BEYOND REWARDS Malaysia Airlines’ frequent flyer programme, Enrich, has crafted its Enrich Luxe Retreat as a way of thanking passengers who have been most supportive of and loyal to the airline. “We are a five-star airline and this is part of our recognition to our most loyal customers,” said Dean Dacko, Senior Vice-President for Product and Marketing. The inaugural luxe retreat saw two couples being flown to Paris and treated to an exclusive programme of wining, dining and shopping. ROYAL TREAT First and Business Class passengers on board selected Malaysia Airlines flights to Europe, Australia, New Zealand and ASEAN countries are in for a treat, come mealtime. Until the end of the year, the menu selection comes from the royal kitchen of the Malaysian state of Pahang. The exhibition, entitled AFTER UTOPIA, investigates the concept both metaphorically and physically, looking at man-made and naturally occurring paradises and the ideologies that claim to help one achieve an enlightened state of mind. It’s been nearly a quarter of a century since a retrospective of the late artist Richard Diebenkorn’s work was held in the UK. The artist, who lived and worked in California and around the USA’s western states, established himself as one of the country’s most significant expressionist artists. Later in life, he turned his hand to figurative painting before returning to abstract drawing. The exhibition celebrates the artist’s ability to move easily between these styles with a display of iconic works from his impressive canon. Visitors will be treated to one of the most comprehensive displays of Prague-born artist Pavel Büchler’s work entitled (Honest) Work at the Ikon Gallery in Birmingham this month. Büchler uses a range of mediums to express his ideas, seeing artistic potential in the things we consider defunct such as items of technical equipment and even refuse. Jaipur is the very definition of living history, a city chock-ablock with monuments and palaces. After breakfast, start your tour at Hawa Mahal, or ‘Palace of Winds’, an ornate pink sandstone structure constructed in 1799. The façade is the most interesting part, with a series of carved, arched windows rising up five floors. It is said there are 953 of these windows, which once provided a space for the women of the royal household to watch the world go by unseen.

From here, head to Jantar Mantar, located around the corner. At first sight, it seems like a mishmash of odd structures. The Jantar Mantar
however is an astronomical observatory dating back to the early 18th century. Even today, some of the instruments are regarded as precise and sophisticated, including the massive sundial called the Brihat Samrat Yantra. To get the best of this experience, hire a guide who will explain how these instruments work.
11am To escape the heat, step into the magnificent City Palace, a huge complex of courtyards, smaller palaces and gardens. Look out for the four exquisite gates in the inner courtyard, representing the seasons. The Mubarak Mahal, or the palace once used to welcome visitors, is now a museum (msmsmuseum.com) featuring
a collection of royal artefacts, including costumes, weaponry and jewellery. The museum is a testament to the wealth of the royal family of Jaipur and their patronage of the arts.
12:30pm It’s time to head out of town to the Amber (pronounced Ah-mer) fort palace, just 11 kilometres away. Hire a cab to get to the erstwhile capital of the royal family of Jaipur, built in the late 16th century. It can be a steep hike up to the entrance, so take a ride on an elephant’s back instead. For a meal fit for a king, lunch at the palace restaurant, 1135 AD (mshospitality.in/ location/1135AD). The Thaal-eAmber, a platter of the best meat dishes from the region, is highly recommended.
2pm Wander around this jumble of palaces, pavilions and halls, entering through Suraj Pol, or the ‘Sun Gate’. The buildings are of a muted yellow and pink sandstone and seem to change colours with the intensity of the sun. Make sure to spend time at the Sheesh Mahal, with its stunning mirror work studded on walls and ceilings in various shapes and sizes.
3:30pm You might have a tough time finding this small museum in the narrow lanes around the base of the fort. But the Anokhi Museum of Hand Printing (anokhi.com/museum), housed in an old mansion, is totally worth the effort. It is the only one of its kind to
document the fading art of hand block printing. There are many excellent displays and exhibitions within the museum, as well as demonstrations on the rooftop terrace.
5pm Back in Jaipur city, explore the crowded shopping lanes around the Hawa Mahal, which form its throbbing heart. Polish your bargaining skills in advance because everything from blue pottery to embroidered leather shoes to silver jewellery is up for a discount for the crafty negotiator.

almö, Sweden’s third largest city, located in the southernmost county of Skane, is coming into its own as one of the most inspiring cities in Scandinavia for rich eating options. The city’s greatest food affair is the diversity of ethnic eats in its varied neighbourhoods. A third of the city’s population has foreign origins, and it’s no surprise that dishes from Thailand to Iran to Korea can be found along the city’s tree-lined streets. “Malmö is changing very quickly right
now,” says native son Marko Wramén, a writer and photographer who recently moved back to the once-gritty port city from Berlin. “New bars and restaurants are popping up like love affairs on spring break, and not even those of us who were born here can keep up.” Menu prices are far more affordable than in Stockholm – often two-thirds and sometimes even half the price. “Because it’s so cheap, people really go out and eat here,” says local food blogger Pernilla Weman. “Dinner is almost the same price as lunch, which is not the case in Stockholm.”

