SHORTLY AFTER THAT NOTE, I received an email from a fellow townsman who congratulated me on my role and said perhaps a story about Segamat would make it into Going Places one day. As it turned out, Encik Zulkifly Md Said, who is now the Director General of Malaysia’s Islamic Tourism Centre, and I share more than just a hometown in common; his mom had worked for Jabatan Telekom; so did mine. He used to go to Kedai Kopi Lim next door for coffee and roti kahwin; so did I. Meeting this way was truly a nice surprise.
So Encik Zulkifly, while Segamat is still in the content pipeline, I hope you find joy in the meantime reading about the two wonderful Johor-born ladies who were resolute in their mission to put the state’s culinary treasures on the world stage. Datin Kalsom Taib and Datin Hamidah Abdul Hamid painstakingly compiled and tested the 240 recipes that they had collected into a cookbook that took two and a half years to produce. The dedication paid off. Johor Palate: Tanjung Puteri Recipes won the Best In The World award in the Culinary Heritage category at the 2016 World Gourmand Cookbook Awards.
Still on recognitions, our Homegrown hero this month is the legendary Datuk Ramli Ibrahim, who has achieved so much in more than four decades of championing Indian classical dance. Trained in classical ballet and modern dance, Datuk Ramli tells us why dance is an effective tool for community empowerment. This month, Hindus in Malaysia and around the world will celebrate the Festival of Lights or Deepavali. The festival celebrates new beginnings and the triumph of good over evil with lights and firecrackers and of course, food. Our Unplugged Gourmet article this month highlights the traditional fare consumed during this auspicious time. On the morning of writing this note, I threw away uneaten slices of bread at home because they had become mouldy. This upset me because I could have put them in the freezer before they expired. There is simply no excuse for this oversight when millions of others have none or not enough to eat. That’s why causes such as the Roti 1Malaysia programme must be highlighted in the hope that more people or organisations will support it. The charity bread programme is not a

government initiative despite its name but the brainchild of Dato’ Anne Eu, who got the idea when she was judging in the Hospitality Asia Platinum Awards. Read the story in our Giving Back column. A New Destination Emerges in Malaysia IF JOHOR IS THE ‘jewel’ of Malaysia, then Desaru Coast is set to be its latest gem. Where would you take a first-timer to in this city? To see the Petronas Twin Towers. What is the one thing that the first-timer must do in this city? Eat hawker food and shop around Petaling Street (Chinatown). The best place to have dinner with: a. family - Overseas Restaurant on Jalan Imbi. b. friends - Neo Tamarind in Bukit Bintang. The best thing about the locals. Friendly and laid back, and everyone speaks English. Name one souvenir to bring home. Pewter from Royal Selangor. Five words that sum up this city. Raw, hectic, vivacious, tasty, and colourful. Where might we find you at 1 am in this city? If I’m out and about, probably having supper at the Nasi Lemak Antarabangsa stall in Kampung Bharu.
What do you find most refreshing about this city? While public toilets are super clean, their fully automated toilet bowls are ingenious! The one experience that everyone must try out. Enjoying shōjin ryōri (a way of cooking food in Zen monasteries) at one of the temples in Koyasan is an experience not to be missed. The one local dish everyone must try. Yuba, a type of tofu that’s available in Kyoto and they prepare it here in different ways. The best thing you can do here for free. Strolling along or just sitting by the riverbank to enjoy the breeze. A lesson learnt from this city. Always have your hotel address in the local language to show to taxi drivers. I LIKE TO THINK that I am now a village elder because I have just turned 50 and at my birthday party the main topic of conversation among my contemporaries was “Ooof!” and “Ouch!” whenever we were getting in and out of chairs. But I think that I am a youthful 50-year-old and that I can still talk to people much younger than myself who are in their 40s and even late 30s. I listen to them talk about their young people concerns like mortgages and menopause and then they turn to me for the wisdom that comes with my great age, and I say things like, “In my day, we only had two sticks and a piece of string” or “I remember Windows ‘98”. Now that I’m old I can do or say whatever I want whenever I want. I can say something patently dumb like, “I agree with Donald Trump” and nobody can argue with me because I am officially set in my ways. It’s good to finally be a village elder.
were all on TV at set times. I didn’t know it at the time but it was a curated experience where somebody had decided that we should watch these shows at these specific times. Looking back I suppose we were unwitting slaves to a schedule over which we had no control. The schedule made our actions so predictable that in Britain, where I grew up, even the electricity power stations knew that there would be surges in demand during commercial breaks of popular TV shows because millions of people would be switching on their kettles to make tea.
But the other day I was talking to a young person (aged 42) and I suddenly felt very old and completely out of touch with the modern world. He was telling me about things called Raspberry Pi, Recalbox and an SD card (which you’ll need to format to FAT32). I had absolutely no idea what he was talking about. And then he told me something that made my whole world come crashing down: People don’t watch TV anymore. Instead they use these funny-sounding devices to access a whole world of entertainment for free and whenever they want. As we used to say in my day, OMG!
I guess we were all predictable sheep back then, all waiting for a set time to watch the same TV show and then we would all talk about it the next day. We were all having the same conversation. Now these newfangled devices and the “Intertubes” give us the personal power to choose what we want to watch and when we want to watch it without the interference of the unknown and unseen curator at the TV station. Now I don’t have to wait till 8 pm or 1983 to watch Dynasty. I could watch it right now but I’m not going to. Instead I, and 50 million other people around the world, am going to watch the Swedish

