I had no idea what to expect but I had read that Australians are the most laidback people you will ever meet and the sky is as blue as forgetme-nots. And oh, they have postcard-perfect beaches too. FAST-FORWARD TO PRESENT DAY, I find myself in Sydney again and the same still holds true. It was a bright sunny day when I landed at Kingsford Smith airport and was greeted by a very cheerful immigration officer. He said, ”Why are you here in Australia?” I said I’m here to discover Australia’s best food. He says there’s no such thing as Australian food. He may be right after all. While Australians may dine on wok-fried noodles, pastas or Mediterranean cuisine, those didn’t originate in Australia. But over the next 10 days, I was introduced to extraordinary dishes created by the country’s top chefs using locally sourced ingredients and indigenous flavours.

My trip Down Under was not all about food. I visited the vibrant Kensington Street in Chippendale and the bohemian neighbourhood of Newtown too. Both these hip and trendy precincts are the focus of my feature in Unplugged: Travel this month. Our other travel feature is on Sabah and it takes a look at how the ethnic communities there celebrate the end of harvest in May. Another tradition that’s worth taking note of for travel to Malaysia next year is the annual Ancestors’ Day celebration held in March by the Mah

Meri community, a nomadic tribe that has settled on Pulau Carey, an island about 70 kilometres from Kuala Lumpur. Read about their story on pages 70-74. Still in Malaysia, if you have a day to spare, our historical city of Melaka, a two-hour drive south of Kuala Lumpur, is worth visiting. Take our guide on pages 36-39 with you. It covers more than enough attractions and experiences for a day trip. Ever wondered if there’s a rice dish fit for a king? Well, read our food feature on nasi biryani and wonder no more. Writer Chris Wan says the biryani, made with rice, spices and meat, has been a cherished dish from the ancient courts of the Maharajahs to the lavish palaces of the Nawabs. She susses out the restaurants in Kuala Lumpur that serve the best of this centuries-old rice recipe. This issue also highlights the fitness craze that’s taking Malaysia by storm. Obstacle course races such as Spartan and Viper Challenge have a cult following among fitness junkies. These races are not for the faint hearted, though. You’d have to be extremely fit to take on challenges with names such

Returning for its 11th edition at Parkcity Everly, Miri on 13-14 May, the Borneo Jazz Festival will see performances by prominent jazz musicians such as Funkatorie from Malaysia, RALYZZDIG from Japan, The Rad Trads from USA, and more. Experience the nuanced and spicy flavours of Keralite cuisine at Kayra Kerala Cuisine, which opened in the Taman Tun Dr Ismail neighbourhood in Kuala Lumpur this year. The unassuming town of Ludlow in England’s Shropshire springs to life during its food festivals in May and September. The Ludlow Food Spring Festival, held from 13 to 15 May, brings together dozens of small producers up and down the Marches, the Welsh border territory. For those who want to sample the best of what’s around, sign up for the The Pâté Trail, which brings you to Ludlow’s best cafés, pubs, restaurants and hotels, while sweet tooths will have a dessert-filled day on The Pudding Trail. For more informal dining this month, make sure you attend Restaurant Day, taking place on 21 May at venues around the globe. In 2011, Finnish journalist, DJ and photographer Timo Santala added ‘entrepreneur’ to his list of occupations when he and a group of friends launched Restaurant Day – a 24-hour period when anyone, anywhere can open a pop-up bar or eatery. The result in his home city of Helsinki was phenomenal. “The streets were filled with people who were happy,” he says. “There was a new sense of community in the air and so many delicious dishes.” Helsinki is a great place to experience this event, but if you’re not in Finland, check out Restaurant Day’s website for a list of pop-ups farther afield.

The autumnal bounty of Victoria’s North West can best be experienced at the High Country Harvest Festival from 13 to 22 May. Held across regions that include King Valley, Mansfield, and Rutherglen, the festival is a great way to explore the Australian state of Victoria, with a calendar of events that include communal lunches, forages, farmers’ markets and bonfires. If you’re a nature lover, there are also a number of walking trails and natural wonders to help build that appetite (or lose some of that guilt).

The gastronomes have spoken, and the results are in: Gaggan, the Bangkok-based progressive Indian restaurant, has retained its top spot on the Asia’s 50 Best Restaurants list, fending off competition from Tokyo’s Narisawa, which also retained its secondplace ranking, and Singapore’s Restaurant André, which rose two spots to third place. Other notable achievements included Seoul-based Mingles, whose modernist interpretation of Korean cuisine saw it debut at an astonishing 15th place. The title for Asia’s Best Pastry Chef went to Cheryl Koh of Les Amis and Tarte in Singapore, while Shanghai-based Paul Pairet of Ultraviolet snagged the Chef’s Choice award.

I AM VERY BAD AT MATHS, or “math” as the Americans would say. Is there only one math or are there many maths? That’s how bad I am at it. I don’t even know how many there are of them. If I am asked what is 8 minus 4, then I want to know what 8 has done to deserve having 4 taken away. And if I discover that 8 has done absolutely nothing wrong and that 4 loves 8 very much, then my answer is “injustice!” Obviously, I failed all my maths exams and I lost all respect for my teachers because they kept insisting that I retake them. I mean, hadn’t they worked out what the result would be? And they said I was the stupid one. School was a long time ago and I don’t feel any sense of failure at being so bad at maths now but I do have a fear of numbers. I didn’t watch the movie Life of Pi, not because I thought the idea of a boy being stuck on a boat with a tiger was incredibly silly but because I still don’t know what "pi" is and I was afraid there would be an exam at the end. Just to be clear, I do know the answer to 8 minus 4 (it’s Peru).

