Man, you should try driving in Rome, Frankfurt, or London! And the food is incredible! You’ve got local Malay food, Chinese food, Korean food, and Indian food. It’s unique here because it’s all mixed up but it’s nice because it’s healthier than other Asian food. It’s not as greasy. I love the fact that the whole place is open 24 hours. There’s stuff going on. We decided last night at 11 p.m. that we wanted to go out. There was a band playing in the street, people were selling satay off a truck. In Europe, food stops at 9 p.m. Everybody has been incredibly friendly, total random strangers will just help you. I feel really safe in Malaysia and really secure. In Europe, I don’t feel like that.

PETER BELLEW, CHIEF OPERATIONS OFFICER, MALAYSIA AIRLINES Peter Bellew moved to Malaysia in September to join Malaysia Airlines. Coming from a varied background that included careers in tour operations, helping to set up Kerry Airport in Ireland, introducing public Wi-Fi hotspots, working at a low-cost carrier and a stint as a garbage man, Bellew shares some thoughts with Going Places. Your first job was as a garbage man? I went to Trinity College in Dublin, where I specialised in Transport Economics. After college, I spent seven months in New York, where one of the best paying jobs you can get was as a garbage man. I literally cleared all my debts from college fees in seven months and had enough savings to last me for my first year to look for a job. Being in Manhattan was wonderful. In the building where I was looking after the garbage, Liza Minnelli, the singer, lived there. I decided I wanted to work in travel, so I went from New York to London. What do you like best about Malaysia? I just think the place is wonderful. As somebody who arrived here and had to get things set up really quickly with four kids, everything has been really efficient and straightforward and simple. I ordered the broadband and five days later, it’s turned up. The electricity company took one day to sort out. I opened a bank account yesterday and they gave me the card 10 minutes later. I’ve lived in different countries, I have never even heard of the idea that they could give you your cash card on the spot. I have never heard of a company turning on your broadband within five days. Everybody here complains about the roads.

Do you have a favourite restaurant in Malaysia? There’s a restaurant in Mont’ Kiara. It’s a banana leaf restaurant called Ravi’s. It’s really good. The kids had never seen people eating off banana leaves and eating fried rice for breakfast and fried chicken in the morning. So I said, let’s try it. If you could recommend any holiday destination to our readers, where would it be and why? I love going to Paris. It has the most incredible art galleries and museums and they are free. The food is wonderful, too. It’s the most beautiful city with wonderful parks, the shopping is incredible, and it’s a very romantic place. I also like going to America because I like the energy of its cities. Boston is a wonderful place because it doesn’t get too hot there. I love the energy and positivity of the people. If you meet any American, they all feel like they could be the president of America. Everybody, if they get a chance, should spend some time working in America, even if it is as a garbage man. You learn more in America in six months than you would in most countries in six years. What are you looking forward to as Chief Operations Officer of Malaysia Airlines? People keep asking me why I came here. When they first called me for the job, I thought this was the chance to get things right. It’s always about hope. When people travel on a plane, they’re hoping to meet their family and people they love, to do good business or maybe make some money, to fall in love or to meet somebody on a date. When I was a kid, we used to look up to Malaysia Airlines. They were one of the first airlines with the latest aircraft, very good reputation for engineering. Because I’ve been in the travel business so long, I felt very upset about the tragedies. So what a great opportunity if I could come over here and find 20 managers and hand over the knowledge that other people gave me over the last 30 years. Then for the rest of my life I could say I made a difference.

It’s high time for many of our skilled Malaysians to return home. There are a lot of opportunities in Malaysia and contributing to our own country is the way forward. The compensation and benefits are pretty much as competitive as what you can get overseas. THE ART OF MOVEMENT Paying homage to the man who invented the ‘mobile’ sculpture, Tate Modern is presenting Alexander Calder: Performing Sculpture. Although born into an artistic family with his father a celebrated sculptor, Calder initially trained as a mechanical engineer. However, art was clearly in his blood and his training as an engineer served to inform his work. Exploring themes of belonging, displacement, migration and identity, Japanese artist Aki Inomata creates acrylic ‘shelters’ for hermit crabs to make their home, with each ‘shelter’ representing a different city or location around the world. By changing into these shelters the hermit crabs appear “to be crossing over national borders,” says Inomata of the inspiration behind the project. Given the current climate, these themes are significantly poignant. “Hermit crabs change their shells as they grow. Sometimes they are kicked out of their shelters by stronger hermit crabs and forced to exchange shells. FESTIVAL OF LIGHTS Celebrate the triumph of light over darkness at one of these Diwali festivals outside India

It will come as no surprise that Little India is the buzzing heart of Diwali, or Deepavali, celebrations in KL. Head to the Brickfields neighbourhood for saris, bangles and spices, traditional food stalls and flower sellers making endless garlands of jasmine outside the stunning, century-old Sri Kandaswamy Kovil temple. Around town, shopping malls will display colourful and intricate kolams, or rangolis, the sacred Indian artwork made using coloured rice (pictured above). Check out Suria KLCC and the Gardens Mall (go on 3-4 November for a live demonstration), both of which are hosting Indian music and dance performances during the first two weeks of November. Hotels are also great places to see stunning kolams – the Shangri-La has one at Lemon Garden Café, which will be serving a Diwali menu of Indian specialities, as will the Sheraton Imperial’s Essence restaurant. Finally, if you’re lucky enough to be invited by a local to an ‘open house’ – one that will undoubtedly be elaborately decorated and lit with clay oil lamps – make sure you take up the offer.

