Welcome to The Place, the inspiring magazine from Chewton Rose. Your diary is probably beginning to fill up with exciting things to see and do over the coming months, and we have some more ideas for you in our guide to the summer. From vintage dresses by Yves Saint Laurent in County Durham and art classes in Sussex to Audrey Hepburn in London, there’s something for everyone. The Season begins on page 7. There’s another kind of welcome awaiting you in this issue, too, as we take a look at the entry hall. It’s the room that greets you upon your return and is, of course, the first thing guests see when they come to visit, so ensure yours makes the right impression. From colourful and bold wallpaper, to luxurious marble flooring, our The Room feature (page 24) is full of ideas for creating the wow factor we all want from our hall. Stepping outside, The Garden (pages 26-27) this issue focuses on swimming pools. Who hasn’t dreamed of having their very own private pool – perfect for splashing about in, swimming and, of course, lounging next to? We tell you what you need to know about commissioning your own garden pool and where to find the best outdoor furniture in which to relax and enjoy it. You may like your water to be more expansive. If, indeed, you can hear the oceans calling, you might be considering investing in a yacht. What Ken Freivokh doesn’t know about designing amazing vessels, with equally amazing interiors, isn’t worth knowing. We catch up with Ken and look at some of his latest designs on page 20 (The Designer). The summer months, of course, mean not just getting into the garden more – or out onto the open seas. We all like to be out and about as the sun shines, so once again we’ve rounded up the best restaurants and bars around the Chewton Rose areas, including a must-visit gastropub in Oxfordshire and a homely Italian in Gerrards Cross. We’ve also teamed up with the brilliant HIX Mayfair to offer The Place readers an exclusive complimentary Hix Fix cocktail. See page 30 for details. In our The Knowledge pages we turn the tables on the Chewton Rose teams and ask them what they think makes a good estate agent. See if you agree with them on page 34. All this, plus an unrivalled selection of Great British Homes, which begin on page 37. Enjoy the issue, and have a super summer.

SE ASON ALL ABOUT YVES

The Bowes Museum in County Durham, in collaboration with Fondation Pierre Bergé, presents the first exhibition of the work of Yves Saint Laurent this summer, with 50 of his iconic garments on display. One of the 20th century’s most influential designers, Saint Laurent, from 1962 onwards, defined a style of the modern woman’s wardrobe with quintessential elements: the pea jacket and trench coat; the tuxedo; the safari jacket; and the first pantsuit and jumpsuit. Passionate about the arts, he paid homage to many artists in his collections, with pieces such as his Mondrian dresses (above). ‘Fashion fades, style is eternal,’ Yves Saint Laurent once said. Come see the sentiment for yourself. Yves Saint Laurent: Style is Eternal 11 July to 25 October www.thebowesmuseum.org.uk

AGENT’S SECRET ‘I took part in RideLondon (www.prudentialride london.co.uk) last year (raising money for Magic Moments) and I’m really looking forward to this year’s event. The amateur and professional cycling races will go through Surrey on 2 August. The route and highlights of the 2014 race (including a video) can be found on the website. Watch out for road closures, which could affect your plans for that day.’ Guy Leaning, Senior Branch Partner, Chewton Rose, Cobham

YOU’VE BEEN FRAME[D]

Following the world premiere at Sadler’s Wells in April, the National Youth Dance Company is taking its latest show on the road. The troupe will perform Frame[d], a specially commissioned piece, created by choreographer and the London theatre’s associate artist Sidi Larbi Cherkaoui. WATER, WATER EVERYWHERE Some 250 yachts will set sail at Falmouth Week, one of the south coast’s most anticipated summer events and the UK’s second-largest regatta (Cowes is first). While it’s business on the waves with a race schedule to challenge the most competitive sailors, it’s party time on the shore with a programme of events throughout the day and night – teas, a walking carnival, champagne prize-giving, a harbour firework display and more. ROCOCO ON!

The exuberant Rococo ceiling of London’s Foundling Hospital Court Room – designed by Georgian craftsman William Wilton – takes centre stage at an exhibition exploring the 400-yearold tradition of decorative plasterwork. Smaller objects, including beautifully designed reliefs, are also on show alongside design drawings, models and photographs of the work of contemporary architectural sculptor and stucco specialist Geoffrey Preston. Lines of Beauty: Rococo Plasterwork and the Art of Geoffrey Preston Until 6 September www.foundlingmuseum.org.uk

As a young aspiring star, Audrey Hepburn danced in revues at London nightclub Ciro’s. Now, 65 years later, she is to be celebrated in an exhibition at the National Portrait Gallery that occupies the space Ciro’s once did. Rarely seen images from the Hepburn family and famous portraits will showcase her life and career. From growing up in the Netherlands, to becoming a Hollywood icon and her later work as a philanthropist, the exhibition celebrates one of the world’s most photographed stars. GO FOR GOLD

