Message From The Top
Dear Guests, I have been a computer geek since I was a kid. More than 40 years hacking and building computer systems is important when you are transforming an airline. Over the next six months you will witness big changes to Malaysia Airlines’ digital sales. In June, we go live with our new Amadues reservations system on mobile and laptop. By September, you will have a huge increase in the ability to book, change and manage your booking from your mobile device. A lot more is happening across the business to improve customer service with digital tools.

In March 2017, we held the first ever travel Hackathon event in Malaysia. The public and staff asked for new mobile applications. We invited 100 geeks, programmers and designers to spend a 48-hour weekend building new solutions. They wrote brilliant apps to manage unaccompanied minors, select better food and claim free upgrades. You will start seeing some of the innovations online this year. The Hackathon winners received generous cash prizes. More importantly, they will be undergoing a three-month incubation programme at our new Innovation Lab. With our senior management support, they can build their ideas commercially. It’s all about making you, our valued guests, the number one priority and ensuring every experience with us is a memorable one. Also a bit about making you feel like James Bond – glamorous, romantic, exciting and cool. During June and September we will ask you to upgrade your existing mobile apps and I hope you enjoy the new speed. I do welcome feedback and suggestions from each of you on how we can better improve our efficiency and service delivery to you. We don’t only intend to improve on our digital front, but also on our human touch. Last month I spoke about the Golden Rule – treat other people as you wish to be treated yourself. This will be the guiding principle in everything that we do. This was ingrained in me by my late mother. Mothers always know best. On 14 May, we should take a moment to wish a Happy Mother’s Day to all the ladies who have guided their kids. It is the hardest job in the world, even harder than mine, but the most important. To all our guests, I sincerely thank you for choosing Malaysia Airlines, and as always, I wish you the best of journeys with the MH family. The journey is the reward.

Editor’s Note
I have been recycling items for many years now. I did simple things like collecting used tin cans, plastic and glass bottles, paper, and cardboard boxes, and cutting up used clothing to use as rags. I also buy soap and shampoo in refillable packagings and religiously refuse plastic bags when out shopping.
JULIE GOH EDITOR
goingplacesmagazine.com / 8 / May 2017
For me, it has been a satisfyingly positive experience, making me feel almost virtuous. This has been my little contribution to the quest to live more sustainably. The habit started when I was living in Finland in the early 2000s where the movement to live free of as much waste as possible was already strong. In nearly all areas of housing you’ll find recycling bins for perishable and nonperishable goods, even for hazardous items. In summer cottages in forests by the sea, Finns carry their waste all the way to the city to dispose. Undamaged and preloved goods are sold in flea markets and second-hand stores for a song, or donated to charities or sold to recycling centres for a token fee. It is common to see Finns buying pre-owned clothes, shoes and household items at these stores. Living waste-free, or even making the effort to reduce waste, might seem daunting. Changing our habits or the habits of the people we live with can be difficult and tricky. But contrary to what people think, it’s actually quite painless. The easiest way to begin a sustainable lifestyle is to just start, no matter how small. Whether it’s refusing plastic shopping bags or bringing your own reusable container for packing lunch or refusing free pens at conferences, make the first move. The cardinal rule for living a sustainable lifestyle is to refuse, reduce, reuse, recycle and rot; all in that order. I guarantee it will make you feel good about yourself. This issue, among our compelling reads is a feature about three individuals who have transitioned to this admirable lifestyle. They give tips and suggestions on how to set up a system which you can follow to cut down the waste you generate. In keeping with the sustainability theme, our other feature is about a food “rescue” service that allows users to buy surplus meals from participating restaurants at discounted prices. If these perfectly good restaurant food can be salvaged and not contribute to the 15,000 tonnes of food Malaysians throw out on a daily basis, there really is no reason why we should not be making an effort to help. Speaking of good food, the restaurant industry’s global experts recently crowned Toronto-born May Chow, founder and chef of Little Bao in Hong Kong and Bangkok, Asia’s Best Female Chef for 2017. The bold and dynamic chef tells us her skills in the kitchen will not be what sets her apart from other chefs, but rather her vision and ability to see the big picture that will define her future. For travel inspiration this month, we present the laid-back Chinese port city of Haikou on the island of Hainan, and the charming seaside town of Hoi An in Vietnam. The former is a fairly new twiceweekly service we launched not too long ago, and the latter can be reached via Hanoi or Ho Chi Minh City, both with daily flights. Till our next issue, we wish you a blessed Ramadhan and Selamat Berpuasa to all our Muslim brothers and sisters.

Dear Editor, I travel for work on Malaysia Airlines frequently and enjoy reading Going Places. An article in the November 2016 issue caught my eye. ‘Modern Writing’ was such an inspiring article about Tash Aw, a respected novelist in his field. It is refreshing to see him succeed in a field many Asian parents would not consider as “professional work”. It gives me hope to see a Malaysian being an influential writer and making a difference. It also motivates me to give my children the freedom to be whomever and whatever they wish to be in the future. ‚‚

I’ve been flying Malaysia Airlines for 40 years. The methods of enduring the countless flying hours correlates to my age progression: from toys to magic colour pens provided by the cabin crew to making new acquaintances to reading Going Places in more recent years. I feel the December 2016 issue was dedicated to me. I am typing this as we fly home from Mulu (in Sarawak). When I read Kam Raslan’s column on Mulu Caves, I told myself this is astonishing. How could it have coincided with my trip? Thrice I made arrangements to visit Mulu but they didn’t materialise. We finally made it after almost 10 years of wanting to visit Mulu. Although it was only for 24 hours, it was still the best experience for our family.
Each month, Going Places will select a letter of the month and the lucky writer will receive a free gift. For May, the winning letter will receive a platinum 27” Mendoza GHQ EX trolley case worth more than USD500 (RM2,369).

It was a pleasure reading Going Places during my flight from Madras to Kuala Lumpur last week. Apart from all the interesting write-ups, your November 2016 article ‘Empowering The Young’ on Siem Reap’s Sala Bai training centre that transforms lives of Cambodian youth caught my attention. As a hospitality trainer, it’s amazing what Sala Bai is doing to empower underprivileged Cambodians by developing skills required for their employability, and it’s great that such an article is found in an in-flight magazine. You have introduced me to Sala Bai and I am in touch with them to know how I can be of assistance to them with my expertise. Kudos to MH and Going Places team for highlighting their story.
I was so astounded by the new layout of the magazine that I could not put it down during one of my recent trips. Usually, it is either a quick glance, a flip or I do not even bother, but the cover of your December 2016 issue caught my eye and I was in for a good read throughout the two-hour flight. Shazana Rosli’s illustration of Indonesia was spot-on and somehow felt very Christmassy as well – perfect for the December month theme. The magazine’s abundant use of colour, stunning photography and wellproportioned articles were faultless. A huge ‘Congratulations’ to the whole team for hitting the nail right on the spot. It was even astonishing to see my Junior Officers reading the magazine onboard and discussing the articles published. Thank you very much for making Going Places fresh. I look forward to more articles. Keep them simple but fondly put forth.

First and foremost congratulations to Mr Peter Bellew and Selamat Datang! For the past years, my loyalty to Malaysia Airlines remains unshaken through good and bad times and I agree with him that safety alongside great customer service and staff morale should be the airline’s top priorities. These priorities are the values that I believe resonate with all passengers and the main reasons why I personally choose Malaysia Airlines over other airlines. I am also thrilled that soon I will be able to fly to various locations in China with excellent fare deals.

Considered one of the most important festivals in Buddhism, Wesak Day observes the three important events in Gautama Buddha’s life: his birth, enlightenment and death. During the festival, which falls on 10 May this year, temples have special prayer services and welfare activities such as charity drives and free vegetarian meals. Devotees make offerings of flowers and josssticks, and there is a candlelight procession with traditional lion and dragon dances along with colourful floats. Popular places to observe the festival include the Buddhist Maha Vihara Temple in Brickfields, Kuala Lumpur and the Thai Buddhist Chetawan Temple in Petaling Jaya, Selangor.
Named in honour of Spencer Chapman, the British soldier who escaped invading Japanese forces on Pangkor Island in Perak, Chapman’s Challenge is a unique biathlon experience returning for its second year at the luxury Pangkor Laut Resort. Race day is on 13 May, exactly 72 years after the colonel escaped, and comprises a 6.2 kilometre run around the private island’s roadways, through a twomillion-year-old rainforest, as well as a one-kilometre swim out in the award-winning Emerald Bay before concluding at Chapman’s Bar.
Set to be the largest event of its kind in the country, the first Terengganu International Paragliding Competition descends on Kota Putera Paragliding Park, Terengganu this 12 to 16 May. Get a taste of Singapore’s rich culture and history at the annual Singapore Heritage Festival, dubbed ‘a festival made by the people, for the people’. Aimed at presenting the island republic’s lesser-known stories through its shared spaces and the local way of life, this year’s ‘SHF Takes Over!’ allows visitors to gain access to previously unexplored or inaccessible spaces. Uncover hidden tales and explore nooks and crannies of historical districts such as Bukit Pasoh. Programmes such as trails, tours, open houses and performances will be running at locations around the island until 14 May.
The Pahiyas Festival is one of the Philippines’ most popular harvest festivals, celebrated annually on 15 May in the city of Lucban, Quezon. Held in honour of San Isidro Labrador – the patron saint of farmers – families put on a grand display outside their homes, adorning the walls and windows with agricultural produce such as flowers, fruits, vegetables and handicrafts. There is a friendly competition as neighbours try to outdo each other with the most creative decorations. In the evening, there is a colourful Grand Parade, featuring a pair of giant papier-mache figures of a farmer and his wife, carabaos (water buffaloes), as well as song and dance performances.
The streets of Broadbeach in Gold Coast, Australia will come to life with soulful tunes at Blues on Broadbeach Music Festival, happening from 18 until 21 May across venues around the city. The free annual music fest, one of the largest of its kind in the country, celebrates its 16th year and brings to fans international superstar Bonnie Tyler, Australian guitar legend Ian Moss, American act Slim Jim Phantom Trio and Ray Beadle, among a line-up of 60 artists.

