FOIE GRAS RETURNS TO CALIFORNIA January saw foie gras back on Californian menus after a federal judge overturned a two-year stateimposed ban. The return of the controversial delicacy was hailed by establishments and chefs such as La Toque’s Ken Frank, who led the charge against the ban. Frank’s restaurant, together with dozens of others like Goose & Gander and Hapa Ramen, were among the first outlets to welcome back foie gras, serving it pan-fried, in ice-cream sandwiches, and as ramen toppings.

CELEBRATING LATIN AMERICA

Art Dubai is one of the leading annual art fairs in the Middle East. This year’s extensive programme includes film, sound, large-scale installations and a specially curated exhibition focusing on the Arab World’s relationship with Latin America. 1pm Hop back into a taxi to the French Concession and wander around the old tree-lined streets to see the impressive French and Belgian art deco architecture. Now full of bistros and patisseries, the area keeps the influences passed down from former residents.

et me get this out of the way. I had my suspicions about a non-Korean making an attempt at tteokbokki. A street food staple of Korea, rice cake simmered in spicy red pepper sauce is a deceptively simple dish that can be tricky to say the least. Chewy but prone to drying or overcooking, tteok, or Korean gnocchi made with rice, isn’t often used by foreign chefs for a good

reason. And the tongue-searing sauce? It takes a lot of faith in your diners not to spare the spices. I was at Underbelly (underbellyhouston.com), considered a shining example of Houston’s foodie evolution. Chef Chris Shepherd, a 2014 winner of a James Beard Foundation Award (nicknamed the 'Oscars of Food'), was sauntering from table to table in the barn-like 180-seat room lined with shelves of jarred pickles, bantering with diners and suggesting dishes. Shepherd marries seasonal local ingredients to cooking techniques from Houston’s many ethnic kitchens, from Thai to Vietnamese to Cajun. He goes through one whole cow (and many, many ducks, chickens and other animals) each week, making anything and everything from charcuterie (cured with the help of his in-house butcher) to short ribs served on a French onion soupinspired stew with sourdough dumplings. The ever-changing menu is a culinary map of Houston, traversing many continents’ traditions with creations like shrimp and spinach in a marsh of coconut rice, skirt steak lightened with vinaigrette and grilled sweet corn, and calamari emboldened with a coriander aioli sidekick. And there it was – tteokbokki, proudly

on the menu, but with a twist. Instead of the usual fish cake and vegetables accompanying the dish, Shepherd paired it with braised goat. I was both relieved and elated to taste Chef Shepherd’s interpretation, elevated with tender shreds of lean chevon. Isn’t that what great food is supposed to do? Execute something comforting very well, and take it to a new realm? And that’s exactly what’s happening in Houston’s food scene. Moving beyond the usual barbecue and steak fare – which Texas excels in – the Lone Star State’s city is reflecting its incredible diversity on its dining tables. This city of two million is America’s most ethnically diverse, surpassing New York City. In addition to the prominent Latino communities, various Asian, European and Middle Eastern ethnic groups have turned this metropolis into a U.N. model. On a Saturday morning, I found myself doing something I usually loathe: queue for food. In Houston’s alternativecool Montrose neighbourhood, Common Bond (wearecommonbond.com) has had hungry diners snaking out its door

since opening less than a year ago. What awaited was a glass case filled with tempting mounds of pastries, from croissants to brioches, éclairs to macarons – not to mention baskets brimming with rustic loaves of bread. Yes, as they say, everything in Texas really is bigger – even the croissants at Common Bond. A pain au chocolat, for instance, is as big as a cat’s head. But when I sat down and picked it off my plate, it weighed no more than a regular croissant a third its size. “If I were you, I’d put the knife away,” said a striking man in an apron, towering over me. “You don’t want to lose that shatter effect, that ephemeral texture you can only feel with your fingertips.” Who was this stranger waxing poetic about carbs? He turned out to be chefowner Roy Shvartzapel, who returned to the city of his youth after stints at culinary temples like elBulli and Pierre Hermé in Paris. Our chance encounter was perhaps the perfect example of why he outfitted the airy dining room with communal tables. “It’s rare that you meet strangers in a car-centric city like Houston,” said Shvartzapel, explaining that the queue for the pastry counter as well as the long, shared tables are meant to foster social interaction between strangers. So, unplanned, we got to talking about Houston’s changing culinary landscape over breakfast of goodies


 like kouign-amann, a crispy and fluffy cake from Bretagne. “Houston used to be all steaks and barbecue – and there’s nothing wrong with a good steakhouse,” Shvartzapel said. “But for a city this big, it really lacked other high-end options until two, three years ago, when chefs began opening their own restaurants inspired by their travels.” Shvartzapel’s menu reflects the Bayou City’s increasing global sensibility, combined with stylish yet approachable atmospheres. As we chatted, I enviously eyed the waiters bringing out savoury brunch dishes like fried hake courtbouillon and stuffed veal breast on grits. Not that I had anything to complain about. I had the showstopper of Kugelhopf, a German brioche studded with kirsch-soaked raisins and dunked in orange blossom syrup – better than any I had during my seven years living in Germany. Montrose, with its hundred-plus eateries, isn’t the only part of town having a foodie revival. Shopping fiends who find themselves near the luxe shops of Galleria should head to Caracol (caracol.net), the newest venture by chef Hugo Ortega, where coastal Mexican cuisine is at its best. Try the oysters baked in flavourpacked chipotle butter. In Houston Heights, a beloved destination for architecture lovers