Pernilla recommends Chinese dim sum-style hotspot Dubbel Dubbel (dubbeldubbel.se), a bolthole of a restaurant not far from the Folkets Park. Popular year round, Dubbel Dubbel really buzzes during long summer days thanks to the inviting outdoor courtyard. Sharing small plates is the way to go, so come with a crowd to taste as much as possible. “It’s fun because you choose from menus and get four or so small dishes to taste and share, and the flavours are really interesting,” says Pernilla. Order from the extensive selection of dumplings, and choose from other dishes like spicy Korean ribs, tempeh spiked with Sichuan peppers, and Chinese-style fish cooked with mounds of fresh ginger. No exploration of Malmö is complete without trying falafel, the popular Middle Eastern snack. There are countless fast food-style restaurants where you can try it, particularly around the multiethnic Rosengård neighbourhood, just outside the city centre. But to make a real occasion out of a meal, head to Occo (occorestaurant.com) in Drottningtorget square, one of the town’s central gathering spots, where the romantic lantern-lit atmosphere is a cosy backdrop for all manner of Mediterranean meze dishes. Order the falafel as well as classics such as labneh and hummus and more exotic offerings like mhammara (peppers and walnuts marinated in olive oil and oriental spices) and the delicious mix of artichoke, lemon and garlic called ardishoki. For great people-watching at lunchtime, set your sights on SMAK (smak.info), a
clean-lined, high-ceilinged space located in the same building as the Malmö Konsthall, the city’s contemporary art museum. On warm days, snag a table in the leafy courtyard and order dishes that focus on seasonal produce with some great vegetarian and seafood selections; think lingonberry salad, fried chili polenta with fennel and dried olives, and cod with cumin, grapefruit and pea shoots. “We do our best to create and serve seasonal food from local farmers,” says SMAK’s chef and owner Nina Christensson, “In the past year, a lot has happened on the produce side of things locally; there is a greater demand for organic produce, for example, and that has helped the smaller farmers to expand and widen their variety.” Things are decidedly more meatfocussed at Bastard (bastardrestaurant.se), tucked down a quiet street off busy Lilla Torg Square, where the nose-to-tail rage isn’t just a passing trend. Christensson is also a partner at Bastard, whose bar opens at 5pm, perfect for sipping an aperitif while tucking into a meaty spread that includes house-made pâté, sausage and rillette as toppers for the crunchy-outside, soft-inside homemade
sourdough bread. The scents wafting from the open kitchen will tempt you to stay for dinner. Try chef Andreas Dahlberg’s comfort-style European dishes such as pork neck, blood pudding with Scotch egg and grilled mackerel. “You really have to book a table here,” says Pernilla, “It’s always full and the food is wonderful. It’s not a cheap place, but when you pay you feel it’s worth more.” And for New Nordic cuisine, cast an eye on the casual, warehouse-minimalist surrounds of Saltimporten Canteen (saltimporten.com) in the port area, where locals pedal their bikes for lunch (and sometimes hang them inside on the repurposed meat hooks) before snagging a seat at a communal wooden table. “When you eat our food, we want you to feel the Scandinavian terroir through the products we use,” says chef Ola Rudin, who opened the restaurant in 2013 with Sebastian Persson to serve their take on a traditional Swedish lunch. “The fresh air and cool climates of the northern countries make the flavours develop at greater depths,” says Rudin of Scandinavian ingredients,

Danish fans of the restaurant regularly cross the Øresund bridge from Copenhagen (just 35 minutes away) for hearty set menus of beef brisket with turnip and celery or pork shoulder with Jerusalem artichokes (there’s a vegetarian option too) before turning right back around and heading back to Denmark for dinner. And don’t miss B.A.R Krog & Vin Bar (barmalmo.se), just south of the Kungsparken, for its convivial outdoor terrace, excellent tasting menu and natural wine selection (wines made with as little technical and mechanical intervention as possible). And whether you’re in Malmö or Stockholm – or anyplace in between – no culinary adventure in Sweden is complete without taking part in fika, the country’s national (and virtually roundthe-clock) coffee ritual. Spend any time with a Swede and you’ll surely be asked, “Ska vi fika?” “Should we do coffee?” is the loose translation, but don’t think for one second that it’s a grab-an-espresso-and-go occasion. “Fika isn’t just a coffee break, it’s an integral part of Swedish culture,” explains

Anna Brones, author of the new book Fika, which explores how near and dear the concept of the coffee break is to social Swedes. “No matter where you go in Sweden you're sure to find a cosy café that serves strong, dark coffee and a kanelbulle (cinnamon roll) on the side,” says Brones. For a classic fika option, head to Konditori Hollandia (hollandia.se), where “the chefs wear baking hats and ladies keep their hats on,” according to Weman. It’s an old-school place with wall-to-wall carpeting, big glass bakery cases full of treats, and always a line of people queuing to get inside. The strong filter coffee here goes best with a beautiful slice of cake made with real cream and butter and topped with bright Swedish berries. For fika with a less polished but very neighbourly vibe, it’s worth visiting Café Grannen (Östervärnsgatan 5) in the grittier neighbourhood of Värnhem, just east of the city centre. Here, mismatched furniture and slouchy couches pair with retro lamps, a book exchange and a stack of grab-and-play board games that beg you to settle in for a spell with strong coffee, a slice of rhubarb pie and conversation. Be sure to take your time sipping and chatting; it’s the local way.

nergy guzzling glass boxes” is how Prince Charles famously referred to London's growing list of imposing skyscrapers. With Europe's tallest building, The Shard, now positioned as the new jewel in the capital's crown, the city known for its modest landscape of historical buildings is setting the standard for modern architecture. But what of the city's other attractions, the hidden gems that were once considered just as magnificent as its new trophy towers?
VIEWS
Centuries before The Shard (the-shard. com) gave Londoners a new perspective on their city, another structure a mere stone's throw away did the very same thing. Near the northern end of London Bridge is one of the city's most beloved, yet often overlooked, landmarks: The Monument to commemorate the Great Fire of London in 1666 (themonument. info). Designed by Sir Christopher Wren, the structure offered unprecedented 360-degree views of the city upon completion in 1677. Standing at 62 metres high – the exact distance between it and the site in nearby Pudding Lane where the fire began – it is still the tallest isolated stone column in the world. In southeast London, the Royal Observatory atop Greenwich Park commands inspiring vistas of the greater city, including an unrivalled view of Canary Wharf and the O2 Arena. Completed in 1685, the observatory was the birthplace of Greenwich Mean Time and is currently home to London's only planetarium. Across to the southwest in Richmond Park, King Henry's Mound in Pembroke Lodge Gardens is traditionally thought to be where King Henry VIII stood to watch a rocket fired from the Tower of London to signal that his second wife, Anne Boleyn, had been executed for treason. From the mound you can see a distant view of St. Paul's Cathedral through a carefully preserved framing of trees. The view is protected, meaning no new building is allowed to impede it.