3. Local Delights To Break Fast
Italian restaurateur Cavaliere Modesto Marini continues to make his mark on KL’s dining scene with the opening of Modi & Rosa, a restaurant and wine bar that prides itself on serving authentic Italian dishes inspired by family recipes. Unlike Marini’s other wellknown establishment, Marini’s at 57, this Glo Damansara-based restaurant is a laid-back, family-friendly establishment that does away with white tablecloths and dress codes, replacing them with bare-wood tabletops and casual dining chairs. “All our dishes are cooked exactly the way Italians have been doing it for centuries. We do not alter the recipes or methods of preparation in any way,” said Marini. Highlights include Pizza Alla Modi Rosa, which is topped with rocket, truffle oil, tomatoes and mozzarella, as well as the house-made mushroom ravioli served with creamy truffle spinach sauce.
Those seeking a fresh take on Cantonese cuisine should stop by Mitzo on Singapore’s Orchard Road, which recently introduced more than 30 new dishes. Among the notable additions are those that use ingredients seldom associated with Cantonese cooking, such as roasted coffee pork neck served with crispy beancurd skin, and stir-fried lobster claw in petai bean sauce. New additions aside, the restaurant will continue to serve up familiar favourites such as the Mitzo special barbecued pork, black truffle crispy roast duck, and steamed dim sum platters. Those who fancy a tipple before their meals will find new drinks with names like Uncle Negroni and Chinese Collins, which are the bar’s Asian interpretations of classic cocktails.
For the upcoming Ramadhan fasting period, Four Points by Sheraton Puchong takes diners on a nostalgic tour across Malaysia’s favourite dishes with its Selera Nostalgia buffet dinner. From 27 May to 24 June, tuck into hundreds of local selections, including spring chicken with biryani spices, beef stew in coconut cream, Malaysian oxtail soup, and more. The cosy kampung setting evokes memories of quaint village life. Look out for the chef’s nasi kandar, featuring delicious side dishes like fried chicken, crabs, prawns and squid, alongside lamb kurma and fish curry. End the meal on a sweet note with an assortment of Malaysian desserts, from sweet green bean in coconut milk to fresh local fruits and sago simmered in palm sugar.

6. Collaborative Creativity
Once you’re done touring the historical sites of Siem Reap, head over to Phum Baitang, a five-star hotel that includes restaurants and bars serving refined interpretations of Cambodian and European cuisine. Diners can start at Bay Phsar, a restaurant featuring a Cambodian street market setting where guests can appreciate farm-to-table concept dining in signature dishes like green papaya salad with shrimp, sweet chili sauce garnished with peanuts and crushed basil, and bangkia bampong (crispy battered shrimp with lime black pepper dipping sauce). Hang Bay, the hotel’s main restaurant, serves fusion and international cuisine with vegetables from Phum Baitang’s own garden. Popular dishes include Indonesian beef rendang cooked in mild spices and coconut cream, and sea bass fillet baked in salt, Kampot pepper and kaffir lime crust.
The Malaysian coffee scene has been growing in recent years, with cool hipster spots and cafés opening all over the country. To cater to coffee lovers, the inaugural Malaysia Coffee Fest will be held at the Kuala Lumpur Convention Centre on 5-7 May. Expect a gathering of top-class baristas, talented local artisan roasters and independent coffee shops as they showcase their best brews and share knowledge on the latest techniques.
Since the start of the year, progressive European restaurant Sitka Studio has been collaborating with some of the best chefs around Southeast Asia in a dinner series called Studio + Friends. Conceptualised by Sitka Studio’s co-founders Chef Christian Recomio and Jennifer Kuah, the dinner series has exposed KL’s diners to the work of Singapore-based chefs like Chef Rishi Naleendra from Cheek by Jowl, Andrew Walsh from Cure, as well as Benjamin Cross and Stephen Moore from Mejekawi by Ku De Ta. “Chef collaborations aren’t new, and we feel we have the perfect space to introduce the chefs to the public,” said Recomio, adding that the collaboration is driven by his ambition to share ideas and to expose his team to other chefs at the top of their game.

9. Explore Great British Food
Singapore-based Japanese-French restaurant Lewin Terrace explores the realm of bitterness with its new five- and seven-course Spring Menus created by its Executive Chef Keisuke Matsumoto. What seems like a counter-intuitive theme at first glance, however, makes perfect sense when one considers the Japanese association of the flavour with the bitter-tasting mountain vegetables, sansai, that sprout in the early days of the season. With bitterness as the guiding theme, Matsumoto has created a refined and balanced menu as seen in such dishes as the Sakuradai, which features sea bream served with lightly pickled yama udo, or Japanese mountain root, providing a touch of acidic bitterness. Other highlights include Wagyu Meets Tiger, a wagyu brisket stew complemented by the malty bitterness of Tiger beer; and lobster stuffed into a glutinous rice dumpling, served with bisque of lobster and tarragon.
Founded with the intention of alleviating poverty in local communities by capitalising on Cambodia’s growing hospitality industry, EGBOK (Everything’s Gonna Be OK) is a non-profit organisation that helps Cambodian youth through hospitality education, training and employment placement. Their recently-opened café SPOONS in Siem Reap facilitates training by bringing together students, guests and the local community. The menu consists of elevated Cambodian street food, perfect for adventurous foodies and hungry travellers looking for an authentic dining experience in the temple town. Named one of the top five eateries in Siem Reap by TripAdvisor, the café has hosted more than a thousand local and international guests.
British food has come a long way since bangers and mash, with gastropubs and fine-dining restaurants now regularly appearing on the Michelin guide and Best Restaurants list. One way to experience this food revolution is by visiting the Great British Food Festival, which arrives at Weston Park on 27-29 May and features a host of ticketed events, live cooking demonstrations by celebrity chefs, foraging walks, artisan markets, as well as baking and eating contests (the Man Vs Food contest is a mustattend!). It’s a bank holiday weekend party you don’t want to miss. greatbritishfoodfestival.com/ weston-park

1. Water Works Italian photographer Massimo Vitali presents ‘Disturbed Coastal Systems’ at the Benrubi Gallery in New York. His series of photographs explores humankind’s relationship with the coast, rivers and other natural water systems. His work often depicts large scenes where the grandness of the natural landscape is clearly portrayed as is the presence of many people. In this way, Vitali shows humans as tribes rather than individuals and this colourful series presents the habits of the human tribe in the natural world. benrubigallery.com
2. Lost In Time Over 80 years ago, the painting Turm der blauen Pferde by German painter Franz Marc, which was famed for its alarming foreboding of World War One, went missing. It was considered one of the defining works of German expressionism, praised for its remarkable artistic quality and was hugely popular among the liberal society of Berlin. The masterpiece is still lost and only a postcard study of it is all that remains. In tribute to this missing piece, the Haus am Waldsee in Berlin and the Staatliche Graphische Sammlung in Munich have invited 20 contemporary artists to explore the fate of the painting. The exhibition ‘Missing Turm der blauen Pferde by Franz Marc’ will run until 5 June at both locations. hausamwaldsee.de

3 3. Art Of Defence The Piet Hein Eek based in Eindhoven in the Netherlands is a workshop, gallery, performance space and restaurant all at once. This organisation’s current artist in residence, Mexican sculptor and painter Daniel Ruanova created a public construction of a large jagged sculpture that serves as the central piece in his mixed-media exhibition ‘Daniel Ruanova – Translocating Borders’. The towering metal installation evokes emotions of fear and aggression, which for some of the residents of his home city of Tijuana in Mexico are experienced on a daily basis. Situated on the U.S. border, the city is exposed to aggression from current political trends in the U.S. as well as enduring issues in Mexico. Ruanova’s exhibition comments on these socio-political issues with a collection of works that are both violent and fascinating. pietheineek.nl