and young creative types, Coltivare (coltivarehouston.com) is the latest addition to the neighbourhood’s eclectic culinary selections. With sophisticated Italian simplicity firmly grounded in the local soil (think heirloom squash from the restaurant’s adjacent garden, dusted with shaved fennel; fresh green gazpacho made with backyard tomatoes; and hearty pizzas topped with goat’s milk ricotta, grilled onions and local balsamic vinegar), the six-month-old Coltivare is an exercise in restrained opulence, letting the freshness of the ingredients shine. And a darling of nationwide food critics, The Pass & Provisions (passandprovisions.com) combines two restaurants in one. The casual Provisions dishes out bistro fare with twists, like torteloni topped with Southern fried chicken and mustard greens, and a club sandwich made with panko-coated sweetbreads and juicy tomatoes. The Pass, behind an unmarked black door inside Provisions, asks you to bank your faith in chefs Terrence Gallivan and Seth Siegel-Gardner’s expertise by simply listing ingredients without elaborating on


cooking techniques on its prix-fixe menus (for example foie gras/steam buns/nori). Or you can simply settle for a cocktail and a casual bite at the bar. On weekends and nights, once commuters ebbed to the suburbs, downtown Houston used to be no-man’s land. In the past two years, however, the historic Market Square Park area has come alive with outdoor eateries, smart bars and live-music venues. Settle for a local brew or a craft cocktail at lively OKRA Charity Saloon (friedokra. org), the brainchild of some of the city’s leading bar owners and restaurateurs. This bar is not only a place to see and be seen among young professionals, but also a karmic feel-good watering hole that donates all its proceeds to local charities. Perhaps this compact but growing wedge of downtown is the perfect symbol for Houston’s evolving gourmet scene, led by youthful energy, brimming with innovative ideas, and appreciated by Houstonians of all stripes.

he ancient citadel of Petra in Jordan thrives on drama. Her every move seems to be deliberate and designed to impress. Horsemen resembling cowboys outside what is now a historic theme park offered us steeds to ride to the entrance of a gorge. We chose to walk, passing excavations that served as teasers for the real McCoy ahead. We were engulfed by a narrow, 1.2-kilometre-long gorge, hemmed in by cliffs 80 metres high and no more than three metres wide in places. Natural light filtered into this winding passageway and exploded in colours both subtle and brilliant. We stopped to examine fossils of prehistoric animals embedded in the walls; the size of the bones suggested these were enormous creatures. Every bend presented us with new vistas: natural formations resembling elephants, fish and whatever our imagination fancied. Caverns yawned and jagged projections clawed at the strip of blue sky above us. And then, we beheld the grand curtainraiser, the masterstroke of Nabataean architects: the pillars of Al Khazneh or the Treasury

framed in the narrow opening at the end of the gorge loomed before us. The imposing monument with its Grecian pillars and sculpture-studded walls unravelled like a giant scroll rolled out in slow motion. Constructed to impress visitors as they entered the city, it accomplished its goal with spectacular effect. Located 262 kilometres south of the capital Amman, Petra unfurled like a finely crafted symphony; starting with a catchy opening movement and slowly building up to burst upon its audience with a rousing crescendo. Inside the hidden city, we were swept away by its ingenuity. For here was a selfcontained and thriving citadel, complete with palaces, residential quarters, a marketplace, tombs, places of worship, and even an amphitheatre that could seat 3,000 spectators. And all this was hewn out of the surrounding sandstone rock. In some places, impressions on the face of cliffs spoke of monuments that once stood there. No matter where we looked, there was a burst of colour, the artist none other than nature herself. With fine-tipped brushes, she traced the contours of the rugged land


 in brilliant hues. There were rainbow shades everywhere, on pillars, walls and even the ceilings of the excavations. Deposits of base elements like iron, magnesium and other minerals, seeping through layers of sandstone rock over millennia, painted them with startling shades that seemed almost unreal. Farther into the city, 800 rock-cut steps lead up to the strategically placed Al-Deir Monastery, which boasts a bird's-eye view of the sprawling citadel below. According to our guide, the monastery was first a temple dedicated to a deified Nabataean king and later converted into a church. There have been occasions when destinations that came highly recommended failed to match our expectations. However, Petra, a UNESCO World Heritage Site, one of the New Seven Wonders of the World, and Jordan’s most-visited tourist destination, dazzled us with the sheer audacity of its vision and scale. UNESCO even calls it "one of the most precious cultural properties of man's cultural heritage”. Later, we stopped by a souvenir stall and watched an artist work with different-coloured

Moving on, we found a table at a makeshift sidewalk café and sipped Turkish coffee, pondering the existence of this Nabataean city, which had once been forgotten for centuries. In 106 AD, Petra was conquered by the Romans who saw it as a strategic outpost to control the flow of commerce involving China, India, the Far East, Egypt, Syria, Greece, and Rome. However, a large earthquake in 363 AD destroyed much of the city and with the opening of alternative trade routes, Petra started to fall off the map. By the 4th century AD, it became a ghost city reclaimed by the desert. In fact, it was so destitute that only Bedouins knew of its existence. And it was with the help of the Bedouins that Swiss explorer and adventurer Johann Ludwig Burckhardt rediscovered the forgotten citadel in 1812. But he had to pose as an Arab to win the

confidence of the nomadic tribesmen and convince them to lead him to the city. Back in Europe, Burckhardt's discovery sparked the imagination of other explorers who trickled in and breathed new life into what had become a dead city. With their arrival, the Bedouin tribesmen realised there was profit in providing safe passage and protection, much like their ancestors who built Petra. Today, there are over 60 hotels, a number of restaurants, food stalls and souvenir shops outside the city, playing host to caravans of tourists arriving to see one of the world’s top archaeological sites. On the morning we drove to our destination, our guide pre-empted any sense of disappointment by pointing out that a settlement we saw was not the ancient city but a modern one built around it for tourists. “Petra lies over there,” he said, pointing to what looked like a giant lump of crumpled rock. Hours later, it was late evening and we were still inside the fabled city excavated into the sandstone outcrop. Petra had started to glow with a mysterious aura as it was washed by the warm glow of the setting sun. Along with the other visitors, we walked through the narrow gorge toward the exit as Petra became emptied of tourists and was once more reclaimed by the ghosts of the past.