Spectacular Diwali celebrations have taken place on Leicester’s Golden Mile since the 1980s, but this year the city is ramping things up with Diwali Leicester, a two-week festival launching on 1 November. The official ‘switch on’ will be followed by fire sculptures and an interactive light display, all visible from a giant, illuminated Ferris wheel. The next two weeks bring cultural events and activities throughout the city. Help create a giant peacock rangoli at Leicester’s New Walk Museum, visit the Peepul Centre for a Diwali Extravaganza of music, food and dance, or drop by the bazaar at the Clock Tower. The Phoenix Cinema will host Diwali screenings, while the Curve Theatre has a special programme of shows, including the touching comedy Strictly Balti. R ail Adventure Traversing three countries on the Trans-Siberian Text and Photos Deborah Chan

T

he greatest train journey on earth is not an easy feat, especially when it comes to deciding on the ideal route, purchasing train tickets online while considering five different time zones and applying for visas. The raw adventure of taking a route less travelled fascinated me; the hubbub of Beijing, the mystical Mongolian culture and the wild forests and steppes of Russia bewildered me enough to embark on the Trans-Siberian railway journey. My trip started in bustling Beijing where old meets new. I was overwhelmed by the rapid development in the city, its towering skyscrapers, a sense of smoggy chaos in the air, and perpetual traffic on its roads. But amid

all this, I was delighted to find history in the enchanting and luxuriant Forbidden City and in the massive austerity where Tiananmen Square stood. I explored the city’s courtyards shoulder-to-shoulder with swarming crowds of tourists. This is China, after all. A trip to the Great Wall is imperative when in Beijing. I spent a few days at Mutianyu, a booming hamlet 70 kilometres northeast of Beijing. As I set foot on the wall, I was reminded of stories my grandmother told me about the valiant labourers whose sweat, blood and tears stained the walls. Many talk about the grand magnificence of the wall, but if the wall could speak, I am sure that it would echo the hundreds of thousands of lives lost in its construction.

The vast expanse of Mongolia's countryside is the perfect playground for my little one

I was ready to escape Beijing’s hubbub for some countryside tranquility and board my first train to Ulaanbaatar, Mongolia’s capital. The train station was a frenzy of mad crowds at every turn, trolley bags knocking on my ankles and people elbowing at my side in a hurried puff. The gates opened and there before me, the oddly familiar dark green train was parked. Looking around, I saw selfie sticks poking into the air and massive grins. A tangible mutual excitement hung in the air, almost forceful enough to push the train along. My humble four-bed cabin had a tiny coffee table mounted next to the window and a rotating wall fan. When the summer heat was too much to bear, I escaped to the first-class cabin or the dining cart to enjoy the cool airconditioning. At the Chinese-Mongolian border, the train’s bogies (wheels) were changed due to the different track gauges used by Mongolian and Chinese railway networks. I sat in the dark as each carriage was raised individually followed by violent shaking and banging to get the new bogies in. This took two hours before our train continued on its journey into no man’s land. I was greeted with dramatic landscapes


the next morning. Mongolia’s main draw is its rugged countryside, vast grassland stretching far into the horizon with wild horses galloping with unrestrained freedom and tiny ger (felt-lined tents) encampments dwarfed by enormous undulating hills. This nomadic land, where many people still lead traditional lives, herding cattle and hunting with eagles, held a certain mystique. I stayed with a local nomad family in Terelj National Park, 80 kilometres from Ulaanbaatar. My host family spoke very little English and we communicated with a lot of dramatic hand gestures. I was ushered into the family ger, propped up by beautifully decorated beams rising up to the ceiling. The centerpiece of the ger is a wood-fire iron stove with a long chimney sticking out that doubles up as a fireplace. The ger was constantly filled with the delicious aroma of khuushuur (fried mutton dumplings) and mantou (white fluffy steamed bread) served with mutton soup. A steady selection of tidbits – aaruul (dehydrated yak curds) and dried milk chips – was constantly available. My host, Chan’gkhan, sold mares’ milk for a living. I watched and marvelled at her strength as she diligently milked the horses every two hours, a task that’s both tiring and time-consuming. Back in Ulaanbaatar, I had a glimpse of the country’s patriotism at the annual Naadam Festival, the biggest festival of the year. Over 35,000 wrestlers, 40,000 horse racers and 1,500 archers compete

in traditional competitions. Ulaanbaatar was abuzz with people on the streets till late, traditional dance shows and fireworks displays. In the national stadium, there was a parade of people dressed as ancient warriors, men and women in embroidered robes called del and elaborate headdresses, along with burly wrestlers clad in blue and red briefs, soldiers and traditional throat singers. The atmosphere was electric. Finally, my rail journey took me into Siberia, the largest land mass stretching across the Trans-Siberian railway. UlanUde is a relaxed city and the population is made up mainly of Buryats, who forsook their nomadic lifestyle and adopted a simple agricultural life. A giant statue of the head of Vladimir Lenin sits in the city’s central square, built in 1970 for the centennial of Lenin’s birth. Further west, I stopped at Lake Baikal, the world’s oldest and deepest freshwater lake, formed millions of years ago. I spent the day basking and soaking my feet in the lake’s clear waters, so clear that I was told it is safe to drink thanks to numerous types of sponge living in its depths. I enjoyed a picnic of tomato rice and smoked omul, a salmon species endemic to Lake Baikal. Back on the train for another overnighter, I arrived at Krasnoyarsk, a vibrant city nestled among commanding hills and cliffs along the Yenisei River. The main attraction near this city is the Stolby Nature Reserve, famed for its towering stone formations reaching up to 100 metres in height. It is said that Stolby was once a hideout for secret political meetings. Today, the park is a favourite among rock climbers.