For 50 years, Kew has taken care of the world-famous Wakehurst country estate in Sussex, and year-long celebrations are under way for the Sussex botanic gardens’ golden jubilee. A golden theme is running throughout the gardens, including a plant trail with many of the species chosen for their glow, while wind chimes and golden benches help stimulate all the senses. A place of outstanding natural beauty all year round, this promises a summer crescendo. Events take place all summer, but visit in July to catch the annual Scything and Cider Festival, too. 50 years of Kew at Wakehurst All year www.kew.org

STANDAR D Luxurious and grand, yet moments from transport and shopping links, Park Hill has it all

CLOCKWISE FROM TOP LEFT: The grand drawing room has patio doors leading to the garden, making it perfect for warm-weather entertaining; a glimpse of one of the eight bedrooms, which is brought to life by an elegant chandelier; the bright conservatory makes a great breakfast area; mirrors in the marble hallway create light and space

The first glimpse of park hill often requires a double take. The stunning double-fronted Victorian house punctuated by a bright red door; an elegant driveway bordered by a stately wall for privacy, decorative shrubs, even a turret – the facade cuts an impressive figure. The hint of disbelief lies in the location. This wonderful eight-bedroom family home offers capital living, just minutes from the shops, restaurants and amenities of Ealing Broadway in one of London’s most desirable westerly suburbs. Step inside and be wowed by a luxurious blend of period features and thoroughly modern renovations, enhanced by owner Tala Mahdieh, who has lived here for 10 years, attracted by its age and character. The décor is on another level – a palette of neutrals partnered by natural woods and marble, brought to life by elegant glass chandeliers, standout statement pieces, golden fittings and gilded furnishings running from room to room, floor to floor. Ornate ceilings, fireplaces and exquisite touches dovetail for a truly magnificent, breathtaking interior. ‘The style is inspired by Louis XVI and the opulent Rococo period. There is attention to the finest detail in every room,’ Tala says. ‘It is luxurious and grand for its location, but equally befitting such a beautiful Victorian house.’ www.chewtonrose.co.uk 11

CLOCKWISE FROM TOP LEFT: The kitchen has a black marble-topped central island – perfect for entertaining; grandeur inspired by the Rococo period influences the home’s décor; the first glimpse of Park Hill often requires a double take; the outdoor, heated swimming pool turns the garden into an oasis – extremely rare for a property in the capital

A light oak staircase and mahogany banister draw the eye in the hall, where cream marble floors, imported from Spain, extend throughout the ground floor, complemented by white decorative architraves and cornices; large mirrors add to the concept of space. To the left of the front door is one of three reception rooms – a family room with fireplace and bookshelves, comfy sofas and intricate woven chairs. To the right is the dining room that seats eight comfortably, its deep bay window dressed with sumptuous drapes. Further along is the grand drawing room, long and spacious with patio doors leading outside, making it perfect for warm-weather entertaining, but with comfy footstools, chairs and soft-glow lighting for cosy winter gatherings. The bespoke kitchen is simply spectacular. Black marble worktops contrast with fancy white cabinets, echoed in a long central island. It opens up into a utility room and two marble steps lead to a large light-filled conservatory that makes for a perfect breakfast area with modern art pictures, a foil to the classic glass table and chandelier. Doors lead on to the rear garden terrace. The garden is a third stop-you-in-your- sunken stone swimming pool. ‘It’s the best parts of the countryside tracks feature of Park Hill. Editor’s picks Get tropical in the bedroom, be lazy in the garden and always make time for tea, says The Place editor Steven Short

Fine dining I have a bit of a ceramic habit and have, over the years, amassed a fairly decent mix-andmatch collection of dinnerware. So my fancy was a bit taken by news of a new collaboration between Portmeirion and fashion brand Ted Baker. The somewhat unimaginatively titled ‘Ted Baker Portmeirion Fine Collection’ features a 41-piece vintage-style floral bone china dinnerware range of plates, cups and saucers, along with this rather lovely coffee pot and sugar jar, all in one of those kitschy florals that will remind you of something your granny had. The range is just about to hit the shops, but you’ll have to find your own rabbit elsewhere. www.portmeirion.co.uk Beauty in nature It’s nearly summer so time to start thinking about bringing the outside in. I love the new collection of tropical-inspired Amazilia bedding, from Harlequin Studio. The work of studio designer Louise Collis (who worked on the designs for 18 months), the prints feature dainty hummingbirds and butterflies, fashionable feathers, glossy oversized leaves, flower heads and seed pods bursting into fruit. There are wallpapers, too (in case my suggestion for pared-down papers offended you), as well as spray-dyed velvets if you really want to go the whole hog and turn your room into an indoor greenhouse. www.harlequin.uk.com 14 www.chewtonrose.co.uk

ABOVE: Dine in style with this elegant bone china vintagestyle dinnerware set by potter Portmeirion and Ted Baker

Into the blue I’m not keen on Pantone’s Colour of the Year for 2015. They say Marsala, I say rusty brown (it reminds me too much of the horrible DM shoes my mum used to make me wear to school). One colour trend for the year that I do like is for inky blues – especially when teamed with white or off-white. Organic paint company Ecos does a particularly rich and lovely shade – Artistic Blue – which is great as an accent or feature wall. I also think it would look brilliant in a smaller bedroom to create a real cocooning retreat. www.ecospaints.com

