Making time for meals together can have a positive impact on the wellbeing of families, including children and adolescents. In fact, regular meals at home can help reduce stress and boost self-esteem, according to research published in “Canadian Family Physician.” Mealtime conversations are also a perfect opportunity to connect with your loved ones. A study published in “New Directions for Child and Adolescent Development” showed these conversations help improve children’s vocabularies more than being read aloud to. Making time for meals together shouldn’t require spending all night in the kitchen, however. A simple-toprepare ingredient like eggs can help you spend less time cooking and more time with family. For example, these heart-healthy recipes for Poached Egg Tostadas with Avocado-Tomatillo Salsa, Sweet Potato Hash with Eggs and Poblano Frittata from the Healthy for Good Eat Smart initiative, nationally supported by Eggland’s Best, are ready in 15 minutes or less. They include a wide variety of vegetables, fruit, whole grains and healthy protein sources, which are recommended by the American Heart Association to help prevent heart disease and stroke. Poached Egg Tostadas with Avocado-Tomatillo Salsa Servings: 4 (1 egg and 1/2 cup salsa per serving) Nonstick cooking spray 4 corn tortillas (6 inches each) 4 cups water 1 tablespoon white vinegar 4 large eggs Salsa: 1 medium avocado, diced 1 medium Anaheim or poblano pepper, seeds and ribs discarded, diced 1 medium tomatillo, papery husk discarded, washed and diced 1/2 medium tomato, diced 1/4 cup diced red onion 1/4 cup chopped fresh cilantro

2 tablespoons fresh lime juice 1 medium garlic clove, minced 1/8 teaspoon salt Preheat oven to 400 F. Line baking sheet with aluminum foil. Lightly spray foil with nonstick cooking spray. Arrange tortillas in single layer on foil. Lightly spray tortillas with nonstick cooking spray. Using fork, pierce tortillas to prevent from filling with air. Bake 5-6 minutes on each side, or until golden brown. Transfer to serving plates. In large skillet over high heat, bring water and vinegar to boil. Once water is boiling, reduce heat and simmer. Break egg into cup then carefully slip egg into simmering water. Repeat with remaining eggs, avoiding eggs touching in water. Simmer 3-5 minutes, or until egg whites are completely set and yolks are beginning to set but aren’t hard. Using slotted spoon, drain eggs. Place each egg on tostada. To make salsa: In medium bowl, gently stir together avocado, pepper, tomatillo, tomato, red onion, cilantro, lime juice, garlic and salt. Serve with tostadas. Nutritional information per serving: 185 calories; 11 g total fat; 2.5 g saturated fat; 3 g polyunsaturated fat; 5 g monounsaturated fat; 186 mg cholesterol; 169 mg sodium; 15 g carbohydrates; 3 g fiber; 2 g total sugars; 9 g protein. Poblano Frittata Servings: 4 (2 wedges per serving) 4 large eggs 1/4 cup fat-free milk 2 tablespoons chopped fresh cilantro 1 teaspoon olive oil 2 medium poblano peppers, seeds and ribs discarded, chopped 2 cups frozen whole-kernel corn, thawed 2 medium green onions, chopped 1/4 cup finely shredded Cotija cheese or crumbled queso fresco 1 medium tomato, chopped 1/4 cup fat-free sour cream In medium bowl, whisk eggs, milk and cilantro. In medium skillet over medium heat, heat oil, swirling to coat bottom of skillet. Cook poblano peppers 3 minutes, or until browning on edges, stirring frequently. Stir in corn and green onion. Reduce heat to medium-low and carefully pour in egg mixture. Cook, covered, 10 minutes, or until mixture is just set on edges and still soft in center. Avoid overcooking. Remove from heat.

Sprinkle with cheese. Cut into eight wedges. Place two wedges on each plate. Top with tomatoes and sour cream. Nutritional information per serving: 244 calories; 8.5 g total fat; 2.5 g saturated fat; 1.5 g polyunsaturated fat; 3 g monounsaturated fat; 192 mg cholesterol; 177 mg sodium; 27 g carbohydrates; 4 g fiber; 8 g total sugars; 13 g protein.