O

ut of a moonlit cobbled alley veers a Tripeiro, intent on bashing the nearest stranger on the head with a large hammer. Then another. And another. Fortunately, the hammer is plastic and all of them are smiling, laughing and soon shaking hands. This is Porto, the ancient city where mysterious, mischievous traditions and the modern world are never far apart. Portugal’s second largest hub’s historic streets echo with the ghosts of long gone fishermen and giggling students on nights like these, during the Festa de São João (St John's Festival), when the entire city and its residents (the Tripeiros) come together in a riotously fun fiesta of plastic hammer-wielding revelry. Porto is, of course, a city synonymous with its eponymous fortified wine, but there is far more to this spectacular settlement on the banks of the Douro River, which rises steeply on twin escarpments on either bank, than the port it is known for. Indeed, Porto is not content to play second fiddle any longer to the Portuguese capital of Lisbon, developing a flourishing cultural and burgeoning gastronomic scene that is rooted very much in the drama and history of its old core. The history of Porto, also known as Oporto, stretches back beyond Roman times, when it emerged as a major settlement on the Iberian Peninsula known in Latin as Portus Cale. It is easy to see what attracted the first settlers, with a lifeblood river running through and the ocean on hand too. Today, Porto is a bustling business city that is home to almost 1.5 million inhabitants, a metropolis whose place amongst the firmament of major European cities was symbolically crowned when it celebrated the new millennium by being named European Capital of Culture in 2001.

The city’s eclectic and rich history is most intriguingly on display in the Ribeira Quarter. Porto’s entire old core was recognised by UNESCO on its coveted World Heritage list back in 1996. Once, the Ribeira waterfront was alive with sailors from all over the world as ships disgorged their exotic cargos from former Portuguese colonies, including Goa and Macau onto the crowded quayside. Today, many of the grand architectural legacies of those days still stand, but in the place of sailors is an increasing amount of tourists, who flock to the Cais da Ribeira thoroughfare and towards Praca da Ribeira, the square at the area’s heart. After sightseeing, there is the temptation of a flurry of waterfront cafés, bars and restaurants. From the Ribeira, you can see just some of the phalanx of bridges that lend Porto the title of ‘The City of Bridges’. They range from the ultra-modern to the elegant wrought iron Ponte Maria Pia, which was built in the late 19th century by Gustave Eiffel, better known as the architect who conjured up the Eiffel Tower. Like many things in Porto, this bridge took the place of something even older, in this case the Ponte das Barcas pontoon, which opened in 1806. Only three short years later, this original city bridge was the site of a great tragedy when it collapsed under the weight of people fleeing advancing French troops. Thousands were killed. The city’s bridges separate Porto proper from Vila Nova de Gaia. The latter is home to the port houses that first brought the city global fame. They illuminate not only the colourful history of fortified wines but also the tales of the families who built their fortunes in the industry. teenage immigrant. He went on to found a local port dynasty. Meanwhile, the fresh new face of Porto is on show at the strikingly modern Casa da Música (casadamusica.com/en), which opened as part of the European Capital of Culture year in 2001. This impressive state-ofthe-art cultural venue offers an ever-changing array of mainly musical events, from pop concerts to classical recitals. Its avant-garde architecture is an attraction in itself at a venue that showcases the best of contemporary Porto. The Serralves Museum (serralves.pt/ en), opened as part of the Capital of Culture renaissance, is a creative collage of everchanging art exhibitions. Porto also boasts museums dedicated to such eclectic subjects as trams, the military, photography, and, of course, port. The most beguiling way to appreciate how the old and new sides of this fascinating city so charmingly blend together is on a river cruise. Regular cruises leave the city centre, offering a unique perspective as the grand old architectural dames of the Ribeira rise around in an old-world embrace, while flashes of gleaming modern glass and steel reflect the progressive business city that Porto has become. Restaurants have also always played a key role in Porto. The Tripeiros, or ‘tripe eaters’, as citizens of the city have been nicknamed, are renowned for their love of hearty meat-based cuisine. You can still savour these dishes in the Ribeira, but seafood is playing a key role in a new wave of gastronomic options. In the Ribeira, Dom Tonho (dtonho.com) serves an array of meat and fish dishes, such as stews and the aforementioned tripe, which comes with smoked sausage and beans. They also offer tapas-style hors d’oeuvres. All dishes come blessed with a river view. Down towards

the ocean, Toupeirinho (toupeirinho.pt) is the sort of friendly boat-fresh seafood restaurant that everyone would like next door, but which taxi drivers sometimes struggle to find. Wherever you are in Porto, you are never far from the Douro. Those with more than a few days in the city can head upriver to discover a very different world in Porto’s hinterland. Soon the city slips away as you ease into a land of snaking rivers, rolling hills and bountiful fields. There are numerous options for exploring the Douro Valley, including all manner of cruises, from day trips to live-aboard multi-day adventures. There is a train line that snakes spectacularly along the river banks. Those short on time wanting to experience the Douro Valley in style can even arrange for a scenic helicopter flight. Back in Porto, the scene is set for another of the city’s dramatic big nights. This time it is not to celebrate a saint, but the UEFA Champions League. FC Porto – the city’s beloved football team – is playing to a full house at the Estádio do Dragão. Fittingly for the city, this is a club rooted in tradition, founded in 1893 and having won more titles than any other team in Portugal. On nights like these, skilled old hands from the riverside port houses and bright young executives from the city’s collage of new industries rub shoulders with each other and their families, for Porto is a city where the present is always rooted in tradition, and a sense of civic pride stands proudly paramount on the escarpments high above the Douro.

