INNOVATION LEADERS Malaysia Airlines was the official airline for the Business of Innovation forum organised by the London Speaker Bureau in Kuala Lumpur recently. Going Places had the privilege of having some of the esteemed speakers share their thoughts on innovation. SIR BOB GELDOF, Founder, Live 8, Live Aid and Band Aid How does thinking differently and being innovative help us as human beings? We have to remove ourselves from our personal circumstances – to struggle to pay bills, bring up children, have a relationship, all those things – which are more about the politics of today, and have more discussions about the politics of tomorrow. Democratic politics will always promise you more, and this just leads to endless growth, which isn’t good for the environment and we’re messing up everything, and that can’t be a model – it’s not sustainable. Somehow we have to think beyond that. I sense a great anxiety everywhere that all the ideas that we’re using to mediate our entry into the 21st century are old ideas that no longer apply in this new economy, and therefore that requires new politics. You need decent leadership to start talking about this and start thinking about different ways we can operate the world with newer ideas and deeper analyses of this newer world that requires different solutions. How does innovation help make a difference in the work you do? I think nearly everything that is worrying us all everywhere – climate change, terrorism, nuclear proliferation, world economy, lack of leadership – all of this comes from one root, which is poverty. If you can bring the poor up to a decent standard of living, then you get less revolution, you get less terrorism because if you’ve got no future nor hope nor way to use your voice, then all you’ve got is just pure frustration. But if you could get the undeveloped part of the world to

ROLF DOBELLI, Author, The Art of Thinking Clearly How does one develop the art of thinking clearly? The art of thinking clearly is when you can get around those thinking traps. We all make roughly 100 systematic thinking errors. If you know them, then you can circumnavigate them and you don’t fall into these traps. For example, we tend to copy the behaviour of others or we tend to pay attention to only what is immediately in front of us and not to what is hidden in plain sight. If you eliminate them, then you make better decisions. What leadership criteria are needed to build a company for the future? If you get around these thinking errors, then you don’t make that many mistakes in your decisions, and that may lead to more success. This doesn’t automatically mean that you become more innovative as to be innovative you need other inputs, some crazy inputs. My goal is to improve the quality of decision-making,

become more productive, and they are making money, they would use their money for education, health, food and also to buy our stuff. You get this exchange. Please share with us your experience travelling with Malaysia Airlines. It was really good. The people were lovely, food was good, excellent wine – it was great!

RICHARD QUEST, CNN Anchor and Correspondent How is innovation relevant to your line of work, and would you say the broadcasting business is in need of a change right now? No. We need to learn where it’s going and how to harness it. You are watching television or you are consuming media in a way that is radically different than just 25 years ago or just 10 years ago. It’s about understanding the minds of content consumers and that’s what we need to work on. You still want a quality product, quality movies, quality music, play a game that works well, so innovation is about how we adapt ourselves. What about the airline industry? How do you see the business of travel changing in the next 10 years? The airline industry is going through constant change and Malaysia Airlines is a good example of it. It’s very difficult, particularly if you look at Asia and Southeast Asia and the growth of aviation, it’s very volatile, very aggressive, and not easy. But passengers will decide what they want and the airlines that succeed are those who can adapt. If you could change one thing in this world, what would it be? There are two things I would change. I would remind youngsters to read. You don’t learn everything by watching online. And the golden rule of life remains: don’t do unto others. It’s not a religious idea but a fundamental tenet. You flew to Kuala Lumpur with Malaysia Airlines. How would you rate the service and hospitality provided? My experience on this trip was excellent. I was on the A380. I think it’s just the most magnificent plane. And the service on board was impeccable.

NEW POLICY Lifting heavy luggage each day puts a strain on members of the cabin crew, who are prone to occupational hazards and ergonomic risks. Sad but true. To ensure they remain fit when serving passengers, Malaysia Airlines has adopted a new policy that offers baggage handling assistance only to passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. All other passengers who are fit and in good health are required to carry, stow and secure their own hand luggage in the overhead cabins. Hand luggage exceeding the seven kilogramme weight limit is required to be checked in before boarding.

CUISINE QUEEN Her Royal Highness Tengku Puan Pahang, Tunku Hajjah Azizah Aminah Maimunah Iskandariah Binti AlMarhum Sultan Iskandar Al-Haj, wife of the Crown Prince of Pahang in Malaysia, has graciously shared recipes from her cookbook on authentic Pahang cuisine to be included in the menu served in First Class and Business Class from Kuala Lumpur to the United Kingdom, Europe, Australia, New Zealand and ASEAN. She shares some thoughts and the recipes for one of her signature dishes with Going Places. How did your love for cooking start? From a very young age I was so intrigued by all the food prepared at the Palace, and lunches and dinners hosted by my father (the precedent Sultan of Johor). I wandered into the Palace Kitchen so very often that the initial tasks of picking the tails of beansprouts and cleaning the entrails of anchovies were soon upgraded when I started jotting down what the cooks did. This interest was recognised by my father who attested to my skills by asking me to fry rice for his midnight suppers and, eventually, prepare full-blown barbecues for guests. Tell us a bit about your best-selling book of recipes, Air Tangan Tengku Puan Pahang: Masakan Tradisional Pahang. Traditionally, meals are prepared in ways handed down matter-of-factly by the necessity to put food on the table. This may be enhanced by the skills acquired through constant trials and errors. Writing my book gave me an excellent opportunity to explore Pahang dishes as prepared traditionally. I tasted each and every dish and tested cooking the same dishes using accurate measures and the right

cooking techniques. The book is an actual documentation of the results I did on site. On your signature dishes for Malaysia Airlines, why were these dishes chosen? I think a combination of traditional local dishes and inherited coloniallyinfluenced dishes would best showcase a Malaysian menu to an international palate. Were there any challenges realising the project? I had no notion of how food is prepared for in-flight meals. The duration of time from cooking to serving and the altitude at which meals are served are definitely not the same as preparing the dishes at home. However, the competent chefs of the airline’s Food and Beverage Department saw me through all the test cooking to ensure that the dishes are served the way that I want them served. I am extremely impressed with Brahim’s Airline Catering Kitchen and the capability of all the chefs. Superbly world class!

