I love nature and have a deep respect for it. I believe that in a world that’s moving fast towards consumerism, it is imperative as human beings that we cherish, protect and nurture the natural environment. I work very closely with Sanctuary Asia, a wildlife and photography magazine. With them, I’ve launched an awareness campaign called ‘Leave Me Alone’, which highlights the tiger, its role in the ecological cycle and the need to protect this species. I feel grateful to be in a position where my voice can be used to convey important messages to people.

LITHIUM BATTERIES

ONBOARD SAFETY Passengers are advised to pay attention to the policy on carrying spare lithium batteries for portable electronic devices (PEDs), including medical devices. These must be individually wrapped and carried in carry-on baggage to prevent incidences caused by short circuits. A maximum of two spare batteries may be carried but they must be individually packed. Lithium metal or lithium alloy batteries should not contain more than 2g of lithium, while lithium ion batteries are limited to a watt-hour rating of not more than 100Wh. Concurrently, do note that small PEDs that have slipped or dropped in between seats during flights may pose a fire hazard. Do not attempt to retrieve the PED; instead, alert a member of the cabin crew for assistance immediately.

On her first trip to Langkawi, Bollywood actress and film producer Dia Mirza Handrich flew Malaysia Airlines. We caught up with her in transit at Kuala Lumpur International Airport’s Golden Lounge to ask about her trip. How did you like Langkawi? It was beautiful. My favourite part was discovering the mangroves and limestone formations and finding out how long these have been around for – it makes me feel really small in this world. I am very happy that it has been named a UNESCO World Heritage Site and love all the eco-tourism happening here. You’re known to have a soft spot for environmental issues. What are some of the causes that are special to you?

About four years ago, I came across a TV programme about a master sand artist from China called Su Da Bao. I was so fascinated with his art that I decided to go on YouTube to watch and learn more about this amazing sand art performance. Eventually, I mastered this art after practising almost every day. I crafted the equipment needed and let my imagination flow with the versatile sand material. What is special about sand art compared to other forms of artistic work? The biggest difference between sand art and other art forms is that I am creating an image that

Your latest venture as a film producer can be considered your latest journey in life. What are your hopes for this? My dream is to become the Harvey Weinstein of India. I want to make meaningful films that can reach out to audiences as I believe that film and entertainment can be used to cause social change. Any plans to shoot a movie in Malaysia some day? I love Malaysia and would love to explore the opportunity. I am aware that the Malaysian government is making effort to encourage the industry with incentives for film-makers and that’s a very encouraging move. What was your experience flying Business Class on Malaysia Airlines? It was great and very comfortable.

INNOVATION LEADERS In this final instalment, we converse with two speakers of the recent Business of Innovation forum held in Kuala Lumpur, organised by the London Speaker Bureau. MARK THOMPSON, CEO and Co-Founder, Virgin Unite Mentors What is your impression of Malaysia and how far it has come to be innovative? I had the privilege of coming here and looking from the perspective of 20 years ago, and then 10 years ago, and then more recently. I’ve seen such an extraordinary amount of development and so much optimism for the future. What is your view on innovation, and how high should businesses rank it in terms of priority? Innovation is so critically important because the customer is being faced with a very fast changing world. It is not just about a product, but it may be the way you serve someone, it might be the way you recognize what their needs are in a fresh way, it might be the way you partner with people. So innovation ends up being the core of everything that the modern business does. What is the single biggest challenge companies face right now? The single biggest challenge right now is the inability to be focused on helping the employees create that service experience. And that only happens when you have a group of employees who are motivated, caring and really feel the incentive to produce great results. I think it’s easy to copy everything else and that’s why, you can buy the same equipment, you can have the same aircraft, you can have the same infrastructure or technology, all of that can be copied but the differentiator is always the service and the experience and that defines in more ways than ever the willingness for the buyer to come back.

EXCITING THE SENSES A second getaway trip was organised in March by Malaysia Airlines’ frequent flyer programme as part of its Enrich Luxe Retreat, this time to Sydney. Two top Platinum Plus members from Malaysia, Stephen Blackburn and Khor Kim Hong, and their respective spouses, were joined by locals Phillip Lee and his wife. They were treated to an enriching experience that included attending the musical Aida, going on a Harley Davidson tour, a seaplane tour, BridgeClimb experience, winery tour, quad-biking in the sand dunes, and hot air-ballooning over Hunter Valley. The retreat was a collaboration with Tourism Australia where Australia is

one of Enrich’s biggest key markets. “The whole experience was amazing! We felt like it was all magic. I can say this was a great effort by Enrich,” said Stephen during a sunset dinner aboard a yacht. “We are going beyond being an airline frequent flyer programme; we are also a lifestyle partner for our Enrich members,” said Khairul Nisa Ismail, head of the loyalty programme.

Who has been your greatest inspiration in creating art? Author Seth Godin, who writes a lot of books about making art that is not necessarily painting art but creating something new. He writes about taking risks and overcoming your fears. I was able to meet him when I joined one of his summer classes in New York, and he encouraged me to not be afraid and to just go for it. If you could change one thing in this world right now, what would it be? Education for everyone, regardless of who they are, their gender or their status. It changes the landscape of a person’s future. Education is something that has become increasingly close to my heart as I had the opportunity to share my work with students in university, primary schools, and in poorer countries. The next step is to throw myself into the deep end and tackle this issue.

STEP INTO THE PAST The esteemed shoe designer Salvatore Ferragamo found his calling at the age of seven, when he made his first pair of shoes for his sister. After gaining fame and building a brand that still thrives to this day, Ferragamo set up his company’s headquarters in 1938 in the incredible Palazzo Spini Feroni palace in Florence. The Ferragamo family is instrumental in preserving and restoring the original features of this beautiful example of medieval Italian architecture and has recently opened the Palazzo Spini Feroni’s doors for an exhibition that celebrates the palace’s history and the people who worked and lived in the building. The presentation includes a display of Ferragamo’s shoe designs throughout the ages as well as an insight into its more elusive former residents. FABRIC OF CULTURE For its latest exhibition entitled Fashion Forward: East and West, the Gallery for Russian Arts and Design (GRAD) in London has brought together an impressive display of 20th-century textiles from across Russia, Britain and the United States. GRAD curators Alexandra Chiriac and Elena Sudakova draw a wealth of examples from various collections, including those at the Victoria & Albert Museum, the Imperial War Museum and Moscow’s Mayakovsky Museum. The presentation places designs from the East and West sideby-side, and in doing so explores the creative exchanges between the two sides.

SOMETHING BORROWED, SOMETHING NEW It’s your last chance to see a major retrospective of late American artist Sturtevant’s work at MOCA, the only museum in Los Angeles dedicated to modern art. Elaine Frances Sturtevant, better known simply as Sturtevant, was a leading figure in this field. Just three years before her death in 2014, she was awarded the Golden Lion for lifetime achievement at the Venice Biennale. Sturtevant is famous for remaking iconic pieces by other artists, notably Andy Warhol and Jasper Johns. But she doesn’t just mimic; Sturtevant reinterprets her subject matter, producing something that’s often completely different. Start at the Les Halles market (avignon-leshalles.com), a trove of products from the region of Provence. Vendors sell local vegetables, herbs, meat, olives, oil, and anything lavender-related. The market is housed in a modern building whose façade is overgrown with plants and moss, helping it stand out from its surrounding traditional architecture.

9.30am Right across Place Pie, enjoy a late breakfast at bustling Mélido (melido.fr), a family-

run tea salon and bistro that is frequented by many locals and students from a nearby conservatory.