My school career started well and ended in complete disaster and I feel very ashamed of the reason why. When I went to my first proper school at the age of nine I was

put in the bottom class. We were officially the stupidest kids in the school but I was instantly top of the class. I was the unassailable king of the class and I felt great about myself. My teachers understandably thought I might be quite clever so they moved me up into a smarter classroom. I was instantly and remained forever at the bottom of that class, which sapped my confidence and taught me that I was stupid. I had been the smartest kid in the dumbest class and now I was the dumbest kid in the smartest class. I feel ashamed to say this but if I had stayed in the stupid class then I would have excelled. Or would I? If the odds had always been stacked in my favour then would I have really known if I was actually any good or not? I would never have been truly tested. Studies are always being conducted on which kids in the world are the best at maths so that we can know if our nation is top or bottom of the class. Students in Singapore, Shanghai and Japan always rank highly. But is the ability at maths a true gauge of a student’s worth? Because of my failure in maths I have to believe it’s not, although I am always in awe of anybody who knows how to split a bill at the end of a meal. The

Japanese kids do well at maths because they have a clever technique of making calculations musical, in the same way that I learnt my ABC. Music sticks in the brain far more easily than abstract numbers and with this and the use of a tactile and then imaginary abacus, Japanese kids are able to do complicated sums in their heads and at great speed. Japanese kids are top of the class at maths, but perhaps we should be looking at the way they achieve this and what it says about their society and not just be concentrating on the cold result. School and me were not a good fit, but I think I did learn some things along the way. I learnt that humour will not always save you from being beaten up by a bully and that there are several very good reasons why that girl is out of your league. But I was extremely lucky that I went to some good schools where I learnt about music, drama, how to interact with people and perhaps most importantly, about the system. I left school feeling like an abject failure but then I started working in film where I discovered that sometimes, just sometimes, 8 minus 4 does equal Peru.

I believe Lenovo has the right strategy to continue its leadership across PCs, Mobile and Enterprise in Malaysia as well as AP.

Tell us about yourself and what you do at Lenovo. As the Chief Marketing Officer for Lenovo Asia Pacific (AP), I oversee branding, demand-generation, digital marketing, public relations and social media for Lenovo across AP’s diverse markets and across our commercial, consumer and enterprise innovations. What is Lenovo’s outlook of the global consumer electronics market this year, and in particular in Malaysia? At Lenovo, we’re very positive about the consumer electronics market both globally and in Malaysia. We believe these are some exciting times for tech companies as well as our consumers. Malaysia is certainly a very competitive and interesting technology market with strong multinational brands. However, no other brand can match us in having the full end-to-end portfolio across PCs, mobiles and the enterprise. No other brand in the world has the same breadth and depth of products and solutions for all audiences, and that gives us the confidence in driving marketing and brand campaigns that are bold and differentiated. We believe in a "Never Stand Still" approach, in line with our brand identity. This is more than just a marketing slogan for us. We have made it our philosophy in a fast-changing world and industry to remain agile, flexible and always evolving to stay ahead. I am happy to say that as of Q3, FY15/16 (October – December 2015), we remain number one in the AP PC segment with a market share of 18.8 percent. According

Are there any particular segments/areas of the Malaysian market that Lenovo will be paying particular attention to? We have identified growth opportunities in AP and I believe we have the right strategy, products and talent to capture these. Firstly, enterprise remains a huge focus for us going forward and a massive opportunity. We are the only major technology brand with an end-to-end portfolio across PCs, mobile and enterprise. We have won significant customer deals across every single AP region in the past few quarters and continue to make strategic partnerships globally with other leading players such as Juniper, Nutanix, Red Hat and SAP to continue bringing innovative products and solutions to our enterprise customers. We also want to continue growing significantly in the premium category for Consumer PCs with our YOGA series. As the leader and pioneer in the multimode or convertible category, the YOGA brand and 2-in-1s have been very successful for us around the world in demonstrating our innovation capabilities. We have gotten fantastic response from consumers for the deceptively light but heavy-hitting YOGA 700 and 900 launched last quarter. We are confident that our innovation in detachables and convertibles will continue to generate excitement, especially with new products like the YOGA 900s and ThinkPad X1 YOGA – which we unveiled at the Consumer Electronics Show (CES) 2016 in Las Vegas earlier this year. Globally, we’ve received overwhelmingly positive feedback from the YOGA 900S and ThinkPad X1 YOGA. Both were launched at CES 2016 and along with a few other devices we launched at the event, we received a total of 66 awards for our new products. We take great pride in these awards because they are a testament to the innovative products that we aim to continue producing for our consumers. However, I must emphasise that we are not launching a new brand identity for the sake of it. It is important to us that we continue to tell an authentic brand story especially to millennials who have become so desensitised to advertising and are being bombarded by so much content. We believe that in order to engage with millennials, we need to earn their attention and fit into their fast-paced world. Our social media campaigns such as #GoodWeird were devised to reflect the sort of content that appealed to millennials but also to encourage their participation so they can be a part of Lenovo’s world. Which are some of the more challenging markets in Asia for Lenovo, and how do you plan to overcome it? Each market is vastly different from one another from a demographic and cultural standpoint. With that come different challenges specific to each market. However, for us at Lenovo, these "challenges" are simply opportunities for us to continue to grow. In Malaysia, we have identified that while we have a positive and growing market share in the consumer segment for mobile, PCs and tablets, we are not as well represented in the commercial and enterprise segment. As I mentioned earlier, Lenovo is unrivalled when it comes to having the full end-to-end portfolio across PCs, mobiles and enterprise. There is no other major technology brand in the world that can claim this. So this year, while we continue to protect our market share in the consumer segment, we have plans to attack the commercial and enterprise segment and further our efforts to showcase our end-to-end innovative solutions for our Malaysian customers. Recently, we announced the arrival of the Lenovo HX Appliance Series in Malaysia, which is a result of the global partnership between Lenovo and Nutanix. This series is set to disrupt enterprises with its hyperconvergence technology that will undoubtedly help enterprises with scalability and cost reduction. Immediately after that, we announced our global partnership with Juniper Networks which enables us to provide our customers with more manageable, scalable and simple infrastructure for their data centres – a testament to how deeply invested we are in the commercial and B2B space.