Method of Cooking • Heat rice pot. • Reduce heat and add in QBB Ghee oil. Let it melt. • Add coriander leaves and screw-pine leaves. Fry until fragrant. Add cinnamon stick, cardamom, cloves and star anise. • Add onion, garlic, shallots and ginger. Fry for 6 minutes. • Add Basmathi rice; stir occasionally for another 4 minutes. • Pour in evaporated milk and plain water. • Add turmeric and season with salt and seasoning

powder. Cover pot with lid. Opor Ayam Kacang 1 kg

Method of Cooking • Heat oil in pan. • Fry lemongrass, shallots, ginger, turmeric, galangal, garlic, cinnamon stick, cardamom and star anise. • Add dry chilli and continue frying until fragrant. • Add opor spice and continue to fry until oil separates and is fragrant. • Add chicken and cook with medium heat. • Mix ingredients well in the pan. • Pour in thick coconut milk. • Add coconut paste and roasted ground peanuts. Stir occasionally. • Let it simmer and reduce heat. • Adjust taste with salt, seasoning powder and sugar.

The team behind Art Basel is continually reinventing it, ensuring each event offers something different. BRIGHT SPARKS Every year in the city of New Haven, Connecticut, thousands gather for the annual International Festival of Arts & Ideas, a 15-day performing arts extravaganza that takes place at various venues throughout the city. There is something inherently sexy about Rio de Janeiro’s golden, mile-long Ipanema Beach. Is it all the bronzed bodies in tiny swimming costumes, the chilled out bossa nova beats drifting through the air, or the majestic, jungle-covered granite peaks that provide a dramatically gorgeous backdrop? Whatever it is, you are guaranteed to be seduced. The beach has several areas or postos. Posto 7 on the eastern side is a paradise for surfers and sunset-seekers, while Posto 8 boasts a bohemian vibe. Hipsters and trendsetters should head to Posto 9, while Posto 10, in the beach’s centre, is the upscale home of celebrities and the beautiful people. Grab a fresh coconut from one of the beachside cabanas, or a meat-filled pastel washed down with acai juice at a boardwalk café. decade ago, if you didn’t come from Scandinavia, chances are you didn’t know what a kanelbulle or smørrebrød was. But there is a growing global interest in Nordic food, echoing the rise in love for Scandinavian design. Nowadays, classic Scandinavian staples are making their way into cafés and restaurants around the world. That’s certainly visible in London, which boasts a large selection of Scandinavian eateries, bars and design stores. It might seem odd to come to London and make a beeline for Scandinavian treats, but the city is peppered with places that serve up iconic Scandinavian food. There is an entire website – Scandiway (scandiway. co.uk) – launched simply to document the scene; it is a great resource for finding new Scandinavian addresses in the city. “London has always played host to a variety of different cuisines, but recently the Scandi food trend has really taken off,” says Jacqueline Skott, co-owner of Snaps & Rye (facebook.com/snapsandrye), a Danish eatery just off Portobello Road. Why has Scandinavian food become so popular? It might have something to do with simplicity, which also explains the popularity of Scandinavian design – objects that are beautiful and practical, not overly complicated. Scandinavian food isn’t showy or pretentious; it’s a compilation of good, whole ingredients done well. Some of the most iconic Scandinavian baked goods are the simplest, combining just a few ingredients for a tasty final result.

But while the Scandinavians are known for their restraint, they don’t hold back when it comes to sweet things. Compile a list of all the different types of breads, biscuits and cakes, and you’ll need one big notebook. But the cornerstone of all these treats is coffee – Scandinavians are some of the biggest coffee consumers in the world. In Swedish, the word kaffebröd – literally ‘coffee bread’ – refers to all the various sweet breads one might eat with a cup of coffee. The masters of kaffebröd in London are Bageriet (bageriet.co.uk) or ‘The Bakery’ in Swedish. It’s a bakery overflowing with everything you might ever want for a Swedish kafferep, a traditional spread of cookies and baked goods served with coffee, like chokladsnittar (chocolate slices) and kardemummabullar (cardamom buns). Coffee lovers will also appreciate Fika (fikalondon.com). Named after the beloved Swedish coffee break, Fika has been serving Swedish-inspired food and drink since 2008, long before the Nordic trend took off. Beyond a cup of dark black coffee and a kanelbulle for an afternoon treat, stay for cocktail hour and you’ll be treated to a variety of drinks that mix in Scandinavian elements like elderflower cordial and aquavit. “I think Scandinavians pay attention to details. Just like in design, they want the food to look as good as it tastes. It's like art on the plate, no matter what you eat,” says Fika owner Sadaf Malik. “I think the practical, natural, cosy but modern, tasty but healthier aspect of the Scandinavian lifestyle is attracting people.” Bronte Aurell, the co-founder of Scandinavian Kitchen (scandikitchen. co.uk), which not only offers food in its café but also serves as a grocery store for all kinds of Scandinavian ingredients and products, agrees. “Real Scandinavian food is not fancy, it’s not fussy. It’s just good quality ingredients. An open sandwich