10.45am It’s time for Avignon’s star attraction, The Papal Palace (palais-des-papes.com/en), which towers over much of the old town. Seven successive Popes resided in this giant fortress, making Avignon the centre of the Catholic world for a time. Most of the furnishing in the accessible rooms were lost during the French Revolution, but the garden is still here in


all its glory. Observation decks give you the chance to discover the hilly surroundings. There are also statues scattered around, secret passageways and a cave with a hidden waterfall. Up here is the perfect place to see the famous bridge of Avignon: The Pont Saint-Bénézet lies in ruins now, leading only halfway over the river Rhône. It once connected Avignon to the Île de la Barthelasse, an island that was a popular destination for the city’s inhabitants to unwind.

the private collection of legendary gallerist Yvon Lambert that’s on display in the Hôtel de Caumont, an old townhouse dating back to the 18th century. shop with a great selection of items from the 20th century. When Parisians flock to Avignon in the summer for the annual Festival d’Avignon, they come here to stock up on hardto-find items for their homes.

5pm For a spot of shopping, head to Acte 2 (thenextdoor.fr/en), housed in a lovingly restored old theatre, focusing on the higher fashion spheres of menswear. On the racks, you’ll find Comme des Garçons Play and Visvim. Down the street, it’s also worth inspecting The

Next Door, a second store by the same owners, selling more casual clothes.

7pm Dig into a delicious dinner at Le Barrio (facebook. com/LeBarrioAvignon), a favourite with the locals. The mismatched furniture and stripped-down walls give off a charming, laid-back vibe. It’s absolutely unpretentious, and the food is amazing. Staples on the menu include the burger and the catch of the day, as well as tapas-style small dishes that are best shared.

Phnom Penh’s NEW BUZZ The Cambodian capital’s dining scene takes off Text Marissa Carruthers Photos Charles Fox

T

he clatter of plates and the chatter of diners fill the spacious courtyard, even though the clock has only just struck 8 a.m. Luu Meng steps outside, away from the heat of the bustling kitchen and into the dappled shade of the tropical trees that line the restaurant. Strolling past the water feature that forms the centrepiece of the outdoor setting, he greets guests with his signature smile and a hearty laugh before humbly bowing as they praise his food. Luu, owner and head chef at Malis restaurant (malis-restaurant.com), has been championing Cambodian food for as long as he can remember. Born into a family of cooks, he picked up his passion from his mother, who owned a street-side restaurant in Phnom Penh. After surviving the Khmer Rouge rule and spending his youth in a refugee camp on the Thai border, Luu returned to Phnom Penh at the age of 18 to study, harbouring the desire to be a chef. He went on to attend hotel school in Thailand, where he made it his mission to revive Cambodian cooking. “Cambodian food is full of flavour – fresh flavour,” he says, pointing to a rainbow of stacked herbs and vegetables bought daily from the nearby market. “I wanted to show this, and fuse it with different influences, to present a modern but traditional cuisine.”

RECREATING TRADITION

Pounding a mix of kroeung, or curry paste, into a large ceramic pestle with a heavy mortar to create the mellow spice paste, which is an integral ingredient in

local dishes, Luu says, “Cambodia is full of incredible ingredients that are unique to the country. I want to showcase their potential to the world.” He was referring to Kampot pepper, Kampong Speu palm sugar, the six types of native lemongrass, and the growing number of organic farms in the country. Malis’ signature dish, and the one Luu presents most proudly, is amok. As one of the country’s best known dishes, the curry is traditionally made using fish, which is steamed in banana leaves, sweetened with coconut milk and seasoned with kroeung, made from cloves, cinnamon, star anise, nutmeg, cardamom, ginger and turmeric. Other native ingredients include galangal, garlic, shallots, lemongrass, cilantro and kaffir lime leaves. “This is a great example of how local ingredients can be used to

make a very tasty dish,” he says. The introduction and success of Malis in the early 2000s sowed the seeds for a new breed of quality restaurants. Vibrant Phnom Penh, bursting with diverse eateries, is very different compared to a decade ago. “There wasn’t anything but street-side eating and a few small restaurants,” Luu says. “Now the standard has risen from street food to upmarket and everything in between. It has been an honour to help standards rise across the country.” The menu at the iconic Raffles Hotel Le Royal (raffles.com/phnom-penh) also pays testament to traditional Khmer cooking, featuring recipes passed down from royalty alongside classical French cuisine to reflect Cambodia’s colonial past. “This is what makes the dishes we serve so special – the fact that the recipes we use are handed to us from the royal family,” says executive chef Stuart Doust. Sophisticated presentation also ranks highly on the menu with the nhom clam, warm marinated clams served with sweet chilli sauce and pickled lettuce served on a stunning bed of Kampot rock salt. The fragrant Takeo River lobster amok comes in a young coconut with steamed brown rice, and the Kd’arm trung kroeung is a delicate row of crabs stuffed with coriander root, dried chilli and fresh herbs.

CREATIVE CUISINE

South African chef Timothy Bruyns introduced a new concept of dining when he opened The Common Tiger (facebook. com/TheCommonTiger) two years ago.

After landing in the country in 2011 as executive sous chef at the exclusive Song Saa resort off the Cambodian coast, the 34-year-old noticed the rapid development in the capital’s restaurant scene. “We aim to offer something unique,” he says, pausing for a moment to concentrate on decorating a plate of fresh Royal Tuna. “I want to serve the best quality


food without the airs and graces – dishes that are created with care and love, and presented in the best way possible.” That he has done, creating an intimate and unpretentious dining space for up to 45 people. The decor follows Bruyns and partner Christina Thomas’ vision of contemporary cool, featuring heavy wooden tables and brick walls inside the restaurant, and a manicured tropical garden on the outside. Presentation and creativity are key ingredients that give The Common Tiger’s food its unique flair and flavour, along with a smattering of the seasoned chef ’s passion. “A good dish has to be cooked with integrity,” he says. “It has to satisfy emotionally, it doesn’t need to be wild and wacky.” His globetrotting adventures have undoubtedly played a part in the innovative dishes on the constantly changing menu, combining classic European cooking with Asian traditions and his own modern ideas. The result is a combination of textures and tastes that tantalise the senses, stimulating the eye and pleasing the palate. “I try to reintegrate the classical,” he

says. “I play with textures and I want the food to be visually stunning.” The tuna carpaccio is a classic example of what he is trying to achieve. Using Royal Tuna landed in Sihanoukville in the south, he adds herbs bought each morning from the local market and a self-created hot basil gel, before topping it off with shavings of dried and grated tuna. “I’m not trying to be Cambodian,” he adds. “I’m just taking advantage of the great products here.”

Keiko Fujita-Hix and Corbett Hix have been cooking up a storm in their small kitchen in the up-and-coming Russian Market area. Wanting to offer a quirky eatery with heaps of personality, coupled with a simple menu offering affordable food that suits the country’s climate, the husband-and-wife team set up Sesame Noodle Bar (sesamenoodlebar. com) in 2012. Based on traditional and not-sotraditional cuisines, Sesame Noodle mixes aspects of Japanese and Chinese cooking with a splash of America. It has become a hangout for Phnom Penh’s steadily growing hip crowd, drawn in by the intimate surroundings, the sketches that hang on the wall, and the tiny toy collection that lines the long bar. Noodles inevitably dominate the menu, with the house noodles – a bowl almost overflowing with chewy, ice-cold noodles, vegetables, caramelised pork and a boiled egg – proving the most popular. Other signature dishes include the Mighty Thor Buns – mouth-watering steamed buns packed with layers of crisp pork belly, homemade pickles and hoisin sauce with a touch of Sriracha sauce. “The restaurant offering in Phnom Penh is constantly expanding,” says FujitaHix, who buys most of her ingredients fresh from the nearby Russian Market every morning. “There are all kinds of international foods available, catering to all kinds of people. The quality is also rising, which is great to see.”