3 Huminodun the Legend: A Sacrifice to the Land The legend goes that a terrible drought befell the land, and the people suffered and began to starve as they could not grow any crops. Seeing this, the Almighty Creator, known as Kinoingan, decided to take great measures to save his people. He made the ultimate sacrifice: He surrendered his only daughter, Huminodun, to the land. 1. COME THE MONTH OF MAY, the Kadazandusun, Murut and native ethnic communities of Sabah gear up for an annual celebration that rivals the carnivales of Rio de Janeiro – the Tadau Ka’amatan or Harvest Festival. After toiling the paddy fields, they finally reap the fruits of their labour and take time to pay tribute for another year of bountiful harvest.

From her body parts grew various crops – her head gave rise to coconuts, her blood became red rice, her flesh rejuvenated the paddy fields, her teeth maize, her fingers ginger and her knees yam, among many other edible plants. To pay tribute to this sacrifice, the Ka’amatan is celebrated each year after a bountiful harvest.

Until the mid-1960s, a majority of natives in Sabah lived in the interiors, practising their own variety of rituals with a belief system that was strongly attached to their environment, homes, lifestyle and even harvest.

Unduk Ngadau – Hailing the Harvest Queen

Today, a majority of Kadazandusun and Murut people no longer adhere to paganism as most have embraced Christianity or Islam. However, the values and traditions of their ancestors are not lost, and respect is still given to rituals and rites, particularly during the Harvest month.

Another significant aspect to this legend is Huminodun herself. To honour her gift of life to her people, each year the Unduk Ngadau pageant is held and the fairest one of all represents all that is beautiful and honourable in Huminodun. The pageant is the highlight of the Ka’amatan, which is celebrated on 30-31 May each year, and the selection process is taken very seriously.

Usually performed on the first full moon night after the harvest, the ritual can be held in a house or an open area such as the paddy field itself. A group of bobohizans form a line with their hands placed on each other’s shoulders, chanting prayers. The leading bobohizan holds an unsheathed sword and will call out to the rice spirit.

It starts early in May when each district holds their own Unduk Ngadau pageant. Contestants are decked in traditional attire – each district can be distinguished by their costumes, with black velvet/cotton being the main fabric of choice. For example, the Kadazandusun women of Penampang don a sleeveless black blouse and ankle-length skirt, while the Kadazandusun of Papar wear knee-length skirts accompanied by long-sleeved shirts and a hat. Each district crowns its winner who goes on to represent her locality in the state-level pageant at the Kadazandusun Cultural Association Hall.

seen rituals performed by native high priestesses, the bobohizan. One of the most important is the magavau (which means ‘to recover’). The Kadazandusun believe that while working in the fields, some farmers may unintentionally hurt the rice spirit (bambazon), causing the spirit to wander and leave the crop unprotected. The ritual is performed to heal and call on bambazon to return.

It’s an electric atmosphere where crowds of spectators cheer for their favourite contestants as they parade their traditional attires and try to impress judges in the interview portion of the competition. There are tears, hugs, kisses and more cheers as the Unduk Ngadau is crowned, giving her district more reasons to celebrate as the Harvest Festival draws to an end. Many winners have gone on to pursue their studies and carve successful careers thanks to the publicity and experience.

Another set of offerings will be presented on a specially built bamboo platform for the spirits to bring back to the spirit world. This food is believed to prevent other creatures from feeding off the paddy. The magavau, highly regarded by the Kadazandusun, is one of many rituals held during the harvest month.

Plenty of makan and merry-making The two-day Ka’amatan festival is a public holiday throughout the state of Sabah. It is an occasion to balik kampung or return to one’s village or hometown to be with relatives. For visitors, the Kadazandusun Cultural Association is the best place to be, where many mock traditional houses or food and drink stalls will be set up during the festival. Sample local fare or grab a burger – either way, you’ll never go hungry. The air is filled with sounds of brass gongs resonating, sometimes punctuated by a sudden ‘war cry’ (don’t worry, it’s usually part of the sumazau, the traditional dance of the Kadazandusun). The atmosphere is truly celebratory; wherever you turn, a friendly face will hand you a beverage and introduce you to another staple ‘war cry’ of the locals: Aramaitii!

MOST VISITORS TO SYDNEY will make a beeline for the Opera House or the Harbour Bridge, and the Fish Market is a must if you’re a tourist from Asia. But dig deeper and you’ll find an urban renaissance in the inner city suburbs, with offerings that are no less attractive.

restaurants and bars, cafés, specialty retailers and art galleries. Touted as Sydney’s newest lifestyle destination, Kensington Street is the brainchild of Singaporean property developer Dr Stanley Quek, who bought the street in its entirety in 2007.