aiwan is fast gaining a reputation as a top spot for just about anything. People are flocking here to shop, eat, and drink, and then do it all over again. The gastronomic scene is reflective of the 23 million people who call Taiwan home. There’s plenty of food; you can practically find everything you want and more. In bustling Taipei, casual eateries, humming street stalls, retro dessert bars and luxe restaurants are open round the clock to cater to a population that’s frenziedly trying to sample it all. Yet just a stone’s throw away, you’ll find pockets of serenity where indigenous chefs serve their freshest catch alongside vegetables plucked from the land. Taiwan is a place of continuous transformation. Chefs, restaurateurs, stall vendors, and even diners are all chopping and changing the very definition of Taiwanese cuisine.

make themselves heard. “Great dumplings here,” one sings. “I make the best bubble tea in Taiwan,” hollers a lady as she accidentally spills tea all over herself. Night markets have been around in Taiwan since the 1950s, but they were much smaller back then. Today, you can find just about anything at the markets. Food takes centre stage, for good reason: Taiwan has some of the best street eats in the world. Lurou fan (fatty pork mince stewed in soy sauce, served atop steamed rice) is one of the most renowned dishes, oyster omelette is a sticky and tasty affair, dumplings and savoury buns are sold on every street corner, and noodle soup is slurped everywhere. Although beef is the standard, try something a little different. For goose noodle soup, head to Ya Rou Bian (No. 98-2 Yi Section, Zhonghua Road) in the Wanhua District of Taipei and you’ll get chunks of tender goose meat in broth that’s jam-packed with fresh bean sprouts.

Slurp, chomp and crunch alongside laughing locals and get lost in the vibe of Taiwan. With over 300 night markets peppered around the island, visiting one (or a few) should be on everyone’s itinerary. Shilin Night Market in the Shilin District of Taipei is legendary, but often, little markets in sleepy towns offer the most unforgettable experiences. If sitting down is preferable, there are plenty of places where you can sample Taiwan’s best quick eats in a more relaxed environment. One of the world’s most famous dumpling chains, Din Tai Fung (dintaifung.com.tw), has nine locations (and plenty more around the world). Here, chefs meticulously ration each morsel of filling and pastry and dexterously craft dumplings quicker than customers can guzzle them down. Formosa Chang (fmsc.com.tw) is another chain worth visiting. The former solo food stall is now a Taiwanese conglomerate, with 29 restaurants nationwide (and four in Japan). Try the lurou fan (locals rave about it) or braised chicken with rice. It’s quick, easy and tasty.

INDIGENOUS FLAVOURS

The food culture of Taiwan’s aborigines is captured in the phrase ‘living off the mountains and seas’ and even today, indigenous chefs often double up as fisherman and foragers. Because of this, menus are a rarity and whatever is fresh is what guests will be served. Of the recognised tribes in Taiwan, the Ami tribe is the biggest. on Taiwan’s eastern coast in Hualien County, diners can sample Ami tribe food and stay in the accommodation. Chef Chan Lah cooks wearing only swimming shorts and laughs loudly. He’s had no formal training (he learned by watching his mother) and wakes early each morning to catch the fish he’ll be cooking that day. The dishes arrive looking like artwork. The plant stalks that Chan Lah picked a few hours earlier are capped with cabbage slivers and delicate carrot slices. The seafood platter showcases just how good Taiwan’s seafood is, while rice (a Taiwanese staple) comes wrapped in bamboo tubes. Not far from the entrance to the famous Taroko National Park is Dageeli Tribe Restaurant (dageeli.ehosting.com. tw), a restaurant run by the Guo family, who belong to the Truku tribe. Again there is no menu, and like at Pakelang Boat House, all dishes arrive stunningly presented. A plant stalk and leaf salad is generously crowned with a local berrybased sticky sauce, local peas and carrots are mixed into a citrus-based noodle dish,

and even braised chicken is presented on a gigantic forest leaf that’s placed on a wooden board. The ornate woodwork is a big part of the restaurant space, which also doubles as an art shop. Taiwanese aborigines are multi-skilled, and the sculptures and artwork dispersed around the area point to their multitude of talents. The same goes for Tsou tribe aborigines A-Jiang and his wife, who run Home 23 Café (ajong.com.tw), an accommodation and restaurant space located in the Alishan National Scenic Area in Chiayi County. The first thing you notice upon arrival is the charming wooden and stone huts that A-Jiang built himself over 19 years using materials from the land. His idea was to depict a small traditional Tsou village so that guests can have an authentic experience. Like the other indigenous cooks, A-Jiang and his wife comb the fields for vegetables and herbs each morning and customers are fed whatever is fresh. With lodging available, it’s a wonderful way to stay awhile and really get a feel for indigenous food – and life.