A

distinct whimsical air drifts through Odense. Etched into cobblestones are red footprints that guide you down nooks and crannies in search of historical landmarks. Lining narrow streets and alleys are 16th to 19thcentury candy-coloured cottages with maroon timber, brick chimneys, and peaked roofs made of terracotta shingles. Violet flowers, purple tulips, bluebells, and white blossoms frame doorways and gardens. Sculptures of mermaids intertwined with other fabled characters form pillars on Claus Bergs Gade. A one-legged statue of a brave tin soldier stands watch along Overgade Street. A stainless steel model shaped like a paper boat sits quietly in the river Odense Å which flows through the city. One gets the feeling that this small city of roughly 175,000 in southern Denmark has blended reality with fantasy so perfectly that its residents exist in both worlds as if they were the very same. “Many visitors think these are just colourful models,” shares local resident Lone Weideman when I asked her about its fairytale-like houses. “They are in fact residential. People live in them.” A 90-minute train ride from Copenhagen brings you to the island of Funen and its capital, Odense, which lives and breathes the fables of its native son – prolific 19th-century Danish author, poet, and artist Hans Christian Andersen. Chances are you’ve probably thumbed through one of his fairytales as a child. His timeless sagas include The Little Mermaid, The Ugly Duckling, The Emperor’s New Clothes, and The Brave Tin

Soldier. During his lifetime, he produced over 156 classic fairytales, 14 novels, over 1,000 poems and more than 50 works of drama. Born in 1805, Andersen grew up in Odense right at the transitional cusp from the 18th to 19th century – an era when rampant poverty and high childhood mortality rates prevailed despite progress in science and technology. So Andersen’s imagination soared. His mind began to create alternate worlds inspired by daily life in Odense, and these fantasies would later manifest as popular tales we know so well today.

FOOTPRINTS

To follow his story through the city, you have to look down. Down at red slender footprints that mark a 3.1-kilometre trek around Odense. These footprints will take you to 13 landmarks that played a significant role in Andersen’s life and relationship with the city. Your first stop along the route is his birthplace, an unassuming ochre cottage he shared with six other families for the

first two years of his life. Once located in the slums of Odense, his birth home has been physically woven into the modern steel-and-glass H.C. Andersen museum (museum.odense.dk), which chronicles his personal and professional life from 1805 until 1875 when he died of cancer. It was within the museum I also discovered Andersen the artist, who made intricate paper cuttings with nothing more than a crude pair of scissors. A quick dash across a small courtyard with red oversized funnel-like figures takes you into the Tinderbox, which is a cultural art centre where children can live out his stories by becoming characters themselves. Neon spotlights illuminate wooden stages that bring makeshift worlds to life with costumes, props, and makeup. The next stop is Sortebrødre Torv (Black Friars’ Square), where farmers gather to sell produce every Wednesday and Saturday all year round. The square dates back to the 12th-13th century and was named after Black Friar monks who once ran a monastery in Odense.

Today, farmers sell all sorts of fresh fruit, vegetables, and flowers in addition to freshly caught fish, brown eggs, and artisan cheeses. Bright orange carrots, red cabbages, pink rhubarb stalks, and purple grapes glisten under the sun with equally colourful brick houses in the background. “Some farmers have been at this market for generations,” shares farmer Carla Lang Nielsen, pointing over to a

couple of herb and vegetable vendors. “Like Merete, who makes wool jackets, sweaters, and dresses from wool sheared off her own sheep.” Originally from Canada, Carla Lang Nielsen moved to Denmark 20 years ago and now runs a pig farm called Hindsholmgrisen (hindsholmgrisen. dk). She has been selling organic pork products at the market for the last three years. Graham Smith, a local cheese

maker at the market, is also a transplant to Odense from Scotland. He moved to the charming city 40 years ago, leaving behind his career as a horticulturist – a tree surgeon, he says – to pursue his dream of making cheese. I noticed this common thread of people leaving past lives to live out their dreams amidst the fairytale heart of Odense. Sortebrødre Torv was where Andersen himself often daydreamed of performing on the local stage theatre as a teenager. He lived in Odense until he was 14, when his passion for acting and theatre moved him to Copenhagen to join the Royal Danish Theatre. There are several markets on Saturdays, including flea markets (loppemarkedetinedergade.dk), where you can buy antiques amidst a sea of porcelain knick-knacks and eccentric Danish designs, and a children’s toy market on Flakhaven, where kids can sell their used toys and buy new ones.

The washing site was one of his makeshift playgrounds as was the elegant Odense Palace where his mother also worked as a washerwoman. His playmates included fellow servant children as well as Crown Prince Frits, who would become King Frederik VII of Denmark in 1848.

Today, Odense is Denmark’s third-largest city after Copenhagen and Aarhus, with a slew of activities, festivals, and parades that pay tribute to the author. During the bicentennial celebration of his birth in 2005, metal sun faces made to resemble paper cuttings of Andersen’s face were erected all over the city in his memory. His sagas seem to permeate every pore of Odense, from traditional Danish restaurant Den Grimme Ælling or The Ugly Duckling (grimme-aelling.dk), which serves a variety of potatoes and roast meats to abstract paintings of ducklings adorning the walls of upscale restaurant Pasfall (thomaspasfall.dk), which serves new Nordic cuisine. ’m staring at delicate, colourful glass marionettes created by Egyptian artist Wael Shawky. Some of the dolls are comically grotesque while others are strangely precious. Examining the Crusades from an Arab perspective, Wael Shawky’s solo exhibition Crusades and Other Stories is a fascinating amalgam of drawings, paintings, and videos – featuring the marionettes – that takes a fresh look at the medieval military campaigns that are often recounted from the European point of view. Wael Shawky’s videos are at once humorous and dark, surreal and all too real. And though the wispy drawings are beautiful to behold, they also deal with weighty subjects, like the ways history can be manipulated by how it’s written. This exhibition is not in a prestigious museum in New York or some avantgarde gallery in Düsseldorf, but in the Gulf region – specifically, in Doha, Qatar. Mathaf: Arab Museum of Modern Art (mathaf.org.qa) has been pushing boundaries since opening in 2010. While the neighbouring Emirates rely on bluechip names like Guggenheim and Louvre to grow their fledgling art scenes, Qatar has forged its own way by championing

contemporary artists across the Middle East. Challenging viewers to be culturally and politically critical is a bold move in the region. So far, it seems to be attracting plenty of local attention. Formerly a school building, reimagined by French architect Jean-François Bodin, Mathaf is an intriguing institution. Taking a decidedly Arab look at modern and contemporary art, it brings together inspiring works by such artists as Etel Adnan, a Lebanese-American poet and visual artist, and Shirin Neshat, a multidisciplinary artist from Iran. With the backing of Sheikh Hassan bin Mohammed bin Ali Al Thani, a prolific art collector, the museum is slowly teasing out its permanent collection in public view. The cutting-edge contemporary art museum isn’t the only cultural institution of note in Doha. From Mathaf, a pink shuttle bus will whisk you to the I.M. Pei-designed Museum of Islamic Art, surrounded by parklands and an immaculately clean shoreline along which traditional dhow bob on the gentle sea. Thrill-seekers on jet skis speed by, making the wooden boats dance. Inside the boxy, manila-hued building, I find priceless artefacts from across time and continents, representing varied aspects of Islamic art. Figurative rugs from 16th-century Iran, brilliant Iznik pottery from Turkey, a three-metre-long imperial


scroll from the Ottoman Empire, and the oldest surviving Islamic astrolabe, or celestial map, from Iraq are just a few of the items dramatically presented in glass boxes in the dark interior. As I descend the curvy staircase that seems to float in the light-filled atrium, Doha’s futuristic skyline reveals itself through the afternoon haze on the 45-metre-tall window. Few places on Earth are changing as fast as Qatar, and Doha’s population more than doubled in population in the last decade. Packing nearly a million people in 132 square kilometres, Qatar’s largest city was just a fishing village for much of the 20th century. The discovery of oil turned this once-sleepy pearling town into a hypermodern world city, and now, its skyline could rival that of any iconic world city.