Stars of stripe I’m a big fan of bold statement wallpapers and feature walls, but sometimes only a classic will do. Little Green wallpapers has revisited the past for its ‘Painted Papers’ range of 10 striped papers. Using historic patterns sourced from several archives (including those at English Heritage and Manchester’s Whitworth Art Gallery), Little Greene’s papers are printed using traditional surface-printing methods, giving them a nicely tactile, slightly textured appearance. Among the designs on offer are Colonial Stripe (c1840) – a reproduction of wallpaper found in a private residence in St James’s Place, London, and Broad Stripe (c1825) – a classic Regency style perfect for grander rooms. From £49 per roll. www.littlegreene.com

Here come the robots I used to quite enjoy mowing my lawn – I now have a more ‘minimalisty’ garden that is all patio and architectural borders – but think I would have been tempted by this new machine from Bosch. The Indego Connect (£1,299.99) robotic mower uses clever technology that allows you to control it via an app on your smartphone or tablet (Wi-Fi connection required). Just tell it how you want it to mow your lawns and, like your own personal gardener, it will get to work – you don’t even need to give it a nudge. It’ll cut in parallel lines, meaning no patches are missed, and it will neatly cut to your borders. www.bosch-garden.com

LIFE

With impressive grounds and space for entertaining on a grand scale, Marling House is the perfect family home

Set back and screened from passers-by by a cloak of trees, shrubs and borders, with 10 acres of park-like gardens and grounds to either side and fields to the back, stands Marling House, a magnificent mid-19th-century seven-bedroom Victorian mansion. It has a tennis court, paddocks and an adjoining three-bedroom apartment. Plus, it’s within walking distance of the picturesque village of Wadhurst and its train station, and a 15-minute drive to Royal Tunbridge Wells. In short, Marling House offers country living with knobs on. ‘Everything about this place is perfect for the dynamics of family life,’ say the current owners, who have lived here for the past 15 years. ‘The house is so large that people can have peace and privacy to do whatever they like. We have five children and even when everyone is home and the house is full, it works very well.’ Imposing and stately outside, inside it is warm and welcoming, the history and original features brought to life in a wonderful blend of colour and a perfect marriage of formal yet relaxed, light but cosy, airy and inviting. The ground floor has stripped floorboards throughout. The grand hall, with central staircase, leads to the stunning drawing room. In winter, fires are lit throughout, adding glow to all three storeys. Each of the bedrooms is double, there is a wine cellar, laundry room and storage room, and a garage with built-on playroom. But there is more to it, for the owners: ‘This is also a splendid party house, with wonderful outdoor space for entertaining. And there’s plenty of scope for someone who wants to keep horses or other animals, or to enjoy a range of sporting activities.’ 16 www.chewtonrose.co.uk

LOVE FOR SAIL Dreaming of your own yacht? Meet the go-to designer

Ken Freivokh leads one of the world’s top yacht styling and interior design teams, working from a studio overlooking the River Hamble in Hampshire. Ken and his team are renowned for their ‘uniquely creative design solutions’. As well as making one-off custom superyachts, the design studio has long-standing working

88M MALTESE FALCON One of the largest privately owned sailing yachts in the world, Maltese Falcon is unique – a true product of thinking outside the box. It is a sailboat with an innovative rig that allows the owner to sail singlehanded and change the sails at the touch of a button. The interior is fully in keeping with the high-tech nature

20 www.chewtonrose.co.uk

of the yacht – a combination of clear, expressed carbon and aluminium honeycomb, with some fine veneers for warmth and contrast. The vessel is treated as a transportation machine, and all the interior elements – from tables to beds to sofas and recliners – are customdesigned to suit the unique nature of the project.

relationships with some of the world’s leading yacht production companies, including Discovery Yachts and Sunseeker. A keen sailor, Ken has a Yachtmaster Offshore ticket, and competed for many years in Royal Ocean Racing Club offshore and international Dragon regattas. Here, he talks us through some of his luxury creations.

There is a myriad of unusual features, from glass floors in the multistorey atrium and stairs to skylights, which include shutters that are similar to the iris of a photographic camera. The total interior is designed to maximise long sight lines, integrate spaces at various levels, and create continuity of space and feel throughout.

145M FORTISSIMO Fortissimo was developed in collaboration with the Italian shipyard Fincantieri and will no doubt be the fastest yacht in the world at that size, propelled, as it is, by a massive gas turbine. The total concept, and, particularly, the structure of the yacht, is unique, more closely related to bridges and massive land-based projects, with fully expressed Vierendeel beams. Perhaps more akin to a sports car than a traditional yacht, the structure and machinery is an integral part of the total interior.

