AS A TEENAGER GROWING UP in the 1980s, my friends and I danced to the fantastically catchy Let’s Dance after school for a while. The song was infectious, with an alien edge that was reflective of the new wave subgenre of that time, much like Thompson Twins’ Hold Me Now and Depeche Mode’s Master And Servant. His death prompted a massive outpouring of love and tribute, and in this issue, our resident columnist, Kam Raslan, too pays homage to Bowie’s inimitable influence on a part of his life.

Alternatively, if you’re looking for travel that’s a bit more laid-back, Napier in New Zealand’s oldest wine region of Hawke’s Bay may just fit the bill. Famously known as the Art Deco capital of the world, rivalled only by Miami’s South Beach, take on city excursions, beach strolls, or sign up for bike and wine tasting tours. Napier can be reached by flying into Auckland from Kuala Lumpur, a route with daily flights operated by Malaysia Airlines. We get a lesson on Kelantanese cuisine in our food story this month. Sweet, with influences of Thai cooking – think rich and creamy curries – get acquainted with the dishes in Kesom, a restaurant run by two very affable ladies, in the Malaysian suburb of Petaling Jaya. If the taste hooks you and you want to experience the cuisine in its authentic settings, make a trip up north to Kelantan one of these days.

As we come to the end of the first quarter, if you have not made new resolutions or goals you hope to achieve by the end of the year, do consider helping out Teach For Malaysia, an independent, not-for-profit organisation with a noble mission of ending education inequality in Malaysia. Read about them and the good work they are doing in our Giving Back section. I would also like to apologise for an error in the Up Close section of our February 2016 issue, in which we inadvertently described Fidel Castro as the late Cuban President. I read recently that 2016 should be a year of experiences if you have money to spare. With the global economy expected to go through tough times this year, bonuses, if any, should be used to gain more life experiences than, say, spent on a car or on an expensive watch. If you buy into this theory and you’re still thinking of where to go for spring break, why not visit Tokyo. With its high energy and visual overload, Tokyo is a megalopolis with its share of ancient temples, exquisite gardens and an imperial palace that is home to the Emperor of Japan. Go between the last few days of March and the first two weeks of April to see Japan’s famous cherry blossom season. So symbolic

Hey Going Places team, As I sat down in my seat en route to Saigon this morning from KLIA, I picked up my copy of Going Places and thumbed through, stopping to read the Editor’s Note and was almost cynical about what changes I would enjoy, having been an Enrich flyer for years now. But boy must I say this, by the time I got through cover to cover, KUDOS! You folks have nailed it. I have not thoroughly enjoyed an in-flight magazine this much. The lady in the seat beside me was probably thinking I was slightly batty in the head as I kept whipping out my iPhone (in airplane mode, fret not!) to constantly snap pages of useful information. Thanks to you I’m definitely going caving in Taman Negara and will check out the Green Canyon in Sabah too. What do you love most about this city? It’s still the best place to go for food! The simplest rojak hawker stall or chicken rice restaurant that I used to visit with my grandparents are all still in business today.

One thing about the locals. Milaneses are very fashionable no matter how old they are. They put a lot of effort into their dressing.

What is your favourite local dish from here and where can we find it? There are two dishes that I will never fail to eat when I return home. The famous chicken rice balls near Christ Church (the corner restaurant next to Hard Rock Café). Still a family-run business with their recipe handed down from generation to generation. Be forewarned though that there is a long queue every day. The other favourite dish is the famous satay celup at Ong Kim Wee. You cannot find this anywhere else in Malaysia. Again, a family-run business, and their sauce is not commercially sold. Where would you take a first-timer to in this city? Local restaurants that only locals would go to. For sightseeing, it'll be the Nyonya Museum or Jonker Street for good reasonably priced antiques or take a boat ride to get a historical lesson of Melaka. What is the one thing that the first-timer must do in this city? Trishaw rides! They are entertaining as individual trishaw owners have souped-up their trishaws with unique decorations such disco lights and even, music. But what is most important is that these trishaw pullers, who are usually in their late 50s, are the best tour guides. The best place to have dinner with: a. family – home with all the ladies in the family cooking a meal together. It’s a dying trend nowadays. My family and I still ensure we keep this tradition alive by cooking or having a meal together every month despite our busy schedules and my frequent travels. b. friends – new places. We are a crazy bunch. We can drive 2-3 hours if there was a worthy place to eat! c. colleagues – at one of our favourite spots. Name one souvenir to bring home. Local delicacies like coconut candy and the local roasted coffee. Five words that sum up this city. Charming, full of character, life, love, and history.

What do you find most refreshing about this city? The air of romance, and the smell of espresso coffee almost everywhere. Name the café/restaurant where you had the best: a. coffee – Cova Montenapoleone. b. lunch – The Small at Via Niccolo Paganini. c. dinner – La Vecchia Lira. The best thing you can do here for free Joining Italian families and colleagues for their festa every night. What was the best experience in this city for you? Seeing the Italian way of bonding through food and wines with their family and friends. Your favourite memory of the city or its surroundings? Going to Lake Como and spending “me time” by the lake. It has the most amazing view. The one thing you would do again if you went back. Eat all my favourite pastas and pizzas! A lesson learnt from this city. Italians are a very close-knit lot, and they treasure the time they have with the family. You see them spending lots of time together every evening. It has taught me that no matter how much work we have or how much we travel, finding time to spend with the family is very important. What was the best piece of souvenir you took home from here? Salami and Burrata cheese! Name something they have here that you wished you had at home. A market where they sell fresh homemade pasta, buffalo cheese, Mediterranean fish, and a vineyard where we can sip wines!