Down the seaside promenade from the museum, however, remnants of Qatar’s past await. On a sandy yard, a dozen camels lounge in the lingering heat of dusk, chewing on grass and yawning, as if they haven’t noticed the furious speed at which Qatar has changed. I am at Souq Waqif, a traditional marketplace whose pedigree reaches back centuries. Completely renovated in 2006, this sprawling market looks like a modernised model of some Indiana Jones set piece. In the warren of two-shoulder-

wide alleys on a Friday evening, I happen upon ladies in head-to-toe black abaya buying colourful spices, gents in starched white thobes texting on their iPhones, and packs of men parading while singing folk songs. Sure, Doha doesn’t lack upscale, Western-style malls – one of which is made to look like a Vegas interpretation of Venice, complete with indoor canals and gondolas – but if you’re not tempted by the same international brands you can find at home, then Souq Waqif is the place for you to pick up, say, antique silver lanterns, natural pearls, or even a falcon. This renovated bazaar is also where you can tuck into grilled kebab and baba ghanouj, a smoky eggplant dip, at a Lebanese restaurant or koshari, tomato sauce over rice, lentils, and pasta, at an Egyptian eatery. Groups of revellers – Western, Asian, and Middle Eastern – sit outside at sidewalk cafés smoking shisha, revelling in the afterglow of the desert heat. Souq Waqif is also a prime place to watch the cross-section of Qatar’s multinational population, 88 percent of whom are foreigners who have built the country from ground up. A quarter of the country hails from India, double the number of Qatari nationals. As I stand at a corner and watch the procession of visitors go by, it occurs to me that Doha is a great experiment in the making, a new model of metropolises, built from scratch and inhabited by people

of all stripes. If it has changed so much in the past decade, what will it look like in a few years, when the city hosts the 2022 FIFA World Cup?

A 20-minute boat ride across the bay from Doha, there used to be a sandbank popular among picnicking families and amateur fishermen. This year, combined with reclaimed land, this empty stretch of sand has been reborn as a 13-hectare family-oriented resort, Banana Island by Anantara. With a 30-slip marina, comprehensive wellness programmes, and overwater bungalows, this upscale hotel complex is a tropical hideaway flanked by sugar-coloured beaches. Away from the bustle of Doha, the young and the young-at-heart can ride boogie boards in the surf pool, which shoots continuous streams of white caps. Parents can park their kids in the activity centre and indulge in Turkish baths and Thai massages, or knock back a few fruit mocktails (there is no alcohol on the entire island). Qatar has other family-friendly attractions. You can get a preview of the World Cup by visiting Aspire Zone, a shiny athletic complex of stadiums, football pitches, and sports trails. Katara Cultural Village, an arts and culture complex encompassing galleries, a marble amphitheatre, performance spaces and water sports facilities, hosts events ranging from flamenco dances to diving contests. Farther afield, you can go out to the Singing Dunes, a vast field of sand dunes that make murmuring sounds in the wind; here, you can go on a swashbuckling off-road ride on 4x4 vehicles designed for dune-bashing. You can even camp out, Bedouin-style, near the saltwater inlet of Khor Al-Adaid, an emerald body of water surrounded by crescent-shaped sand dunes.

And lest you forget – Qatar is surrounded by water, and you owe it to yourself to explore the sea. When you snorkel around Banana Island in the sapphire water, you might see small, silver fish dart around you. Turtles have been spotted here as well. Then, when you raise your head above the water, you’ll see Doha’s skyline shimmering above like a mirage. From a fishing village to an oil-rich hub with world-class museums, Doha has come a long way. And the beauty of its Persian Gulf setting has endured all the changes.

H

ear the phrase ‘farmto-table’ and what do you imagine? A chicken clucking atop your dining table? Or just good ingredients done well? The farm-to-table movement has grown over the years as people become more aware of where their food comes from. If there’s one American city that’s representative of this movement, it’s Portland, Oregon, where working directly with local producers has become much more of a culinary norm than a trend, an ethos that’s fully embraced by chefs and diners. This focus on seasonal, local ingredients isn’t reserved for the white linen establishments. From taco joints to food trucks to brewpubs, fresh ingredients from nearby have become a focus of all kinds of menus, making this style of cooking and eating practically second nature to Portlanders. Portland is well situated to be a leader in this movement. The Willamette Valley is a hotbed of agricultural production. Chefs have flocked to this 240-kilometre valley to take advantage of the abundance of local ingredients, turning Portland into a world-renowned food destination. “The Portland dining scene is distinct because of the growing region that surrounds the city. Oregon and our good neighbours in Washington have a long history of agriculture that continues to develop and flourish,” says Jason French, head chef and owner of Ned Ludd (nedluddpdx.com), a restaurant focused on seasonality and crafting dishes made in the restaurant’s wood-fired oven.

“Historically, Portlanders have always championed the agriculture surrounding the city and the early chefs in town. That spirit lives on today but we find more chefs working directly with farmers and breeders to get very specific about the ingredients and the range of varieties the farms are growing,” Jason says. He also points out the role of the customers. “Diners welcome a more seasonal approach to eating and they truly want to know where the ingredients come from and about the relationships between the chefs and the farmers/producers.” A close proximity to freshly grown food has made it easy for Portland to ensure access to good ingredients. In 1973, with the help of farmers and environmentalists, Governor Tom McCall crafted the Urban Growth Boundary to control urban expansion onto farm and forest lands. It has been modified numerous times since then, but it has meant that “farms could flourish in close proximity to chefs who could put those products to good use,” says Erika Polmar, the founder of Plate & Pitchfork (plateandpitchfork.com), an organisation that hosts true farm-to-table dinners, bringing diners out of the city and to farms. “Combine the access to delicious, locally grown product, harvest at its peak, with a pioneering spirit, and you’ve got the Portland dining scene.” Drawing the connection between what people eat and who produced it is an important component. “When customers have dinner on a farm, they’re gaining insight into what it takes to create a product, rather than just spotting a beautiful head of Romanesco in a store or market stall. At our dinners, guests walk the fields with the host farmers, they see their sun-tanned skin, calloused

hands and sheer joy on their faces as they talk about their tomatoes or berries as if they are their children,” says Erika. “Diners have the opportunity to hear the stories of the farm, learn the history and ask questions that you wouldn’t have the chance to ask in a busy market stall or even the most well versed server or produce clerk could share.” There are 40 different farmers’ markets in the Portland Metro region, making it easy to have a connection with the farming community. One of the most


 well-attended is the Saturday market held downtown at Portland State University. Operating since 1992, this year-round market features 140 stall spaces for farmers, ranchers, cheesemakers, bakers and other artisans. Portland itself is also home to many urban farms, including Zenger Farm in Southeast Portland, which acts as an educational farm, hosting events yearround as well as summer farm camps, and The Side Yard in Northeast Portland, which supplies local restaurants like Grain & Gristle, 23Hoyt, and the urban winery SE Wine Collective. There are also restaurants that take farm-to-table to the next level, growing some of their own produce, like Bar Avignon (baravignon. com), whose garden just a bicycle ride away from the restaurant allows them to cook ‘seed to plate’. The aspiring urban farmer might want to pop into the Urban Farm Store (urbanfarmstore.com) in Southeast Portland, which offers urban farming supplies (including baby chicks) as well as classes. Visitors can also take advantage of a farm stay at the Tierra Soul Urban Farm & Guesthouse (tierrasoulpdx.com), which boasts over 75 edible plants, several guest rooms and a caravan out back for those