TAIPEI’S TASTY TRANSFORMATION

Many of Taipei’s fine diners are headed by chefs who are strong advocates for Taipei’s gastronomy boom. The head chef at Le Palais restaurant (palaisdechinehotel. com), Chen Weiqiang, ended up working in hospitality after starting out as a kitchen apprentice at 12 years old. Today, his parents still inspire him to cook some of the best food in Taipei; he explains that he serves his guests what he would serve his parents. One of Chen’s favourite dishes is the marbled meat, which is streaky pork cut into millimetre-thin slices and formed into a tower, with preserved vegetables placed in the centre and the dish slowly cooked in a clove, star anise, cassia, ginger and scallion gravy. At YEN Chinese Restaurant (yentaipei. com) at W Taipei, dim sum chef Dicky Wu recently joined executive chef Ken Wu to offer delicacies from mushroom dumplings to delicious fried turnip rolls. A collection of intricate lanterns dangles from the high ceiling and glazed glass exterior walls run the perimetre of the room, showcasing spectacular views of the iconic architecture of the Xinyi district.

If you are around the KLCC area, you can check out this ikan bakar stall in the Dato Keramat wet market, easily reached by LRT. Mat Teh Ikan Bakar does a smoking-hot trade, with dozens of banana leaf-wrapped fish lining the grill during peak hours. The cuts of fish are large enough to share, and each serving comes with a piquant sambal (a spicy condiment), soup, rice and a generous helping of ulam (raw vegetable salad). To complete the meal, order a refreshing mango juice to beat the heat. Best to go before the lunch crowd descends on the place.

IN CHINATOWN, KL

Hidden behind rows of stalls is this no-name set-up that has been serving Portuguese-style grilled fish for over two decades. Your landmark to finding it is Hong Leong Bank. Ikan bakar fans should beat a path to this pavement stall for its hot and spicy fish, drenched in homemade chilli sauce and cooked wrapped in aluminium foil over a charcoal fire, a rarity these days. Don’t worry if you can’t take the heat, as they have non-spicy options too. If that’s not enough to sate your appetite, the neighbouring stall does a particularly flavourful Hokkien mee, or thick yellow noodles wokfried in dark soy sauce with meat and vegetables.

PAK DIN IKAN BAKAR, KL

Operating out of a tiny food court just beyond Lake Gardens, this family-run business takes its fish seriously. So much so that Pak Din lets the fish do all the talking, that is sans marinade, sauce or even banana leaf, but simply seasoned with salt, pepper and a pinch of turmeric. His acute sense of timing, honed by years of grilling, results in fish with sweet, juicy flesh encased in lightly charred skin. Also try the Malay dishes here; we recommend the dry chicken curry.

Situated close to the former national palace is a trio of stalls specialising in grilled fish and seafood. All three have their merits but stall No. 3 does the briskest trade of them all, the freshness and size of its offerings a definite attraction for the hungry lunch crowd. At any time, an array of catfish, stingray, siakap and giant-sized squid is being cooked on banana leaves with lashings of aromatic chilli marinade to spice things up. What we love especially is the spicy dip. A drop of the stuff is enough to bring tears to the eyes.

SEAFOOD VILLAGE, PORTUGUESE SETTLEMENT, MELAKA

Like their European ancestors, the PortugueseEurasians in the state of Melaka have a tradition of grilled fish, albeit with a whole lot more chillies and spices, thanks to their Malay heritage. The fish is wrapped in aluminium foil together with an aromatic chilli paste, then cooked over a grill. Watch as the foil packets puff up into shiny orbs. For variety, the Seafood Village at the Portuguese Settlement in Melaka has multiple stalls selling reasonably priced offerings such as grilled fish, steamed clams and fried squid. Some stalls are open for lunch, but most only run for dinner.

UMBAI, MELAKA

Umbai in Melaka is a hotspot for ikan bakar, with two food courts to whet your appetite. The older Medan Ikan Bakar has a clutch of stalls, but Ikan Bakar Parameswara is the most popular for its varied selection and perfectly grilled seafood. Choose your fish and have it prepared as you like. Not far off, Perkampungan Ikan Bakar Terapung is a brand-new complex situated over the Straits of Melaka, with gorgeous sea views. Come as the sun sets, for that’s when most stalls start operations, which go on well into the night.

I

have to make a choice. With limited resources at hand, I must decide whether I want to be a knight or a thief. I settle for being a knight and place my bright red wooden piece, adorably called a ‘meeple’, on the tile. Subsequently, in a few strategic (and lucky!) moves, I score by completing a city with an odd amoeba shape. Satisfied, I take a sip of my iced lemon tea and a bite of my Oreo cheesecake. After I am done landscaping in Carcassonne, the board game named after a medieval town in the South of France, I turn my attention to fighting disease with another game, Pandemic. Together with friends, I’m spending an afternoon at Meeples, a board game café in Subang Jaya, playing settlers and disease-control specialists. We are not alone; a neighbouring group of college students are equally engrossed in their game of Chinatown, occasionally erupting in cheers or groans. Opened by Kong Log Cheng and Yew Jing Jing, Meeples (meeples.com.my) offers an exhaustive list of board games to go with drinks and cake. It calls itself a European-style board game café. The games are called German-style board games for their immense popularity in Germany, and have rules that differ from classic tabletop games. Generally simple to pick up, these games have shorter playing times and usually keep all the players in the game until the end.