does not need a slice of bread to hide under: it is just there, on display. And a wonderful piece of cake for your fika, made with love, well, you simply cannot replicate that for mass production,” says Aurell, who hails from Denmark. “I think real Scandinavian food is very honest. I love the simplicity, honesty and the basic dishes. There is an immense beauty in our simplicity.” Yet another classic rendition of Scandinavian food is the open-face sandwich – smørrebrød, in Danish, smørbrød in Norwegian and smörgås in Swedish. If it’s one of these you are after, pop by the Saturday Broadway Market in Hackney, where Hansen & Lydersen (hansen-lydersen.com), a purveyor of Norwegian salmon, serves up dark rye bread with a slice of cured salmon and a sprig of dill on top. In Central London, another brand that has garnered a local following is Nordic Bakery (nordicbakery.com). In their three different locations, they serve up simple and easy food. Pop in for a quick open rye bread sandwich or karelian pie, a Finnish savoury pie, for lunch. The interior is minimal, a nod to the design style of Scandinavia. There’s another theme that comes across in all these places; they’re inviting and cosy. Fans of Danish might be familiar with the word hygge, a concept that’s all about

creating cosy moments, and its Swedish equivalent, the word mysig, as well as the Norwegian koselig. “What really sets Danish food apart is what lies at the heart of all our entertaining; hygge. Hygge roughly translates as cosiness, but it’s more than that. It’s when all your senses are evoked yet content, like a three-dimensional cosiness, which is something we definitely aim for with our food! Since a lot of socialising in Denmark revolves around eating, this communal spirit and friendly, relaxed approach to cooking is reflected in the taste of Danish food, and what makes it so distinctive,” says Snaps & Rye’s Skott. For a hyggelig breakfast, try a bowl of øllebrød at Snaps & Rye, a porridge made by soaking rye bread in beer overnight, then adding orange zest and a little cream. From countries that spend much of the winter in darkness, it’s no surprise that there would be a desire to create a cosy space, but it extends into the summer months as well, an approach to making even the simplest moments special. Thus, the spark in interest in Scandinavian food has been a long time coming.


“Over the eight years we have been open, the Nordic countries have gone from being the dark countries up north to these lands of wonder that people can’t wait to visit. Too Much

he French call it ‘Saint Trop’ for short, or ‘Saint Too Much’. In the high season – July and August – that suits St Tropez, the Riviera’s most magnetic resort. The quays around the old harbour and the narrow village streets teem with thousands of holidaymakers, some sporting the latest summer fashions, others gawping at them, a merry-go-round of preening, posing and people-watching. The harbour brims with yachts, some classic with polished wood and tall masts, others – bigger, brasher and very metallic – resembling warships. The big money and big names come to St Tropez, partying in some of Europe’s most expensive nightclubs. Less moneyed vacationers come to spot celebrities and bask in the Mediterranean sun. But out of season, St Tropez regains its calm and reverts into a pretty little village clustered round an old fishing port – the very thing that attracted the writer Guy de Maupassant and painter Paul Signac in the late 19th century. Signac has left us gorgeous pictures of the old harbour, with its fishing boats and sailing barges, done in his pointillist style of paint dots. You can see a couple of them in L’Annonciade art gallery beside the harbour, with an excellent collection inhabiting what

used to be the fishermen’s chapel. What would Signac think now? The quayside houses have all become see-andbe-seen cafés. Instead of fishermen selling their catch, all along the quays, artists sell production-line canvases of pretty port scenes. Stroll into the side streets and you’ll find some Bulgari far quicker than a boulangerie, and there’s a lot more Chanel than there is charcuterie. In high summer, the 6,000 permanent Tropezians become a tiny minority amongst the mass of visitors, coming from all over the world to this small town with a big name. It all began in a low-key manner. In the 1920s and ‘30s, St Tropez became an idyll for a select few like the novelist Colette. In the 1950s, Picasso would relax beside the port whilst that enfant terrible, Francoise Sagan, author of a hit novel set in a Riviera summer, Bonjour Tristesse, would lay back with her gang of Parisian hipsters at La Ponche (laponche.com). But then came a phenomenon that changed everything. Her name was Brigitte Bardot. In the 1956 film And God Created Woman, set entirely in St Trop, Bardot


gave the most sensual performance seen in the movies, with a sea-soaked coupling on a wild beach and a sulphurous dance scene. The film was a worldwide succès de scandale, setting off Bardot mania and St Tropez fever. Enamoured with the village, Bardot bought a seaside house, La Madrague, just along the bay, and still lives there at the age of 80, rather less enchanted. Several years ago, she wrote this in the book, In The Spirit Of St Tropez (Assouline Publishing, assouline.com). “Huddled about the church, protected by its citadel and wooded hills, the village slumbered behind the closed shutters of narrow houses, their pink ochre walls aglow. Until the day when what was fated to happen, happened. … Playboys from all over the world turned up to woo international stars, the jet set treated the place as its base camp, and millionaires had palaces built. Helicopters filled the skies, swooping over super-luxury yachts where pretty princesses shed their prejudices. Beaches invaded by sunbathers from all four corners of the globe started to look like the Métro at rush hour.” The village became packed with hotels, bars and restaurants, and that wild beach – Pampelonne – became lined with sun

loungers and parasols. When Mick Jagger married Bianca there in 1971, it was a paparazzi riot, and St Trop has ramped up its too-much-ness ever since. Take the mythic Hotel Byblos (byblos. com), styled as a Provençal hamlet, a citadel of hyper-luxury with faux-rustic facades clustered round a turquoise pool draped with celebrities. Its legendary nightclub, Caves du Roy (lescavesduroy. com), boasts one of the world’s tightest door policies to shield guests such as Beyoncé, Bono, Kate Moss and George Clooney. If you want to try it, dress to kill with your wallet full: to get a table by the dance floor, you must buy a magnum of Cristal Champagne for almost 2,000 euros. If you just don’t have a thing to wear, help is at hand. There is no village with so many fashion boutiques, often selling summer togs, including the famous local footwear, tropéziennes, like Roman sandals, but also slinky things for the vibrant nightlife of summertime. All this is part of a place named after a saint. It’s a story every Tropezian knows. In Pisa, the Roman Emperor Nero had a Christian called Torpetius beheaded and thrown into a boat. It floated out to sea and came ashore at this Provencal spot in 68 AD. Torpetius became Saint