London may be home to Europe's largest urban shopping centre, Westfield Stratford City, but it also has some of the oldest and most diverse markets in the world, and they don't get any older and more eclectic than Old Spitalfields Market (spitalfields.co.uk). A fiveminute walk from Liverpool St. Station, Spitalfields has been operating on the same site for over 350 years. Offering a wide array of antiques, art, vintage fashion and handicrafts, this is handsdown the best place to pick up a unique souvenir. The local food market has been a mainstay of British culture for centuries, with rosy-cheeked farmers and bearded butchers plying their wares from the early hours. Modern markets are a little different, with young cooks often found experimenting with creative dishes at affordable prices. Described as a "cooler, mini version of Borough Market" by Elle, Lewisham’s Brockley Market (brockleymarket.com) in southeast London is a great place to pick up
quality groceries. Near it, you'll find a telephone box that has been re-appropriated as a mini public library, where users can anonymously borrow and deposit books to share with others. Inside the market, it's a foodie's paradise. Look out for celebrity chef Mark Hix's Fish Dog food van. The menu includes crispy coriander calamari and the eponymous signature dish: a unique fish finger hotdog with minty mushy peas and tartar sauce. Spit & Roast also claims a weekly spot with its mouth-watering rotisserie chicken and inspired burgers. However, the longest queues will probably be for the fantastic flatbreads at Mike + Ollie (mikeandollie.co.uk). The stall is a collaboration between two young chefs who source their ingredients locally by hand-picking plants, fruits and vegetables from the surrounding areas. "We use foraged items as garnish, which is almost like a gesture to say, this is from your area, this has come from here,” says co-founder Michael Richardson. "We're not pillaging parks and depriving the squirrels so we can make a few quid. We

I
n a chic coffee shop just off Santiago's Plaza de Armas, local guide Analia Sanchez attempts to explain the vagaries of the Chilean national character. "Essentially, there are two things you should know," she says, putting down her frothy cappuccino. "One is, we like to speak our mind, even when our opinion hasn't been asked for. Secondly, we have a fondness for telling amusing stories and making fun of each other." The second point rather belies Chile's reputation for conservatism. The socalled ‘Switzerland of South America’ is not only known for its awe-inspiring Andean scenery and penchant for neatness, but also the influence of strict Catholicism. Yet today Santiago is a city where contradictions exist on every street corner. This is a place where Old World Spanish architecture and eclectic barrios (districts) such as Lastarria and Yungay are juxtaposed with the glass and concrete towers of ‘Sanhattan’ in a fascinating fusion of the classical, commercial and truly contemporary. With lush vineyards and stunning beaches just a stone's throw away, the Chilean capital has emerged from the shadows of Buenos Aires and Rio de Janeiro to become Latin America's city of the moment.
A narrow strip of land stretching 4,300 kilometres, Chile is a kaleidoscope of stunning landscapes – from the desiccated dunes of the Atacama Desert in the north to the pristine glaciers of Patagonia in the south. anywhere else in South America, but the city's air of brisk efficiency doesn't lessen the temptation to kick back and enjoy some of the finest art, food and shopping on the continent. Santiago comprises more than 30 barrios, each with its own architectural character, cultural scene and demographic. One of the most vibrant is the Barrio Lastarria (also referred to as Bellas Artes or Parque Forestal), a micro neighbourhood of sidewalk cafés, tango studios, chic boutiques, and some of the best eateries in town. Hipsters, artists, intellectuals and tourists all come here to sip, sup and soak up the cosmopolitan ambience. "Local residents like to think of Lastarria as Santiago's take on Shoreditch or Williamsburg," explains local resident Carol Robles. "Cool bars, sublime sushi, colonial-style Chilean pastries and the best ice cream in Santiago, not to mention two metro stops. What's not to love?" Lastarria hasn't always been Santiago's boho hangout of choice. After years of urban decline, the gentrification of the area began a decade ago on the leafy streets bordering the Parque Forestal, a narrow green space shoehorned between