The longest and most arduous leg of the train journey was from Omsk to Moscow, a 40-hour ride with occasional 20-minute stops for a stretch and some food shopping. I was tired of pot noodles by then and was delighted to find roast chicken and caramel waffles at one stop. The landscape gradually changed from larch, pine and birch trees to factories and brick houses. I was inching closer to modern civilisation. Soon, I was in Moscow, which has long held a reputation as one of the world’s most expensive cities to visit. Revelling in the glamour of the city, I checked into the luxury heritage Baltschug Kempinski, boasting unobstructed views of the Red Square, the Kremlin and the iconic St. Basil’s Cathedral with its colourful spiral domes. xploring Provence’s vast, rugged sprawl can be exhilarating – and daunting. From the salt marshes of the Camargue to storybook hilltop villages like Gordes to the lively Mediterranean city of Marseille, the famously picturesque French region offers an array of landscapes and experiences that could take months to uncover. Where to start? Arles and Avignon. Just 20 minutes apart by train, the Roman-era town of Arles and the medieval walled city of Avignon enfold a dense mix of architectural beauty, world-class art, sunsoaked Provençal gastronomy and Unesco World Heritage sites. Toss in ambitious new cultural spaces, a hint of urban cool and a high-speed

If veal tagine with couscous doesn’t sound sufficiently bloat-inducing, the robust pink duck meat comes with hearty potato gratin. Raspberry cheesecake and a spongy French toast in warm caramel sauce guarantee blissful post-meal immobility. Nature’s bounty literally sprouts from the walls of Avignon’s covered market, Les Halles, thanks to an exterior 'vertical garden'. Inside, Provence’s cornucopia spills from produce stalls, cheese mongers, delis, florists, bakers and butchers. Noteworthy offerings include a variety of salts flavoured with everything from fish to hibiscus flower at Le Moulin à Epices and Côtes du Rhône wines at Les 20 des Halles. For lunch, La Cabane d’Oléron serves grilled fresh scallops on skewers, la fine de claire oysters, and other marine morsels. Inside Le Galoubet, which evokes both the Middle Ages (stone walls, beamed ceilings, massive hearth) and the mid-20th century (industrial lamps, red neon sign), an upper-crust crowd dines on traditional French cuisine that is far from middling. The three-course menu might start with crunchy local vegetables and cervelle de canut (a zesty cheese spread) or a soft-boiled egg atop a colourful arrangement of soft-cooked red peppers, eggplant and ham slices. Mains might include hanger steak with mushrooms or veal in tangy wine-mustard sauce. For dessert, the cake enveloped in a chocolate

shell with sour cherry sorbet on top is a rich, dark, citric delight. Opened last year, L’Agape – pronounced 'lah-GAHP' (the word means a fraternal meal in French) – contains stylish vintage industrial décor to accommodate the stylish all-ages crowd. Appetisers and desserts are the standouts, notably the veal tartare starter (served with runny warm egg, girolle mushrooms and blue vitelotte potato chips for a textural mash-up) and the chilled nougat finisher (drenched in honey mousse and studded with radiant citrus-loaded orange and grapefruit slices). Mains, from roast lamb saddle with fried zucchini to pollock fillet in an olive crust, are slightly less flavourful but solid.

WHERE TO STAY?

Arles’ Hôtel du Forum (hotelduforum. com) occupies a historical stone townhouse with a courtyard swimming pool. The 38 rooms are done in floral patterns and country French décor, while the lobby and bar are filled with gramophones, steamer trunks and other retro knick-knacks. In Avignon, Rue du Portail Boquier contains two worthy lodging options. Within an 18th-century edifice, the 12 simple rooms of Hotel Boquier (hotelboquier.com) sport bright Provençal colours. For a rooftop pool and high-end restaurant, the 80-room L’Hotel Cloître Saint-Louis (cloitre-saint-louis.com) occupies a Renaissance-era Jesuit school and a modern addition by Jean Nouvel.

t’s a familiar scene in George Town, the capital of Malaysia’s northern Penang island. Crowds of residents and tourists are flocking to a cluster of roadside stalls to order tangy fruit salads and spicy noodles in tamarind soup. Penang is a beloved paradise for street food, after all. But a few steps away from the bustle, the discreet doorway of a nearly centuryold building offers a tantalising glimpse into an alternative landscape for food lovers. Inside, visitors can explore a leafy courtyard with rustic walls of exposed brick - the site of Patio bar de tapas (facebook.com/patiopenang), a Barcelonainspired, Malaysian-owned restaurant that’s packed on most weekends. “Try this paella,” Patio’s co-founder Justin Chuah tells us, as his team brings a fragrant pan of Spanish-grown simmered rice crowned with prawns, calamari and clams. “You should also taste our chicken wings infused with Red Bull and jalapenos. And our baked speciality of chorizo, tomato, egg and manchego cheese.” Patio’s slate of temptations illustrates

One of George Town’s top openings this year is Inch (facebook.com/inchfoodbar), a Southeast Asian tapas bar that focuses on food from The Land of Smiles, spanning traditional favourites like pad thai and tom yum goong, plus inventive fare such as honey-roasted cashews with Sriracha sauce, washed down with a Tom Collins cocktail with a twist: Gin infused with nutmeg, one of Penang’s signature spices. Inch is nestled amid the numerous heritage buildings of Penang, which features one of Southeast Asia’s largest collections of pre-war buildings dating back to the British colonial era. These structures range from the modest to the magnificent, furnishing memorable ambiances with a rich sense of history for restaurants. If you need a feel-good breakfast, check out Narrow Marrow (facebook. com/narrowmarrow), helmed by the affable duo of Alvin Neoh and Jamie Oon, an architect and interior designer respectively who’ve painstakingly restored a shop-lot that had been abandoned for a decade. Narrow Marrow is a quirky space that defies easy categorisation – the décor leaps from terrariums and teapots to tables and chairs salvaged from streets and flea markets. The food includes not only thick traditional toasts slathered with cheddar cheese and avocado paste, but also a comforting lamb stew that Oon’s mother lovingly cooks at home. And the vibe is encouragingly cheerful – Narrow Marrow has hosted everything from musical gigs to a ‘tropical cosmic space future’ costume party. “This is our playground,” Neoh says. “We like to get people feeling curious and connected to this place and each other. What we sell here is social lubricant.” An equally distinctive destination can be visited for lunch. Jawi House (jawihouse.com), located in a 19th-century building on a street once known for brass and copper merchants, dishes out