107M STILETTO Developed in collaboration with the Dutch shipyard Oceanco, Stiletto is as innovative a motor yacht as Maltese Falcon proved to be as a sailing yacht. The concept is unique in that it has two quite distinct swimming pool areas – one by the sea terraces, gymnasium and beach club, and a further one forward, surrounded by a waterfall, bars and the helipad. The gymnasium opens to a massive aquarium, which backs on to the swimming pool and is flanked by large TV screens. The interior eschews the usual arrangement of several saloons to instead have a most handsome double-height space, with mezzanines and spiral staircases linking spaces at various levels. A high-tech interior is softened by carefully selected leathers and deep-pile carpets. 50M PEARL PG50 MOTOR YACHT Currently being built at the Mayra shipyard in Antalya, Turkey, the PG50 has been designed from the inside out, making extensive use of glass for maximum transparency and panoramic views from all internal spaces. The bulwarks/parapets are all glass, to ensure that views are uninterrupted. The supply and extract of air to the engine room is achieved through graceful superstructure arches, rather than unwanted internal ducts that would detract from the accommodation and the views. The interior includes amazing metal surfaces applied over lightweight honeycomb cores.

FANCY A SUPERYACHT? POINTS TO CONSIDER

55M HEESEN MOTOR YACHT This futuristic project, built at the Dutch shipyard Heesen, makes use of exotic materials to achieve unique surface finishes and maximum transparency, particularly within the multistorey atrium. The furniture is largely custom-made and designed to suit the space and the available views. Sofas can rotate to create different seating groups and/or to form a cinema group to enjoy the best view of the massive TV screens, very much along the lines of a personal cinema.

While superyacht interiors are designed for clients who also require penthouses, farmhouses and mansions, it is important to bear in mind that a yacht is a transportation machine, more closely related to a road vehicle or a plane, rather than a cottage or palace. As such, the materials, the structures, the systems and the look and feel of both interior and exterior should reflect that. Weight is paramount, and while it is possible to use marble, wood or granite, they must all be thin surface veneers, bonded to a lightweight substrate, such as an aluminium or carbon honeycomb or foam. Sound and heat insulation are essential, to isolate the noise of

the engine, propellers and the sea itself. Exotic sound-deadening and heat-insulating materials must be included within the bulkheads and external skin. To maximise insulation, yacht interiors are ‘floating’, suspended with resilient mountings from the structure of the yacht to avoid vibration and noise transmission. GR AND opening

It’s the first thing guests see when they visit you, so make sure your hallway leaves a lasting impression, says Aileen Scoular For a relatively small space (usually), the hallway offers tremendous design freedom. The sense of anticipation it can represent makes this room the perfect space in which to create a vibrant first impression, and to experiment a little. Unlike other rooms where furniture dominates, the flooring in a hall can be used to anchor your overall design scheme. Timber and stone, either reclaimed or new, remain classic choices. ‘A limestone floor is durable, hard-wearing and looks good for years to come,’ says Alvaro de Ferranti, a specialist in luxury flooring finishes (www.deferranti.com). He believes pale limestone is falling out of favour, with many clients now choosing dark polished limestone in elegant shades of brown – from African Brown to Bitter Chocolate. At Paris Ceramics (www.parisceramics.com), an authentic French flavour can be created with Dalle de Bourgogne limestone, reclaimed from properties in the Burgundy region. It has a unique patina and a random appearance, creating a handcrafted effect. Kirsten Rasmussen, project manager at Paris Ceramics, also recommends Pierre du Mont, a newly quarried stone that has been hand-distressed to replicate the look of antique reclaimed flagstone. Reclaimed timber will always enhance a period home, and The Reclaimed Flooring Company (www.reclaimedflooringco.com) has a superb range, from antique parquet to original Victorian painted pine flooring. Other ways to create a dramatic entrance include a contemporary interpretation of encaustic cement tiles – Fired Earth (www.firedearth.com) and Mosaic del Sur (www.cement-tiles.com) have a selection for any colour scheme – or stencilled stone. ‘We have all kinds of wonderful patterns that almost look like carpets in stone,’ says Alvaro. Most hallways will feature a staircase, and if you have the luxury of designing and commissioning your own, it’s important to consider the existing architecture. Bisca (www.bisca.co.uk) specialises in bespoke staircases and balustrades, and is often commissioned to produce helical, spiral and cantilevered designs. ‘The ability to tailor an exact shape or choose specific materials is becoming more important to the overall success of a project, as the staircase must be integrated sympathetically into the property and not look like an obvious add-on,’ notes design director Richard McLane. Moving on to the walls, this is where your decoration scheme can soar into design fantasy. While an exuberantly patterned wallpaper might overwhelm in a reception room, no such limits exist in the hallway. ‘A specialist wallcovering creates a truly bespoke finish – for example, I love natural textures such as silk or linen for a contemporary look,’ says Nicky Parkin, co-founder of Luku Home (www.lukuhome.com). ‘There are a host of British wallpaper designers around at the moment with unique and beautiful designs.’ 24 www.chewtonrose.co.uk