The former working class enclaves of Chippendale and Newtown have been transformed by gentrification, and now boast art galleries, outdoor café spaces, restaurants offering degustation menus, cheese and artisan bread shops, and festivals celebrating film, food and the community.

“When I arrived in Chippendale in 2006 I bought an old building, which was a church, which I developed into NG Art Gallery and a restaurant below called Mission Restaurant & Bar. I was the first contemporary restaurant and bar and art gallery in Chippendale,” says Nicky. Now, there are 22 galleries operating in the neighbourhood, including the famous White Rabbit Gallery, home to the world’s largest private collection of 21st-century Chinese art.

In Chippendale, where I met Nicky Ginsberg, Founder and President of the Chippendale Creative Precinct (CCP), the heritage Kensington Street was bustling with activity. “We soft-launched Kensington Street in September last year and there were few businesses. Now the street is doing really well. We’ve got some really fantastic restaurants, and the best of our culinary top chefs have come here,” says Nicky, the driving force behind the development of Chippendale into an international arts and culture destination.

Leading the revival of Chippendale has been the boutique The Old Clare Hotel, which opened in September last year after a renovation. While most of the structure of the building was retained, the refresh incorporated modern furnishings and a rooftop pool and cocktail bar that are open to the public. The Old Clare is also where former Momofuku Seiobo chef Clayton Wells has set up Automata. The restaurant is a fun and energetic take on fine dining featuring a five-course set menu.

6 Just a stone’s throw away is British celebrity chef Jason Atherton’s first Australian restaurant, Kensington Street Social, which specialises in locally sourced produce. For Asian fare, the hawker-style Spice Alley serves up Southeast Asian dishes such as char kuey teow, roti canai, and chicken rice, while Japanese dining hall KY-OTO and Mekong, serving Vietnamese fare, bookend the laneway. Chippendale also hosts multiple events throughout the year, and one that art lovers should not miss is the BEAMS Arts Festival, a multi-disciplinary one-night-only event that brings together Sydney’s best creative thinkers. The event will take place on 17 September this year. Visitors can also take part in free gallery walking tours on the first Saturday of every month, which comes with a complimentary glass of wine. Needless to say, booking is necessary! Over at Newtown in Sydney’s inner west, a different art scene has been developing since the 1980s. Here, artists take to the walls of laneways and railway tunnels to express themselves, creating street art that sometimes carries socio-political messages. Most of the street art is

A largely bohemian town, Newtown attracts a mix of professionals, students, artists, economic migrants and the grunge types. “This area used to be scruffy but it has really come up in the last couple of years,” says Emilya Colliver, founder of tour outfit Culture Scouts. Nowadays, it is common to find organic grocers and candle and fusion food shops on the streets of Newtown.

Walk down the main thoroughfare of King Street, and Enmore Road and the laneways parallel to it, for interesting murals and stencils drawn by talented artists such as Fintan Magee and Beastman. Keep an eye out too for tiny sculptures stuck in corners of the ground or on walls by England-born Will Coles, who took his sculptures to the streets because galleries wouldn’t show them. Coles’ works, including a shoe stuck in the ground and a machine gun on the wall, are thought-provoking.

King Street is also where bookshops, record stores, independent retailers selling everything from vintage clothing to posters, and restaurants serving a variety of cuisines can be found. There are restaurants serving traditional Pakistani barbeque, Mexican, Chinese, Japanese and even Malaysian food. The Stinking Bishops, a boutique cheese bar and restaurant, has seen a steady queue forming since opening two years ago. Named after the first-ever cheese to be judged as Britain’s smelliest, the deli has a cosy atmosphere and an extensive selection of cheese and wine. Newtown is also home to the legendary Sydney Brewnut, 1:39 PM Australia’s answer to the Cronut invented by New York City chef Dominique Ansel, and Cruffin. Yes, you guessed it. It’s a croissant crossed with a muffin. Both the Brewnut and the Cruffin are the creations of Brewtown Newtown, an industrial café just off King Street, which serves the creative pastries along with an extensive breakfast and lunch menu. Try the Hot Cross Brewnut or the Nutty Nutella Cruffin. The coffee is good too, but you would have expected nothing less in Newtown, or Sydney, for that matter.

History archives record that biryani originates from the Persian word birian, meaning “fried before cooking” and hence, it’s safe to conclude that biryani came from Persia (modern-day Iran) and/or Arabia. From there, the biryani spread to north India via Afghanistan and then to pretty much the whole of south Asia. From the ancient courts of the Maharajahs to the lavish palaces of the Nawabs, the biryani was and still is a dish loved by many.

Get Fiercer with Lobster Biryani Essentially a rice dish cooked in a variety of spices with meat, the biryani has evolved through the ages and taken on cultural tweaks from various regions. Through culinary innovation and taste preferences, the use of seafood has crept in. Herukh Jethwani is quick to tell you that seafood biryani is one of the most popular choices at his restaurant, Fiercer in Kuala Lumpur’s Publika mall. Herukh’s love for food started when his family owned Bangles Restaurant, a respected North Indian eatery in Kuala Lumpur. Their best-selling Hyderabadi-style biryani is based on an innovated family recipe, handed down through three generations. The secret lies not in the type of ingredients used but rather, how the 29 items are handled. “I can tell you the recipe but without an intrinsic understanding of the spices, the biryani won’t taste the same,” says Herukh.