In contrast to classic games that involve eliminating your opponents, games like Ticket to Ride and Pandemic rely on cooperation and strategy. “Traditionally, we have games like Monopoly and Snakes and Ladders, but once you’ve been exposed to Europeanstyle board games, it’s a whole new level of gaming. These games are a lot about engaging and interaction between the players. The focus of many of the games is on building and history, making it suitable for everyone from kids to grandparents,” explains Kong. Kong and Yew learnt about these board games on a visit to Melbourne, but it wasn’t until they were back in Malaysia

that they picked up a game. After several nights of playing The Settlers of Catan in a neighbourhood café until the wee hours of the morning, they were inspired to share their joy. Their expectations when they opened Meeples in 2010 were modest: To expose Malaysians to different board games and to provide an alternative social activity. “When we started, we wanted to just be a café where people can come and play the games. We have since expanded into sales and distribution, and supply the games nationally and regionally,” says

Kong. “We have avid gamers who are also collectors, and they would come by to buy new games every month.” Meeples keeps up-to-date on the latest releases and bestsellers, which are available for order online or to purchase at the café, with over 400 titles and more added on a weekly basis. Gamers pay an hourly rate; members pay a discounted fee. On one recent week, Ticket To Ride’s 10th Anniversary Edition was available for free play as the game of the week. It is said that the idea for these concept cafés came from South Korea, which at its peak had hundreds of such cafés in Seoul. The trend is travelling to the rest of the world. In Toronto, Snakes and Lattes has opened in North America, while London welcomed Draughts in Hackney last September. Thirsty Meeples in Oxford boasts 1,700 games, good coffee and craft beer. The Border City Café and Board Games (facebook.com/ TheBorderCity) in Sunway Giza, Selangor, opened three years ago, occupying the first floor of a bright corner shop lot. “We see ourselves

as a café with board games,” says Val Kueh, who runs the cheery café with Lily Ling. On the menu are open sandwiches, pastas, burgers and cakes, including a particularly tasty grilled chicken sandwich with homemade pesto. It is not uncommon for customers to take a roll of a dice while tucking into pasta carbonara or a waffle topped with New Zealand ice cream. At these cafés, customers pay an hourly fee to play any of the titles; food and drinks cost extra. Weekday nights and weekends can get busy. Although a large percentage of the clientele are college students and young adults, the appeal of board games is wide-ranging. Grandparents often come with their grandkids in tow, as it is simple to show up without having ever grasped the intricacies of Risk. The cafés have dedicated staff to help customers pick out a suitable game and to go through the rules with them. You would need the help, as there can be bewildering choices for the newbie. The board game industry is growing with thousands of new releases a year amid increasing sales. Ever since Klaus Teuber’s The Settlers of Catan achieved worldwide success, selling 18 million copies since its release in 1995, popularity ratings for board games have had a healthy boost. In recent years, the French-designed Dixit, which uses gorgeous illustrated cards and inventive story-telling, won the prestigious Spiel des Jahres award and gained international appeal. Luckily, these are just some of the games available at your neighbourhood board game café. Kueh himself is enjoying a new game, Dead of Winter, about a colony of survivors struggling to stay alive in a hostile world. “The storytelling aspect of it makes the game a lot more fun and sociable,” he says. “We enjoy board games ourselves and want to share them with others. People might not know of the games, but we are here to help them understand and have fun with them.” So whatever the outcome of a game, if it brings people together happily, then it is a winning formula for all.

arangkali tiada yang tahu charpoy telah wujud lebih awal daripada mana-mana perabot pelbagai fungsi hari ini. Di India, charpoy adalah perabot penting. Boleh dijumpai di kebanyakan rumah keluarga Punjabi, perabot ini asalnya dicantum menerusi anyaman tali guni sebelum popularitinya tersebar luas ke negara lain dengan populasi Punjabi yang besar. Mungkin ada warga tua di Malaysia yang masih ingat senario pengawal berketurunan Punjabi berehat di atas charpoy di kaki lima kedai. Keesokannya, charpoy akan diletakkan di atas kepala dan dipindahkan ke lokasi lain. Dahulu, charpoy berfungsi sebagai kerusi. Malah, tetamu juga dijemput untuk duduk di atasnya. Hari ini, perabot tersebut hadir dalam beraneka saiz dan fungsi seperti bangku, bangku kaki, meja kopi, tempat simpanan dan meja sisi katil. Ramai yang tidak sedar bahawa charpoy pada asalnya digunakan untuk meletak kitab agama masyarakat Sikh. Saya sendiri baru dapat tahu selepas bertemu Arvinder Singh, seorang pembuat charpoy generasi kedua di Ipoh. Sebenarnya perniagaan charpoy milik keluarganya itu diasaskan oleh bapanya, Sukhvir Singh yang juga seorang sami terkenal di sebuah kuil di Perak. Maka tidak hairanlah, perniagaan itu bukan bertitik tolak daripada tujuan komersial tetapi keagamaan. Menurut Arvinder, kebanyakan charpoy yang ada di Malaysia sebelum awal tahun 1990-an adalah produk buatan India. “Malangnya, keadaan cuaca panas dan lembap

Dia dibantu oleh isterinya, Rajwinder Kaur, seorang wanita Punjabi yang juga mahir menganyam. Penggunaan tali guni diganti dengan tali nilon yang lebih kukuh serta mudah diperoleh. Kayu keras Malaysia seperti merbau dan cengal pula diolah menjadi bahagian kaki untuk produk keluaran tempatan itu. Kini, dengan bantuan anaknya, Arvinder dan menantunya Manpreet, perusahaan keluarga tersebut beroperasi dari sebuah kedai lot tepi, di bandaraya lama Ipoh. Pelbagai peralatan tradisional masyarakat Punjabi seperti alat muzik, set pakaian dan kirpan juga boleh diperolehi. Pilihan charpoy yang ditawarkan turut bertambah. Terdapat juga charpoy kontemporari yang berwarna-warni dengan ukiran hiasan pada bahagian kakinya. Sebagai tarikan, sesetengah hotel berkonsep butik turut menawarkan katil charpoy. Bukan setakat istimewa, tidur di atas charpoy juga dikatakan dapat melegakan masalah sakit belakang. “Ruang