Nature is currently informing the most fashionable prints and patterns, bringing birds, f lowers, feathers and insects onto our walls. Luku Home has exquisite designs that feature bees and dragonflies, while Scion’s Diva floral (www. scion.uk.com) is guaranteed to brighten your mood when you come through your front door. Another key trend references location: Little Greene’s ‘Révolution Papers’ (www.littlegreene.com) plucks archive designs from Paris and London that include damasks and toile, while Love Maps On… (www.lovemapson.com) has created a range of wallpapers based on vintage county maps. Painted finishes can be imaginative, too: colour-block single walls in a bold hue, introduce vibrant painted panelling, or add a band of contrasting colour above the skirting. A stunning effect can also be achieved with a textured finish, such as Urbane Living’s ingenious cork bricks (www.urbaneliving.co.uk), or a wall of smart cutand-faced slate. All that remains is to dress and light your space. Depending on size, hallways can become an area for reflection – a useful spot for books, an armchair for reading, or an antique writing desk. A narrow console table, a vintage trunk, or a slim sideboard are perfect for displaying glassware or an informal floral arrangement. Statement lighting is also a must – consider outsized pendant lamps or glass chandeliers with exposed bulbs. Fritz Fryer (www.fritzfryer.co.uk) has a good selection, and also offers a bespoke lighting design service, while Cornwall’s Any Old Lights (www.anyoldlights.co.uk) specialises in reclaimed marine and antique lighting for an industrial effect. Remember, first impressions count.

THE GARDEN

THE BIG BLUE It’s summer, and time to lounge by your very own pool, says Aileen Scoular. Pool house optional…

Britain has a grand history of outdoor public lidos, some of which are now architecturally listed, but it has been slower to adopt the European love of private outdoor pools. Now, the private pool is on the rise, thanks to a changing climate and the desire for health-inspired family time. In expansive country homes, creating a swimming pool within your garden or the wider estate can also be a sound financial decision. But more important than the value it may add is the fact that today’s outdoor pools and pool houses provide much more than just a place to swim. David Horne of Origin Leisure, one of the UK’s leading luxury swimming pool creators, believes that pool houses now add invaluable living space to the home. ‘The scope of what we do has changed,’ he says. ‘The typical pool now has a steam room, a sauna and relaxation areas. Clients often install an entertainment system, or a kitchen and bar area. That way, the whole family can decamp to the pool house for the evening.’ The idea of floating under the stars is certainly a diverting one. A well-designed pool or pool house can also become an attractive garden feature, especially when landscaped in a sensitive way. At Hanham Court in Bath, garden designers Isabel and Julian Bannerman created a small, but artfully romantic, swimming pool surrounded by antique statuary and planters of foliage. The effect is idyllic and complemented the rest of the country estate perfectly. RHS Chelsea Flower Show medal-winning designer Ruth Willmott 26 www.chewtonrose.co.uk

has more useful advice: ‘Consider aligning the pool with an axis of the house or an exit from a family room. The design will also be more effective if you relate the proportions of the pool to dimensions that already exist within either the house or the garden.’ Ruth recommends creating a ‘garden room’ around an outdoor pool, rather than leaving it exposed within the landscape. ‘Creating boundaries around the pool space – ideally with hedging or dense planting – makes it feel more intimate and helps it relate to the wider garden context.’ When planning an outdoor pool or pool house, it is wise to consult a specialist before bringing in other design professionals. Companies such as Origin Leisure and Guncast will balance design considerations with practical requirements such as size, materials, lighting, temperature and season of use. Origin also details costed examples on its website. ‘Technology has made pool maintenance simpler and more costeffective,’ observes David. ‘The buildings and the pool chambers are all highly insulated, and you can introduce a heat-reclaim facility within indoor pools. We also recommend air-sourced heat pumps to heat the water.’ TOP: This pool, designed by Origin Cleaning and filtration technology has moved Leisure, makes full use on in leaps and bounds, too, with saltwater, of the available space and has a long, slim ozone and UV filtration systems reducing shape for more the reliance on chlorine. Pool size is generally dictated by how you want com) recommends to swim, and the space available. Ruth suggests heated glass for exterior pool houses to prevent looking to architects’ favourite, ‘the golden condensation build-up ratio’ – a rectangle with a width of ı, and a length of ı.6ı8 – while David usually guides his clients towards a formula of width equals half the length. Serious swimmers may want to consider a long, narrow pool or the introduction of a countercurrent. ‘Countercurrent unit swimming pools are on the rise for 20ı5,’ notes Jack Harding, a director at Guncast. ‘It’s much like an underwater treadmill and means that even the smallest swimming pool can be used for effective exercise.’ Planning permission is a consideration, too. ‘A lot of our pool houses can be built under the category of “permitted development”, as long as it’s not attached to the house and it meets the appropriate planning criteria,’ says David. So how should you approach the design and finish? When a pool is close to the house, Ruth recommends unity by matching hard landscaping materials to those used indoors and changing the finish to a textured, non-slip surface. Recycled materials or reconstituted stone will appeal to more eco-minded property owners. In the pool itself, there is a growing trend for an ‘inkier’ effect. ‘Darker tiles with an iridescent finish work well, particularly in a very light pool house,’ says David. Submerged seating that allows the edge of the pool to become a countertop or ‘bar’ and illuminated colourchanging waterfalls (‘colourfalls’) are popular design features. In a pool house, a feature wall behind the pool makes a real style statement – split stone and whitewashed timber are two modern choices. ‘A stretched ceiling is another recent introduction,’ explains David. ‘It’s a clever way of forming a ceiling with an effective vapour barrier, and is available in a variety of colours and textures.’ Swimming has never been so pleasurable.

