Queen Anne Farmers Market returns to hill first week of June By Jessica Keller

QA&Mag News editor While the Queen Anne Farmers Market hasn’t returned to pre-pandemic numbers, Executive Director Matt Kelly is optimistic this season will bring more people to the top of the hill. Opening day for the 2022 Queen Anne Farmers Market is June 2. It kicks off a 20-week market season, ending Oct. 13. Regular season markets take place from 3 p.m. to 7:30 p.m. Thursdays at West Crockett Street and Queen Anne Avenue North. For the second year in a row, market organizers are extending opportunities for vendors and their customers by offering three harvest markets from 10 a.m. to 3 p.m. for three Saturdays: the Halloween Harvest Market, Oct. 29, the Thanksgiving Harvest Market, Nov. 19, and the Winter Solstice Harvest Market, Dec. 17. Executive Director Matt Kelly said this year, the season’s roster lineup features 63 vendors, including Washington farmers, fishers and ranchers and processed and prepared food businesses. These include 10 vendors who are either new or returning after an absence. One new vendor, Underground Produce, is based out of Bremerton, but the farmer lives in Queen Anne.

In addition, the market will host various activities and booths each week. From 4 p.m. to 6:30 p.m. children can visit the popular Roots to Shoots booth, with the two-bite challenge, where adventurous eaters ages 6 to 12 are encouraged to try new fruits and vegetables by one of the farm vendors, depending on the season. Participants will receive a $2 coupon to use at any of the farm vendors. As well, from 4 p.m. to 6:30 p.m. artists from Queen Anne and the greater Seattle area will perform live music. Kelly said the food trucks rotated through the lineup, depending on the week, last season. This year, they will participate each week. Kelly said people can feel good buying from the farmers market each week because they are supporting Washington growers and food producers, which serve a crucial role. “We know that small- and mediumsize farmers are better for the planet, and we know that owner operator farms are stewards of the planet and the land that they lease.” To see more about the market and its complete list of sponsors, go to https:// qafm.org.

Ornamental onion Allium bulbs, particularly the large varieties, bloom a long time, and even when officially past their prime, their unusual globe-shaped flowers stay upright but faded, adding structure and height for weeks. Some even spray paint them for color into fall! Some varieties to look for include “Globemaster,” “Purple Sensation” and “Mount Everest.” These perennials are usually purchased and planted in bulb form in fall, but nurseries are carrying potted ones now. Wallflowers Erysimum hybrids, also known as wallflowers, are some of the blooming-est plants you’ll ever find. They were doing High Intensity Interval Training before it became trendy. While technically perennial, they may fade out after several years out of sheer exhaustion. New varieties come in a host of sunset colors with names like “Winter Orchid”and “Apricot Twist,” while “Bowles’ Mauve” is an heirloom favorite. Some are highly fragrant, so test before buying if this is important to you. They begin blooming in April and can continue for two months if deadheaded. Summer brings a well-earned rest, but if you trim them back and offer some compost and liquid fertilizer, you’ll see renewed blooms in September. They prefer well-

Moms often work tirelessly to care for their families, with many juggling careers and time spent at home. It’s a balance that is sometimes tricky to manage, and at times mothers need to have their loads lightened. Children or spouses who learn to cook can take some pressure off of Mom. Mothers Day is a prime opportunity for other members of the household to spend time in the kitchen. Pasta dishes generally are easy to prepare and can feed a crowd. Such is the case with this recipe for carbonara from “Rachael Ray: Memories and Meals From a Sweet and Savory Life” (Ballantine Books) by Rachael Ray. Carbonara Serves 4 1/4 cup approximately extra virgin olive oil 1/3 pound chunk of meaty pancetta or guanciale, cut into 1/4-inch dice 4 large cloves garlic, thinly sliced or chopped 11/2 teaspoons coarsely ground black pepper 1 cup white wine 6 large egg yolks 1 cup grated Pecorino Romano, plus more to pass Salt 1 pound bucatini or spaghetti 1/2 cup fresh flat-leaf parsley, finely chopped (a fat handful of leaves)

