to its remote location, many age-old customs and practices such as the making of washi (traditional fibre) paper and the playing of traditional instruments are still alive and well. Stay overnight at an inn in Ainokura Village, home to about 60 villagers whose main source of income comes from farming and agriculture, and enjoy breathtaking mountain views and fresh air in a lush sea of greenery. The local shrine, located in a grove near the village, is extremely picturesque. If you’re up for a climb, take a 15 to 20 minute hike up the side of a hill to a vantage point that offers gorgeous scenery of the valley below, dotted with vegetable fields and flower gardens.
Hida: Steeped in Tradition Surrounded by forests and hills, the Hida area was once known for its highly skilled carpenters
and woodworkers. Today, the region retains much of its rural charm in the form of terraced rice fields, fruit farms, traditional wooden houses, as well as homely mom-andpop stores. Pay a visit to Hida Furukawa, made famous by the anime blockbuster Kimi No Na Wa (Your Name). Picturesque locations such as the town’s train station, as well as old streets and buildings were used as backdrops in the movie. Capture these on a cycling tour or explore the town on foot, past canals stocked with fat Japanese koi, as well as sake breweries that are easily distinguished by the giant sugidama (cedar ball) hanging from their entrances. A short drive away is the Old Okuhida Onsenguchi Station in Hida-Shi, where innovative locals have converted a former railroad track into a unique tourist attraction. Mountain bikes are fixed to the threekilometre track with a guide roller, which moves forward by peddling. Riding on the trail allows visitors a closer look at nature, as it passes through areas with amazing views of the surrounding countryside.

Just 30 minutes from Hida Furukawa is Hida Takayama, another well-preserved rural city. History buffs should stop by Takayama Jinya, built as the local government office to cater to officials and their families who were dispatched from the ruling capital of Edo (now Tokyo). It remains the best-preserved example of a local government office from the Edo era, and rooms have been recreated as closely as possible to how they were in the 18th century. Expect to see spacious tatami mat rooms that once served as offices, meeting halls and residential spaces, interspersed by wellmaintained courtyards and gardens. There are also interesting exhibits of furniture and a museum carrying official documents and letters of past feudal lords, their belongings and weaponry.

Alternatively, rise early to join the throng of locals to Miyagawa Morning Market, located next to the roaring Miyagawa river. Here, you will find fresh produce, souvenirs as well as street snacks like beef and corn sold fresh off the grill. Before leaving town, remember to get a sarubobo (baby monkey doll), a popular souvenir in Takayama. Traditionally made by grandmothers for their grandchildren as good luck charms, the featureless dolls are usually red, but modern variants also come in pink, blue, green, yellow and more.
Nagoya: Blend Of Old & New After the idyllic countryside, Nagoya is a drastic change of pace, with its tall, modern buildings and huge shopping complexes. It is the largest city in Chubu and serves as a busy port. The city’s central point is Nagoya Castle, the home base of the powerful Tokugawa Shogunate in the 17th century. Surrounded by cherry blossom trees, the castle was renowned for its beauty, but was destroyed by bombing during World War II. Visitors can see a restored version of the main keep, with its slanting green-tiled roofs topped with a pair of golden
7 kinshachi (mythical dolphins), though the inside is now a museum and bears little resemblance to its original interior. Within the castle grounds, people dressed up in ninja and samurai costumes add to the atmosphere. At night, Nagoya comes to life with lights, as locals retire to bars, izakayas (gastropubs) and karaoke joints for well-deserved rest and relaxation. For those keen on shopping before heading back to Tokyo, there is Oasis 21, a huge modern shopping facility next to the Nagoya TV Tower. Mostly built underground, the structure’s most attractive feature is its large oval glass dome, filled with water to create a stunning visual effect. ■

• Although revered as a sacred mountain, this does not stop thousands of hikers who ascend its slopes each year. It takes six hours to climb to the summit. • The best place to view Mount Fuji is from its five surrounding lakes, namely Kawaguchiko, Yamanakako, Shojiko, Saiko and Motosuko. • From Tokyo, the mountain is a 45-minute train ride via the Shinkansen and two hours by bus. From Nagoya, it takes 110 minutes by rail and two hours by bus.