This month is your last chance to catch Mat Collishaw’s exhibition ‘The Centrifugal Soul’ at the BlainSouthern gallery in London. The exhibition is inspired by the psychological concept ‘The Centrifugal Soul’ conceived by Geoffrey Miller, which is the theory that contemporary individuals put too much thought and energy into superficial materials that on the surface might make us popular and lovable, but leave our centres empty with little left for friends and partners to discover beneath the surface. With this in mind, Collishaw’s show focuses on illusion, superficial truth and our constant battle for visual supremacy. blainsouthern.com
The British Museum in London hosts the U.K.’s first major exhibition of contemporary American printmaking this month. ‘The American Dream: Pop to the Present’ charts the creativity of this medium through some of the most turbulent times in American history right up until present day. Works from over 70 artists, including some of America’s most acclaimed printmakers are set to feature, such as Andy Warhol, Jasper Johns and Ed Ruscha. The exhibition shows how the medium became hugely popular during the ‘60s with a new generation of artists producing printworks that challenged the notion of what art comprises and putting their prints on equal footing with traditional mediums of art, like painting and sculpture. britishmuseum.org

What do you love most about this city? The food is what I love most about Kuala Lumpur. The diversity is mind-blowing: Malay, Indian, Chinese in all their permutations, and my beloved Nyonya cuisine is best in the world!
One thing about the locals. Every day is a G’day.
Where would you take a first-timer to in this city? I would take the person for a stroll through Jalan Tun H.S. Lee and its surrounds. One of KL’s most historical streets, it still offers some nostalgic glimpses into the past. Here you will find traders still trading in pre-war shophouses, Masjid Jamek and the oldest Chinese and Indian temples in the city. Happily, quite a few architectural gems from the past are still standing and some of the best food in KL can be had in the coffee shops and stalls tucked between the atmospheric streets and five-foot ways. What is the one thing that the first-timer must do in this city? They must at least catch a glimpse of our iconic Petronas Twin Towers. Designed by Cesar Pelli, I think it is one of the most beautiful buildings in the world. KL being a foodie city, the best way to appreciate the towers is to dine in a good restaurant with a view of the magnificent jewel-like towers.
What do you find most refreshing about this city? How walkable the city is! The one experience or place that everyone must try/visit. If you are here in January, you must experience the Australian Open at Melbourne Park. The world’s top tennis players will be there for the first Grand Slam of the year and it’s right in the middle of the city. The one local dish everyone must try. Melbourne is populated by people from many different cultures. You can have the best of the world: Italian, Greek, Vietnamese, Thai, Korean, Japanese, French, Indian and more. A bowl of (Vietnamese noodle) pho is as local as Vegemite on toast. I would recommend you go out and try everything.
The best place to have dinner with: a. family – Overseas Chinese Restaurant on Jalan Imbi b. friends – Fuego at Troika Sky Dining
The best thing you can do here for free. The City Circle Tram is a free service and is a wonderful way to see Melbourne. The tram will take you on a loop past shopping malls and arcades and major attractions such as the Old Treasury Building, Parliament House and the Princess Theatre. The City Circle line is serviced by the very charming heritage ‘W class’ trams exactly like the ones used in 1923.
The best thing about the locals. Their warmth and generosity.
A lesson learnt from this city: Diversity makes a city great!
Name one souvenir to take home. We have a great number of award-winning tattoo artists in Malaysia, many of them influenced by the skills and the tribal tattoos of the indigenous people of Borneo. I highly recommend you take home a tattoo as a souvenir.
What was the best piece of souvenir you took home from here? In French, souvenir means a memory and for me, that is what I bring home with me, memories of my experiences. One of my best memories was dining at Attica. It was a meal full of new discoveries, completely unpretentious and heartwarming. A truly Australian meal, with produce sourced, grown and foraged from the area. Hand dived scallops, Wallaby blood pikelets, Emu’s eggs, smashed avocado on toast were some of the dishes served with great humour and delight.
Five words that sum up this city. Delicious, surprising, charming, laidback, comforting. Where might we find you at 1 am in this city? No Black Tie is a very special place. This jazz and classical live music venue could be your most memorable evening in this city. It’s a late-night haunt of some of KL’s most creative minds. 1 am will very quickly become 6 am.

Passwords
goingplacesmagazine.com / 30 / May 2017
HOW MANY PASSWORDS DO YOU HAVE? I’ve so many and because I am more than 12 years old I cannot remember any of them. It’s easy for 12-year-olds to remember their passwords because their first pet is still alive and they've only ever watched Frozen. I’ve seen and done many things that have inspired far too many potential passwords. I’ve watched hundreds of movies and have buried far too many pets (I kept fish for a while. It was a bad time to be a fish). If I had to buy a new phone or computer I would need to ask WikiLeaks to help me reactivate my email.
I recently had to help a friend through a difficult time. Her phone suddenly died. It simply did not work at all, the screen was blank and there was no sign of life but she insisted that it could be resuscitated because it was only four years old. I didn’t have the heart to tell her that in mobile phone age that is 1,000 years old. I tried to tell her that the phone had led a full and exciting life, it had travelled the world, taken lots of photos that were never printed or even downloaded and had received many inspirational quotes in WhatsApp groups that she never bothered checking. It was now time to accept that it was gone and that all those memories were lost forever, except for the actual human memories, of course. My friend called me in her moment of crisis because she could only remember two phone numbers and mine was one of them. She called me using an ancient device called a “telephone” that I think they used for communication in the times of Game of Thrones. Without her smartphone she was isolated and afraid. She couldn’t even order a GrabCar or find out the name of that guy who was in 1985’s The Breakfast Club. She couldn’t even look at Wikipedia to find out that Judd Nelson has been in a lot more movies than you think and then five hours later, find herself watching YouTube videos about origami because, well, that’s what happens.
The only problem my friend faced ‘‘ was that she has had so many pets over the years that she couldn't remember the passwords for any of her accounts.‚‚ We rushed her phone to an emergency room where we waited for several anxious hours to see a smartphone doctor. I felt so sorry for my unfortunate friend because she couldn’t even distract herself by scrolling through her phone to find out the latest thing Donald Trump has done or which juice now kills all known diseases or even which Friends character she is. But my phone still worked so I now know how to make little paper dogs and that I am a Rachel (and I always thought I was a Ross). Eventually the doctor looked at her phone and gave us the bad news. He explained that the phone was absolutely dead and that every single photo was lost forever. My friend was inconsolable in her grief but the smartphone doctor did say the kind words, “I’m sorry for your loss”. We walked away in a state of shock because how can I be a Rachel when I am definitely a Ross? I mean, I love dinosaurs and the other Paleontology stuff. My friend almost wept as she held the lifeless body of her phone and insisted that nothing could ever replace it. But she had to buy a new phone and within roughly 43 seconds had completely forgotten about the old one because the new one had treble the
gigabyte capacity and a bigger screen and was basically new and therefore, better. The only problem my friend faced was that she has had so many pets over the years that she couldn’t remember the passwords for any of her accounts. I went home having learnt a valuable lesson. To be safe I need to download all my photos and write down my passwords on a thing called “paper” with a thing called a “pen” or all my hard work with Pokemon will have been wasted. Obviously I didn’t do any of those things because when I opened my phone I discovered it was five hours later and I was watching a YouTube video where a guy was showing me how to play the guitar solo for Stairway to Heaven, and I don’t even play the guitar. The screen is coming off my phone. It will break very soon and I need a new phone. But I cannot remember the password for my Pokemon account. What am I going to do? More importantly, what was the name of the girl in The Breakfast Club? I need to look that up.

LAID-BACK One thing you’ll notice about Hainan is that the people are very laid-back and friendly, and will do their best to help you, even if they don’t speak English (which they mostly don’t). TROPICAL CITY Unlike most Chinese cities, Hainan’s capital of Haikou has an abundance of greenery in the form of coconut trees that line most streets. Coconuts are readily available for sale on most street corners to slake your thirst on hot days. BREATHE EASY You won’t need a pollution mask here as Haikou’s air is fresh and clean. The city boasts the cleanest air of any in China. WINTER SUN While northern China freezes during the winter, the temperatures in Haikou are pleasantly warm, though it should be noted that the summers are uncomfortably hot and humid, and there is a rainy season from May to October.
What To Do THE TAIL OF THE DRAGON As China’s southernmost province, Hainan has historically been seen as the end of the empire, and out-of-favour officials were often banished here, as commemorated by the Wugong Temple (The Temple of Five Lords) dedicated to five officials who criticised the
injustices of the imperial government. The temple, originally constructed during the Ming Dynasty, is an attraction worth visiting. FUSION ARCHITECTURE Haikou’s most popular tourist attraction must be the pedestrianised area of Qilou Old Street, a charming quarter where Chinese merchants returning from overseas built arcades fusing European, Asian and Arabic styles. This now showcases teahouses, restaurants and souvenir shops. PARKLIFE There are many pleasant parks along the waterfront, as well as the People’s Park next to East Lake in the centre, where locals come early in the morning to practice tai chi and traditional dancing.
LIGHTS, CAMERA, ACTION If you fancy getting some fun photos for social media, Haikou Movie Town has three ‘movie sets’ of early 20th-century historical streets as well as a free shuttle bus from downtown.
A BIT OF HISTORY The grand, modern architecture of Hainan’s Provincial Museum hides a few modest but informative exhibitions on the island’s history and its minority ethnic groups, such as the Li, Miao and Zuang. FORE! Haikou is a fairly spacious city for China and boasts over half a dozen golf courses, some of which overlook the sea. SHIPS AHOY Oddly not on the mainstream tourist radar, the 72-metre-high Baishamen Lighthouse is the sixth tallest in the world, and although you can’t go up, you can get great views of the sea and city from the Ferris wheel at the nearby Baishamen Park.
Malaysia Airlines flies twice weekly from Kuala Lumpur (KUL) to Haikou (HAK), China.
May 2017_MY Guide_Haikou02.indd 34
ON THE RELIGIOUS SILK ROUTE Arabic traders brought Islam to the island, and it’s possible to worship at the solitary and modest Haikou Mosque, with halal food available at Xi’an Lao Ma Muslim Food Family Restaurant. There are also a handful of Christian churches, including the Catholic Cathedral of the Sacred Heart of Jesus.
What To Eat FAMOUS FOOD Wenchang chicken, from the nearby town of the same name, is the most famous of Hainan’s dishes, and was taken by migrants to Singapore, where it became the more wellknown (and many say, more flavoursome) Hainan chicken rice.