YouTuber PewDiePie talk about, well, I actually have no idea what he’s talking about. Sadly, I have to say RIP TV. TV has been my lifelong friend but now I’ve been told that it is dead. It has been losing its way for some time. The History Channel only has shows about UFOs and how the pyramids were built by aliens, which isn’t what I understand to be history. If things carry on this way then soon a university history course will involve concocting conspiracy theories and when you get your degree, you won’t a wear mortar board on your head but some tin foil so the CIA can’t see what you’re thinking.

50 is the new 60
Now we can watch what we want and when we want it. We don’t have to sit through anything we don’t like, find boring or disagree with. Finally we have the freedom to only enjoy the things that confirm what we already believed to be the truth. Basically, now everyone has the power to become set in their ways, even at an early age. I guess this way we’ll all become village elders, which doesn’t make me feel so special anymore. Oh well, maybe it’ll be different when I turn 60.

FOR HISTORY BUFFS The best places to understand Singapore’s heritage are two of the country’s grandest national monuments. The National Museum of Singapore presents a fascinating overview of Singapore’s history and culture with multimedia installations. The National Gallery Singapore is housed in the old colonial City Hall and Supreme Court buildings and showcases the world’s largest collection of Southeast Asian art. GETTING AROUND Singapore has a very well-connected transportation network. Its Mass Rapid Transit (MRT) can pretty much get you to any part of Singapore relatively quickly, and it is efficient. Taxis and buses are clean and the
drivers are courteous. There is also GrabCar or Uber for those so inclined. DESIGNER STAYS The award-winning PARKROYAL on Pickering is Singapore’s first hotel-in-agarden with lofty sky gardens, reflecting pools and a unique undulating façade that resembles Asian paddy fields. If you’re more into vibrant colours, you’ll feel right at home in Hotel Vagabond, which is adorned with more than 1,000 pieces of art in its luxuriant crimson and gold French salon settings. AWARD-WINNING FOOD Joël Robuchon Restaurant is the epitome of fine dining with its haute French cuisine and a selection of over 1,000 premium wines. It is
the only restaurant in Singapore to have been awarded three Michelin stars. Meanwhile, Hong Kong Soya Sauce Chicken Rice and Noodle at Chinatown Food Complex is one of the two hawker stalls in Singapore to have been awarded one Michelin star for its tender roasted meats and springy noodles. INDUSTRIAL CHIC COFFEE Chye Seng Huat Hardware is a café and roaster located in an art deco shop-house that formerly housed a hardware company – its coffee is top-notch and its pastries are all baked in-house. GARDEN CITY The lush Singapore Botanic Gardens is the perfect place for a morning stroll. This UNESCO Heritage Site is a breath of fresh air just at the edge of the shopping mecca, Orchard Road. For something a little more futuristic, Gardens By The Bay with its 16-storey man-made ‘supertrees’ and Flower Dome replicating the dry and cool Mediterranean climate fits the bill. The Flower Dome, perpetually in spring, is the largest glass greenhouse in the world, as listed in the 2015 Guinness World Records. How intense is the competition for travel luggage? The market size for travel luggage in Malaysia is about RM600 million (USD150 million), and is expected to grow at around 5 percent per annum in the foreseeable future. We take a segmented approach, which means that we have brands that can compete in all possible consumer segments. We have Samsonite in the premium segment, followed by American Tourister in the mid-market segment, and in the beginning of 2015, we launched a brand called Kamiliant, which is fast gaining market share at the entry level. The entry-level market is the largest segment, taking up almost 60 percent of the luggage market in Malaysia.

We are also looking to gain market share through e-commerce and television-based home shopping. In the premium segment, which is where Samsonite operates, there is no direct competition. Samsonite is the clear leader in the premium segment. The luxury segment is much smaller and is addressed by a couple of niche players.