cherished recipes handed down through the generations, blending local Malay culinary traditions with South Asian and Middle Eastern influences. Founded by an anthropologist couple whose sons serve as the restaurant’s manager and head chef, this is one of the few places that promise nasi lemuni, a herbal rice dish with a lightly bitter tang, cooked with coconut milk and lemuni leaves, believed to hold diverse medicinal properties. Come for the food, which showcases masterfully mellow subtleties, then stay and admire the evocative local artwork and heirlooms on display. When the sun sets, enjoy an elegant evening at Cheong Fatt Tze Restaurant (thebluemansion.com.my), which serves modern Cantonese cuisine in The Blue Mansion, a boutique hotel with an indigo-blue facade and a lavish interior initially constructed in the 1880s by the powerful Chinese merchant Cheong Fatt Tze. Closer to home, Kuala Lumpur resident Diane Ong leaped at the opportunity to launch her own restaurant in George Town this year. Ong’s Awesome Canteen (facebook.com/ awesomecanteenpg) in the Sekeping Victoria vacation retreat is acclaimed for its ‘Paleo’ recipes, focusing on nutritious protein sources, vegetables and fruits, with vibrant highlights like grilled butterfish fillet with sweet potatoes and honeydew sauce. hef Olly Jackson starts his mornings squeezing orange juice, but not for himself, his wife or his children. Instead, the OJ is for his guests having breakfast at the Langford Fivehead, a bed-and-breakfast in a 15th-century house bordered by cedars and hedges of box and yew, located in romantic Somerset, England. However, the term “breakfast-and-bed” may be more appropriate for the Langford Fivehead, as it is more often described as a “restaurant with rooms”. Chef Olly and his wife, Rebecca, are proprietors of the inn, and while lodgings are assuredly as comfortable as any five-star hotel, with

each of the six bedrooms styled with quintessential English-living refinements, they are first and foremost restaurateurs with a leaning toward fine dining and French cuisine. So how did a young chef like the 33-year-old Jackson end up running a B&B? “My wife and I got the opportunity to run the Langford while I was working as a head chef on a 1,000-acre game estate in Cornwall,” he explains. “We were about a year into a five-year plan to open and run our own business. We had a ninemonth old son Harry, and Rebecca had just found out that she was carrying our second child, now 3-year-old Connie, so we were pretty hesitant to start with. However, nothing ventured, nothing gained, and despite everyone thinking we were insane, we went to look around.” “We were presented with a quintessentially English pre-Tudor manor house with six en-suite bedrooms. It had been operating as an upmarket B&B, but with no stand-alone restaurant, so it was beautifully done out and ‘ready to go’. We fell in love with the house and set to putting a business plan together. The Good Food Guide 2012 had just been published in which I was delighted to have received a cooking score of five for the restaurant in which I was working in at the time, so this gave us a clear idea of where we could place ourselves in the market and at that time, there were only a couple of clear competitors.” “The glaringly obvious thing was that the rooms could generate a good revenue stream from the outset, enabling us to slowly and carefully build up the

reputation of the restaurant,” he reminisces. For Chef Olly and Rebecca, the emphasis was on developing the food, so it seemed fitting that they simplified the whole establishment to be a restaurant – with rooms. With the rooms, they hope to create a home-away-from-home atmosphere, but the food will always get top priority. Trained at Northampton College, during which he also spent time working for the Marriott group, Chef Olly picked up valuable lessons in management, especially on portion control and stock rotation. However, working under award-winning food writer and restaurateur Ruth Watson gave him his most valuable lesson – the importance of the provenance of food. The weekly-changing menu at the Langford is built around the finest seasonal produce found in Somerset – either from local farms and producers, or from the Langford’s garden itself. “We could trace all our meat to the farms and animals they came from and fish to the boats they were fished from,” Chef Olly proudly proclaims. “Local farms provided hand-picked crops and there were oyster beds just up the road. It was a great experience and made me truly grateful for fresh produce.” Checking out what is currently growing in the Langford’s garden and speaking with one of their two dedicated gardeners, Steve and Jill, on what he can use for the day’s lunch and dinner menu is a daily affair. Chef Olly is also hands-on with the dessert, often spending his afternoons refining and tweaking recipes. He reckons it is unusual for a head chef to be keen on


on pastry, yet it was his favourite discipline during college, and he considers himself lucky to be able to work on them daily. He is also constantly innovating on the meals he serves, applying a modern twist to dishes whilst demonstrating different methods of cooking. An example of this is his beef duo of braised shin of beef and fillet cooked sous vide, with celeriac puree, baby vegetables and pomme Maxine. It seems that guests and diners are very agreeable to Chef Olly’s methods and cooking. The establishment is rated “Excellent” by virtually all the reviewers on travel and lifestyle website TripAdvisor, with words like “foody heaven” and “best meal ever had” constantly used by different reviewers to describe the Langford’s food. Now, it seems that the big boys are taking note. Quite recently, the Langford received a cooking score of six from the Waitrose Good Food Guide. Of course, Chef Olly is beyond thrilled. “This should really put us on the food map,” he enthuses. “But, to be honest, we want to just keep doing what we are doing because we love it, and fingers crossed, it’s working,” he says in view of future plans for the Langford Fivehead restaurant and inn. The Langford Fivehead is operated under the management of the BIG Group, owned by Benjamin Yong, one of Malaysia's most successful restaurant entrepreneurs.

Cook Like A Chef Chef Olly shares his recipe for Creedy Carver Duck with celeriac puree, asparagus and kale

Prep time: Over two days Ingredients: 1 whole duck 1 large carrot peeled and chopped 1 medium onion peeled and chopped 2 sticks of celery chopped ½ medium celeriac 12 asparagus spears 1 bunch of kale 1 shallot 3 sprigs of thyme Handful of chopped parsley Duck fat Milk

Day 1 • Remove breast and legs from duck. Roast the carcass until well browned (about ½ hour at 180°C). • Make a stock using the carcass, water, carrots, onions and celery. Simmer for 6 hours then drain, keeping the liquid and chill. • Lightly salt the duck legs and submerge completely in duck fat. Simmer until the leg meat easily pulls away from the bone (about 2 hours). Allow to cool. • Remove the legs from the oil. Carefully take the skin off in one piece and lay on a cooling rack. • Bake skin at 160°C until crisp. Cool completely and store in an airtight container. • Remove as much meat as possible from the legs and place in a bowl. • Add a little cooking oil, parsley and season with salt to taste and mix.