“I wish more people were aware that our restaurant is open to the public and not just for members of KLGCC,” laments Muhammad Ahsan Ali Qureshi, one of the owners of the restaurant. Coming from an ancestry of royal chefs who ran the kitchens of the Nawabs of Awadh more than 200 years ago, the heritage cuisine served in this restaurant spells authenticity. The passion stems from Muhammad Ahsan’s father, Grand Master Chef Imtiaz Qureshi, who revived age-old recipes and ancient cooking styles of the tandoor and dum.

almost pristine once the purdah (dough used in sealing the pots) is cut open. To cook the perfect biryani dum-style, the meat marinated with spices and rice are cooked separately first. Once the flavours of the spices are infused in the meat, the remnants of the spices are discarded. The meat is then layered with the rice, sealed and cooked further on low heat, resulting in biryani that is well-balanced in moisture and flavours. Personally trained by his father, Muhammad Ahsan stresses that ingredients used for any cooking, particularly meat, must be handled right. Qureshi uses only fresh local lamb, and the right cuts are always used for biryani. Besides the lamb, the prawn and chicken biryani are worth checking out too.

Trilogy As biryani is widely eaten in India and Pakistan, the variety is endless, with subtle differences in the spice blends and cooking techniques between both countries. “Pakistani biryani is similar to the Indian version, yet different, and it all depends on the chef who cooks it,� says Sunita Hariramani, owner of Trilogy Restaurant & Bar in downtown Kuala Lumpur, which specialises in Pakistani cuisine.

Trilogy’s biryani slants toward Pakistan’s popular, spicier Sindhi style. With brilliant colours streaking the rice, Trilogy’s biryani tastes as good as it looks. It’s not uncommon to see masalaseeped potatoes in the biryani with raisins or prunes to balance out the fiery flavours. Mission: Malaysian Over time, Norman realised he was more into cooking than calculating building and engineering costs as a quantity surveyor, although he was already in a good, secure job in Manchester. His mother wasn’t too pleased about it, so he never told her about the restaurant he was setting up with his partner in the northern quarter of Manchester, called Ning, in 2006. She finally got the news a few weeks before it was due to open and Norman was flying her out to the United Kingdom for the launch. Sadly, Norman’s father passed away before the trip. Nowadays, Ning earns rave reviews from critics, the media and diners alike. Among its accolades are wins as Best Malaysian Restaurant at the Asian Curry Awards in 2012 and 2015, with chef Norman bagging the Young Asian and Oriental Chef of the Year award in 2012. This earned him an induction into the UK Hospitality Guild’s Young Hall of Fame that same year. So how did he go from being clueless to award-winning? Norman cites passion, practice and always perfecting his skills. The good thing about never having formal training is that he makes a convincing case to the cookery students whom he teaches at London’s Leiths School of Food and Wine in one-off courses. If he could master the art of Malaysian cooking from zero, so could they.

FROM MOVING ABROAD to study quantity surveying to becoming co-owner and head chef of an award-winning restaurant, and even a stint as Caterham F1 Racing’s chef in 2010, despite having no formal education in cooking, London-based Malaysian chef Norman Musa has come a long way both geographically and career-wise.

Interestingly enough, when he first started cooking, he was “hopeless”, to quote the chef himself. But his late parents ran a canteen back in his hometown of Penang, Malaysia, and his mom was an excellent cook. As a student homesick for Malaysian food, Norman would constantly call her up on the phone to ask her how she made certain dishes.

Recognised for his talent as a bona fide Malaysian cookery chef and probably as an empathetic cooking instructor, Norman was handpicked by Malaysian tourism authorities as an ambassador for Malaysian cooking. For the past five years, Norman has been a fixed attraction at Malaysia Night at Trafalgar Square, an annual event organised by the Malaysia External Trade Development Corporation. He has worked extensively with the corporation to promote Malaysian food through their Malaysia Kitchen campaign. His mission and passion have also seen him promoting Malaysia’s favourite delicacies such as char kuey teow, chicken curry and rendang to eager audiences at The Tong Tong Fair in the Hague, the Netherlands – an annual affair celebrating all things Southeast Asian since 1959; a Malaysia Cookery Challenge in Hamburg, Germany; the Science on a Plate event at the Edinburgh International Science Festival; and numerous food festivals in the United Kingdom.

Back home in Malaysia, where Norman is currently stationed for a few months, this energetic chef will soon open another restaurant in Bangi, in the southeast of the state of Selangor. Tentatively to be named Chengkih, the restaurant will feature authentic Malaysian food as well as fusion dishes in a fine-dining setting. Norman envisions the restaurant to have an international look and feel, and the concept to be a template for other restaurants he plans to open in other countries around the region. Meanwhile, his restaurant in Banting, called Restoran Nasi Daging, which has been operating for about nine months and is run by his sister-in-law, will also be getting a revamp, with a special Ramadhan buffet for Hotel Pullman KLCC also in the works (hint: it will be interactive, he says). At the same time, Norman is also promoting Malaysian food via his latest cookbook, the third he’s published, called Amazing Malaysian: Recipes For Vibrant Malaysian Home Cooking. The book has been a labour of love in which Norman shares his recipes for more than 100 delicacies, written in a way that makes it easy for both beginners and experts to prepare the dishes themselves. Norman wanted as many people as possible to enjoy Malaysian food and kept that in mind when authoring it. If Norman doesn’t seem busy enough, he has also been shooting his television series, Chef Norman Exploring Malaysia: Herbs for TVi (Astro channel 108) featuring folks he calls “local food heroes”. Aired in March, the show sees Norman travelling around Malaysia visiting locals who share their knowledge of herbs and recipes. From Penang to London and the rest of Europe, around the world for F1, back home to Malaysia and the villages around the nation, this chef is certainly going places!