What does Samsonite stand for today? Samsonite is the most trusted luggage brand in Malaysia today and the top choice of Malaysian consumers. What Samsonite stands for today is its reputation for producing durable and quality luggage. We have invested a lot in terms of technology into our Samsonite products. We are constantly looking to innovate by pushing the boundaries for our consumers. For example, we have this proprietary technology called Curv. It is an advanced impact-resistant, durable yet extremely lightweight material. Samsonite has formulated the process to create an ultra strong material by weaving fibers of durable polypropylene together, transforming them into individual sheets which are quickly reinforced and fused together to form an outer shell. Our aim is to meet the needs of today's travellers, be they business or leisure travellers, as more and more airlines place restrictions on the size and weight of luggage. Consumers are always trying to pack as much in as possible while trying not to exceed the restrictions set by airlines. The second quality that consumers look for is ease of manoeuvrability. Therefore, the quality of the wheels and sturdiness of the wheels are also very important. Samsonite has met all the main criteria of what consumers look for in a luggage and we have been doing it very successfully.
What can we look forward to from Samsonite in the next couple of years? A lot of our main products will carry improved technology such as the Track&Go technology, which allows travellers to track their luggage to ensure it does not get lost during transit. Consumers can also look forward to more lightweight luggage coming into the market. The global trend now is more towards hardside luggage but in Malaysia, there is also a huge demand for softside luggage as well.
We have also noticed consumers changing the way they travel, from a very formal way of travelling to a more informal way, for instance, we see a lot of CEOs now carrying business backpacks instead of briefcases as they free up the hands for carrying other things for example, their smartphones. This is an example of the needs of a modern traveller that Samsonite is addressing. We will be bringing in more products that cater to the needs of the market.
What should consumers look for when choosing a travel luggage? A travel luggage should be light, durable and easy to manoeuvre, and all this needs to be delivered at the right price. Finally, reputation and after-sales service and global/ international warranty matter tremendously to consumers. Samsonite, as an organisation, has successfully addressed these main points which is the reason why we now are a clear leader in the travel luggage category, not just in Malaysia, but across all key markets globally.

Any packing tricks or tips to share with our readers? Seasoned travellers will already have their own style of packing. For me, I have a very clear format for packing. I have different pieces of luggage depending on the length of travel. For travellers with tight schedules or those with transits, it is important to travel as light as possible so that you avoid checking in and you minimise the possibility of losing your luggage when moving from airport to airport. It’s always better to pack as light as possible. We have luggage in a variety of sizes to cater to different lengths of travels; for example, the cabin size and specs for Inova allows you to pack for a week. It also has a compartment to store your laptop. It’s my personal favourite.

THERE ARE VERY FEW PLACES IN KUALA LUMPUR where you can listen to the silence – and Sutra House is one of them. Beyond its solid gates, even the air feels different as if the magic of Datuk Ramli Ibrahim’s mesmerising dances lingers in the air.
Filled with greenery and artwork, Sutra House is where Ramli works his magic in dance. It is his studio and art gallery, performing space, and the heartbeat of Sutra Foundation. Ramli is arguably Malaysia’s best-known dancer, beloved for his dazzling artistry. At 63, his fluid strength and grace remain evident in his poised movements, even when in casual jeans.
Although his name is synonymous with Odissi, his work is far more varied and diverse. Trained also in classical ballet and contemporary dance, he has truly embraced dance in all its forms, from the traditional to modern. One of his best-known productions was Quintessence, a collaboration with the Malaysian Philharmonic Orchestra in 2014, where he choreographed a set of dances to Debussy’s Prelude to the Afternoon of a Faun, Ravel’s Shéhérazade and Stravinsky’s The Firebird Suite.
Famed for establishing Indian classical dance, in particular Odissi as a widely appreciated art form in Malaysia and beyond, Ramli’s creative talents also extend to choreography, teaching, sketching and painting, and to his work in community empowerment.
“We are not just about Indian classical dance although people can be forgiven for thinking so. We are also very contemporary, using the classical tradition as a point of embarkation,” he said. Even his classical Indian dance can be immediately recognised as being Malaysian, he said. But Ramli isn’t too interested in plastering labels on his work. He said the form that each production takes depends on that particular work.
For the breadth of his achievements, he has received numerous awards, including one from the Malaysian King in 2013. Ramli has been on the Malaysian dance scene for more than three decades now, and was instrumental in breaking down cultural barriers as a Malay male dancer with a talent for Indian classical dance.
“Modernity can exist within traditional forms,” he said. “In that way, the traditional form becomes alive as it goes through evolutions. It’s not stultified in that form.” This continuous evolution is something that he has been exploring in his 40-plus years on the stage, from the time he was a student in Australia.