Travel Tips
FRUITS OF THE SEA Seafood is a must in Haikou, and there’s no shortage of restaurants specialising in locally caught produce such as the highly-rated lobster. STREET LIFE Because of the heat, Haikou really comes to life after dark when locals indulge in their passion for street food. On Banqiao Road, you can choose live seafood from the tanks and eat in the gutter at great prices
Easy Trips EASY ACCESS Sanya on the south of the island is China’s top beach resort, and it’s quite possible to visit on a day trip from the island’s capital with the high-speed train. THE HEART OF THE ISLAND For the more adventurous, the town of Wuzhishan lies three hours by bus south of Haikou, and you’ll be more likely to see Miao women dressed in traditional dark smocks than another foreigner. PICTURE POSTCARD If you want to get a taste for rural Hainan, Gusong is an eye-wateringly pretty fishing village less than two hours from Haikou, with old wooden houses nestled under swaying coconut trees and a tiny lighthouse perched on the headland.
May 2017_MY Guide_Haikou02.indd 35
Take To The Waves GOLDEN SANDS The most popular stretch of sand is the sixkilometre-long Holiday Beach where you can windsurf, kayak and jet ski. It can get quite busy during weekends, but the crowds thin out as you walk away from the town. PARADISE BEACH The beach at Shimei Bay on the east coast near Wanning must rate as one of the cleanest and prettiest on the island, with the stretch near Le Meridien Resort being close to anyone’s idea of tropical paradise. SURF’S UP! Riyue Bay near Wanning is China’s premier surf spot, easily accessible via high-speed train and taxi from Haikou, and the site of the Riyue Bay Surf Club (and basic hostel) as well as the Surfing Hainan Open competition.
Practical Advice RELAXED ATTITUDE TO RULES Haikou traffic, it is said by many Chinese, is some of the worst in China, and rules are often ignored. Although the locals usually drive pretty sedately, you should keep an eye out for vehicles coming from any direction.
THREE WHEELS BEST Auto- and cycle-rickshaws are the best way to zip around the city centre as they slip more easily though traffic. A short hop will cost you about USD1-USD2 (RM4.50-RM9.00).
goingplacesmagazine.com / 35 / May 2017
MONEY The currency of China is the Renminbi (written as RMB or 元), though it’s also called the Chinese Yuan (CNY or ¥) and often referred to colloquially as kuai (bucks).
HIGH-SPEED TRAINS Hainan now boasts an efficient highspeed rail service, which runs from Haikou down the east coast to Sanya in under two hours, giving easy access to some of the island’s finest beaches.

Cashless Future The Malaysian Electronic Payment System (MEPS) is pushing for an integrated network that offers convenience, security and reliability, shares its Group Managing Director Michael Kumar.
What is MEPS’ role in the overall Malaysian financial services sector? MEPS is a payment consortium owned equally by 11 Malaysian banks. We function mainly as the electronic payment infrastructure arm and technology partner for the Malaysian financial services industry, where we’ve been an important player since 1996, especially in facilitating interbank transactions. We started out with cash withdrawals, and gradually introduced more e-payment services such as interbank fund transfers, mobile prepaid top-ups and stored value smart card reload – all of which can be done at an ATM. It’s a cheap and fast alternative for users who don’t want to or are unable to perform their transactions online.
May 2017_Tete-a-tete04.indd 36
Our role encompasses the development and implementation of payment services, provision and management of shared infrastructure for participating financial institutions, the governance of adherence to relevant standards, as well as the development and certification of technical standards and specifications for domestic ATM and debit chip cards.
You were appointed to the role of Group Managing Director on 1 October 2016. Tell us more of what you do. I ensure that the business direction as confirmed by the board of directors is met. That means aligning the various teams in the organisation to achieve profitability, and ensure efficiency for the good of the industry as a whole. My goal is to build on Malaysia’s Vision 2020 profile and to ensure the organisation is sustainable well into the future.

which is more ‘‘E-payment, expedient, will provide opportunities to improve productivity and move towards a world-class payment ecosystem.
‚‚
1 1. Michael is tasked with ensuring MEPS is sustainable well into the future 2. Mobile banking is expected to grow exponentially with continuous research and development and increased security features 3. All locallyissued ATM cards will use the Malaysian Chip Card Specification developed by MEPS by the end of 2017
What is MEPS’ mission? At MEPS, our aim is to help the nation complete its payment activities through convenient, reliable and secure services, as well as to support the central bank’s e-payment agenda for the country. By 2020, the central bank targets to increase the number of e-payment transactions per capita to 200 transactions from 44, and to reduce the number of cheques from 207 million to 100 million per year. Measures to achieve this will include providing the right price signals to encourage the switch from paper-based payments to e-payments, and facilitating wider outreach of e-payments infrastructure, such as point-of-sale terminals and mobile phone banking.
What are some of the projects that MEPS is currently developing? MEPS is currently upgrading the previously applied Payment Multi Purpose Card (PMPC) standard for ATM cards to become Europay, Mastercard and Visa (EMV) compliant. It is renamed as the Malaysian Chip Card Specification (MCCS) and the replacement of existing ATM cards is expected to be completed by the end of 2017. The PMPC was a proprietary standard, used since 2003. It was developed back when there was still uncertainty on an international standard and there was a lot of fraud involving ATM cards. Since introducing it, there was zero fraud committed using cloned ATM cards. In 2013, we decided that it was time to move on to EMV, which is the international standard used around the world.
May 2017_Tete-a-tete04.indd 38
In addition to the typical functions of an ATM card, the new MCCS cards will have a dual interface whereby customers can perform contactless transactions at merchant outlets such as at petrol kiosks, supermarkets and for transit. Regionally, we also facilitate cross-border transaction services with several countries, namely Indonesia, Singapore, Thailand, Vietnam, China and South Korea. This offers participating banks’ customers the convenience of withdrawing cash via ATM in said countries.
What do you think are the key technology trends driving the global payment services market now? Mobile banking is expected to grow exponentially in the future, thanks to continuous research and development, as well as mitigation of security concerns. We’ve seen widespread smartphone adoption in developed markets and its increasing penetration levels in developing markets, Malaysia included. There’s positive growth in the mobile wallet market as more retailers and consumers adopt contactless technology. There are a lot of investments being put in by telecommunications companies and phone manufacturers to ensure that their products are able to support contactless features for easy payment.
Where does Malaysia stand in terms of mobile payments and real-time payment platforms? I think that for many people today, their mobile phone is an essential part of their lives. They can leave their wallets at home and survive as long as they have their ‘digital’ wallet with them. Digital wallets not only provide transaction

3 facilities at affordable prices but also help consumers manage their accounts easily. For digital wallets to fully replace their physical counterparts, they will need to hold everything a leather wallet can: cash, receipts, membership cards and payment cards.
Are we ready for biometrics in payment transactions?