Ned Ludd changes its brunch menu weekly in order to offer the best in seasonal fare

Conversations are encouraged in Portland; ask about where your food comes from and you are sure to get a story

looking for something different. For many of the city’s top farm-to-table restaurants, it’s not just about ticking off a list of ingredients; it’s about taking part in a community. “I really love that we are supporting other people’s dreams too. Meeting a farmer or a forager who is willing to go out and grow something or make something the right way is quite the experience,” says Elias Cairo, co-owner of Olympia Provisions (olympiaprovisions. com). After finishing an apprenticeship in Switzerland where he fell in love with preserving and processing meat, Elias returned to Portland and eventually opened the much-loved Olympia Provisions, bringing the old-world art of charcuterie to the modern Portland food scene. “We are growing a community of folks that are passionate about what they do and love it,” he says.

Old Salt Marketplace (oldsaltpdx. com) in Northeast Portland is certainly indicative of this community. Here, diners are offered a fresh and local menu – the restaurant brings in one to two whole cows and three pigs every week which they butcher in-house and turn into a variety of meat products – and in the summer, the restaurant hosts a weekly farmers’ market featuring some of the producers it works with. “We don’t just use farms when it is convenient. We use those ingredients all year long,” says Ben Meyer of Old Salt. “We don’t cheat. And we do it all the old-fashioned way – by hand.” This style of cooking puts the focus on the full process, allowing for food that is as much inspired by the ingredients as it is by the chef ’s creativity. Chefs are challenged to build a menu based upon what they have access to, and that changes how they cook. “If they did a great job, it is our duty, as chefs, to treat that ingredient as simply as possible, to let it shine. If we stay out of that ingredient’s way, then that grower or rancher can really stand out on the plate,” says Ben. As the farm-to-table ethos spreads throughout the city, it has made people think about their food in a new way. “All restaurants should be farm-to-table,” says Joshua McFadden, Chef Partner at Ava Gene’s (avagenes.com). “Eating locally is the most important topic; it affects the world and I like to do my part.”

Prior to returning, he was a senior consultant interventional cardiologist at The Queen Elizabeth and Lyell McEwin hospitals in Adelaide, where he was also involved in training junior cardiology specialists, among them Malaysians. In Malaysia, Dr Onn was tasked to build and lead a comprehensive heart services clinic at KPJ Kajang, and while it was challenging – especially for someone who has never worked in the Malaysian healthcare system – the rewards were immense. What made you decide to come back?

Family. I left home at 12, going from one boarding school to another and then more than 20 years in Australia brought the realisation that home is home. Celebrating Aidilfitri (Eid) this month, what does it mean to you now after spending so many years abroad?

Because Eid is not a public holiday in Australia, we only get to really celebrate it on the weekend. So if it falls on a workday, it’s business as usual after Eid prayers. Some of us may take leave, but others may not be able to, so we couldn’t really visit each other. And you only celebrate with friends, not family. And since there weren’t many other Muslims, it was a really subdued affair. Now, being able to celebrate Eid in Malaysia, I can’t put my feelings into words. You get to celebrate with your whole family, and sometimes for the whole month. It is just really different. How did TalentCorp help you in your return?

TalentCorp came with the Director-General of Health for roadshows in various cities in Australia. I was instantly inspired to return and contribute to my home country. A representative from one of the private hospitals guided me through the process of registering and credentialing. Without their guidance and help, I would probably still be 5/6/15 8:38 PM in Adelaide.

Would you encourage other Malaysian medical specialists abroad to return to Malaysia?

Yes definitely, especially the specialists. In general, major Malaysian tertiary hospitals are very well-equipped and at times, betterequipped than those abroad. The challenge is to bring along leadership, change in working culture and etiquette to achieve better health outcomes for our people. There is also much to learn upon returning. Keep an open mind. Heart disease affects the very young in Malaysia. We are trying to make at least a tiny bit of difference. How can they contribute and what are the prospects for them here?

rediting legendary French restaurateur Auguste Escoffier, who modernised and popularised French cuisine and created the Peach Melba dessert, for inspiring his cooking and techniques, Ryan Clift of Tippling Club in Singapore is bringing his own revolutionary fine dining experience to the city-state and other parts of the region. “I was schooled in such Escoffier philosophy and fundamentals of classic French cooking while at Claridge’s in London that I owe a lot of my cooking and techniques to him and my experience there.” Interestingly, Ryan and ‘The King of Chefs’ both shared a similar induction into the culinary world with apprenticeships in restaurants at age 13. The difference, though, was Ryan’s first job was with a Michelin-starred restaurant, near his hometown of Devizes, Wiltshire in the

United Kingdom, while Auguste helped out at his uncle’s restaurant in Nice, France. Their immersion into the culinary world at a tender age and the eagerness to learn led them to become revolutionary and inspiring chefs. Ryan cut his teeth training under notable chefs including British celebrity chef Marco Pierre White, London-based ‘Father of Fusion Cuisine’ Peter Gordon, and Shannon Bennett, head chef at the awardwinning Vue de Monde in Melbourne. These days, Ryan oversees his three establishments in Singapore with the awardwinning Tippling Club being the most progressive, serving modern European cuisine ingeniously paired with creative cocktails, and assembled using scientific and technological know-how. He uses M390 high-precision knives developed with Balinese master blacksmiths, Blades of the Gods, and German craftsmen, Windmühlenmesser. His tools include liquid nitrogen, evaporators, sound wave sonifiers and sound homogenisers to break down food cells in order to be combined with other equally-shattered ingredients to create a full-flavoured culinary experience. When Tippling Club first opened in 2008, Ryan admitted it was tough trying to push something that was considered radical by Singaporean fine dining standards to diners in the republic. The good thing was that they were open to his ideas and generally lauded the restaurant for its offerings. Ryan was never disheartened, believing that they would come round sooner or later and vehemently stuck to his original concept. Come round they did, and for seconds and thirds until Tippling Club became one of the most revered establishments in Singapore and Asia. In less than 10 years, the restaurant has

won awards and recognitions, including a Top 20 spot in the Miele Guide, which assesses Asia’s finest restaurants; the Restaurant of the Year and Bar of the Year awards as well as three others at the World Gourmet Series Awards 2013, and most recently, was ranked 36th among Asia’s 50 Best Restaurants 2015 by The Diners Club World’s 50 Best Restaurants Academy – the second year Tippling Club has been on the list. Ryan’s two other establishments, Ding Dong, serving Southeast Asian small plates and cocktails, and Open Door Policy, with its contemporary menu influenced by Australian, Asian and Italian fare, are doing equally brisk business, thanks to his vision in revolutionising Singapore’s dining scene. Like a proud parent, the chef admits he does not have a favourite among his restaurants. “All my restaurants have very different concepts. What I can say for all of them is that I’m interested in creating unique flavour profiles and focusing on the quality of ingredients,” he explains. This year, Ryan has been busy introducing his brand of cooking to the world. Last month, his Masterclass event at the inaugural Ubud Food Festival in