In November, he’s leading a six-day festival of dance at the Sri Subramaniar Swamy Temple in the small fishing town of Kuala Selangor. Dancers from nine dance institutions in Malaysia and Singapore will perform in this festival aimed at bringing the arts to the community. After graduating from the Royal Military College in Kuala Lumpur, he went on to study engineering at the University of Western Australia in Perth. But the lure of the arts proved too great. “Right from the beginning, I knew I was going to be an artist but the system slots us into boxes. Still, my calling for the arts was very intense,” he said. It was then he took up formal classes in ballet, contemporary dance and Indian classical dance, in particular the Odissi. His 14 years in Australia were a productive time, and he reluctantly returned to Malaysia after his permit to stay expired in 1983. Yet despite his reluctance to leave a flourishing career, he felt a deep reconnection with Malaysia. “When I came back to Malaysia, I was so happy. I felt a reconnection with my cultural psyche,” he said. “But at that time, there was nothing very much here in terms of dance.” That, though, gave him a chance to become a pioneer, and in 1983, he set up the Sutra Dance Theatre, followed by the Sutra Foundation in 2007 to run educational and community programmes that would cultivate the love for dance and the performing arts. His career now spans an astounding 40-plus years, with his dance troupe having performed in over 150 cities globally, including in Carnegie Hall in New York, at Singapore’s Esplanade and at the Sydney Opera House. To Ramli, though, dance isn’t just an art form, wonderful as it is for its ability to transport the audience into another world. Instead, dance can be a tool for community empowerment. And towards this end, he devotes much of his energy to Sutra Foundation’s noble work, of which he is justifiably

colours, fireworks and alluring food, with age-old traditions prevailing among the Hindu communities in Malaysia. It is the most important festival that celebrates Lord Krishna’s victory over the demon king Narakasura. Essentially it is the victory of good over evil, light over darkness – hence the Festival of Lights. The Tamil word “Deepavali” itself means “the way of light”. On Deepavali, Hindus across Malaysia begin their day with a luxurious oil-massage and bath before performing prayers. The immediate family then gathers for a traditional breakfast of idli, thosai and idiyappam or string hoppers – steamed rice noodle pancakes – served with a light coconut gravy called sothi. These largely grain-based dishes are paired with a variety of chutneys – coconut, onion, tomato and chilli – and sambar, which is a lentil-based curry cooked with spices and vegetables. Traditionally, as this food would also be offered to deities in temples, it would be completely vegetarian. But most households in Malaysia include a delicious chicken curry and mutton peratal, a dry curry cooked for a longer period to give the final dish a more intense flavour. Mutton is a key ingredient in most Indian celebrations, and it is cooked to perfection in a variety of dishes. As the day progresses, in typical Malaysian style, houses are ‘opened’ for neighbours, family and friends to visit, and this is where the full plethora of Indian food comes to the fore in its outstanding colours and deep flavours.

The hues span the cream ochre of meat kurmas, the turmeric-yellow of dhals and stir-fried vegetables, the rich red chilli-onion of chutneys, and the deep orange of curries that comes from caramelised onions, chillies and spices, lovingly cooked by mothers and grandmothers for generations. It is a sight to behold and a feast for the senses, especially when paired with fragrant saffron-infused ghee rice.

Indian sweets and snacks are made mostly of various grain and lentil-based flours – chickpea, rice, semolina, wheat and mung dhal. These ingredients are transformed into morsels of delight with the addition of ghee, milk, sugar, nuts and raisins, all wonderfully steeped in fragrant spices like cardamom, cinnamon, cloves or nutmeg, and my favourite rose water and pandanus leaves.
4 While these dishes might be common in Indian restaurants across the country, they are not usually cooked all the time at home. Deepavali is when the family recipes for celebratory meals are unearthed, cooked and enjoyed together. On the sideboards of most homes, there will be trays and glass jars of savoury snacks and sweets or palagharam. Womenfolk, especially those in my grandmother’s time, would start preparing their specialities weeks ahead of the festivities.

The most popular snack is the ubiquitous murukku – the star of Deepavali. Made weeks ahead patiently at home or bought from favourite restaurants, these twisty coils of sometimes prickly, savoury rings are delightfully munched throughout the day with a cup of tea close by. Making murukku is important business in south Indian families. Many hold dear recipes handed down from generations, and there are varying flavours of murukku in each household. The kitchen or backyard becomes a hive of activity with family members coming together to make murukku. It is also how traditions and recipes are passed on to the next generation. Murukku is made from rice and urad dhal (black gram) flour mixed with water seasoned with salt, sesame and cumin seeds to produce a dough that is then pushed through a brass or stainless steel mould paired with star-