2. In another bowl, gently rub the sesame oil on the crabs. Dip the crabs into the egg white before transferring to the cornflour mixture. Coat generously. 3. Heat a wok or deepfrying pan on medium fire and add oil. Heat oil until hot enough to ensure crispiness. Test by sprinkling a bit of batter – if it sizzles, it is hot enough.

4. Fry the crabs in two or three batches, for 4 minutes per batch or until the batter is brown and crispy. On an international level, there is a wide variety of races to cater for all fitness levels. A few are not for the faint of heart: The World's Toughest Mudder race in Las Vegas involves jumping off an 11-metre-high cliff, the Rat Race Dirty Weekend in the UK has a 138-metre-long monkey bar, and the ABF Mud Run in New Jersey requires participants to traverse a 38-metre rope over a pond. Obstacle racing has become such a worldwide trend that there is talk of entering it as an Olympic sport. In Malaysia, OCR is rapidly growing as a sport, with races throughout the year. "WHO AM I?" the MC yelled into his microphone, directed at

the crowd anxiously gathered behind the starting line. "I am Spartan! Aroo! Aroo!" the motley crew replied vigorously, a couple punching their fists in the air. It was the start of a day, unlike most days, for the participants of the Spartan Sprint in Klang, Malaysia, this March. It was a day of adrenaline, spirit-breaking obstacles, camaraderie and lots of mud. Obstacle course racing (OCR) is a sport where participants have to cover a distance while overcoming various physical challenges in order to reach the finishing line. When the first obstacle course race was introduced to Malaysia in 2013, participants signed up to climb over walls, splash through muddy pools, scramble over monkey bars and crawl under barbed wire. This rough-and-tumble sport is meant to test both mental and physical strength, as well as be a social activity. "I was nervous about my first obstacle race but after trying it, I realised how much fun these races are. A part

friendly Spartan Sprint to the mid-level Spartan Super and the uber-challenging Spartan Beast. Participants who complete all three levels within a year will be admitted into the Spartan Trifecta Tribe. "If you have watched Rocky Balboa, there is a scene where Rocky tells his son, it is not about how hard you can hit, it is about how hard you can get hit and still come back. People love to be challenged," says Belinda Xavier from Spartan Race Malaysia. If obstacles alone are not enough, Spartan races are famous for their burpee full-body exercise penalties. Participants who don't complete an obstacle would have to do 30 burpees before they can proceed to the next challenge. Training is key to an obstacle race, and the Spartan Races are no exception. "Eat healthy and train hard because if you want to be a Spartan, you need to think like a Spartan," says Xavier. "Anyone can compete in the Spartan Race. It requires a lot of upper body strength and the challenges would not be easy, but including hot yoga and other strength-based exercises with a proper diet would help participants to overcome the obstacles." 7 Dragon Run For a bit of a fun race that the whole family can participate in (provided your child is 12 years and above), there is the new Dragon Run, the world's first martial arts inflatable obstacle race. The race will debut this May in Resorts World Genting, and is expected to feature unique martial arts-inspired challenges with names like Dragon Gate and Giant Dragon. Participants will be expected to complete a course of 10 martial arts obstacles in the styles of dragon kung fu, taekwondo, muay thai, sumo and jeet kune do. The organisers are emphatic that their events are not about competition. "The Viper Challenge is all about teamwork, discipline, empathy and a common bond to help your fellow man. Teamwork gets you across the line; without it you will not succeed," says Selva. Saying that, they have introduced the Elite Category this year for hardcore individuals who will vie for placements on the leadership board and a shot at the Gold Series Finisher Medals (normal category finishers win Black medals).

Viper Challenge It was the first obstacle racing event in Malaysia. Started in 2013 by Selva Kumar and Simran Latif of Malaysia's Original Bootcamp, they know a thing or two about putting participants through challenges such as jumping over troughs of burning coals or dunks in icy cold water. The teamwork nature of their races means that young teenagers to a 72-year-old have signed up for Viper Challenges. "Anyone wanting to challenge themselves, to push themselves just that much more, makes up the majority of participants. But we must say, we have seen it all," says Selva. When's the next race? Myanmar's recent isolated past has helped preserve this architectural heritage, albeit in an increasingly dilapidated state. But as the country opens up, developers are buying out and demolishing heritage buildings to make way for new projects that are often at odds with their environment. Between 1990 and 2011, it is estimated that 35 percent of downtown Yangon had been destroyed, and more will follow suit if action is not taken. "Yangon has the largest concentration of colonial buildings in Southeast Asia because of the country's socialist policies. Now, we have the opportunity to make it into a more liveable city by conserving the heritage buildings," says Thurein Aung, a historian and project manager at Yangon Heritage Trust (YHT). Founded in 2012, YHT was set up as a non-profit organisation to help steer Yangon's transition into a 21st-century city. The trust is not only advocating heritage protection and conservation, it is helping to develop sustainable urban policy options while facilitating research and training. At the time of our interview in February, the office was busy drawing up a special conservation-led development plan for Yangon, which the trust will present to the new government. It is a comprehensive plan – conceived by consulting with all the different stakeholders – incorporating protection of historical enclaves and heritage sites, as well as charting out commercial areas and effective transportation networks for a newly emerging modern city. Yangon has a list of 189 recognised heritage sites, a starting point for conservation efforts. There exist cultural heritage

