Photo by Jessica Keller A large wind and rain storm last week wreaked all sorts of havoc in Seattle, causing power outages for many and downing utility lines and trees throughout the city, including one in front of the Seattle Pacific University Student Union Building. On Friday afternoon, the area in front of the building was cordoned off and the remnants of the tree and its root system had yet to be removed. As a result of the power outages, West Point Treatment Plant in Magnolia experienced a series of voltage fluctuations that caused the in-plant pumping station to shut down repeatedly between midnight and 2 a.m., Jan. 13. According to a county press release, the emergency caused an estimated 11 million gallons of stormwater and sewage to overflow without treatment into Puget Sound. Approximately 80 percent was stormwater and 20 percent was sewage. King County also reported that large volumes of rainfall throughout the day and into the night exceeded the capacity of the Richmond Beach and Medina pump stations. These two stations overflowed estimated volumes of 165,000 and 80,600 gallons, respectively, according to the press release. Beaches at Discovery Park, Madrona, Carkeek, Golden Gardens, Richmond and Medina Park were closed following the storm, and people were warned to avoid contact with the water while it was tested. As of Monday morning, all the beaches, except for the one at Discovery Park, had been reopened.

Why do some cheeses stink? When you take a whiff of stinky cheese, that smell is coming from one of its very important ingredients: microorganisms. Microorganisms are so small, you’d need a microscope to see them, but sometimes they give off a big stink. To find out more about stinky cheese, I talked to my friend Minto Michael. Michael is a professor of dairy science at Washington State University and told me microorganisms do a few different jobs to help make cheese. These microorganisms can consist of bacteria, yeasts or molds, but bacteria are the most important in cheesemaking. When cheesemakers add lactic acid bacteria to milk, the bacteria help get the milk ready for another ingredient called rennet, an enzyme. This enzyme helps turn the milk from a liquid state into more of a solid that will become cheese. While the bacteria may do a lot of work to help make the cheese, there are benefits to the job. “These bacteria eat up the milk sugar, milk proteins and milk fat, so that they can get energy and multiply,” he said. As the bacteria eat to get energy, they can also produce a stinky gas. The gas is made up of molecules. Some of these molecules that include ammonia or sulfur compounds are responsible for the smell in a lot of stinky cheese. When certain molecules come in contact with receptors in your nose, your brain helps you figure out what you are smelling. Maybe your brain tells you to stay away from stinky cheese — or maybe it makes you want to try it. Michael told me about some of the most smelly, or pungent, cheeses. One of them is called Roquefort cheese. This is a kind of a blue cheese that gets its odor from a mold named Penicillium roqueforti. If we looked at it under a microscope, we might notice that it

KIDS IN FOCUS SPONSORED BY: Schedule an orientation to see how Kumon can benefit your kids and get is a kind of paint-brush shape. Penicillium in Latin means “painter’s brush.” Meanwhile, a different kind of bacteria called Brevibacterium linens is responsible for the smell and flavor of some other blue cheeses. Brevibacterium linens is not only the bacteria responsible for one of the smelliest cheeses on the planet called Époisses, but is also the same bacteria that makes the smell of human body odor. When people make cheese, sometimes they will let it age for a while. For some cheeses it may be two months or even two years before they are eaten. As the cheese ages, the aromas

often start to get stronger and stronger. Of course, not all microorganisms produce gases that are stinky. One of my favorite non-stinky cheese varieties is made at Washington State University. It’s a sharp white cheddar called Cougar Gold that comes in a can. After investigating your question, I was curious to find out what kind of bacteria is in this cheese. It turns out the answer is a topsecret recipe even I’ll never know. But it’s no secret that it tastes and smells delicious. Sincerely, Dr. Universe

Letter to the editor: Queen Anne Library needs services restored Editor, It is long past time for the Queen Anne Library to be opened for returning books and picking up holds. Due to the pandemic, families and students dealing with online schooling and all citizens of Queen Anne Hill have had our world diminished and constricted. We need access to books now more than ever. The library has been closed since March. While many other libraries are open for returns and pick-ups, Queen Anne is still closed. My requests have been met with vague statements about the governor’s requirements and staff limitations, but these no longer suffice. It appears to me that it is time to hold to account the chief librarian, the library board and

Dr. Universe

the City Council for their failure to take even small steps to restore library service to Queen Anne. It would take almost no budget to open a book drop. While staff might be needed to operate a pick-up site, their numbers and hours could be few. Staff would face no risks at Queen Anne that are not already being viewed as acceptable at other locations, including Magnolia and Ballard. I have heard nothing of staff layoffs during this time, which begs the question of what are they doing that means they cannot provide service to Queen Anne? We have a beautiful library, but the lesson I have learned is, what Andrew Carnegie giveth, the City of Seattle taketh away. John Rose Queen Anne