David Bowie – My Part In His Fame I BOUGHT MY FIRST BOWIE ALBUM in 1979. I was standing in a record shop near London’s Marble Arch holding his newly released album Lodger and Led Zeppelin’s Physical Graffiti, trying to decide which would be the first non-Beatles album I would ever buy. I knew this was an epochal moment; much hinged on my decision. I was in London to meet relatives visiting from Malaysia at a time when all Malaysians visiting London would stay near Marble Arch. This is probably because it was near London’s only Malaysian restaurant, Rasa Sayang. So I was trying to decide which album to buy when suddenly a girl spoke to me and she said: “I love Led Zep.” This was a dream come true, a girl was talking to me, and I was absolutely terrified. I threw away the Led Zeppelin and ran to buy the David Bowie, which I listened to avidly all that summer as I recovered from my circumcision. And so began my enduring love for David Bowie.

Having been a fan of David Bowie since the age of 13, I was devastated by the news of his death in January. But I felt devastated in an uplifted kind of way because his music and art have played such an important role in lives of millions around the world. Tributes

have been written of how his ever ch-chchanging musical personas of Ziggy Stardust, Aladdin Sane or the Thin White Duke have inspired people to know that it’s OK to be different. In fact, it’s not just OK, David Bowie showed that it can be a winning formula, even if his non-conformity can be frightening for many. He certainly had an immense impact on my life but in all the outpouring of tributes I have not seen any mention of the role that I have played in his legacy. It’s time the world knew about my part in David Bowie’s fame. For all his flamboyance and exuberant artistry, David Bowie was a very private man and his fans knew little about his home life. Did he like to watch TV while eating his dinner? Did he dress up as Ziggy Stardust when doing the housework? He never told us. But in the 1990s he allowed Architectural Digest magazine to photograph his Indonesian-style home on the Caribbean island of Mustique. It was a beautiful home (he sold it in 1995) and I scanned the photos intently. I have bought all of Bowie’s albums on vinyl and CD and although I never paid to see him perform live, I did pay money to see him act in several of his movies. My financial

True aficionados of the David Bowie catalogue know that he did his best work in the 1970s between the albums Hunky Dory (1971) and Scary Monsters (1980), all before he bought his Mustique dream-home and my cushion. But after all his remarkable achievements in the 1970s, he fully deserved the right to relax on my cushion. There were some career highlights in these later years and I think it’s almost certain (and so-called “science” can’t prove otherwise) that it was while reclining on my cushion that Bowie perfected his role as Jareth the Goblin King in the 1986 movie Labyrinth, where he decided to finally terminate the failed musical experiment of Tin Machine, as well as enjoy stunning Caribbean sunsets in the company of his supermodel wife Iman and his Mustique neighbour Mick Jagger, all of whom, I am certain, commented on the exceptional comfort of my cushion. That cushion is my material contribution to the David Bowie legacy but the parallels in our lives don’t end there. First of all, I grew up in England in the town where David Bowie’s parents met. If that’s not enough, then later I moved to Brixton in London and lived just two streets away from his childhood home but he really came of age in Bromley, which I used to drive through a lot! Furthermore, I had an amazing time when I visited Berlin and listened on my iPod to his album Heroes, which he recorded there in 1977. I think you’ll agree from the evidence I have shown that the connections between David Bowie and me are too strong to be ignored. Well, maybe not so much. But unbeknownst to him, he has played an enormous role in the lives of millions, for all of whom he is the hero, forever and ever.

Tell us a bit about yourself, and how you ended up being in property development. I have always been interested in property since my university days in Hawaii where I was inspired by so many beautiful hotels and resorts on the island. As a student, I had the opportunity to work part-time for a Japanese real estate company in the sales and leasing department. My interest grew upon my return to Singapore, especially after joining big corporate real estate companies such as Jones Lang LaSalle, Banyan Tree Hotels and Resorts, and Capitaland. The opportunity to work in these real estate companies gave me a holistic experience in the commercial, residential, and hospitality sectors.

Headwinds are expected in the Malaysian property market this year. Do you agree? Please elaborate. The global economic slowdown and the oil crisis have hampered growth for most countries. The real estate sector, and not just Malaysia but regionally, has been affected. In Malaysia, banks have been tightening credit since 2014, limiting real estate growth. The government's policy move to ban the DIBS scheme or Developer Interest Bearing Scheme that created a lot of speculators earlier – whilst helping to spur real estate growth – has helped to normalise real estate prices to prevent a property bubble and benefit the market in the long run. Is the current market conducive for property buyers? What type of development is in demand right now? The current market presents an opportunity for those seeking bargain buys. Basically, it’s a buyer's market now. For investment, the residential sector in prime city locations is still an opportunity for those seeking better yield and capital appreciation in the long run. Tell us about Star Residences. What is unique about it? Star Residences will be one of the tallest mixed residential and commercial developments in the Kuala Lumpur city centre when it is completed, with a total gross development value of more than USD700 million (RM3 billion). This mixed development on a 1.6-hectare site has two key components, comprising three residential towers and one signature retail, F&B and entertainment hub. The name Star is synonymous with celebrities. A key highlight of Star Development is the 200-metre Star Walk of Fame in front of the F&B and entertainment hub. The Star Walk of Fame is set to become Malaysia's new tourism attraction. Datuk Jimmy Choo, the world-renowned shoe couturier, is the Star Ambassador and the first celebrity to lend his hand imprint for the Star Walk of Fame. Furthermore, Star Residences is the only development in Kuala Lumpur with three “skyparks” overlooking the iconic Petronas Twin Towers. Another key feature is the 9,290 square metres of facilities on Level 6. The whole design is modelled after the W-hotel concept. There is an oversupply of premium residences in Kuala Lumpur. Will this affect Star Residences? If no, why? Property prices in the Kuala Lumpur city centre have lagged the suburban areas for quite a while. Suburban property prices have come up faster to between USD280 and USD360 (RM1,200 and RM1,500) per square foot, while KL city prices have been moving up more gradually to between USD360 and USD840 (RM1,500 to RM3,500) per square foot. Star Residences’ Tower 1 is approximately USD400 (RM1,700) per square foot and Tower 2 is about USD480 (RM2,000) per square foot.