the Mapocho River and Calle Merced. "It was a natural evolution, driven by young people who wanted to make a difference," explains Santiago-based architect Ignacio Saavedra. "Even today, there aren't many places in Santiago where you can see a high-end handicraft shop rubbing shoulders with a delicatessen selling artisan cheeses and gourmet coffee." The main focal point of Lastarria, and a good place to start any neighbourhood tour, is the Plaza Mulato Gil de Castro. This recently beautified space is now edged by two great museums – the Museo Arqueológico de Santiago and the Museo de Artes Visuales. The former is devoted to the indigenous peoples of Chile and boasts an outstanding collection of Andean headwear, pottery, jewellery and woven bags. Below the museums, the plaza itself often hosts impromptu markets, with stallholders hawking everything from antique cameras to Pinochet memorabilia. From here it's a short walk to the leafy confines of the Parque Forestal, the ideal environment in which to savour a freshly made chocolate-basil or strawberry-black pepper ice cream from Santiago's vaunted Emporio La Rosa gelateria chain.
A 10-minute drive from the Plaza de Armas, past the bustling Mercado Central (fish market) and its beautiful wrought iron ceiling, lies another diverting Santiago neighbourhood – Barrio Yungay. One of the oldest areas of the city, a tour here is a trip down memory lane through a neighbourhood of late 19th-century houses and cobblestoned streets. "Barrio Yungay is slowly becoming a tourist destination," says Ignacio. "The quarter's heritage houses still resist the urban development taking place elsewhere, while there's a growing focus on cultural centres, libraries, museums and dining, as well designer shops and boutique hotels." The focal point of the barrio is the Plaza Yungay, situated at the crossroads of Sotomayor, Rosas, Santo Domingo and Freedom. It's here that pedestrians will find the statue of a farmer, with rolled-up trouser legs and gun in hand – a tribute to the unknown Chilean soldier – brave and patriotic – who is credited with the victory at the Battle of Yungay on January 20, 1839, between various Peruvian, Bolivian and Chilean factions. Highlights of Yungay include the Parque Quinta Normal, which contains a wide variety of museums, while
the neighbourhood's numerous cités (passageways) boast some exquisite architecture. One of the main attractions is the Peluqueria Francesa, a beautiful two-story building that contains a barber shop and a French restaurant. "It's not often you can get a close shave and a plate of ceviche in the same building," says Analia with a smile. Across the fast-flowing Mapocho River lies Barrio Bellavista, with its enticing mix of period architecture, avant-garde galleries, cool bars and green trees. Many of Santiago's intellectuals and artists live in Bellavista, following in the footsteps of its most famous denizen, the Nobel Prizewinning Chilean poet Pablo Neruda. If you're in town on the weekend, be sure to check out the evening handicraft market that runs the length of Calle Pio Nono. At one end of Calle Pio Nono lies the Parque Metropolitano, one of the world’s largest urban parks. This huge expanse of greenery is dominated by the Cerro San Cristobal, an 800-metre-high hill offering awe-inspiring views over Santiago and the surrounding mountains from its
many vantage points. The summit itself is crowned with a gigantic statue of the Virgin Mary. While many locals prefer to run, cycle or walk up the Cerro San Cristobal, especially on weekends, those of a less energetic persuasion may prefer to take one of the egg-shaped cable cars or telefericos that operate from the base of the hill. Look out for South America's tallest building – the 300-metre high Gran Torre Santiago – on the ascent, dominating the valley floor below the hill like a gleaming metal splinter. Today the Chilenos of the capital set themselves apart from the rest of South America with style and sophistication. Santiago's unique architectural mix, its progressive attitude and artistic joie de vivre create a boundary as divisive and dominant as the towering peaks of the nearby Andes. "I think many visitors still come to Santiago expecting a rather strait-laced city lacking in charm," says Analia. "When they leave I hope we've changed that perception."
Only 110 kilometres northwest of Santiago, the port of Valparaiso (“Valpo” for short) is the perfect place to spend a weekend away from the Chilean capital. Sprawled haphazardly over a series of low hills, this colourful, slightly gritty coastal city is a complete contrast to the Chilean capital. Be sure to check out the UNESCO-listed Historic Quarter and seafood market at Caleta Portales, complete with sea lions and pelicans.

urkey is one of the most exhilarating countries to visit – a fascinating destination where senses go into overdrive and the requisite of sleep is soon forgotten. It’s a flurry of all things amazing – chatty people, cheerful festivities, some of the world’s best sights, and of course, glorious food. The smell of a woodfired kebab, the heat when biting into a fresh-baked gözleme, the sound of pomegranate juice makers as they make juice after juice, the sugary coarseness of that first bite of baklava – eating in Turkey is an affair of all the senses.
INTOXICATING ISTANBUL
Istanbul is an energetic city straddling religious traditions and modern culture. Women in head-to-toe burqas walk beside kids decked out in the latest designer gear; rooftop bars are full, and so are the mosques; street food merchants promenade alongside bigwigs rushing to their next meeting; and tattered casual eateries sit beside modish restaurants. Old and new, European and Asian, intense and surprising. It’s easy to get besotted with the tapestry that is Istanbul. It’s no surprise that the food
offerings span just about anything. In the trendy Sisli district, passionate gastronome Semsa Denizsel manages Kantin (kantin.biz), a shop and restaurant space that has everyone talking. Donning a headscarf and a contagious smile, she loves to natter with customers as they peruse her stock. She’s got lush green olives from Sivrice, olive oil from Ayvalik (Turkey is the second largest olive cultivator in the world), colossal blocks of gruyere and kasar cheese from Kars, homemade chutneys, salads, and jams. Semsa always makes sure she has crusty house-made sourdough bread. “I source and make whatever is local and will taste the best,” she says with a laugh. Upstairs the 80-seat restaurant is jam-packed most nights with a jovial crowd feasting on what Selma calls new Istanbul cuisine. “It’s a fusion of Turkish, Armenian, Greek and Jewish influences. Anything goes, a bit like Istanbul,” she explains. Tonight she has prepared bonito confit paired with velvety red lentil puree, wood-roasted pumpkin with oyster mushrooms, sorrel with sweet caramelised pears and tulum cheese from Konya, succulent prawns from the Aegean coast, and kokorec en papillote (lamb intestines in parchment paper) slowly cooked in the wood-fire oven. “It’s a bit different but I like to surprise my customers,” she says. Not far from Sisli in the chic district of Beyoglu, surprises await at fine diner 360 Istanbul (360istanbul.com). Situated in an extravagant penthouse perched on a 19th-century historic apartment building, patrons take in spectacular 360-degree panoramas of historical Istanbul and order from a menu that encompasses international cuisine and Turkish classics with a twist. Instead of traditional lamb shish, diners are offered the glazed octopus version, and dolma is reinvented in the form of a zucchini flower, while chickpea falafel is gussied up with a piquant sweet-and-sour sauce. The real surprise is the rollicking nighttime entertainment. During dinner, performers wander around tables boldly singing and executing mesmerising dance moves to entertain patrons. Of course it’s not all stunning views and showbiz in Istanbul. Some of the best discoveries are concealed in tiny winding cobblestone lanes – perennially vibrant
eateries full of laughing locals, friends enjoying small cups of aromatic Turkish coffee on the sidewalk, and street vendors hawking their wives’ home cooking. You’ll find these everywhere, but the tourist hub district of Sultanahmet is the place to visit. There are hidden-away rooftop restaurants with so many flights of stairs to reach them, you might find the deck to yourself (some come with stunning vistas of the legendary Bosphorus and surrounding mosques), tiny hole-inthe-wall eateries frequented by in-theknow locals, and the Grand Bazaar with its profusion of garrulous merchants who do almost anything to get you into their stores. Although the prices are a little dearer compared to most markets, there’s something magical about strolling through one of the largest and oldest covered markets in the world.
TOURING TURKEY
Turkey is bordered by eight different countries and understandably, its food differs significantly from region to region. Knowing where to eat is an expert’s job. Touring with Trafalgar (trafalgar.com) is the way to go. The guided travel company offers two Turkey itineraries: the 14-
day Best of Turkey and the eight-day Highlights of Turkey tours. Visitors travel from point A to point B by luxury coach with plenty of foodie stops on the way. The local guides know the ins and outs of the gastronomy scene and sojourns are never random. Restaurants are purposely chosen for both food and ambience. In Canakkale, visitors dine on creamy local cheese and homemade garlic bread washed down with gutsy wine overlooking the sprawling Sea of Marmara at Hektor Wine house. In the buzzy seaside city of Izmir, Trafalgar guests eat at Yengec Resaurant (yengec-restaurant.com) where a profusion of seafood dishes and massive sides (green salads peppered with bright pomegranate seeds, crisp-fried artichokes and smashed eggplant) come flying out one after the other. Staff with wide smiles chat away even though they’re busy. Next to a petrol station in Canakkale sits Nidal Sezer’s quaint roadhouse Gelibolu Miller Nar Restaurant. that she cooks whatever is fresh and tasty, and presents it beautifully too. A sharp ginger and celery root salad comes served in a hollowed-out orange; there are bittersweet soups, plenty of oven-baked vegetables, aromatic stewed beef, roasted chicken chunks and special regional dishes such as mashed-up broad beans, bulgar pilav topped with Turkish saffron, and a variety of deeply golden pastries. The epicurean highlight of touring with Trafalgar is the Be My Guest experience, where guests can eat with local residents in their homes, for example, in the tiny village of Demircidere. With the language barrier instigating plenty of laughs, visitors and locals dine together, indulging in traditional probiotic tarhana soup, börek pastries, dolma, fried eggplant and fresh olives.