Biarpun menerima banyak permintaan dari negara luar seperti Kanada dan Australia, jumlah yang mampu dihasilkan adalah terhad iaitu maksimum enam buah manjaa (katil besar) dan 30 buah piri (meja kecil) sebulan. Proses penghasilan charpoy yang bagus agak memakan masa dan memerlukan kemahiran yang tinggi. Semuanya bermula dengan pemilihan kayu matang dengan teliti sebelum dicantumkan tanpa menggunakan paku atau skru. Bagi mendapatkan hasil terbaik, ketelitian perlu diberikan pada ketepatan dimensi dan sendi. Lapisan kemasan akan disapu bagi memperoleh kesan kilat sebelum proses seterusnya diambil alih oleh penganyam. The charpoy - the umbrella term for a family of woven four-legged furniture popular in Punjabi households - transcends its original function

Long before the expression ‘multi-functional furniture’ existed, there was the charpoy. Originally a four-legged wooden frame joined by a knotted jute mat, the charpoy started as essential furnishing in India, especially in Punjabi households, before catching on in nations with a vibrant Punjabi diaspora. Older Malaysians might have nostalgic memories of seeing a Punjabi night watchman lying on his charpoy on the corridor outside shop-fronts before carrying it off in the morning, balanced on his head. Once, the charpoy served as a communal chair that guests were invited to sit on, but today it assumes a variety of sizes and functions as benches, footstools, coffee tables, bedside tables and storage. Few know that the charpoy originally began as a table to lay the Sikh holy book, I learn from Arvinder Singh, a second-generation charpoy maker in Ipoh. He should know – his father Sukhvir Singh, the business founder, is a highly regarded priest in a Perak temple. The motivation behind the company’s beginnings is spiritual rather than commercial. “Until the early ‘90s, Malaysians mostly imported their charpoys from India. Unfortunately, the combined humidity and heat was unkind to the jute strings that made up the woven beds. With wear and tear, even the wooden frames rotted. It didn’t help that Malaysians had limited knowledge about repairing the charpoys,” explains Arvinder.

Dismayed by the sight of holy books on these dilapidated charpoys, Sukhvir started making them in a space allocated by the temple, with the help of his wife Rajwinder Kaur, a Punjab native who was a skilled weaver. He replaced the jute with nylon cords that were more durable and easy to source. For the wooden legs, he turned to Malaysian hardwoods merbau and cengal and made them locally. Now with Arvinder and his wife Manpreet helping out, the family business occupies a corner lot in Ipoh Old Town, where traditional implements of Punjabi culture such as musical instruments, trouser suits and kirpans (ceremonial daggers) are available as well. Over time, their charpoy offerings have expanded to include contemporary versions that feature multi-coloured strings and decorative carved legs. Some boutique hotels even offer charpoy beds. Aside from the novelty value, “sleeping on a charpoy helps to reduce backache, and the gaps in between the weaving translate into better ventilation,” explains Arvinder. Despite the constant stream of demand from as far as Canada and Australia, they can make only a limited number each month, no more than six manjaa (big beds) and 30 piri (small tables). Making a good charpoy is a skill-intensive, time-consuming process that begins with the careful selection of wellseasoned timbers, which are then joined together without any nails or screws. this, special attention is paid to the dimensions and joints. A coat of varnish is applied for a shiny finish before the frame is passed over to the weaver. What’s the trickiest part of the weaving process? Tying the life (main) knot correctly, says Rajwinder. Only then can the main weave be done and the tension strings added. The final process of tightening must be rigorous and repeated many times to ensure the woven top surface adds strength to the charpoy. “It’s not hard. You just need

practice.” As if to prove her point, each person takes a corner like a goalkeeper, armed with coils of nylon rope in hand, and starts knotting toward the centre of the frame. To my untrained eye, the process looks complex. But as beautiful patterns emerge from their synchronous movements, I realise why the charpoy is so beloved in Punjabi culture. It doesn’t just bond the people who use them, but also brings the families of makers closer together.

Gold standard More Oscar-winning movies on board this month… • Her (Best Original Screenplay, 2014) Life Of Pi Said to be ‘unfilmable’ by some, Ang Lee’s adaptation of Yann Martel’s international bestselling novel about a boy trapped on a lifeboat with only a Bengal tiger was a hit at the box office as well as with Academy members. In addition to grossing more than $600 million, it scooped four Oscars from 11 nominations. Lee won Best Director in addition to his collaborators picking up awards for Best Cinematography, Best Original Score and Best Visual Effects.

12 Years A Slave This harrowing true story of Solomon Northup, a free man abducted in New York and sold into slavery in the American South in 1841, won three Oscars. In addition to Best Picture and Best Adapted Screenplay, Lupita Nyong’o was awarded Best Supporting Actress for her portrayal of another real-life slave, Patsey. Director Steve McQueen stumbled across Northup’s remarkable tale while he was trying to write a fictional story with the same premise. ‘It was like reading Anne Frank’s diary for the first time,’ he said.

Dallas Buyers Club With its script stuck in ‘development hell’ for more than 15 years, Dallas Buyers Club tells the true story of homophobic Texan Ron Woodroof, who confronts his prejudices when he contracts the AIDS virus. Matthew McConaughey won Best Actor for his portrayal of Woodroof, while Jared Leto netted the Best Supporting Actor prize for his performance as Rayon, a fellow sufferer. Set in the 1980s and noted for the transformation of its two leads, the movie won its third award for Best Makeup and Hairstyling.