Given this lagging scenario, and looking at what is justifiable for city centre properties, USD330 to USD360 (RM1,400 to RM1,500) is not justifiable. It should at least be 30-50 percent more. This is the case in Singapore, China

2 and anywhere else in the world for that matter. Hence, with Star Residences’ prime location next to the Petronas Twin Towers, there is room for prices to move up. Moreover, there is a scarcity of land in the city centre area. Even if prices don’t move up, the value will at least be maintained. With the infrastructure that is coming up, for instance, the Mass Rapid Transit (MRT) and the (Malaysia-Singapore) High Speed Rail projects, the value of properties within a 500-metre radius will be 30-40 percent more than those in non-MRT areas. When will Star Residences be completed, and what do you think the value will be like then? We are looking at about USD720 (RM3,000) per square foot for Star when it is completed in 2019. For investors from China, Taiwan and Hong Kong, Malaysia is deemed as very cheap compared to Singapore. The feedback that we have received is, Star is value for money. For the sake of comparison, other developments within the vicinity, for instance Four Seasons, is selling for USD840 (RM3,500) per square foot, W Kuala Lumpur for USD600 (RM2,500), and 8 Conlay for USD770 (RM3,200). So, Star is affordable for these investors. What are some of the other features of Star Residences? There will be 1-star, 2-star, and 3-star Michelin restaurants. We intend to talk to chefs such as Joël Robuchon to get him to open a restaurant here. There will be a Madame Tussauds wax museum to correlate with the Star Walk of

Fame. We are also looking at having exclusive clubs to cater to the affluent clientele. That’s the kind of lifestyle that we want to ignite here. Who are the celebrities you are targeting to bring in for the Star Walk of Fame? Datuk Jimmy Choo has many friends. He has indicated to me personalities the likes of Will Smith, Madonna, and David and Victoria Beckham. I will work closely with him to bring in all these celebrities.

Durrah’s Touch “WHEN I THINK OF MY MOTHER, I think of Elizabeth Taylor

with all her decadent fine jewellery,” says Durrah Khalil, the Malaysian-born, London-based designer and founder of boutique line Durrah Jewellery. “My favourite memories were spent with my mother on Rue du Rhone in Geneva, Place Vendôme in Paris and of course, Bond Street in London, where my heart would always skip a beat,” she says, recalling how she fell in love with jewellery at a young age during family trips to Europe. “I would run up to see all the beautifully decorated windows and all the diamonds sparkling inside.” As a child, Durrah eyed her mother’s collection of jewellery with fascination. Bvlgari, Kutchinsky and Patek Philippe were household names. Her older sister later became an ambassador for Mont Blanc, which also influenced her own ventures into the world of jewellery. Durrah entered the world of jewellery-making about 10 years ago. She got her break in the industry after a chance meeting with Antoine Bakhache of the luxury jewellery house Mouawad, who would later become her mentor. A couple of years later, Durrah joined Tiffany & Co. She then went on to study diamond grading, jewellery design and manufacturing at the Gemological Institute of America and London’s University of the Arts. In 2013, Durrah launched her own line, first in London, then in Kuala Lumpur and New York. Her designs are a playful yet elegant take on everyday luxury, from silver birds to woven cuffs and dimpled pebbles. Each piece of jewellery is finely wrought by artisans in Italy and plated with sterling silver or gold. Her pieces are sold in boutique stores around the world, as well as online to an international base of customers.

For Durrah, who grew up in Kuala Lumpur, travel has always fuelled her imagination. “Every time I am somewhere for too long, I start to feel a little bit of a creative block,” she says. “Travel, I feel, widens our horizons without much effort. Our minds are opened and given a new perspective. The people, the food, the colours, the sounds – they are an absolute feast for my senses.” “My favourite city to recharge my batteries will always be London, with its ever-changing flavours and textures against a very culturally rich and diverse history. Everything and everyone looks different depending on where you are standing.” Similarly, when it comes to her designs, Durrah’s influences are diverse and global – ranging from Malaysian fashion icons Bernard Chandran and Jimmy Choo to the Canadian interior designer Robert Bailey. She would love to collaborate with fashion labels Apiece Apart, IRO, and AllSaints one day. As for her own personal style, Durrah likes to keep things simple, as you’d expect from someone who’s often on the move. “I have pieces which are staples, that can be a consistent canvas for my jewellery. I live in denim, jersey and leather!” Each week, the designer picks out different jewellery pieces to wear depending on her mood. She has worked with many precious and semi-precious stones over the years, and each evokes different emotions for her. Diamonds have never lost their lustre, she says. “I feel that diamonds are very interesting, from the way they are formed to the absence of colour, to the way they interact with you. They are said to have metaphysical

qualities that give you strength, clarity and truth,” she says. Durrah’s other favourites to work with include rubies, pink tourmalines and rock quartz. Three years into her business, Durrah has seen several milestones. Her designs have been featured by leading fashion magazines and have also been worn by the likes of British band Little Mix and Game Of Thrones star Natalie Dormer. “I love being my own boss and living and breathing my passion,” says Durrah. But despite the exhilaration, being the boss brings its fair share of challenges. “I often overestimate how much time I actually have! I always start my day with yoga to clear the slate and reset my mind. Then, I will either work from my home office or head to my favourite coffee spot to get through my emails, social media channels or to brainstorm. I normally have a never-ending To-Do list so I methodically go through this and check things off.” A good cup of coffee is essential to finding her groove, she says. In the evenings, she unwinds by cooking and listening to music and audio books. Durrah jokes that if she wasn’t a jewellery designer, she would be a secret agent. “I absolutely adore the Bond films and they influence me greatly – so much so that just after I had decided to start my diploma in Jewellery Design, I saw an advertisement for MI6 and thought for a brief moment that perhaps I ought to join them!”