• Place the leg meat mixture on a piece of cling film and roll up like a sausage. • Place into the fridge to chill for about 12 hours.

Day 2 • Take the stock, remove any fat and place it in a large pan with chopped shallots and thyme. Place it on high heat and allow to boil until it is reduced to a sauce consistency, then strain. This may take up to 2 hours – and the sauce should coat the back of a spoon. • Pan fry the duck, skin side down for 8-10 minutes on medium heat, turn over and bake in oven for 4 minutes at 180°C. Remove and rest for 5 minutes. • Remove the wrapped leg meat from the fridge and cut into 4. Remove cling film and bake in oven at 160°C for 10 minutes.

For the vegetables • For the celeriac puree, peel and chop the celeriac. Place in sauce pan then half cover with milk, top up with water until the celeriac is covered. Simmer until tender. • Drain the celeriac (keep the liquid as it may be needed to thin the puree). Blend until smooth. Add some of the cooking liquid if it is too thick, season with salt if needed. Chill and store covered. • Trim the asparagus bottoms to remove the woody end. Remove the stalk from the kale then tear the leaves. Chill until needed.

To Serve Warm the celeriac puree, place the asparagus into a pan of boiling salted and buttered water for 3 minutes. With 2 minutes to go place the kale in as well, then drain. Plate using half a duck breast per portion and one portion of leg meat.

n cities all over the world, building rooftops, vacant lots, backyards and balconies are being turned into thriving food gardens to sustain families and communities. According to the U.S. Department of Agriculture, 15 percent of the world's food is currently grown in urban areas. Starting an urban edible garden shows that you can grow your own food, no matter where you live. It means that fresh, organic vegetables are a short walk from the people who eat it. Bjorn Low and Rob Pearce founded Edible Garden City (ediblegardencity.com) in 2012 to champion the 'Grow Your Own Food' movement in land-scarce Singapore. The urban garden consultancy designs, builds and maintains food gardens for restaurants, hotels, schools and residences. Among their clients are Artichoke Café, Jamie's Italian, the Ministry of Education and Marina Bay Sands. "One of our biggest problems is scepticism; everyone thinks an edible garden is not feasible in Singapore until we show them it is," says Pearce, who grew up on an English farm. "Everyone should grow their own food at least in some small way; it’s really fundamental to who we are as humans. Once we understand what goes into growing things, it helps us make better choices about what we put into our bodies," he adds.

In Malaysia, the Ministry of Agriculture and Agro-Based Industry has launched an Urban Farming Programme, assisting city dwellers in setting up their own food gardens, while local councils have kicked off community garden projects. The Consumers' Association of Penang has produced starter kits complete with a pot, soil, seeds, organic fertiliser and a guidebook on how to grow vegetables. On the ground, community organisations like Urban Hijau and Subur Community Gardens hold public gatherings and workshops to showcase urban gardening. Groups such as TTDI Edible Project and the Malaysian Gardening Community have sprung up to cater to modern farming enthusiasts. For the novice gardener, advice on sustainable farming and support can be crucial. "Growing food takes a bit more effort than growing ornamental plants. Edible plants usually need more care and fertilisation to make sure you get a good yield," advises Low Shao-Lyn of Eats, Shoots & Roots (eatsshootsandroots.org). The social enterprise, run by Low and Beatrice Yong, was founded in 2012 to help city folks understand where their food comes from and learn how to take control of their food choices. "We felt that whilst farms were concentrated in rural areas, urban areas


are places where most people live these days, including ourselves. We also felt that this was the best way to get people interested in the environment because Malaysians love food," says Low. One of their biggest successes is the Kitchen Garden at Dignity for Children Foundation, built with the help of landscape designer Ng Seksan, the foundation's staff and volunteers. Their latest project is a rooftop garden at Clearwater Residence in Kuala Lumpur for Michelin-starred chef Jeff Ramsey. Low and Yong also nurture their own garden in Petaling Jaya, where they employ different garden beds and gardening methods to grow a wide variety of edibles such as tomatoes, basil, kailan, roselle, chillies, pea eggplant and fruit trees like banana and papaya. "We use the space mainly as a place to experiment and to share knowledge with others," says Yong. Urban agriculture, says Low, is slowly gaining momentum with their edible

gardens workshop attendance steadily growing. To make it easier for newbies, they have created seed boxes, which are for sale online, at select outlets in the city or at their workshops. Alternatively, you could pick up a seedling on one of Free Tree Society's Giveaway Days. The society (freetreesociety.org), formed by a group of eco-minded women, has a nursery in Bangsar, Kuala Lumpur, where they collect seeds and sprout them to be given away free to the public. "We have a stock of over 4,000 plants growing in our nursery for giveaway. In just two years we have given away 4,500 plants," says Baida Jane Hercus, one of the co-founders. "Our herbs and fruit trees are always popular. Some of the more popular plants are mulberries, Indian borage, durian trees and chocolate mint. The chocolate mint smells like an After Eight chocolate. When visitors smell the chocolate mint, they swoon and have to have it!" says Baida.

The society has recently set up an edible community garden beside its nursery, where the neighbourhood can have easy access to the fresh bounty. "There’s no better way to encourage Malaysians to learn gardening than to grow food and then eat it. We will entice urbanites into greener lifestyles through their stomachs!" enthuses Baida. For urban dwellers who are used to getting their food off supermarket shelves, growing their own meals can seem daunting. Firdaus Nisha Muhammad Faizal of Ecocentric Transitions (ecocentrictransitions.com) advises starting small. "If you like salads, try growing microgreens or herbs. Growing sweet basil in a pot will reward you with enough to make a bottle of pesto, while a

Ecocentric Transitions uses urban agriculture projects to teach environmental education and sustainable living skills. They work closely with communities, families and institutions throughout the project, from garden design and plant selection to building planter beds and growing seedlings. Nisha especially likes to see the change helping in the garden has on children, "Some of the kids learn how to seedsave and bring the seeds home to their parents to be planted. This extension of care is rarely seen in some of the kids and it amazes us how food security builds confidence and helps kids problem-solve." For her, having an urban edible garden is more than just about food. "We realised that the average home no longer has any food resilience and is totally dependent on store-bought food," she says. "We aim to reintroduce edible gardens as a means of food production, nature appreciation, stress relief and community-building, all goals towards a resilient and connected society."