shaped or plain circular nozzles to form coils. These are then deep-fried till golden brown and crunchy. Most homes use a large metal wok heated by charcoal fire to keep the heat even throughout the cooking process. The fried rings are then kept in jars or tins and sealed with cellophane to keep them safe from prying hands and mouths until the festivities begin. Another treat made especially during Deepavali is adhirasam, a slightly fiddly dessert created with rice flour, jaggery and ghee. The dough is kept for up to three days to intensify the flavour and ferment a little before it is made

into either flat discs or small doughnut-like rings and fried in hot oil. The flavours of the caramelised raw cane sugar with the fermented rice are so comforting after all the spicy fare throughout the day, and this is usually enjoyed with a cup of masala chai on the side. Other rich sweets served include pineapple jam tarts and semolina ghee biscuits or sugee biscuits. North Indian favourites also make for a splash of colours on the dessert table – yellow laddoos dotted with raisins and cashew nuts, bright orange jalebis, milky barfis and heavenly fruit halwas. By nightfall, the curries are warmed up, fresh thosai and idli are served for dinner, and the children get busy playing sparklers, pausing only to cram their mouths full of pakoras and omapodi – another addictive crunchy snack that resembles small strands of fried vermicelli, flavoured with carom seeds. Mixed with groundnuts, fried curry leaves and other small bits of fried lentils, it is fondly referred to in Indian homes as “mixtures”. Deepavali, like any major Malaysian festival, promises a chance for the extended family to bond over their favourite food, cooked and served with love.

are not celebrity chefs, but they come from a line of exceptional cooks whose recipes, tried and tested over four generations, have culminated in a book that recently won the Best In The World award in the Culinary Heritage category at the 2016 World Gourmand Cookbook Awards. Johor Palate: Tanjung Puteri Recipes is a book that the ladies have painstakingly produced to showcase the unique flavours and culinary diversity of Johor, peninsular Malaysia’s southernmost state. It was truly a proud moment for Kalsom and Hamidah to stand onstage in their traditional dress of baju kurungs, carrying the Malaysian flag and saying Terima Kasih (Thank you in Bahasa Malaysia) at the awards ceremony. The World Gourmand Cookbook Awards is a major event, founded in 1995 by Edouard Cointreau of the prominent liqueur families Cointreau, Frapin and Remy Martin, with distinguished jurors adhering to strict criteria. The contestants they were up against included entrants from France, Germany, the US, South Africa, Luxembourg and host country China, each with their own strengths and uniqueness. Kalsom and Hamidah never expected to win, but the details they worked hard to insert into the book clinched the award for the cousins. The book features not just recipes but snippets of history and background information of some of the dishes, especially on how they came to be regarded as Johorean specialities. Readers unfamiliar with Johorean cuisine will be surprised to see some Western dishes. But the ladies have included notes and anecdotes on why the dishes are relevant, especially those from the capital, Johor Bahru, or Tanjung Puteri, as it was known in the old days. One such Western dish is the Cocoa Pudding with Custard and Fruit Cocktail,
1 which the authors’ grandmother learned to make from the wife of the British chief of police. It has been a favourite in the households of Johor’s Malay elite since then. In order to show the diversity of the state’s cuisine, Kalsom and Hamidah sought recipes from acquaintances, including from the sister of the current Sultan of Johor, Her Highness Tunku Kamariah Aminah Maimunah Iskandariah Binti Almarhum Sultan Iskandar, who contributed recipes for fruitcake and other dishes from the royal palace.

Being avid collectors of recipes since they were young, Kalsom and Hamidah had amassed a sizeable number gleaned from their grandmother, aunts and cooks who worked in their households. And as it transpired, both had plans to publish the recipes in a book. “One day we were talking and found out that we both had similar ideas for publishing a recipe book. As it turned out, we had many similar recipes from family favourites, so we decided to work together to publish one book,” Kalsom explained.

INGREDIENTS:
3 tbs tamarind paste 3cm shrimp paste 4-5 tbs kerisik paste (toasted and ground coconut gratings) Handful of Vietnamese mint

300g medium prawns
Salt to taste
800g wolf herring
2 boxes of spaghetti

For the gravy, blend the following in a food processor: 20 shallots 1 bulb garlic 9cm galangal 10cm ginger
500ml coconut cream
4 stalks thinly sliced lemongrass
2 cups water
2 cups water
STEPS:
1. In a pot, bring the water to
boil. Add prawns, remove and shell once cooked. Set aside.
2. In the same pot, boil the
fish until cooked. Remove, debone and flake. Strain the stock.
3. Blend the fish bones with a little fish stock and strain into a deep pot placed on the stove.
4. Liquidise the fish, prawns
and coconut gratings with the strained stock. Pour into the pot with any excess stock.