THE TABLE RUN (TO THE) RABBIT

Stripped-back brick walls, open fires and simple, Scandinavian-style, handcrafted furniture… there’s a lot to like about The Wild Rabbit. Renovated in 2013, but dating back to the 18th century, and nestled in the heart of the Cotswolds, The Wild Rabbit bills itself as a reinvention of the traditional English inn – a place to eat, drink and sleep. The eat part of that equation means hearty, modern British grub with a twist – terrine of rabbit with pistachio, carrot and ginger beer; and chargrilled breast of Cotswold white chicken with butternut squash purée and ravioli of chicken and Morteau – while drink means a mix of artisan beers, traditional ales, and wines from small, independent vineyards. Sleeping, meanwhile translates as 12 gloriously comfy yet sleek rooms, four with access to the garden, all with dog beds on request and great mattresses and linen sheets for two-legged guests. The Wild Rabbit, Church Street, Kingham, Oxfordshire OX7 6YA, 01608 658389, www.thewildrabbit.co.uk

CROSS PURPOSE

The Cross started life as a humble inn back in the 19th century, but there is nothing low-key about the place today (although it has retained some of its original period features). The 21st-century Cross is wowing diners with Michelin-starred cooking courtesy of Adam Bennett and his team. Adam cut his teeth at The Dorchester and recently reached the finals of the prestigious Bocuse d‘Or 2015, and his flair is much in evidence in dishes such as beef tartare with wasabi, radish salad and quinoa; venison fillet with haggis, crushed roots and kale; and sea bass with potato scales, creamed leeks and red wine sauce.

NEW BRUNCH

Next time a Bloody Mary is in order, ditch the vodka and reach for Martin Miller’s Gin instead. Brand ambassador for the tipple Andy Seach recommends building your Red Snapper in a long glass, adding tomato juice, a healthy dash of Tabasco and Worcestershire sauces, celery salt, and salt and pepper to your Martin Miller’s Gin and garnishing with a fiery red chilli. www.martinmillersgin.com

Desserts are equally toothsome – will you be able to say no to baked brioche pudding with quince compote and nutmeg custard? The Cross at Kenilworth, 16 New Street, Kenilworth CV8 2EZ, 01926 853840, www.thecrosskenilworth.co.uk

WELL BREAD

Everyone knows that home-made bread tastes much better than anything you’d buy in even the fanciest of bakeries. Which is why PAUL (talking of fancy bakeries) has just launched a bread-making masterclass. During the 90-minute class – available at PAUL Covent Garden and Bankside – you’ll learn the tips, tricks and techniques that have been handed down through five generations of bakers, and how to knead, shape and bake your dough. At the end of the class you’ll be given a baker’s kit including a limitededition apron, recipes and a PAUL bread bag, as well as your very own warm loaf, fresh from the oven. Classes cost £75 and include refreshments and nibbles. For upcoming dates, visit www.paul-uk-classes.com www.chewtonrose.co.uk 29

Q+A

You oversee all the food and drink at Brown’s Hotel. Sounds like a big job? As executive chef at Brown’s Hotel, I work closely with Mark Hix, director of food, to oversee the culinary offering for our restaurant, HIX Mayfair, The English Tea Room and The Donovan Bar. Brown’s also has six private dining rooms so we cater for larger groups as well as offering in-room dining for our resident guests. I am delighted to have been promoted to the role and am looking forward to a very busy year ahead. What are your plans for HIX Mayfair? To keep the offering light, seasonal and true to the ethos of Mark Hix. HIX Mayfair encapsulates fine-quality British cooking. We use only carefully sourced, local, seasonal ingredients and offer an extensive menu, featuring great British classics alongside many lighter fish and shellfish dishes. I have been part of the Brown’s Hotel kitchen since 2007 when I joined as a junior sous chef. I believe this progression within the HIX kitchen will enable me to maintain HIX Mayfair’s high reputation. You once worked at Windsor Castle. What was that like? This was a very proud moment and an amazing experience for me to have at such a young age. I still remember the table arrangement, the time taken to prepare this and the precision that was delivered. To view it from the balcony above was a sight that will never leave me. How would you describe your cooking style? Uncomplicated, focusing primarily on the key ingredient. Another ‘must’ for me is using the best seasonal produce at its peak. What’s a typical HIX Mayfair dish? Firm HIX favourites include Lincolnshire chicory, smoked mackerel and blood orange salad or the Reg Johnson’s corn-fed duck with flamed Temperley’s cherries. Outside of the kitchen, what do you do for fun? I try to relax and enjoy as much time as possible with my children and family. They are the most important part of my life. LEE KEBBLE, EXECUTIVE CHEF, BROWN’S HOTEL, TELLS THE PLACE HOW HE INTENDS TO KEEP STANDARDS HIGH AND SPEND QUALITY TIME WITH HIS FAMILY