Food is a great way to meet the locals. In major cities you’ll come across merchants selling simit. These sesame-coated bread rings make for a tasty snack any time of day (although the Turks usually eat them in the morning, and if you’re up early enough, you can snag a hot fresh-baked simit). Gözleme is another street food find worth savouring. The hand-rolled Anatolian flatbread comes with a variety
of fillings, such as spinach and cheese, lamb mince or mashed potatoes. Another bread-based dish, pide, is the Turks' version of pizza. Popular toppings include spicy sausage, minced lamb and cheese. Dessert in Turkey is a decadent affair. Baklava is perhaps the most famous concoction – flaky layers of filo dough and nuts are stacked and brushed with butter and sugar syrup, then cut into rectangles or diamonds. Noah’s pudding is a scrumptious dessert; pomegranate, pistachio, rose and saffron are popular flavours. Typically these glossy fruit-and-nut puddings are topped with seasonal picks – figs, apricots, hazelnuts and the like. And you can’t go wrong with ice cream – order sticky Turkish ice cream from a bell-ringing vendor in a red-and-gold vest, and you’ll get teased and taunted as the dessert is offered and pulled away, grabbed and retrieved as passers-by watch. Eventually you will get the ice cream. In Turkey, good things come to those who wait.

The story of Valentine Roti features a proud father naming his mamak stall after his son and making flatbread. Besides its justifiably famous crispy, paper-thin roti canai, Valentine Roti has invented its own type of roti, called the Roti Valentine, which is fresh dough folded around a cooked mixture of sardines, onions, cabbage and chives, then pan-fried. Equally beguiling are sweet rotis such as the buttery roti Planta, slathered with a popular Malaysian margarine, and roti kaya, made with homemade egg custard.

This modest eatery, which has spawned a chain, was recently hailed for the best roti canai in the Klang Valley in a national newspaper poll. High praise in a city flush with options. Made fresh to order, the roti is warm and fluffy yet crispy to go with its flavoursome dhall, essential components for an award-winner. If you like it extra crispy, be sure to ask for it to be garing. Don’t let the staple overshadow other options – the roti telur carries culinary heft on its own. As the place packs up during peak hours, expect service to slow down considerably.

This mamak originated from a tiny stall to spawn a chain of shops around town. Its speciality is the nasi kandar, a rice dish from Penang eaten with a variety of curries and side dishes, but it has a good selection of rotis too. Another institution within the roti circle, Steven’s Corner has enticed the supper crowd since its days as a modest stall in OUG. It has since expanded to three shop-lot restaurants to cater to its widening pool of fans who come for the reliably good food. Among its signatures is the roti telur cheese, a perfectly formed roti layered with egg and melted cheese slices, and eaten with a piquant curry. Another variation is the roti Planta cheese – roti with cheese and local margarine instead of egg.

Their other signature dish is the roti Mumtaj, which is actually naan topped with tomatoes, chillies, carrots, sliced cheese and sour cream, and eaten with dhall and a yoghurt mint sauce.

asi lemak ice cream? Brown bread? These are exciting times for ice cream lovers as a growing breed of artisans are handmaking the stuff in new and inventive ways. They are not sticking only to tried-and-true favourites; instead they are experimenting with imaginative flavour combinations to bring out the best in their ice cream. At Cielo Dolci (cielodolci.com), nasi lemak, Malaysia's national dish of rice cooked in coconut milk with roasted peanuts, deep-fried anchovies, cucumber slices and sambal, a piquant chilli sauce, has been transformed into a scoop of ice cream. For Ong Kee Win, that means coconut gelato with chilli sprinkles, peanuts and anchovy dust, and a best-seller. "We wanted to create flavours that we can emotionally relate to. We could produce an entire Italian spread but to most of us, it would just be a flavour. It doesn't evoke any fond memories of childhood or an occasion," says Ong, who now can't have a meal without envisioning it as an ice cream flavour, spawning flavours such as Malaysian dessert favourites bubur cha cha and soya cincau. Handmade in small batches and filled
with all-natural ingredients, ice cream artisans are diligent about their craft. Ong spent three weeks with a gelato master in Italy to learn the secrets of ice cream making. He then spent another year perfecting his newfound skill, making the gelato from scratch and experimenting with flavours before setting up Cielo Dolci, which means ‘heaven's dessert’ in Italian, in Paradigm Mall. In 2014, he opened Whimsical café, which offers food and ice cream pairings such as a Big Breakfast of scrambled eggs, sausages and pancakes with a scoop of beef bacon gelato, or a salad dressed with basil gelato. Ong must have his formula right as Cielo Dolci represented Malaysia at the recent Gelato World Tour competition in Singapore. The ice cream picture in Malaysia was very different five years ago. When early pioneers, The Last Polka (facebook.com/ thelastpolka), entered the handcrafted ice cream scene in 2010, mass-produced ice