5. Grind the dried shrimp and flaked salted fish and set aside.
6. Heat oil in a pan and sauté the ground spice paste, curry paste, chilli puree, dried shrimp and salted threadfin with lemongrass over low heat until fragrant and the oil separates. Stir in some stock and then pour into the pot. Add any excess stock available.
7. Slowly add the coconut
cream and remaining ingredients, stirring constantly. Slowly boil on low heat for 1.5 to 2 hours until oil appears on the surface and the gravy is well combined. Add a little hot water if the gravy is too thick.
Serve with cooked spaghetti and accompaniments of bean sprouts, finely sliced onions, julienned peeled cucumber, pickled radish, finely chopped Thai basil and Vietnamese mint leaves, halved calamansi limes for squeezing over the dish, and sambal belacan (a chilli condiment).
However, it wasn’t just a case of compiling recipes and having them printed out. For one, Hamidah had to test out all 240 recipes to find the exact measurements of the ingredients for each dish. This was because cooks in the olden days would simply throw in ingredients such as salt or sugar guided by instinct or familiarity with a recipe, or they might refer to a container such as a bowl or a cup, but there would be no way of knowing how big or small the bowl or cup was. “Imagine, there were recipes that called for ‘one whisky bottle of oil’ – which whisky bottle did they mean?” Hamidah said. Because of the tedious work involved, Hamidah almost gave up at one point, as did Kalsom, who would be in front of the computer as soon as she woke up, and would not stop except to bathe, pray and eat. “It was tough doing the book – especially involving 240 recipes,” said Kalsom. “We set very high standards and were too ambitious. We collapsed and had to take a break of about three to four months before we came back refreshed, recharged and finally able to finish the book.” It took them two and a half years to produce the book. Winning the award made all the sweat and tears worth it, especially as the ladies wanted to win the award for their home state of Johor, the Sultan and the Queen, Her Royal Highness Raja Zarith Sofiah binti Almarhum Sultan Idris Shah, who wrote the foreword, and their sponsor, Johor Corp.

AS A JUDGE OF THE Hospitality Asia Platinum Awards (HAPA), Dato’ Anne Eu made the rounds at the kitchens of five-star hotels to inspect the level of cleanliness, food preparation, and work flow. But she couldn’t help noticing the large amount of surplus bread and pastries. The hotels have to ensure they have enough to feed their customers but they also have to serve fresh batches daily, so they make a lot of bread everyday but there are still leftovers by day’s end.
Seeing the loaves gave Eu an idea. “I usually buy my bread in the afternoon, sometimes later in the evening, and I keep it for breakfast the next morning,” she says. “It is still edible the next day.” She decided that good food shouldn’t go to waste and approached her friends in the hotel food and beverage industry to find out if she could acquire the surplus bread. “The hotels serve quality breads such as croissants, muffins, and Danish pastries, which cost more than USD2.50 (RM10) each. So I started a programme to collect all these five-star breads to share with the underprivileged.”
Roti 1Malaysia is a private sector initiative that Eu started with her friends. The name was inspired by the Malaysian government’s programme to promote national unity. “I really like the slogan 1Malaysia. To me, it means inclusive of everyone regardless of race, creed, and religion,” enthuses Eu. The word roti – which Malaysians know as bread - was also selected for its universal appeal. “Chinese, Indians, and Malays all use the word roti. It’s a common and comforting word. We all have roti for breakfast one time or other.” Roti 1Malaysia collects excess bread and pastries from various five-star hotels in the greater Kuala Lumpur area and delivers them to underprivileged communities five days a week. When the programme started in 2011, it delivered bread only to homes registered with the Ministry of Women, Family and Community Development. These included orphanages, old folks’ homes, and homes for the disabled. As word about Roti 1Malaysia spread, other homes and communities requested to participate. “We don’t differentiate between registered and non-registered homes. If they come to us and we see a need, we will fulfill it,” says Eu, adding that the programme has also provided bread to children in refugee communities as well as to prison inmates in conjunction with Father’s Day. Furthermore, Roti 1Malaysia has extended its reach beyond the Klang Valley. A Roti For Sabah programme was launched in 2014. While the programme is based in Kota Kinabalu, the capital of Malaysia’s Sabah state in Borneo, it also delivers bread to the rural areas of Sabah. Roti 1Malaysia also implements projects outside the Klang

These projects are usually larger in scale and involve more than delivering just bread. “We visited the Orang Asli (indigenous people) community in Kedah state, which was fantastic,” says Eu. Aside from food items such as bread, rice, and cooking oil, the programme also brought rice cookers and water filters for the community. Although she would like Roti 1Malaysia to run on a regular basis in other states as well, Eu says she doesn’t have the resources to do it on her own. “In the Klang Valley, I have contacts in the hospitality industry and friends in the corporate sector who also run their own businesses.” She points out that a state like Kedah may not have enough big hotels to sustain the programme. “It’s hard to expand when I don’t have a local network but if anyone can launch similar Roti programmes in other states, I would gladly support them. For instance, Sabah is doing well with the programme as they have a few resorts and hotel groups there, and I have corporate friends over there.”