Sweet Potato Hash with Eggs Servings: 4 (1 cup per serving) 2 teaspoons canola or corn oil 1/2 medium onion, chopped 4 medium sweet potatoes, peeled and cut into 1/2-inch cubes 1/2 medium red or green bell pepper, chopped 2/3 cup fat-free, low-sodium vegetable broth 2 teaspoons minced garlic 2 teaspoons smoked paprika 1 teaspoon ground cumin 1/2 teaspoon dried thyme, crumbled 1/2 teaspoon coarsely ground pepper 1/8 teaspoon salt 4 large eggs hot pepper sauce (optional) In pressure cooker set on saute, heat oil. Cook onion 3 minutes, or until soft, stirring frequently. Turn off pressure cooker. Stir in potatoes, bell pepper, broth, garlic, paprika, cumin, thyme, pepper and salt. Secure lid. Cook on high pressure 3 minutes. Quickly release pressure. Turn off pressure cooker. Remove pressure cooker lid. Crack one egg into small bowl. Using back of spoon, make small well in potatoes. Slip egg into well. Repeat with remaining eggs, making separate well for each egg. Secure lid with pressure vent open. Saute 2 minutes. Let stand on “keep warm” setting 2 minutes, or until eggs are cooked to desired consistency. Serve hash sprinkled with dash of hot pepper sauce, if desired. Nutritional information per serving: 258 calories; 7.5 g total fat; 2 g saturated fat; 1.5 g polyunsaturated fat; 3 g monounsaturated fat; 186 mg cholesterol; 244 mg sodium; 39 g carbohydrates; 6 g fiber; 9 g total sugars; 10 g protein.