2 “My obsession with becoming a secret agent still continues. Let’s just say I am a very good detective!” In both her day job as a designer and her fantasy career as a spy, Durrah plans to leave no stone unturned. In the future, she would like to have a brick-and-mortar retail store for her business, but she also has an eye on her homeland. Last year, Durrah received a letter of recognition from Malaysia’s Ministry of Tourism and Culture. “I would like to continue working closely with Malaysian heritage jewellery designs to make them relevant for today,” she says, noting her collections, Cylinder and Bird, were particularly influenced by Malaysia. “We are a country full of talent that needs to be celebrated and exposed to the world,” she says. Like her intricately designed birds, the warm and bubbly Durrah is poised to take flight.

THIS BUSTLING, SUN-DRENCHED CITY set amid the renowned wine-producing region of Hawke’s Bay on the east coast of New Zealand’s North Island is often referred to as the Art Deco Capital of the world. As you make your way around the centre of town, it’s easy to see why. After the city was all but wiped out by a devastating earthquake in 1931, it was rebuilt over the next decade in a range of styles popular from the era, including Spanish Mission and Stripped Classical. Chief among Napier’s architectural styles, though, is Art Deco. These days, the city is notable for its Deco buildings, chicly adorned with speed lines, sunbursts, geometric patterns and the style’s characteristically flat roofs.

Famous Chicago architect Frank Lloyd Wright’s Prairie Style was used by New Zealander J. A. Louis Hay in the rebuilding of the city. Today, thanks to only a few Art Deco buildings having been replaced in the 1960s, 1970s, and 1980s, a large part of Napier has remained intact for the city to be recognised as architecturally important. By 1989, a two-day Art Deco Weekend was started; it has now turned into an event attended by over 70,000 people dressed from head to toe in 1930s outfits. They don’t just marvel at the city’s architecture, but turn out to see hundreds of vintage cars, warbirds and steam trains alongside over 200 events, including concerts, car parades, aerobatic displays, fashion shows, Great Gatsby-themed picnics, and train rides.

IT WAS ONE MEAL that changed these two women’s lives.

Susan Lim was working as a manager at Blöok, a Malaysian fashion retailer, when she returned to her eastern home state of Kelantan for a break. There, she decided to prepare nasi kerabu – an elaborate Kelantanese rice dish – to bring back to Kuala Lumpur for an office party. Her boss, Blöok founder Edana Lim Parina, sampled it and was incredibly impressed. “It was my first taste of authentic nasi kerabu,” Edana recalls. “It was the best. I never forgot it.” The experience eventually encouraged Edana and Susan to open Kesom, a café that specialises in kampung (village) flavours, with a focus on the food of peninsular Malaysia’s east coast. Over the past two years, Kesom has become Klang Valley’s most reliable destination for Kelantanese cuisine, thanks to its founders’ painstaking dedication to preserving culinary traditions. Kesom, located in the Aman Suria residential neighbourhood, is one of the rare contemporary venues that succeeds in conveying the complex flavours of Kelantan to an urban market. This is no easy feat, since it involves recognising where to find the finest herbs and spices

for Kelantanese fare and mastering the time-honoured techniques of making everything from scratch. “This has been my dream for a long time,’ Susan says. “I’ve loved cooking and feeding people since I was young. My mother is a terrific cook, and she has been my main inspiration. And I have aunts who work in farming in Kelantan’s rural districts. So I enjoy it when customers tell me that my cooking tastes like what their own mothers and aunts made for them.” Kesom’s name refers to a popular herb in Southeast Asian gastronomy; it’s commonly believed to have calming properties. Edana and Susan chose it to reflect their vision for running a restaurant where customers can relax, feel at home and savour family-conceived recipes. The outlet, converted from a Blöok boutique into a café, marks Susan’s first foray into professional cooking, but she and Edana make a formidable team. Edana was once part of the service team at a Malaysian-Thai eatery in Melbourne, so her understanding of restaurant operations helped Susan adapt from cooking informally for friends to whipping up a menu for an entire establishment. “Everyone basically said we were crazy to open a restaurant

like this,” Susan remembers. “But we were determined to get it right. We made trips to Kelantan to find suppliers. And I had to learn how to work in a restaurant’s kitchen. When I cooked at home, the most I ever prepared was one whole chicken. Here, I suddenly had to cook 10 kilogrammes of chicken, and I had to use a big wok. At first, I sometimes burned my spices because I couldn’t handle a highpressure stove.” What ensures Kesom’s potency is Susan’s intimate and instinctive discernment of Kelantan’s culinary heritage. For her signature nasi kerabu, she leans on the familiar method of using the extract of butterfly pea flowers to dye the rice blue and to supply extra flavour. But unlike most makers of nasi kerabu, Susan cultivates the plant in her own garden and spends an hour daily plucking the produce, declining to purchase it elsewhere over concerns of pesticide use. The steamed nasi kerabu, made with high-quality basmati rice, is served with a vast variety of accompaniments, including a coconut-based gravy that takes hours to cook, flavoured with shallots, turmeric and lemongrass. The rice is meant to be mixed with a fragrant ulam (raw salad) of winged beans, torch ginger and other vegetables, as well as coconut floss and fish floss, for a combination flooded with fresh, robust flavours and invigorating textures. Nearly every component takes a series of steps to create: The

crispy coconut floss is sun-dried, pan-fried and pounded, while the fluffy fish floss is steamed, salted and squashed. Coupled with spiced fried chicken, the substantial serving of nasi kerabu is an affordable bargain that costs barely USD3 (RM13), underscoring Kesom’s commitment to placing customer satisfaction above excessive profits. Some visitors were initially reluctant to try the nasi kerabu because they feared the raw vegetables, but many found themselves enjoying it. “Early on, we even received one order for 180 servings of nasi kerabu to take away for a gathering. But at that time, we could only prepare 20 a day!” Edana notes with a laugh, adding that patrons from Kelantan have been supportive in spreading the word about Kesom to friends. On weekends, Kesom can now sell up to 300 servings of rice dishes, including nasi dagang (reddish wild rice steamed with coconut milk and fenugreek and served with tuna curry) and khao jam (rice cooked with the juice of around 30 herbs collected from Kelantan’s jungles, served with raw beansprouts and chopped kesom leaves).

artificial preservatives. Kesom’s beverages are also intended to be wholesome, with ingredients like lemongrass, pandan leaves and dried plums, shunning cheap commercial syrups. Edana and Susan say they’ve received suggestions to open more branches, organise cooking classes and publish cookbooks. But the women insist on more modest goals, such as starting a meals delivery service. Edana continues to separately helm her fashion business, and she refuses to risk compromising Kesom’s standards with an aggressive expansion.