Torpès and the spot was named after him, morphing later into St Tropez. Revered as the patron saint, a twice life-sized bust of Saint Torpès is kept in the parish church and paraded through the streets on special days. Tropezians are fervent for their saint, above all in mid-May when he is the focal point of Les Bravades, lasting three days. Steeped in military history, the Bravades festival is a celebration of the bravery of forebears who for centuries defended the precious port as it came under attack by marauding pirates, Saracens and foreign navies. Selected residents with long local pedigrees, 180 in all, don antique soldiers’ and sailors’ costumes, wield blunderbusses, and perform an explosive rite that makes you jump out of your skin. Parading St Torpès’ bust around the harbour and through the narrow streets to the song of fifes, tambourines, bugles and drums, they stop every few minutes to shoot off deafening salvos, disappearing in clouds of smoke. Then they do it all again on June 15, in the Spaniards’ Bravade, to commemorate the Tropezian victory of 1637 when a fearsome fleet of 21 Spanish galleys attacked the town and was driven off. Again the bust of St Torpès, regaled in a high diadem and a red toga adorned with medals and heart-shaped lockets, travels through the streets, held up by bearers from Pisa in crimson Renaissance costumes, escorted by 180 troops accompanied by four other saints’ images. Again the buildings tremble with fusillades from scores of muskets, and it all ends with a beautiful Mass in the parish church. But no matter how much St Torpès is honoured by the locals, the young Bardot with tousled blonde hair keeps popping up in posters, paintings, prints and a host of images around town. She may keep to her villa now, but her youthful, devil-may-care spirit – the template for seductive rebels ever since – is everywhere. She even named the local cake, so they say, la tarte tropézienne. A light brioche with an almond cream centre, it goes down very well with the local rosé wine at Sénéquier (senequier.com), an iconic portside café that revels in canvas awnings and bright scarlet chairs. When the setting sun hits Sénéquier, there’s a sultry glow that you’ll never forget, whatever else you’ve seen in the Riviera’s hottest resort.

A

s the magnificent wave swelled to its peak and crashed down with the thunderous sound of a thousand hooves galloping across endless plains, Milton Hee's camera clicked away, its sound evoking the beating of a hummingbird’s wings. The avid surf photographer suddenly stopped, smiled, and declared, "Now THAT's a wave!" That's the general reaction you’ll get when you stop to gawk at the waves on one of Hawaii’s many shores. The USA’s 50th state has a history that goes back centuries to a time when Polynesians canoed over to the Hawaiian Islands, bringing colorful customs and traditions with them. Once in Hawaii, it was only a matter of time before playing on belly boards evolved to standing on elongated boards. Surfing as we know it today was born and solidly ingrained into the Hawaiian culture. The arrival of Western influence in the 1700s hugely changed the Hawaiian way of life. Surfing’s popularity dipped so low that it was almost non-existent. But it made a comeback in the early 1900s thanks to surfing greats like Duke Kahanamoku, who popularised surfing not just in Hawaii but in far-off lands like Australia. From locals to transient travellers, surfing now dominates the hearts and minds of everyone on the islands. There are eight main islands that make up the state of Hawaii but the most populous is Oahu, where the capital city of Honolulu is based. Known as the melting pot of the Hawaiian Islands, Oahu boasts a very diverse surf culture. Almost the entire coast is surf-able, so here are some things that you need to know about the four cardinal points of the island before paddling out.

NORTH SHORE

In other parts of the country, winter heralds a time of freezing temperatures, goose feather parkas and snow. Not on Oahu. A temperate climate, board shorts and sand is what you can expect. If you’re looking for big waves, then Oahu’s North Shore is the place to be, particularly during winter. This is when some of the biggest swells make their way over, creating the busiest surf season of the year. With waves that go up to four storeys high, it’s no wonder Oahu’s north plays host to numerous competitions, notably the Vans Triple Crown of Surfing and the Quiksilver in Memory of Eddie Aikau. Big wave surfers from all over the world congregate on the coarse, sandy beaches of


the North Shore, vying to come out on top. Known to locals as ‘seven miles of absolute heaven’, the North Shore is home to epic surf breaks like Banzai Pipeline, Backdoor, Off The Wall, Ehukai and the all-time favourite, Waimea Bay. If you’re lucky, you may catch a glimpse of surf legends Kelly Slater and John John Florence crushing it. The rule of thumb is to never attempt these waves in winter unless you boast impressive expertise. If you’re new to surfing or don’t have the confidence, just enjoy the view. Even from the shore, you’ll feel the spray of whitewash as the winter waves crash down from over 30 feet high. Summer time is when you’ll see nothing but pristine flatness, perfect for everything but surfing.

SOUTH SHORE

When the waves are flat up north, they

pick up down south at more than 50 breaks along the coast. Although the waves on the southern point of Oahu never get close to being as huge as the ones on the North Shore, there are breaks all along the coast that are perfect for surfers of all experience levels who want an easy spot of fun in the sun. Throughout the year, popular spots for beginners are Canoes and Queens, which break just off Waikiki Beach. Here, you will find a myriad of surf schools and beach shacks that offer everything from longboard rentals to one-on-one surf lessons. Put your trust in one of the many Waikiki beach boys and learn to surf. From keiki (kids) to retirees, it’s never too early or late to catch your first wave. If you’re familiar with surfing and don’t want to sample Oahu’s waves alongside chaotic first-timers, then steer clear of Waikiki Beach and head to the nearby

WINDWARD SIDE (EAST)

The Windward side of Oahu is known for its lush greenery and pristine beaches. Hiking, windsurfing, kayaking and snorkelling are favorite past times here. Although surfing is popular, you’ll find more body boarders than surfers patrolling the shore break at hotspots like Makapu’u and Sandy Beach, President Obama’s beach of choice when he was growing up on Oahu. Even so, head over to Pounders Beach for some consistently good winter

waves, but bear in mind that there are no lifeguards on duty. Depending on the time of year, keep an eye out for warning signs on whether it’s jellyfish season; the Portuguese Man of War should be avoided at all costs. Pyramids at Kaneohe Bay is another favorite as it boasts consistent waves, but as it’s part of the U.S. Marine Corps Base, you won’t be allowed to sample the surf unless you know someone with a military ID.