There’s a nip of frost in the air, mingling with the smell of roasting chestnuts, as the crowds throng Regent Street clutching candycoloured shopping bags. Shopfront windows, artfully packed full of gorgeous ware, draw in shoppers like honey for bees. Welcome to London’s West End – one of the world’s most prestigious shopping destinations, hosting over 70 million visitors a year. Stylish retail premises, tucked in the Grade II-listed Georgian façades, represent some of the most distinguished architecture in London, but
none catches the eye as effectively as the 1920s mock-Tudor splendour of Liberty of London.
Homage To Bazaars Of The East Stepping into Liberty is a quintessentially romantic and quirky retail experience that only the British can provide. Like walking onto a stage set fashioned after an Eastern bazaar, the label’s deeply covetable collections are housed in atmospheric wood-panelled rooms, full of open fireplaces, lead-glass windows, and armchairs upholstered in their trademark
prints. The original wooden staircase links one floor to another, full of unique luxury gifts, from jewellery, beauty products and designer fashion, to vintage ornaments and classic homeware. But the star of the show is undoubtedly the fabric. On the haberdashery floor, surrounded by bales and bales of cotton, linen, and velvet, coloured in a hue of rainbow shades, is where the true glory of Liberty lies. Fabrics produced in stunning colourways – from majestic purples to cerulean blues, from deep saffron shades of yellow, to sober metal greys, from a hundred

hues of burgundy, to the deepest blush of pink, not forgetting a forest of emerald greens, with an abundance of floral and paisley and a myriad of other prints. Liberty fabric is at once arresting and exquisite, venerable, admired, esteemed and most importantly, loved.
Where It All Began The story of the grand London store had a humble beginning. An apprentice draper by occupation, Arthur Lasenby Liberty was a man of great vision and ambition. After a decade of working in the fabric business, where he learnt the secrets of textiles, in 1875 he decided to buy the lease on half a shop, financing it with a loan from his future father-in-law. He grandly named it the East India House, later changing its name to Liberty & Co.

“I was determined not to follow existing fashion but to create new ones,” Liberty once said of his approach to style and design. His influence took hold on the burgeoning fashion trends of the 1870s and 1880s, playing a key role in fashion movements from orientalism in the 19th century, through art nouveau and art deco in the early 20th century.
Returning with jewel-coloured rugs, beautiful fabrics and unusual handicraft, he sold these in his store. As demand and his appreciative clientele grew, he started importing undyed fabrics like Mylore silk from India, getting them dyed and hand-printed in England, but in the oriental style he loved. Working with English textile designers like William Morris and Gabriel Rossetti (associated with the Pre-Raphaelite brotherhood and the English Arts and Crafts Movement) and silk dyer Thomas Wardle, Liberty introduced pastel tints (known as Liberty colours) and exotic prints for his little store. Liberty started marketing his fabrics as ‘Made in England’, which was the start of the iconic British brand.
The 1920s saw the introduction of miniature florals, paisley and abstract prints known as Liberty Prints. Till today, these are absolute best sellers with classic designs from the store’s enormous archives being revisited over and over. These were printed on the beloved Tana Lawn fabric, which quickly became Liberty’s bestselling fabric.
Growing From Strength To Strength Within 18 months, Liberty had repaid the loan and acquired the second half of 218 Regent Street. As the business grew, neighbouring properties were added to the original premises. The basement of the store was named the Eastern Bazaar, filled with stunning home interior

objects, and in 1883, the fledgling emporium expanded to include a clothing department. “I was determined not to follow existing fashion but to create new ones,” Liberty once said of his approach to style and design. X Marks The Spot With a legacy steeped in the Arts and Crafts movement, it’s a huge credit to the craftsmanship of the Liberty brand that it has seamlessly sashayed into the 21st century. A combination of innovation and fruitful collaboration has always been the mainstay of Liberty and its success. Since its early link with designers like William Morris and Arthur Silver of Silver Studios, it has gone on to work with other big names in the industry, always retaining its original ethos and style within the collaborations. Pairing with the likes of Jean Muir, Cacharel, Yves Saint Laurent and Vivienne Westwood, the brand has now seamlessly embraced the youth market as well. Today, Liberty’s distinctive floral prints adorn some of the hottest fashions
in the industry in phenomenally successful collaborations called Liberty X. This has seen the brand team up with Barbour, House of Hackney and Manolo Blahnik to the delight of its fan base, but the buck literally doesn’t stop there. The list has grown to include Nike, Vans, Uniqlo, Anthropologie, Hypebeast, J Crew, Supreme, The North Face, Dr Martens and Fred Perry, just to name a few. The Liberty Design Studio creates more than 120 prints and patterns annually, collaborating with artists, writers, craftsmen, architects and illustrators. New textile collections, by in-house and freelance designers, are added to the collection each year. However, classic prints from as far back as 1880 – such as William Morris’ Strawberry Thief – are reintroduced to complement the season’s designs. It’s no denying that the legacy of Liberty is a lasting one. From fabric prints so distinctive, you can spot them a mile away, to a fan base that includes the royal family (Queen Elizabeth wore summer frocks made of Liberty Tana Lawn) and rock royalty, to stylish Japanese teenagers, the floral motifs associated with a quintessential Englishness embody everything about the charm and quirkiness that Liberty prints proclaim. And who doesn’t want a part of that! ■