Quite often, a pub or restaurant can look brilliant online – slick website with artfully composed photos, promising menu – but can woefully under-deliver in the flesh. The Red Lion at Britwell Salome certainly has an impressive website, but actually it’s even better in real life, thanks to the hard graft of chef/patron Andrew Hill, partner in life and business Eilidh Ferguson and a small, friendly team. The food looks even better on the plate than it does on screen and the pub has a friendly, family-run feel (dogs are welcome and the website even features a mini-guide to the local area). Not for nothing was The Red Lion named Restaurant of the Year 2014 by the Oxford Times. Famous for his black pudding Scotch egg, Andrew, who has 20 years of cooking experience under his belt, is also justly proud of his pig grill. ‘It really sums up The Red Lion,’ he says. ‘This includes home-made black pudding, faggot, pork fillet and confit belly. All of these cuts are made in our kitchen at the pub. We enjoy the challenge of using the whole animal. The pork is also reared in the village; provenance is something we are passionate about.’ The team at The Red Lion is equally passionate about working with small, local providers. ‘You can be in constant contact with the makers and producers, they can answer all your questions, share knowledge and they are generally much more flexible than big suppliers,’ says Andrew. ‘Our salad grower, Richard Bartlett, grows shoots and leaves specifically to our requirements. We cut our salads to order!’ And, as you’d hope, seasonality is big here, too: ‘We buy local vegetables from a lady called Angela who is based in Watlington. She buys from local farms and lets me know “what’s good now” when I order with her.’ Andrew and Eilidh used to have a large plot of land at their previous pub (The Half Moon in Cuxham 2006-2011) and are hoping to start growing and rearing their own produce soon. We can’t wait. The Red Lion, Britwell Salome, Near Watlington, Oxfordshire OX49 5LG, 01491 613140, www.theredlionbritwellsalome.co.uk

SOHO REVIVAL

You might think a restaurant that has been open since 1927 might look a bit dated – L’Escargot, however, is anything but. Housed in a 280-year-old townhouse in Soho, London’s oldest French restaurant has been skilfully restored and returned to its former glory by its new owners (founders of Home House private members’ club). The menu continues to offer French bourgeois favourites (lobster bisque, snails – once famously bred in the basement – and sole meunière), but has expanded to feature dishes such as halibut, samphire and shrimp; chilli crab with pickled cucumber salad; and a good selection of Robata grilled meats. The restaurant is also eager to restore its reputation for having one of the best wine lists in the country and now has bottles starting at an austere £18. DIEGO DELIVERS

Percy & Founders is a new 200-cover restaurant in the heart of London’s increasingly desirable Fitzrovia. Named after the Duke of Northumberland, Hugh Percy, and the group of philanthropists who founded Middlesex Hospital in 1755, on the site of which the restaurant sits, Percy & Founders is open all day, offering everything from morning coffee and breakfast to lunch, dinner and post-dinner cocktails. Heading

up the kitchen is Diego Cardoso, formerly at Angela Hartnett’s Murano, who has devised a British/modern European menu with dishes such as chicken wellington with mushroom and truffle; home-made tagliatelle with greens and nettles; and an amazing crêpe soufflé. THE ART OF EATING WELL

If wandering round a gallery always makes you hungry, you’ll welcome Gallery Mess. Just off London’s buzzy King’s Road, Gallery Mess is the foodie offering of the Saatchi Gallery and features a new menu created by renowned restaurant operators “rhubarb” (the brains behind Verdi at the Royal Albert Hall and Sky Garden at 20 Fenchurch Street). New dishes include a superfood salad with quinoa and grilled chicken or prawns; English pea and shallot tortellini; and lavender-honey-glazed duck breast. If you’re after afternoon tea, Gallery Mess has a traditional offering (£15) along with the Little Artists’ Afternoon Tea (£7.50), served on an easel with jam ‘paint’, guaranteed to keep little ones happy while you admire the art. He is the glue that kept this deal alive, he always went the extra mile and took the initiative every step of the way. He was the forward thinker and the one who made all of the calls necessary to get everyone aligned. We have never had such a positive experience with any estate agent, either in the UK or the US.’ Rachel and Mark Makepeace, who sold their home through Cobham Chewton Rose

‘The support we received from Chewton Rose generally, and Belinda in particular, was superb and I would recommend them to any friends or colleagues wishing to sell their home. When our buyer’s solicitor was stalling with the conveyancing, Chewton Rose spoke directly with the buyers about the problem and encouraged them to push things forward. I doubt the sale would have occurred in January at all, if it hadn’t been for these efforts. Generally, in spite of the sale being incredibly (and needlessly, in our opinion) fraught, due to the buyer’s solicitor, Chewton Rose, Belinda and Craig remained focused throughout, always looking for solutions and retaining their sense of humour.’ Olwen Cox, who sold her home through South Wales Chewton Rose