Other dishes also require meticulous thought and effort. Gulai ayam kawah, a chicken curry typically cooked in big pots for celebrations, is made with curry powder sourced from Pasir Mas, Susan’s hometown in Kelantan. The intensely aromatic powder is produced by ethnic Malay women according to household recipes handed down through multiple generations. It’s not too fiery, so even children can relish the curry. Sweet temptations include bubur cha cha (a warm, colourful dessert with yam, sweet potatoes and chewy jelly) and ubi kayu sira (boiled tapioca in palm sugar syrup), all free of

But ultimately, in a business like this, you need good recipes, and that’s what Susan is able to offer.”

Avant-garde Chef Michelin-star chef rides wave to innovate Kuala Lumpur’s culinary scene.

Welcome to Jeff Ramsey’s world of Molecular Gastronomy – the blanket term used to describe a method of cooking that is probably more Einstein than Julia Child. Many Michelin-starred chefs like Heston Blumenthal and Ferran Adria prefer terms like modernist or experimental cuisine, deconstructivist or even technoemotional cuisine but sometimes they just call it “a new approach to cooking”, and that is exactly what Ramsey is bringing to Kuala Lumpur’s already-exploding food scene. Even before BABE was launched in November last year, the hype surrounding his “fun dining” establishment serving Japanese-accented tapas – or “Japas” as he calls it – in the affluent suburb of Damansara Heights, had hit overdrive. Here was Malaysia’s first restaurant by a Michelin-star chef. Japanese-American Ramsey was only 32 and helming the Tapas Molecular Bar in Mandarin Oriental Tokyo when it received its first Michelin star.

Fun Dining You could say there are two main components to the menu at BABE – science and fun. Partnering with Kuala Lumpur-based BE Group, which has a wellness centre and gym, Ramsey is out to create a multi-dimensional experience for diners, especially wellness buffs, through his food. the night – BABE is the good-times counterpoint to BE’s healthcare regime. In explaining how the name came about, Ramsey says it was based on the concept they had for the food, representing the “Best of Asia”, as well as a new way of doing things. The initials to the catchphrase (the letters B and A) combined with the BE of BE Group became BABE. Although the menu is maintained as mainly Japanese cuisine, he wanted to incorporate something local in the menu. “We’ll do whatever is the best here and put our spin to it by incorporating the best of Malay, Indian, and Chinese flavours into the food,” he says. “To really get people to feel something from eating your food, they have to love it. The food that touches your soul is the food you grew up with, right? We can give you something you remember from your childhood but in a completely unexpected way that makes you say, ‘how in the world did they come up with this?’ We’re focused on fun, social, lifestyle experiences.” “With the launch of our a la carte menu (tentatively in March), we’ll have a few health-driven dishes although our main thing is not a focus on health. It’s about the fun, the dining, (and) the tasting experience. A good life is about creating that balance, and a full life is pushing those two sides of the extreme. We are the extreme of the enjoyment part of that lifestyle,” he explains.

New Way of Doing Things Ramsey is not just introducing a new approach to food and lifestyle in Kuala Lumpur, but also a new work culture to the restaurant industry. When asked about the challenges in setting up BABE, he reckons he probably had it easier than most in terms of staffing due to his Michelin-star status, which attracted local talent. “The most difficult part was to get guys who have never been exposed beyond their hometowns to try to understand where you’re trying to go to,” he says. To help them along, Ramsey and his team prepare lists of YouTube channels and books pertaining to food for staff to look up to better understand his concept.

To get wait staff more involved, Ramsey is teaming up with other chefs around the city in a “training system” he came up with. Under this system, staff from one restaurant will eat at another at a discounted price, after which they’ll report and share their experience, and their boss will contribute to the bill. Ramsey calls this a bonus for everyone involved as it trains staff to be better servers, a network is created and everyone grows together. Ramsey also has a garden on the rooftop terrace of Clearwater Residence, a luxury condominium next to the building where BABE is located. He describes the garden now as a hobby but hopes it will eventually yield highquality herbs and vegetables to supply the restaurant. Urban gardening is a relatively new concept in Malaysia and BABE is partnering Eats, Shoots & Roots to grow the garden. For now, Ramsey sources his greens from A Little Farm In The Hill in Janda Baik, and from several other local farmers. Ramsey credits famed Japanese restaurateur Nobu Matsuhisa for opening his eyes to Kuala Lumpur. “I think Nobu sort of gave a signal to other international groups that Kuala Lumpur is ready. If he could do it, then we could do it too,” he acknowledges. On the cards are plans to bring in other Michelin-starred chefs for pop-ups and other collaborations. “There’s so much possibility here. People are crazy about the next big thing. It’s like, ‘what’s next?’ They want it. They’re hungry for it. So I think we’ll just be part of that wave, building the name of Kuala Lumpur."

1 KEEN TO UNPLUG and return to mindfulness, adults are turning to paper and colouring pencils. As anyone who has seen an adult colouring book would know, this activity is no longer just for children. Much of its appeal is rooted in nostalgia, but it also acts as a tool for relieving stress and for relaxation.

Adult colouring books have been around for years; Dover Publications published the first book called Antique Automobiles Coloring Book in 1970. Sales were modest, and it wasn't until a couple of years ago that colouring books for adults caught on as a global trend. Dover now has hundreds of titles under its Creative Haven and Dover Masterworks series. Last year, the company celebrated the first National Colouring Book Day on 2 August. Such is its popularity that on Amazon's bestseller list for 2015, five out of 20 books were adult colouring books. An adult colouring book, featuring mandalas and henna-inspired flowers, animals, and paisley patterns, was among the top three books sold, according to its annual post-holiday report at the end of last year. In Malaysia, MPH Online now offers 105 different titles for adult colouring books, while Popular bookstore has three racks dedicated to them.