BY DONNA ERICKSON Baked apple rings are a tasty and nutritious snack you can make in your own kitchen on a chilly fall day. We use zesty apples that friends share with us from their backyard trees, or we buy them at farmer’s markets and apple orchards. The drying process concentrates the sweetness of the apples, making them an ideal snack food to grab between meals or include with trail mix on a hike or bike ride. It’s enjoyable for adults and kids to make together, and you can also turn any leftover raw end apple pieces into chunky applesauce in just minutes inside the microwave. BAKED APPLE RINGS Makes about 50 rings depending on apple size • 4 firm apples • 1 tablespoon lemon juice • 1/4 cup water Preheat oven to 250 F. Prepare pans. Place wire cooling racks on two large baking trays, or line two large baking trays with parchment paper. An adult should core and cut the apples in 1/8inch rings using a sharp knife or mandolin. There will be extra irregular-sized pieces on the ends. Snack on them as you work, or save them for making microwave applesauce (see recipe below). In a shallow dish, stir together lemon juice and water. Set prepared baking trays on the counter by ingredients. Young kids will enjoy dipping each slice into the lemon mixture and setting them onto a rack or parchment paper. Edges may overlap slightly. Bake rings until dried with a leathery texture, about 2 hours. (If using parchment-paper-lined pans, an adult should flip the rings over after 1 hour and return them to the oven for an additional hour.) Remove from oven and enjoy! Cool before storing. Extra idea: For added flavor, sprinkle a mixture of 2 teaspoons cinnamon and 1 tablespoon sugar over the rings before baking. MICROWAVE CHUNKY APPLESAUCE Makes 2 servings • 2 cups apple chunks from cored apples of one or more varieties, peeled or unpeeled if you like (red peels may give your applesauce a nice rosy color) • 1/2 cup water • 1 tablespoon lemon juice • 1 tablespoon sugar • 1/4 teaspoon cinnamon Combine ingredients in a deep microwave-safe bowl. Cook uncovered at full power for 5 minutes. Remove and stir well. Cook an additional 5 minutes. Use a potato masher or whisk to mash and stir the apples into the liquid. HOLIDAY PARTY AT THE VA 2023 Have you given thought to how you’re going to step up this holiday season and give a hand to other veterans? If you’re in a veterans group such as American Legion or Veterans of Foreign Wars, you’re in a perfect position to pull off a holiday party at the closest Department of Veterans Affairs medical center. Your first step (after getting group consensus) will be to contact Volunary Services and let them know you’d like to host a party on one of the wards. (Suggestion: Long-term care has veterans who’ve been there far too long.) Get their permission and input for the best path to take going forward. Perhaps a lunch on a certain December date? Perhaps pizza, soft drinks and holiday cookies? Is there a large day room on the medical ward? With tables and chairs? Do you want to consider gifts? Contact the nursing station on your designated floor and ask about small gifts of things like puzzle books, mechanical pencils, military caps, handheld games, T-shirts, candy, handkerchiefs, small bedside calendars and so forth. Get a head count (and add a few extra in case more patients check in) to make sure each veteran gets a little wrapped gift. Contact a local pizza shop and arrange for several types of pizza (plus the paper plates and napkins) to be delivered at a certain time. You might even get a big discount if the owner or manager is a veteran. Don’t forget cups and ice for the drinks. Borrow a CD player and all the holiday tunes you can find to play in the background. If there’s a base near you, ask for volunteers to come help at the party, in addition to your own group. The more the merrier. What will be most appreciated at your party is listening. Sitting with the veterans in the hospital and sharing your experiences and listening to theirs might well be the highlight of their holiday season. HOW LONG WILL DOG’S HEATSTROKE RECOVERY TAKE? DEAR PAW’S CORNER: Two weeks ago, my Golden Retriever Lollie suffered a heatstroke. I let him outside into the backyard around midmorning. When I checked on him after about a half hour, he stumbled to me and collapsed. I rushed him to the veterinarian, where he was treated. Lollie is recovering, but I am terrified to let him outside again. Why did he have problems so fast? Will this episode affect his health long-term? -- Greg in Houston DEAR GREG: I’m glad to hear that Lollie is recovering, because heatstroke can be deadly -- as you know. Your fear is normal, because you’re clearly a caring pet owner, and you don’t want Lollie to be injured again. That care and attention is perhaps the biggest factor in Lollie recovering fully and having fewer long-term complications from his heatstroke. The reasons why Lollie suffered heatstroke aren’t as clear, but there are so many factors that could have contributed to it. The morning may have been hotter than usual. Lollie may have had an underlying illness that made it harder for him to withstand the warmer temperature. He might not have drunk as much water as he needed to maintain his internal temperature. You did all the right things: letting him outside earlier in the day; checking on him periodically; and immediately taking him to the vet as soon as you saw his symptoms were serious. Keep following the vet’s instructions to support Lollie’s care as he recovers. It may be weeks or months before he can spend the same time in the heat. He’ll get tired more easily, so his daily walks should be kept short. Make sure he’s eating and drinking enough water. All these factors will improve his health for the long term. Both Charlie Sheen and Jon Cryer earn over $13 million a year for “Two and a Half Men.” The cast of “Friends” gets $20 million per person each year, while Mark Harmon banks $60 million a year from “NCIS” reruns. Nancy Cartwright, the unseen voice of Bart Simpson, pulls in $400,000 an episode and $20 million a year from reruns. “Seinfeld’s” Jerry Seinfeld and Larry David still get between $40 and $60 million a year, and Leonardo DiCaprio earns $12 million a year from airings of “Titanic.” This happens all while supporting actors and writers can’t make a decent living. Is Universal seriously planning to reboot “Murder She Wrote”? Angela Lansbury’s mystery series ran for 12 seasons from 1984-1996, and although she received Emmy nominations throughout those 12 years, she never won. She did, however, earn three Golden Globe Awards, for her portrayal of Jessica Fletcher. Back in 2013, an attempted reboot with Oscar-winner Octavia Spencer (without Lansbury) was in the works, but then got quickly abandoned. Lansbury still lives on in rerun heaven, and “Murder She Wrote” without her in it would truly be murder!