Put The Kettle On
Tea takes the limelight as the latest cool caffeine buzz. Words Tan Lee Kuen | Photography SooPhye

Each preparation of the leaves has its individuality, its special affinity with water and heat, its hereditary memories to recall, its own method of telling a story. - Kakuzo Okakura from The Book of Tea.
Discovered in ancient China, tea has a long and complex history. Known for its flavour and restorative properties, the consumption of tea spread across the world over thousands of years, embraced and adapted to suit local tastes. In Malaysia, our national drink is the teh tarik or pulled milk tea. The humble tea may be the world's most consumed drink after water, but as an up-totrend drink, it hasn't had the hip factor of coffee, especially with younger consumers. That could change in the Greater Kuala Lumpur area with a wave of tea-led outlets that are upscaling the tea drinking experience. Enter Chocha Foodstore (facebook.com/chocha. foodstore) in Chinatown. One of the loveliest eateries in Kuala Lumpur, a feat in a town laden with good-lookers, Chocha (which means sit and drink tea in the Hokkien dialect) concentrates on tea as a means of pairing it with modern Asian food.
experience for people, as long as you respect the tea," says Shin Chang, co-owner and architect. The curated tea menu has several categories: black, green, white, dark, oolong and even raw pu-er. Familiar names such as Ali Shan Cha mingle with more unique varieties; try the bold and smoky Lapsang Souchong, which pairs well with the robust flavours of Chocha’s Bang Bang Chicken. Shin and his partners, all avid tea drinkers, regularly update the tea menu, with some varieties coming from their collections.

When it comes to drinking tea, the Japanese have elevated the practice into an art form. The tea ceremony in Japan, refined over several centuries by Zen Buddhist monks, is as much about life as it is about aesthetics and religion. It is also associated with matcha, a premium powdered green tea, which is currently trending as a superfood ingredient.
The brainchild of an architectural firm, MentahMatter Design, Chocha Foodstore sits on the premises of an abandoned hotel, which currently also houses a cocktail bar and offices. The café with original pastel-tiled lined walls, exposed concrete and a courtyard lined with plants attracts the Instagram-snapping, cafégoing crowd who come for the food and the ambience, sampling the tea along the way.
"When you talk about matcha, it is green tea. But we want to show that green tea is more than just matcha," says Kaoru Obana, the manager at Tea Press (facebook.com/TeaPressMY), a Japanese tea roaster and café with branches in the neighbourhoods of Damansara Uptown and Bangsar. Operated by the Tokyo Takuhai Group, this elegant café wants to promote the art of drinking tea, Japanese-style, in a contemporary setting, complete with bright blue frontage and cool marble counter tops.

longer than your typical green tea to produce a less astringent flavour with more body and sweetness. Once brewed, the sencha is steeped another two times, each time producing a different taste. The first produces a lightcoloured green tea with a strong umami flavour. The second has a strong green colour and an obvious bitterness that hits on the first note, called nigami. The final pour has what the Japanese call shibumi, which roughly translates as “the bitterness that is found at the back of your throat”.
Lee soon realised, however, that some flavours were slow to catch on. "Malaysians don't like yoghurt or herbal teas. They like flowers," says Lee. "They prefer tastes that they are familiar with, like lemongrass and chamomile." To revamp her tea menu, she worked with a local tea master to concoct a selection of blends that are more in line with the local palate. The hand-brewed teas are named after romantic movies and have healthful aspirations: In The Mood For Love, made up of roselle, black dates and lemon, is advertised to lower blood pressure and cure hangovers.