How can MEPS help us become a cashless society? Our participation will be in tandem with the industry as a whole. With instant transfer services, the financial services and payment industry is greatly enhanced, reducing cash transactions over the counter significantly, and correspondingly, reducing transaction costs and risks. We are also looking at a strategic merger to enhance the country’s payment infrastructure into a highly efficient, secure and competitive e-payment agenda. E-payment, which is more expedient, will provide opportunities to improve productivity and move towards a world-class payment ecosystem.
While we have yet to fully integrate a cashless ecosystem, payment trends are definitely evolving in line with new developments in technology. We haven’t seen widespread implementation of biometrics, certainly not in this part of MEPS will continue to be aligned to what the central bank Asia. Looking at trends in Singapore, Thailand, Philippines expects of us, and participate with other industry players to and of course Malaysia, we’re still very much towards mobile do what is necessary to further develop a cashless society payments. Pretty By Design Lisette Scheers wants to make the world beautiful.
goingplacesmagazine.com / 41 / May 2017
THE WEEKEND AFTER MY INTERVIEW with Lisette Scheers,
her friends are whisking her off to their home for welldeserved R&R before she jets off to Paris to oversee her new Nala Designs shop. Two blissful days of no work, no clients, no employees, no emails. As the founder of three businesses – creative agency L.Inc, stationery and accessories brand Nala Designs, and Dr.Inc café – Scheers, who is also a single mother, does not get to take many breaks. “Where does the energy comes from? I don’t know. It’s pure survival. Of course, making beautiful things always make me happy,” said Scheers.
2
3 Anyone who has ever stepped into one of The BIG Group’s establishments in Kuala Lumpur would be familiar with Scheers’ work. Scheers oversaw the creative direction of the group, from the interior design of the various outlets of this F&B empire right down to the hand-drawn menus and murals on the walls. The pitch-perfect interiors, sumptuous decor and cohesive collaterals became standard-bearers for intelligent and beautiful design in the industry. Packaging a good idea with beautiful designs is classic Scheers. But when it comes to branding, she said, a good story is essential.
1. Nala Designs started as a stationery line but now includes clothes and home accessories 2. A roomy bag for everyday use 3. Scheers spent her formative years in Kuala Lumpur and has very fond memories of it
“Every brand needs a story, a reason to exist. For all my branding, I go in very personal and try to find a hook. It is very important for me to like my client and know them very well so I can build on their story that fits them and

has personality. That’s what I’m good at, building stories,” said Scheers. Dutch national Lisette Scheers was born in Singapore but spent part of her formative years in Kuala Lumpur, and has many fond memories of the city. “When I grew up here, I remember all the beautiful houses, the mini buses, the food, the mixed cultures. I’m still nostalgic for those days,” she mused a little wistfully. She lived in the Netherlands where she worked for McCannErickson and Ogilvy & Mather before returning to Malaysia in 2004 with her own family. She started working at the Raffles Design Institute, where she had set up the design department. Word soon got around of her advertising background and she was inundated with demands, causing her to stop teaching and focus on advertising full-time with La Scheers Co. Within a year, the company grew to 25 people, handling clients such as The BIG Group who are attracted to her straight-talking attitude, innovative branding ideas and impeccable designs. In 2013, La Scheers Co. was rebranded as L.Inc, short for Lisette Incorporated. “I wanted a new brand and I wanted it simplified while incorporating different branches such as a magazine and a school,” she explained. Among their
projects are the rebranding and interior design for the chain of Delicious restaurants, a premium tea brand and a skin laser company. If advertising and branding weren’t enough, the hypercreative Scheers started Nala Designs during a lull in jobs in 2008. Nala, a Swahili word for successful, is also the name of her daughter. Starting from a stationery line, the brand now includes clothes and home accessories that draw on Malaysia’s rich cultural heritage as its design inspiration. Here you’ll find totes, pillows, sketch books and scarves in graphic Peranakan patterns and stylised designs of Malaysian icons. Dubbed the Queen of Patterns, Scheers
I've always wanted to give ‘‘something back to Malaysia. Even though I'm not Malaysian, I still feel very strongly about the past, how beautiful KL used to be.

creates the most delightful prints that are given individual names like Love Lattice and My Kuih or the Highway. Exuberant and nostalgic without the kitsch, Nala Designs is now available in Japan and Hong Kong, with a spanking new shop in Paris.
Three years ago, she ventured into the F&B business with Dr.Inc, situated below her shop in a quieter part of the trendy Bangsar neighbourhood. Tucked in a shophouse, the café and restaurant – decked out in Nala products – features inventive meals and lively pop-up markets.
“I always wanted to give something back to Malaysia. Even though I’m not Malaysian, I still feel very strongly about the past, how beautiful KL used to be. The core of what I am trying to do is to try to keep that alive,” said Scheers.
“The café came about accidentally. I wanted to take a break and had someone come in to take care of the shop. The person happened to own a coffee machine. I had no intention of opening a café or a full-fledged restaurant but it’s full on busy for lunch and dinner.”
Design-wise, Scheers still creates by hand, whether it is drawing or doing silk screens. “It’s not difficult to find inspiration but finding a new twist to something that has already been done is not easy. I decompose what I find and put it back together again but I have to push myself every time to find new patterns and new designs,” she said. As an innovator, it isn’t long before copycats spring up, imitating her style. “I try to find a new approach. It is a challenge to make it look so difficult that it is difficult to copy,” sighed Scheers.
May 2017_Homegrown.indd 43
You could say that Scheers has the Midas touch; whatever venture she embarks on turns to gold, helped by her uncompromising belief in good design and ferocious capacity for work. The journey hasn’t always been easy for this one-woman show, and Scheers sometimes feels the strain. Whenever she does, she rejuvenates herself by diving into her enormous bag of ideas and takes satisfaction in a perfectly made tea towel or kuih design. “I’m very lucky my creative juices always work; that’s the thing that doesn’t leave me, that is my creative ideas.”

The quaint Old Town is Hoi An’s top draw. Reflecting its foreign trade port roots, you’ll find French colonial architecture next to ancient Chinese traders’ houses and pagodas, with golden yellow-coloured walls everywhere, making for a tremendously photogenic backdrop. You have to pay a USD5 (120,000 dong/RM24) entry fee to the historical area, but this includes tickets to visit any five of a choice of sites or museums, such as the iconic Japanese Covered Bridge, the timber-framed Tan Ky merchant’s house, the Folklore Museum, or the Fujian Chinese Assembly Hall. Over 800 17th and 18th-century houses and other architectural wonders here are on UNESCO’s protected and preserved buildings list. Several streets are closed to vehicles, making them perfect for strolling. If the heat and distances get to be a bit too much, you can take it all in via a cyclo rickshaw.

Celebrate If you time your visit for the Lunar Festival, you’ll see Hoi An at its best. On full moon nights each month, the old quarter dims electricity, and everything gets illuminated by traditional silk lanterns, making for an incredibly colourful

spectacle. Additionally, boatmen and women offer rides on the Thu Bon River, where thousands of local couples come to float candle lanterns, praying for good luck and success in love. The celebration has become such a defining image of Hoi An that even if you aren’t here for the lunar fête, you’ll still see lantern shops and candle sellers each evening, with loads of couples coming here to shoot honeymoon photos in traditional costumes.
Explore There is plenty to do just outside and around town as well. Cua Dai and Ao Bang are golden-sand beaches 10-15 minutes away by bicycle, with a mellow vibe should you get saturated with cultural touring and just want to relax with a book and a beer. Snorkel fiends and hikers will love the Cham Islands, just offshore, part of a marine park with turquoise bays and long stretches of white sand. Eat Like A Local Hoi An is home to dishes you won’t find elsewhere in Vietnam. ‘White rose’ or banh bao vac, are rice paper dumplings stuffed with shrimp and shaped to resemble flower petals. The recipe for making them is a secret, held by one family restaurant now in its third generation, and they supply every other place in town with the dumplings each day. Head to the source, Tran Tuan Ngai, to sample these succulent treats.

into a bowl of cau lau, the noodle and local greens dish that is also unique to the city, as tradition stipulates that the stock for the broth must be made with water drawn from only one well that dates back to the 10th century. Almost all diners in the bustling market are eating this or mi quang, a dry rice flour noodle dish topped with grilled rice paper and spices, also only found in the Hoi An region.
Follow Bourdain Renowned foodie Anthony Bourdain put a hole-in-the-wall French baguette sandwich shop firmly on the world food map when he proclaimed it to be the mother of all banh mi shops in Vietnam, remarking “This is symphony in a sandwich.” These days, the queue at Banh Mi Phuong often stretches around the block, but the wait is well worth it as in addition to the standard pork paté on a crunchy baguette, Phuong also does barbecued pork, grilled chicken with cheese, tuna fish, and a whole variety of options.

Morning Glory is run by Madame Vy, Hoi An’s most famed restaurateur, who also operates Vy’s Market restaurant, where she runs a cooking school that will teach you how to make all the specialities you’ve been filling your belly with.
Peaceful Rest Set on a private beach outside of town that’s claimed to be one of the best beaches in the world, the Four Seasons Nam Hai surrounds you with water and relaxation. In addition to the sea, there are three infinity swimming pools on the beachfront, including an Olympic-sized lap pool. Closer to the action, the Life Heritage Resort features French colonial architecture, manicured gardens, and all rooms look out on the atmospheric Thu Bon River. Additionally, the old town is just a short stroll away.

8 Café Culture While pub crawls are somewhat limited in early-to-bed, early-to-rise Hoi An, java fiends will love the strong, bold Vietnamese coffee, sweetened with condensed milk and poured via a slow drip. Arabica beans from Vietnamese highland growers feature prominently. Faifo Coffee has the best rooftop view in the old town and a wide range of local and imported blends.
Sate Your Silk Search Hoi An is one big souvenir and craft bazaar, and you’d be well-advised to arrive with extra room in your luggage to take some goodies home. The traditional paper or bambooframed silk-covered lantern shops are always crowded with shoppers, and if you want to make your own, you can take part in a workshop with the Lifestart Foundation. However, what Hoi An is really renowned for is its tailors. Hundreds of shops offer services to custom-make suits or silk shirts, scarves, and sleeping sheets. Beware that if the price is cheap, it probably isn’t real silk. A Dong Silk and Be Be Tailor are two of the more reputable outfitters.
Malaysia Airlines flies daily from Kuala Lumpur (KUL) to Hanoi (HAN) and Ho Chi Minh City (SGN), Vietnam. From there, take an overnight train to Danang for a taxi ride to Hoi An.