Dari pergelangan tangan, dia melukis dua garis halus merentasi bahagian tapak tangan. Dengan tangkas, beberapa titik dibubuh bagi membentuk dedaun pada lilitan pokok. Sedikit demi sedikit, semakin banyak garisan dan titik ditambah untuk membentuk rekaan rumit yang memenuhi seluruh tapak tangan hingga ke hujung jari. Sambil melukis dengan penuh yakin, Jyoti sempat lagi bergurau senda dan rekaan tadi siap dalam masa 15 minit! Berbekalkan tiga dekad pengalaman dalam seni lukis inai, kemahiran itu kini menjadi satu kebiasaan baginya. Seni lukis Mehndi adalah sejenis teknik tradisional masyarakat India dalam menghasilkan corak-corak inai yang cantik pada permukaan kulit. Biasa digunakan untuk merias pengantin perempuan pada hari perkahwinannya, seni lukis inai ini juga banyak dipraktikkan pada majlis-majlis penting lain mahupun sekadar perhiasan fesyen. Sejenis seni kuno yang diwarisi sejak zaman Moghul di India, seni merias kulit telah lama dipraktikkan di subkontinen India lebih-lebih lagi di bahagian India Utara. Jyoti, 59, telah mempelajari seni tersebut ketika bertugas sebagai jurusolek di Mumbai pada tahun 1986. Pada waktu itu, seni lukis Mehndi masih belum dipraktikkan secara meluas di Malaysia. Lazimnya, seni lukis Mehndi hanya

merangkumi titik-titik dan bulatan ringkas serta kaedah mewarnakan hujung jari-jemari. Ini mungkin berpunca daripada daun inai yang ditumbuk sehingga lumat dan terlalu kasar untuk membentuk corak-corak halus. Kini, inai boleh diperoleh dalam bentuk serbuk dan diadun menjadi pes lembut. Sekembalinya dari India, Jyoti mendapati kemahiran baharunya itu mendapat permintaan yang tinggi dari kalangan pengantin perempuan. Lebih-lebih lagi corak flora bergaya yang cukup popular pada ketika itu. “Corak inai pengantin saya yang pertama memakan masa hampir lima jam untuk siap,� katanya sambil mengimbau kenangan awal kerjayanya ini. Kini, Jyoti perlukan masa kurang dari dua jam untuk menyiapkan keseluruhan hiasan inai pengantin. Biasanya ini merangkumi bahagian tangan, tapak tangan dan kaki. Bergantung kepada kehendak peribadi, seni lukis inai boleh meliputi permukaan kulit dari bahagian lengan hingga ke hujung jari atau dari lutut ke jari kaki.  perempuan mungkin akan meminta corak yang berselitkan nama atau parap pengantin lelaki. “Pengantin lelaki akan diminta untuk mencari huruf-huruf tersebut pada malam pernikahan. Pada kebiasaannya, mereka tidak dapat jumpa,” ujar Jyoti sambil ketawa. Seni lukis Mehndi bagaimanapun tidak kekal sama selama-lamanya kerana gaya fesyen berubah-ubah dan teknik baharu perlu dipelajari. Pada zaman dahulu, pengantin perempuan mungkin meminta agar persamaan pasangan dilukis pada setiap tapak tangan. Malah, corak yang lebih rumit seperti lukisan pengantin perempuan di dalam pengusung juga antara permintaannya. Corak ini adalah yang paling mencabar bagi Jyoti dan memakan masa lima jam untuk disiapkan. Hari ini, corak fesyen inai telah beralih kepada rekaan-rekaan yang menyelitkan unsur-unsur geometri, bunga-bungaan, dedaun dan lilitan

pada batang pokok. Terkini, kebanyakan pelanggan lebih menggemari corak bergaya kaligrafi lantang yang menonjol. Oleh sebab pengantin perempuan mengimpikan rekaan corak yang berwarna terang dan menonjol, lukisan inai biasanya dipakai sehari atau dua hari sebelum majlis pernikahan berlangsung. Inai segar yang baru dipakai adalah berwarna oren dan bertukar gelap menjadi warna merah manggis sebelum pudar dalam masa seminggu dua. “Kata orang semakin gelap warna inainya, semakin akrablah hubungan antara menantu dengan mak mertua,” ujar Jyoti. Berbanding zaman dahulu, daun inai perlu ditumbuk sehingga lumat, proses penghasilan inai kini jauh lebih ringkas. Hari ini, serbuk inai hanya perlu dicampur dengan minyak Eucalyptus untuk membentuk pes hitam dan pekat sebelum dimasukkan dalam kon plastik. Apabila perlu digunakan, hujung kon akan digunting untuk

membentuk muncung. Kemudian, corak akan dilakar setelah minyak inai disapu pada permukaan kulit. Selepas dibiarkan kering sekitar 15 minit, pes yang sudah kering akan dibuang. Satu lapisan minyak akan disapu sekali lagi bagi membantu warna inai kekal. Dalam sekelip mata, kulit tangan dan kaki kini lebih elegan dan menarik perhatian dengan perhiasan corak halus. Menurut Jyoti, inai kini lebih kerap dipakai untuk tujuan bergaya sematamata namun masih dipraktikkan di majlis-majlis perkahwinan khasnya di kalangan masyarakat India utara. Sesi melukis Mehndi biasanya diadakan sempena majlis keramaian praperkahwinan yang dikenali sebagai sangeet. Majlis ini meraikan ikatan persaudaraan antara kedua-dua keluarga pengantin lelaki dan perempuan. Artis inai akan hadir untuk merias pengantin perempuan dan juga tetamu-tetamu wanita. Yang pasti, corak paling rumit dan cantik biasanya dikhaskan untuk pengantin perempuan. “Tidak sah sesebuah majlis perkahwinan tanpa inai,” tambah Jyoti. Dengan keindahannya yang menyerlah, seni lukis mehndi kini merupakan salah satu seni tradisional yang masih berkembang maju merentasi batas sempadan etnik. The delicate art of drawing henna patterns has become very popular