Other types of tea here include the roasted hojicha and genmaicha, sencha with roasted brown rice, as well as the prized gyokuro, also known as the king of Japanese green tea. "The quality of our leaves is very high, and it is strong tasting," says director Yoshiki Nagai, who recommends having the tea with wagashi, such as the best-selling strawberry daifuku. In the Japanese tea ceremony, the beautifully crafted Japanese confections provide a sweet counterpart to the bitterness of the tea.
A firm believer of the goodness of tea for mood and health, Lee cheerfully continues to encourage her customers to broaden their palate. "It is easy because I have a passion for it." ■
Meanwhile, Joan Lee concentrated on European loose tea leaves for her menu at Tea Verandah (teaverandah.my). The tea lounge, situated in Atria Shopping Gallery and The Starling mall in Petaling Jaya, offers a good range of all-natural herbal infusions and tea blends, sold alone or as part of popular tea sets. Not all superheroes have capes; some wear cycling gear and carry saws. Meet the mountain bikers turned ecowarriors protecting a green lung of Kuala Lumpur. Words + Photography Sharon Crowther
goingplacesmagazine.com | 58 | January 2018
Under the intense midday heat and a canopy of lush tropical foliage, just steps from Kuala Lumpur’s TTDI Park, a team is hard at work on the trails of Bukit Kiara jungle with shovels, saws and large knives known as parangs. Wiping rivers of sweat from their faces, they form a human chain to transport boulders and stones from deep within the jungle to rebuild a stable, cobbled surface for mountain bikers. Later, they'll build steps for walkers alongside the cobbles, using planks of wood from a disused footbridge. This is the second Sunday of the month, which means it's the Trails Association of Kuala Lumpur and Selangor's (TRAKS) trail repair day. This month's effort is led by jungle enthusiast and TRAKS member Martin “Gillie” Gilliland. “This part of the trail's been eroded by rain water for awhile now,” he tells me. “It gets a lot of action from bikers, runners and hikers because it's right by the park, so our aim today is to make it rideable again and build a side trail for foot traffic.” Like the rest of his team, Gillie is an avid mountain biker, and Bukit Kiara is home to some of his favourite trails. “It's just an incredible place to be,” he enthuses. “Once you leave the paved roads behind and you get the dirt under your tyres, you just completely forget you're in the middle of a city.” It's true. Deep inside this green lung, as it's affectionately known, long-tailed macaques swing high above black forest scorpions, pythons and cobras. Even the occasional crested serpent eagle can be spotted in quieter corners of the jungle. Gillie’s love of Bukit Kiara is what led him to join the non-profit TRAKS as a trail maintenance leader. He supports the organisation in the ongoing battle to save the treasured green space by having it officially gazetted as a permanent and protected forest reserve.
“It's hard to believe a resource like Bukit Kiara could possibly be under threat. You look around and you see people everywhere enjoying the great outdoors, being active, connecting with nature, breathing fresh air,” says Gillie. “I can't even put into words what a loss it would be to Kuala Lumpur if Bukit Kiara disappeared.” And yet, this ever-shrinking jungle is a phenomenon that other TRAKS members are all too familiar with. Scott Roberts, former president of the association, has lived in Kuala Lumpur for 26 years, and he's been running and riding in Bukit Kiara since 1995. “Bukit Kiara was a very different place when I first started running in there back in the midnineties. It was a much larger area, around 1,000 acres (400 hectares), and the trails were mostly left over from the old rubber plantation,” he says. “It was a really wild place, and new users of the trails could get lost easily, particularly since we didn't have GPS and Google maps back then.” Over the years, various intrepid mountain bikers mapped the area and expanded its trails into a 37-kilometre network of steep ups and downs

that wind around one 300-metre central peak. Maps attracted more mountain bikers as well as runners and hikers, and as the years passed, Bukit Kiara became known for some of the best recreational trails in Malaysia. Sadly, over the same period, developments squeezed the borders of the jungle, and a golf course and equestrian centre also claimed chunks of land. “The jungle as a whole is being eroded like the trails erode, slowly and over time but very noticeably. It's being eroded by greed, and if we don't take action now, there won't be anything left to save,” says Roberts.
can't hear vehicles, it's just incredibly peaceful. We want to keep it that way,” he says. Their final commitment, the one which demands the most sweat equity, is to maintain the existing trails and protect them from weather and human erosion. “I don't believe people really understand how much work goes into keeping Bukit Kiara in the shape it's in or how the work we do relates to their hike or run or Sunday bike ride,” admits Roberts. “Every trail you hike, run along or bike on needs maintenance at some point in time. There are literally thousands of people using these trails every week, mostly on weekends, and they don't just repair themselves by magic.” In fact, in addition to the monthly trail repair session, the TRAKS team works on trails on a near-daily basis, clearing trees and branches after storms, redirecting flood water and ensuring erosion is dealt with quickly. They even call their WhatsApp instant messaging group “Trail Fairies”.
run it once a month, and the turnout is usually pretty good. But my fear is that attitudes won't change quickly enough to make a difference and save the jungle.” Roberts says there are lots of ways for people to get involved with the work, and newbies are always welcome. “Become a member for starters, contribute to our tool and timber fund, spread our work and message on social media, tell people about the cause,” he says. “Or better yet, come along to the trail maintenance days and you'll learn how to repair a trail, channel water to prevent further erosion and to make it sustainable for years to come. Topping it off, always carry a saw and a hatchet to clear fallen trees while you're out biking or hiking in the jungle. The more people who get their hands dirty and take ownership of Bukit Kiara the better. It's your jungle and it's yours to lose and that will happen if people don't get involved.” ■