Unsurprisingly, with its voracious appetite, Beijing has been dubbed the colouring capital of the world. With wanderlust in her heart, her favourite book is Colouring the World by William Sim. "As the title suggests, I like this book because I can re-colour the town that I have visited and it is a fun way to travel around the world," she says. Her friend, Thiya Arifin, is relatively new to the whole phenomenon, having only started on Basford's Secret Garden. "IÂ have always loved art and it was one of my favourite subjects in school. With age and a busy life, I find it hard to take the time to draw or colour; therefore this helps to bring out the creativity in a small way," says Thiya. 3. mandalas and geomatric shapes. Popular culture is getting into the game with Warner Bros launching adult colouring books themed on Harry Potter. Other themes include illustrations for Game of Thrones, Alice in Wonderland and Sherlock, based on the BBC drama series. Lawyer Nadia Abu Bakar got into adult colouring books when she spotted a friend's post of a coloured-in page on Instagram. "It instantly hit me. The very next day, I purchased my first colouring book. Personally, I like colouring because there is a variety of mediums that I can experiment with, such as coloured pencils, pens or crayons," she says.

With the growing interest in adult colouring books in the country, Mushirah Mohd Yusuf, also known as Haliza, started the Malaysian sector of the Colouring for Adults Facebook group. The group, numbering almost 3,500 members, organises colouring contests and giveaways, while sharing demo videos, tips and information on new tools and books. Members who score hard-to-get colouring memorabilia get temporary bragging rights, but most are there to share information and advice. In 2015, they organised the first Colourist Gathering in Kuala Lumpur. "Adult colouring has become the trendiest thing in the past years but countless colourists all over the world know that

this activity is not a recent fad. It allows people to express their creativity, even if they feel they have limited talent and ability," says Haliza. For some, colouring has segued into exploring other avenues, such as creating illustrations. Olivia Julius Dunggat discovered adult colouring books in 2012 as she was browsing the Internet and stumbled across a website that was giving out free colouring pages. "The drawings were so beautiful and intricate. Needless to say, I was intrigued. We all heard about colouring books for children, but colouring books for adults? That is so cool!" she enthuses. Having tried the sample pages, the mother of two was hooked. After colouring for several years, she recently published her first colouring book for adults, called Sarawak Tattoo Mandalas, illustrated with rich traditional motifs from her Iban culture. "I have seen a lot of beautiful designs from colouring book artists all over the world, but sadly none showcasing my people's rich traditional motifs. I took up the challenge and made my own designs, inspired by traditional Iban and Orang Ulu's tattoos." Dunggat has her own Facebook page called Coloring is Hip, where she showcases her own coloured-in pages as well as share colouring news and tutorials.

There have been some brickbats levelled against adult colouring books as a form of art therapy, but to the adults who colour, it is a fun and relaxing activity that allows them to unwind. "When I colour, I can forget my problems and just focus on the task at hand and colour away. It helps me to clear my mind. It makes me think better, which in turn helps me to solve my problems better," says Dunggat. It was a matter of time, however, before this low-tech activity made its way onto our gadgets. Apps like Colorfy offer in-app purchases of drawings of florals, animals, patterns and mandalas, which you can then tap to colour in between the lines. The finished work can then be easily shared via social media such as Facebook and Instagram. Even Millie Marotta, of the Animal Kingdom colouring book fame, has launched an app called Millie Marotta’s Colouring Adventures. Whether on paper or digitally, it looks like adults are going to continue to pick up their pens and colour their way to relaxation.

RAYMOND PRAKASH VIJAENDREH got his first taste of teaching when he helped tutor his cousin. Originally from a rural area of Sarawak, Romeo was struggling with his studies until he came to live with Raymond's family in Kuching, the state’s capital city. With access to better education and an encouraging support system, Romeo would graduate from secondary school with good grades. To Raymond, it brought home the point of educational opportunities for all.

"This left a lasting impact on me. I wanted to be part of the solution, and to give back to my community and try to influence lives less fortunate than mine. Teach For Malaysia (TFM) was a natural choice because it offered me a way into the education sector. I strongly believe that there aren't many better ways to serve than being a teacher," reflects Raymond.

A mechanical engineering graduate from the University of Colorado, Raymond teaches Form 4 and 5 Physics, Form 2 English and Form 1 History at a school in Subis, Sarawak. Besides teaching, he has set up an after-school literacy programme using his students’ interest in football to motivate them. He notes a modest but gradual improvement in their English language scores after a year in implementation.

Raymond is one of the fellows of TFM, an independent, not-for-profit organisation that recruits the brightest graduates, trains them and places them in high-need schools in Malaysia for a two-year teaching programme. It is a nationwide movement aimed at eliminating education inequality in schools, while providing a solid leadership programme for graduates.

"I would like to instil a sense of curiosity and joy of learning. Students must be empowered to not only learn but take control of their learning. As clichéd as it may sound, change must start from the bottom, and if we want to develop an informed and mature society, schools are the place to start," he says.

TFM was founded by Dzameer Dzulkifli and Keeran Sivarajah, both colleagues at PricewaterhouseCoopers. Inspired by the successes of initiatives like Teach For America and Teach First in the UK, they started developing the framework for the Malaysian social enterprise with help from the Teach For All network.

In order to facilitate its programmes, TFM looks for high-performing graduates and professionals from all disciplines. The essential qualities that they look for in potential fellows encompass a whole range of leadership competencies, including respect, humility, and an ability to work in a team and in different communities.

The first batch of fellows was sent out in 2012; TFM currently has 240 fellows and alumni in over 80 schools in nine states, impacting roughly 36,000 students in Malaysia.