laws to provide statutory protection for heritage buildings and sites over 100 years old, but, according to YHT, it’s not concrete enough to ensure proper conservation of Yangon's diverse urban heritage. Working with the Yangon City Development Committee, the group has submitted a draft law to enable dedicated urban conservation. "There is a lack of law, so everything is on a case-by-case (basis). It is impossible to monitor everything for a small NGO like us. And once a building has been demolished, there is nothing more we can do for it," says Thurein. YHT works closely with different parties on several conservation projects, including the Yangon General Hospital and Waziya Cinema. A prime example of its conservation efforts is 491-501 Merchant Street, a property that is over 100 years old; the teashop on the ground floor has been serving sweet Burmese milk tea for three generations. Working in partnership with the Prince of Wales' Foundation, YHT took on this historic building as an exemplary restoration project. YHT believes it is crucial to raise public awareness about the historical value of downtown Yangon in order to promote its conservation. The trust often runs public engagement programmes with the city's residents, either to gain feedback about their neighbourhoods or to record oral histories of the places in which they live and work.

Another part of its efforts is organising tours of the city, conducted by trained guides. The tours are free for locals twice a month. One of the routes takes participants along the architecturally rich Lower Pansodan Street towards Strand Road up to Merchant Road and ending up at Maha Bandoola Park. Along the way, the guide introduces historically significant buildings such as the Secretariat where nationalist leader General Aung San was assassinated, as well as lesser-known gems like the corner house where Pablo Neruda had lived when he was posted here. the pavement. Food booths sell curries, deep-fried pakoras and a local yoghurt laced with palm sugar. Makeshift stalls are piled high with fruits and vegetables, with the ubiquitous betel nut vendor on almost every street corner. It is a barrage of sights, sounds and smells, backdropped by the elegant and atmospheric, if decrepit, heritage residences and buildings that have housed generations of families and businesses. For visitors to the city, the simplest way to show support is to stay and appreciate what Yangon has to offer. Says Thurein, "It is a city of great diversity and with lots of character. Yangon has always been a cosmopolitan city, and we need more people to realise its potential."

Pernah menjadikan laut dan hutan sebagai sumber pendapatan, puak nomad Mah Meri kini menetap di lima buah perkampungan di sekitar Pulau Carey yang terletak kirakira 70 kilometer dari Kuala Lumpur. Sudah sebati dengan kehidupan moden, mereka kini bekerja di ladang serta kilang berdekatan. Namun, masyarakat Mah Meri cukup terkenal dengan keunikan gaya hidupnya yang masih dikekalkan sehingga ke hari ini.

Sebaliknya, perkaraperkara kecil dalam kehidupan harian masyarakat Mah Meri yang menjadi bukti keutuhan hubungan mereka dengan alam semula jadi selama ini, seperti kebun-kebun yang kecil namun dijaga dengan baik di setiap kediaman, serta atap dan dinding rumah yang dihasilkan daripada pohon nibong. Sesungguhnya, nama Mah Meri juga terbentuk daripada maksud ‘penghuni rimba’ dalam bahasa orang asli.

Thriving Traditions Despite dwindling numbers, the indigenous Mah Meri tribe steadfastly maintains a distinct cultural identity.

DONNING A CARVED MASK that radiates wild plaited hair, the costumed dancer looks fearsome yet arresting. Alongside, smiling women, resplendent in fringed skirts, headbands and sashes made from plaited nipah over tree-bark vests, dance counter-clockwise around a tapered bamboo frame to joyous music reverberating from a fourpiece ensemble of tuntog (bamboo stampers), jule (viola), tambo (double-headed drum) and tawa’ (brass gong).

I’m at Kampung Sungai Bumbon watching mayin jo-oh, a traditional masked dance that takes place during Ari Muyang, or Ancestors’ Day, the biggest annual village-level celebration of the Mah Meri community. A nomadic tribe that once lived as fishermen and foragers, the Mah Meri have settled in five villages on Pulau Carey, an island some 70 kilometres from Kuala Lumpur. While they have assimilated into modern life, with jobs in the nearby plantations and farms, the Mah Meri have come under the spotlight for successfully retaining their unique way of life. The Mah Meri honour their ancestors on Ari Muyang, believing the rituals will protect their precarious livelihoods. The celebration – which falls exactly one month after Chinese New Year and is open to the public – is a great way to get acquainted with their unique weavings, woodcarvings, musical heritage and animistic beliefs. Preparation begins a week earlier as villagers beautify the haduk muyang, a communal spirit hut that houses the effigy of Muyang Gadeng, the female guardian of the Sg Mata hamlet. On the eve, all households decorate their panga (outdoor altar) with nipah weavings and make offerings. Flowers, betel leaves, areca nuts and tobacco are typical, as are food and drinks that are first smoked over incense, supposedly to increase their visibility to the spirits. I arrive on the morning of Ari Muyang to find villagers and tourists gathered at the communal venue. A long line of people stretches out of the haduk muyang, where a spiritual medium is tapping villagers on both sides of their palms and forehead with tepung tawar (a fragrant rice-flour and leaf mixture). Blessings to invite good tidings, I’m told. Shortly, the highly anticipated mask dance begins, followed by a potluck feast at the communal eating hut. Visitors can come with just a camera and empty stomach, but are

encouraged to contribute shareable food. The festivities usually end by noon as the spirit world is the opposite of mortal beings; the mortals’ noon is their midnight. After that, all villagers observe a mandatory three-day holiday where any type of wage work is prohibited.