cream was the mainstay. Then partners Tee May Yee and Lee Ee Vee were one of the first to hit the market with handmade, egg-laden, French-style ice cream that incorporated inventive local flavours meant to evoke fond childhood memories. When the public got a taste of their Salted Gula Melaka, Teh Tarik and Pandan Kaya at various cafés around town, they were hungry for more, and the duo happily obliged. The girls have been having fun with their ice cream. In the short-lived Love Picks series, they created special flavours for their favourite artists, musicians and celebrities. The Kuah Jenhan, named after a local comedian, is a peanut butter and jelly ice cream with chunky chocolate brownie bits. For a local festival, The Last Polka was inspired by children's books to come up with flavours such as butterscotch ice cream with walnut and black pepper brittle as a tribute to Alice's Adventures in Wonderland. As part of their artisanal code, all the ice cream makers have rejected common practices such as using milk powder or artificial flavourings, concentrating instead on good quality ingredients, whether local or imported. As far as they can, Finespun sources for local produce to use in ice cream, such as gula apong from Sarawak and kuih karas from Kedah. A relative newcomer to the frozen dessert brigade, Finespun (facebook. com/finespun.kl) is already making its mark with its luscious ice cream. It was formed by Mel Moksin and Rayn Ismail, who learned how to make ice cream from scratch, starting with a simple ice cream maker. Now they carry a pink notebook with them everywhere, just so they can jot down flavour ideas whenever inspiration

strikes. So far, they've hit on the popular Brown Bread, which they loosely modelled after the taste of roti bakar, a local bread toast slathered with butter and kaya, a creamy egg custard. "We pride ourselves on taking simple everyday ingredients used in the kitchen and combining them to make something that is distinctively Finespun. We are flavour purists, so what our consumers read on the label is exactly what they would taste," says Rayn. Made in small batches, Finespun can be found at a handful of cafés in town, and home delivery is also available. Artisanal producers are also quick to jump at seasonal offerings: When kumquats were in season, the trio from The Potong (thepotong.com) paired them with strawberries from Cameron Highlands for their popsicles. Potong means cut in Malay, and ice cream potong is a slab of cold goodness mounted on a stick. The Potong started when Ivan Lee, Victor Tee and Tee Reei Toh went on a road trip to Ipoh in the state of Perak. On one hot afternoon, they were buying an ice

cream potong to cool off when the vendor remarked how difficult it was to find good handcrafted ice cream. It was a Eureka! moment as right there and then, the three decided to do something about it. They left their jobs as a human resources consultant, investment banker and art director respectively to concentrate on setting up The Potong and subsequently, The Tapping Tapir, a natural sparkling fruit soda. The kitchen is part of a weekend-only café called The Soda Factory, where the three make the cylindrical-shaped ice cream by hand. Inspired by the cheap ice cream from their childhood, they put their own spin on all-time favourite flavours such as durian, the pungent King of Fruits. Their signature pops are cherry root beer, watermelon fizz, nutty choc and coco banana, but they've experimented with flavours such as pumpkin pie, wasabi lychee and spicy pineapple for themselves and for clients. It would seem that the sky, and imagination, is the limit when it comes to what these artisanal ice cream makers can produce. As demand for novelty increases, vanilla and chocolate may just have to step aside to make way for these brand new tastes.

Ringkas rekaannya, namun pembuatannya rumit dan penuh seni. Hujung jubin-jubin terrakota disusun dan dicangkukkan pada alur kayu bagi membentuk bumbung. Satu demi satu kepingan jubin ini bertindih antara satu sama lain bagi menghasilkan bumbung mantap yang kedap air namun masih menggalakkan aliran udara yang baik. Jika salah satu daripada jubin ini rosak, hanya yang satu itu sahaja perlu digantikan. dikenali sebagai Songkhla di selatan Thai. “Pada waktu itu Bachok cukup terkenal dengan golongan pembuat jubin,” ceritanya. Bilangannya mencecah ratusan orang pada ketika itu. Namun, jumlah tersebut mula merosot dengan kemunculan bahan-bahan berkos rendah seperti asbestos yang kian mendapat sambutan. Ketika kemuncak perusahaan ini, Bata Atap Singhora pernah menggunakan 40 ruang pembakaran jubin sekali gus. Hari ini, sebagai satu-satunya perusahaan seumpama ini yang masih bertahan, ia hanya beroperasi dengan bantuan satu relau pembakaran sahaja. Kini, kebanyakan jubin bumbung ini hanya digunakan untuk membaik pulih rumahrumah lama, membina tempat perlindungan atau penginapan di resort. Sumber tanah liat diperoleh dari sawah padi lama sebelum diadun bersama air dan garam. “Hanya tambah sedikit garam sehingga cukup,” kata Noraini yang menerangkan berdasarkan pengalamannya sahaja. Basah dan masin, tanah liat tersebut kemudiannya dipijak-pijak sehingga lembut. Seakan-akan sebuah persembahan tarian yang indah, para pekerja wanita di situ giat memijakmijak dengan kaki bagi meratakan ketulan tanah liat yang diletakkan di dalam acuan kayu rata. Lebihan tanah liat pula dikikis pantas dengan seutas dawai. Dengan berhati-hati, acuan tadi dibalikkan bagi
mengeluarkan sekeping jubin kelabu yang lembut. Dalam sehari, wanita-wanita gigih ini mampu menyiapkan sejumlah 500 keping jubin. Jubin-jubin tadi dikeringkan di bawah sinaran matahari. Permukaannya kemudian diketuk dengan lembut bagi meratakannya sebelum disimpan. Relau pembakaran pula hanya akan dinyalakan apinya apabila cukup 30,000 keping jubin, yang kemudiannya akan dibakar sehingga merah warnanya. Proses pembakaran menggunakan kayu api itu berterusan sepanjang hari. Oleh itu, para pekerja Noraini akan berjaga dan bermalam di pangkin bersebelahan ruang pembakaran. Selepas berakhirnya proses pembakaran, jubin-jubin tadi akan dibiarkan sejuk selama 10 hari. Kini, seni pembuatan jubin Singhora semakin pupus ditelan zaman. “Namun ianya warisan pusaka kami. Jadi, kami perlu meneruskannya,”ujar Noraini. Berbentuk berlian yang melata di atas bumbung, semestinya jubin-jubin bumbung ini memberi sentuhan unik kepada rumah-rumah lama. Lamakelamaan, permukaan jubin-jubin ini mulai berlumut dan menyerupai kepingan sisik gergasi. Ada yang bercerita bahawa perubahan ini ibarat satu penghormatan buat Makara; sejenis makhluk dasar laut dalam mitos agama Hindu. Kini kisah ini kian dilupakan, namun kesan visualnya jelas terpapar pada bumbung kediaman-kediaman ini.