3 Time, effort, and money are the key ingredients for a successful long-term charity project, says Eu, which is why she manages Roti 1Malaysia like a corporate organisation. The programme was started with seed money from Eu and her friends in the corporate sector. From the get-go, she insisted that it would have a proper brand identity and adhere to health and safety standards. “I do not want it to be a slipshod effort so we made sure that the boxes that hold our bread meet food standards and that we have dedicated vans with the Roti logo on it.” While the programme is implemented by volunteers, there is a fulltime coordinator to oversee the scheduling and logistics of bread delivery. “The van drivers tell me when they go to the kitchens of the hotels, the kitchen staff will shout ‘Roti is here!’ and come scurrying out with the boxes of bread,” says Eu with a laugh. She adds that she would love to be involved in more on-the-ground activities. She participated in a jungle trekking expedition to bring food and other items to the rural communities in Sabah and Kedah. “We went prepared but it’s not something we were used to,” she chuckles. “We are city girls but at the end of the day, if you want to reach out to the people, you just have to roll up your sleeves and get the work done.” Roti 1Malaysia has approximately 40 to 50 volunteers and Eu says she would like to see more youths, especially
4 university students get involved. “They are the future leaders of the country and the programme can help inculcate the value of charity in them.” Roti 1Malaysia has been enlightening for all volunteers, she maintains, as it has fostered a sense of camaraderie among them and opened up their hearts to other communities. “My personal motto is: life is not measured by the wealth we own, nor the number of years we live; instead our lives should be measured by the number of hearts we touch and the difference we have made in the lives of the underprivileged,” she concludes.

Selain itu, beberapa produk utama seperti garam masala dan tepung muruku pula masih dihasilkan daripada pengisar tradisional yang diwarisi sejak penubuhan Santha. “Berbeza dengan mesin pengisar kilang yang menghancur sehingga lumat, proses pembebasan haba ini dapat mengekalkan tekstur, aroma dan minyak semula jadi rempah,” jelas Dr Balakrishnan.

Selepas sesi lawatan berakhir, isterinya Mathubala tampil menghidangkan kami sebiji kek vegan yang diperbuat daripada bahan khas – tepung atta. Tepung atta cukup sinonim dengan pembuatan capati. “Rempah India bukan sekadar penambah perisa tetapi juga bahan serbaguna,” tambahnya dengan teruja.

Selain itu, beberapa produk utama seperti garam masala dan tepung muruku pula masih dihasilkan daripada pengisar tradisional yang diwarisi sejak penubuhan Santha. “Berbeza dengan mesin pengisar kilang yang menghancur sehingga lumat, proses pembebasan haba ini dapat mengekalkan tekstur, aroma dan minyak semula jadi rempah,” jelas Dr Balakrishnan.

Selepas sesi lawatan berakhir, isterinya Mathubala tampil menghidangkan kami sebiji kek vegan yang diperbuat daripada bahan khas – tepung atta. Tepung atta cukup sinonim dengan pembuatan capati. “Rempah India bukan sekadar penambah perisa tetapi juga bahan serbaguna,” tambahnya dengan teruja.