LEEWARD SIDE (WEST)

You’ll come across more locals hitting up the waves on this side of the island compared to anywhere else. Conditions are similar to those up north, so you can expect big surf in winter and milder conditions the rest of the year. “It’s always sunny on the Leeward side and the waves are very consistent,” says Oahu resident and avid surfer Airi Busam.

“Depending on where you surf, there’s usually minimal reef so if you wipe out, you won’t get too banged up.” Barbers Point is a fan favourite as the waves are relatively easy to manoeuver. Advanced surfers should head to Tracks and White Plains. The four main breaks at Makaha are also excellent but can get quite aggressive. Locals get precedence here, and you will not be welcomed back if you have a bad attitude.

ilan, Italy’s leading financial and commercial centre, lies in western Lombardy, a region with distinctive culinary variations thanks to its diverse geography. Heavily influenced by the region’s Swiss neighbours, the cuisine is based on maize, rice, beef and butter, and has more in common with Austrian and central European fare than southern Italian cuisine. Lombardy stretches from the Alps on the Swiss border south to the fertile Po Valley, the heart of Italy’s rice production. Short-grain rice forms the basis of a number of soups and risottos, such as the saffron-infused risotto alla Milanese, Milan’s most famous dish. Cold winters mean hearty minestrone soups and meat stews accompanied by polenta (boiled cornmeal) feature heavily on the menu. Another favourite is ossobuco, a Milanese speciality of veal shanks traditionally served with risotto. The region is also renowned for its cheeses, including tangy Gorgonzola, Parmesan-like Grana Padano and creamy Taleggio cheese. The rustic dishes of the Alpine foothills are often referred to as piatti poveri (peasant food). Skilled and inventive cooks expertly combine inexpensive ingredients to create dishes that contrast sharply with the sophisticated recipes and eating establishments of Milan, the country’s capital of fashion and design.

The ground-floor wine bar offers a selection of 350 Italian labels rigorously selected both from small organic producers and larger, more established wineries. Niccolò. His Finnish roots are reflected in a few dishes, with a smattering of Scandinavian favourites such as smoked fish and reindeer. But the cuisine remains mostly Italian. Mediterranean dishes are lovingly prepared with a twist – testaroli, a crepe-like pasta enjoyed in the coastal region of Liguria and usually made with pesto, is prepared here with saffron, speck and asparagus, ingredients traditionally used in northern Italian cuisine. The seasonal menu also includes Milanese favourites such as cotoletta alla Milanese, a breaded veal cutlet very similar to Wiener schnitzel, whose recipe is said to have been passed on from Marshal Radetzky to Emperor Franz Joseph during Austria’s occupation of Lombardy. An authentic Milanese cotoletta is made with a cut from the loin of milk-fed veal, whose meat is exceptionally tender. Hailed as one of the city’s best seafood restaurants, Langosteria 10 features individually furnished rooms decorated with maritime ornaments, including an upturned skiff from the coastal region of Liguria. Following the restaurant’s huge success, its creative mastermind Enrico Buonocore opened Langosteria 10 Bistrot & Bottega, a more laidback, informal version of Langosteria 10. “Langosteria 10 Bistrot & Bottega is reminiscent of a

Parisian bistro but with an international outlook,” says Enrico. The interior is decorated in light hues, and natural light floods in through windows overlooking the quiet Via Bobbio. Guests can dine at small tables or sit at the raw fish bar that gives a glimpse into an open kitchen where chefs are seen hard at work. Besides raw fish, shellfish and oysters, the menu also includes cured meats and escargots. The wine list focuses on light wines that complement the seafood, and there are craft beers as well as sparkling wines. A take-away menu is scribbled daily on the blackboard, and some of the products used are available for purchase, including Cantabrian anchovies and extra virgin olive oil.

With a number of other highly successful dining establishments to his name, restaurateur Andrea Meoni opened Drogheria Milanese in a former grocer’s shop (drogheria is Italian for grocer’s). The trendy interior of this bistro-style restaurant features low-hanging light bulbs and original 1960s vintage pieces, while jars of preserves and Italian produce – all available for purchase – line the walls. The atmosphere is easy-going and laidback; customers help themselves to cutlery that’s casually placed in wooden boxes on the tables. The clientele seated at the bar interact with the restaurant staff, while the long sharing table encourages people to strike up conversations with strangers, lending the place an informal feel. The restaurant is fuelled by simple, high-quality produce, with base ingredients such as butter, oil and eggs. Andrea decided to make most dishes available in halfportions in order to give his customers the chance to try more than one dish. Combine the individually portioned rice with a flavoursome trio of gulai, namely fish curry, gulai darat (a popular Kelantanese curry) and kuah kerutup daging, a sweet and spicy meat sauce. "It is camping in a very luxurious way, complete with the Four Seasons service and hospitality," says Alvin Tham, the assistant camp manager. You will be thoroughly coddled with nature right at your doorstep, albeit trimmed and pruned. Cicadas sing as you walk along bamboo-shaded paths to your room. Mornings are a cacophony of an awakening jungle. One minute you could be tucking into perfectly cooked king prawns while watching a herd of buffaloes cool off in the Ruak river; the next you’re getting the knots out of your back, enveloped by the great outdoors. At sunset, the spot to be is at the Burma Bar, savouring a flute of champagne and watching the sun sink behind the mountains. It's not only about luxury at this allinclusive resort camp as elephants lie at the core of its extensive list of highlights. Four Seasons Tented Camp and another