“We have over 2,000 members but probably less than 100 active members, people who take a visible role in helping with our work. We find that there's a large silent majority in Kuala Lumpur, people who love using Bukit Kiara recreationally, and agree with us that it should be gazetted, but they're apathetic about doing anything about it,” laments Roberts.
Roberts explains that TRAKS' mandate is, first and foremost, to have Bukit Kiara formally preserved as a permanent green lung. Its secondary mission is to keep the jungle as a jungle. “Kuala Lumpur has plenty of parks with paved roads and manmade lakes. Bukit Kiara is unique because it's wild and largely untamed, and that's what makes it so special. You step inside and it's just serenity. You can't hear construction, you

Chua Tor Aik | CHEF’S CUT
The Food Explorer From studying law to working in one of the world’s best restaurants, Chua Tor Aik isn’t looking back. Words Zurien Onn | Photography SooPhye
When Chua Tor Aik opens his own restaurant one day, he plans to serve cuisine influenced by different times in his life, succinctly summing up his experiences in training as a chef: cuisine prepared using French technique, based on Nordic food philosophy, with Malaysian flavours.
goingplacesmagazine.com | 61 | January 2018
A former law student in Malaysia’s Penang state who felt that the legal world wasn’t his true calling, Chua decided to explore his options by getting a job rather than spending money on education somewhat aimlessly. As there were many vacancies for chefs at restaurants, he decided to join the culinary field. From there, his passion grew, and he enrolled at the Malaysian branch of Le Cordon Bleu, the internationally renowned school of culinary arts and hospitality. Following his graduation, Chua worked at a French bistro in Kuala Lumpur, and then, through the Chefs Association of Malaysia, joined the Malaysian team to compete at international culinary competitions. At the Food and Hotel Asia Culinary Challenge in 2014, the team won a few medals, but Chua felt that wasn’t good enough. He had met competitors from other countries, including from Sweden and New Zealand, and noticed that the Malaysian team was not as widely exposed as these chefs. Chua observed that the Europeans had worked at Michelinstarred restaurants and were willing to travel to gain experience. Chua decided to look up the search term “world’s best restaurant” on the Internet, and Noma came out. He chose to go all-out in his pursuit of becoming a better chef, and applied for an internship at the Copenhagenbased restaurant, named the World’s Best Restaurant by Britain’s Restaurant magazine in 2010, 2011, 2012 and 2014. Chua interned at the acclaimed Danish restaurant for about four months – his first time working abroad. It wasn’t easy; challenges, including the colder climate and language barriers, were aplenty, but Chua wasn’t letting it hinder him. “My purpose was to be a better chef, so I worked really hard,” he says. His hard work and determination paid off when he was offered a permanent job there – one of only two out of the seventeen interns from around the world who were training alongside him.

Then things started to get really challenging. Chua soon found out there was a big difference between being an intern and a chef at Noma. “It was a harsh training ground,” he admits, adding that he was better treated as an intern. “But I learnt a lot and it made me stronger.” It was also an exciting experience since Noma was attracting patrons such as members of rock band Metallica and celebrity chefs such as Jamie Oliver, with seats fully booked out three months in advance. “I celebrated my birthday there, and it was the best meal of my life,” says Chua, adding that it was a “touching” meal. Asked to describe what he meant by a “touching” meal, he says, “It was a standard 14-course meal but (my) colleagues treated (me) better and even gave (me) a surprise,” he shares. Chua values his time at Noma, saying the legendary venue “is not just a restaurant. It is too good to be called a restaurant. It is an experience.” When Noma owner and head chef Rene Redzepi decided to put the restaurant on hiatus in 2016, Chua headed home to work on projects as a consultant chef. He is looking forward to rejoining the restaurant when it reopens at a new location in Copenhagen. Chua is now the head chef at fine-dining establishment Stoked in the affluent Kuala Lumpur neighbourhood of Damansara Heights, serving up new experiences to diners based on what he learned as chef de partie at Noma. He is putting the Nordic philosophy he learned – how to respect produce and use ingredients
that leave the least negative effect on carbon footprint – into his cooking, utilising local ingredients presented in new ways. “I want to get local chefs to try out new stuff,” says Chua. “I want them to support local farmers offering artisanal and organic produce, or farmers who are growing hard-to-find produce – vegetables and herbs from Cameron Highlands and Janda Baik, for example.” Using more local produce would also help balance the cost and finances, he adds. One of his elements is the use of fermentation techniques, an aspect of cooking that was important at Noma. “Fermentation brings a different taste to the dish, the easiest example being soy sauce, which is made from fermented soy beans,” explains Chua. “We had on-the-job training, learning about fermentation. There was a fermentation chef, a fermentation lab with seven chambers, and we would really explore fermentation with beef, ants, crickets, and we’ve probably only experimented with less than one percent of the ingredients found in the entire world,” says Chua. Another feature that Chua works with at Stoked is the Bertha oven – a wood-fire oven much like the more well-known Josper, but which reputedly imparts a stronger smokiness to the food grilled in it, perhaps due to its size and build. “The details seem minute but it gives a real difference to the food,” claims Chua. It elevates one’s culinary experience, and the dishes Chua serves attest to that. ■
1. Fillet the mackerel, remove the bones thoroughly, rest on tray skin side down. Keep chilled. 2. Mix brown sugar and salt in a bowl, sprinkle evenly on the flesh of mackerel. Rest the mackerel in a chiller for a minimum of three hours. 3. Slice watermelon thinly, arrange on silicon mat (or parchment paper), place the mat on a tray and dry in the oven at 70°C until dried. 4. Place pitted black olives on the tray and dry in the oven together with watermelon. Blend into coarse powder in a blender once dried. 5. Heat up charcoal. 6. Rinse through the mackerel, pat dry and portion into desired sizes. 7. Brush the mackerel with some oil. 8. Place red-hot coal on the skin of mackerel for 30 seconds or until the skin is crispy. 9. Place mackerel onto a plate, garnish with dried watermelon, black olive crumb and salt flakes. Serve at room temperature.