Kemudian, beliau mengambil keputusan untuk membeli sebuah ladang getah yang belum pernah diterokai di Seremban pada tahun 1979. Percaturan strategik tersebut akhirnya membuahkan hasil apabila premis syarikat dan kediaman keluarganya kini bertempat di lokasi seluas 2.4 ekar tersebut. Bermula dengan penjualan serbuk cili dan kari daging terkemukanya, Santha kini merupakan pengeluar serbuk rempah terbesar di Malaysia. Rangkaian produknya mencecah lebih 100 jenis termasuk buah-buahan kering, kekacang, tepung kisar bijirin penuh dan makanan khas untuk pengamal sayuran. Selain membekalkan kepada pasaraya dan kedai-kedai runcit, produk Santha turut dieksport kepasaran dunia seperti Amerika Syarikat, Jepun, Taiwan dan Singapura. ONLY A HANDFUL OF OLD-TIMERS may remember this detail, but the late Vallison Raman, spice king of Malaysia’s Negeri Sembilan’s state, was originally a teacher.
In his spare time, Vallison used his car to help a spice maker friend deliver his products from door to door. He developed an avid interest in the trade, and when his friend decided to sell the business, he jumped at the opportunity. With a capital of less than USD13 (RM50), he bought a grinder and rented a shop-lot in the rural township of Rantau, supplying custom spice blends to shopkeepers and coffee shops. His humble spice mill performed another important service for the neighbourhood: Every morning, housewives queued up with bags of chillies, onions and grains, waiting their turns to grind spice powders for their kitchens. “My eyes would sting from the chilli fumes and coloured powders flying in the air,” recalls Mathubala, his eldest daughter. As his business grew from strength to strength, Vallison upgraded to a Morris Minor, a Volkswagen and eventually a Mercedes-Benz van. In addition to preorders, those vehicles doubled as mobile grocery stores for ad hoc purchases while making deliveries. In 1979, Vallison made the strategic decision to buy a plot of undeveloped rubber land in Seremban, Negeri Sembilan’s capital. Today, this is the site of the family home, and the company’s one-hectare premises. From their signature meat curry powders and chilli powders, Santha’s (for short) has diversified into one of Malaysia’s largest spice powder mills, with over 100 food products including dry fruits and nuts, whole-grain stone-ground flours and specialty foods like vegetarian meats. Other than supplying to supermarkets and provision shops, Santha’s exports to an international market that includes the US, Japan, Taiwan and Singapore. The success is at least partially due to the founder’s branding savvy: Vallison introduced the more hygienic aluminium foil
packaging at a time when its competitors were still using plastic versions. The current look has evolved to include a distinctive crow logo and recipe suggestions, making the products instantly recognisable. Vallison’s son-in-law Dr TVK Balakrishnan, who took over management in 1990, also drove many of the company’s modernisation efforts, which resulted in Santha’s becoming the only Malaysian company among 143 countries to receive a World Quality Commitment Award in 1999. The factory is a curious mix of the old and modern. Massive chiller rooms preserve the freshness of raw ingredients imported from around the world. State-of-the-art machines perform an assortment of tasks such as roasting, mixing, crushing, grinding, sifting, cooling and packaging. Staff in blue caps and industrial coats go about their daily tasks following detailed operating manuals. Yet amidst those modern conditions, you’ll find pockets that show the importance of revered traditions in the company culture. Long-serving staff can measure out ingredients with accuracies that match weighing machines. Some key products such as garam masala and murukku flour are produced using old-school grinders from the company’s early days. “The heat release process helps retain the texture, natural oils and aromas of these ingredients, compared to the pulverising process of industrial super micro grinders,” explains Dr Balakrishnan. After our tour of the production area, his wife Mathubala serves us an incredibly moist vegan cake made from a surprise ingredient: Atta flour, traditionally associated with chappati (Indian griddled flatbread). “Indian spices not only add tonnes of flavor, but are very versatile,” she enthuses. “Santha’s is all about going on a journey with our customers and exploring new and exciting ways of using traditional spices,” says Dr Balakrishnan. “We believe that maintaining a balance between beloved traditions and modern ways is the key to our longevity.”

CABIN LUGGAGE HANDLING
Passenger and crew safety on board our flights is our highest priority. In compliance with the airline’s policy and in observing Occupational, Safety and Health Regulations requirements, cabin crew are no longer required to stow passengers’ hand luggages into the overhead stowage compartment. This is to minimise occupational hazard and ergonomic risks faced by cabin crew in the aircraft. Cabin crew on duty will, however, assist passengers travelling with infants, young passengers travelling alone, the elderly, and passengers with reduced mobility. Passengers who are fit and in good health must carry, stow and secure their own hand luggages on board. Hand luggage exceeding the 7kg weight limit is required to be checked in before boarding.
PORTABLE ELECTRONIC DEVICES (PED)
For safety reasons and in line with the Department of Civil Aviation guidelines, mobile phones and all PEDs must be switched off once aircraft doors are closed. Whilst cruising, devices placed in flight mode may be used. The devices must again be switched off during the approach for landing until the aircraft is parked at the terminal building. Devices transmitting strong signals must remain switched off throughout the flight, until disembarkation. The Captain may prohibit the use of devices that can interfere with the aircraft’s system.
LITHIUM BATTERIES
Lithium metal or lithium ion cells or batteries for portable electronic devices (PEDs), including medical devices must not exceed 2g for lithium metal batteries and 100Wh for lithium ion batteries. All spare batteries, including lithium metal or lithium ion cells or batteries, for PEDs must be carried in passengers’ carry-on baggage only. These batteries must be individually protected to prevent short circuits. For PEDs containing non-spillable batteries, they must be 12V or less or 100Wh or less. A maximum of two spare batteries may be carried. These batteries must be individually protected to prevent short circuits.
ELECTRONIC CIGARETTES
Electronic cigarettes must be carried on one’s person or in carry-on baggage only. Recharging of the device is not permitted.