nearby hotel established the Golden Triangle Asian Elephant Foundation in 2006 to rescue and care for abused or retired elephants, together with their mahouts. The foundation currently cares for more than 20 elephants, four of which carry out the resort's mahout training and trekking programmes for guests. "Some guests get really attached to the elephants during their stay, spending a lot of their time with them. Or some guests come just to completely unwind and to watch the elephants from the comfort of their room," says Tham. For most glamping vacations, the experience is about the careful balance of the wilderness and creature comforts, as exemplified by Kamu Lodge (kamulodge. com) in Laos. You have to cruise the Mekong on a traditional long riverboat for almost three hours to arrive at this eco-lodge, which was founded in 2005 by a group of travellers led by Eric Merlin. He was travelling on the outskirts of Luang Prabang with his business partners when they chanced on this piece of verdant land on the banks of the mighty river. This was where Kamu Lodge pitched its 20 thickwalled safari tents with sturdy thatch roofs and snug beds; they provide enough guard against the elements but allow guests to feel they’re in the clutch of nature.

i bawah cahaya api yang marak menyala dari penyumpit gas, gelang emas itu mula bertukar bentuk. Ia menjadi cecair yang lancar mengalir ke tengah-tengah mangkuk seramik sebelum dituang dengan pantas ke dalam acuan yang berbentuk pil untuk disejukkan. Dalam masa kurang daripada seminit, rantai tangan tadi telah bertukar menjadi ketulan emas. Itulah langkah pertama dalam proses menghasilkan barang kemas emas buatan tangan. Ketulan emas tadi kemudiannya dimasukkan ke dalam mesin penggelek yang mempunyai alur pelbagai saiz sama ada senipis dawai atau bersaiz lebih tebal. Setelah beberapa kali digelek, ketulan emas tadi akan berubah bentuk menjadi panjang dan nipis seperti dawai atau lebih tebal. Inilah satu-satunya masa bantuan mesin penggelek diperlukan. Selepas meneliti saiz baharu emas tersebut, Raju Murugesan, 53 mencapai penyepit kecil atau alat lain dan mula membentuknya menjadi barang perhiasan leher, jari, pergelangan tangan atau kaki. “Ini kerja yang halus. Mesin hanya digunakan sekali untuk memulakan kerja. Selebihnya disiapkan dengan tangan,” terangnya tentang proses yang memakan masa itu. Hanya bersandarkan kepada penglihatan yang tajam serta kecekapan pertukangan dengan tiga dekad pengalaman, dia mampu mengubah seketul emas menjadi barangan kemas berkualiti yang penuh perincian. Emas tadi mungkin dibelit menjadi lingkaran ketat bagi membentuk antinganting bulat. Atau mungkin gelung emas kecil dipateri pada gelang tangan bagi menghasilkan rekaan unik. Torehan kecil mungkin ditambah di sekeliling gelang bagi menyelitkan permata. Semuanya bergantung kepada permintaan pelanggan. Selepas berpenat lelah selama sehari atau mungkin lebih lama lagi, hasil kerja tangan yang akhirnya siap akan digilap licin sebelum diberi sentuhan terakhir seperti menambah tiang subang dan sebagainya. Raju merupakan generasi keempat

daripada keluarga berkemahiran pertukangan emas di India Selatan yang sudah menceburi bidang ini lebih 200 tahun lamanya. Masih segar lagi dalam ingatannya karya pertama yang dihasilkan pada usia 20 tahun, iaitu sebentuk cincin perak. Pada waktu itu, Raju perlu memastikan barang kemas yang dihasilkannya betulbetul menepati spesifikasi ayahnya sebelum dibenarkan membentuk barang kemas lain dan seterusnya beralih kepada pertukangan emas. “Dulu paip digunakan untuk memastikan api terus marak,” katanya sekadar mengimbas kenangan lama di India sambil mengeluarkan sebatang paip lama lalu meniup melaluinya. Selepas berhijrah ke Malaysia, dia masih meneruskan perusahaan itu dengan bantuan isterinya, Thanalaxmi Veerappan, yang kini berusia 55 tahun dan juga berasal daripada keluarga tukang emas. Kini, pasangan tersebut mengendalikan kedai yang asalnya diasaskan oleh mendiang bapa saudara Thanalaxmi di Lebuh Queen pada tahun 1940-an. Kini dikenali sebagai tukang emas tradisional India terakhir di Georgetown, Pulau Pinang, perusahaan M. Thana beroperasi dari sebuah kedai lama.

Dindingnya yang usang sudah terkopak sana sini. Ruang kedainya hanya dihiasi perabot ringkas serta sebuah altar untuk aktiviti sembahyang agama Hindu. Di kedai tersebut, hanya barang kemas perak dan emas buatan tangan sahaja yang dijual. Biarpun berdepan dengan persaingan sengit daripada peniaga-peniaga kedai emas moden, pelanggan-pelanggan lamanya tetap setia mengunjungi kedainya selama turun-temurun. Kini, anak-anak serta cucu-cucu pelanggan ini turut menempah barang kemas untuk hari istimewa mahupun sekadar suka-suka. Jelas Thanalaxmi, bagi masyarakat Asia, emas tetap memainkan peranan yang penting baik sebagai perhiasan mahupun pelaburan. “Emas tidak pernah ketinggalan zaman,” ujarnya. Barang kemas emas amat popular khasnya thali iaitu rantai emas yang dihadiahkan kepada pengantin baharu sebagai simbol ikatan kasih sayang. Rekaan-rekaan ringkas biasanya hanya memakan masa sehari dua untuk disiapkan. Namun, ada kalanya Raju juga menerima permintaan luar biasa seperti cincin berat yang diperbuat daripada 50gm emas, walhal kebanyakan cincin biasanya hanya seberat enam hingga lapan gram setiap satu. Menurutnya, pelanggan tersebut telah meminta agar tiga rekaan digabungkan menjadi satu dan tempahan ini mengambil masa berbulan-bulan untuk disiapkan.