TO YOUR HEALTH City of Seattle rolling out COVID-19 vaccine distribution program Last week, the City of Seattle launched its first mobile vaccination teams to support ongoing COVID-19 vaccination efforts in Seattle and Washington State. Earlier this month, the Washington State Department of Health signed off on Seattle serving as a vaccine distributor, which allows the city to receive weekly shipments of the vaccine and administer it to residents and workers. As part of the vaccination effort, the Seattle Fire Department has launched two mobile vaccination teams to inoculate nearly 1,000 residents and staff at adult family homes, according to a press release from the city. AFH’s serve both older adults and people with disabilities. “While we had a difficult start to 2021, I believe we have so much hope on the horizon with vaccinations,” Mayor Jenny A. Durkan said in the press release. “Seattle continues to have the lowest cases and hospitalizations of every major city, and our bold collective action shows that together we can save lives and combat the pandemic. There is so much at stake to quickly get our communities vaccinated. Most somberly, more than 375,000 people have lost their lives in our country due to the COVID-19 virus. And the burden of the pandemic has fallen disproportionately on our Black, indigenous, and Latinx communities. “We know that Seattle’s road to reopening and economic recovery starts with vaccinations, and today is the first step in the City’s efforts to significantly increase the vaccination rate and ensure the vaccine is easy and accessible to our City’s workers and residents,” Durkan continued in the release. “Even as more of us begin to get vaccinated, we’ll need to continue wearing masks, practicing social distancing and following all public health guidance.” According to the press release, the city is distributing the Moderna COVID-19 vaccine and will request vaccine allocations from DOH weekly. “It is crucial that we step up efforts to rapidly vaccinate vulnerable Seattle residents,” City Councilmember Lisa Herbold said in the press release. “The City of Seattle has shown true leadership in the fight against coronavirus from the start, in the absence of federal coordination. Early on, we stood up City-run COVID testing sites that have provided more than 560,000 free tests for Seattle residents, thanks to the extraordinary efforts of the Seattle Fire Department, coordinating with Office of Immigrant and Refugee Affairs, Public Health – Seattle & King County, Finance & Administration Services, Seattle Police Department and others. This new effort to speed vaccination will save lives and help us not replicate the unacceptable disparities we have seen in infection rates in BIPOC communities.”

The Seattle Fire Department’s mobile vaccination teams began vaccinating at adult family homes Thursday. The mobile vaccination teams are comprised of two registration technicians and one firefighter/EMT or firefighter/ paramedic. The teams were expected to vaccinate 10 AFHs per day. The SFD teams are serving AFHs not included in the federal government’s partnership with CVS/ Walgreens, according to the press release. Public Health — Seattle & King County helped identify the locations to be served. The SFD teams expect to vaccinate every AFH in Seattle not served by the federal program by Jan. 24, with the second booster dose provided Feb. 21. 24. According to the press release, Seattle Fire is the first fire and emergency medical services agency in the state to be approved to administer the COVID-19 vaccine. “At the beginning of the pandemic, we sought approval to test community members for COVID-19, and we are prepared to pivot our work again to help in this new capacity,” Fire Chief Harold Scroggins said. “Through our Mobile Vaccination Team program, we will be able to deploy to congregate facilities to administer the vaccine to those who need it most. I am proud of our members for stepping up to serve others once again, and know that through widespread vaccination, we can save lives … and we can end this.” Based on vaccine supply, Seattle can broaden its mobile vaccination efforts between the first and second vaccination doses given at the initial group of AFHs. During the expanded vaccination efforts, SFD will likely partner with communitybased organizations and providers serving older adults who may be unable to receive a vaccine through traditional health care systems, according to the press release. As vaccines become more widely available in Seattle, the City is prepared to partner and launch mass vaccination hubs, similar to the existing COVID-19 mass testing sites. More information will be available in the coming days. The State Department of Health determines who is eligible to receive a vaccine and when. Currently, Washington is vaccinating people identified in phases A1 and A2: high-risk workers in health care settings, high-risk first responders and long-term care facility residents. Later this month, Washington will begin phase B1 of vaccinations for people over 70 years old and people over 50 who live in multi-generational households For more information visit https://coronavirus. wa.gov/. Residents are advised to continue to follow all public health guidance and go to https://www.kingcounty.gov/depts/health/ covid-19.aspx for more information.

The project calls for the existing Safeway to be demolished and a seven-story, 324-unit building with retail — a 50,000-square-feet Safeway — and parking for 344 vehicles built in its place. The project is coming before the Design Review Board for a second recommendation meeting, Feb. 3. SDCI will accept written comments regarding the design of the new development through Feb. 2. Submit all comments and requests to be made party of record to PRC@seattle. gov or Department of Construction & Inspections, ATTN: Public Resource Center, P.O. Box 34019, Seattle, WA 98124-4019. SEATTLE PACIFIC UNIVERSITY As well, residents have until Jan. 25 to comment on what they would like professionals to study when they complete an Environmental Impact Statement on elements included in Seattle Pacific University’s proposed 20-year Major Institution Master Plan. Suggested scoping topics include proposed height, bulk and scale of new buildings; land use; parking; traffic and transportation; and shadows on open space. The Citizens Advisory Committee for the MIMP project further refined the scope of the EIS by requesting closer looks at parking, historic buildings, plans for open space and impacts on neighbors from additional residence halls proposed in the plan. At a meeting last week hosted by the Queen Anne Community Council Land Use Review Committee, members discussed what they would like to be studied as part of the EIS. One source of concern was what impact closing certain streets could have on residents, especially those who travel through the neighborhood to get to Nickerson Street, as well as impacts to traffic because of those closures. Resident Amy Carlson said she would like SPU to include dedicated traffic signals at some

of the intersections on campus. While there is a left-turn signal on Nickerson for drivers turning onto Third, there is no left-turn signal for drivers on Third turning left onto Nickerson. When students are crossing Nickerson at Third to get to or from classes separate from the main campus, traffic on Third backs up during those times, and a left-turn signal could help alleviate problems. QACC member Sharon LeVine said she wants to ensure the study takes into account cumulative impacts the MIMP will have in the neighborhood. “They need to look at what’s going to happen to our community in years to come,” LeVine said. To comment on what should be included in the scope of the Environmental Impact Statement, people can mail their comments to Seattle Department of Construction and Inspections, Attn: Abby Weber, Land Use Planner, PO Box 34019, Seattle, WA 98124. Comments can also be emailed to prc@seattle.gov. People can review the SDCI project file by going to http:// web6.seattle.gov/dpd/edms/ and entering in the project number, 3035844-LU.