THIS YEAR’S UBUD FOOD FESTIVAL will bring together food lovers from around the region for feasting and fresh thinking around the theme ‘every flavour is a story’. Now in its third year, Indonesia’s leading food festival is a three-day programme of cook-offs, markets, chic parties and food tours in the lush cultural centre of Ubud. It takes place this year on 12-14 May.
Regional collaboration is high on the menu, with top chefs from different corners of Asia teaming up to mix and match their flavours and styles in what promises to be a memorable event. One of them is TV chef Yuda Bustara, who fittingly has a story in cuisine that has taken him to Malaysia, Australia and back to his hometown, Jakarta.
now tending to spend more money on eating healthy food. You can tell by the fact that there are so many healthy juice bars popping up around town,” he says of Jakarta. Despite his attraction to clean eating, Yuda admits his favourite treat when home in Indonesia is a trip to a restaurant in Padang, which brings back memories from childhood. “The flavours just bomb your mouth, and they use so many spices,” he enthuses. “When I was a kid, my mom tried not to feed me with Padang food. She used to say it

A familiar face to Asian Food Channel viewers, Yuda left Jakarta for Malaysia at age 19 to study at Taylor’s University, where he received the formal training to back up his passion for food. After graduation, Yuda worked for a period in Kuala Lumpur and then decided to test his new skills and build his experience in the dining scene of Melbourne.

There, he learned the importance of high-quality ingredients, which were available in abundance from local growers. “In Melbourne, everyone is so creative and always coming up with new ideas,” he said. “The food industry in Melbourne is so competitive, it’s so hard to find bad food there.” Now back in Jakarta, Yuda, 30, is juggling several projects – his TV and cooking school appearances, helping at his family’s vegan restaurant, food styling and working as a private chef. His personal mission is to educate people to cook simple, healthy meals, so he’s happy to observe the current trend towards fresh and organic food. “People are

The hotel also features the cozy Library Café, and hosts regular classes on Balinese cooking, cocktail mixing and coffee tasting. A more rustic option – and one the social media savvy will instantly recognise – is Ubud’s Zen Hideaway. A 150-yearold teakwood house located 20 minutes away from town, it has the most famous swing on Instagram that lets guests soar over a spectacular view of the Ayung River and the surrounding rice fields. establishment Gallery Vask (number 35 on the Asia’s 50 Best list) will join the trio of chefs from Ubud’s Locavore (number 22) to serve a menu both elegant and exciting. Still on the theme of mixing, Raka Ambrawan, resident mixologist at Locavore’s cocktail bar Night Rooster, will serve special fermented fruit cocktails created for one night only. But the festival is not all fine wining and dining. Every year, the ‘Think, Talk, Taste’ forums discuss new food trends and environmental challenges. Hot topics now are the coconut craze, cassava and tempeh, Indonesian staples that are being called the new ‘superfoods’, and sustainable seafood and overfishing.

Take A Bao A businesswoman with drive and ambition, May Chow’s love for music, fun and good food isn’t a contradiction in terms.
HONG KONG CHEF MAY CHOW was tapped to receive the title of this year’s Asia’s Best Female Chef from the organisers of the prestigious Asia’s 50 Best Restaurants list, but she’s the first to say that it’s not her technique in the kitchen that sets her apart. goingplacesmagazine.com / 55 / May 2017
“I am never going to be an amazing chef because I don’t look at restaurants just from a kitchen perspective,” she remarks candidly. “I don’t think I’ll ever be that chef (who brags), ‘I’m the fastest person to portion out this fish. Check me out’. Or the Japanese chef who spends 10 years perfecting one dish.” “I’ve realised more and more what kind of person I want to be,” she says. Her strengths lie in seeing the big picture. “I love planning, I love music, I love service, I love food, I curate menus.” A big part of her vision is fostering creativity and ambition in others – two things she says traditional Chinese culture

3 doesn’t encourage. Chefs should “dare to dream,” she says emphatically. Five years ago, when she started working at Bo Innovation, Alvin Leung’s avant-garde Hong Kong restaurant, and began talking to the other chefs there, she realised that “their highest dream was to be a sous chef.” They never imagined they could rise beyond that. “And the executive chef was always (going to be) an expat.” It was even a problem when dating or making friends. “That’s such a low career path,” she jokes. Chow, of course, has shown that being a chef is anything but.

“When I said that I wanted to be executive chef and have my own restaurant,” the sceptics were dismissive. “‘Yeah, good luck,’” was a constant refrain, but she refused to give in to the naysayers. Bo Innovation was proof she could make her dream a reality. “I looked at (Leung) as a business owner and I knew that I wanted to open a restaurant.” She eventually moved on to Yardbird, and though she only spent three months in Canadian Matt Abergel’s kitchen – where by her own admission she didn’t learn anything about cooking – the impression he left was long-lasting. Chow found a way to articulate her own culinary philosophy that blends fun, music and gastronomy. Abergel told her she needed her own kitchen. A spot in the farmers’ market in Hong Kong’s Quarry Bay that was originally offered to him became an opportunity for her to test the waters.

She decided to serve soft steamed buns filled with flavourful ingredients assembled like a burger. David Chang’s Momofuku was serving them in New York but the dish didn’t yet have much traction in Asia. Hers sold out in minutes. The next week she doubled production and sold out again.

STEPS:
Chow shares her Little Bao K-wings, inspired by Koreanstyle chicken wings known for their shatteringly crispy thin crust and the addictively spicy gochujang sauce.
1. Wash and pat dry chicken wings.
INGREDIENTS:
3. In a small bowl, whisk together gochujang, red fermented beancurd, agave nectar, minced garlic, chilli powder, sesame oil and water to make the K-wing glaze.
4 fresh whole chicken wings (Little Bao uses the threeyellow chicken breed) Toasted white sesame and scallion for garnish (to taste) Vegetable oil (for frying) FOR BATTER: 60 g all-purpose flour 70 g cornstarch 1.5 g baking powder 10 g salt 100 g water 110 g vodka FOR K-WING GLAZE: 100 g gochujang sauce 70 g namyu or red fermented beancurd (drained) 110 g agave nectar 10 g garlic (minced) 3 g chilli powder 10 g sesame oil 5 g water

2. In a small bowl, whisk together all-purpose flour, cornstarch, baking powder, salt, water and vodka.
4. In a large deep fryer or pot, heat oil to 350F/180C. 5. Dip chicken wings in batter, letting the excess batter drip back into the bowl. The batter should be very thin where you can see the skin of the chicken. 6. Carefully add chicken wing into the fryer, four at a time. Cook for 3-4 minutes. Remove from oil and let rest for a minute. Add again to oil to fry for another 3-4 mins until cooked through and lightly golden brown. Remove and lay on rack. 7. Use a brush to brush on a thin layer of the K-wing glaze on all sides of the fried chicken wings. 8. Sprinkle toasted white sesame and scallion to garnish the chicken wings.
Little Bao, a 20-seat, no-reservations eatery serving shared dishes, cocktails and of course, her signature bao, opened a few short months later in the heart of Soho, Hong Kong’s bustling nightlife district, and diners came in droves. Now at the age of 32, barely three years after opening her first restaurant, Chow has her eyes set firmly on the future. Last year, she opened a second Little Bao in the equally trendy Thonglor area in Bangkok, and has just opened the doors to Happy Paradise, a stone’s throw from the original Little Bao, an all-encompassing venue that offers sophisticated

food along with eclectic DJ sets and loads of atmosphere. She is also a partner in Second Draft, which highlights Hong Kong’s craft beer scene and the food of her former head chef Man Chu Yeung. She is constantly pushing her staff to strive for more, so giving him a showcase for his talents was a natural progression. Chow is conscious of being a role model. “My role is paving the way for chefs, especially local chefs, to have the capacity to be here in five years, 10 years,” she says softly, touching the table in front of her. “Not because I’m bringing them. Because they deserve it on their own.”
6

Chow also reflects on being named Asia’s Best Female Chef. “The previous winners won at a later stage in their life and I won very early, (but) I don’t think that Little Bao is what defines me. It’s just my first restaurant.” She is grateful for the recognition “but I think my vision will bring me much further, and in 10 years, it’ll be easier to see what I’ve done. It’s really hard to convince people where you want to be next because all they can see is what you are now.” If where she is now is anything to go by, Chow’s future certainly looks bright.