A TOUCH OF GOLD

Fourth-generation goldsmith takes pride in hand-making each piece of jewellery Under the intense yellow flame of the blowtorch, the gold bracelet starts to lose its features and shape. It turns into a smooth liquid swirling in the ceramic bowl, and is poured quickly into a pillshaped mould to be cooled. In less than a minute, the bracelet has become a gold nugget. That is the first step in producing handmade gold jewellery. The nugget is then fed into a rolling machine that has grooves in different sizes, from as thin as a wire to

thicker ones. After passing through the rollers several times, it stretches to become a thin wire or a thicker length. This roller is the only time a machine is used. Raju Murugesan, 53, examines the gold length before reaching for tweezers or other fine instruments to begin the slow process of crafting it into an intricate piece of jewellery to adorn the neck, wrists, fingers or ankles. “It’s very fine work,” he said. “We only use the machine to start the process.

The rest is hand work.” He relies on his sharp eyes and a deft touch honed by 30 years of experience to tell him how to turn plain gold into a complex piece. He might curl the gold wire into a tight spiral to form a round earring or he might solder the tiniest loops onto a plain bangle for an intricate design. Or perhaps, tiny notches are cut around the bangle to carry sparkling gems. It’s really up to the customer. After a day or more of painstaking work, the finished item is polished, and final touches like earring studs are added. Raju comes from four generations of goldsmiths in south India, collectively having 200 years of experience in the trade. He remembers making his first piece –a silver ring –at age 20. He had to satisfy his father before being allowed to move to the next piece, and eventually onto gold. “Previously, we use a pipe

to keep the fire going,” he said, pulling out an old pipe and blowing through it as he reminisced about his days in India. After moving to Malaysia, he continued the trade with his wife Thanalaxmi Veerappan, 55, who also comes from a family of goldsmiths. Thanalaxmi and Raju now run the shop started by Thanalaxmi’s late uncle on Queen’s Street in the 1940s. M. Thana’s Goldsmith is now the last traditional Indian goldsmith in Penang’s capital of George Town, operating from a well-worn shop with pockmarked walls and plain furniture, and a Hindu altar taking pride of place. It still sells only handmade jewellery made of gold or silver. Despite competition from slick modern shops, their customers have stayed with them through the years. Now, it’s their children and even grandchildren who are coming

to get jewellery made for special occasions, or just for fun. Gold remains important to Asians, both as ornaments and investment, says Thanalaxmi. “Gold is never out of fashion,” she said. It is especially sought after for weddings like the thali, a gold marriage necklace given to the new bride as a symbol of a marital bond. It takes Raju a day or two to complete simple or familiar designs but sometimes, they get unusual requests like the one for a thick ring made from 50 grammes of gold; most rings are just six to eight grammes. The customer had asked for three separate designs to be joined into one piece. It took months to complete the order. For sure, handmade items aren’t perfect or sleek but each piece is made with pride and fine skills accumulated over generations.

Your fifth studio album, Fique, comes six years after your fourth – how come? I took the break to write as many songs as I could. I took that long because I didn’t want to put out something just for the sake of it and that I wouldn’t be proud of. I went on a hiatus without writing any songs for myself, but I did write songs for other artists. It took six years to get the 12 songs that I liked to put on the LP. I’m really proud of this album and I really want the listeners to listen to the whole album.

Fique has been described as being ‘the real Taufik’. Can you explain why this is the case? About 14 years ago I was in a hiphop group called Bonafide. I was the singer and my stage name was Fique. All I listened to back then was hip-hop, soul and RnB. When I won Singapore Idol I started using the name Taufik Batisah as a stage name. So that became my career as a ballad and pop singer, but I still loved RnB and hip-hop. So this album, as a whole, represents both Taufik Batisah and Fique. I just wrote all the songs I like. My label gave me the freedom to do whatever I liked, and that’s exactly what I did. You’ve got countless awards, where do you keep them? I put all of them in my home studio, on my piano or on my working table. What award are you most proud of? Honestly, I’m proud of all of my awards, but I would say especially the ones that the fans voted for, because it means a lot when they put in the effort to vote for me. Without my fans I wouldn’t be here. For the track Kenangan Mengusik Jiwa you collaborate with your aunt, Maria Bachok. How did that come about? I’ve always wanted to do a tribute to my late uncle, A. Ramlie, but I’ve always been afraid to perform Kenangan Mengusik Jiwa as I didn’t want to spoil his song. But then I felt there’s no better time to do a tribute, and there’s no better person to sing it with me than my aunt.