As day breaks, Shivanee Selvaratnam starts preparing the ponggal pot in front of her house. In the tradition of her Hindu-Tamil forefathers, she builds a stove using wood and stones. In its centre, she carefully lays an earthen pot that has been tied decoratively with sugarcane stalks, turmeric and mango leaves. Finally, she fills the pot with fresh rice and milk, and lights up the stove. By the time the milk starts bubbling, the rest of her family have gathered around, eagerly anticipating the climax of the ritual – the moment that the milk overflows and spills over. The cooking of sweet rice is a highlight of Ponggal, a traditional Hindu-Tamil festival

that offers thanksgiving to the Sun God for a bountiful harvest. Taking place over four days in the month of Thai (JanuaryFebruary), a season when grain crops such as rice, sugarcane, and turmeric are harvested, Ponggal is celebrated on an even bigger scale than Deepavali in the Indian state of Tamil Nadu, where it originated. Falling on 14 January every year – it’s the only Hindu festival that follows a solar calendar – Ponggal proper starts with the Bhogi ceremony, which signifies cleansing bad omens that have lingered on from the last harvest cycle. Old and unused household items are discarded while homes are cleaned to welcome the new harvest cycle. Turmeric water is used to clean or bless the house with it; the turmeric leaf is supposed to ward off bad omens. Sugarcane is placed at the entrance as a symbol for everything sweet and good happening for the family. This is also the time to replace the mango leaves, which typically adorn the entrance of Indian houses, with fresh pickings. The all-important ritual of cooking the rice and milk mixture – ideally using freshly harvested rice – takes place on day two of Ponggal. As the rice mixture boils furiously

and spills over the earthen pot, family members cry out “pongollo pongal”. This is a celebratory cheer that literally means “may this rice boil over”, symbolising a wish for overflowing fortunes for the family. Visitors greet each other with “paal pongitha?” which means “Has the milk boiled over in your house?” The third day of Ponggal, known as Mattu Ponggal, offers thanksgiving to cattle, a sacred animal in India. It is celebrated on a big scale in India, with a lot of games and activities, as many of the population depend on cows for their livelihood. Villagers give their cows a bath, paint their horns and decorate them with garlands.

As Hindu-Tamils believe that the birth of the Thai month brings fresh promise, rekindled hope and good fortune, it is said that knotty family problems will be solved with the arrival of Ponggal day. Reflecting the spirit of joyful optimism, many marriages take place in this month. Traditionally, unmarried ladies make ponggal and wear new clothes, gold and silver ornaments, and have special prayers for their future marriage. Compared to India, Malaysia celebrates Ponggal on a more modest scale, though in the weeks leading up, you can see an unusually high number of Hindu-Tamils thronging Little India in Brickfields and Masjid India in search of earthenware pots, sugarcane, bottles of milk, and new sarees. In some households, oil lamps are lit and placed along the perimeter of the house and a colourful kolam may be created out of rice paste, outlining the Sun God Surya’s chariot. Shivanee, a mother of two boys, says, “Although as city dwellers, we don’t reap any harvest, we still celebrate Ponggal because it is one of our most beloved traditions. Through these rites, we can instil values about respecting the Indian traditional and cultural heritage.” ■