Zero Waste Lifestyle
/ Trendspotting

Adopting a zero waste lifestyle is easier than one thinks.
THERE’S A VAGUELY OLD-FASHIONED AIR about the Hive Bulk Foods store in the plush Bangsar neighbourhood of Kuala Lumpur, with its wood shelves laden with glass jars filled with daily food staples like flour, sugar, rice and oil. Like grocery stores of yore, there is no plastic packaging or even brand names. Items are sold by weight, and packed into paper bags or preferably, the customer’s own container. Small as it is, the store is beautiful in its simplicity and philosophy.
The Hive Bulk Foods store is a labour of love by Claire Sancelot, a French expatriate married to a Malaysian. Opened in May 2016, the objective was to support the fledgling Malaysian zero waste movement by doing away with unnecessary packaging that swaddles items for sale in most stores. It makes economic sense too. “Packaging is expensive, and it’s no point paying for it,” says Sancelot. On average, the items at Hive Bulk Foods are 10 to 30 percent cheaper than comparable organic products. It’s a small store but it packs a good range of dry food like flour, quinoa, dried fruits and nuts, and fresh vegetables delivered several times a week by organic farmers. It carries cosmetics in biodegradable packaging, package-free toiletries, and items like reusable stainless steel straws. There’s even pre-loved clothing. “We started small but now, every week, we get new customers,” says Sancelot, delighted that many have expressed curiosity about the zero waste movement. Zero

wasters, as they term themselves, are people who aim to minimise trash from day-to-day living. This includes buying items without packaging, buying second-hand items, using biodegradable and recyclable products, and paring their purchases down to a minimum. Sancelot has been a practitioner since 2010 while living in Hong Kong and realising the seriousness of environmental pollution when her first child was born. The family realised they were a part of the problem. “It’s because of us, the society, and the way we live,” she says.

5 Tin, who began her quest for a greener life while writing about environmental issues as a journalist. To be sure, a zero waste lifestyle sounds cumbersome but zero-wasters say the only real difficulty is setting up a system. It might take a few months to learn where to find unpackaged food and daily items, second-hand clothing, and other ways of reducing use, but after that, it becomes almost second nature. Aurora took a month to set up her system, including scouring the Internet for places to buy essentials such as cooking oil and soy sauce with disposable packaging. It also took her the same amount of time to collect used containers and cloth bags for her shopping. “It did consume a bit of time at the beginning but after that, it’s easy. It’s only when there is a new activity, like that time when we were invited for a paintball game. That took us some time to research,” she says.
They moved to Malaysia a few years later, and although the zero waste movement is still fledgling here, Sancelot found a high level of curiosity. In just a year or so, groups dedicated to the zero waste lifestyle on Facebook drew more than a thousand members. “We had felt like a drop in the ocean before but then we discovered thousands like us. It’s just that we are scattered around the globe,” she says. Former journalist Aurora Tin, who adopted the lifestyle almost two years ago, agrees. When she shops at the night market with her own containers, she says traders often tell her stories about other customers who do the same. “It’s still limited to individuals but there’s certainly a lot of interest from many people, even a fashion magazine,” said

Zero Waste Lifestyle
Is adopting a zero waste lifestyle expensive? Sancelot does not think so. There are some one-time upfront costs such as reusable stainless steel straws or tiffin carriers but these get reused so many times that the cost is offset by the need to constantly purchase. It does, however, require a strong mindset change, says Sancelot, adding that the freedom a minimalist lifestyle brings makes it all worthwhile. PHOTO AURORA TIN
Most zero-wasters in Malaysia appear to be women, or at least, the most vocal ones are. Lawrence Chiu, a musician, laughs as he says he does not know why fewer men are as enthusiastically involved. Chiu does not feel out of place as his friends, both men
and women, are receptive to his minimalist lifestyle. “The change is not difficult to make but sometimes, we need to explain a lot especially in shops that insist on plastic bags even when we don’t want one,” he says.
How to be a zero-waster: Follow these five principles in this strict order:
Refuse what you do not need
Reduce what you need
Reuse
whenever possible
Recycle what has been used
goingplacesmagazine.com / 61 / May 2017
Sancelot says adopting a zero waste lifestyle is, in fact, easier in Malaysia because of the abundance of fresh and dry food, and malls where packaging can be refused without anyone raising an eyebrow. Items like oats, flour, quinoa, dried fruit, nuts and oil, and toiletries, are a little harder to find, and this was what spurred her decision to set up Hive Bulk Foods store.

Reducing Food Waste
/ Giving Back
Waste Not, Want Not IMAGINE A BLUE WHALE, the largest animal on earth. An adult can weigh up to 200 tonnes. Now imagine 75 blue whales weighing approximately 15,000 tonnes. This is how much food Malaysians throw out on a daily basis, according to a 2016 report by the Malaysian Agricultural Research and Development Institute. That’s enough to feed 11 million out of the 800 million people in the world that go hungry every day!
A large part of our food waste can be prevented, says ResQ Club founder and chief executive officer Tuure Parkkinen. Founded in Helsinki, Finland, ResQ is a food ‘rescue’ service that allows users to ‘rescue’ surplus meals from participating restaurants at discounted prices. “Every day, over 10 percent of prepared restaurant food is thrown away – even though it’s still in top condition,” says Parkkinen, an industrial engineer turned entrepreneur with a passion for sustainable solutions. ResQ allows eateries to put up meals that are not sold off over lunch or dinner on the service, which is available on the Web, and on Android and iOS smartphones. Customers
reserve the portions they want and pick the food up physically from the store. The service is currently available in the Netherlands, Estonia, Sweden and Germany. It made its debut in Malaysia last December. Since its inception in January last year, over 125,000 meals have been saved from 400 restaurants in cities ResQ operates in. That’s roughly 40,000 kilogrammes of food, equal to carbon emissions from five million kilometres driven. “Kuala Lumpur has a versatile food sector, and people are environmentally aware. We felt that the time was right to introduce it here,” explains Parkkinen.
1. ResQ aims to offer a sustainable solution to food waste around the world 2. Founder Tuure Parkkinen (seated in the middle) with ResQ's Finland team in Helsinki
To date, the service has 40 active vendors in the greater Kuala Lumpur area, including established restaurants and cafés like Mikey’s Original New York Pizza, Salad Atelier, and Wondermilk. There is a healthy selection for users, from pizza to Yemeni food and local favourites like Peranakan cuisine.

ResQ Club, a food ‘rescue’ service, aims to fight food wastage, one meal at a time.
Country manager Joanne Chia, who runs the operations in Malaysia, says while the user base is still modest, the valuable thing is that they are seeing many repeat customers. “In the past two weeks, there was a user buying

salads almost every day from the service. It’s great to know that users are forming a habit out of it. That matters to us more than numbers,” says Chia. For Parkkinen, food wastage is an issue close to his heart. “I lived in Africa, and as a child, I learnt that food was not something to take for granted,” he says, adding that when he was home living with his parents, he often ate leftovers in the fridge as he didn’t want to waste. Chia shares a similar story. “Wasting food is a big no-no in my household. I used to routinely visit orphanages and charities with my late mother and noticed a lot of our efforts focused on finding food – which is crazy given the amount of food we waste on a daily basis!” she says. The idea behind ResQ is to provide a win-win option for everyone involved. Consumers get good restaurant food at discounted prices, usually between 40 to 70 percent off, whilst also being part of the solution to food waste. “Of course, it’s not as on-demand or as effortless as ordering something from a delivery service, but if you’re rescuing a meal from around your workplace or home, you’ll also save money on groceries and time from cooking at home,” Parkkinen enthuses. He adds that it’s a way for people to try out new kinds of food and explore new venues in their locality. Restaurants, meanwhile, benefit by getting an income out of food that would otherwise be binned. “Even if consumers aren’t buying from a particular restaurant, it’s still a costeffective way to promote an establishment since the service shows what offerings they have,” he points out. Joining the service is free for all parties, and it also allows restaurants to track their monthly sales.
May 2017_Giving Back06.indd 64
As with any startup, there are challenges. One major hurdle is perception. “Some restaurants have been in the industry for a long time, and they have certain ways of thinking how things should be done. Changing those set ways isn’t easy,” he says. Moreover, brands tend to shy away from labels such as ‘leftover’. Part of ResQ’s aim is to remove the negative connotation associated with surplus food as low-quality or expiring goods.
3. ResQ Malaysia country manager Joanne Chia 4. The locationbased app allows users to see the meals around them that can be rescued 5. Eighty-eight million tonnes of food are wasted annually in the EU
0 3 8
Delivery, which the service is piloting in Malaysia for selected merchants, is also something that they hope to implement in more markets. “Our aim is to reduce the impact on the environment, so we want people to go to the restaurants to pick up the food, but since the service is location-based and limited to a user’s everyday routes, delivery is something we’re considering to better the user experience,” Chia explains.

Aside from offering a sustainable solution, ResQ’s ultimate goal is to educate people to not waste resources and on the dangers of environmental destruction. “We try to educate our clients on all the things they can do to be more environmentally responsible, including sourcing for sustainable produce and ingredients,” says Parkkinen. Food waste is a hot topic in Europe, where 88 million tonnes of food are wasted annually in the European Union. Movements to reduce surplus and encourage businesses to be more sustainable have taken root in recent years. In Denmark, Russian-born Danish activist Selina Juul has been credited by the Danish government for helping the country reduce its food waste by 25 percent in just five years, thanks to her consumer organisation Stop Wasting Food. Last year, the city of Copenhagen introduced its first-ever food surplus supermarket, which sells products at half the retail price. Meanwhile, France imposed a ban on supermarkets from throwing out unwanted food, slapping businesses with fines if they refuse to donate them to food banks or charities.
5 The conversation has started in Malaysia, thanks to government initiatives like Save Food Malaysia, which brings together government agencies, NGOs, startups and private companies to look into issues of food security, reducing wastage and alleviating hunger. Parkkinen and Chia hope that with services like ResQ, more can be done to combat food wastage and act as a call-toaction for the public. “The awareness is there; now it’s time to do something about it,” says Chia.