Bring a large pot of water to a boil for the pasta. In a large, deep skillet over medium heat, heat the olive oil, four turns of the pan. Add the pancetta or guanciale and render for about 3 minutes. Add the garlic and pepper and stir 1 minute more. Add the wine and reduce by half (about 7 minutes), then reduce the heat to low. In a medium bowl, combine the egg yolks and grated cheeses to the liberally salted boiling water and cook to 1 minute less than al dente per the package recommendation. Remove about 1 1/4 cups of starchy cooking water from the pot and whisk it into the egg yolks in a steady stream to temper them. Reserve an extra 1/2 cup of starchy water just in case. Drain the pasta or transfer it with a spider or tongs to the pan with the pancetta and garlic. Remove the pan from the heat and add the tempered egg yolks and parsley. Toss to combine. If the sauce seems too thin, return the heat to the lowest setting and, stirring constantly for 2 to 4 minutes, until the sauce thickens. Add salt to taste. Note: Many recipes for this dish include heavy cream. Such recipes may be delicious, but they’re not authentic. The creamy consistency here comes from tempering the eggs and emulsifying them with oil, cheese and cooking water.

Documentary with QA ties coming up

People are invited to attend the Zoom or live premiere of “Together They Were Stronger,” a documentary about four Seattle mothers, including Evelyn Chapman from Queen Anne, who worked to pass the 1971 “Education for All” law for disability education rights in Washington state. Calendula Another precocious bloomer that likes the weather on the cool side, calendula starts in May and blooms through July if deadheaded and watered in the heat. Like erysimum, they will perk up again when the heat of summer fades for a second show if trimmed and watered through the summer. As a bonus, calendula flowers are edible, making lovely additions to salads and summer beverages and are a common ingredient in natural salves and creams. These are “half-hardy annuals” that can seed around, but I always find them a welcome presence. You can sow them in autumn or earliest spring or buy started plants now. Perennial geraniums Let’s get the names clear first. Botanically, these plants, like geranium endressii, or G. pilostemon, own the name geranium, rather than the pretender windowbasket annuals who took it over — those are really called pelargonium. These are mat-forming perennials that make a great groundcover, bloom for months and host pollinators, too. Their leaves often take on red fall tones, too. They’re not evergreen, but you can’t have everything. The best I’ve found so far is geranium “Rozanne,” which blooms in violet blue on my very dry hillside from April through October. Seriously. Agastaches The blue/purple agastaches have proven strong performers in my parking strip, which is even worse soil than my dry hillside. While I adore the orange and yellow

agastaches, the blooms are more sparse, and the plants seem flightier. The optimistically named “Blue Fortune” and “Blue Boa” offer showy, cattail-like blooms — with “Fortune” being more blue, and “Boa” being more violet. They emerge early, ready to cover over dying spring bulb foliage, and bloom from May through October, helped with a bit of deadheading, which you won’t mind because it releases a delightful minty fragrance. Rudbeckias More reliably perennial in most situations than echinaceas, the rudbeckia family includes many stalwart bloomers for late-season color, from the old standby black-eyed Susan “Goldsturm” and “Henry Ellers” for front and mid-border to lesser-used tall varieties like R. iacinata (cutleaf coneflower — droopy lemon petals with a green eye) or giant R. maxima with a black center. The black-eyed Susans don’t even get started until July and then just keep going until October. Note that the appealing R. hirtas that appear in nurseries in July like “Cherry Brandy” in rusty red are not typically perennial. Annuals Pelargonium, what many call geraniums, may be the longest-flowering annual for a sunny spot. Pair it with fragrant alyssum, and you have a bulletproof combo for the season. The alyssum may even return if it’s happy. Pansies and especially their wilder viola cousins, bloom superearly, sometimes shrugging off snow, for about two months and reprise their performance in fall if given compost and water. Certain violas, like “Molly Sanderson” and “Etain” may return and expand over the years. Try sprinkling some of these into your border plans and watch them boost your flower power.