Ingredients: Razor Clams

Parsley puree

3kg Razor clams 1L chicken stock 750ml white wine 2 parsley bunches 50g thyme 10g crushed white pepper 5 banana shallots, sliced 5 garlic cloves 5 bay leaves

Garlic soup

1.5L clam stock 800g purple garlic 3L milk 1L cream

500g parsley, freshly picked 200ml water 25ml olive oil Ultratex 4,15% starch powder Salt and pepper

Parsley shards

200g parsley chlorophyll 500g potato, boiled 7 eggs, yolks removed 5g salt Oil

Parsnip root

1kg parsnip root 100ml milk 2g salt 1 sous vide bag

Bali, Indonesia, was one of the first to be sold out, not long after tickets were released. This was followed by a stint in Milan as one of the judges selecting the winner for the Southeast Asian region in the San Pellegrino Young Chef 2015 competition. A few other festivals around the world will be commanding his attention in the coming months. Back to base, Ryan will be launching a new restaurant in Singapore while coming up with a new tasting menu for Tippling Club. “Or at least, I’ll be trying to!” he exclaims.

Method of Cooking: Razor clams Start by giving the clams a good wash in cold water. Place them in a large and deep gastronome tray. Bring the rest of the ingredients to a boil in a pan over high heat, then pour the stock over the clams and cover the tray for 30 seconds. Remove the stock immediately and blast chill the clams. Strain the stock and reserve.

Parsley puree Blanch the parsley in rapidly boiling water until tender, then remove and chill. Blend in a Thermomix on high speed with water and a drizzle of olive oil. Pass through a sieve and thicken with Ultratex 4 to obtain a stiff fluid gel, then season to taste with salt and pepper.

Garlic soup Blanch the garlic in milk twice, starting from cold to hot each time and using fresh milk. Then, blanch in 500ml of the cream and simmer until tender. Once cooked strain the garlic of the cream

and reserve both components. Place the blanched garlic, garlic cream and remaining 500ml cream to the clam stock and blend in a Thermomix at 60°C on high speed until smooth. Pass and reserve, when serving never boil the soup. Parsley shards Blend all of the ingredients in a Thermomix on high speed to get a smooth mix. Vacuum to remove air and spread an even layer over a silpat mat to cover the entire mat. Bake in the oven at 130°C for approximately 20 minutes, remove and allow to air dry in a warm and dry area, then peel off the shards and quickly fry in a pan with the oil heated to 180°C until crispy. Drain on a paper towel and season with salt. Parsnip root Place all of the ingredients in a vacuum bag, vacuum seal and cook in a sous vide at 85°C for 45 minutes or until cooked. Remove and chill in the bag.

cool grey building stands out in an open green space, Mount Suthep gently looming in the background. A large logo of a wolf lights up at night, a beacon in the dark. Rumpai Loft Habitat's industrial chic looks wouldn’t seem out of place in a New York or London borough, but this is Chiang Mai. Thailand's second-largest city to the north is famous for its gilded temples, night bazaars and outdoor adventures, but it’s gaining a reputation as a creative hub. A wave of young entrepreneurs is setting up creative enterprises in the last capital of the Lanna Kingdom, adding to its famous handicraft industries a litany of contemporary

homegrown arts, crafts and design. Akara ‘Jean’ Pacchakkhaphati conceived Rumpai Loft Habitat as an artists’ hub, a community space for creatives to live, work and play, and eventually turned it into a guesthouse for daily and monthly rent. "The concept of this place is important. It's not just style or just looks. I want this place to be a space where we can communicate and exchange ideas," says Jean, who is also a filmmaker, graphic designer and writer. The space held its first exhibition, curated by Austrian Dev Lengjel, earlier this year, featuring 11 local artists and one American. Jean has plans for more events, including student short film festivals, screenings and directors’ talks. Communal artisanal spaces such

as Rumpai Loft Habitat's intention is not uncommon in Chiang Mai. Baan Kang Wat in the Wat Umong area is a collection of Thai-style huts occupied by small businesses run by young entrepreneurs. Another, called Penguin Village, is a quaint artists' hub located off Canal Road, housing cafés, artisan workspaces and an architect's office. Puttimon Tantithananont moved into the village three years ago, where she lives, works and has a shop. Puttimon works with natural dyes from indigo, mango and turmeric, which she fashions into clothes and bags for her brand Linnel. She also hand-makes limited edition notebooks. “I like to experiment with everything around me,” she says. Her boyfriend Chavatepol Boonsiri works with ceramics and wood for his brand 326 Studio. A graduate of Chiang Mai University's Faculty of Fine Arts, he studied sculpture and ceramics in school. These days, he salvages wood from the neighbourhood, crafting it into his signature lamp bases and wooden toys. “The handmade movement has been in Chiang Mai for the last five years. I find that people of my generation want to have their own business, whether it is a café, shop or guesthouse. There are a lot of handmade things available now,” says Puttimon. A neighbour, Sathita Salabsang, recently opened her cosy café, Barefoot,

after initially selling cookies and cakes. An alumnus of Pun Pun, an organic farm and sustainable learning centre, she is a proponent of healthy living through simple but good food. She regularly sources for her ingredients from local organic farms. “From this café, we want people to know where their food comes from,” says Sathita, who cooks and chats with her customers over the counter of her open kitchen. While young entrepreneurs are taking the lead with personal projects, TCDC Chiang Mai (tcdc.or.th/chiangmai) wants to lend a helping hand. The design resource centre, which lies just outside the Old City walls, is an offshoot of TCDC Bangkok. The governmentsponsored centre aims to inject design sense and sensibilities in the north of Thailand while connecting designers with craftspeople in the area. Its mission is to carry out the country’s drive to fuel a creative society to complement its established manufacturing industries. TCDC Chiang Mai organised the inaugural Chiang Mai Design Week last year with design showcases, workshops, networking parties, dialogues and pop-up markets to showcase, promote and connect local talent. Buyers from Bangkok’s top department stores and chains were invited to view these Made in Chiang Mai goods, several of which are now available in their stores. Inthaphan cites local brands such as Ars D Sine and Nokhook Design as young Thai brands to look out for. These Chiang Mai residents combine traditional handicraft with modern design for their unique office supplies and bags respectively. It doesn't stop with handicraft; young Thais are getting creative with their coffee too. In Chiang Mai, Thailand’s reigning latte art champion Arnon ‘Tong’ Thitiprasert, is elevating the humble coffee with milk and foam to an art form. Having learnt the trade in Australia, he combines science and looks in a cup at his café, Ristr8to (ristr8tocoffee-chiangmai.com), on trendy Nimmanhemin Road. "It's not only about the beauty of it. I use the art to bring out the full base flavour of the coffee and milk," says Tong, who puts his own spin on lattes, creating signature coffees such as Ficardie and Cigar8to.