MALAYSIAN ICON | Dato’ Sudirman Haji Arshad
EMI MALAYSIA – UNIVERSAL MUSIC MALAYSIA
The People’s Entertaıner Blessed with a distinctive voice and endearing style, Dato’ Sudirman Haji Arshad transcended class and race. Words Siva Sithraputhran
In 1986, Chow Kit was an underprivileged inner-city area of Kuala Lumpur. That year, it became the venue of a much-remembered free concert where Sudirman Haji Arshad, then Malaysia’s premier entertainer and singer, delighted a crowd of over 100,000. Footage from the time shows throngs of people packed tightly, many cheering from rooftops, one or two even perched on trees to catch a glimpse of Sudirman, just a little over five feet in height, performing on a specially made platform. Singing Chow Kit Road, his rousing ode to the area, Sudirman’s performance that night planted him firmly in the hearts of ordinary folk, marking him as an entertainer for the common people. Sudirman was the consummate performer on stage. His concerts also were joyful occasions during which his banter with fans won many hearts. With a word or a gesture, he could make people see a little bit of themselves in him. To many fans, he was simply “Abang Sudir”, the adored older sibling.
FAUZI MARZUKI, ABBEY ROAD
He sang with assurance about everyday life. With easily relatable lyrics and upbeat tunes, songs such as Basikal Tua (Old Bicycle), Pulang Dari Kilang (Back From The Factory) and Punch Card helped him transcend class and race.
It also helped that he was the small-town boy made good. Born in 1954, he grew up as part of a family of seven children in an unfashionable part of Malaysia, the town of Temerloh, about 100 kilometres east of Kuala Lumpur. Success at school brought him to the capital to study law at the University of Malaya in 1976. The same year, he entered and won the Bintang RTM singing contest, at the time the principal talent show in the country. In inimitable style, Sudirman sang a Malay classic, Seruling Bambu (Bamboo Flute), and Big Spender from the musical Sweet Charity to win the contest, which launched his career as a singer. “And from that day, I began to realise that I was meant to work hard to entertain them (the fans),” he later wrote in his autobiography, Dari Dalam… Sudirman (From Within… Sudirman). A successful recording contract soon followed, with numerous appearances on national TV alongside a series of hits. He held concerts all over the country. Growing in stature and confidence, he gamely sang songs in Cantonese and Tamil in an effort to bring the multi-ethnic nation together. He became a star in the Malayspeaking world with chart-toppers in Malaysia, Indonesia and Brunei with Merisik Khabar (Seeking News Of You) Milik Siapakah Gadis Ini? (Who Does This Girl Belong To?) and Salam Terakhir (Final Goodbye).
At the height of his fame, he represented the country at a new competition held at the Royal Albert Hall in London in 1989, the Salem Asian Music Awards. He won the best performance award that night, eclipsing superstars Hong Kong’s Leslie Cheung and Singapore’s Anita Sarawak. He briefly ventured into acting and released a book on the early part of his life, illustrated by drawings from his own hand. He qualified as a lawyer but entertaining was his abiding love. He kept a busy schedule but by mid-1991, his health had begun to fail. The full details of his illness have never been disclosed but he was admitted to hospital for months, later moving to his sister’s home in Kuala Lumpur. On 22 February 1992, it emerged that Sudirman had died from pneumonia. He was 37. A distinct tenor, Sudirman had the ability to imbue his songs with deeply affecting emotion. Until today on the festival of Eid, Malaysians return to their hometowns with the familiar strains of Balik Kampung (Going Home) on the radio, testifying to the enduring appeal of his songs throughout the years. ■

They come with thoughtfully designed compartments that make it easy to organise day-to-day essentials.
Versace pays homage to Los Angeles and diversity with its Pre-Spring 2018 collection. In terms of looks, the collection channels themes from retro glamour and rock ‘n’ roll to boho chic, all with a distinctly urban vibe. These inspirations are interpreted with a multitude of materials and textures in the collection.