W

ith a steady hand, Jyoti Sekhon gently pressed on a cone filled with henna paste and began drawing an intricate pattern of vines and leaves on the young woman’s palm. Beginning at the wrist, she drew two thin lines across the palm, and with a deft flick of the henna cone, she dabbed on dots to make leaves on the vine. Steadily, she added more lines and dots to create a design that covered the entire palm to the fingertips. It took a mere 15 minutes to complete, with Jyoti joking as she drew confidently. With three decades of experience in the art of Mehndi, the skill has become second nature to her. Mehndi art, the traditional Indian technique of making beautiful henna patterns on the skin, is used to adorn a bride on her wedding day, and for other significant occasions, although it can also be used simply as fashion. An ancient art derived from the days of the Moghuls in India, the art of skin decoration has since become widely used in the Indian sub-continent, especially in northern India. Jyoti, 59, learnt her art in Mumbai in 1986 when she trained as a beautician. At that time, there was hardly anyone practising it in Malaysia. Mehndi art was confined to simple dots and circles, and the colouring of the fingertips. That was partly because henna was obtained from pounding henna leaves, and was too thick to create delicate patterns. Today, henna is obtained in powder form which can be made into a smooth paste. Bringing her new skills back from India, Jyoti found great demand here among brides for the stylised floral patterns, which were highly fashionable. “It took me almost five hours to do my first bridal Mehndi,” she said, recalling her early days. Now, she takes under two hours to complete the entire bridal decoration, which usually covers the hands, including the palms, and feet. Depending on personal preference, the art can cover the skin from the elbow up to the fingertips, and from the knee to the toes. Bridal designs take a long time to complete because they are extremely intricate, and often unique as brides may ask for the names or initials of the bridegroom to be cleverly hidden inside the pattern. “The bridegroom will be asked to find the letters on the wedding night, and most of the time, they can’t,” said Jyoti, laughing. Mehndi art, however, does not stay stagnant as fashion changes and new techniques are learnt. In the past, brides might have asked for a likeness of the couple to be drawn on each palm, or an even more complicated piece depicting the bride in a palanquin. The latter was Jyoti’s most challenging piece, taking five hours to complete. Today, the fashion has turned to designs incorporating geometry, flowers, vines and leaves. Of late, many favour bold calligraphic-like strokes that stand out. Brides want the designs to stand out brightly, and hence, it is often done a day or two before the wedding ceremony. Freshly

applied henna is orange, darkening to almost maroon before fading in a week or two. “It is said that the darker the colour, the better the bond between the bride and mother-in-law!” said Jyoti. The process of making Mehndi art is a lot simpler today, compared to the early days of pounding the leaves. Today, henna powder is mixed with eucalyptus oil to form a thick dark paste and kept in a plastic cone. When it is to be used, the tip of the cone is snipped off to form a nozzle, which is then used to trace the patterns after henna oil is smoothed on the skin. The pattern is left to dry for around 15 minutes before the dried paste is scraped off. Another layer of oil is applied to help the henna set. And voila, the skin now has a delicate pattern that draws the eye to the elegance of the hands and feet. Jyoti said Mehndi art is now often done just for fun but it’s still a must at weddings, especially for the northern Indian community. A Mehndi session is often held during the prewedding party called sangeet, which is a celebration to cement the ties between the families of the bride and groom. Mehndi artists will be in attendance to decorate the women guests as well as the bride, with the most elaborate patterns being reserved for the bride, of course. “A wedding is incomplete without Mehndi,” said Jyoti. CABIN LUGGAGE HANDLING POLICY

Passenger and crew safety on board our flights is our highest priority. In compliance with the airline’s new policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This new policy aims to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers traveling with infants, young passengers travelling alone, the elderly, and passengers with reduced

PORTABLE ELECTRONIC DEVICES (PED)

For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. During cruise, devices placed on ‘flight mode’ prior to switching off may be used. The PEDs must again be switched off when the ‘Fasten Seat Belt’ sign is on during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft system and safety.

LITHIUM BATTERIES

Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for such PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.

ELECTRONIC CIGARETTES

Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device is not permitted.

NO-SMOKING POLICY

Smoking, including the use of electronic cigarettes, is prohibited on all flights.

IMPOSSIBLE NOTHING 53 years old and he hasn’t slowed down a bit. Tom Cruise defies the years in Mission: Impossible – Rogue Nation

A

lmost 20 years since Tom Cruise first captivated audiences with that iconic cable drop hacking scene in Mission: Impossible, at 53 years old Cruise is back as Ethan Hunt in Mission: Impossible –Rogue Nation. The fifth installment in the spy thriller franchise, Rogue Nation sees Hunt and his usual group of intelligence spies having to stop a mysterious terroristlike syndicate of rogue agents from overthrowing the British government. With returning roles for Jeremy Renner as Impossible Missions Force

agent William Brandt and Simon Pegg as trusty systems analyst Benji Dunn, the film also introduces Swedish actress Rebecca Ferguson as IIsa Faust,

a highly skilled, undercover MI6 agent whose own allegiance is anybody’s guess. Unlike some of its slightly more complex predecessors, Rogue Nation’s plot is relatively straight forward, but the movie pulls no punches when it comes to its action – as well as its typically exotic locations. From a cat-and-mouse assassination sequence at a grand opera performance in Vienna, to a suspenseful underwater heist in Morocco which leads to an exhilarating motorbike chase sequence, the film has its viewers gripped from beginning to end. With a movie career that has spanned over 35 years, Tom Cruise has built a reputation not only as one of Hollywood’s biggest movie stars, but also one that has a penchant for doing his own stunts, and few have been more spectacular than the opening sequence of Rogue Nation. Talking to Jimmy Fallon