Capturing the traditional healing rites practised for centuries by local herbalists, native shamans and midwives through the art of ethnic massage therapy.
She specialises in post-natal massages at Jari-Jari Spa in Kota Kinabalu city, where she travels to homes of mothers who have just delivered to perform a ritualistic 14-day massage therapy to help restore and strengthen the body. There she steams herbs and creates a sauna, draping a thick towel over the mother’s head to expel the build-up of toxins. And then she performs the traditional massage with long, deep strokes to expel “wind” trapped in the body. Finally, she wraps a bengkung, an abdominal wrap infused with herbs, around the belly of the mother to get the body back in shape. Deep in the interiors, Bobohizans, the land’s native shamans, continue to give healing massages to the old and sickly. Shirley Chew, a Sino-Kadazan, speaks vividly of healing ceremonies to drive away bad spirits. At the Chi Spa in Shangri-la Tanjung Aru, Chew is passionate about her growing interest in learning and practising ethnic massage techniques. “I have been doing this for 13 years and I’m still amazed at the healing powers of massage combined with local herbs and oils.”

MALAYSIA’S SABAH STATE, on the magical island of Borneo, is clouded with magnificent experiences, from rainforest retreats to underwater marvels, from a land rich in biodiversity to a land that is home to 39 intriguing indigenous groups. With such deep cultural roots, traditions and ethnic practices have fought the waves of modernisation to remain authentic. One such tradition is the art of ethnic massage.
Massages have been practised over thousands of years for relief from back-breaking work in the field or in the cold and long journeys through mountainous terrain, to ease birthgiving and heal common ailments like fevers, headaches and joint pains. Massages are known throughout the world, but Asia is particularly associated with this type of therapy. For Noor Atiqah, it has always been a way of life. Her tribe, the Orang Sungai, has long lived along the riverbanks, some deep in the interiors with no access to medical facilities. She grew up watching her mother perform prenatal massages for village women to ease delivery. “My mother, also a midwife, always found that women experienced faster and easier labour if they had prenatal massages.” Growing up having witnessed and received healing massages from her mother, Noor Atiqah is convinced of the remedial effects. At 50 years old, she continues this trade with great hopes of passing down her knowledge to her only daughter.
May 2017_Warisan03.indd 69
She performs the signature Borneo Therapy massage starting with a foot bath of lime and betel leaves and a scrub made with sugar, coconut oil and cinnamon. The massage is soothing, with penetrating motions using her thumbs on various pressure points in the body, to unlock and release muscle tension. Then, a herbal compression filled with a concoction of ground turmeric, ginger, lime, lime leaf, betel leaf, pennywort leaf, nutmeg and lemongrass twisted into a bulb is steamed and applied on the body. Chew gently pounds the herbal compression, allowing the extract to be absorbed into the skin, bringing relief to the tired body.

“Techniques and rituals like this are easier to pass down if you are interested to learn, but witnessing a real-life Bobohizan at work brings new perspective to my job,” says Chew. Like Noor Atiqah, Chew also hopes that her children will learn the art of ethnic massage one day, but for now, they are still too young. The time-honoured techniques of Sabah’s ethnic massages have stood the test of time, and a glimmer of hope flickers for the next generation. The women’s aspiration to teach the young is a reminder that these priceless rituals woven so intricately into their history is worth preserving.

Safety & Service Info
CABIN LUGGAGE HANDLING
Passenger and crew safety onboard our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This is to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. Passengers who are fit and in good health must carry, stow and secure their own hand luggages on board. Hand luggage exceeding the 7kg weight limit is required to be checked in before boarding.
PORTABLE ELECTRONIC DEVICES (PED)
For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system.
LITHIUM BATTERIES
Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.
ELECTRONIC CIGARETTES
Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device in-flight is not permitted.
ZERO TOLERANCE OF ABUSE
We value courteousness. Any form of threat, verbal abuse or violence towards our staff will be taken seriously. We are committed to supporting anyone who has been the victim of an assault.

Hidden Figures NASA enlists a group of AfricanAmerican female mathematicians to serve as the brains behind one of the greatest operations in U.S. history. Based on a true story, three of these women quickly rose through the ranks alongside many of history’s greatest minds, tasked with calculating the momentous launch of astronaut John Glenn into orbit and guaranteeing his safe return. The trio transcend gender and racial lines as they deal with the assumptions of their colleagues. TARAJI P. Life, Animated Owen Suskind developed autism at the age of three. As he withdrew into a reclusive state, it appeared he would never be able to meaningfully interact with the world. His parents eventually found a way through Disney animated films, which provided Owen a way to understand the world through its stories to the point of creating his own. The film covers the life of Owen and his struggle to become functional by turning Disney movies into a language to express love, loss, kinship and brotherhood. Michelle Obama, First Lady Of Style The former U.S. first lady is exposed to as much media as her husband. Her persona is frequently commented on by both the political and fashion worlds. Michelle Obama broke with White House tradition by ditching the tailored suits and muted tones of her predecessors, opting instead for bright colours and softer lines. She also showed that her style was not dictated by designer labels by shopping at Gap and Target, which endeared her to the working-class public. She is also remembered for her willingness to don clothes from relatively unknown designers to give them a head start in their career. This feature narrates her life and how she became one of America’s icons for women across all demographics looking to her for unique and down-to-earth styling ideas.

John Mayer – The Search For Everything: Wave Two
goingplacesmagazine.com / 92 / May 2017
This is the second part of three EPs leading up to the release of John Mayer’s upcoming seventh studio album, The Search For Everything. Mayer has been releasing his album in four-song waves, with the second instalment featuring the lead single, Still Feel Like Your Man. The first wave featured easily digestible songs; while not ground-breaking, it left Mayer with a solid base on which to build. With the addition of these four songs, it is shaping up to be one of the most interesting releases in Mayer’s career.
MUNA – About U MUNA is an American indie pop band comprising Katie Gavin, Josette Maskin and Naomi McPherson. Starting its collaboration in an experimental and unapologetic mode, the group is evolving toward hooky electronic pop. About U is the band’s debut full-length album. It’s tough to nail the album down to one specific genre but it draws on pop stylings, delving into different directions but still sounding unified. It’s an album that captures soaring highs and plunging lows, all in one brilliantly executed scoop, which the industry will expect MUNA to repeat in its next project.

heart-warming. I love her talk shows because her topics are mostly about empowering women. 7. My guilty pleasure is playing with my phone while sitting on the “throne”. You got me there! 8. To keep motivated, I always meditate. 9. The book I’m reading now is Mind Platter by Najwa Zebian. 10. My current favourite song is That’s What I Like by Bruno Mars. The song is so catchy! 11. The last time I took a vacation was a month ago to Koh Lipe for my birthday treat.

12. To relieve stress, I usually binge on unhealthy food! I know it’s bad but I can’t help it. 13. The three things I cannot live without are my mobile phone, contact lens and lip balm. 14. My favourite movie of all time is Notting Hill! Believe it or not, I have memorised almost all of their lines.
MEDITATION HELPS NEELOFA, MALAYSIAN ACTRESS AND THE FACE OF WATCHMAKER TITAN, TO KEEP MOTIVATED.
1. The greatest moment in my life was the opportunity to explore New York, the most vibrant and busiest city in the world. It truly was a life-changing experience that enabled me to see things from a different perspective.
15. The most memorable scene from the movie was when Anna Scott (Julia Roberts) slept over at William’s (Hugh Grant) house and the next day, when she opened the door, the paparazzi were outside waiting to snap her photos! I guess you got to expect the unexpected. 16. In another life, I am Lara Croft: Tomb Raider or Black Widow? Lara Croft! 17. If I had super powers, it would be the ability to become invisible so that I can have my alone time for a while. 18. If I could turn back time, I would worry less about life. I would go with the flow and enjoy every moment of it!
2. The greatest regret I have is when I think I should have done things differently.
19. If I could change one thing in this world, it would be to stop people from judging others.
3. The one virtue I try to live by is always treat others the way you want to be treated.
20. If I could invite three people, dead or alive, to dinner, they would be Barack Obama, Oprah Winfrey and Nelson Mandela.
4. I deplore people who are not punctual because time is very precious to me. People with no clear vision are a big no-no too! 5. The qualities I like most in a person are clear vision, true to themselves, kind-hearted and of course, hardworking.
21. And we would be eating Japanese food! 22. And discussing about world issues, or maybe where we should travel to together. 23. When flying, I never wear tight jeans.
6. The person I most admire is Oprah Winfrey! Not just for her career, but her remarkable work to help people is so

24. When flying, I always read my book and sleep.