You’re clearly from a musical family. Tell us about what it was like growing up. I never realised how famous my uncle was. It’s a shame, as I would have liked to have learnt from him and learnt his perspective on things – how he dealt with it all. You’ve done a bit of acting – is this something you’d like to pursue, and how does it differ from performing as a singer? Singing is so much easier than acting. Acting is a whole different ball game. It’s so much easier to emote myself in melody. It’s not easy for me to emote myself when it’s just words. So, with acting I have a lot of learning to do. You’ve been in the world of showbiz now for over 10 years. What’s the best thing about fame? What’s the worst? The best thing is being able to write my own songs. And, with social media, I can actually find out firsthand the reaction from the listeners. It’s a privilege to bring the listeners back to a moment in their life. At the same time, with social media you will get your dose of negativity. Everybody has their own perception of you –even before they meet you. It’s just something you have to deal with. What do you do to unwind? I skate. That’s the main thing –hang out with my friends and skate. I used to play PlayStation, but I gave it away to my nephew. Have you got a message for your fans? To all of my fans, be them new or supporting me from day one, thank you so much for always being there for me. Thank you so much for always supporting what I do. The tale of a put-upon maid –whose life changes forever after she disguises herself to attend a glamorous ball, where she woos a prince –Cinderella has been re-told for literally hundreds of years. Here’s our timeline of its many versions: 1634 – The first published version of Cinderella appears in Neapolitan writer Giambattista Basile’s collection of fairy tales, Pentamerone. The popular Grimm Brothers’ version was published in 1812, while 345 variants from around the world were collected in a volume by English folklorist Marian Roalfe Cox in 1893. 1749 – Adapted for performance as an opera, a ballet, a Rodgers & Hammerstein musical and a Drury Lane pantomime, Cinderella’s story was first reimagined for the stage by French composer and tenor Jean-Louis Laruette with his comic opera Cendrillon. © 2015 Disney Enterprises, Inc.

Cinderella stories A new movie version of the classic fairy tale is the latest in its fabled history

2015 – Numerous movie adaptations followed during the 20th century, including the famous 1950 Disney animated version and the new live-action feature playing on board. Directed by Kenneth Branagh, it is a faithful retelling of the classic story. Alongside the movie, composer Patrick Doyle’s rich, romantic original score, performed by the London Symphony Orchestra, is also playing on board.

In Focus Margot Robbie stars as a con artist and love interest to Will Smith in comedy drama Focus. Here’s a rundown on the Australian actress:

Voices In My Head In The Voices, Ryan Reynolds plays Jerry, a deranged murderer who converses with his cat and dog, both voiced by Reynolds (the former complete with thick, Scottish brogue). It’s an unusual premise, but then there’s nothing normal about this black comedy, not least because the audience find themselves empathising with Jerry. ‘Jerry walks a very fine line between protagonist and antagonist,’ explains Reynolds. ‘He’s always trying to break out of the darkness and there’s something heartbreaking about that.’ Reynolds speaks warmly of a cast and crew that included Gemma Arterton and Anna Kendrick, albeit with one exception. ‘The cat just hated me, and I’ve got to say that by the end the feeling was pretty mutual.’

Living Legend TV action series Legends sees Sean Bean’s character Martin Odum working deep undercover for the FBI. Taking on any number of personas from corrupt Chicago cop to a Serbian extremist, Odum is forced to question his real-life identity when a stranger arrives with new information. It was a role that proved too alluring for star Sean Bean to turn down. ‘He’s a very deep, intense guy who goes on to play other characters, take up other personalities and identities, and totally plunges himself into those characters,’ says the British actor.

Fans are hoping Odum survives longer than some of Bean’s previous characters. A social media campaign called #DontKillSeanBean was launched in conjunction with the start of the series. So what does the actor make of it all? ‘It’s quite bizarre. I guess I’ve died quite a few times and I’ve died a lot of different deaths. Maybe it’s the quality of my death they’re fascinated by. Boy meets world Nick Jonas steps out of his brothers’ shadows with a new self-titled solo album

Musician and actor Nick Jonas was under the spotlight before his age reached double figures. At seven years old he was scouted singing in a hair salon, and soon after he began his varied career on Broadway. But perhaps he’s best known as a former member of pop group The Jonas Brothers, which he formed with his two elder siblings. The band enjoyed their peak in the late2000s selling out arenas and even starring in their own Disney TV series, Jonas. Since their split in 2013, he’s making waves on his own, carving a new musical path that’s far removed from his days as a tween icon –as is evident from his self-titled 2014 album, playing on board. ‘It’s like starting over as a brand new

artist,’ he says of his latest endeavour. ‘In making the record I really allowed myself to be vulnerable and open up emotionally.’ His new sound combines RnB and soul, taking inspiration from some of his favourite artists, both old and new, including Prince, Stevie Wonder and The Weeknd. HIGHLAND FEAST The Bario Food Festival shares a heritage of culture through food Text Nikki Lugun Photo Funky Dali

The idyllic highland settlement of Bario in the Malaysian state of Sarawak comes alive each year in July with a magnificent showcase of the cultural and culinary heritage of the Kelabit indigenous group at the Bario Food Festival. Without fail every year, Supang Galih and her retinue of traditionally-clad members of the kaum ibu or women’s group will trek up to four hours from their settlement in Pa’ Lungan to participate in the Bario Food Festival, or Pesta Nukenan Bario as it is known locally. Along with village folk from other outlying settlements around Bario, they congregate at the unique three-day festival, which this year will celebrate its 10th anniversary. Also participating in the festival are communities from across the border such as the Indonesian community of the Berian from Long Bawan who trek across the mountains from Kalimantan. The cuisine showcased at the festival is a unique blend of diverse ingredients not found anywhere else. Visitors to the festival can expect different varieties of rice wrapped in isip leaves. There are also species of wild asparagus known as lanau, mushrooms, bamboo, rattan, palm shoots and palm piths known as ubud kenangan, ferns and leafy varieties of wild spinach locally known as tengayan and dorey, and a selection of edible flowers, ferns and wild gingers found along river banks. A stall is allocated to each outlying village to feature food items from the particular area. Be it Kelabit salt or colourful grubs known as kelatang or even river snails known as akep, the diversity of the cuisine is spectacular. The festival promises an amazing experience. It is not only the food that makes this festival extraordinary, it’s the people – the gentle highland folk who put in their best effort to showcase their wonderful cultural heritage and legendary hospitality.