on The Tonight Show, Cruise described shooting a stunt in which he clings onto the side of an Airbus A400 aircraft as it takes off: “It was a little intense. There was a moment there when I was thinking ‘maybe this wasn’t such a good idea, but it’s too late now!’” After eight takes, Cruise nailed one of the film’s most memorable moments, and the risk was evidently worth it. “I do it because it’s entertaining for everyone,” the actor says. “I just want to entertain the audience.” Alongside Paramount Pictures, Cruise has defied all odds by keeping each Mission: Impossible movie as exciting and original as the last. A new director has been brought in for each outing, which helps keeps the series fresh, and with Rogue Nation providing big box office returns and critical acclaim, Ethan Hunt is sure to return for more death-defying missions, should he choose to accept them.

TAKING ON TINSELTOWN From model to movie star, Cara Delevingne has her crack at Hollywood

ith enough Instagram followers to populate a large nation (almost 20 million), and 30 Twitter accounts devoted to her eyebrows alone, model-turned-actor Cara Delevingne is nothing short of a modern phenomenon. Born in London in 1992, Cara started modelling at a young age. After winning the prestigious British Fashion Awards Model Of The Year title in 2012, Cara’s catwalk career skyrocketed, and she soon became one of the most recognisable faces in fashion. Cara soon decided to turn her attention to acting, and after a few small TV roles the 23 year old made her Hollywood debut earlier this year in the coming-of-age drama, Paper Towns. Based on The Fault In Our Stars author, John Green’s young adult novel of the same name, Paper Towns tells the sincere and stirring coming-of-age story of two high school teenagers: the shy and introverted, Quentin, played by 20-year-old Nat Wolff, and the girl of his dreams, the carefree Margo (Delevingne). Despite her years of experience in the fashion world, and after beating over 150 other actresses to secure the role of Margo, Delevingne still had to battle her nerves when the shooting of Paper Towns began. “Totally petrifying,” is how the actress describes the experience. “But at the same time everyone was so nice and it was such a family kind of feeling, so everyone made me feel at home,” she adds. As for her co-star, Wolff said that Delevingne was “perfect for the role”, although he admits that, “I was probably the only person in the world who didn’t know who she was. Then I noticed that she’s on a huge billboard right opposite my apartment in New York. I’d walked my dog past her a thousand times!”

STAND UP GUY The lesser-known Mike to Melissa McCarthy’s Molly, Billy Gardell discusses his career

W

ith his onscreen partner casually taking Hollywood by storm in her time away from the Mike & Molly set, Billy Gardell would be forgiven for feeling like he’s been living in Melissa McCarthy’s shadow of late. However, far from one to begrudge his co-star’s success, the veteran actor-comedian has been getting his fair share of the spotlight too. With Mike & Molly now boasting five successful seasons and counting, the show has joined “that rare fraternity of syndicated shows, like Seinfeld, Cheers and Friends,” Gardell says. “To be in that routine where you’re with people when they’re coming home from work or getting ready for the night shift or dinner, that’s a big accomplishment for a sitcom.” With the growing popularity of the show, Gardell’s profile has risen as well; he now regularly hosts game show, Monopoly Millionaire’s Club and has also co-hosted The Late Late Show. His standup shows have also continued to gain steam, going from playing small comedy clubs to large theatres and venues. A Pittsburgh native, Gardell moved to Florida as a child, and spent years on the grueling standup circuit, “I was a road dog, absolutely,” he admits. Small parts in various sitcoms followed, from The King Of Queens to My Name Is Earl and Family Guy, which eventually led to securing the role of lovable over-eater Mike Biggs in Mike & Molly. But how has such a high profile television role affected his standup? “The first 10 minutes after you walk out, if you’re on TV, you get a little bit of give, a little bit of credit. But after that, they remember they paid 45 dollars to see you. So you better be good!”.

FULL OF EMOTION A new album from the queen of catchy pop, Carly Rae Jepsen When Canadian singer-songwriter Carly Rae Jepsen exploded onto the global pop scene in 2011 with the monster hit single Call Me Maybe, it was obvious there was something special about her. Having already released her debut album Tug Of War in 2008, Carly was still relatively unknown outside of Canada. When Call Me Maybe was initially released in late 2011 as the title track to her upcoming second album, the single sold modestly. However, a few months later when fellow Canadian Justin Bieber tweeted the song to his millions of followers, the track went stratospheric. Countless internet memes, lip-sync viral videos, remixes, and celebrity renditions followed, causing the song to reach number one in 18 countries and become 2012’s best-selling single worldwide, while her subsequent second album Kiss continued to ride the wave by hitting top ten chart positions in Australia, UK, and the USA. Now, after the hype has finally settled, the 29 year old has released her third studio album, titled Emotion. While keeping with the bubblegum pop she’s known for, Emotion showcases a more mature sound with a heavy use

of synthesisers that give the record a distinctive 1980s feel. “I wasn’t sure I would be doing a period piece or not, but I did know that I definitely wanted to have elements of the ‘80s in there,” said the singer. “What I love about ‘80s music is that it can go really dramatic and it can go really light.” From title track Emotion to opener Run Away With Me, Jepsen provides fun, sing-along hits one after the other. Gimme Love has a hook that will ring in your head for days and Making The Most Of The Night is a real dance floor filler, but it is lead single I Really Like You that has once again caught the imagination of Carly’s fans. Starring Tom Hanks lip-syncing lyrics in its music video, the cheerful song became another favourite for self-made online video renditions across the globe. The odds were against Carly to repeat the runaway success of Call Me Maybe, but with its standout singles and glowing reviews, Emotion proves that this Canadian is no one-hit wonder.

Accessing your handset

Accessing your screen in Golden Club Class

Laptop power point

1.

Press to release the handset.

Press to stow the handset.

Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.

A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.