SCALES ON THE ROOF
Clay roof tiles made by hand and feet are a work of graceful art If you get a chance to visit a traditional Malay house in the northern Malaysian states of Kelantan or Terengganu, do take a look at its roof from the inside. It’s a marvel of simple design, yet remarkably intricate and beautiful. The terracotta tiles are made into a roof simply by hooking the curved tile edge onto a wooden beam, one after the other. They overlap to form a watertight yet airy roof. And if one tile breaks? Remove it gently, and slip in a new one. These clay tiles, known as Singhora or Singgora tiles, once adorned the most beautiful houses owned by the wealthy or aristocrats in the East Coast. Today, the cost is less prohibitive; it’s just USD0.16 a tile, but each house needs more than 10,000 tiles. Alex Lee, who owns the splendid Terrapuri Resort in Terengganu, bought 350,000 tiles for the 29 traditional Malay houses he restored and reassembled at his resort in Setiu, Terengganu. It took three years to fill his order because there is only one such roof tile maker left in Malaysia. Bata Atap Singhora, located in Kampung Pengkalan Baru in Bachok,
Kelantan, is the country’s sole maker of traditional clay roof tiles. Each and every tile is still made by hand – or feet. Noraini Jusoh, 49, manages this family enterprise, which began in 1945 along the banks of the Kemasin river. She said her family learnt the art in Singora, or what is now the present-day town of Songkhla in southern Thailand. “Bachok was famous at that time for its tile makers,” she said. There were hundreds of them but as cheaper material like asbestos became available, the numbers dwindled. Bata Atap Singhora is the only one in business today, and it operates just one kiln compared to 40 kilns at its height. Today, the tiles are mainly used by those restoring old houses or for building gazebos and shelters, or for accommodation in resorts. The clay comes from old paddy fields, and is mixed with water and salt. How much salt? “Just a little until it’s the right amount,” said Noraini with a vagueness born of long experience. The salty wet clay is then trampled on to soften it. Watching the women work with their feet is like watching graceful dancers. They
slap a chunk of clay onto a flat wooden mould and smooth it with their feet. With a swift downward stroke of a wire, the excess clay falls away. The women then tip the mould to let a soft grey tile fall out. They each can make 500 tiles in one day. The tiles are dried in the sun for an hour before being pounded gently to even out the surfaces and stored. The brick kiln is only fired up when 30,000 tiles are ready to be fired to their reddish colour. The wood fires have to be kept burning around the clock, so the people don’t go home. They sleep on a platform next to the kiln. After firing, the tiles are left to cool for 10 days. Making Singhora tiles is now a dying art. “But this is our heritage, we have to keep doing it,” Noraini said. The tiles give a distinctive appearance to the old houses, with their diamond shapes linking into a cascading roof. Over time, they become mottled with moss, and start to resemble giant scales. And this, some say, is a tribute to the sea creature Makara from Hindu mythology. This story has now faded into the faintest recesses of the past but it remains visible on the roofs of homes.

How did you all meet? It started with me (Fad) and Abam. We met while participating in [comedy talent search show] Raja Lawak 6, then our journey continued with another TV talent show called Bintang Mencari Bintang. That’s where we met Achey.
With their comedy album Perjalanan playing on board we caught up with funny guys Bocey for a chat...
Did you strike up a friendship straight away? Afdlin Shauki and the late Harun Salim Bachik were the ones who united us. They were responsible for forming this group and from there our bond grew stronger. When did you know comedy was the career for you? When we participated in Bintang Mencari Bintang we knew that this was it. How do you come up with your material? We sit down together and discuss ideas and the storyline. From there we craft it.
How would you describe your comedy? We love to touch on current events and include a dose of reality in our comedy – that is our trademark. Who are your comedy heroes? It would definitely have to be Afdlin Shauki and Harun Salim Bachik. They were our mentor and our tutor, respectively. Tell us about your album Perjalanan. What can passengers expect from it? Perjalanan contains four songs and 10 sketches. Each of them has their own story and the stories relate to our journey in this industry. ‘Perjalanan’ actually means ‘journey’. Do all three of you socialise together when you’re not writing or performing in Bocey? Yes, we’re always hanging out together!
How do you all spend your free time? The truth is, whenever we’re not working we prefer to stay at home! What can we expect next from Bocey? We would love to venture into urban comedy. On top of that we might do a serious album. It would be a way to showcase another side of Bocey. Do you have a message for your fans? Please continue to support us in this industry and thank you so much for supporting us on our journey so far!