"The key differentiator that we have seen is perseverance. Did you lead a team? What results did you deliver? Have you faced an obstacle and did you do everything possible to solve it and not give up? Because when it comes to a passion in making a difference in people's lives, everyone is passionate. But who is the one who is going to go the extra mile to do what is needed?" asks Dzameer.

Recruits are then put through an intensive two-month training, where they are taught pedagogy methods as well as leadership training. This is followed by KemSKORlah, a three-week practical course, where the fellows will be observed and mentored as they engage in real-classroom situations. For some, the two-month pre-service training is not enough to prepare them for the realities of teaching, whether it is dealing with unruly students, motivating them to study or even dealing with their colleagues. With a more stringent selection and training process, TFM's dropout rate fell from 10 percent to 4 percent in its last intake. For the current cohort, a penalty will be imposed if a fellow does not finish the two-year teaching term. "We encourage a lot of self-reflection before they even start. We make the two-month pre-service training a lot harder. They have to own the process," says Dzameer. Throughout their teaching years, the fellows will receive mentorship and on-the-job training on managing students, dealing with peers and problem-solving. As part of the Fellowship, all the fellows are given a full scholarship for a teaching qualification accredited by the Ministry of Education. After the two-year teaching programme, a few fellows stay on as teachers, while others go on to pursue other career

options. TFM helps facilitate the onward process, tying up with corporate partners to provide opportunities and a growing network for their alumni. Currently, 30 percent of TFM's alumni have stayed on in the classroom. Alumnus Jessie Chew continued in the education sector as the Education Manager of Eco-Schools Programme at WWF Malaysia, which works with schools to become more sustainable. "Professionally and personally, I have learnt that there are a lot of things that can be done without being at the top. We need more people on the ground to make change happen. There is a lot of possibility just waiting for us to explore, and it is extremely important to collaborate with others and multiply the effects of change," she says. At the recent GRADMalaysia Graduate Recruitment Awards 2015, TFM won the Best Management Trainee/Graduate Programme. "The true magic of TFM happens after the training, for both the alumni and the students. You will see the impact in the next 10 to 15 years. We are very young, and still in our early days," says Dzameer.

Menerusi sesi jelajah ini, pengunjung berpeluang untuk mendekati warisan rumah tradisional Melayu. Kebanyakannya diperbuat daripada kayu dan berbumbungkan atap zink serta dihiasi ukiran halus dan tingkap kaca berwarna.

Di kebanyakan perkampungan Melayu, masjid lazimnya merupakan destinasi tarikan utama. Gabungan nilai estetika seni bina Islam dan Mogul menyerikan lagi keindahan masjid yang disemarakkan dengan pintu gerbang berdinding mozek ini.

Setiap rumah warisan masyarakat Melayu ini bukan setakat menarik dari segi seni binanya. Malah, setiap satunya adalah nadi kepada kesinambungan adat resam dan sejarah perkembangan Kampung Bharu. Contohnya, rumah-rumah yang dibina di atas kaki bajang ini sebenarnya untuk melindungi penghuninya daripada binatang liar dan bukan untuk mengelakkan air banjir. Menurut pemandu pelancong kami, rumah bertiang kaki ini juga boleh menggalakkan pengalihan udara yang baik. Lebih menariknya, setiap tiang kaki ini akan ditanggalkan bagi memudahkan proses pemindahan dengan bantuan penduduk kampung ketika penghuninya ingin berpindah pada zaman dahulu! “SO CLOSE YET SO DIFFERENT” comes to mind when you embark on the Jalan-Jalan@Kampung Bharu cultural guide.

The two-and-a-half-hour walking trail wends through 10 significant sites in the neighbourhood, giving participants a taste of historical, cultural and culinary influences that have shaped the village. On this walkabout, expect to sample kuih-muih (Malay sweets) and teh tarik (pulled tea) at a traditional warung (open-air eating stall). Watch the odd chicken run across the street. Check out old-school barbers, songkok makers, and sundry shops selling khat (Islamic calligraphy), herbal concoctions and chapal (traditional slippers). Not quite the sort of thing you would find in the Suria KLCC shopping mall, just across the river. Despite being hemmed by Kuala Lumpur’s newest highrises, Kampung Bharu remains relatively untouched by urbanisation. How it managed to retain a charming village vibe amidst waves of development was possible through a decision made in 1900 when British colonials gazetted this 157-hectare land as a Malay Agricultural Settlement and married couples were given parcels of between 0.2 and 0.8 hectares to develop for agriculture. From that modest start, Kampung Bharu has flourished into a 35,000 population enclave and established a number of significant firsts. Nasi Lemak Antarabangsa, the neighbourhood’s most famous nasi lemak stall, is generally accepted as progenitor of Malaysia’s unofficial national dish, a savoury dish of coconut milk-infused rice with spicy condiments. On a more historical note, Kelab Sultan Sulaiman, the starting point of the walking trail, is of sentimental value

In any Malay village, the mosque is the focal point. With the capacity to accommodate 7,000 people, Masjid Jamek, Kampung Bharu’s principal mosque, has both scale and beauty in spades: it’s a fine-looking example of Mughal and Islamic architecture, highlighted by an exquisite mosaic gateway. The communal warmth typical of villages is most apparent during the Ramadhan month, when the mosque – whose name means "come together" – organises the breaking of fast, al-Quran recitations, the distribution of charity and bubur lambuk (rice porridge cooked with meat and aromatic herbs), which everyone, regardless of religious inclination, is welcome to partake of. On this walk, visitors get to see up close Malay heritage village houses, many made out of wood with zinc-slab roofs and bedecked with beautiful woodcarvings and coloured glass windows. These houses are as fascinating for their architectural significance as for the stories they tell about the village’s history and its people’s customs. Case in point: while many of us thought the houses were built on stilts to keep out floodwaters, our guide corrected us that the reason was to ward off wild jungle animals and to improve ventilation. Another fascinating tidbit: in the old days, people would dismantle each plank or even get the villagers’ help to transport the entire house if a family wanted to move! The last stretch of the walk ends up at Jalan Raja Alang, a narrow street that transforms into a bustling bazaar every evening. Be nice and you may persuade the local hawkers to let you sample slices of seasonal fruits like mangosteen, nangka, water apples or local delicacies like tempoyak (fermented durian). From the abundance of local wares and products, you get the sense that the market caters to longterm locals rather than tourists. Backtracking to Nasi Lemak Antarabangsa for dinner, I observe that Kampung Bharu is not completely free of gentrification. There are detailed road signs that display their legacy monikers alongside their new names, concrete pillars to rest on and safer-looking pavements. All the better for lovers of authentic local experiences who want an intimate glimpse into village life without venturing an inch from the city centre.