WHAT MAKES A GOOD AGENT? ‘A good agent,’ says Graham Nash, Branch Partner, Chewton Rose homes in Buckinghamshire and Bedfordshire, ‘is someone who understands that customer service, honesty and a proactive attitude are the main ingredients needed to be successful and to ensure you are delivering the best service to sellers and buyers.’ For Marion Goggin, Branch Partner, Sussex and Kent, it’s: ‘Listening to the vendor, and attention to detail.’ Annie Edwards, Branch Partner, Norwich, adds: ‘A good agent in these moveable times needs enough experience to cope with all the demands made on them; professionalism is vital, as is calmness. Empathy and understanding also help, as do being efficient, under promising and over delivering, and being able to solve problems and think on your feet.’ Malcolm Campbell, Sales Associate, Gerrards Cross, highlights the importance of attentiveness: ‘A common criticism of the industry is lack of agent feedback! Regular feedback to sellers on comments received from potential buyers who have viewed a property, and relaying level of interest received via direct enquiries and web visits, all build productive partnerships. Maintaining contact with potential buyers is also key, as their sights, aspirations, plans and budgets can alter as their search progresses.’

WHAT ARE YOUR PREDICTIONS FOR THE PROPERTY MARKET FOR THE SECOND HALF OF THE YEAR FOLLOWING THE GENERAL ELECTION? ‘The market is already seeing signs of improvement, where the indications are that the market will rise by up to 5% by the year end,’ says Guy Leaning, Senior Branch Partner, Cobham. ‘Also, the lending criteria will become easier, where loans will be easier to come by, with more cash incentives.’ Belinda Bishop, Branch Partner, South Wales, adds: ‘I believe we will see a busier market. People were waiting to see who our next government would be, but I predict we will now see an increase in instructions and sales.’ And a final word from Daniel O Connell, Branch Partner, West Essex: ‘My general opinion is that there is too much emphasis placed on the election and its link to property activity and prices. However, agents would often quote a lower volume in the lead-up to a general election, but the year itself doesn’t suffer any sizeable dip in property transactions. Therefore, my expectation is that the second half of the year will be very busy, we will likely see less of a dip in the summer months, particularly August, and a big September and October flood of new instructions. If I were selling, I would do so sooner rather than later, as there will be less competition for my property right now, aiding the possibility of a higher price being achieved, and would be looking to buy during the second half of the year when there is more choice, and possibly a better chance of getting a deal.’

‘I have now been in my new home for three weeks or so, and I wanted to write and thank you for your immense help in bringing my purchase of this house to a successful conclusion. We had two major setbacks along the way, but you and your colleagues remained unfazed, cheerful and supportive throughout. We got there in the end, as you always said we would. You and your colleagues at Gerrards Cross are a remarkable team.’ John Lawrence, who bought his home through Gerrards Cross Chewton Rose

THE INTERVIEW

Amanda Wakeley obe

is famous for her ‘clean glam’ signature-style evening and cocktail dresses and can name Kate Winslet and Angelina Jolie among her many celebrity fans. She talks to The Place about her favourite locations both near and far… Where is home and what is it like? I live in Chelsea, in a stunning penthouse overlooking the River Thames, with wonderful views of London. What do you like most about where you live? Being surrounded by the people and things that I love most. How would you describe your own personal style? I would describe it as understated lifestyle luxury with a clean glam aesthetic. Siren gowns for the evening and luxe sportif for the day. What is your favourite outfit and why? It changes with the season! What are your favourite smells? English roses, aromatic herbs – all growing in abundance. Who do you design for? I design for all women, empowering them through clothes. My collections are timeless and my clients range from women in their twenties to their seventies. It is all about the way a garment makes you feel: beautiful from the inside to the outside. What kinds of books do you like reading? I like biographies or novels that are descriptive about different cultures, in particular those of Asia, which I find fascinating. I love the luxury of time to be completely enveloped by a book. I also like inspirational coffee-table books on design, interiors, architecture, travel and nature, as well as fashion. What’s your favourite holiday destination and why? I have many. However, having had the opportunity to visit Petra in Jordan for a private event was pretty magical. I arrived at sunset and as I walked into Petra t he lig ht was fading, the ‘street’ became narrower and then somehow it was lined with candles. You could ‘hear’ the ancient life of the town as you walked through it. Finally, we ate a feast under the stars in the centre of the old town. What are your projects for summer? This year is the 25th anniversary of the brand and we have several exciting activities planned, starting in July – watch this space! www.amandawakeley.com 114 www.chewtonrose.co.uk

CLOCKWISE FROM ABOVE: a typical AW ensemble from the Amanda Wakeley collection; Albert Bridge spans the River Thames in Chelsea; Amanda loves the smell of English roses and lavender (below far left); Petra lit by candles at night