Dahl’s delights Enjoy three adaptations of Roald Dahl’s classic children’s stories
Roald Dahl’s Esio Trot The latest adaptation of Dahl’s work, Roald Dahl’s Esio Trot is based on a novel about two elderly neighbours and a troublesome pet tortoise (‘esio trot’ spelled backwards). Director Richard Curtis admitted that filming wasn’t without its problems. ‘Tortoises have a tendency to move a lot,’ he said. ‘We had about 47 takes at one point!’
Willy Wonka & The Chocolate Factory The first movie adaptation of Dahl’s work is a 1971 big screen retelling of perhaps his most famous novel, 1964’s Charlie And The Chocolate Factory. Dahl was famously unhappy with the changes made to the original story, but the movie has gained a strong cult following nonetheless.
Charlie And The Chocolate Factory Filmmaker Tim Burton shared Dahl’s misgivings about Willy Wonka & The Chocolate Factory and was granted permission by the author’s estate to adapt his own version in 2005. ‘It was a chance to imagine what Roald Dahl would like to see,’ said Johnny Depp, who plays Wonka in this version.

A Beautiful Mind Julianne Moore gives an award-winning performance in Alzheimer’s drama Still Alice
Smooth Operator Oscar-winning actor Colin Firth is a man of many talents but, as Bridget Jones proved, fighting has never been one of them. Until now. With a knowing wink to the James Bonds of the 70s and 80s, Firth plays secret agent Harry Hart in Kingsman: The Secret Service. He even has his own Martini order, taking his gin ‘poured while glancing at an unopened bottle of vermouth’. ‘I think people miss that deeply unruffleable world of pure escapism that appeals to our fantasies,’ says Firth. ingsman: The Secret Service K is playing on board. More than 15 years after her first nomination, Julianne Moore finally took home the award for Best Actress at this year’s Oscars. The role that won over the Academy was Alice Howland, a Columbia professor diagnosed with Alzheimer’s disease at the age of just 50. ‘It’s the first movie I’ve seen that talks about a condition like this, presented completely subjectively, often from the sufferer’s point of view,’ she says of Still Alice. ‘My character is someone who has always defined herself by her intellect, and now that that’s something she can’t depend on, she’s finding that she doesn’t really know who she is.’ Moore was deeply moved by the script, and spent four months researching the role, speaking to the head of the Alzheimer’s Association, as well as sufferers –both longterm and recently diagnosed. ‘The women I spoke to were so incredibly generous with their time, thoughts and experiences,’ says the actress, whose astute and understated performance has been universally lauded. ‘I’m thrilled that we were able to shine a light on Alzheimer’s disease.’ Still Alice is playing on board. Let battle commence A study of two legendary military leaders, Wellington Vs Napoleon: Aftermath Of Waterloo documents what happened following one of history’s most famous battles. We profile both of them below
Wellington Undefeated in battle, Arthur Wellesley, the 1st Duke of Wellington, became so synonymous with his title that he is still better known by it than his real name. His illustrious career continued after he retired from the military as he went on to serve as prime minister and leader of the House of Lords. Although not of humble origins, Wellington endured hardship when his father died at a young age and his countess mother sent him to a series of schools at which he failed to excel. Enrolled in the military, he eventually shone and his victory at Waterloo made him rich and famous. He is also remembered for giving his name to the Wellington boot.
Napoleon A more volatile character than Wellington, Napoleon Bonaparte was nonetheless another talented leader. An influential figure during the French revolution, his Napoleonic Code –a civil charter – survives to this day. Victorious in 60 of his 70 battles, his headstrong approach led to him become the first emperor of France, aggressively expanding its empire. Critics accused him of bankrupting the country with his military campaigns and he faced two periods of exile from France. After escaping from the Mediterranean island of Elba to regain power and contest the Battle of Waterloo, one of the most divisive figures in military history died in British custody in Saint Helena.

Latino laughs Raised in near poverty, Cristela Alonzo knows how to pluck triumph from adversity. ‘Luckily, my mom was an immigrant who had no clue making it in Hollywood was a ridiculous idea,’ she jokes about her early ambition. The Mexican-American comic now stars, co-writes and co-produces new sitcom Cristela, the first three episodes of which are playing on board this month. Ironically, it was her mother’s rules that piqued Alonzo’s interest in comedy. ‘When I was younger my mother was really strict and I couldn’t really go out so I would stay home and watch a lot of TV!’ she admits. ‘I started off doing open mic competitions in Dallas and within two years I was living in Los Angeles and writing for [TV channel] Comedy Central.’ Needless to say, she hasn’t forgotten her roots: ‘I want to tell stories about everyday Latinos struggling to get by and trying to achieve the American Dream.’

Your personal TV screen and handset are stowed in the armrest of your seat. Push OPEN to lift the cover of the armrest and lift the latch to release the screen. Rotate the screen and adjust it to the angle you desire.
A power point is available on all seats in First and Golden Club class. Please ask a member of the cabin crew if you wish to borrow a suitable power adaptor.

DAMMED Drowned church steeple rises solitarily out of Lake Reschen

In 1939, the local energy company in the western part of South Tyrol, Italy introduced a plan to unify two natural lakes, Lake Reschen, or Reschensee, and Mittersee via the construction of a 22-metre-deep artificial lake. The dam, finished in 1950, sank a few thriving villages, comprising 163 homes and 523 hectares of cultivated land. The only structure seen above water is a church steeple left behind after the main building was demolished. Legend has it that the church bells can still be heard ringing in the winter, although the bells had been removed before the flooding. The tower can be reached on foot when the lake freezes over during the cold months, making for an interesting photo opportunity. With Austria only two kilometres away and Switzerland three kilometres to the west, a tour through the area could mean visiting three countries in one day.