The Sound Of Music An undisputed classic from 1965, this musical drama set in wartime Austria was adapted from Richard Rodgers and Oscar Hammerstein’s hit 1959 Broadway production. Julie Andrews stars in an iconic role as freespirited nun Maria, who must help her new family escape capture. Incredibly, Andrews wasn’t rewarded with one of the movie’s five Oscars. Instead it won Academy Awards for Best Picture, Best Director, Best Sound, Best Editing and Best Score. Its now-famous soundtrack was nominated for a Grammy the same year.

Star Laws Behind epic space adventure Interstellar is an unlikely source of inspiration. Astrophysicist Kip Thorne pitched a sci-fi movie involving the science behind black holes back in 2009. Steven Spielberg was initially attached to direct, before being replaced by Christopher Nolan. Thorne stayed on as a consultant and an executive producer. ‘It has changed so much that it’s not recognizable as the same movie,’ says Thorne. ‘But nothing violates established physical laws.’

Hungry for more The final chapter of the all-conquering Hunger Games saga The movie adaptation of the first part of the last book in the Hunger Games trilogy, The Hunger Games: Mockingjay Part 1 furthers Katniss Evergreen’s journey from rebel teen to fully fledged revolutionary. As before, she must attempt to overcome the authoritarian Capitol regime. ‘I was excited about waking up in a whole new world. Her home is gone and she has to rebuild herself from nothing,’ says Jennifer Lawrence, who plays Katniss. ‘We pick up in District 13, a secret underground base,’ explains Liam Hemsworth, who plays Katniss’s onetime best friend, Gale. ‘They’re both adjusting to this weird life underground.’ ‘Katniss and Gale have a rich history we’ve never been able to explore,’

adds Lawrence. ‘It’s nice to go deeper into that.’ Also returning is Peeta, Katniss’s fellow survivor who is traumatised by his experiences in battle. ‘The story is really smart,’ says Josh Hutcherson, who plays Peeta. ‘People can relate to it and see correlations in what is happening in the world today.’ ‘It’s an important story about how powerful one voice can be,’ says Lawrence. ‘It is always easier to follow the person in front of you. Trail Finder Cheryl Strayed’s Wild memoir has become a biopic starring Reese Witherspoon. •T he story follows Strayed’s real-life 1,100 mile hike she took while battling to overcome a series of personal tragedies. •W itherspoon also produced the movie. She acquired the film rights to it and another international bestseller, Gone Girl, before either was published. •B ritish novelist and screenwriter Nick Hornby adapted it. ‘My two main aims were to reorganise it structurally and to use a different kind of voiceover,’ he says. Internet search A To Z shows that finding love isn’t easy in the information age... A new sitcom with dating at its heart, A To Z follows the trials of Andrew, a frustrated matchmaking website employee and Zelda, a lawyer with commitment issues. An unlikely match, they strive to make their relationship work in spite of technology, rather than because of it. ‘It’s a relationship comedy about the entire span of a relationship from beginning to end,’ says Ben Feldman, who plays Andrew. ‘Andrew wears his heart on his sleeve,’ he explains. ‘He’s the opposite of Zelda, who’s a little bit more cynical. It’s interesting going into something knowing to a degree it’ll end. It’s a really sweet, really nice, funny story.’ ‘I loved it from the moment I read it,’ says Cristin Milioti, who plays Zelda. ‘Zelda is heavily guarded but fun gets the best of her,’ she says, ‘I like the fact the story goes backward and forward in time and tries to show a relationship in full.’ This structure echoes the sitcom that gave accomplished stage actor Milioti her best-known TV role to date. She was eventually unveiled in a pivotal role in How I Met Your Mother, which ran for nine seasons. ‘I think their relationship is relatable because falling in love is very scary,’ she says of the dynamic between Andrew and Zelda. ‘It’s very beautiful and there’s nothing like it but all of a sudden you feel like you’ve got a lot to lose. I really like how it looks at it and presents it with such humour.’ A To Z is playing on board this month. See page 98 for details

Food for thought Documentary series Pure Japan takes us inside the world of sake sommeliers, celebrity chefs and local produce this month. Here’s our lowdown on food and drink in the Land of the Rising Sun: • Although popularly associated with Chinese cuisine, fortune cookies are a Japanese invention. The earliest documented image of someone making one dates back to 1878. The oldest cracker was unearthed in the 1990s outside a shrine in Kyoto.

• A term to denote alcoholic beverages in general in Japan, sake, as the rest of the world knows it, is a fermented rice drink that can be consumed hot or cold. There are approximately 1,600 producers of it in Japan alone.

• Tokyo restaurants have been awarded more Michelin stars than those in any other city in the world. Twelve of them have been awarded the top honour of three stars, beating Paris into second place.

Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.

A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.

Refuge

Humble hut stands as a tribute to courage and resilience

In 2010, pioneering Italian mountaineer Luca Vuerich died after being caught in an avalanche in Kranjska Gora in the Slovenian part of the Julian Alps, Vuerich’s main skiing and trekking destination. In 2011, Vuerich’s family commissioned architect Giovanni Pesamosca to design a shelter for climbers as a tribute to Vuerich’s life and contribution to the world of mountaineering. Located on the Ceria-Merlone trail, about 2,500 metres up the Foronon del Buinz mountain, the building’s parts were pre-fabricated on the ground, then flown to the location by helicopter. A team of 12, comprising professional builders, mountain rescue volunteers and Vuerich’s friends, constructed the hut in one day. The tent-shaped refuge, with roofs that ensure snow slides off the structure, sleeps up to eight people and is free to all who are able to make the trek. ec2.it/giovannipesamosca