I have been with Malaysia Airlines for eight years, and currently am in charge of business planning, looking at alliances, codeshares and partnerships. We do a lot of codeshare analysis and strategic planning.

What was the proudest moment in your career? My proudest moment was when I was a pricing analyst for the South Asia region and we made money for the region. We were recognised by the CEO at that time, Dato’ Sri Idris Jala, for our hard work and were rewarded for it.

What are your interests outside of work? I am very passionate about makeup. I love colours and I love seeing happy faces on people and bringing out the confidence in them, which is amazing. I also like playing with special effects makeup. It’s something that I find really fascinating. I once joined an online makeup competition just for fun and got into the top 10 with the support of voting friends. We had to do makeup videos and create looks in front of the judges.

What is your impression of Penang? The fresh air, bright sunshine, beautiful white houses, and street art in George Town are all very impressive. People here are kind and warm-hearted. The food is awesome too. Everyone should visit Penang and explore it for themselves! What was your most memorable experience? That would be eating at Gurney Drive together with the locals. The wind from the sea in the evening makes the ambience cosy, and you can try many different kinds of delicious snacks, such as fried noodles and laksa – I heard that Penang is famous for this. I also had barbecued stingray, which was fantastic! We also witnessed the Thaipusam festival. Walking in the parade alongside the religious devotees was a very special experience for me. Will you return to Penang someday to shoot a movie? Yes, if I have the opportunity. How was your flight to Kuala Lumpur on Malaysia Airlines? Did you experience the warm Malaysia Airlines hospitality? The Malaysia Airlines service is very warm and sweet, both during the flight and on the ground. The crews were excellent at making passengers feel comfortable. We tasted very good laksa at the Golden Lounge in KLIA. It was wonderful! The lounge itself is big and quiet, good for having a rest. The uniforms of the attendants are so beautiful, too! Thank you very much for everything!

LAKSA BAR AT GOLDEN LOUNGE, KLIA FANS OF the popular Malaysian laksa can look forward to four varieties of the dish at the Golden Lounges of the Domestic, Regional and Satellite terminals at the Kuala Lumpur International Airport. Each week will see one of four variants on the menu: the Curry Laksa, which is egg noodles with curry broth, shredded chicken, prawn, bean sprouts and mint leaves; Laksa Johor, which uses spaghetti doused in thick fish broth; Laksa Sarawak with rice vermicelli in a spicy coconut gravy garnished with shredded chicken, prawns and julienned omelette; and the famous Penang Assam Laksa, voted one of the world’s 50 best foods by CNN, with its thick rice noodles in a spicy and sour fish broth. PORTABLE ELECTRONIC DEVICES (PED) For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system. LITHIUM BATTERIES Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits. ELECTRONIC CIGARETTES Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device is not permitted. ZERO TOLERANCE OF ABUSE We value courteousness. CABIN LUGGAGE HANDLING POLICY Passenger and crew safety on board our flights is our highest priority. 1. The greatest moment in my life was when I got married to my beautiful wife, Grace. 2. The greatest regret is … none yet. 3. The quality I like most in a person is a wonderful sense of humour.

10. My favourite movie of all time is The Empire Strikes Back. Hence, it was so fun to be making collectibles for Star Wars! The Matrix comes a close second. I can watch these films over and over again. 11. The most memorable quote from the movie was ”try not. Do … or do not. There is no try”. Classic!

4. My guilty pleasure is ice cream! 5. To keep motivated, I work out – religiously – every morning, without fail. 6. My current favourite song is David Bowie’s Starman. 7. My favourite restaurant in KL is Cantaloupe at Troika Sky Dining. Great views, stylish decor and more importantly, great menu. 8. The last time I took a vacation was in December to Japan. I travel a lot but not for holidays, so this will be treasured. 9. The three things I cannot live without are Grace and my two daughters!

12. In another life, I am Indiana Jones or James Bond? Er, James Bond? He has a better wardrobe than Indiana. I don’t get the whip thing. 13. If I had super powers, it would be … having the ability to control time. 14. To relieve stress, well, actually, I don’t get too stressed. However, instead of all work, I also enjoy restoring old cars. OK admittedly, I haven’t been doing enough of that lately, but driving them is also a joy. I make it a point to drive the Healey every weekend when I am in KL. 15. If I could go anywhere in the world for a holiday, I would go anywhere in the US to ski. I am not a good skier but I enjoy the sport and hope to improve my skiing skills.

My favourite sport to watch is Formula One, and that’s not because we make trophies for some of the races but because I am an engineer – I enjoy the technology, strategy and to a certain extent, the politics! 17. If I could invite some people, dead or alive, to dinner, they would be my great grandparents who came from Shantou province in China over 130 years ago. 18. And we would be eating a typical Hakka Chinese meal on a round marble top table in their first shophouse on Cross Street. 19. And discussing why they left China and what made them start a new life here in Kuala Lumpur as pewtersmiths. It would be nice to hear their thoughts on this fourth generation business and what we as stewards can do for future generations. 20. When flying, I never wear my contact lenses! 21. When flying, I always get into comfortable clothes and have a glass of Champagne, especially for those longhaul flights. It helps me acclimatise and reduces jetlag.