Joining in the festivities, I marvel at how the Mah Meri have managed to maintain their distinct identity, when their numbers have dwindled to less than 3,000, or just two percent of the indigenous population of Peninsular Malaysia. In the booklet Chita’ Hae, Culture, Crafts and Customs of the Hma’ Meri in Kampung Sungai Bumbon, Pulau Carey, a local initiative to document their oral traditions and culture, I get a glimpse of just how resourceful the Mah Meri are. When the loss of pandanus clumps due to land clearance threatened anyam hake (pandanus weaving), a group of women weavers, who named themselves Tompoq Topoh, rallied to revive the art of weaving of betel pouches, mats and baskets. Subsequently, they went on to improve on processing, weaving and dyeing skills and replant pandanus seedlings and other plants for handicraft production. With the aid of grants, they also purchased audio-video and computer equipment to document their heritage. Exploring the village later, I realise that their heritage goes beyond ritualistic costumes that get stored away after a ceremony, or even handicrafts that provide a supplementary income. The modest but well-tended gardens in every house; nibung palms are used for housing; nipah leaves are woven into thatch roofs and house walls – it’s these everyday details that show their deep connection to nature. You see, the name Mah Meri in their native language means “people of the forest”.

GETTING TO KNOW MOHD FIRDAUS MOHD NAZER, INTERNAL AUDIT DEPARTMENT ASSISTANT MANAGER Tell us a bit about your role in Malaysia Airlines? Basically, the role of internal audit is to provide independent assurance that an organisation’s risk management, governance and internal control processes are operating effectively. We have a professional duty to provide an unbiased and objective view. We must be independent from the operations we evaluate. We report to the highest level in an organisation such as the Executive Committee and Board Audit Committee.

What was the proudest moment in your career?
 In 2014, we were the host for the International Association of Airline Internal Auditors conference held in Kuching. When they asked me to be the emcee, I said, “Why not?” I had emceed at small events previously. I was really nervous during the first half of this event, though, because it was an international event with top-level executives. But once I got the hang of it, I was comfortable. It was quite an experience to be an emcee for an international event. There were easily 200 people in the audience. I am naturally a nervous person but to come out of that cocoon to just go with the flow was one of my proudest moments. Where is the most interesting destination you have visited? Istanbul. Firstly, they don’t really speak English. I had to communicate with the locals in sign language. But that’s one of my goals – to travel alone to a foreign country where English isn’t widely spoken, and survive. I went there without a plan and I managed to survive for a week. Since I was alone, I could manage my own time. The country is beautiful and there is a lot of history but what I treasure the most is the experience of travelling alone.

PORTABLE ELECTRONIC DEVICES (PED) For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. CABIN LUGGAGE HANDLING POLICY Passenger and crew safety on board our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. French-Canadian rock band Simple Plan has made a strong comeback with its fifth album Taking One for the Team. Presenting a much more complete and complex side of the band, the pop album has added diversity into the genre on which the band was raised. If 2011’s Get Your Heart On is more pop than punk, then the new album takes it to another level. The dynamic riffs in the guitar-heavy songs remind us of the old Simple Plan but the pop songs are refreshing and solidify the band’s venture towards that genre.

1. The greatest moment in my life so far was when I represented Malaysia on the global stage, and starting Fugee school, a non-profit refugee school.

14. The most memorable scene from the movie was the lake scene where they practised the moves in the water. Patrick Swayze lifted Baby in the water.

2. The greatest regret I have is not dedicating 100 percent to everything I have done.

15. In another life, I am Lara Croft: Tomb Raider or Black Widow? After a bit of online research, I pick Black Widow. The general consensus is she’ll win the fight! Hahaha.

To keep motivated, I try to remain positive and be thankful for all my blessings, and surround myself with good vibes (people included). 9. The book I’m reading now is The Tipping Point by Malcolm Gladwell. 10. My current favourite song is Budapest by George Ezra. It makes me feel good. 11. The last time I took a vacation was during Chinese New Year. My boyfriend and I spent the weekend in Myanmar exploring the temple town of Bagan. 12. To relieve stress, I practise yoga and breathing exercises (it really does work) and a good night’s sleep always helps. 13. My favourite movie of all time is Dirty Dancing. It’s more for the sentimental value. I watched this movie over 50 times during summer at my grandma’s in Ireland.

16. If I had super powers, it would be to control minds. 17. My favorite superhero is I have absolutely no clue so I did an online Superhero test. Apparently I am Supergirl because I’m lean, muscular yet feminine. Honest and defender of the innocent! 18. If I could turn back time, I would have an endless list of things I would change in this world. 19. The three things I cannot live without are family, friends and sunshine. 20. If I could change one thing in this world, it would be to not have wars. Can’t we all make peace? 21. If I could invite three people, dead or alive, to dinner, they would be Jesus, Hitler, and Einstein. Now, that would make for interesting conversation. 22. And we would be eating an awesome feast of global cuisine. Spicy food is a must! 23. And discussing the beginning, the present and the future. 24. When flying, I never wear high heels unless I can get air miles for the number of steps taken in them. Hahaha. 25. When flying, I always look forward to eating the delish satay on Malaysia Airlines.