Originally from the south of Thailand, he was attracted to Chiang Mai's burgeoning coffee scene and the abundance of coffee farms around the city. "Chiang Mai is going to be Thailand's coffee capital, and I wanted to come and share knowledge," says the young man, who has trained several of the country's national barista champions. With these new creative entrepreneurs, businesses are not merely financial enterprises but extensions of passions and hobbies. As Tong sums it up, "I wanted to open my own place where I will want to go to work and I love what I am doing."

iada aksesori untuk kepala yang lebih ikonik berbanding songkok sebagai lambang negara ini. Perdana Menteri Malaysia yang pertama, Tunku Abdul Rahman cukup terkenal kerana menggayakan songkok dipakai tinggi di bucu kepala dan dicondongkan sedikit. Pelakon lagenda, P. Ramlee juga sinonim dengan pemakaian songkok tinggi. Sekitar tahun 1980-an pula, penyanyi terkemuka, Sudirman sering tampil dengan songkok yang lebih ranggi dan berwarna terang. Songkok dipercayai mula diperkenalkan oleh golongan mubaligh Arab di kepulauan Melayu sekitar abad ke-13, namun kesahihan ini masih diperdebatkan. Ia biasanya dipakai oleh lelaki beragama Islam ke majlis-majlis rasmi jabatan kerajaan, perkahwinan dan juga majlis keagamaan. Pelajar-pelajar sekolah agama turut memakainya ke kelas. Jualan songkok biasanya melonjak tinggi sebelum tibanya Hari Raya. Para pelanggan berbangsa Melayu akan mula membanjiri kedai-kedai di sepanjang Jalan Tuanku Abdul Rahman dan Wisma Yakin untuk mendapatkan songkok terbaik untuk dipadankan dengan baju Melayu mereka. Meskipun kebanyakan kedai memperoleh bekalan songkok daripada kilang-kilang komersial, pekedai yang bijak lebih gemar membuat tempahan daripada artisan songkok seperti Yusrif Udin Pakih. Lebih dikenali sebagai Abang Is, Yusrif berasal dari Bukit Tinggi iaitu sebuah daerah di Sumatera yang cukup sinonim dengan industri pembuatan songkok. Abang Is sebenarnya memiliki latar belakang yang cukup menarik. Pada asalnya, dia yang berhijrah ke Malaysia pada pertengahan 1980-an merupakan seorang tukang jahit untuk pakaian lelaki. Ketika berada di Kuala Lumpur, dia telah menyaksikan pembuatan songkok oleh abang dan sahabat handainya. “Saya nampak potensi industri ini. Dengan kemahiran sedia ada, saya yakin tidak susah untuk saya menguasai teknik menjahit songkok,” katanya. Setelah menguasai teknik pembuatan songkok menerusi pemerhatian, dia mula menjaja produknya di sebuah pasar malam di Kuala Lumpur. Pujian

yang diterima tentang kehalusan seni jahitannya yang kemas mula tersebar dengan pantas. Tidak lama kemudian, para peruncit utama dari Wisma Yakin mula membuat tempahan yang banyak darinya. Akan tetapi, sejak beberapa tahun yang lalu, tumpuannya mula beralih kepada tempahan peribadi berikutan faktor usianya yang kian meningkat. Lagipun, niat untuk memperlahankan langkah perniagaannya juga bersebab memandangkan keempat-empat anak lelakinya sudah dewasa. Dikelilingi longgokan kain baldu, satin dan akhbar-akhbar lama, Abang Is banyak menghabiskan masa bekerja dengan mesin jahit di bengkel kayunya di Kampung Nakhoda. Rangka pada bahagian dalam songkok perlu diperkukuhkan dengan kadbod serta akhbar lama dan barangkali industri ini adalah yang terawal mempraktikkan amalan kitar semula.

Walaupun turut menjual songkok sedia pakai, sebilangan besar perniagaan Abang Is terdiri daripada tempahan khas. Barisan kotak-kotak kadbod yang disusun rapi di rak almari kaca di sekelilingnya mengandungi songkok-songkok yang telah dilabelkan dengan nombor berganda sebagai tanda diameter kepala si pemakainya. Rangka songkok yang telah siap memudahkan setiap songkok untuk disiapkan dalam masa 30 minit sahaja. Bentuk asas songkok dikekalkan sejak berabad lalu. Pada asasnya, songkok terdiri daripada dua jenis iaitu songkok rata dan songkok Gunung. Juga dikenali sebagai Songkok Sukarno, songkok rata ini dinamakan sempena bekas presiden Indonesia. Songkok Gunung pula beralur di tengah dengan kedua-dua sisinya timbul dan menonjol. Namun, pembuatan songkok boleh diubah. Selain plastik biasa, Abang Is gemar menggunakan kain pada bahagian lingkaran bawah songkok agar si pemakai tidak dibasahi peluh. Atas permintaan pelanggannya, dia turut menebuk lubang kecil pada permukaan atas songkok bagi mengalakkan aliran udara yang baik. Sebuah karya songkok yang baik

terletak pada kehalusan seni jahitannya. Usaha menyambung bahagian bujur di bahagian atas dengan lingkaran tepi songkok sememangnya mencabar. Keduadua bahagian ini perlu dipadankan dan dijahit dengan tepat dan sempurna menggunakan mesin jahit agar hasilnya lebih kemas dan rapi. Hanya dengan cara ini, fabrik baldu untuk bahagian atas boleh diterbalikkan, ditegang dan dijahit pada rangka menggunakan jahitan tangan.

Dia masih menyulam lapisan dalam songkoknya dengan kemas walaupun bahagian ini tidak kelihatan melainkan songkok diterbalikkan. Proses membuat songkok tidak berakhir di situ. Sebelum songkok diserahkan kepada pemiliknya, Abang Is akan mengosok permukaan kain baldu agar kilauan songkok lebih menyerlah. “Songkok adalah lambang tradisi. Kalau nak pakai, biarlah sepadan dengan martabatnya,” kata Abang Is.

Well-made songkoks for the festival of Eid If there’s ever a national vote for the most iconic Malaysian accessory, the songkok would win hands down. The country’s first prime minister, Tunku Abdul Rahman, famously wore his high-crowned and at a slanted angle. The tall songkok was also synonymous with legendary actor P. Ramlee. In the 1980s, the late singing sensation Sudirman sported flamboyant ones. Believed by some to have been introduced centuries ago by Arabic missionaries to the Malay archipelago – though this is disputed by others –the songkok is worn by Muslim men and boys for wedding feasts, government functions and religious celebrations. Students from religious schools also wear songkoks when they attend classes. Songkok sales typically peak before the Eid festival when the Muslim menfolk flock to retail shops in Wisma Yakin and along Jalan Tuanku Abdul Rahman in Kuala Lumpur in search of the perfect headgear to go with their baju Melayu (traditional Malay costume). Though many retailers source from commercial factories, the more discerning prefer to get theirs from bespoke artisans like Yusrif bin Udin Pakih. Better known as Abang Is, he hails from Bukit Tinggi, a district in Sumatera synonymous with songkokmaking. Abang Is’ history deviates a little though: he originally trained as a tailor of men’s clothes. Then when he migrated to

Malaysia in the mid-1980s, he saw that his brother and his friends in Kuala Lumpur were making songkok. “I saw a promising industry and thought my tailoring skills would help me to pick up the craft.” Learning through observation, he began peddling songkoks in a night market in Kuala Lumpur and word quickly spread of his neat threadwork and smooth finishing. Before long, major retailers in Wisma Yakin approached him with bulk orders. But with age catching up and his four sons grown up, in the last few years, he decided to take a step back and concentrate on personal commissions. On most days, he can be found behind his sewing machine at his wooden workshop in Kampung Nakhoda, surrounded by piles of velvet cloth, satin and old newspapers. Songkok is probably one of the earliest industries to practise recycling –the inner frame of a songkok is stiffened with newspapers and cardboard. The bulk of his business comes from made-to-measure orders but Abang Is also does ready-to-wear. The rows of cardboard boxes lining the glass display shelves around him conceal songkoks, all tagged by double-digit numbers that represent the diameter of the head. His practised hands can churn out one songkok in half an hour, provided the frame is prepared in advance. The general shape of the songkok

has stayed the same for the past century. Essentially, there are two types of the songkok: songkok rata (flat top), also known as Songkok Sukarno after the former Indonesian president, and songkok gunung, which slopes into a groove in the middle while jutting upwards at the sides. A songkok can have improvisations. Instead of the standard plastic, Abang Is likes to use cloth for the lower band of the songkok’s rim so that the wearer does not feel too sweaty. At his customer’s behest, he can also drill small holes at the top of the songkok to let air in. The hallmark of a well-made songkok lies in the subtle details. Joining the oval top to the surrounding rim is tricky: the two must be fitted perfectly and sewn carefully on a machine so that the final product looks and feels smooth and seamless. Only then can the velvet fabric for the top be slipped over like a shirt, stretched taut and stitched to the frame by hand. In a market flooded by massproduced songkoks with crude needlework and short cuts, Abang Is is the rare bespoke maker who embroiders the inner lining with threadwork, even though this part of a songkok is not visible unless you turn it over. The work doesn’t end there. Before a songkok is passed to the hands of its new owner, Abang Is gives the velvet exterior a good brush to make it shine. “When you’re wearing tradition, you want to accord it dignity,” says Abang Is.