Seattle woman turns bagels into a new venture with pop-ups, delivery service

QA&Mag News editor Christina Darling’s 2021 pandemic BINGO card didn’t include starting a new career by launching her own bagel business, Darling & Company Handcrafted Bagels. After the COVID-19 pandemic derailed a trip to New York City with her brother, where eating bagels featured prominently on the itinerary, Darling said, instead of abandoning her gustatory explorations, she decided to take bagels into her own hands, literally, by learning to make her own. “I said, ‘No, I can do it,’ ”Darling said. Up until that point, Darling had never done anything more than eat a bagel, let alone consider making a career out of them. Soon after beginning, however, Darling said she was determined to master the bready treats. Eating a bagel and baking them, however, are very different things. “I learned a lot on YouTube,” Darling said, adding she watched videos on bagel making frame by frame until she mastered a technique. Hand rolling her creations, she said, is something she is still perfecting. Still, Darling was satisfied enough with her progress after her first weeks of practice that she started using her family and friends as test subjects. It was at that time that she debated whether her bagels could become a source of income. Darling said she has worked in numerous jobs throughout her adult life, including at her parents’ publishing company, and considered working for a non-profit after

volunteering at a hospital, but she wasn’t sure if it would be a good fit. Then the pandemic hit, and Darling put future career plans on hold while she quartantined with her daughter at her family’s home in Denny-Blaine. After gaining confidence in her bagelmaking skills, and ever mindful of a need for income, Darling said she thought it was worthwhile seeing if her bagels would pay the bills. “I found I really had a reception that I needed with my bagels,” she said. Darling said she was also pleasantly surprised to discover that Seattle residents were clamoring for bagels. “It’s like bagels have a special power that’s interesting,” she said. “The people that care, care a lot.” Darling said residents’ hunger for bagels resulted in a business boom during the pandemic with pop-up bagel shops becoming popular in the region during the past year and many turning into brickand-mortar stores. “It turns out it’s an extremely thriving business,” she said.

BAGELS, FROM PAGE 7 Darling said she quickly found her niche in that scene, adding that even though she is new to the business, other bagel makers have been kind and welcoming, offering her tips and camaraderie in the process. And even though each bagel maker is trying to make money, they don’t view each other as competitors, Darling said, primarily because bagel popularity is a matter of taste. Compared with others’, Darling said her bagels are slightly crispy on the outside but have a good chew to them, while other bagel makers go for a crunchier exterior. With a year behind her, Darling said she is satisfied with her career as a bagel maker. Darling said she cannot call herself a baker because her sole focus is bagels and bagel making a specialized skill. She has no time to venture into other areas of baking because not only are bagels labor intensive, taking two to three days to finish a batch from start to finish, they are also temperamental in nature. Darling said depending on the day, a batch of bagels will come out beautifully golden brown, perfectly formed and delicious. The next day, however, even following the same recipe and using the same baking

conditions will produce a batch of bagels that are flat, colorless and bland, Darling said. While she doesn’t delight in hearing about others’ oven struggles, it makes her feel better knowing she is not alone. “Bagels are just hard to make,” she said. “They’re so multi-layered in their challenges.” Darling said she is also still growing as a bagel maker and hopes to increase the variety of bagels she sells either as standalones in an order or as the base for her sandwiches she sells at her bagel pop-ups on weekends, frequently outside of Reuben’s Brews in Ballard and other breweries with other like-minded entrepreneurs. Darling said she is in no rush to grow her business by taking on an employee or move into her own brick-and-mortar, content, at least for now, to work out of a commercial kitchen in Rainier Valley and operate her online and weekend bagel business without the worry of overhead and payroll. She also values her freedom. “I like the feeling of working for myself,” Darling said.