HOLLYWOOD -- The word on “Wonka,” the reboot of “Charlie and the Chocolate Factory” starring Timothee Chalamet as Willy Wonka (previously played by Gene Wilder and Johnny Depp), is that it opens in theaters on Dec. 15. We’ll be able to see if we agree with its director, Paul King, who claims that Chalamet, who sings “a couple of bigger, showstopper-y sort of things,” but also “moments of real, pure emotion,” has a singing voice like Bing Crosby! The film also stars Keegan-Michael Key, Rowan Atkinson, Olivia Colman, Matt Lucas and Hugh

Grant as an Oompa-Loompa. Super-soap-star Thaao Penghlis, who has spent the last four decades as Count Tony DiMera in “Days of Our Lives,” has used his downtime from the soap to write, produce and narrate the podcast “The Lost Treasures.” The podcast is a thrilling detective story-style exploration of Greece’s greatest contribution to literature: the poet Homer. It explores “The Iliad” and “The Odyssey” through the life of German archaeologist Heinrich Schliemann, who changed history when he discovered the real-life locations and treasures of these epic poems. The four-episode podcast includes three story chapters that transport you to Troy and Ancient Greece. The first episode dropped Sept. 5, and the podcast will conclude on Oct. 17 with the fourth and final narration from Australian-born Penghlis. “The Lost Treasures” is available wherever you get your podcasts. An Apple Dutch Baby offers a delightful blend of sweet and slightly tart flavors, thanks to caramelized apples infused with brown sugar and cinnamon. Its texture is a perfect contrast of crispy, golden edges and soft, custard-like pancake, with the comforting aroma of warm spices. Dutch baby pancakes, also known as German pancakes, originally trace back to German immigrants who settled in the United States in the 18th and 19th centuries. Originally called “Deutsch” babies, these delightful pancakes were brought to America with a rich tradition of hearty, oven-baked breakfasts. Over time, the name evolved into “Dutch baby,” possibly due to the mispronunciation of “Deutsch.” These puffy, golden creations quickly gained popularity and have become a beloved breakfast and brunch staple, known for their simplicity and deliciousness. The best pan for cooking an Apple Dutch Baby is a well-seasoned cast iron skillet. Its ability to retain and distribute heat evenly results in that perfect crispiness on the edges and a tender, custardy center for the pancake. APPLE DUTCH BABY Yield: 4 to 6 servings Total Time: 40 minutes 2 medium apples, thinly sliced (use your favorite variety)

1 cup all-purpose flour 4 large eggs 1 cup milk 1/4 teaspoon salt 2 teaspoons vanilla extract Powdered sugar, optional Preheat your oven to 425 F (220 C). Core and thinly slice your apples. To peel or not to peel, that is your decision. Melt 4 tablespoons of butter. Place the sliced apples in a large 10- or 12-inch cast iron skillet, or other oven-safe skillet. Pour the melted butter over the apples and sprinkle 1/4 cup brown sugar and 1/2 teaspoon cinnamon over the top. Bake the apples in the preheated oven for 10 minutes. While the apples are cooking, make the batter. Melt the remaining 2 tablespoons of butter. In a blender, combine the flour, eggs, milk, salt, vanilla extract, melted butter, 1 tablespoon brown sugar and 1/2 teaspoon cinnamon. Blend for 1-2 minutes or until smooth. Carefully remove the very hot skillet from the oven and pour the batter over the apples. Place the skillet immediately back in the oven and bake for 15-20 minutes, or until the Dutch baby is puffed up and golden brown. Remove from the oven, sprinkle with powdered sugar and a touch more cinnamon, if desired, and serve warm. What makes the Dutch baby truly magical is its simplicity. With just a handful of pantry staples and a bit of seasonal fruit, you can create a dish that’s both impressive and easy on the wallet.