Inside Malaysia Airlines
75 News & Updates
Rousing Welcome A high-spirited ceremony was held in November to welcome Malaysia Airlines’ first A350 XWB home. The first of six aircraft on order, the A350 XWB will form the backbone of the airline’s future widebody fleet. Guest of Honour Malaysia’s Second Finance Minister Datuk Seri Haji Johari Abdul Ghani was joined by Malaysia Aviation Group Chairman Tan Sri Md Nor Yusof and Malaysia Airlines Group CEO Captain Izham Ismail. “We are very excited to welcome this new addition to our family. The A350 XWB is a symbol of a new journey to re-establish the group as a sustainably profitable and financially self-sufficient entity. With its technological advancement, the A350 XWB will help boost our competitiveness on our long haul flights and underline our commitment to operate a young and modern fleet,” said Captain Izham. The A350-900 flew a series of endorsement flights to Bangkok, Penang and Singapore in December and will be operating the Kuala Lumpur-London service beginning 15 January. MASkargo was proud to be part of a significant event: to transport a national Chinese treasure back to her homeland. Nuan Nuan, the first panda cub to be born in Malaysia, landed safely in Chengdu, China via flight MH6476, an A330-200 freighter. The 90-kilogramme cub was accompanied by Zoology, Veterinary and Giant Panda Conservation Centre director Dr Mat Naim Ramli and veterinarian Dr Jessie Ho. With 20 years of experience, MASkargo and its Animal Hotel were well equipped to handle the transportation and to ensure a seamless and stress-free experience for the cub. The move to send Nuan Nuan back to China complies with the Malaysia-China Giant Panda International Conservation agreement, whereby any panda cub born in Malaysia has to be returned to China upon the age of two.
Fight Against Trafficking Malaysia Aviation Group (MAG) continues to take an active stance against human and wildlife trafficking, with the launch of an antitrafficking campaign at the Kuala Lumpur International Airport. A three-day exhibition was held at the airport to educate and raise awareness among the public on these crimes. MAG developed its policy against human trafficking in 2016, and has since issued a circular to all its partners to emphasise the seriousness of the crime and the close cooperation needed to stem the illegal activity. Training is also underway to help staff identify potential human traffickers and their victims. On the anti-wildlife trafficking front, MAG has organised talks and trainings with over 4,000 of its front-line staff, in addition to educational videos on its in-flight entertainment systems fleetwide, as well as anti-wildlife trafficking statements on all its passenger check-in countertops.
Enhancing Customer Experience Malaysia Airlines has partnered with Interglobe Technologies Pvt. Ltd to respond to passengers’ queries on Facebook and Twitter in English, Bahasa Malaysia and Mandarin 24 hours a day, seven days a week. The agreement was signed by Malaysia Airlines Chief Commercial Officer Arved von zur Muehlen and IGT Chief Executive Officer Vipul Doshi at the airline’s innovation lab in Sepang. “Digital development has been at the forefront of our customer experience. This collaboration will enable us to respond to our customers faster and more efficiently,” says von zur Muehlen.

Safety + service info
Cabin Luggage handling Passenger and crew safety onboard our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This is to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. Passengers who are fit and in good health must carry, stow and secure their own hand luggages on board. Hand luggage exceeding the 7kg weight limit is required to be checked in before boarding.
Portable Electronic Devices (PED) For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system.
Lithium batteries Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.
Electronic cigarettes Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device in-flight is not permitted.
Zero tolerance of abuse We value courteousness. Any form of threat, verbal abuse or violence towards our staff will be taken seriously. We are committed to supporting anyone who has been the victim of an assault.

What was it like working on the single with Fredrik Häggstam?
It was great! He’s such a relaxed and comfortable guy. You’d think someone who works with The Chainsmokers and other big guys wouldn’t have the patience for someone like me who didn’t have a lot of experience in the studio, but he was really open to ideas and gave great ones of his own. What are you working on right now?
goingplacesmagazine.com | 92 | January 2018
Malaysian artist Nicholas Yung Kit’s (NYK) debut single, FWB (Friends with Benefits) is playing onboard this month on the Chart Toppers radio show. We catch up with the talented R&B singer for a quick chat.
Your debut single FWB happened very quickly – 30 minutes to write to be precise. Tell us what inspired the song?
FWB is a song about modern dating. People around me (and myself) are having problems with commitment and they want things quick. I had my own personal experience where I wanted to date this great girl but she didn’t want anything long-term; that’s kind of what led to me writing FWB.
I just got back from Sweden to record my EP and a second single, and the songs are currently going back and forth between me and the producers there for revisions. I personally think they’re levels above FWB and I can’t wait for you to hear them. The second single should be out in January. What are some of your dream collaborations?
Oh, I don’t even know where to start. Frank Ocean, Anderson Paak, DEAN, G-Dragon and Mura Masa to name a few. There are way more. What is the message you want people to take away from your music?
On a musical level, I want people to be able to relate to the different aspects of a relationship, from start to finish. Every song on the EP is related to some phase of a relationship, from hooking up to breaking up and getting over it. On a bigger picture, I want people to see that Malaysian musicians are as good as the rest of the world, and that local music should be appreciated.
The MPO Celebrates 25 Years of Sheila Majid Malaysia’s queen of jazz Sheila Majid, backed by the Malaysian Philharmonic Orchestra, performs greatest hits from her seven timeless albums in celebration of her silver jubilee in the recording industry. Songs in the album include crowd favourites Antara Anyer Dan Jakarta, Sinaran, Lagenda and Warna.