MARVEL’S NEW AGE Director Joss Whedon’s Avengers: Age Of Ultron marks a new phase in the Marvel Cinematic Universe Kicking off the summer blockbuster season with a hulk smash, Marvel Studios’ flagship franchise returns for a second outing with Avengers: Age Of Ultron, which sees Iron Man, Hulk, Thor, Captain America, Black Widow and Hawkeye team up again for another round of spectacular, sceneryswallowing action. This time, the catalyst is provided by franchise newcomers Scarlet Witch (Elizabeth Olsen) and her speedy twin brother Quicksilver (Aaron Taylor-Johnson), who take part in an attack on the Avengers. In response, Tony

Stark attempts to build a global defence artificial intelligence, but what emerges is a sentient system obsessed with cleansing Earth of all humanity. In 2012, Joss Whedon delivered the third highest grossing movie ever with The Avengers. Three years later, expectations are even higher for the sequel. So, how could Whedon improve on the original? His answer was to go bigger, much bigger. The scale of Age Of Ultron is enormous: more characters, more locations, more action

and even more seeds to sow for future Marvel plotlines. But making a film of such proportions comes with a price. The pressure and stress of living up to the first film’s success took its toll on the director. “I wanted this film to be better than the first one,” he stated. “I wanted to spend more time just really working every aspect of it, because why go again if you’re not doing something new?” The next chapter in the Avengers franchise will be the two-part Infinity War, penciled for releases in 2018 and 2019. With Ant-Man, Captain America: Civil War, Doctor Strange, Guardians Of The Galaxy 2, Thor: Ragnarok, and The Spectacular Spider-Man all due between now and then, the Marvel Universe is about to go supernova, causing Whedon to gracefully step aside: “That many balls in the air, it’s only going to get bigger with Infinity War. I’m not going to give it what I would need to, it’s a young man’s game.” And so, the mantle is passed to Captain America: The Winter Soldier directors Joe and Anthony Russo to tie everything into what should be Marvel’s ultimate showdown. Until then, Whedon can finally sit back, job done, and watch it all unfold.

AGAINST THE GRAIN Star of new thriller Insurgent, Shailene Woodley, is far from your typical young Hollywood star…

After the success of young adult sci-fi actioner, Divergent, the second part in the popular novel-based trilogy followed this summer; titled Insurgent. Set just three days after the events in the first instalment, the film continues the story of Tris Prior, who is now on the run in a post-apocalyptic dystopian Chicago after being exposed as a Divergent: a person who doesn’t fit into any of the government’s divisive factions.

ODE TO NEW YORK Adam Sandler’s latest comedy, The Cobbler, sees the star play a shoe repairman who discovers he can magically assume the identity of his clients when he slips on their footwear. However, the movie is more than a slapstick tale of swapped identities; it also tells of a story of the changing face of one of the world’s most beloved cities: New York. A city famous for its mix of cultures and local communities, New York

has fast become a gentrified playground for the rich and privileged. The movie depicts greedy real estate developers looking to tear down old buildings and replace them with shiny new condos. But, below all the penthouse suites still lies a city rich with people like Sandler’s humble cobbler, Max Simkin, who would rather preserve New York’s heritage than destroy it for profit.

Shailene Woodley, star of The Descendants and A Fault In Our Stars, plays Tris, and much like her onscreen heroine, Woodley has a distinct uniqueness about her. The 23-year-old isn’t your typical pampered Hollywood star; she is a refreshingly open character with unexpected eccentricities. In interviews and chat show appearances, Woodley often talks about her passion for organic eating, making her own medicine, and owning as few belongings as possible. In an interview on Jimmy Kimmel Live, Woodley famously admitted to owning very little: “Everything I own and use are in a carry-on suitcase”. She also would rather crash on a friend’s sofa or rent a stranger’s apartment than stay at a luxury hotel. These quirks may seem contrived, but the more Woodley candidly talks the more we realise she is a genuine non-conformist. She talks of brewing her own herbal remedies for ailments and hasn’t taken conventional medicine since she was a child. She also brushes her teeth with her own clay concoction, makes her own deodorant, and gathers spring water once a month from a mountain range near her California home. With the final parts of the Divergent series due in the next two years, and a leading role in Oliver Stone’s upcoming political thriller, Snowden –alongside Joseph Gordon-Levitt and Nicolas Cage – Shailene Woodley is set to become one of Hollywood’s brightest stars. Let’s hope her unique habits and quirky candor continue to shine through.

How have you enjoyed your time in Malaysia during your Asia Tour? Jean Paul: It’s our first time here and it’s been great so far. We got lucky with the weather and the food is excellent... and spicy! What were some of the highlights of your Asia Tour? Jean Paul: Japan. It’s like a second home to us, we’ve been there so many times. The shows are always crazy and the food is also great. Coming from New Jersey, how have you found the crowds in Asia differ from those in the States? Sam: It’s all very similar. Everyone’s enjoying the music and having a good time... just getting silly. What do you miss most about New Jersey when you travel? Jean Paul: Friends and family, my dog, my bed. Sam: The consistency of having a shower with a solid pressure!

What was it like playing at last year’s TomorrowWorld? Jean Paul: It was one of the best shows, it was amazing. There’s so much energy and the visuals are so engaging. Which festivals do you hope to play at in the future? Sam: We just heard that TomorrowWorld Brazil was amazing. Some DJs are now saying it was the best festival they’ve ever played, so that would be cool. And we’ve heard Zouk Out over here is pretty good. Tattoos are quite heavily featured in the video to your latest hit, Surrender. Do you guys have many tattoos of your own? Jean Paul: Yeah I’ve got some. I usually get them if they mean something to you, like I’ve got an important phrase to me; I’ve got a matching one with a friend; a music oriented one, there’s one I want to get for my grandpa, there’s so much.

You’re also well known for your remix output. How do you go about choosing which artist’s tracks you want to remix? Sam: It’s just songs, vocals and lyrics that we really like. We play the remixes live so we look out for something that we can incorporate into our own set. Who are you collaborating with next? Jean Paul: We’ve actually got some stuff with Christina Perri coming out; some stuff with B.o.B, Busta Rhymes, lots of stuff. Lastly, how do spend time on your tour flights? Jean Paul: I sleep, I’m out like a light Sam: I try to work on some music and mixes, and catch up on some TV shows. I really like Breaking Bad, Walking Dead and I just started on Game Of Thrones.

Accessing your screen in Golden Club Class

Laptop power point

Press to release the handset.

Press to stow the handset.

Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.

A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.
